Ginger Ducks

One of Kayte Young's favorite traditions is not gingerbread people or gingerbread trees, but ginger ducks. Take your cookies up a notch with a juniper berry glaze for a new spin on a holiday favorite. This recipe is inspired by one from Sara Perry for Bon Appetit

For ginger cookies:

2-1/4 cups all-purpose flour

1 tsp. ground ginger

1 tsp. allspice or ground spiceberry

1/2 tsp. ground cinnamon

1/2 tsp. baking soda

1/2 tsp. salt

1 cup (2 sticks) unsalted butter, room temperature

1/2 cup (packed) brown sugar

1/4 cup molasses

Combine the first six ingredients in medium bowl and set aside. Beat butter and sugar in the bowl of a stand mixer until fluffy. Add molasses and beat until fully combined. Add dry ingredients and beat on low until fully combined. Bring the dough together with your hands, divide into two pieces, and shape into disks. Wrap or store in an airtight container and chill for two hours or more.

Now is a good time to start the glaze, so that it has time to chill.

Once the dough is chilled, preheat oven to 350. Line a baking sheet with parchment. Roll one disk of dough to 1/8-inch thickness. Using the cookie cutter of your choice (preferably duck shaped), cut out cookies. Transfer to the baking sheet. Gather scraps; chill and repeat until most of the dough is used.

Bake the cookies for 10-12 minutes or until almost firm in the center. Leave the cookies on the sheet for two minutes, then cool on racks. Repeat using all the dough. You can store the unglazed cookies in an airtight container at room temperature up to three days or freeze up to two weeks.

For glaze:

1/2-pound powdered sugar

1/3 cup (1 oz.) juniper berries, lightly crushed

1/4 cup half and half

After lightly crushing the juniper berries, combine with the half and half and bring to a simmer in a small saucepan. Cover and chill for five hours. Strain with a fine mesh sieve.

Place powdered sugar in bowl. Whisk in the juniperinfused half and half a tablespoon at a time until glaze is spreadable. Spread the glaze thinly over each cooled cookie. Let stand until glaze sets.

Once the cookies are glazed, store them in an airtight container. It is best to serve within a couple of days.

Chimes of Christmas

Sunday, December 18 at 7pm

WTIU is teaming up with Indiana University’s Singing Hoosiers to bring a holiday tradition into your home with Chimes of Christmas.

Directed by Dr. Chris Albanese, the Grammy-nominated Singing Hoosiers are a regional favorite with more than 70 years of tradition in contemporary vocal performance. They have entertained audiences across the United States and in more than 25 countries spanning Asia, Australia, Europe, and the Caribbean. The ensemble has enjoyed collaborations with Duke Ellington, Bob Hope, Mel Tormé, Sandi Patty, Sylvia McNair, the Indianapolis Symphony, and the Cincinnati Pops under the direction of Erich Kunzel.

Recorded before a live audience at the Indiana University Auditorium, this year’s Chimes of Christmas production features a special performance of “The Ballad of the Brown King.” The piece is Margaret Bonds’ most performed work. It is set to the poetry of Langston Hughes and celebrates African participation in the nativity story through the figure of King Balthazar. The work incorporates elements of jazz and Gospel, set within the context of a lushly orchestrated choral/orchestral score. Along with the Singing Hoosiers, the piece will feature IU’s African American Choral Ensemble and NOTUS (the IU Jacobs School of Music Contemporary Vocal Ensemble) with a solo vocal quartet and full orchestra.

Jazz Notes

Ho, ho, ho, WFIU listeners and jazz fans! ’Tis the season to be jolly, and our weekday afternoon program Just You & Me will kick off its holiday programming on Monday, December 12 with offerings from modern-day artists such as Norah Jones, Gregory Porter, Kurt Elling, and Diana Krall. On Wednesday, December 14 and Wednesday, December 21, host David Brent Johnson will also play your holiday requests.

Afterglow celebrates the most wonderful time of the year on December 23 with “Christmas on the Air,” featuring classic holiday radio broadcasts by singers such as Bing Crosby and Ella Fitzgerald. Night Lights follows at 9 that evening with “A Night Lights Wonderland,” highlighting performances by singer Joe Williams, guitarist Emily Remler, and other classic-jazz artists. Other Night Lights shows this month pay tribute to the jazz heritage of Peanuts composer Vince Guaraldi, the influence of spirituals in jazz, and the centennial of vibraphonist Milt Jackson. Afterglow also catches up on recent vocal-jazz releases, takes a look at days of the week in popular song, does a deep dive into the early years of Frank Sinatra’s career, and starts ringing in the New Year on December 30 with songs and standards about new beginnings.
