L’excellence en héritage

E

n prenant en main cette nouvelle édition de Regards, c’est celui de Jacques Tschumi que vous avez croisé en couverture. Un hôtelier visionnaire qui, aux prémices du XXe siècle, a posé les fondations de notre métier, celui de l’hôtellerie suisse d’excellence.

Dans ce numéro, nous avons souhaité nous arrêter un moment sur l’histoire du tourisme dans notre région. Car c’est avec son essor que le BeauRivage est né en 1861. Et c’est ce même essor qui a conduit Jacques Tschumi à diriger l’établissement pendant vingt-cinq ans. De son besoin d’un personnel parfaitement formé aux métiers de l’hôtellerie est née l’Ecole hôtelière de Lausanne. Ce lien nous unit aujourd’hui encore à cette institution mondialement reconnue qui partage avec nous des valeurs de tradition en mouvement.

Même si ses fondations sont solides, l’hôtellerie doit se réinventer continuellement. Comme à l’époque de Jacques Tschumi, l’un des grands défis à relever est le recrutement de nos personnels. Car nos valeurs ne sont pas seulement des standards de qualité, elles doivent également être investies par des collaborateurs œuvrant avec passion.

Aujourd’hui comme hier, nous pouvons compter sur l’Ecole hôtelière pour former les professionnels de demain. Nous sommes également convaincus que l’évolution des technologies, notamment l’automatisation des procédures, nous permettra de consacrer davantage de temps à notre clientèle, à travers des contacts humains de qualité. Notre passé nous est cher, mais nous sommes résolument tournés vers l’avenir.

W

hen you picked up this new edition of Regards, you found yourself looking at the face of Jacques Tschumi. He was a visionary hotelier who, at the beginning of the 20th century, laid the foundations of our profession – that of luxury Swiss hotels.

In this edition, we wanted to take a look back at the history of tourism in our region, because the Beau-Rivage was born in 1861 with the boom of the tourist industry. And it was this very boom that led to Jacques Tschumi managing the hotel for some twenty-five years. His desire for staff trained to the highest possible level in the professions of the hotel industry led to the creation of the Swiss Hospitality Management School in Lausanne. Throughout the years, we have maintained this connection with the world-renowned institution which shares our values of tradition in motion.

Despite enjoying solid foundations, the hotel sector must constantly reinvent itself. As in Jacques Tschumi’s time, one of the main challenges we face remains the recruitment of our staff. This is because our values are not only quality standards; they must also be maintained by employees who are passionate about their work.

Today, as in the past, we can count on the Hospitality Management School to train professionals in our field of activity. We also firmly believe that technological developments, in particular automated procedures, will enable us to devote more time to our guests through high-quality personal contact. Our past is very dear to us, but our focus is resolutely on the future.

Il porte le joli nom de Ravary. «C’est ainsi que s’appelait le domaine charentais dans lequel j’allais ramasser des melons lorsque j’étais enfant», explique Stéphane Priou. Le melon est en effet à l’honneur de cette nouvelle recette estivale imaginée par le responsable des bars du Lausanne Palace. Du melon donc, mais aussi du pamplemousse, de la fraise et un rien de jus citron. Ravary est sucré, mais pas trop; il révèle aussi une légère amertume très désaltérante. Un long drink qui se boit très frais et qui peut être agrémenté d’un trait de vodka. Avec ou sans alcool, cet été Ravary deviendra vite votre cocktail favori!  12 RE GA R D S n° 1 5

It boasts the attractive name of Ravary. “That was the name of the estate in the Charente region where I used to pick melons when I was a child,” explains Stéphane Priou. And melon is a key ingredient of this new summer recipe dreamt up by the Lausanne Palace bar manager. The melon is joined by grapefruit, strawberry and a dash of lemon juice. Ravary is sweet, but not overly so; it also has a slight bitterness that quenches your thirst. A long drink to be enjoyed chilled that also lends itself to a splash of vodka. With or without alcohol, Ravary will quickly become your favourite cocktail this summer! 

Dream on the Nile A bord d’un bateau centenaire, Voyageurs du Monde réinvente la croisière sur le Nil, au rythme lent des roues à aubes. Resté à quai pendant un demi-siècle, le steam ship Sudan a été remis à flots par Jean-François Rial, PDG de Voyageurs du monde. Si minutieusement restauré qu’il apparaît tel que l’a connu Agatha Christie, avec ses ponts de bois et de cuivre, ses salons feutrés et ses cabines et suites au charme suranné de la Belle Epoque. Embarquez vous aussi pour une croisière exceptionnelle sur le Nil, d’Assouan au Caire, à la découverte de l’Egypte confidentielle. 

Yu Wakizuka a pris la pause dans la salle Sandoz. Un petit moment d’éternité pour ce jeune danseur surdoué, récompensé en février dernier par une quatrième place à la 47e édition du Prix de Lausanne. Offerte par le Beau-Rivage Palace, sa bourse va lui permettre d’intégrer l’une des écoles ou compagnies partenaires de l’événement. Yu Wakizuka est âgé de 17 ans. Originaire d’Osaka, il étudie actuellement à l’Hungarian Dance Academy, à Budapest.  Yu Wakizuka struck a pose in the Sandoz ballroom. A brief instant of eternity for this young, highly gifted dancer who took fourth place at the 47th edition of the Prix de Lausanne in February. His grant, offered by the Beau-Rivage Palace, will enable him to attend one of the schools or join one of the companies which are partners of the event. Yu Wakizuka is 17 years old. Mon assiette en 2050 – et comment nous en sommes arrivés là — Texte Coast Sullenger et Nicolas Moeschler

Nous sommes en 2050 et l’alimentation est revenue au centre de nos vies. Les deux chocs alimentaires de 2008 et de 2035 ont eu un effet catalyseur. Les prix des produits de base, tels que le blé, le maïs, le riz et le soja, ont fait un bond de plus de 100% et des milliards de personnes ont basculé dans la précarité et la faim, notamment dans les régions les plus pauvres. Il semblait donc que les prédictions de Malthus continueraient de se réaliser, la guerre et la peste freinant la croissance démographique et l’humanité excédant structurellement la capacité de la planète à nourrir une population mondiale toujours plus nombreuse – jusqu’à 9 milliards d’êtres humains aujourd’hui! Mais ces prévisions pessimistes avaient sousestimé notre capacité d’innovation! La première Révolution verte en est la meilleure preuve: dans les années 1970 et 1980, la production a connu un boom porté par un recours massif aux produits chimiques et les innovations dans les machines. La production abondante a suivi le rythme de la demande, au détriment toutefois de la fertilité des sols, de l’environnement et de la biodiversité.

En 2050, l’utilisation des produits chimiques a marqué le pas en raison de l’augmentation du coût du gaz naturel, de la potasse et du phosphore, mais aussi grâce aux innovations introduites dans le domaine des engrais biologiques, de la protection des cultures et des pesticides.

L’enrobage microbien des semences est devenu une pratique courante, qui a contribué à restaurer la fertilité des sols mise à mal par de nombreuses années d’utilisation excessive de produits chimiques.

Je décide d’aller marcher à l’heure du déjeuner. Pendant que je bois mon shake de super-aliments, je ne suis pas mon trajet habituel et me retrouve à côté d’une boucherie. Le bœuf de pâturage suisse a l’air délicieux, mais est beaucoup trop cher pour moi – plus de 100 francs le kilo! Bien que je ne sois pas très amateur de viande in vitro, elle coûte tout de même plus de deux fois moins cher.

En 2035, la flambée des prix des céréales a poussé les responsables politiques à appliquer des taxes plus agressives sur toutes les viandes de bœuf issues de parcs d’engraissement. La population s’est résolue à diminuer sa consommation de viande pour des questions de santé et pour répondre à l’urgence d’enrayer les atteintes à l’environnement. Les autres sources de protéines, par exemple le poisson, mais aussi les légumineuses (lentilles, pois chiches), les algues et les insectes, sont en plein essor.

Comme je travaille tard, je me régale avec un shake santé rafraîchissant saveur «lassi à la mangue». C’est un shake de chou kale, de graines de chia et d’autres super-aliments, enrichi avec des protéines d’algues. Il n’en a pas moins un goût délicieux, presque addictif. Le «lassi du soir» est une préparation spéciale pour la fin de journée, contenant une pointe d’alcool synthétique – pas besoin d’aller au bistro et on peut rentrer à la maison en voiture!

Jetons un regard en arrière sur l’incroyable histoire de l’alimentation et les solutions durables que nous avons développées.

Mais de nombreux défis restent à relever! La population mondiale atteint presque la barre des 9 milliards et l’écosystème sur lequel repose notre alimentation est fragile. Les pays en développement restent les grands perdants et n’ont toujours pas accès à une alimentation adéquate. Tous les citoyens de la planète doivent agir en faveur d’un changement positif et peuvent commencer tout simplement en mangeant bien! 

on réveil sonne. J’attrape mon téléphone et commence à faire mes courses pour le petit-déjeuner.

L’application «My-Food» me signale une légère carence en vitamine A et en fer et me suggère du saumon élevé sur la terre ferme, avec des épinards et des lentilles. Je préfère commander mon petit-déjeuner favori. Vingt minutes plus tard, j’ouvre mon portail sécurisé afin de récupérer un repas préparé localement et présenté dans un emballage minimal. Pas besoin de me compliquer la vie avec le paiement, ce sera débité automatiquement via l’app, basée sur une blockchain. Je suis également ravi de gagner des points de santé, ce qui me permet de rester dans la catégorie d’assurance la plus économique! Mon petit-déjeuner se compose de fruits frais sur un yaourt à base de pois, d’un porridge à l’avoine «GM5» et d’un jus d’orange frais bio. Le plat personnalisé est un gâteau comestible créé sur imprimante 3D, riche en protéines dérivées d’insectes. Quelle magnifique façon de commencer la journée!

Prices for basic staples like wheat, corn, rice and soybeans spiked up over 100% and billions of people, mainly in poorer regions, were thrown into precarity and hunger. And so it seemed that Malthus’s predictions would keep coming true, that war and pestilence would act to keep population growth in check, and that humans had structurally outrun the planet’s capacity to sustain growing numbers – now up to nine billion! But those gloomy forecasts underestimated our ability to innovate! The first so-called Green Revolution was a testament to this as production boomed, driven by massive use of chemicals and innovations in machinery in the ’70s and ’80s. Bountiful output kept pace with growing demand but at the expense of soil fertility, the environment and bio-diversity.

M y dinner plate in 2050 a nd how it got there

M

y alarm goes off, I grab my phone and start shopping for breakfast. “My-Food” app signals a minor vitamin A and iron deficiency and suggests land-based farmed salmon with spinach and lentils. I prefer to order my favourite breakfast. Twenty minutes later I open the secure portal in my front door and recover a minimally packaged and locally prepared meal. No hassle with payments, it’s automatically debited via my app that works on a blockchain. I’m also happy earning health points that keep me in the cheapest insurance category! My breakfast is composed of fresh fruit on top of yogurt derived from peas, “GM5” oat porridge and fresh squeezed bio orange juice. The special personalized feature is a 3D printed edible nutrition cake that contains loads of derived insect protein. What a great way to start the day!

But in 2050, chemical usage declined, driven by the higher cost of natural gas, potash and phosphorus but also thanks to innovation of new bio-derived fertilizers, crop protection and pesticides. Microbial coating of seeds has become widespread and has helped restore soil fertility destroyed by many years of chemical misuse.

I decide to go for a walk over lunch. As I am drinking my superfood shake, I take an unusual route and end up next to a butcher shop. The grass-fed Swiss beef looks delicious but is totally unaffordable for me at over CHF 100 per kilo! I’m not a big fan of in-vitro meat even though it’s less than half the price.

The spike in grain prices in 2035 pushed policymakers to pass more aggressive taxes on all feed-lot beef. The population resolved to eat less meat in the name of better health, and to make an urgent effort to stem damage to the environment. Other protein sources like fish as well as pulse crops (lentils, chick peas), algae and insects have boomed.

Working late, I enjoy a refreshing “mango lassi” flavoured health shake. The mix is full of kale, chia, and other superfoods and fortified with algae protein but it even has a delicious and almost addictive taste. “Late Lassi” is a special concoction for the evening, with a little added synthehol – no need to hit the pub and no problem to drive the car home!

Look back in time and consider the incredible story of food, and how we achieved sustainable solutions. But many challenges remain! The earth’s population is nearly nine billion and the eco-system supporting food is fragile. Developing countries are still left behind and suffer lack of access to adequate nutrition.

Le 57° Grill fait monter la température Changement d’ambiance au Château d’Ouchy. Le restaurant aux tonalités lacustres a laissé place à un grill où la viande est reine, et cuite dans les règles de l’art. — Texte Jennifer Segui

abord, il y a l’odeur, ce doux fumet qui, instantanément, provoque chez tout gourmand qui se respecte une irrésistible envie de goûter. Ces enivrantes effluves de poulets savamment rôtis montrent le chemin vers la cuisine où le spectacle s’offre aux quelques convives qui, fins connaisseurs, se sont attablés au comptoir avec vue plongeante sur le spectacle: volailles qui tournent lentement sur la broche monumentale, flammes dansantes audessous des pièces de bœuf surveillées par la brigade. Ouvert en mars dernier, le nouveau restaurant du Château d’Ouchy est une véritable expérience. «Avec ce comptoir et cette cuisine ouverte, nous avons vraiment voulu créer une interactivité avec nos clients à travers les odeurs, les bruits, la chaleur, explique Yves Chavaillaz, directeur de l’établissement. Le live cooking est une vraie tendance et les gens aiment le côté spectaculaire.»

