The Good Dinosaur

The holiday season has always been a magical time for moviegoers of all ages. Serious filmophiles know the Oscar contenders often wait until late in the year to come out. There are always a generous amount of holiday-themed movies, which means family fare to while away those vacation days. And then, of course, there are the blockbusters – the big-ticket releases that cost millions to make and promise hundreds of millions in return from the box office. On December 18 Star Wars VII – The Force Awakens hits the theaters. How hot is it? It’s already sold out at least at theaters that are selling advance tickets. Of course, each release in the franchise has garnered great reviews and robust sales, but this one is different for one reason: the original cast from the 1977 debut – at least those of them still alive – are back. That means Carrie Fisher, Mark Hamill, and Harrison

Ford together again. It is not the only reason to see the film by any stretch. The creator and producer of the franchise, George Lucas, has been hard at work for years, and the technological mastery exhibited here is unlike any we’ve seen thus far. And yeah, loveable C-3PO and R2D2 are back. An anxious world awaits. Lesbians are hot. Two of the most important films of the year are about same sex love affairs, and both are Oscar contenders. Well, not quite lesbians: In The Danish Girls Eddie Redmayne plays a woman trapped in the preverbal man’s body preparing for the world’s first sex change operation. It’s a true story and the director Tom Hooper (The King’s Speech) already has Oscar hardware on his mantelpiece. Redmayne is a lock for a nomination. It will be released on Thanksgiving. Carol, starring Cate Blanchett and

Rooney Mara as two women who find themselves hopelessly attracted to each other, is already out in theaters and both stars are being talked up for nominations. The top animated movie of the season is expected to be The Good Dinosaur courtesy of Disney/Pixar. It’s about, yes, an Apatosaurus (the voice of Raymond Ochoa) who inadvertently makes a human friend. You’ll recognize the voices of Anna Paquin, Sam Elliott, and Frances McDormand. Alvin and the Chipmunks check in with The Road Chip on December 23, and no more needs to be said about that. The last crystal goblet and silver spoons are polished and put away after the Thanksgiving feast. It’s time to sit by the fire and luxuriate in the joy of the season, right? Wrong! Who’s got time for joy when your holiday list is as long as the line outside Best Buy on Black Friday? Finish – or start – the Christmas cards. Start – or finish – the shopping. Plan meals. Plan parties. Drag the decorations out of the attic. Trim the tree. Bake the cookies. Go to the kids’ holiday concert at school. Gather coats for the coat drive. Gather food for the food drive. Get some toys for the damn tots. Find your black velvet holiday outfit, or shop for one. Bake some more cookies. Go to a tree lighting and parade. Shop some more. Bake some more. Get pictures taken with Santa.

Do that two or three times. Hit the office holiday party. Hit the neighborhood holiday party. Hit the classroom holiday party. Hit yourself in the head because you forgot the Secret Santa gift. Wrap presents. Run out of tape and paper. Run out for more, plus another set of lights for the tree because a bulb is out. Don’t sleep. Cry. Melt down. Wallow in resentment. Holiday chores and errands are enough to Grinchify even the most energetic and organized elf. What’s a superwoman (or man) to do? Here. Take Kitty Kringle’s hand. Let me show you how to simplify, consolidate, organize, and even eliminate the annual slew of holiday tasks. Holiday cards: Just say no. Unless you have little children, stop it. If you have kids, yeah. You need to get those photo cards out. There are plenty of online sites that make sending photo cards a breeze, especially if you go with e-cards. Shopping: Going to Smith Haven? Seriously? Is it really a bargain, spending two hours to get to the mall and another hour looking for a parking place? Shop

local, shop smart, and shop mindfully. And, if you can, shop all year long. For most of us, the gift list doesn’t change much from year to year. So, if you see a cool gift for your nephew in August, snap it up. Try to remember where you tucked it away when December rolls around. Keeping a holiday notebook helps. Are you a last minute shopper? A certain procrastination-prone son asked

to breed. And if the turkey isn’t defrosted properly, the cooking process will be compromised. Stick To What You Know There is always some new fad. Remember deep-frying the turkey? I tried it, and it was great. And then I read about the guy who died when his turkey blew up. That’s a holiday

memory that lingers. A friend of mine vowed to slow roast his bird on an open fire in his backyard overnight. He had a few beers, fell asleep, and some vermin knocked it off the spit and dragged it way. He ended up with Swanson Hungry Man turkey dinners. Don’t Overcook Remember the old adage that the stuffing inside the bird should reach 160 degrees? It may be true, but unless you stuff it perfectly the rest of the bird will be overcooked and dry. It’s better to take the bird out when it is ready – the inner thigh should be 170 degrees. If the stuffing isn’t quite done, scoop it out and bake it for another 15 minutes or so.

