Lana Del Rey By Jessica Mackin

Many Lana Del Rey fans’ initial encounter with the singer-songwriter

was through her DIY video for “Video Games” in 2011. But Del Rey -who filmed and edited the video on her Macbook -- had already been recording music and making moody homespun videos for eight years. Jump to 2016, Lana Del Rey is larger than ever. She has sold 8 million albums and her music has been streamed over 1.6 billion times. She is currently touring European festivals in support of her latest album Honeymoon, fan reaction has been joyous. Can’t make it to Monaco? You can catch her stateside at Lollapalooza in Chicago on July 28 along with a few dates in California. After the release of Honeymoon Lana supporters camped out overnight for in-store album signings in London, NYC, and Los Angeles. Del Rey returned the love by spending over five hours signing autographs at each store. Fans also flocked to in-store listening sessions at Urban Outfitters stores across the country when the full album debuted. The retailer reported that first-week sales of the special-cover vinyl outpaced any others in the store’s history. The response to Honeymoon continues to be triumphant and shows no signs of stopping.

The Last Night Of Ballyhoo

Independent/Lenny Stucker/lennystucker.com

Bay Street Theater in Sag Harbor presents The Last Night Of Ballyhoo, the Tony Award-winning play by Alfred Uhry, directed by Will Pomerantz. The production will run through July 24. Atlanta, 1939. It's the premiere of Gone with the Wind, it's the party of the year, and everything is about to change. The wealthy and important Freitag family is looking forward to Ballyhoo, the lavish German Jewish country club ball, and all it will mean for daughters Lala and Sunny. But life turns upside down when their uncle brings home his new employee, a handsome Eastern European bachelor from Brooklyn. Everyone must confront their own beliefs, prejudices, and desires. The family will never be the same as they take a journey filled with comedy, romance, and surprising revelations. Visit www.baystreet.org.

The two cite groups like A Tribe Called Quest and Sergeant Pepper-era Beatles as having a major impact on them both in their formative years. They identify with a generation brought up on the internet, having access to music of all genres, places, and eras, just a click away. Sun Joint takes Lion Babe back to their most organic self, showcasing their kinetic energy while providing a futuristic high-energy production. The mixtape features Jungle Pussy, Raury, Angel Haze and co-production from DJ Dahi. The Angel Haze featured track was also recently featured on Kitty Cash’s latest release – Love The Free, Volume III mixtape. Harbor Books: A Refined Pearl By Nicole Teitler

Harbor Books is a refined pearl waiting to be discovered in the historic town of Sag Harbor. Store owner Taylor Rose Berry, a native south shore resident, followed her passion for the written word and opened the antique style bookstore in the later part of 2014, a quick 22 days after signing her lease. She has created a cozy environment where bookworms can pass the time drinking coffee and introduce themselves to inspirational authors of past and present. The Independent caught up with Berry for a chat recently. Indy: Describe how Harbor Books has inspired and brought together the literary community. Berr y: We’ve been called The Literary Hub of the East End since opening. That was an incredible compliment. I set out to create an environment similar to a literary salon, reminiscent of les Grandes Dames des Salons Parisiens and then later in the 19th and 20th centuries of Gertrude Stein, Colette, and Edith Wharton -- a place where writers, artists, and readers could gather to relish in literature. We host book parties, work with local schools for their book fairs, and bring new and established authors

into the community for events. I thought [opening a bookstore] was recognizing that books were still alive and well and supplying something that was still very much in demand especially in a community such as ours.

Indy: How did the idea come about for your Harbor Books Lifestyle concierge service? You customize collections for individual clients, what would you say are some essentials for a good personal library? Berry: Books are something that are essential in a well-rounded home and we’re the experts on books! A library takes a lifetime to build, we set out to create a lifetime worth of books in a day. It’s one of my favorite things to do. Every library is customized to the readers’ needs, it’s a lot of fun and something really special. Knowing that we give people the gift of reading is priceless. I love imagining our clients walking over to their shelves, running their hands over their books and picking up a book that we picked just for them for years to come. I think to have a good library you have to have a little bit of everything and a lot of your personal favorites. I look at our home library and laugh because it really represents who we are and the blending of our worlds.