SIMPLICITÉ ET QUALITÉ

Côté carte, Didier Schneiter, chef exécutif du Beau-Rivage Palace SA, a misé sur la convivialité: nombre de plats, comme les généreuses pièces de viande, sont servis à partager. Mais aussi sur la simplicité, une certaine rusticité et bien sûr la qualité. Aux côtés des poulets fermiers de la Gruyère, le carnivore pourra ainsi se délecter d’agneau de lait du Valais ou de pavé de veau, tous deux bios. Pour les amateurs de viande rouge, le bœuf suisse des alpages, la côte de bœuf Irlande Hereford ou encore le T-Bone Angus suisse sont cuits à 57°C à cœur, la température idéale pour une grillade parfaite, qui a logiquement donné son nom au restaurant.

En préambule de ces pièces de choix, le chef a créé quelques surprises avec les très américains Clam Chowder ou Crab Cakes en entrée, ou, en dessert, les délicieux ananas caramélisés à la broche ou l’inoubliable Paris Brest. «J’avais envie d’ajouter des choses simples, que j’aime bien et qui font instantanément voyager», explique Didier Schneiter. Autour du homard entier du Maine ou du poulpe grillé et houmous aux épices Kebab, eux aussi à la carte, le chef a tout de même dû faire une concession au nom de la tradition: les filets de perches du lac façon meunière sont toujours un must have des bords du Léman. 

Finies donc l’ambiance lac et la cuisine du marché, place au top du top de la viande d’ici et d’ailleurs, préparée en live cooking.

Pour Yves Chavaillaz, ce concept fort, inédit à Lausanne, répondait à une vraie demande: «Les clients de l’hôtel, mais aussi ceux du Beau-Rivage Palace ou de l’Hôtel Angleterre & Résidence, interrogeaient fréquemment nos concierges sur un endroit où déguster de la bonne viande. Et puis, ce genre de table est très à la mode dans les capitales comme Londres ou Paris, complètement dans ce trend qui consiste à manger moins de produits carnés mais de meilleure qualité.»

Une thématique dans l’air du temps qui nécessitait plus qu’un simple coup de pinceau dans ce lieu idéalement placé au bord du Léman, avec vue imprenable sur le lac et les quais d’Ouchy.

Après quatre mois de travaux, et un relooking complet confié à un bureau d’architectes londonien, voici un décor urbain et chaleureux dans lequel la pierre grise, emblématique de cette folie néo-gothique, s’accorde avec le bois de noyer. Où le salon d’accueil invite à ralentir, entre cheminée et canapés moelleux.

Où les meubles sur-mesure, fauteuils de cuir et tables aux allures de billot de boucher en marbre, sont animés par un personnel trendy, Stan Smith aux pieds et vêtu de jeans, chemise à carreaux et tablier de toile aux bretelles de cuir pour une ambiance chic et décontractée.

Le b.a.-ba de la grillade à la maison selon le chef Didier Schneiter La viande: on opte pour une viande marbrée, à l’os, pour le côté esthétique mais aussi pour sa tenue à la cuisson; carré d’agneau ou côte de bœuf que l’on choisit bien marbrée et chez son boucher.

Marinade ou pas? Pour ces belles pièces de viande, je préfère jouer l’authenticité en les cuisant brutes. On peut faire une petite sauce, par exemple Teryaki, à proposer au service.

Ou un bon poivre. Les marinades conviennent mieux pour le poulet par exemple, que j’aime préparer à l’indienne, avec des épices, du yogourt.

Braise ou gaz? Personnellement, j’emploie du charbon de bois bio. Surtout, il faut être patient pour la grillade, bien attendre qu’il n’y ait plus de flammes et que les braises soient recouvertes de cendres avant d’y placer la viande.

L’astuce du chef: faire pocher votre volaille une vingtaine de minutes avant de la mettre à la broche pour une cuisson plus uniforme.

The 57° Grill turns up the heat A change of atmosphere at the Château d’Ouchy. The restaurant with its lakeside colours has been replaced by a grill where meat rules and is cooked just how it should be.

T

he first thing that hits you is the smell, a mild aroma which immediately awakens an irresistible desire to taste in any self-respecting gourmet. These intoxicating smells of skilfully roasted chicken are wafting from the kitchen, where a few true aficionados have taken a seat at the counter to enjoy the show first-hand: chicken turning slowly on a monumental spit, flames dancing below cuts of beef under the watchful eye of the kitchen brigade. Open since March, the new restaurant at the Château d’Ouchy is an experience in itself. “With the counter and the open kitchen, we wanted to create an interactive relationship with our guests through the smells, the noises and the heat,” explains Yves Chavaillaz, the restaurant manager. “Live cooking is all the rage and people like the spectacular side.”

SIMPLICITY AND QUALITY

Didier Schneiter, Executive Chef at the Beau-Rivage Palace, has put conviviality on the menu: like the generous cuts of beef, numerous dishes are designed to be shared. He has also emphasised simplicity, a certain rusticity and, of course, quality.

Alongside the free-range chickens from the Gruyère region, meat lovers can also savour Valais sucking lamb or a slab of veal, both produced organically. For lovers of red meat, the Swiss beef raised in the mountain pastures, the prime rib of Irish Hereford or the Swiss Angus T-bone are cooked at 57° C at the centre, the ideal temperature for perfectly grilled meat – hence the name of the restaurant.

To whet the appetite before enjoying these choice cuts, the chef has created a few surprises with typically American clam chowder and crab cakes, as well as delicious pineapple caramelised on a spit or the unforgettable Paris Brest for dessert. “I wanted to add some simple things that I like and that immediately whisk guests off to distant horizons,” explains Chef Schneiter. Even though he offers exotic whole Maine lobster or grilled octopus with kebab-spiced hummus, the chef has nevertheless made a concession in the name of tradition: the perch fillets, fished from the lake and prepared meunière- style, are still a must on the shores of Lake Geneva. 

The fundamentals of home barbecuing according to Chef Didier Schneiter Meat: opt for marbled meat on the bone, not only for the aesthetics but also for the way it cooks – a nicely marbled rack of lamb or prime rib from the butcher.

Marinade or not? For these delicious cuts of meat, I prefer going for authenticity by cooking them as they are. You can always prepare a sauce, for example Teriyaki, which can be proposed when serving. Or a good pepper. Marinades are better suited to chicken, for example, that I enjoy preparing Indian-style with spices and yoghurt.

Hot embers or gas? Personally, I use organic charcoal.

It is important to be patient when barbecuing – wait until the flames have died down and the embers are covered with ash before adding the meat.

The chef’s tip: poach your chicken for twenty minutes before putting it on the spit to ensure more even cooking.

Gone are the lakeside atmosphere and market cuisine, replaced by the very best meat from here and elsewhere prepared right before your eyes. For Mr Chavaillaz, this strong concept new to Lausanne satisfied a genuine demand: “The hotel guests as well as those staying at the Beau-Rivage Palace and the Hôtel Angleterre & Résidence would often ask our concierges where they could taste some really good meat. What’s more, this kind of experience is very fashionable in capital cities such as London and Paris, reflecting the trend of eating less meat, but of better quality.”

Completely in step with its era, the concept required more than a simple lick of paint on the walls of this restaurant, which enjoys an ideal location on the shores of Lake Geneva with a sweeping view over the lake and quays of Ouchy. After four months’ work and a face-lift entrusted to an architect's office based in London, the premises now boast a warm, urban décor combining grey stone, so emblematic of this neo-Gothic folly, and walnut wood. Here, the reception area offers guests the chance to take it easy between the open fireplace and the soft sofas. Here, the trendy staff – wearing Stan Smith sneakers, jeans, checked shirt and canvas apron with leather straps – move effortlessly between the tailor-made furniture, leather armchairs and tables reminiscent of butchers’ marble blocks, to create a chic yet relaxed atmosphere.

Une bibliothèque au Lausanne Palace Pour ancrer son engagement en faveur de la création littéraire, le Lausanne Palace crée avec Le Livre sur les Quais un espace ouvert à tous, dédié aux livres.

ntime et feutré, le salon, dont les murs sont entièrement recouverts de bibliothèques, se situe exactement entre le LP’s Bar et une magnifique terrasse avec vue imprenable sur le lac et les Alpes. «C’est un endroit idéal pour lire et j’ai toujours regretté que les quelques ouvrages que l’on y trouve aient une valeur principalement décorative», commente Ivan Rivier, directeur de l’établissement. Au fil d’une conversation avec Sylvie Berti Rossi, directrice du salon Le Livre sur les Quais (lire l’encadré), l’idée a germé de faire vivre ce salon en y proposant une sélection d’œuvres, dont celles des auteurs présents à la manifestation. Il n’a pas hésité une seconde. «C’est une belle manière de marquer notre partenariat avec cet événement littéraire, comme d’ancrer notre soutien à la culture dans l’hôtel», s’enthousiasme-t-il. Ravie de cette vitrine offerte aux écrivains du salon, Sylvie Berti Rossi précise que, sur les étagères, on trouvera des ouvrages en français mais aussi en anglais notamment, puisque Le Livre sur les Quais accueille également des auteurs anglophones. De quoi faire le bonheur des hôtes non francophones. «La collection s’étoffera au fil du temps, nous n’allons pas remplir totalement les rayons dans l’immédiat», souligne-t-elle.

Un salon les pieds dans l’eau Du 6 au 8 septembre 2019, la 10e édition du Livre sur les Quais aura lieu à Morges. La manifestation, qui se tient au bord du Léman et dans une foule d’endroits au cœur de la ville, joue l’originalité. Dédicaces, lectures et rencontres se déroulent tantôt sous tente au bord de l’eau, dans des salles du château et du centre-ville, voire dans des boutiques ainsi que sous forme de croisière, à bord d’un bateau de la CGN. L’ambiance, très conviviale, favorise les échanges entre auteurs et lecteurs et contribue largement au succès de cet événement. www.lelivresurlesquais.ch

Les volumes seront à disposition des résidents et des Lausannois, qui pourront les consulter sur place. Une façon agréable de découvrir de nouvelles plumes. Pour cela, il suffira de laisser ses coordonnées, ce qui permettra en outre de constituer un cercle d’amateurs de littérature. «L’endroit se prête bien à de petites manifestations, type lectures ou rencontres avec des écrivains, qui peuvent intéresser nos clients et attirer un public venu de l’extérieur», relève Ivan Rivier. Encore une manière de faire vivre la culture qui, rappelle-t-il, se nourrit d’échanges: «Nous hébergeons régulièrement des artistes dans le cadre de notre soutien à des événements. Mais j’ai à cœur que le Lausanne Palace soit véritablement un acteur sur ce terrain, un lieu d’interactions.»

De fait, l’établissement a organisé cet hiver et le précédent des rencontres entre le public et les auteurs en lice pour le Prix des lecteurs de la Ville de Lausanne. Il a aussi hébergé Lausan’noir, un festival consacré aux polars. Dans d’autres domaines, il a accueilli la performance d’un artiste du tag. Et il ouvre son bar à des musiciens locaux trois ou quatre soirs par semaine. Le samedi, un DJ assure l’ambiance. De quoi satisfaire de nombreux publics. 

A library in the Lausanne Palace To assert its commitment to literary creation, the Lausanne Palace has created, with Le Livre sur les Quais, an area dedicated to books.

I

ntimate and hushed, with its wall entirely covered by bookshelves, the lounge is located between LP’s Bar and a magnificent terrace with stunning views over the lake and the Alps. “It is an ideal place to read and I have always regretted that the works that are found here are primarily decorative”, says Ivan Rivier, the hotel manager. As a conversation unfolded with Sylvie Berti Rossi, Director of Le Livre sur les Quais fair (see box), a seed was planted that grew into the idea of bringing this lounge back to life by housing a selection of works, including those of the authors attending the event. She didn’t waste another second. “It is an excellent means of promoting our partnership with this literary event, anchoring our support for the cultural sphere in the very hotel itself,” she continues.

Delighted by this showcase for the writers at the fair, Ms Berti Rossi emphasizes that the shelves contain works in both French and English, as Le Livre sur les Quais also welcomes English-language authors. It is a boon for our non-French-speaking guests.

"The collection will grow over time – the shelves won’t be filled immediately,” she stresses.

THE FOUNDATIONS OF A LITERARY CIRCLE

A fair only a stone’s throw from the lake From 6 to 8 September 2019, the tenth edition of Le Livre sur les Quais will be held in Morges. Held on the shores of Lake Geneva and in a host of other locations in the heart of the city, the event promotes originality. Book signings, readings and encounters are organised in a marquee on the lake shore, in the rooms of the castle and the centre of Morges, and even in certain boutiques as well as during a cruise on a boat operated by CGN. The highly convivial atmosphere is conducive to dialogue between authors and readers and plays a major part in the success of this event. www.lelivresurlesquais.ch

The books will be available to hotel guests and the residents of Lausanne, who can consult them on-site – a pleasurable way to discover new authors. All you have to do is leave your contact details, which will also be used to create a circle of literary aficionados. “The place is ideal for small events, such as readings or meetings with authors, which might be of interest to our guests and could attract people from outside,” adds Ivan Rivier. Yet another way of bringing culture to life, which, as he reminds us, is fostered by dialogue: “We regularly welcome artists to our hotel through our support for events. Nevertheless, I want the Lausanne Palace to become an actor in its own right in this field, a forum for interaction.”

Last winter and the one before that, the hotel organised encounters between the public and the authors shortlisted for the Prix des Lecteurs awarded by the City of Lausanne. It has also hosted Lausan’noir, a festival devoted to thrillers. In other fields, it has been the scene for the performance by a graffiti artist. LP’s Bar is also open to local musicians three or four evenings a week, and on Saturdays a DJ provides some lively atmosphere. «LES FILMS M’ONT PROCURÉ TRÈS TÔT DES EXPÉRIENCES DE NARRATION MARQUANTES»

Interviewé dans le cadre du festival de cinéma Rencontres 7e Art Lausanne, l’écrivain, scénariste et réalisateur new-yorkais Paul Auster s’est longuement confié à Regards. Spontané et intarissable sur sa vie et sa carrière.

utre l’écriture d’une quarantaine d’ouvrages, parmi lesquels de nombreux succès littéraires comme Trilogie new-yorkaise, Moon Palace ou Léviathan, l’écrivain amoureux de cinéma compte également la réalisation de trois films à son actif. C’est au Beau-Rivage Palace, partenaire des Rencontres 7e Art Lausanne, qu’il nous a fait l’immense honneur de nous accorder une interview exclusive, dans un français qu’il maîtrise parfaitement. Une rencontre placée sous le signe du cinéma, mais pas seulement.

