t r e ll a K n o s a Chef J ra Anne Pelliccio By Lau
Chef Jason Kallert is the mastermind behind all of the deliciouslyfantastic food concepts executed this season in the new restaurants and venues at Gurney's Montauk Resort & Seawater Spa. Let's get to know Chef Jason! What is LDV Hospitality? LDV is the realization of a dream to bring 'La Dolce Vita' to life. It is a hospitality group that owns and operates 24 venues across the country. We pride ourselves on people and a dedicated human hospitality approach. To me it is challenging and satisfying, taking care of people and employees, learning. So you're the Corporate Chef for LDV Hospitality. Explain your role with this company: I help create the concepts for all the new restaurants, as well as the
menu development. I draw/build all the kitchens. I hire and train all the back of house staff. Tell us about the chefs that work for you at Gurney's Montauk? I have an Executive Chef at Gurney's, as well as three Executive Sous Chefs. Flavia, the Executive Chef oversees all of the venues and operations, while each Executive Sous oversees his/her venue: The Beach Club, Tillies and Scarpetta. What is your vision overall for Gurney's Montauk? To provide the best hospitality and food in all the Hamptons. What is your favorite thing to cook? Tell us your forté: Not necessarily my forté, but my favorite thing to cook is true Texas BBQ. I have a smoker and a grill on the beach club and we do a BBQ every Saturday with smoked whole short ribs (smoked for 24 hours), St. Louis Ribs, and Jerk Chicken. What's your favorite color? Black What's next for Chef Jason Kallert? Help LDV grow into a very successful restaurant group, but still be able to give amazing hospitality and identity in each of our restaurants and venues.

WELLNESS: Balancing Work And Play! This month we focus on WELLNESS! Being entrepreneurial can be essential to being successful on the East End, with the summer months creating the most business. Let's see how East Enders manage work, enjoy family, and make time for socializing during this season, all while performing their best. NAME: Laura Anne Pelliccio CAREER: Beauty Editor for Hampton Daze Magazine and Spa Manager at Gurney's Montauk Resort & Seawater Spa WEEKLY HOURS WORKED: 50-60 I work in the high volume, fast-paced service business with very high expectations. I've been taking Bikram Yoga to release stress. My eating habits have changed and I sleep better at night too. I feel so amazing and have more energy to perform. At work, I try to delegate more tasks to staff to free some time. I love people, so I focus more energy towards talking to them and limit paperwork. I plan ahead. My family is only two hours away, I visit them often and social media is helpful too. I'm in the Hamptons, so playtime is 24/7!
NAME: Lienette Crafoord CAREER: Owner, HOT'auk Yoga & Hamptons Hot Yoga (www.HamptonsHotYoga.com) In yoga we strive to find balance by bringing strength and flexibility together. Some start more flexible than strong, most start more strong than flexible. Regardless of our starting point, the simple observation of self in yoga class is a powerful time to learn and grow. To simply be present to our bodies -- physical, emotional and spiritual bodies -- while we stretch and strengthen in our yoga class is the path of realizing our selves. A great re-centering from which our truth/ purpose can be more readily recognized. NAME: Susie Baleson CAREER: Wellthily (www.WellthilyEvents.com) This summer, Wellthily and Gurney’s Montauk Resort & Seawater Spa, have partnered to bring the Hamptons its healthiest summer yet. The resort features one-of-a-kind events, rotating fitness classes and healthy in-room amenities. Wellthily is an experience design firm developing creative wellness solutions for the world's top brands in travel, hospitality, and high-rise housing.
NAME: Lidia Cortina Karras CAREER: Owner, SHAN in East Hampton (www.shan.ca) WEEKLY HOURS WORKED: 50-60 It's pretty tough for me with three kids and a new business to keep things in balance, but if I don't take care of everything it will fall apart. So everyday when I wake up I mediate for 20 minutes, which helps me to keep things calm. I try to walk/run three miles a day. I also try to do yoga and some sort of strength excersize. I just started doing acupuncture. I also like to take time to see friends for a coffee and do things with the kids. I love to read, this helps keep my positive mood. I also love going to the spa and just hanging at the beach, we are so lucky to live here for the health benefits of the sea!

The Hampton Classic Horse Show is an annual event that takes place every August and this year I have something exciting to reveal to all equestrian enthusiasts. Point Ashley LLC is a company founded by Ashley Zayat, whose last name you might recognize from the Triple Crown Winner, American Pharaoh. Her family owns Zayat Stables and Point Ashley, their first Grade One winner, was named after her! Ashley created this luxury fashion brand of jewelry for the “women who wants to feel beautiful and is not limited by convention.” Zayat is a graduate of NYU carrying three degrees (Economics, Business Studies, Liberal Studies). Empowering young women to strive for success is her goal, especially in today’s world where society is geared more toward the male professional. Her involvement in the National Association of Female Executives, 100 Women in Hedge Funds and National Association of Professional Women shows she is a force to be reckoned with. She describes her Triple Crown Collection as “unorthodox and free spirit in nature, much like the game of horse racing.” Her favorite piece is the Bridle Chain and mismatch earrings. You may like that as well or maybe one of her other designs which you can see by visiting www.pointashley.com . August brought out more exciting news when Drew Doscher and Donna El-Maadawy exchanged vows on the private beach at Gurney’s Montauk at the beginning of this month. The wedding was top drawer
all the way and I have never seen a couple more in love than these two! They were given a day to focus on just this instead of all the headaches they’ve had to deal with as owners of The Sloppy Tuna in Montauk. Doscher has been in the news quite frequently this summer with claims against his bar and others for matters such as noise, traffic and a list that goes on. Drew has been working with local authorities and the town to adhere to the rules. He has now filed a lawsuit against the Town of East Hampton. Doscher has financially contributed to many efforts in Montauk such as the MCOC Fireworks and the Montauk Playhouse just to name a couple. He was also an honoree at the 2013 Montauk Playhouse Gala for his contributions. The matters he has had to deal with go along with the general mayhem of what Montauk has dealt with this summer had prompted bumper stickers with the saying “Respect Montauk (or Leave)” to be circulated about the town. I hope the Labor Day weekend brings in a more civilized crowd and I wish Drew and Donna many years of happiness and love! As we go into September, I’ll be covering the Golden Door International Film Festival in Jersey City, New Jersey as they celebrate their fifth year! A surprise this year will be the screening of The Bronx Bull which follows the life of boxing legend Jake LaMotta starring William Forsythe and Paul Sorvino. The GDIFF was founded by Bill Sorvino, Paul’s nephew and an esteemed actor himself. For tickets and information go to www.goldendoorfilmfestival.org. If you would like an interview or have something of interest to be covered, you can email me at annemarie@ famehampton.com. Until next time, have a great Labor Day weekend!