N i c o l e Te i t l e r (left) with Harbor B o o k s o w n e r, Taylor Rose Berry (right).

Indy: What is a classic book everyone should read and what is your recommendation for the summer? Berry: Everyone has to find their classic. For me? It’s Atlas Shrugged and Gone With The Wind. This summer, Shoe Dog by Phil Knight, Sundays on The Phone to Mondays by Christine Reilly, Modern Lovers by Emma Straub, Sweetbitter by Stefanie Dahler, and Walk to Beautiful by Jimmy Wayne. Indy: What notable guest frequents the store most? Berry: We have a wonderfully loyal group of very notable customers but I’ve got a strict Bookseller Code [that] swears me to secrecy! Booksellers are somewhere in line with your bartender, therapist, or attorney -- there’s a bookseller-reader privilege. Indy: Has the digital age and e-books affected your business? Berry: The act of reading is a sacred thing, the written word, the art of the story, all of it. It’s never going away. In our industry we saw the initial effects that the e-reader had and now we’ve seen the long lasting effects of the “real” book. The battle is over. Books won. People have the desire for something tactile. It’s a desire that is innate even in little readers who have grown up in this technological age and I think it is the thing that will keep books alive. Indy: Where do you envision Harbor Books in 10 years? Berry: This one? Exactly where it is! The future locations? That’s still a secret. Sag Harbor is my home and this is our flagship so it will always be special. I believe that mantra “If you’re not growing, you’re dying.” Indy: Who came up with the concept of the mural, yourself or the artist Kara Hoblin? Berry: From the beginning the chalkboard was intended to be a center piece of the store. It’s the most photographed thing in the store (after the cats, of course). It combines our logo, which I designed from scratch and the poem [written by Beatrice Warde]. Kara is an amazing chalk artist that really brought it to life.

Indy: Every author has a quote they are known by. What would your words of inspiration be? Berr y: “When you step into a bookstore you are surrounded by the knowledge of the ages.” I never graduated college. When I landed in the bookstore I remember telling my mother, “Why would I ever sit in another classroom when I spend my days with books?” Indy: Do you feel in any way connected to You’ve Got Mail and The Little Shop Around The Corner? Berry: Growing up watching all things Meg Ryan and Tom Hanks, that one always had a very special place in my heart. When I do story time with our little readers I think of Kathleen Kelly and I quote her frequently saying, “When you read a book as a child, it becomes a part of your identity in a way that no other reading in your whole life does.” I think that really applies to all reading, what you read in a book, it becomes part of who you are. I am the sum of all the books I have ever read. Customers can meet Berry at story time Mondays at 6 PM and Sundays at 11 AM. Upcoming events in July include July 8 at 6 PM, Ashley Prentice Norton: If You Left, July 9 at 6 PM, David & Tanner Cohen: American Babe, July 15 at 6 PM, George Motz: The Great American Burger, July 16 at 11 AM, Nicolaia Rips: Trying to Float, July 16 at 6 PM, Emma Straub: Modern Lovers, July 30 at 11 AM, Linda Fairstein: Killer Look, and more. her first extended play, "Cannibal," were released in 2010. Kesha’s music and image propelled her to immediate commercial success, with Animal debuting as the numberone album in the United States. She also achieved two number-one singles, “Tik Tok” and “We R Who We R,” and a string of top-ten singles from the album and its re-release. Influenced by various genres and artists, Kesha primarily draws inspiration from music of the 1980s. Madonna, Queen, and Beck have been cited as instrumental to her music. SpaUnique's Monique On Skincare By Jessica Mackin SpaUnique founder Monique Wisniewski-Santana is the skincare guru of the Hamptons. Located on Main Street in Southampton, Monique is responsible for keeping many faces looking young and fresh. No “foo-foo” facials here. Monique is about getting her clients serious anti-aging results. Give us a little background on SpaUnique: I was working for a physician at a medical spa here in The Hamptons, when the spa decided to move and close up shop. I had all of my clients that I was not willing to lose, so I was forced into action. It was smooth and fast. The best thing that could have ever happened to me. That was back in 2008. I’ve been independent ever since. Each year I try to add a new service to be on the cutting edge of anti-aging. I do medi-spa type treatments. Serious anti-aging. If you’re looking for the “foo-foo” facial, as I call it, I’m not your girl. I do treatments that get results. A nice even pace, with great results. Some of my treatments include a collagen building laser (non-invasive), IPL (intense pulse light) for brown spots, redness, skin conditions, broken capillaries, Microdermabrasion, Dermaplaning (the latest and BEST craze) with Chemical Peels (yes, they can be mild without looking like a wreck). All treatments can include the décolleté too! Also, Laser Hair Removal and Mineral Makeup application. Soon to come . . . Microneedling with serum. I can’t wait to offer that. All aspects of injectables [are available] from the incomparable Dr. Ronit Adler. Everything from Botox to PRP, Dr. Adler is a true artist. She began injecting my clients from the beginning and we are a great team. What are some of your most popular treatments? Definitely IPL or Photo Facial as it can be called. It evens out skin tone so much and really gives the skin a