Giblets I live by one simple rule: if you can’t identify what body part is in those little plastic bags inside the bird, don’t cook or eat any of them. Let It Sit A lot of folks carve the bird too early. Maybe you are running late. Maybe the kids are hungry. Maybe you’re hungry. Resist the urge. Take the bird out and let it sit in its juices for a good half hour. Leave it alone. Meanwhile, do the last minute stuff — make gravy, whip up the mashed potatoes, put the biscuits in. The juices in the turkey need to settle, and when it is time to carve, the meat will be moist and tender. Supervise The Serving Process We are not savages, folks. Don’t put out a platter full of meat and let everyone at the table reach in with their forks. You should carve with this cardinal rule in mind: different strokes for different folks. Some like dark meat, some only eat white, there’s always someone who likes a drumstick, and there is always some weirdo at the table – my aunt likes the gizzard and heart. Separate the dark and white and supervise the portioning by asking people what they prefer and then putting it on their plate. Keep The Gravy Hot Ladle gravy on the plates as requested, and then leave a small amount on the table in the gravy dish. But keep most of it warming on the stove. Every 10 minutes or so, offer your guests more hot gravy - you’ll be surprised to see most do. Listen To Martha OK, it doesn’t have to be Martha Stewart, but don’t be bashful – read how the professionals carve, cook, and serve. If something sounds like a good idea, try it ahead of time – don’t experiment on Thanksgiving Day. Don’t Overstuff Stuffing should never be crammed into the cavities. Be loosey-goosey: the stuffing will expand as the turkey juices mingle with the mixture and too much stuffing will affect the total cooking time. If you have too much, make a batch in a separate baking dish and baste it with the juices of the bird.

Stuffed Turkey Breast With An Apple Glaze & Candied Pecans

Ingredients (serves 6) 2 whole turkey breasts (roughly 2 lbs each) 2 c shaved sweet potato 2 large leeks (bottoms washed and cut across into half moons) 1/2 c dried cranberries 1c apple juice Juice of 1/2 a lemon 1 oz bourbon

1/4 granulated sugar 3 tbs butter melted 2 tbs olive oil 1/4 c chopped sage 1/4 c chopped parsley 2 Granny Smith apples (diced) reserve scraps to make sauce 2 Anjou pears (diced) reserve scraps for sauce 3/4 c pecans 1 egg (just white)

1 tsp cinnamon 2 tbsp brown sugar 1 tsp curry powder

Method Start by heating your oven to 350 degrees. Deglaze a hot pan with the bourbon to burn off the alcohol. When the bourbon is reduced by half add the sugar and apple juice. Heat that mixture until the sugar is dissolved. Soak the cranberries for 10 minutes while you sauté the shaved sweet potatoes and leeks in a tbsp of olive oil, just until they are soft and translucent. Meanwhile, between two sheets of plastic wrap, gently pound the turkey breasts until it has an even thickness, about and inch. Season the turkey breast, drain and reserve the liquid used to rehydrate the cranberries. At this point you will want to have the butchers twine handy. Stuff the pounded breasts with the sweet potato, leek, herb, and cranberry filling. Do not over stuff the breast. Roll and truss each turkey breast. In a couple of hot sauté pans sear the skin with a mixture of olive oil and butter over medium high heat to brown the skin. Place them in the oven for 25 minutes remembering to rotate half way through the cooking process. Once the turkey is in the oven you can gently heat the liquid reserved from earlier from the left over scraps from dicing your fruit. Once the fruit is cooked and soft, purée the mixture to make a sauce and fold in the diced fruit. Keep warm to serve. Toss the pecans in the spice mix, and then add the egg white. Mix everything together in a bowl and spread the coated nuts evenly across a sheet tray lined with aluminum foil. Bake at 350 for seven minutes and remove to allow time to cool. When the turkey comes out of the oven snip away the butchers twine and slice into 1.5 inch thick medallions. Coat with the warm sauce and finish by crumbling the candied pecans over the dish. Want a holiday themed comedy? Christmas, Again, is a comedy about the loneliness of an urban Christmas (in this case, Brooklyn). It was written and directed by Charles Poekel, who sold Christmas trees to get by. Critics like it. Speaking of laughs, Tina Fey and Amy Poehler bring us Sisters, a buddy movie about well, two sisters. They return to their childhood home to yes, clean up their messy room. Honest. Somehow there are laughs somewhere in that flimsy plot. Jason Moore (Pitch Perfect) directs, so there is that. It’ll be released on December 18. Then there is Christmas Eve, a starstudded look at the magic night through

the eyes of six different groups of people – during a power outage. Wait a second! Wasn’t New Year’s Eve the exact same plot? It’s due out the first week of December. Ditto In The Heart Of The Sea, said to be a true story that inspired Moby Dick. Chris Hemsworth stars. The release date is December 18. Want a horror move that explores the dark side of the holiday season? Try Krampus, a demon that crashes a family only wanting yuletide cheer. Look for it in theaters in early December. You’ll have to wait to see the new David O. Russell movie. Joy, starring -- OH NO, NOT THEM AGAIN! -Bradley Cooper and Jennifer Lawrence. There has got to be a better way to spend Christmas.