REGARDS Alors que vous aspiriez à une carrière de cinéaste, pour quelle raison avez-vous privilégié l’écriture?

PAUL AUSTER Devenir cinéaste était une tentation à l’adolescence, mais j’étais timide et je ne me pensais pas capable de diriger des acteurs. Cela me paraissait trop compliqué de parler et de m’imposer dans une pièce emplie de personnes. Aussi, à l’aube de l’âge adulte, l’écriture m’a semblé plus adaptée à mon caractère.

A quel moment avez-vous développé une passion pour le cinéma?

Mon amour pour le cinéma est né durant mon enfance, les films m’ont procuré très tôt des expériences de narration mar26 RE GA R D S n° 1 5

quantes. Ils m’ont donné une ouverture sur le monde que les livres ne pouvaient pas m’apporter, car je n’étais pas en mesure de comprendre la «grande» littérature à l’âge de 9 ans.

Est-ce qu’un film vous a particulièrement marqué durant votre jeunesse?

Oui, j’avais 6 ans quand j’ai vu le film de science-fiction La Guerre des mondes, tiré du roman de H. G. Wells. Il a provoqué en moi un vrai cataclysme théologique.

En constatant que les croyants subissaient le même sort que les autres, j’ai pris conscience de la non-existence de Dieu.

«Les comédiens utilisent les mêmes ressorts que les écrivains. Ils doivent donner vie à des personnages, je m’évertue à faire la même chose à travers l’écriture.»

Ce constat a déconstruit ma vision du bien et du mal.

Quid de votre première émotion littéraire?

Je me souviens d’avoir acheté avec mon propre argent de poche, à l’âge de 11 ans, Docteur Jivago de Boris Pasternack.

La traduction anglaise venait de sortir et ce livre apparaissait dans mon imaginaire comme un ouvrage fascinant. J’ai lu les deux premières pages, je n’ai rien compris, j’ai essayé de le relire et ce fut si laborieux que je n’ai jamais poursuivi ma lecture au-delà de ces deux pages (rires).

Ceci dit, par la suite, j’ai quand même lu plusieurs livres de Pasternack.

Finalement l’amour du cinéma vous a mené à l’écriture qui vous a ensuite offert la possibilité de revenir à votre première passion.

On peut y voir une certaine ironie?

On pourrait le voir ainsi, mais mon incursion dans le cinéma a eu lieu simultanément à mon travail d’écriture. A vrai dire, j’avais déjà écrit plusieurs scénarios de films muets qui ne sont jamais sortis. Je suis revenu au cinéma grâce à Wayne Wang qui m’a approché après la parution de mon conte, Le Noël d’Auggie Wren. Il en a fait un film et nous avons ainsi entamé une collaboration qui s’est poursuivie avec Smoke, et Brooklyn Boogie.

RENCONTRE

Le tournage de ce dernier était prévu sur six jours: trois jours en juillet et trois en octobre. Le premier jour de tournage, il faisait une chaleur torride à New York, au moins 40°! Wayne est tombé malade et il m’a dit: «Paul, remplace-moi sur le plateau, tu peux le faire!» C’est ainsi que je me suis retrouvé à diriger les acteurs et tout s’est très bien déroulé. J’avais dépassé les appréhensions du garçon timide.

Trois ans plus tard, vous étiez prêt à vous lancer seul dans la réalisation de Lulu on the Bridge. Quels souvenirs gardez-vous de ce tournage?

J’en suis fier mais cela a été une bagarre continuelle. Nous avions peu de moyens, il fallait être inventif, trouver des solutions. Heureusement, j’ai été bien entouré. Par exemple, pour la scène de la noce, Adelle Lutz (ex-femme de David Byrne) a été très inventive: je n’avais plus d’argent pour les costumes, elle a trouvé le moyen de faire une robe de mariée avec des plumes de paon. C’était fabuleux. Je suis également très reconnaissant à Willem Dafoe, auquel j’ai envoyé le scénario un dimanche. Il a accepté le rôle le lundi et quand il est venu répéter trois jours plus tard, il le connaissait à la perfection. Willem nous a sauvés. Pour ma part, j’étais extenué à la fin du tournage.

Vous avez pourtant décidé de renouveler l’expérience neuf ans plus tard avec The Inner Life of Martin Frost.

Oui, mais le tournage fut beaucoup plus léger, nous étions une équipe réduite composée de 16 personnes, alors qu’un tel film nécessite généralement le triple d’individus. J’ai découvert à ce momentlà un esprit de solidarité rare. Tout le monde courait du matin au soir et se battait pour le même but! Cela reste un souvenir fort.

L’écriture est un travail solitaire, à l’inverse du cinéma qui nécessite une collaboration de groupe.

Comment avez-vous appréhendé cette activité de réalisateur totalement différente de la rédaction d’un livre?

Je l’ai à chaque fois vécue comme une bouffée d’air. Un retour à ma jeunesse durant laquelle je pratiquais beaucoup de sport d’équipe, notamment du basket et du baseball. Après avoir passé de nombreuses années enfermé à écrire, j’étais heureux de trouver une nouvelle manière d’exister durant une période.

Cela m’a fait du bien.

Quels enseignements avez-vous retirés de vos films?

J’ai beaucoup appris sur la nature humaine. J’ai toujours tout fait pour qu’il règne une vraie quiétude sur les sets, ce qui n’est pas évident. Un tournage peut vite dégénérer et devenir un enfer. J’ai aussi découvert des similitudes entre le métier d’écrivain et les comédiens. Je comprends parfaitement ces derniers, car ils utilisent les mêmes ressorts que les écrivains. Ils doivent donner vie à des personnages, je m’évertue à faire la même chose à travers l’écriture. Je pense que cela m’a aidé à bien les diriger.

Prévoyez-vous de réaliser d’autres films?

Non, car il faut de l’énergie pour faire un film, je préfère garder cette énergie

pour l’écriture. J’ai encore beaucoup de choses à dire dans mes livres.

Votre dernier livre, 4 3 2 1, semble être une déclaration d’amour au cinéma, n’est-ce pas votre livre le plus cinématographique?

Pas vraiment, car il y a peu de scènes et peu de dialogues. Archie Ferguson est le seul personnage du livre qui est vraiment passionné de cinéma. Je crois que Le maître des illusions est mon roman le plus cinématographique. Mais l’interprétation d’un livre reste très personnelle.

Vous qui êtes considéré comme l’écrivain du hasard et de la contingence, pouvez-vous citer un fait du hasard qui vous a récemment inspiré ou interpellé?

Je pense que ma présence dans le cadre de ce festival est un bon exemple. Il s’est passé quelque chose dans le cosmos, car à priori, rien ne me prédestinait à venir présenter mes films à Lausanne, aux côtés de grands réalisateurs accomplis que j’admire. Mes films furent des échecs à leur sortie, j’imaginais qu’ils étaient enterrés à tout jamais. Et les voilà ressuscités! C’est merveilleux. Je suis vraiment extrêmement touché d’avoir été invité aux Rencontres par Vincent Perez. C’est pour moi un grand honneur et un vrai bonheur d’être ici. 

n addition to writing some forty works including numerous literary successes such as The New York Trilogy, Moon Palace and Leviathan, this cinema-loving writer has also directed three films. It was at the Beau-Rivage Palace, a partner of the Rencontres 7e Art Lausanne, that he honoured us with an exclusive interview in perfect French. An encounter to talk about the cinema and many other things.

REGARDS You wanted to make a career as a film-maker, so why did you focus on writing?

PAUL AUSTER Becoming a film-maker was a teenage dream, but I was shy and didn’t think I’d be capable of directing actors. It seemed too complicated to talk and assert myself in a room full of people. Moreover, on the cusp of adulthood, writing seemed more in tune with my character.

When did you develop a passion for the cinema?

My love of the cinema was born during my childhood, and films offered me striking narrative experiences at an early age.

They gave me a window onto the world that books could not because, at the age of nine, I wasn't really able to understand “great” literature.

Did any film in particular make an impression on you when you were young?

Yes, I was six when I saw the science-fiction film War of the Worlds, based on the novel by H. G. Wells. It caused a theological cataclysm in me. Seeing that believers and non-believers suffered the same

casion unique, voire la seule, qui permet de développer un dialogue intime avec un inconnu.

fate, I realised that God didn't exist. This in turn deconstructed my vision of good and evil.

What about your first literary emotion?

I remember buying my first paperback with my pocket money when I was 11; it was Doctor Zhivago by Boris Pasternak.

The English translation had just been published and in my mind, this book was a fascinating work. I read the first two pages and didn’t understand a thing. I tried again and it was so laborious that I never went any further than those two pages (laughter). Having said that, I have nevertheless read several of Pasternak’s works.

In the end, cinema led you to writing which subsequently offered you the chance to return to your first love.

Is there a certain irony in that?

That’s one way of looking at it, but my foray into the cinema happened at the same time as I was writing. To be honest, I had written several silent film scripts which never saw the light of day. I returned to the cinema thanks to Wayne Wang, who contacted me after Auggie Wren’s Christmas Story was published. He made it into a film and we began a working relationship that continued with Smoke and Brooklyn Boogie. Filming for the latter of these two was scheduled over six days: three days in July and three in October. On the first day of filming, it was blisteringly hot in New York, with temperatures hitting at least 40 degrees! Wayne fell ill and said to me: “Paul, take my place on the set, you can do it!” That’s how I ended up directing actors, and everything ran smoothly.

I had overcome the apprehensions of the shy little boy I used to be.

Three years later, you directed Lulu on the Bridge alone. What memories do you have of filming it?

I am proud of the film, but it was a constant fight. We had a very small budget so we had to be inventive and find solutions. Fortunately, I had a good team with me. For the wedding scene, for example, Adelle Lutz (the ex-wife of David Byrne) was highly inventive: I had no more money for costumes and she found a way of making a wedding dress with peacock feathers. It was fabulous. I also owe a great deal to Willem Dafoe, to whom I sent the script one Sunday. He accepted the role on the Monday and when he came to rehearsal three days later, he knew it off by heart. Willem saved us. I was absolutely exhausted once filming was over.

You nevertheless renewed the experience nine years later with The Inner Life of Martin Frost.

Yes, but filming was a much lighter affair; we had a reduced team of 16 people whereas a film like that generally needs three times as many people. I encountered a rare spirit of solidarity. Everyone was on the go morning to night, working towards the same goal! It is a very strong memory.

Writing is a solitary activity unlike the cinema, which relies on cooperation within a group. How did you perceive the role of director which is completely different from writing a book?

Each time it was like a breath of fresh air, a return to my childhood during which

I played a great deal of team sport, in particular basketball and baseball. Having spent years locked away writing, I was happy to discover a new way of living for a while. It did me a world of good.

What lessons have you learned from your films?

I have learned a great deal about human nature. I have always done everything I can to create a peaceful atmosphere on set, which is not always easy. A film shoot can quickly get out of hand and become something of a living hell. I have also discovered certain similarities between the job of an author and that of actors. I understand actors perfectly, because they use the same processes as authors. They have to bring characters to life and I endeavour to do the same thing through writing. I think that helped me to direct them successfully.

Are you planning on directing any other films?

No, it takes a lot of energy to make a film and I prefer to keep that energy for my writing. I still have a great deal to say in my books.

Your last book, 4 3 2 1, appears to be a declaration of love to the cinema; is it your most cinematographic book?

Not really. There are few scenes and little dialogue. Archie Ferguson is the only character in the book who genuinely loves the cinema. I think that The Book of Illusions is my most cinematographic book. But the interpretation of a book is a very personal thing. In my opinion, literature is the most sensitive means of communication between two people, the reader and the writer. It is a unique opportunity, the only opportunity, that enables you to develop an intimate dialogue with a total stranger.

You are seen as the writer of chance and contingency. Can you quote a random event that inspired you or grabbed your attention recently?

I think that my very presence at this festival is a good example. Something happened in the cosmos because nothing predestined me to come to Lausanne to present my films alongside so many accomplished directors whom I admire.

My films were failures when they were released and I thought they would remain buried forever. And here they are, back from the dead! It’s amazing. I am extremely touched to have been invited to the Rencontres by Vincent Perez. It is a great honour and an immeasurable pleasure to be here.  R EG A R D S n °1 5 29

uchi (sic) peut être considéré comme le port de Lausanne.

C’est un lieu de promenade enchanteur et riche en panoramas magnifiques.» C’est en ces termes que l’édition 1816 du Manuel du voyageur en Suisse de Johann Gottfried Ebel décrit ce qui n’est encore qu’un petit village de pêcheurs.

Les rares visiteurs séjournent au Logis d’Ouchy, un modeste relais d’étape qui prendra ensuite le nom d’Auberge de l’Ancre avant de devenir en 1868 l’Hôtel d’Angleterre. En ce début du XIXe siècle, le tourisme en est à ses balbutiements.

Jusqu’alors, la Suisse n’était qu’une halte du Grand Tour, sur la route entre la France et l’Italie. «Le Grand Tour». Une véritable institution qui, depuis la moitié du XVIIe siècle, constitue l’ultime étape dans la formation des jeunes aristocrates, d’abord anglais, puis de toute l’Europe.

Un périple d’un an et demi à deux ans en moyenne, leur permettant de parfaire leurs connaissances «sur le terrain» et d’échanger à leur retour des récits de voyages avec leurs pairs.

