Southampton Animal Shelter The Southampton Animal Shelter Foundation will host its third annual benefit at the Boardy Barn in Hampton Bays on Saturday from 6 to 10 PM. Second Shift will perform while guests enjoy a multi-restaurant and gourmet shop buffet, silent auction, cash bar, Chinese auction and a 50/50 raffle. Today’s Birthday: Jennifer Nettles, 1974 Jennifer Nettles is a true blue Southern girl, and starting singing in her hometown of Douglas, Georgia, when she was seven. She first hit the charts soon after she co-founded Soul Miner’s Daughter with Cory Jones: the group released two well-received albums. She literally struck gold with her next project, the Jennifer Nettles Band, which won “The Big Deal $100,000 Music Search” and earned the grand prize, a tidy $100,000. In 2003 Nettles formed Sugarland along with Kristen Hall and Kristian Bush, a country-rock band with an attitude. Nettles, whose music reflects her passion for soul and blues music, wrote many of the group’s most popular songs. More gold followed, in the form of hit records. The accolades flowed as well, including three Grammys, five Country Music Association awards, and the Academy of Country Music Award in 2009. Nettles and Bon Jovi had a Number One hit on their collaboration “Who Says You Can’t Go Home.” Nettles performed at President Obama’s inauguration as well. Jennifer married Justin Miller last year and the pair recently announced they are expecting a child. Fluke Crudo With Chilies, Green Apple, And Coconut Ingredients (serves 4) 1 1/2 lbs fluke fillet 2 Thai chili peppers 1 green apple 2 oz apple juice 6 oz coconut milk 1 small bunch of cilantro 1 tbsp Madras curry powder Salt and pepper to taste
Method Begin by washing your fluke fillet and carefully slicing into 12 thin pieces. Place in the refrigerator until you are ready to assemble the dishes. In a small sauce pot add
the coconut milk, apple juice and curry powder. Bring to a simmer and reduce over medium heat for about 10 minutes or until you have achieved a sauce consistency. Allow the sauce to cool in the refrigerator. Slice the apple into thin strips (juilliene). To prepare the chilies, scrape the seeds and membrane from the inside and slice the chilies into thin rings. To plate, mix the chilies and apple in some of the sauce. Lay down a bed of sauce on each plate. Place three slices of fluke per plate with picked cilantro. Finish with a bit more sauce.