huge glow. Also my Dermaplaning/ Peel/Oxygen treatment. This treatment includes all three done in one session and is my most popular treatment with great results. I sell them in packages, where clients do them once a month all year round. If a person asks for a “facial” this is my go to treatment. Laser Hair Removal of all areas is extremely popular as well. Tell us about your private skincare line, Jeunesse Skincare: I started Jeunesse Skincare about five years ago. I had these ingredients in my head for a moisturizer but I needed a chemist’s help. After much research, I worked with a company for about two years on the recipe and it’s consistency. From there I created a line based on the all natural and organic ingredients the company had to offer. My moisturizer is my pride and joy. Vitamin Infused Moisturizer. It has active vitamins (like beta carotene, grape seed extract), protein, and antioxidants that your skin needs for anti-aging. Sometimes it tingles when it goes on. That is the antioxidants at work. You just can not get a better moisturizer. Morning and night, it’s got everything your skin needs (www. jeunesse-skincare.com). People confuse me with the pyramid company Jeunesse global. I am not them. I don’t do pyramids! Tell us about some of the other products you offer: I am not opposed to using and selling other brands’ products that my line does not carry. Along with Jeunesse Skincare, I love Skinceutical serums and retinol. MD Solar Science is the mineral sunscreen I use in my treatments and sell. Glominerals mineral makeup, along with Revitalash products. I also carry Hampton Handpoured candles. They are just delish! What does the future hold for SpaUnique? Currently I am in my second year at an office right on Main Street, Southampton. I have a boutique office

Independent/Instagram @hamptonshandpoured, Jessica Mackin

by appointment only. I love my space, love my office. I hope to be treating here for a long time. My office is the perfect size, kind of reminds me of a Manhattan Loft. My talented brother-in-law at Detrano Construction did all the hard work in the renovation. I have wonderful clients and welcome new. It’s just the doctor and I, and I love it that way. Do you have any specials right now? Currently we are offering package of Dermaplaning where you buy five you get your sixth free. It includes Dermaplaning/ Peel/and Oxygen all in one treatment. Clients can purchase a package of face only or face and décolleté combined. Either package comes with the sixth treatment free and a free Vitamin Infused Moisturizer. It’s a huge deal. Any advise for our readers? Save your skincare for the

professionals. Don’t trust these pyramid companies. A person who gives you advice about your skin and/or sells you or recommends products to use should be a licensed professional only. Remember, you do not have to do intense treatments in order to get great results. I believe in an even keel, steady pace. Yes, in order for you to have results, you should expect some reaction. Otherwise, it would not be anti-aging. Lastly, your esthetician is not a magician and does not have the “magic wand.” As much as we want the best for you, we have to work in order to achieve those results. Follow protocol and beautiful things can happen. I always say beauty starts from within. Treat your body well on the inside, not just your outer skin. We all must age but we can do it with grace and beautiful skin!