Souvent redoutée, notamment à cause du passage des Alpes, la Suisse devient un véritable but du voyage au tournant du XIXe siècle. Il faut dire que la littérature et l’art alimentent depuis plusieurs décennies une vision idéalisée du pays, notamment à travers le goût du pittoresque. C’est à cette époque également que les scientifiques font de la Suisse un champ d’investigation privilégié. Peu à peu, la bourgeoisie européenne emboîte le pas à ces tourists de l’aristocratie. Le Tour raccourcit, jusqu’à ne plus durer que quelques semaines. Les voyages se démocratisent, comme en témoignent notamment les premiers tours organisés par le voyagiste anglais Thomas Cook en 1841. Et c’est ainsi que le Grand Tour s’efface pour céder sa place au tourisme.

LA MÉTAMORPHOSE D’UN VILLAGE DE PÊCHEURS

Portée par cet engouement, la Suisse devient l’un des pays les plus visités en Europe. Les romantiques, parmi lesquels Lord Byron, George Sand, Dostoïevski, ou encore Alexandre Dumas, s’entichent de ce petit territoire paisible aux allures

de carte postale. Les sommets attirent quant à eux les premiers alpinistes anglais. La Suisse est aussi la destination favorite des curistes convaincus par les vertus du thermalisme. Pour les historiens, ce développement touristique est indissociable de celui du chemin de fer, à partir de 1850. C’est également au cours du XIXe siècle que les premiers bateaux à vapeur sillonnent le lac Léman (lire aussi page 40).

Dès le milieu du XIXe siècle, les pensions, auberges et autres relais d’étapes ne suffisent plus à satisfaire la demande d’hébergement des visiteurs venus de toute l’Europe. Héritière de ces établissements, l’hôtellerie moderne se développe afin de répondre aux exigences de confort et de prestige d’une clientèle fortunée. A Lausanne, les bords du lac Léman constituent l’emplacement idéal pour accueillir ces voyageurs. Et c’est une société privée, la Société immobilière d’Ouchy, qui va se charger de la métamorphose du village de pêcheurs en un véritable resort: valorisation des rives du lac, création d’une promenade et, surtout, construction d’un hôtel de luxe.

JACQUES TSCHUMI, UN HÔTELIER VISIONNAIRE

Pionnier de l’hôtellerie suisse moderne, Jacques Tschumi a dirigé le Beau-Rivage Palace entre 1888 et 1912. Il est aussi le fondateur de l’Ecole hôtelière de Lausanne.

Le Beau-Rivage est ainsi inauguré en 1861 après quatre ans de travaux. C’est le début de l’hôtellerie de luxe à Lausanne. A l’époque, il est le plus grand établissement de la région. La capitale vaudoise peut désormais rivaliser tant avec Genève et son célèbre Hôtel des Bergues qu’avec Vevey, où l’Hôtel des Trois Couronnes reçoit têtes couronnées, artistes et intellectuels depuis une vingtaine d’années déjà. En 1874, le constructeur suisse Eduard Guyer-Freuler cite le Beau-Rivage parmi les palaces les plus réputés d'Europe.

A partir de 1888, l’établissement est dirigé par Jacques Tschumi. Véritable pionnier de l’hôtellerie suisse moderne, son nom est à jamais associé au Beau-Rivage dont il présida aux destinées durant vingt-cinq ans.

Celui que l’on décrit volontiers comme administrateur plus qu’hôtelier n’eut pourtant de cesse de satisfaire les exigences de ses hôtes. Et c’est parce qu’il voulut que tous les aubergistes soient à la hauteur de leur mission qu’il fonda en 1893, à l’Hôtel R EG A R D S n °1 5 31

A Lausanne comme dans d’autres villes en Suisse, offres culturelles, congrès professionnels ou encore grandes manifestations sportives se sont ainsi multipliées afin d’attirer de nouvelles catégories de visiteurs (lire aussi l’interview du syndic de Lausanne ci-dessous). Et la recette fonctionne: en 2018, soit 157 ans après la mise en valeur d’Ouchy, la capitale vaudoise a comptabilisé plus de 1 250 000 nuitées.

«Lausanne se tourne vers l’avenir. La ville est connue pour ses vibrations positives, peut-être en raison de sa situation géographique enviable», mentionne aujourd’hui le site web de Lonely Planet. Les panoramas magnifiques fascinent toujours, mais Lausanne a désormais bien d’autres atouts dans sa manche. 

Mais la fête est de courte durée, et la Première Guerre mondiale traîne dans son sillage une instabilité dont résultera la stagnation de l’industrie du tourisme. Au début des années 1950, l’hôtellerie suisse offre ainsi le même nombre de lits qu’au début du siècle. C’est à partir de cette seconde moitié du XXe siècle qu’une nouvelle clientèle fait son apparition. Les voyages ne sont en effet plus réservés à une élite fortunée. Une période de prospérité sans précédent commence et le tourisme dit «de masse» est en plein développement. La concurrence est cependant rude, et les professionnels du secteur ne peuvent plus miser uniquement

«Le tourisme contribue à inscrire Lausanne sur la carte du monde» tomne et, en 2020, les Jeux olympiques de la jeunesse (JOJ) d’hiver et les Championnats du monde de hockey sur glace.

Grégoire Junod est le syndic de Lausanne.

Il partage avec nous sa vision actuelle et ses aspirations pour la ville en tant que destination touristique. sont selon vous les principaux atouts touristiques de Lausanne?

GRÉGOIRE JUNOD Son cadre de vie, son panorama et le rapport que la ville entretient avec le lac. Mais Lausanne a également une offre culturelle exceptionnelle et rivalise sur ce plan avec certaines capitales européennes. Nous avons aussi la chance de pouvoir proposer une offre gastronomique et hôtelière de grande qualité. La région lémanique a notamment la densité de tables étoilées parmi les plus élevées au monde! Et avec Lavaux tout proche, Lausanne a de très belles choses à raconter autour des produits du terroir et de sa tradition viticole.

A travers l’accueil de ces JOJ, quelle image souhaitez-vous promouvoir?

Tout d'abord Lausanne en tant que capitale olympique. C'est également une occasion de mettre en avant les valeurs positives du sport: le dépassement de soi, la solidarité et l’envie de réussir. Pendant les JOJ, un festival se tiendra au cœur de Lausanne, dans l’idée de réunir culture et sport. Mais peut-être plus que l’événement, c’est l’héritage qui importe: si les milliers de jeunes, d'accompagnants et de familles qui se rendent à Lausanne dans le cadre des Jeux passent du bon temps, alors ils deviendront de bons ambassadeurs.

REGARDS Quels

Pour quelles raisons les touristes se rendent-ils à Lausanne?

On estime que les deux tiers des touristes viennent pour les affaires, beaucoup en relation avec la capitale olympique et les sièges des fédérations sportives internationales. Mais il y a également les hautes écoles comme l’Ecole polytechnique, l’Université, l’Ecole hôtelière ou encore le Centre hospitalier universitaire. Le tiers restant est un tourisme de loisirs.

Quelle est votre vision en matière de développement touristique?

Le tourisme de loisirs, justement, représente un gros potentiel. Mon engagement est de travailler à ce que l’Office du tourisme joue cette carte-là en valorisant les atouts culturels et sportifs de Lausanne. Il est important de mettre en valeur des événements comme les Rencontres 7e Art, dont le Beau-Rivage Palace est partenaire. Citons aussi Plateforme 10, le projet de réunion de trois musées en 2021. La Ville soutient également les grands événements sportifs. Nous allons notamment accueillir les Championnats du monde de triathlon cet au-

Que rapporte le tourisme à Lausanne?

Enormément sur le plan économique. Mais également beaucoup sur le plan culturel et social. Le tourisme contribue à inscrire Lausanne sur la carte du monde.

Un de vos amis qui ne connaît pas la ville vous demande quels sont les lieux incontournables. Que lui conseillez-vous?

All roads lead to Lausanne

“

uchi (sic) can be considered the port of Lausanne. It is an enchanting place to enjoy a stroll with innumerable stunning panoramas.”

It was in these terms that the 1816 edition of the Manuel du voyageur en Suisse, by Johann Gottfried Ebel, described what was still nothing more than a small fishing village. The rare visitors stayed at the Logis d’Ouchy, a rather modest stopover which would be renamed the Auberge de l’Ancre before becoming the Hôtel d’Angleterre in 1868. At the turn of the 19th century, tourism was in its infancy. Before this, Switzerland was nothing more than a stage on the Grand Tour, on the road between France and Italy. “The Grand Tour”: a veritable institution which, since the mid17th century, had been the final stage in the education of young aristocrats, first from England and then from the rest of Europe. This odyssey would generally last between a year and a half and two years, offering these young travellers the chance to perfect their knowledge “in the field” and to share tales of their travels with their peers once they returned home.

Often dreaded, in particular due to the journey over the Alps, Switzerland became a genuine travel destination at the turn of the 19th century. It should be noted that literature and art had for many

decades fostered an idealised vision of the country, in particular through a taste for the picturesque. It was also during this period that scientists made Switzerland a favourite field of study. Little by little, the European bourgeoisie followed in the footsteps of the aristocrat tourists. The Tour was abridged somewhat, eventually lasting only a few weeks. Travel became more affordable, as demonstrated by the first tours organised by the English tour operator Thomas Cook in 1841. And so the Grand Tour gave way to tourism.

THE METAMORPHOSIS OF A FISHING VILLAGE

Carried on this wave of popularity, Switzerland became one of the most visited countries in Europe. The Romantics, including Lord Byron, George Sand, Dostoevsky and Alexandre Dumas, flocked to this peaceful little picture-postcard country. The mountains began attracting the first English mountaineers too.

Switzerland was also the preferred destination of spa-goers, who were convinced of the virtues of thermalism. For historians, the development of tourism goes hand in hand with the development of the railways from 1850. It was also during the 19th century that the first steamboats began plying their trade on Lake Geneva (see also page 41).

From the mid-19th century, there were no longer enough guest houses, inns and other stopovers to satisfy the demand for accommodation from visitors from throughout Europe. The heir of these early establishments, the modern hotel industry began to develop in order to meet the comfort and prestige requirements of a wealthy clientele. In Lausanne, the shores of Lake Geneva were the ideal location to welcome these travellers.

And it was a private company, the Société Immobilière d’Ouchy, which would drive the metamorphosis of this fishing village into a genuine resort by enhancing the shoreline, creating a promenade and, more particularly, building a luxury hotel.

JACQUES TSCHUMI, A VISIONARY HOTELIER

After four years under construction, the Beau-Rivage was inaugurated in 1861.

This was the beginning of the luxury hotel industry in Lausanne. At the time, it was the largest hotel in the region. The cantonal capital was now able to compete with Geneva and its famous Hôtel des Bergues, and with Vevey where the Hôtel des Trois Couronnes had already welcomed monarchs, artists and intellectuals for twenty years. In 1874, the Swiss manufacturer, Eduard Guyer-Freuler, cited the Beau-Rivage among the most renowned luxury hotels in Europe.

From 1888, the hotel was managed by Jacques Tschumi. A true pioneer of the modern Swiss hotel industry, his name will always be associated with the BeauRivage, whose development he oversaw for 25 years. The man who is often described as an administrator rather than a hotelier nevertheless constantly strived to satisfy the demands of his guests. And it is because he wanted all hotel owners to

Between the mountains and the lake, it is impossible to distinguish Lausanne from its picture-postcard image.

The Olympic capital is also a business hub and cultural centre that attracts numerous visitors every year.

be up to their task that he founded the world’s very first hospitality management school in 1893 in the Hôtel d’Angleterre (see page 38). In 1908, the Beau-Rivage was extended to include a second building.

What had now become the Beau-Rivage Palace was a Mecca of the Belle Epoque.

But this golden period didn’t last. The tourism industry stagnated following the instability caused by the First World War. Consequently, the Swiss hotel industry offered no more beds at the beginning of the 1950s than it did at the turn of the century. It was only in the second half of the 20th century that a new clientele began to appear. Travel was no longer reserved for the wealthy elite. A period of unprecedented prosperity began and so-called “mass” tourism was in full flow.

Competition was fierce and the professionals in the industry could no longer rely solely on the beautiful scenery.

In Lausanne, as in other towns and cities throughout Switzerland, cultural offerings, professional conferences and major sporting events multiplied in order to attract new categories of visitor (see also the interview with the “syndic” of Lausanne on this page). And the strategy paid off: in 2018, some 157 years after Ouchy was first developed, the cantonal capital recorded 1,250,000 nights’ accommodation sold.

“Lausanne looks to the future. The city is known for its upbeat vibe, perhaps on account of its enviable location”, states the Lonely Planet website. “Tourism helps put Lausanne on the world map” Grégoire Junod is the “syndic”, or administrative head, of Lausanne.

He shares his current vision with us along with his hopes and aspirations for the city as a tourist destination.

REGARDS In your opinion, what are Lausanne’s main assets as a tourist destination?

GRÉGOIRE JUNOD The way of life here, the views and the relationship between the city and the lake. Lausanne also boasts an exceptional cultural offering that rivals a number of European capitals. We also have the good fortune to enjoy a number of topquality restaurants and hotels. In fact, the region around Lake Geneva has one of the highest densities of Michelin-starred restaurants in the world! And with Lavaux on our doorstep, Lausanne has plenty to say about its local products and winemaking tradition.

Why do tourists come to Lausanne?

We estimate that two-thirds of tourists come here on business, very often in relation to the Olympic capital and the headquarters of the international sports federations based in the city. There are also prestigious universities such as the Ecole Polytechnique, the University of Lausanne, the Hospitality Management School and the teaching hospital. The remaining one-third come for leisure tourism.

What is your vision in terms of developing tourism?

