Holiday y a w A f f ni S s s e r t S y a Holid

By Alyssa Moudis

Most holiday stress stems from deadlines. Deadlines at work, deadlines for gifts, deadlines for cooking, deadlines for RSVPs, deadlines for decorating, the list never seems to end. The word “deadline” has the same effect on a person as does the noise of an alarm clock. It can make the heart skip a beat in panic. Things that should be enjoyed unhappily become obligations. There are many different products sold today such as candles, incense, air fresheners, and more that carry helpful scents. Calming and rejuvenating the body will alleviate symptoms of stress like fatigue, migraines, blurred vision, and insomnia. The best two helpful scents are lavender and peppermint and each can be added into daily life easily. Lavender is fantastic

for relaxation whereas peppermint is energizing, and both are hated by ticks. Certain parts of the plants can be added to meals and teas but for intensive purposes, their oils are best. The oils can be added to household items such as shampoo, conditioner, body wash, lotions, cleaners, disinfectants, deodorizers, and perfumes. Be sure the oils are diluted when adding them to any skin product, especially the peppermint. You should only be able to pick up a light scent of the oil. Skin can be burned by too many drops of oil. In emergency, olive oil straight from the kitchen is excellent for diluting and great for skin. Oils can also be diluted with water and sprayed atop pillows, beddings, and shirtsleeves (since it is no longer the style to have

Got stress? Use your nose. The scent in candles, essential oils, and even household cleaners can help soothe jangled nerves.

handkerchiefs to carry and sniff ). TV’s “The Chew” once offered a very nice concoction for peppermint oil – 1 part vodka, 1 part water, and some drops of peppermint oil shaken in a spray bottle (5-7 drops per one third liter bottle). Not only are the vodka and water alone great for cleaning glass and sanitizing your house, the added peppermint infuses the rejuvenated scent into your home and can also deodorize not just large spaces but your clothing as well. Peppermint also wards

off rodents in your home. However, when using any home remedy be wary of small children and animals. You don’t want any trips to the hospital added to your to-do list. Additional calming scents are lemongrass, rosemary, chamomile, and vanilla, and a few other rejuvenating scents are ginger, green tea, thyme, and sage. Check out Naturopathica in East Hampton or their site naturopathica. com to shop herbal remedies like these or to experience them during a spa day.

y e k r u T e h With T

By Rick Murphy

I’ve tried all the traditional Thanksgiving birds and often published recipes for them in this space.

My flirtatious stage is over: it’s turkey from here on out. Duck is fun, but it gets a bit unruly

when the whole family is over and there are a half-dozen half eaten bird carcasses lying about. When we were growing up we would occasionally have a plump goose because (whaaaat???) friends would hunt them and present one to the family dressed for cooking. That’s the way it was on the East End, kiddies – we had guns and knew how to use ‘em! Hint: if you haven’t eaten wild geese, you probably won’t like it, and the kids will hate it. That brings us to turkey. When my wife’s family started coming to our house I made the mistake of asking what they wanted. Fresh ham. Leg Of lamb. Osso Buco. How about no, no, and no?

Home For The Holidays 2016

Turkey – love it or leave it. But what to have with it? I make the traditional sides. Growing up on my grandfather’s little farm at the foot of Howard Street in Sag Harbor the decision was made easy, just as it was for the pilgrims in Plymouth way back then. It’s what’s still growing in the garden - Cauliflower, Brussels sprouts, broccoli, and onions. Here are a couple no-frills recipes:

Brussels Sprouts: Clean the sprouts, cut in half, and steam until they begin to soften. Meanwhile cook up some bacon (don’t use microwave bacon, and for god’s sake don’t substitute bacon bits) until it is crispy, and set aside. When the sprouts are ready, coat a baking dish with olive oil and coarsely chop six cloves of garlic. Add the sprouts, salt and pepper and bake (375 degrees), turning occasionally, until they are soft. Break up the bacon on top and serve. Cauliflower/Broccoli au gratin The trick here is to not cook them together – cauliflower gets soft much quicker than broccoli. Break each veg into florets and steam – the cauliflower takes only a couple minutes until al dente. Combine in a baking dish. Add threequarters cup of Half and Half, salt and pepper, and sprinkle breadcrumbs liberally. Toss until the florets are covered equally. Bake for about 15 to 20 minutes at 350 degrees until the florets start to soften, stirring occasionally. Meanwhile heat up about a third of a cup of milk slowly in a saucepan. Take the cheese of your choice (Gruyere is to die for, but the kids like good old American cheese, which of course, isn’t really cheese at all) and stir it into the milk one small piece at a time. Continue the process until you have a rich thick cheese sauce and pour it over the casserole. This is one dish that needs to be served right away – I usually bring it to the table and spoon it on the plates after everyone has already started eating. By the way, real locals know that cranberries ripen this time of year. Where to find them is a guarded secret, but just like in Plymouth, you can find the bogs if you know where to look. Hint: wear boots.