By Annemarie Davin New York Pilates is the only oceanfront reformer Pilates studio in The Hamptons, located at the Residences at Gurney’s Montauk. They have two studios in Manhattan (SoHo and Washington Square Park) and owner Heather Andersen (former ballerina and modern dancer) has been a go-to instructor in New York City for the past decade. Modern, raw interiors, lush succulents, great tunes, and attentive instructors are what set NYP apart from the crowd. They can accommodate up to eight people per class and there are 3 to 4 classes during the week and 5 to 7 on the weekends. Private sessions are available and drop-ins are accepted, but reservations are suggested. New York Pilates has been featured in Vogue, Self, and Shape magazines and Fashionista named them one of the top five most stylish studios in NYC. Their celebrity clients range from young stars to Olympians and Oscar winners but they are discreet regarding their clientele. Native New Yorker Brion Isaacs, Creative Director and owner of Rivington Design House, is a former musician/resident DJ at the Beatrice Inn, so he knows his stuff when it comes to putting the playlists together for the studio. He and wife Heather, along with their adorable dog, Hazelnut, are the most down to earth people I have met in a very long time. Make sure to book online to register for a free class at www.newyorkpilates. com by using the code “fame.” Offer expires July 16, 2016.

Kim Kenney’s been exercising since she was a tot. With a six year age span between her and her next sibling, the youngest of the Kenney clan was alone a lot. “Every morning my mother would do Jack La Lane, and I’d do it with her.” By the time she was in the eighth grade -- “How ever long ago that was“ -- she was partnering with her sister in a cleaning service. Surely cleaning houses all day offered an adequate workout. Negatory. At age 20, she purchased a bike and learned all that vacuuming and mopping wasn’t enough. Kenney got so out of breath, she fell off the bicycle. The next day she walked to White’s Pharmacy in East Hampton Village and purchased an armload of fitness magazines, “And I was hooked,” the Indy Fit advisor recalled. From magazines, Kenney moved to workout videos and myriad classes at gyms around the East End. Her interest in exercise didn’t wane and over the years she began to develop a desire to share her knowledge. In her late 40s, she started to think, “I’m going to be 50, if not now, when?” She embarked on a rigorous course of study and the week of her 50th birthday received certification from International Sports Sciences of America. Soon afterward, she was introduced to the Beach Body system and became a certified Beach Body Coach as well. Kenney’s expertise isn’t limited to the workout aspect of keeping fit. A visit to her Fitness, Focus & Motivation page can start one’s mouth to watering. Kenney’s mother was her role model in the kitchen, too, and almost every day,

But make no mistake, the coach knows how to party. “Of course I’m not perfect. I believe in the 80/20. If you’re doing well 80 percent of the time, the other 20 percent, enjoy yourself.” With her Facebook page (and The Independent) Kenney said, “I can reach out to so many people.” She’s had people thank her for saving their lives, as they follow her advice and see blood pressure and other medical issues resolve. “It’s really about health, not just looking good in a bikini . . . I just want to live the rest of my life feeling healthy.”

By Carrie Catherine Holmes

Why The Y? Why Not? By Kitty Merrill With an array of new Precor equipment adorning its architecturally stunning space, the YMCA RECenter in East Hampton boasts a new look and, if exercisers want, a high tech ambiance. A refurbished cardio area is home to Precor treadmills, elliptical machines, elliptical cross trainers, spin bikes, and recumbent bikes. There are 12 new weight machines, plus a second spacious area for free weights. Members are given Preva wristbands that can be used like a Fitbit. They interface with the machines and one can track progress, view calories burned, log steps, and more. (Who burned four whole calories on the cross trainer in just a couple minutes? Who? Who?) The equipment also offers connectivity for listening to personal playlists, or use their screens for specialty workouts, music, or TV shows. Each of the weight machines, like the shoulder press, features a diagram showing proper form. Want to know