Leisure tourism in particular represents a massive potential. I am committed to ensuring that the Tourist Office plays this trump card by promoting Lausanne’s cultural and sporting attractions. It is impor-

tant to emphasise events such as the Rencontres 7e Art, of which Beau-Rivage Palace is a partner. We could also mention Plateforme 10, the project aimed at bringing three museums together under the same roof by 2021. The city also supports a number of major sporting events. In particular, we will be hosting the Triathlon World Championship this autumn followed by the Winter Youth Olympic Games (YOG) and the Ice Hockey World Championship in 2020.

By hosting the YOG, what image are you hoping to promote?

First, that of Lausanne as the Olympic capital. The event also provides the opportunity to emphasise the positive values of sport: solidarity, excelling oneself and the will to succeed. A festival will be held in the very centre of Lausanne during the YOG with the aim of bringing culture and sport together.

It is perhaps the legacy, however, that matters more than the event itself: if the thousands of young people, companions and families who travel to Lausanne to attend these Games enjoy their stay here, they will become good ambassadors for the city.

What does tourism bring to Lausanne?

It brings a great deal economically, culturally and socially. Tourism helps put Lausanne on the world map.

Imagine that one of your friends, not familiar with the city, asks you which sites are not to be missed. What advice would you give them?

Without a doubt the Musée de l'Art Brut for its unique outsider art collection and the Jean Dubuffet collection, as well as the Old Town and the lake shore with its beaches.  INTERVIEW BY JOËLLE LORETAN

uand Jacques Tschumi fonda en 1893 la toute première école hôtelière, pouvait-il imaginer que 125 ans plus tard, celle-ci serait classée meilleure institution au monde dans son domaine? Une chose est sûre: les ingrédients du succès étaient déjà réunis. Car dès son origine, l’Ecole hôtelière s’attela à

transmettre non seulement une parfaite maîtrise technique mais aussi un véritable savoir-faire. «Cet équilibre entre l’art et la science préside toujours le plan de formation de l’EHL», confirme Michel Rochat, le CEO de l’institution, qui n’hésite pas à comparer la complexité de ce modèle dual à celle d’une mécanique horlogère.

directeur du Beau-Rivage. Egalement président de la Société suisse des hôteliers, Jacques Tschumi peinait à trouver des collaborateurs à la mesure de ses exigences. Il créa donc une école afin de répondre à cette demande de qualité.

Le 15 octobre 1893, une volée de 27 étudiants s’installait pour la première fois dans une salle de l’Hôtel d’Angleterre pour y suivre des cours, immédiatement mis en pratique auprès de la clientèle de l’établissement. A la mort de son fondateur en 1912, l’Ecole hôtelière était installée depuis une dizaine d’années avenue de Cour. Elle emménagea en 1974 au Chalet-à-Gobet, sur un véritable campus qui n’a depuis lors jamais cessé de s’étendre.

UNE FORMATION ENRACINÉE DANS LA PROFESSION

Depuis 1893, l’Ecole hôtelière de Lausanne a formé plus de 25 000 étudiants.

125 ans après sa création, que reste-t-il de la vision de Jacques Tschumi? «Son objectif était de former des gens excellents dans le domaine de l’accueil, souligne Michel Rochat. Même si les changements étaient beaucoup moins rapides à l’époque, plusieurs anecdotes confirment qu’il valo-

risait aussi la prise d’initiative.» Mais aujourd’hui plus qu’hier, c’est un véritable état d’esprit d’entreprise et visionnaire que l’EHL transmet à ses étudiants. «Notre force est de percevoir et anticiper les demandes des clients, notamment grâce à notre enracinement dans la profession», explique le CEO. 10% du contenu du plan de formation est ainsi remis à jour chaque année. L’institution est par ailleurs en réseau avec une dizaine d’écoles hôtelières partout dans le monde et rassemble sur le campus de Lausanne des étudiants de plus de 120 nationalités. «C’est une mine

d’informations à valoriser afin de réfléchir à l’avenir», souligne Michel Rochat.

QUELS DÉFIS POUR L’HÔTELLERIE EN 2019?

Car l’avenir recèle plusieurs défis majeurs pour l’hôtellerie. Selon le directeur de l’EHL, le secteur s’était peu remis en cause avant le début du XXIe siècle. «La disruption est venue de l’avènement de sites participatifs comme Airbnb, relève-t-il. Ces nouveaux acteurs font désormais partie de la réalité du tourisme.» Pour lui toutefois, il y a de la place pour tous: «La clientèle des hôtels n’achète pas uniquement un lit pour la nuit, elle recherche aussi des services et des prestations de qualité qu’elle ne trouvera pas ailleurs.» «Les hôteliers se sont aussi fait happer une grosse partie de leurs marges par les sites de réservation en ligne, ajoute Michel Rochat. Ils doivent désormais se réapproprier le lien direct avec leurs clients, en dépassant les intermédiaires.» La numérisation de la réservation et de l’accueil est d’ailleurs un axe de recherche important au sein de l’EHL. 125 ans après sa fondation à Ouchy, l’Ecole hôtelière continue ainsi de se réinventer, sans jamais rien renier de son héritage.  R EG A R D S n °1 5 37

On 15 October 1893, a group of 27 students took their places in one of the rooms of the Hôtel d’Angleterre to attend classes which were immediately put into practice with the hotel’s guests. On the death of its founder in 1912, the school had been in its premises on Avenue de Cour for about ten years. In 1974, it moved to Le Chalet-à-Gobet and a real campus that has continued to grow ever since.

hen Jacques Tschumi founded the very first hospitality management school in 1893, could he possibly have imagined that 125 years later it would be ranked the best institution in the world in its field? One thing is sure: the ingredients for success were already there. From the very outset, the school made every effort to convey not only perfect technical expertise but also genuine know-how. “This balance between art and science still governs the training plan at the EHL,” confirms Michel Rochat, CEO of the institution, who does not hesitate to compare the 38 RE GA R D S n° 1 5

complexity of this dual model to that of a watch mechanism. Made in Switzerland, naturally.

JACQUES TSCHUMI’S VISION

A native of the canton of Bern, Jacques Tschumi spent a number of years working as a primary school teacher before becoming the tutor of the children of the founder of the Bains du Gurnigel. He quickly became his right-hand man before taking over from him and pursuing his career in the hotel industry. In 1888, he was appointed Manager of the Beau-Rivage.

So 125 years after it was founded, what is left of Jacques Tschumi’s vision? “His aim was to train people who excel in the field of hospitality,” stresses Michel Rochat. “Even if things changed less quickly at that time, there are several anecdotes that confirm he placed great value on an ability to take the initiative.”

Today more than ever, the EHL conveys a visionary and entrepreneurial mindset to its students. “Our strength is to perceive and anticipate the requests of our guests, in particular thanks to our being rooted in the profession”, explains the CEO. Every year, 10% of the content of the training plan is updated. Furthermore, the institution is part of a network of a dozen hospitality schools around the world and welcomes students from over 120 countries to the campus in Lausanne.

“It is a mine of information on which we must capitalise to envisage the future,” states Michel Rochat.

WHAT CHALLENGES FOR THE HOTEL INDUSTRY IN 2019?

The future holds a number of major challenges for the hotel industry. According to Michel Rochat, the sector rarely called itself into question before the beginning of the 21st century. “The disruption came with the arrival of participatory sites such as Airbnb,” he reveals. “These new players are now a very real aspect of the tourism industry.” He nevertheless believes that there is room for everyone: “Hotel guests do not simply rent a bed for the night; they also want quality services that they cannot find elsewhere. Hoteliers have also lost a large part of their margins to online booking sites. They must now reestablish a direct link with their guests without the need for intermediaries.”

The digitisation of the booking and reception process is indeed a key avenue of research within the EHL as it continues to reinvent itself without ever renouncing its heritage. 

L

es élégantes se sont parées de leurs plus beaux bijoux et les crinolines frémissent dans la bise qui souffle sur les pontons. Au tournant du XXe siècle, la Belle Epoque signe l’âge d’or du tourisme dans la région lémanique. Afin de relier les différents points d’intérêt, les moyens de transport se sont développés, dans les terres bien sûr, avec les chemins de fer, mais aussi sur l’eau. Depuis 1823, les bateaux à aubes se sont ainsi multipliés sur le lac Léman, silhouettes graciles qui font les belles heures de l’imagerie touristique de l’époque. Affiches et cartes postales les mettent en scène sur les eaux étincelantes du lac, sur fond de montagnes majestueuses.

A journey back in time on Lake Geneva A symbol of an elegant and romantic way of life that characterised the prestige of Lake Geneva at the turn of the 20th century, the Belle Epoque fleet continues to offer people the chance to discover the charms of a quite unique region.

T

he elegant ladies donned their very best jewellery and the crinoline quivered in the breeze blowing across the pontoons. At the turn of the 20th century, the Belle Epoque marked the golden age of tourism in the region around Lake Geneva. To connect the numerous points of interest, different means of transport were developed both on land, with the railways, and on the water. From 1823 onwards, the number of paddle steamers plying their trade on the lake soared – slender figures emblematic of tourism at that time. Posters and postcards show them crossing the sparkling waters of the lake against a backdrop of majestic mountains.

Operated by the CGN (Compagnie générale de navigation sur le lac Léman), the six boats of the Belle Epoque currently in service are vestiges of a bygone era.

They represent a remarkable heritage in Switzerland and even abroad, in terms of both the number of boats still in service and their technical characteristics.

True floating palaces, some of which are

contemporaries of the Titanic, they continue to churn the water, offering their passengers a genuine journey back in time.

AN ENCHANTING FLEET

The pristine setting of Lake Geneva and its surroundings during the Belle Epoque opened its arms to the world and embraced a period of soaring economic growth, reflected in the rapidly expanding population and raising urgent questions of mobility. LES PRÉMICES D’UNE DYNASTIE HÔTELIÈRE

Dès 1853, avec l’aide de son frère, Alexandre Seiler loue puis rachète une petite auberge située à côté de la cure. Agrandie, elle rouvre en 1855 sous le nom de Monte Rosa.

Il loue et exploite également le Riffelberg, une petite pension de montagne construite en 1852 par trois ecclésiastiques. Alexandre Seiler rachète ensuite Le Mont Cervin en 1867. D’autres établissements rejoindront progressivement son entreprise hôtelière.

Mais l’œuvre de sa vie, c’est la construction du Riffelalp, dont les premiers plans datent de 1876. Un projet ambitieux de grand hôtel, à plus de 2200 mètres d’altitude, face au Cervin. L’hôtel est inauguré

ette histoire, c’est Christian Seiler, arrière-petit-fils d’Alexandre Seiler, qui nous la raconte. Avocat de profession, il a quitté son étude au début des années 1980 afin de diriger le groupe hôtelier familial avec son cousin. «Je suis hôtelier par accident», s’amuse-t-il. Comme son aïeul, donc… Car quand Alexandre Seiler arrive à Zermatt au milieu du XIXe siècle, il n’a aucune connaissance du monde hôtelier. Originaire de la vallée de Conches, il tient une fabrique de bougies et de savons à Sion. C’est son frère Joseph, vicaire à Zermatt, qui le fait venir pour tenir une auberge. Zermatt n’est alors qu’un ensemble de hameaux vivant de l’agriculture. Seuls quelques scientifiques s’y rendent afin d’étudier la faune, la flore ou la géologie. Ce n’est qu’en 1865, après la première et tragique ascension du Cervin, que Zermatt va acquérir sa renommée internationale et attirer de plus en plus de visiteurs.

Once upon a time there was the Riffelalp...

The Riffelalp Resort 2222 m is one of a kind.

And it’s not only because this luxury hotel is located at the highest altitude. To discover what makes it unique, you have to delve into its past and follow the story of its founder, Alexandre Seiler.

en 1884, soit sept ans avant la ligne de chemin de fer Viège–Zermatt. Etrange clin d’œil du destin, le premier train circulant en 1891 selon l’horaire officiel conduira jusqu’en plaine la dépouille d’Alexandre Seiler. A sa mort, l’hôtelier gère un parc de près de 1000 lits et emploie 600 personnes durant la saison d’été. En moins de quarante ans, ce fils de paysans visionnaire a écrit le premier chapitre de l’histoire du tourisme à Zermatt.

SUCCÈS, DRAME ET RENAISSANCE

La ligne à crémaillère Zermatt–Gornergrat est achevée en 1898. Un petit tram rouge, toujours en service aujourd’hui, mène les clients jusqu’au Riffelalp. Pendant plus de soixante ans, l’hôtel accueille chaque été la haute société européenne. Dans les années 1950, il est question d’ouvrir également l’établissement en hiver. Il faut dire que, depuis la fin de la guerre, le tourisme a changé. Et Zermatt est désormais davantage fréquenté en hiver qu’en été. En 1961, alors que des travaux sont entrepris pour installer un système de chauffage central, le Riffelalp brûle entièrement. Seules deux dépendances résistent. Assainies, l’une devient un petit hôtel trois étoiles, tandis que l’autre accueille des appartements de vacances.

Fort heureusement, l’histoire du Riffelalp ne s’arrête pas là. Car dans les années 1990, la Fondation de Famille Sandoz fait part de son intention de ramener à la vie ce fleuron de l’hôtellerie suisse. Après trois ans de travaux, le Riffelalp Resort 2222 m ouvre ses portes le 1er décembre 2000. Un hôtel cinq étoiles moderne mais à jamais indissociable de l’histoire de Zermatt et de la formidable épopée hôtelière de son fondateur. 

t is Christian Seiler, the great-grandson of Alexandre Seiler, who takes up the story. A lawyer by profession, he abandoned his practice at the beginning of the 1980s to manage the hotel group with his cousin. “I am an accidental hotelier,” he jokes. Rather like his great-grandfather… Because when Alexandre Seiler arrived in Zermatt in the mid-19th century, he knew nothing about the hotel industry. Hailing from the valley of Conches, he owned a candle and soap factory in Sion. His brother Joseph, a vicar in Zermatt, asked him to come to run an inn. At the time, Zermatt was nothing more than a collection of hamlets whose residents made a living from agriculture. Only the occasional scientist would visit to study the local flora, fauna or geology. It was only in 1865, following the tragic first ascent of the Matterhorn, that Zermatt acquired its international renown and began attracting an increasing number of visitors.

