1. To make the curd, cra ck the eggs into a me dium sized pan and whisk lightly. 2. Add the remaining ingredients, place pan over a medium heat and gently whisk until butter has melted. 3. Continuously whisk the mixture over a me dium heat for approximately 8 minutes or until the mixture thic kens. 4. Remove pan from hea t and pour the curd into sterilized jars and seal jars while cur d is still hot. Store in a cool place for up to 2 weeks.

5. Warm the lemon and poppy seed scioche and serve with lemon curd, creamy masca rpone and a scattering of blueberries.
