A Walk On Water

On Saturday, September 10, and Sunday, September 11, the surf therapy non-profit organization, A Walk On Water, will hold its second annual event in Montauk from 9 AM to 3:30 PM at Ditch Plains Beach, presented with support from John Paul Mitchell Systems. AWOW enables hundreds of children and adults with special needs, along with their families, to experience the thrill of surfing and its therapeutic qualities. The annual East Coast Surf Therapy Event will celebrate and honor courageous kids, adults, and their families with two beautiful days at the beach where everyone is an athlete. Athletes will feel the thrill and confidence that AWOW can provide. Families will be fully supported and cared for as they share a muchdeserved day of fun. Refreshments from Montauk Juice Factory and lunch courtesy of Ditch Witch food truck will be provided.

The organization works closely with local communities, businesses and its volunteers and watermen, brought together in service of a shared mission — to help others experience the calming and therapeutic effects of the electrifying, living ocean; and, in the process, showcasing the best of surf culture. Families interested in participating in the event are asked to pre-register by Sunday and can do so by visiting www.awalkonwater.org. Additionally, The Montauk Beach House will be hosting a fundraiser for AWOW family and friends on Saturday, September 10, from 6:30 to 9:30 PM, co-produced with Community Collaboration. Hosts will include Julie Gilhart, Lisa Spellman, Jack Luber, and Leilani Bishop. Guests will enjoy cocktails, a silent auction, music provided by a DJ and live band, an awards ceremony for the athletes of the day, raffle tickets to win stellar packages, and a special AWOW presentation.

Peconic Landing End Of Summer Celebration

Peconic Landing will host its fifth Annual End of Summer Celebration and fireworks show this Labor Day weekend. The much-anticipated event is free to all and attracts more than 700 guests each year. Join Sunday at 7 PM for a live performance by the forty-member Atlantic Wind Symphony, which is comprised of musicians from across Long Island. The performance will take place on the patio at Brecknock Hall in Greenport and features popular songs by George Gershwin, John Philip Sousa as well as well-known Broadway hits. It will also include a salute to veterans and current service members. This year the event will also recognize local police, ambulance and volunteer fire department members. The performance is sponsored by the Brecknock Hall Foundation, which has a mission of maintaining the beautification and preservation of the

historic mansion. Fireworks will take off about 8:15 PM, launched over Peconic Landing’s community pond. Guests are asked to bring a blanket and chairs. The 20-minute fireworks show is sponsored by Peconic Landing. J.M.

“Fake Art for Posers,” the second annual benefit for Accabonac House, will be held tonight at Ashawagh Hall in Springs. The night begins with drinks and music at 6 PM and continues with a silent auction at 8 PM. The event keeps with Accabonac House’s mission: to bring great work to Springs. Accabonac House is an artists' retreat in Springs dedicated to the memory of Lisa de Kooning. The house is where Lisa spent part of her childhood. Her father, abstract expressionist Willem de Kooning, traded a painting for the property in 1961, which served as his first studio in Springs as well as a home for his only child, Lisa, and her mother, illustrator Joan Ward.

The show and silent auction bring together artists and musicians from across the country. Kyp Malone of TV on the Radio and Ice Balloons will perform a special solo set. Brooklyn’s Invisible Familiars will bring their dreamy garage sound to the venue. Artists contributing works and attending include Texas’ Gibby Haynes of the band Butthole Surfers and Tim Kerr of Big Boys. Haynes and Kerr join fellow old school Austin alums Sean Powell of Fuckemos, Ice Balloons, Surfbort, and Abe Kinney, as they bring the psychedelic Lone Star to the East End. “Gala In The Garden” is a celebration conceived by Chef Colin Ambrose to give back to the community as well as honor his dear friend, the late Chef Gerry Hayden, and their mutual passion for Slow Food. The gala, which is hosted by Chef Ambrose, Jessica Ambrose, and Estia’s Little Kitchen, will take place at Estia’s in Sag Harbor on Saturday, September 10, raising money for ALS Ride for Life in honor of Chef Hayden, Slow Food East End, and Project Most. As Chef Hayden battled ALS, Ride for Life provided him with care and support. The Slow Food movement influenced Chef Hayden’s cooking and his decision to open the North Fork Table & Inn in 2006. Chef Hayden was a three-time James Beard Award nominee. In the 90's he worked at restaurants in The Hamptons such as Della Femina and East Hampton Point. He went on to work in New York City at the River Cafe as well as Amuse and Aureole. In 2006, along with wife, acclaimed pastry chef Claudia Fleming, he opened North Fork Table & Inn. The North Fork Table & Inn went on to be known as one of the top restaurants on the East End. The evening will begin in Estia’s beautiful garden with music, elegant hors d’oeuvres, wine, and craft beer. Following cocktials in the garden, guests will sit down to a festive multi-course dinner prepared by Chef Ambrose and Chef Paul Del Favero of Harbor Market & Kitchen in Sag Harbor. The intimate dinner is limited to 100 guests.