THE BEGINNINGS OF A HOTEL DYNASTY

As early as 1853, with the help of his brother, Alexandre Seiler first rented then purchased the little inn located next to the spa. Following extension work, it reopened its doors in 1855 under the name of Monte Rosa. He also rented and ran the Riffelberg, a little mountain retreat built in 1852 by three clergymen. Alexandre Seiler then bought Le Mont Cervin in 1867. Other hotels would gradually be added to his empire.

But pride of place in his life’s work went to the construction of the Riffelalp, with the first plans dating back to 1876. It was an ambitious grand hotel project at an altitude of more than 2,200 metres,

overlooking the Matterhorn. The hotel was inaugurated in 1884, seven years before the Viège-Zermatt railway line was completed. In a strange twist of fate, the first scheduled train to run in 1891 carried the remains of Alexandre Seiler back down to the plain. Just before his death, the hotelier managed almost 1,000 beds and employed 600 people during the high season. In less than 40 years, this farmer’s son had written the first chapter in the history of tourism in Zermatt.

SUCCESS, DRAMA AND REBIRTH

The rack-and-pinion railway between Zermatt and Gornergrat was completed in 1898. A little red tram, still in service today, would take guests up to the Riffelalp. For more than sixty years, Europe’s high society would flock to the hotel each summer. During the 1950s, the owners considered also opening the hotel in winter. Since the end of the war, the face of tourism had changed and Zermatt was more popular in winter than in summer. In 1961, with work under way to install a central heating system, the Riffelalp burned to the ground. Only two outbuildings were spared. Once renovated, one became a little three-star hotel while the other was turned into holiday apartments.

l y a presque dix ans, nous écrivions à plusieurs mains un livre sur l’investissement, dans lequel nous brossions l’histoire des grands investisseurs du XXe siècle. Dans le monde de la gestion de portefeuille, il n’y a bien sûr pas de formule magique pour le succès, mais des règles et des méthodologies qui ont traversé le siècle écoulé. Les enseignements sont riches. Le sous-titre du livre illustrait notre propos: «De l’expérience à l’expertise». C’est le cumul de sa propre expérience et de celle de ses illustres prédécesseurs qui, jusqu’à présent, a fait l’expertise d’un bon investisseur. Mais estce toujours le cas? Autrement dit, pour bien investir sur les cinquante prochaines années, peut-on continuer à suivre les grandes règles du passé ou faut-il penser la gestion de portefeuille différemment?

Pour répondre à cette question, la liste des dix plus grandes capitalisations boursières américaines donne une grille de lecture intéressante, car elle reflète les profonds changements qui sont à l’œuvre depuis deux décennies.

ECONOMICS

Mais investir sur le long terme requiert aussi la capacité à percevoir et si possible anticiper les révolutions technologiques et les changements de comportement des consommateurs et des citoyens. Il faudra alors détecter les entreprises les plus à même de répondre à ces mutations.

Dans ce contexte, la présence dans notre liste de nouveaux venus comme Apple, Amazon, Microsoft, Facebook, Alphabet (parent de Google) n’étonnera personne.

Ils ont réussi à dématérialiser une partie des biens de consommation. On pense immédiatement à la musique (lancement de l’iPod en 2004), mais c’est le cas général des modes de culture et divertissement (streaming, jeux vidéo), de communication (réseaux sociaux), d’information (online news), de stockage (cloud). Pour d’autres biens et services, c’est le mode d’accès qui

est devenu digital (Uber, Amazon, booking. com). Le développement du numérique a bouleversé nombre de business models et a forcé les investisseurs à s’adapter. Conséquence pour celui qui voudrait acheter des actions d’une chaîne de pizzas? Il devra s’intéresser autant à la qualité de l’app de vente à domicile qu’à celle de la pâte.

SI C’EST GRATUIT, C’EST VOUS QUI ÊTES LE PRODUIT

Il faut souligner par ailleurs que le passage du support physique au numérique s’est accompagné d’une autre innovation de rupture dans les modes de consommation, à savoir le développement d’une multitude de services gratuits (des logiciels au stockage de photos ou de données). Pour l’investisseur, c’est un profond décalage de la notion de valeur: une

entreprise peut fournir un produit gratuitement au client parce que, ce faisant, elle acquiert sur lui des informations monétisables («Si c’est gratuit, c’est vous qui êtes le produit!»).

La monétisation des données personnelles est désormais une source massive de succès pour certaines entreprises. La valeur marchande annuelle des données personnelles laissées gratuitement par les internautes avoisinerait les 1000 milliards de dollars. Même pour un acteur comme Amazon, dont le modèle d’affaires paraît assez éloigné de celui d’un Facebook, la publicité est déjà le segment connaissant la plus forte croissance de chiffre d’affaires. Elle devrait même, selon certains analystes, prendre la place du cloud computing comme principal moteur de profits de la société dès 2021.

ÉNERGIES RENOUVELABLES CONTRE ÉNERGIES PÉRISSABLES

Mais revenons à notre liste des plus grandes sociétés américaines. ExxonMobil, première société pétrolière et gazière américaine, ne figure qu’en 9e place. Il y a dix ans, elle était première. Qu’en serat-il dans dix ou vingt ans? Depuis dix ans, la capitalisation boursière de l’industrie du charbon a baissé de 90%. L’industrie pétrolière subira-t-elle le même sort? Il y a aujourd’hui 28 000 milliards de dollars d’actifs carbone dans les bilans des entreprises et des Etats, valorisés comme s’ils pouvaient être utilisés – mais ils ne le seront pas (cf. le concept des stranded assets, ces actifs dont la valeur peut être fortement affectée par des changements importants et soudains en matière de législation, de contraintes environnementales ou encore d’innovations technologiques). Seule la partie utilisable compte tenu de la limitation à +2°C de l’augmentation des températures a une valeur.

La décarbonisation de notre économie est le plus important défi industriel depuis la généralisation de l’utilisation du pétrole au début du XXe siècle. Nous investissons 300 milliards de dollars par an sur les énergies renouvelables (ce qui, soit dit en passant, est un montant inférieur au coût des catastrophes naturelles aux Etats-Unis en 2017), il faudra investir de plus en plus chaque année, jusqu’à 46 RE GA R D S n° 1 5

cinq à dix fois plus d’ici 2050. Une opportunité supplémentaire pour l’investisseur.

Bien investir pour les cinquante prochaines années requiert donc de savoir appréhender ces lames de fond technologiques, environnementales et sociétales que sont le développement de l’intelligence artificielle et le changement climatique, et leur impact sur nos modes de vie. Comme l’enseigne un manuel de psychologie de la CIA, «When faced with a paradigm change, analysts who know the most about a subject have the most to unlearn». Jamais la prospective n’aura eu autant d’importance dans ce cadre.

DES INVESTISSEURS PLUS RESPONSABLES

Au siècle passé, il était possible de déployer du capital avec un focus unique sur le rendement des investissements (sans considération sur les conséquences), et d’être performant financièrement. De notre point de vue, ceci a fondamentalement changé.

Les modes de réflexion ne sont pas adaptés. La fameuse règle d’actualisation qu’apprennent les financiers sur les bancs de l’école fait que le capitalisme fait peu de cas de tout ce qui se passe au-delà de vingt-cinq ans. Un franc dans vingt-cinq ans, actualisé à 15%, c’est à peine 3 centimes aujourd’hui. Les modes de comptabilisation ne sont pas adaptés non plus. Déforestation, dégradation des sols, pollution de l’air, de l’eau et de la terre, tout ceci est «hors bilan», sans impact sur le compte de résultat. Les indicateurs économiques dominants ont eux aussi du mal à donner une image juste, à commencer par l’omniprésent PIB. Mettre des panneaux solaires sur son toit pour réduire sa consommation d’énergie ou choisir une voiture moins gourmande en carburant, cela diminue le PIB. En revanche, les catastrophes naturelles font croître le PIB (reconstructions et réparations). Est-ce bien la direction que l’on souhaite prendre?

Il faut retrouver la notion de responsabilité. Terme très à la mode aujourd’hui, mais les actes sont hélas souvent peu en ligne avec les mots. La responsabilité, c’est l’obligation de répondre de certains de ses actes, d’assumer ses promesses.

Nous venons de passer le 10e anniversaire de la crise des subprimes dont la faillite de Lehman Brothers est le marqueur temporel. Quelles leçons avons-nous retenues? En pratique hélas, personne ne porte la responsabilité de la plus grande crise financière des cent dernières années. Ni les courtiers à l’origine de ces prêts, ni les banques qui les titrisaient, ni les agences de rating qui les notaient, ni les régulateurs qui les supervisaient. Business as usual.

QU’EN PENSERA LA 7e GÉNÉRATION?

Un investisseur responsable aujourd’hui, c’est un investisseur «à large bande». Un investisseur qui a compris qu’élargir le spectre était fondamental (une partie substantielle de la valeur et des risques d’une entreprise ne figure pas dans ses chiffres comptables). Un investisseur qui assume sa responsabilité non seulement vis-à-vis de ses clients, mais aussi vis-à-vis de la société au sens large. Un investisseur qui sait que les deux ne sont pas antinomiques mais au contraire se renforcent mutuellement, car déployer du capital dans l’économie réelle et de manière utile pour la société, c’est par la même occasion maximiser ses chances de réussite (bien sûr, il faut le déployer sur les bonnes valeurs/sociétés, et construire un portefeuille pertinent et équilibré).

Il existe aux Etats-Unis une société basée dans le Vermont, Seventh Generation, qui doit son nom et sa philosophie responsable et respectueuse de l’environnement à l’une des grandes lois des Indiens iroquois: pour chaque décision, prendre en compte l’impact sur le bien-être des enfants de la septième génération (140 ans plus tard, donc). Créée il y a trente ans, Seventh Generation est devenue l’une des plus grandes marques de produits d’entretien domestique et de soins personnels du pays. Un excellent investissement, sur tous les plans.

A moyen et long terme, intérêt financier et utilité sociale sont parfaitement alignés. L’investisseur responsable va utiliser son capital pour permettre au monde de s’adapter aux formidables défis du XXIe siècle, tout en obtenant une juste rentabilité. C’est donc une deuxième révolution qui nous attend, rendue possible par la précédente, et qui dépassera de loin, en vitesse comme en profondeur, toutes les révolutions industrielles passées. lmost 10 years ago, we wrote a book on investing. In this work we painted the history of the great investors of the 20th century. Of course, in the world of portfolio management there is no magic formula for success but there were rules and methodologies in use throughout the past century. The book’s subtitle was illustrative of our message: “From experience to expertise”; it is the accumulation of one’s own experience and that of one’s illustrious predecessors that has to this day made a good investor’s expertise. Is this still the case?

In other words, in order to invest successfully in the coming decades, can we continue to adhere to the grand rules and methods of the past? Or should we be reimagining portfolio management? To answer this question, the list of the ten largest US market capitalizations provides an interesting starting point, because it reflects the profound changes at work.

CONTINUITY AND PARADIGM SHIFT

While ExxonMobil dwindles, Berkshire Hathaway continues at a consistent pace.

The presence of this company in the list of the ten largest US capitalizations shows the timelessness of the basic rules followed by its CEO, Warren Buffett: rigorous analysis, conviction, patience, discipline and the ability to act against the current. For Buffet, investing involves adhering to the company’s business model over the long term and having confidence in the skills of its management. It is not speculating on upcoming price movements in the stock market.

However, investing for the long term also requires the ability to perceive and possibly anticipate technological revolutions.

It is also foreseeing changes in the behav-

iour of consumers and citizens. The investor must then pick out the companies most likely to respond to these changes.

In this context, the presence on our list of newcomers like Apple, Amazon, Microsoft, Facebook and Alphabet (parent of Google) should not surprise anyone.

They managed to dematerialize a portion of consumer goods. Music immediately comes to mind (launch of the iPod in 2004), but this is also the general case with culture and entertainment (streaming, video games), communication (social networks), information (online news) and storage (cloud). For other goods and services, it is the access method that has become digital (Uber, Amazon, booking.com). The development of digital technology disrupted a large number of business models, forcing investors to adapt. What are the consequences for those interested in buying shares in a

chain of pizza parlours? They will have to research as much the quality of the home delivery app as the excellence of the pizza dough...

IF YOU’RE NOT PAYING FOR IT, YOU'RE PROBABLY THE PRODUCT

The transition from material to numerical has been accompanied by a groundbreaking innovation in consumption patterns, notoriously the development of a plethora of cost-free services (ranging from software to data or photo storage). For the investor, this represents a profound shift in the notion of value: a company is willing and able to provide a product cost-free to their client as, in doing so, they gain access to and acquire information that is monetizable.

RENEWABLE VERSUS EXHAUSTIBLE ENERGIES

ExxonMobil is America’s largest oil and gas company but only ranks ninth. Ten years ago, however, it was ranked first.

What will its ranking be in ten or twenty years? Over the last ten years, the market cap of the coal industry fell by 90%.

Will the oil industry suffer the same fate?

There are presently $28,000 billion worth of carbon assets on the balance sheets of companies and states. They are valued as if they could and would be used, but they will not (cf. the concept of stranded assets, i.e., those whose value could be strongly affected by sudden and significant changes in either legislation, environmental constraints, or technological innovations.). Only the usable portion, taking into account global warming limited to +2°C, should be capitalized, but not the rest.

The decarbonization of our economy is our most significant industrial challenge since the widespread use of petroleum in the early 20th century. We invest $300 billion a year in renewable energy. By the way, this is less than the amount spent on natural disasters in the United States in 2017. More and more must be spent each year, up to five to ten times more by 2050. The investor must be able to assess 48 RE GA R D S n° 1 5

the risks of the stranded assets in order to take advantage of the opportunities associated with this decarbonization.