more? Tap the bar code with your smartphone to learn all about the particular machine. As featured in an earlier edition of Indy Fit, (Visit www.indyeastend. com and click archives for our June 15 edition) the upper level at the Y is home to spin classes. It’s also the TRX training zone and accommodates two shiny rowing machines. Lose yourself to the music with a Zumba class in the main level dance studio. Or, try cardio boxing, body pump, tai chi, and yoga. Prefer swimming? There are classes in aqua Zumba, aqua yoga, plus instruction for youth aged six months to teens, in the RECenter’s two heated pools. Outdoors at the Gingerbread Lane facility, kids can find a basketball court all primed for a basketball camp coached by Trevor Jackson this summer. Want to know more? Visit www. ymcali.org.

Few people think of equestrian sports when considering fitness strategies. But, according to Dr. Alison Stout of Evergreen Health, it can be greatly beneficial to both the mind and body. Good for soul and the body, riding and working to keep your horse happy and healthy is a workout. Lifting and moving bales of hay and bags of feed, as well as brushing and grooming your horse can have numerous benefits for your the body. Core strength is a big plus when it comes to riding. Keeping your torso vertical, back arched, and arms steady against the rocking motion of the horse brings the same burn you can find pumping iron at the gym. Combined with the manual labor that often comes with riders who choose to care for their horse themselves, it is only natural that every part of you gets a workout, building and toning muscle. Legs are essential riding tools and are far from being left out. The natural motion of the horse makes the rider’s legs want to swing as a counter balance, but keeping calves against your horse to urge them forward is a tough workout, especially on the more lazy equines. With knees tucked against the saddle for grip and aesthetics, thighs follow their lead. Working these muscles in tandem with each other has benefits when you’re off the horse as well. As your riding skills improve, so does your balance and coordination. Riding without stirrups or a saddle builds your body’s natural instinct to stay upright. Doing this while in motion is even better because you are training your muscles while building them, and reading your mount’s reactions to the space around them helps predict their, and your, next move. Mental health is also an unexpected benefit to being an equestrian. Working with your hands to take care of your horse provides a sense of satisfaction

only physical labor can provide. Stepping away from screens and other modern distractions clears the mind and seeing the unbridled appreciation your horse shows you after a good grooming or a freshly mucked stall is a true reward that one not only sees, but feels. There are few things in the world more satisfying than going to the barn after a long day of work and hearing a friendly nicker as a happy face peers out at you from a stall. The bonds made with horses are spiritual ones, made with pure honesty based on trust and experience. Equestrian therapy has been used to treat difficulties ranging from the physical to the mental. The rocking motion of the horse can help those who suffer from back and hip pain, people in recovery who need a lowimpact exercise, and even those who suffer from chronic illness like Muscular Dystrophy can simultaneously stretch their muscles and develop more control over the way their bodies move. Mental difficulties ranging from Autism to Post Traumatic Stress Disorder, abandonment, stress, trust issues, and more can also be treated with the compassion of horses. The honesty found in horses is among their many endearing qualities. Children can benefit from riding as well. It teaches patience, compassion, and responsibility. Whether they participate in a pony camp where they learn the basics of horses, safety practices, equipment, and riding whilst simultaneously making friends with common interests, or earning lessons by performing menial tasks around the barn, the confidence and lessons learned will stick with them into adulthood. Whether your riding experience is a daily ritual, or a special event at the ever-popular "dude ranch," horses are one of the most special ways to stay in shape and create a lasting bond outside the normal realm of athletics.