Guests will enjoy local ingredients prepared by two of the East End’s remarkable chefs. During the evening Slow Food East End will honor its founders who started the movement back in 2004: Ted Conklin, Mary and Tom Morgan, and Kate Plumb. Expect an evening of handcrafted food and beverages, the excitement and fun of a wine auction, and the chance to celebrate the best of the East End while raising awareness and funds. The wine auction will consist of collectable, autographed wine bottles donated from top restaurants and chefs such as Sylvain Delpique of 21 Club, Danny Meyer of Union Square Hospitality Group, Joe Realmuto of Nick & Toni's, Tom Colicchio of Crafted Hospitality, Michael Rozzi of 1770 House, Charlie Palmer of Aureole, John Delucie of Bedford & Co., and many more. Over 20 wineries will donate wine bottles for the acution as well, including Bedel Cellars, Macari Vineyards, Martha Clara Vineyards, Osprey's Dominion Vineyards, Raphael, Shinn Estate Vineyards, and Sparkling Pointe. Pulled Chicken Burrito With Cilantro & Lime Crème Ingredients (serves 4)

4 chicken thighs 2 dried ancho chiles (seeds removed) 2 dried chipotle peppers (seeds removed) 2 quarts of chicken stock 4 whole wheat tortilla ½ c chopped cilantro ¼ c fresh squeezed lime juice 2 avocado 1 head of iceberg lettuce (sliced thin) 3 tbsp tomato paste 1 tbsp siracha or favorite hot sauce ¼ c crème fraich 2 tbsp mayonnaise 2 tbsp sour cream 1 tbsp olive oil 1 onion (rough chopped) 2 carrots (peeled and chopped) 4 stalks of celery (chopped) 2 cloves of garlic 1 bay leaf 2 tbsp ground cumin 1 tbsp Worcestershire sauce 1 tsp Cayenne pepper 2 tbsp paprika

Method

Begin seasoning the chicken thigh with salt and pepper. Sear them skin down in a medium sized pot over medium high heat. When the fat begins to render after about a minute on a high sear, turn the heat down to medium and allow the fat to render and the skin to crisp over a medium heat for about 10 minutes. When the skin is crisp, remove the chicken thighs from the pot. Sauté the chopped onions, celery, garlic and carrots in the chicken fat. When the vegetables begin to soften deglaze the pan with 1 ½ quarts of the chicken stock. Add the soy sauce, Worcestershire sauce, tomato paste, bay leaf, and spices. Bring to a boil and place the chicken thighs flesh down in the liquid. Reduce to a simmer. Cover and place in a 300 degree oven for three hours. After three hours remove the thighs and allow them to cool enough

to be handled. While the chicken is cooling, reduce the cooking liquid by half the blend until smooth. Place the dried chilles in the hot liquid and allow them to steep for 20 minutes then re blend the entire mixture. Once the chicken has cooled, pull the meat off the bone and mix it back into the sauce. Scoop this mixture into the center of a soft tortille, wrap it up,

and place it fold side down on a baking sheet. Bake in the oven for five minutes at 350 degrees. While the tortilla is cooking slice the avocado and mix the sour cream, crème fraich, mayonnaise, lime juice, olive oil and cilantro with a little bit of salt. When the tortilla is baked, cut it in two and serve with the lettuce, creme, and avocado.