Investing well during the upcoming decades will therefore require knowing how to apprehend the technological, environmental and societal trends brought about by artificial intelligence and climate change, as well as their impact on our way of life. As a CIA psychology textbook teaches, "Faced with a paradigm shift, it is those analysts who are the most informed on a subject that have the most to unlearn". Never has foresight been so important in this context.

MORE RESPONSIBLE INVESTORS

In the last century, it was possible to be a successful investor by focusing uniquely on the financial aspects (with no consideration of its consequences). From our point of view, this has changed fundamentally.

These ways of thinking are no longer suitable. The famous discounting rule learned by budding financiers on school benches taught that capitalism cares less about everything that happens beyond 25 years. A Swiss franc in 25 years, discounted at 15%, is worth barely three cents today. Accounting methods are not suitable either. Deforestation, land degradation, and air, water and land pollution are all "off balance sheet", without any impact on the income statement. The dominant economic indicators are also struggling to provide a useful image, starting with the ubiquitous GDP. Putting solar panels on the roof to reduce fossil fuel energy consumption or driving a fuel-efficient car lowers the GDP. On the other hand, natural disasters increase GDP due to reconstruction and repairs. Is this the direction we want to go?

We must reconnect with the notion of responsibility. This term seems to be very fashionable today, but unfortunately actions often have little in common with words. Responsibility obliges one to answer for certain actions, and to keep one's promises. We have just passed the 10th anniversary of the subprime crisis, whose time marker was the bankruptcy of Lehman Brothers. What lessons have we learned? Essentially, alas, no one bears

the responsibility for the biggest financial crisis of the last hundred years. Neither the brokers that originated these loans, nor the bankers that securitized them, nor the rating agencies that rated them, nor the regulators who supervised them.

Business as usual.

WHAT WILL THE 7TH GENERATION THINK?

A responsible investor today is one with "broad vision". If a substantial part of a company's value and risk is not included in its accounting figures, broadening the spectrum becomes essential. A conscientious investor assumes his responsibility not only vis-à-vis his customers, but also vis-à-vis society at large. An investor who knows that the two are not at odds but rather mutually reinforcing. This is because deploying capital in the real economy and in a useful way for society, at the same time involves maximizing one’s chances of success(of course, capital must be invested in good stocks and companies, and a relevant balanced portfolio must be built).

There is a Vermont-based company in the United States called Seventh Generation that owes its name and its environmentally responsible philosophy to one of the great laws of the Iroquois Indians. This states that for every decision, take into account its impact on the well-being of the children down to the 7th generation (i.e., 140 years into the future). Founded 30 years ago, Seventh Generation created one of the country's leading brands of home and personal care products. An excellent investment, on all levels...

Over the medium and long term, the financial interest and social utility are perfectly aligned. Responsible investors will use their capital to enable the world to adapt to the formidable challenges of the 21st century while achieving a fair return on their investment. Thinking about the long term is a necessity as well as an opportunity. 

personal data freely provided by Internet users comes to roughly $1 trillion. Even for a company like Amazon, whose business model seems rather far from that of Facebook, advertising has already become the segment of its revenue experiencing the strongest growth. According to some analysts, it should even overtake cloud computing to become the company’s main driver of profits by 2021.

With the billions and billions of digital data it produces, the digital revolution has been a catalyst for artificial intelligence. A second revolution thus awaits us, made possible by the preceding one.

It will far exceed, in speed as well as in depth, all past industrial revolutions. It will alter the very nature of mankind. By 2040, it will be possible to increase our physical and mental capabilities through the advanced use of nanotechnology and biotechno-logy.

Souvent en métal, le cadran est décoré à la main selon différents techniques: guillochage, satinage, épargne ou encore grenage. «D’autres procédés comme la mise en couleur et la sérigraphie permettent également toutes les audaces afin de conférer une personnalité unique à la montre», ajoute Patrick Wehrli. C’est aussi à ses appliques et index que l’on reconnaît une montre de haute horlogerie. Usinés dans les ateliers de Vaucher Manufacture à Fleurier, ces repères permettant de lire l’heure (respectivement numéros ou bâtons), sont en effet sertis un à un et non pas simplement collés ou imprimés. Un travail minutieux conférant au cadran le raffinement extrême recherché par Parmigiani Fleurier. 

You can judge a watch by its cover Fine watchmaking distinguishes itself by the purity of the forms and the refined details of the cases and dials of the timepieces. We join an expert from the Parmigiani Fleurier watchmaking hub for a brief tour of this world where perfection is the watchword.

UNIQUE CASES

The design of a watch is expressed through its case, which is also an essential component of the timepiece in its own right, protecting the movement and enabling the wearer to read the time on the watch dial. While the traditional shape of a case is round, the creativity of watchmakers also results in square, rectangular, oval and even barrel-shaped cases. “There are certain functional specifications that must be respected, of course, but there is scope for great creativity on the outside of the case,” explains Patrick Wehrli, a member of the Parmigiani Fleurier executive committee. The case design begins with a 3D computerised design which confirms the technical feasibility. Each component is then machined individually and assembled in the workshops of Les Artisans Boîtiers (LAB) in la Chaux-deFonds. “Like the movement, certain cases in the fine watchmaking segment can consist of more than one hundred parts.

This is certainly the case with our own Bugatti model.” Steel, titanium or platinum – beyond the choice of material and the design of the case, it is also the quality of the finish which characterises a luxury watch by Parmigiani Fleurier.

THE FACE OF TIME

The dial conveys the personality of a watch. Located inside the case, it includes the different indications displayed by the timepiece: hours, minutes, seconds, date and other functions. These components are designed and produced by Quadrance & Habillage, each one bearing witness to the creative power of the watchmaking hub of the Sandoz Family Foundation which owns Parmigiani Fleurier.

Often made from metal, the dial is decorated by hand using a range of different

techniques including guillochage, satin-finishing, épargnage and graining. “Other processes, such as colouring and serigraphy, are called on to add the daring touches which give a watch its unique personality,” adds Patrick Wehrli. A luxury watch can also be recognised by its appliqués and indication decals. Machined in the workshops of Vaucher Manufacture in Fleurier, these markers – which make it possible to read the time (by means of numbers or batons) – are crimped one by one and not just stuck or printed on the dial. This meticulous work lends the dial the utmost sophistication desired by Parmigiani Fleurier.  R EG A R D S n °1 5 53

DES EXPÉRIENCES POUR MODIFIER SON STYLE DE VIE

Editrice et auteure de plusieurs livres, la visionnaire Anne Ghesquière confirme: «Les personnes sont aujourd'hui en quête de sens et recherchent une alchimie holistique corps, âme, esprit.»

Et de citer pêle-mêle shiatsu, jeûne, massages ayurvédiques, détox, yoga, réflexologie plantaire, ostéopathie ou encore soins cosmétiques bio parmi les pratiques très recherchées. Celle qui a fondé le média FémininBio en 2007 anime également le podcast hebdomadaire Métamorphose, qui donne la parole aux spécialistes du mieux-être, autour de la santé du corps et de l’esprit. Pile dans cette mouvance qui secoue la planète. Car les consciences se réveillent. On le sent, cela bruisse partout. On le voit notamment dans cet élan mondial pour l’écologie, de la manière de consommer à celle de se nourrir. Plus personne n’est dupe ni n’avale n’importe quoi. L’impact est si puissant que c’est toute notre façon de vivre qui est en train de muer.

C’est aussi ce que constate Elodie Jacquemond, créatrice d’Holissence, une plateforme dédiée aux femmes, qui traite d’un nouvel art de vivre englobant aussi bien la beauté que les voyages. «Les femmes veulent se faire du bien en mangeant, en faisant du sport, en respirant, en faisant des soins, en méditant et en voyageant autrement, explique-t-elle. Elles ont envie de vivre des expériences qui leur permettent de faire évoluer leur lifestyle.» En parallèle de ce qu’elle appelle son «écosystème bien-être», Elodie Jacquemond s’est aussi lancée dans l’organisation d’événements, masterclasses, talks ou encore workshops.

«Nous avons de plus en plus de demandes de la part d’hôtels qui souhaitent offrir des programmations wellbeing en plus de leurs soins», ajoute-t-elle.

SE CONNECTER À L’ESSENTIEL

Si les espaces privilégiés des spas ont toujours été une bulle idéale pour prendre soin de soi, les connaissances et la culture de la clientèle ont considérablement progressé, remarque Stéphane Reumont: «Une praticienne ne peut plus se contenter d’énoncer la liste des ingrédients d’un soin de beauté. Entre les applications mobiles qui détectent les ingrédients et les informations pointues glanées sur le net, nos clients sont déjà très bien informés.» Une clientèle plus éduquée, qui a besoin d’être accompagnée par de véritables spécialistes. La formation initiale et continue des praticiens est ainsi capitale afin de guider les clients et de personnaliser les soins. «Leurs besoins sont multiples, de la jeunesse au bien-être corporel, jusqu’à la spiritualité.»

Spiritualité. Le mot est lâché. «L’Occident a raté l’étape de la spiritualité, nous sommes dans une culture rationnelle et intellectuelle», relève Anne Bianchi, professeure de yoga kundalini à Paris. Selon elle, Internet et surtout les réseaux sociaux ont accéléré le rythme. «Les gens n’en peuvent plus de cette pression constante», estime celle qui a radicalement ralenti son rythme de vie effréné de rédactrice en chef d’un magazine féminin.

Pour elle, nous cherchons tous une chose toute simple: nous faire du bien. Et cette aspiration passe de plus en plus par la pratique du yoga. «Avec le yoga, par le corps, on touche l’âme, affirme-t-elle. C’est un outil parmi d’autres pour se connecter à l’essentiel.» Et de conclure qu’il n’y a qu’une cime au sommet de la montagne, mais plein de chemins pour y accéder. A chacun de trouver le sien. 

Nos clients ont désormais envie – besoin même – d’une prise en charge globale, à travers les soins corporels, mais aussi à travers l’alimentation, la beauté et le sport.» Une approche holistique pour prendre du temps pour soi, mais pas n’importe comment.

Editor and author of several books, the visionary Anne Ghesquière agrees: “People today are looking for meaning, a holistic alchemy between body, soul and mind.” She points to the mixture of shiatsu, fasting, Ayurvedic massages, detox, yoga, foot reflexology, osteopathy and organic cosmetic care among the much sought-after practices. Having founded FémininBio in 2007, she also hosts the weekly podcast Métamorphose, a platform for wellness specialists to talk about health, the body and the mind. This is entirely in line with the movement currently shaking up the planet. Because our consciousness is waking up. We can feel it buzzing in the air. We can see it in the global impetus in favour of ecology, from the way we consume to the way we eat. No one is as gullible anymore; we are not willing to blindly accept anything we are told. The impact is so powerful that it is our entire lifestyle that is changing.

This phenomenon has also been observed by Elodie Jacquemond, the creator of Holissence, a platform for women which explores a new way of living encompassing both beauty and travel.

“Women want to be good to themselves by eating, doing sport, taking care of their body, meditating and travelling in a different way,” she explains. “They want to enjoy experiences that enable them to change their lifestyle.” In parallel to what she refers to as her “wellness ecosystem”, Ms Jacquemond has also begun organising events, masterclasses, talks and workshops. “We have more and more demand from hotels which want to offer wellbeing programmes in addition to traditional care packages,” she adds.

CONNECTING WITH THE ESSENTIAL

The hushed world of spas has not escaped the quest for meaning so typical of our era. Spotlight on these new approaches to wellness that soothe both body and soul.

“

W

e have the best profession in the world, but the work has changed beyond recognition over the past 10 years,” says Stéphane Reumont, the spa manager at the Beau-Rivage Palace. Passionate and effusive, he even says that the word “spa” is outdated, almost corny. “Today we prefer the term wellness.” So wellness, the Holy Grail of a society that is too fast and too electric, where performance and success overshadow the human side. “The time when people were satisfied with something not much more than a tickle is gone,” he explains. “Our guests now want – or even need – an overall service including body care, diet, beauty care and sport.” A holistic approach that allows you to take time to pamper yourself, but not just any old how.

While privileged spa complexes have always been a protected bubble where people could devote time to themselves, the knowledge and culture of the guests have grown considerably, as Mr Reumont notes: “A practitioner can no longer simply list the ingredients of a beauty care product. Between mobile applications that detect the ingredients and cutting-edge information obtained online, our guests are already very well informed.”

With a better-informed clientele that need to be accompanied by genuine specialists, providing initial and continuing training for practitioners is therefore essential in order to guide clients and personalise their care. “Their needs are numerous, ranging from a young body to spirituality.”

Spirituality. So the word is out. “The West has missed out on spirituality; we live in a rational and intellectual culture,” notes Anne Bianchi, a Kundalini yoga instructor in Paris. She believes that the Internet, and in particular social networks, has accelerated the process. Having herself drastically slowed down her hectic life as editor-in-chief of a women’s magazine, she feels that “People are tired of this constant pressure”. She believes that we are all looking for something very simple: to treat ourselves well. And this desire increasingly involves yoga. “In yoga, you reach the soul through the body,” she explains. “It is one of many tools for making a connection with the essential.” And she concludes that, while the mountain has only one summit, there are many paths that take us there. REGARDS C’est la première fois que vous séjournez au Beau-Rivage Palace?

GOLSHIFTEH FARAHANI Oui, cet hôtel est un havre de bonheur. Le lac, les nuages, la vue, tout est beau! Et il y a aussi Vincent (Perez), le festival, les gens qui s’occupent de nous... On a envie de revenir chaque année. Et puis la Suisse, c’est un peu chez moi car j’ai de la famille à Genève. Je séjourne régulièrement en Suisse et en hiver je skie aux Diablerets. J’adore cette station!

REGARDS Is this the first time you have stayed at the Beau-Rivage Palace?