Broadway Reporting From

By Isa Goldberg

Subtly titled, Radiant Vermin, British playwright Philip Ridley’s black comedy arrives with the Brits Off Broadway festival at 59E59 Street Theaters. Ridley, best known for his movie, The Krays, about the titular brothers who made the tabloids in London for their high society lifestyle and their sick crimes, delves into the world of society murders, once again. Here we meet a young couple, Jill (Scarlett Alice Johnson) and Ollie (Sean Michael Verey), who are expecting their first child. Financially challenged, but devoted to building a family, they find themselves in a clandestine meeting with a real estate agent. Miss Dee (Debra Baker), a proper British lady, uses her Mephistophelean influence to sell them on a dream home. Just how they achieve their desired lifestyle is a sublime and lurid treat, performed in 95 minutes, without intermission. Director David Mercatali delivers the absurdist humor with a sharp edge. In fact, the production resonates with shades of Edward Albee, from The Play About The Baby, to the stories Ollie tells about the boy who murdered his cousins in a car accident (Who’s

(& Sometimes Off)

Afraid of Virginia Woolf?). Indeed, this production brings a contemporary sensibility to those earlier stories of survival in the wilds of our society. Breaking from the theatrical convention of the black box theater, William Reynolds’ set is a white box stage in which Johnson and Verey enact a hideous burlesque. The most touching character here is created by Debra Baker, who proves herself to be masterful at revealing the many sides of evil. Paris For The Weekend? In Israel Horovitz’s Out of the Mouths of Babes at The Cherry Lane Theatre Off Broadway, most of the characters are well into their 60’s, if not beyond. So, how Horowitz came up with this title is not entirely clear. Regardless, as a comedic trifle, this new work is all about life’s guilty pleasures and the young at heart who still enjoy them. Estelle Parson, Judith Ivey, and Angelina Fiordellisi arrive at their ex-husband (or boyfriend’s) Paris apartment on the occasion of his funeral. His last mistress, played by a gorgeous young Francesca Choy-

Kee, has made those arrangements . . . and more. To cut to the chase, it seems no one ever leaves this domicile, or at least their sense of attachment to it -- not even the cat, who reappears some decades after his lover watched her get snuffed out in a candle. It’s quite a romp, fueled by Horovitz’s witty one-liners and the apparently selfreferential humor of Ivey as Evvie, and Parsons as the wife of the no-name lothario who was having an affair with Evvie throughout much of their so-called marriage. It’s Angelina Firodellisi, however, as Janice the fatalist among them, whose incorrigible need to take it all so literally, drives this tale of crossed love. While each of the characters clearly dances to her own drummer, director Barnet Bellman sustains a tightly wound pace. Neil Patel’s scenic design is highlighted by an eclectic art collection with works by Sonia Delaunay and Rosie O’Donnell, among others. And some fetching costumes, especially for Choy-Kee, by Joseph G. Aulisi. The Play Of The Mind While American audiences who saw last season’s Constellations on Broadway may be prepared for Nick Payne’s fascination with quantum physics, Incognito, the British playwright’s new work at The Manhattan Theatre Club, feels even more opaque. Delving into the hidden realities and disguises of

IN THE NEWS

twenty characters at different times in their lives, in a variety of locations from California to England, Payne weaves an intriguing tapestry. As the play begins, an eager journalist (Charlie Cox) stalks a famous woman (Geneva Carr) to inform her of his discovery - that her real father is Albert Einstein. What emerges through her search for this identity, however, delves into the frailty as well as the bounty of the brain, and the more urgent matter of memory. There are multiple simultaneous story lines here, but one that is fundamental involves a medical examiner, (Morgan Spector), who in doing an autopsy of Albert Einstein, decides to keep the physicist’s brain for his research. It’s this sort of literal preservation that underscores the metaphysical discoveries at the heart of Payne’s quest. Director Doug Hughes juggles these four actors, with their many roles and dialects, in three converging story lines, so that it all seems to happen seamlessly. David Van Tieghem’s music and sound design, from eerie outer space electronics to piano concertos, moves the action within an empty sphere, created by designer Scott Pask. And Peter Pucci’s provocative choreography, a kind of silent language, is spellbinding, especially as performed by Heather Lind. Most importantly, this outstanding team keeps us engrossed, regardless of the play’s obsessive intellectuality.