As Thanksgiving approaches, families and friends begin the season of gathering together to celebrate “the most wonderful time of the year.” Here on the East End, for many, households will be bursting at the seams as folks from near and far visit one another for what some consider the best of times and the worst of times: The Holidays. Got family coming and need to spruce up around the house? Not a problem, as there are dozens of places to shop for holiday décor all over The Hamptons and the North Fork. Some of them are even inexpensive, and all of them are sure to knock your stockings off. This holiday season, be sure to visit a tree farm and shop that’s been billed as “The Largest Christmas Shop in the Northeast.” Santa’s Christmas Tree Farm has been a holiday family tradition firmly rooted on the North Fork, boasting over 23 acres growing about 45,000 trees, including Douglas Fir, Concolor Fir, and Blue Spruce. Open every day from April to January from 9 AM to 5 PM, the Cutchogue-based tree farm is one of the few places on the East End where shoppers can cut down their own trees. Although a popular practice in many parts of the United States, it’s nearly nonexistent on Long Island. Workers at Santa’s Christmas Tree Farm offer tips on caring for your tree, resulting in optimum holiday home decor: • Make a fresh cut to remove about a half-inch thick disk of wood from the base of the trunk before putting the tree in the stand. Make the cut perpendicular to the stem axis. Don’t cut the trunk at an angle. • If needed, trees can be temporarily stored for several days in a cool location. Place the freshly cut trunk in a bucket that is kept full of water. • To display the trees indoors, use a stand with an adequate water holding capacity for the tree. As a general rule, stands should provide one quart of water per inch of stem diameter. Be sure to use a stand that fits your tree. The store located at the tree farm site sells hand-made wreaths, blankets, kissing balls, pillows, candles, ornaments, stocking stuffers and much more. Starting on Thanksgiving weekend, Santa will be at the tree farm Friday, Saturday and Sunday from 11 AM to 4 PM and each weekend up to Christmas. The poor schlub who has to do it all by herself. Enlist other family members when it comes to decking your halls, don’t be a martyr. It takes a bit of letting go, a bit of accepting that helpers may not craft the tablescape exactly the way you would. In the long run, though, delegating and decorating together is a win-win. You’re not exhausted and angry plus, you get to spend quality time with the fam. So what if hubby spaced the balls too close together on the tree? He participated! The same strategy applies to wrapping presents. No reason why a child who’s old enough to know where the gifts come from shouldn’t help put the ribbon on Aunt Suzie’s six pack. Cooking: See above. Delegate, delegate, delegate. Work together on those cookies and holiday meals. And when it comes time for the big feast? Everybody brings a dish. Years ago, the Kringle family instituted the law of “everybody brings something” for holiday feasts, and we’ve had relaxed and fun parties ever since. Repeat after me: There is no shame in serving food made by someone else. In fact, I find mushrooms stuffed by the folks at King Kullen, crab cakes crafted by the staff at Citarella, and cookies baked by my buds at Archway taste way better when served by a serene hostess. Parties, Parades, Singalongs, Tree Lightings, Charity Drives: Pick just one a week. Most holiday events are annual affairs, so you know which ones engender joy and which leave you “meh” instead of merry. Attend the events you like the most, and skip the others. Kitty Kringle knows it takes discipline to choose peace over frenzied participation. Just do it. Thank me later, perhaps with a nice card or something from your re-gifting pile. The bottom line, the overarching key to keeping your joy, is channeling your energy to the activities that give you the most pleasure and satisfaction, focusing on those, and saying ‘Bye, Felicia” to the others. If you love writing Christmas cards, go for it. But be willing to punk out on another chore or outing that doesn’t nurture your holiday spirit. All the tinsel and fresh baked cookies in the world will never counteract a harried, resentful, and frantic attitude. Kringle says “relax.” Make your extensive to do list if you must, then decide not to do at least half the items. You’ll have time to kick back, fill your crystal punchbowl with some Borden’s eggnog, stack an heirloom plate with Archway gingerbread men, call up Handel’s Messiah on the iPod, gather loved ones around and remember the reason for the season.

Long Print Shop. Specially selected vendors will have a variety of holiday gifts and cards available for purchase. In addition to the vendors, there are a number of different activities planned. The Railroad Museum of Long Island will erect an elaborate model train display, sure to please old and young alike. For children, there will be facepainting, a craft room, and the most exciting part – Santa Claus will be on site – distributing small gifts to the children. Children can have their photo taken with Santa and will receive a print free of charge. The day’s activities will be rounded out with a bake sale of homemade delicacies and a café for those who get hungry during their visit. A raffle of prize items and baskets will feature goods donated from variety of local merchants, farmers, and local artists.