GOLSHIFTEH FARAHANI Yes, and it is a haven of happiness. The lake, the clouds, the view, everything is so beautiful! And there is also Vincent (Perez), the festival, the people who take care of us... It makes you want to come back again and again. And Switzerland is almost like home, as I have family in Geneva. I often visit Switzerland and in winter I go skiing at Les Diablerets. I love that resort!

Quel fut votre plus beau moment lors du festival?

Paul Auster, c’est LA rencontre de ce festival! Je l’adore depuis toujours. J’ai eu l’occasion de partager un déjeuner avec lui dans le cadre idyllique du Beau-Rivage Palace. Nous avons énormément parlé et ri, en toute spontanéité. Ce n’était pas l’actrice qui rencontrait le réalisateur, mais deux personnes ravies de passer du temps ensemble. Une vraie rencontre humaine.

What was your favourite moment of the festival?

Paul Auster – it was THE event of the entire festival! I have always loved him. I had the chance to have lunch with him in the idyllic setting of the Beau-Rivage Palace. We talked and laughed a great deal, it was so spontaneous. It wasn’t a case of the actress meeting the director, but rather of two people spending time together. A real human encounter.

Que souhaitez-vous pour les femmes dans le cinéma?

Un peu moins de hashtags, moins de slogans, un peu plus d’action, plus de joie et de liberté!

«Au-delà des limites», ça évoque quoi pour vous?

J’ai toujours repoussé toutes les limites pour savoir jusqu’à quel point je peux provoquer. Mon existence repose sur le fait d’être un mouton noir. Je n’ai pas de cadre, et les limites, je les explose à la dynamite!  60 RE GA R D S n° 1 5

pensez-vous de ces Rencontres lausannoises?

Ce festival porte bien son nom: depuis mon arrivée, je n’ai cessé de rencontrer des personnes que j’admire. Je n’avais jamais eu l’occasion d’échanger avec Paul Auster; on va certainement se revoir à New York. Idem avec Joel Coen, ce serait un plaisir de travailler avec son frère et lui. Parler de cinéma dans un contexte hors compétition, c’est tout simplement fantastique! Je regrette de passer si peu de temps à Lausanne. J’aime beaucoup l’atmosphère de cette petite ville et je me sens très bien dans ce super hôtel entouré de gens fantastiques.

Drugstore Cowboy a été projeté durant le festival, quels souvenirs gardez-vous de ce film?

C’est émouvant car il date de 1989. Nous étions une équipe soudée, le sujet est fort, le rôle était intense et Gus Van Sant est un réalisateur hors du commun. Je trouve que le film a bien vieilli, je n’en ai pas honte.

Quid du dernier Lars von Trier qui a reçu un accueil mitigé?

Effectivement il n’a pas été épargné par les critiques. Je crois que The House That Jack Built est un bon film. Il est perturbant, mais c’est voulu. J’apprécie les réalisateurs qui, comme Lars von Trier, sont capables de vous pousser dans vos retranchements. Bent Hamer, Lars et Gus ont en commun cette volonté de voir ce que l’acteur a dans le ventre pour obtenir quelque chose de profond.

do you think of les Rencontres in Lausanne? festival certainly lives up to its name: since I arrived, I have met no one but people whom I admire. I never had the chance to talk to Paul Auster before; we will certainly be seeing each other again in New York. The same with Joel Coen; it would be a pleasure to work with him and his brother.

Talking about cinema in a context where there is no competition is absolutely fantastic! I’m sorry that I’m spending so little time in Lausanne. I love the atmosphere in this little city and I feel completely at ease in this great hotel surrounded by amazing people.

Drugstore Cowboy was shown during the festival; what memories do you have of this film?

It is very moving, as it dates back to 1989. We were a close-knit team, the subject was very strong, the role was intense and Gus Van Sant is an extraordinary director. I think that the film has aged well, I'm not ashamed.

And what about the last Lars von Trier which was given a mixed reception?

It’s true, the critics weren’t too kind about it. I think The House That Jack Built is a good film. It is disturbing, but that was the aim. I like directors like Lars von Trier who are capable of pushing you to your limit. Bent Hamer, Lars and Gus share that desire to see what an actor has got deep down inside in order to obtain something truly profound.

What does “Beyond the limits” mean to you?

An artist can run the risk of limiting himself by using his head too much instead of following his heart and his instinct. If you are willing to take a chance, to experiment, to take a fall, and you work with people who understand that, then you can go break every boundary. We create our own limits, and often that is the problem. 

«Au-delà des limites», ça évoque quoi pour vous?

Un artiste risque de se limiter en usant trop sa tête au lieu de suivre son cœur et son instinct. Si tu es prêt à tenter ta chance, à expérimenter, à tomber, et que tu travailles avec des gens qui comprennent cela, alors tu peux dépasser toutes tes limites. Nous créons nos propres limites, c’est souvent ça le problème. 

se passe votre séjour à Lausanne?

C’est un vrai bonheur d’être dans cette ville et au Beau-Rivage Palace. Il y a un sens de l’accueil que l’on ne trouve pas ailleurs. Et puis participer à un festival sans compétition crée une dynamique particulière, très fraternelle et bienveillante.

A quand remonte votre rencontre avec Vincent Perez?

Je l’ai connu chez Patrice Chéreau, dans le cadre des cours d’art dramatique du Théâtre des Amandiers de Nanterre.

Depuis, on se croisait de loin en loin dans les festivals. Mais le fait d’avoir passé ensemble deux ans et demi chez Chéreau et Pierre Romans a créé des liens indéfectibles. Mes compagnons de cette école resteront pour toujours mes frères et sœurs de guerre.

Avez-vous un film favori?

Je vais choisir un film que je n’ai pas réalisé car je considère mes films comme mes enfants, impossible donc de n’en sélectionner qu’un. Je peux citer On connaît la chanson, parce que c’était Resnais et que j’ai aimé profondément notre collaboration. D’ailleurs, en voilà un qui a vécu toute sa vie au-delà des limites!

Que pensez-vous de la place réservée aux femmes dans le milieu du cinéma?

Le cinéma est à la traîne. Mais il y a une relève, les choses bougent, il y a notamment de plus en plus de réalisatrices.

Il n’empêche que le cinéma est encore follement en retard.

C’est toute une éducation à revoir. Il y a du travail!

«Au-delà des limites», ça évoque quoi pour vous?

C’est la recherche de tout artiste: pas forcément de dépasser les limites mais en tout cas de les interroger. En ce qui me concerne, ce sont les limites de la société que j’interroge perpétuellement. 

was your visit to Lausanne? is an absolute pleasure to be in this city and at the Beau-Rivage Palace. There is a sense of hospitality that you do not find elsewhere. And participating in a festival without a competition creates a very specific, very fraternal and benevolent dynamic.

AGNÈS JAOUI It

When did you first meet Vincent Perez?

I met him through Patrice Chéreau, during dramatic art classes at the Théâtre des Amandiers in Nanterre. Since then, we

have bumped into each other from time to time at different festivals. But spending two and a half years together with Chéreau and Pierre Romans created ties that will never be broken.

My companions at that school will forever be my brothers and sisters in arms.

Do you have a favourite film?

I will choose a film that I didn’t direct, as my films are like my children, so it’s impossible to choose just one. I would say Same Old Song, because it was directed by Resnais and I truly loved working together. Now there is someone who has spent a lifetime living beyond the limits!

What do you think of the role of women in the world of cinema?

Cinema is lagging behind. But there is a new wave coming, the ball is rolling and in particular there are more and more female directors. That doesn’t mean that the cinema isn’t light years behind. It is a whole education that needs changing.

There’s still a lot of work to do!

What does “Beyond the limits” mean to you?

It is the work of every artist: not necessarily to go beyond the limits but to call them into question. In my case, I constantly question the limits of society.  R EG A R D S n °1 5 63

Quel est votre film favori?

Performance de Nicolas Roeg. Il était le plus grand réalisateur avec lequel j’ai eu l’occasion de travailler. Cet homme avait un immense talent. Si vous me demandez mon préféré parmi ceux que j’ai produits, je suis incapable de choisir. Je ne peux pas les départager, ce sont mes enfants!

Comment avez-vous rencontré Vincent Perez?

Au Festival Lumières de Lyon. Puis nous nous sommes revus à Londres. J’étais touché qu’il m’invite à participer aux Rencontres 7e Art Lausanne. C’est passionnant d’être ici et de découvrir ce qu’il a réussi à mettre sur pied.

Quel souvenir gardez-vous de vos multiples tournages avec Bernardo Bertolucci?

Je garde de nombreux souvenirs. Parmi mes préférés, j’ai en mémoire une nuit magique passée à discuter sur une dune dans le désert marocain, lors du tournage d’Un thé au Sahara.

«Au-delà des limites», ça évoque quoi pour vous?

Je crois que c’est bien d’essayer d’aller au-delà, tout en évitant l’autodestruction. Il faut dépasser les limites sans exploser en plein vol. Tout un art! 

How did you meet Vincent Perez?

At the Festival Lumières in Lyon. Then we met up again in London. I was very touched that he invited me to participate in les Rencontres 7e Art Lausanne. It is overwhelming to be here and to see what he has succeeded in creating.

What memories do you have of your numerous film shoots with Bernardo Bertolucci?

I have so many memories. One of my favourites is a magical night chatting on a dune in the desert in Morocco when we were filming The Sheltering Sky.

What does “Beyond the limits” mean to you?

I think it is good to try to go beyond the limits, while managing not to self-destruct. You have to go that little bit further without exploding in mid-flight. It is quite an art! 

L’opéra en tenue décontractée Chaque été, l’Opéra de Lausanne se met au vert avec La Route Lyrique, un spectacle joué hors les murs, dans différentes localités du canton. Au programme cette saison, «Les Chevaliers de la Table ronde», une œuvre du Français Hervé. Rival de Jacques Offenbach, ce compositeur est considéré comme le père de l’opérette par les amateurs de musique… et comme le premier surréaliste par l’écrivain Raymond Queneau! The opera in casual dress Every summer, the Opéra de Lausanne goes green with La Route Lyrique, a show performed outside the usual setting, in different villages around the canton.

This season’s programme includes Les Chevaliers de la Table ronde, a work by Français Hervé. Vertiges photographiques Avant de passer derrière l’objectif, Yann Mingard était horticulteur. Son lien avec la nature sous-tend son travail photographique. Son projet «Tant de choses planent dans l’air, d’où notre vertige» l’a occupé entre 2015 et 2018, débouchant sur un livre (en anglais) et sur cette exposition. Combinant les temporalités et les lieux, il fait par exemple dialoguer des ciels du peintre anglais William Turner avec ceux de métropoles chinoises, ou revisite le genre de la nature morte. Autant de manières d’inviter les spectateurs à s’interroger sur le réchauffement climatique et sur leurs rôles de citoyens, de consommateurs. Sombre et vertigineux.  «Yann Mingard. Photographic dizziness Before becoming a photographer, Yann Mingard was a horticulturist. His ties with nature underpin his photographic work. Between 2015 and 2018, he was busy with his project entitled “Tant de choses planent dans l’air, d’où notre vertige”, giving rise to a book (in English) and this exhibition. Combining places and temporalities, he creates a dialogue, for example between the skies of the English painter William Turner and those of Chinese cities, or revisits the genre of still life. There are so many ways to encourage spectators to examine climate change and their roles as citizens and consumers. Dark and dizzying.

Chaplin’s World celebrates The Tramp’s 130th birthday Summer is the ideal period to explore this stunning property perched high above Vevey. Le ballet multidimensionnel Conçu sous forme de dialogue – entre les époques, entre film et scène –, ce spectacle du Béjart Ballet Lausanne remonte aux sources de la création chorégraphique.

Dixit est une création «cinéma - danse - théâtre» qui mêle réel et virtuel, chorégraphies de Maurice Béjart et de Gil Roman, créations inédites et films d’archives. The multidimensional ballet Designed in the form of a dialogue – between two eras; between stage and screen – this show from the Béjart Ballet Lausanne traces the roots of choreographic creation.

La Fête des Vignerons, ou la tradition réinventée Organisée une fois par génération, cette fête figure depuis décembre 2016 au Patrimoine culturel immatériel de l’humanité de l’UNESCO. Pour cette 12e édition, la mise en scène a été confiée au Tessinois Daniele Finzi Pasca.

On lui doit notamment les cérémonies de clôture des Jeux olympiques de Turin en 2006 et de Sotchi en 2014 ainsi que de nombreux spectacles, entre autres pour le Cirque du Soleil. Au programme, de la poésie et beaucoup d’émotion, ainsi que de somptueux costumes, de la musique avec un chœur de 500 voix, 120 musiciens de fanfare, des musiciens de jazz et des percussionnistes ainsi que 36 cors des Alpes. La Fête des Vignerons, or tradition reinvented Organised once a generation, this festival was included on the UNESCO Intangible Cultural Heritage list in December 2016. For this 12th edition, the task of staging the event has been entrusted to Daniele Finzi Pasca, a native of Ticino. He was responsible for the closing ceremonies of the Olympic Games in Turin in 2006 and Sochi in 2014, as well as numerous shows including the Cirque du Soleil. The programme includes poetry and a great deal of emotion, as well as lavish costumes, music with a 500-strong choir, 120 brass band musicians, jazz musicians and percussionists, not to mention 36 Alpen horns.

La belle saison est la période idéale pour découvrir cette magnifique propriété perchée sur les hauts de Vevey. Se balader dans le parc, comme le maître des lieux aimait le faire, constitue une excellente façon de sentir l’ambiance de l’endroit avant de pénétrer dans la maison où il vécut jusqu’à sa mort en 1977. On y plonge dans l’univers de ses films ainsi que dans l’intimité de sa vie familiale. Cet automne, une nouvelle effigie de Charlot fera son entrée au musée, complétant les trois autres déjà visibles sur place. Cette fois, il se présentera dans sa pose iconique, debout, avec sa canne, son fameux costume et son chapeau. Un passage obligé pour réaliser des selfies! 