today’s birthday by Miles X. Logan

Gary Busey, 1944 If it seems like you’ve seen Gary Busey in a lot of films, it’s because you have. He’s played on a few rock albums you may have heard as well. Busey was a good enough drummer to play professionally – in fact, he dropped out of Oklahoma State University to join a band and eventually played with the likes of Willie Nelson, Leon Russell, and Kris Kristofferson under the name Teddy Jack Eddy. Independent / Courtesy Sony Music Channel Busey was a great football player in high school. The Texas native earned a scholarship to play at Pittsburg State University and took up acting there, where he began developing characters. Soon, Busey was getting work on TV and minor roles in films. In 1974 he was picked by Barbra Streisand to appear in her film A Star Is Born. Ironically, Kristofferson screened for and won the leading man role. Busey’s big break came in 1978 when he was chosen to play the rocker Buddy Holly. Busey lost 30 pounds to play the wiry singer/guitarist and also played the guitar and sang on the film. He won an Academy Award nomination for his efforts. To say Busey has worked steadily ever since is an understatement. He was worked non-stop, appearing in such standouts as Barbarosa, Predator 2, Breaking Point, Fear and Loathing In Las Vegas and "Entourage" among many others – 150 feature films in all. Busey is also remembered for suffering a serious head injury after crashing on his motorcycle – without a helmet on. He has been somewhat of a loose cannon ever since.

The Legend Of Tarzan (PG-13) Him again? Yep. Alexander Skarsgård does the honors this time around, with Margot Potter as Jane. But it’s the wonderful Christoph Waltz as the evil Captain Rom who damn near steals the show. A senastional supporting cast led by Samuel L. Johnson, John Hurt, and Djimon Hounsou give the director, David Yates (Harry Potter II, VII) an ample amount of tools. Nevertheless, something seems to be missing.

It’s funny, and exciting. The President (PG-13) Exiled Iranian film director Mohsen Makhmalbaf has crafted a subtle, yet epic tale of a brutal dictator who, after a coup d’état, is forced to flee the country with his young grandson. Independent Dining Fried Softshell Crab & Orange Sesame Slaw Frying Ingredients

4 soft shell crabs 2 c flour 2 c panko bread crumbs 3 tbsp paprika 1 tbsp cumin 2 tbsp Old Bay seasoning 2 tbsp ground black pepper 2 tbsp granulated garlic 2 tbsp corn starch ½ dozen eggs 1 cup of water 1 gallon of canola frying oil

Coleslaw Ingredients

½ head white cabbage (shaved thin) ½ head of purple cabbage (shaved thin) 2 carrots (peeled and cut into thin sticks) 1 c cilantro (picked and chopped) 2 limes 4 oranges juiced ¼ c crème fraiche ¼ c sour cream ¼ c mayonnaise 2 tbsp honey 1 tsp sesame oil 2 tbsp sesame seeds

Dressing Ingredients

1 oz ginger (peeled and minced) ½ shallot (minced) 2 scallions (sliced thin) ¼ c soy sauce 1 tbsp mirin 1 tbsp rice wine vinegar 1 tsp fish sauce ½ red bell pepper (minced)

Method

Start by heating the oil you will need to fry the softshell crab. If you do not have a small tabletop fryer for your home, you will need a candy thermometer and a large deep saucepot. Clean the softshell crab by snipping off the front area where the eyes are with a scissor. Flip the side of the shell up and clean out the gills. There is a flap on the underside of the crab indicating male or female. Cut that off and the crab is ready to be breaded and fried. Mix the flour, panko, seasoning and corn starch to make the breading. Whisk in the eggs with one cup of water and you have your crab breading.

Whisk together the oj, crème fraiche, sour, cream, mayonnaise, honey, lime juice, and sesame oil to make your coleslaw dressing. Toss the shaved cabbage and carrots together with the dressing, the cilantro, salt and pepper. Mix the dressing ingredients together

for the sauce to dress the crab after it has been fried. To fry the crabs, dip them in the egg mix and coat in the breading. Fry at 350 degrees for two minutes on each side. Place the crab on a bed of the mixed slaw. Garnish with some toasted sesame seeds and enjoy.