Recipe

By Chef Joe Cipro

P e a c h T a ed Cream p p i h W a ll i n a V Ingredients (serves 6) 1/2 c and 1 tbsp butter 1/2 c and 3 tbsp confectioner's sugar 1 small pinch of salt 1 3/4 c all purpose flour seeds from one vanilla bean 1 tbsp lemon zest 2 egg yolks 1 1/2 tbsp cold milk 1/2 c granulated sugar 3 peaches sliced thin 6 mint leaves 2 c heavy cream 1 tsp vanilla extract parchment paper 1 package dry beans

Method Begin by creaming together the butter, confectioner's sugar, and salt in a food processor. Pulse in the flour, half the seeds from the vanilla bean, lemon zest, and egg yolks. When the mixture begins to come together, and looks like coarse breadcrumbs, add the cold milk. Pat together to form a ball of dough. Ideally you want to get your ingredients into dough form with the least amount of movement. This will help produce a nice flaky tart shell. Roll the dough into a sausage shape and let it rest and cool in the fridge for at least an hour. When you are ready to bake the tart shell, turn the oven on to 350 degrees, then remove the dough from the fridge and slice the dough into flat pieces. Press and form them into your pie tin and cut off any excess dough that may be spilling over the top of the tin. Cut a piece of parchment paper slightly larger than the tin and line the tin with the paper. Fill with beans and bake for 15 minutes. At this point you are ready to prepare the peach filling. Begin by slicing the peaches then cook them with the granulated sugar over medium high heat, stirring often for about five minutes or until they become soft and give up a bit of their liquid. Strain out the liquid and reduce in a sauté pan until it has reached a nice sauce-like consistency. Fill the pre-baked tart shell with the peaches and return to the oven for another ten minutes. While this is happening you can make the whipped cream by whipping the heavy cream, three tbsp confectioners sugar,

vanilla extract, and the rest of the vanilla seeds together in a blender. Let the tart cool for a few minutes when it comes out of the oven. Top with whipped cream and drizzle some of the peach sauce over and enjoy.

If the recent Oscar buzz is any indication, some of the year’s best movies will debut in the coming weeks. Fences, set for release on Christmas Day, has emerged as an Oscar favorite, and why not? It stars two academy favorites, Denzel Washington and Viola Davis. Set in Pittsburgh it’s about a one-time promising baseball player, now a garbage collector, and the complicated relationships with

his wife, son and friends. The screenplay, by August Wilson based on his play, is almost surely going to earn a nomination. If indeed Fences is slated for a Best Picture nomination, it will run into La La Land, a favorite at the Hamptons Film Festival. The film is about a couple: Mia [Emma Stone], an aspiring actress, and Sebastian [Ryan Gosling], a dedicated jazz musician, who are struggling to make ends meet in Los Angeles. Both actors are

getting Oscar buzz as well. Look for it in theaters on December 16. Speaking of the HIFF, another audience favorite, Manchester By The See is already being screened in select theaters. It stars Casey, the Affleck brother who can actually act. Michelle Williams co-stars. Want more Star Wars? You got it. Rogue One: A Star Wars Story is a prequel to the sequel of the third film in the second series, or something like that. Felicity Jones stars and we don’t know if she is related to Luke or Darth or Garth Brooks for that matter. We do know it’s filmed in 3D in LucasVision so yes, we are all in. If you insist on knowing the plot, a rogue band of resistance fighters unite for a daring mission to steal Death Star plans following the formation of the Galactic Empire. And they have lasers. Jessica Chastan stars in Miss Sloane, a political thriller based in Washington, DC. The producers most likely figured our President-elect would be someone

other than Donald Trump, but Chastan nonetheless delivers the goods. The kiddies will start getting cabin fever soon, and The Red Turtle, is a magnificent animated film out of studio Ghibli. It is a must see for kids of all ages and carries a profound message. Moana, about a fading demigod who hooks up with a spirited teenager for a trip across the ocean, is a better bet for the younger set. Amy Adams, Jeremy Renner, and Forest Whitaker star in this year’s obligatory outer space movie, Arrival. Renner is once again shorter than his female co-star, keeping his 12-year streak alive. There is apparently no truth to the rumor his next project is a remake of Thumbelina. Mel Gibson and a few delusional studios still don’t get it: he is box office poison. Send a clear message to the antiSemitic drunken pig and boycott his crappy movie, Hackshaw Ridge. Anyone interested in a raunchy good time – and hey, isn’t that what the holidays are all about – might try Office Christmas Party. Kate McKinnon, who famously played Hillary on “Saturday Night Live,” Jennifer Aniston, Jason Bateman, and Olivia Munn are among the 30-something professionals who get liquored up and act like juveniles. Look for it on December 9. If you actually want to see a Christmas movie during Christmas vacation Almost Christmas, a showcase for Danny Glover, is in theaters now. Want a good bio flick? Natalie Portman channels JFK’s better half in Jackie. and is getting Oscar buzz. It’s due out in mid-December. Want an Oscar sleeper? Academy favorite Jennifer Lawrence teams up with Chris Pratt in Passengers, a Sci-Fi Romance (Yes, that’s a genre now) that sneaks in just in time to be Oscar-eligible. The pair gets steamy.
