As a guest you really never know what goes on behind the scenes of a Bed and Breakfast. (It is probably best that you don’t.) But, as a B&B writer I got to see both sides and found I really liked the business! That led to me starting my own (www.walkerbrae.ca). We started with one. Now, the hammer and tools have once again been dusted off, creating yet another suite. This renovation was very small in comparison to our last. Nevertheless the details and the painting and refurbishing, it all takes time. We have turned the space into a different one this time, one suitable for short term guests: it has a full kitchen in it. Friends of mine gave us a queen size Murphy bed (a bed in an armoire type closet that pulls down into a bed). At the time, I thought, what the heck am I going to do with this? I took it, thinking maybe down the road I would be able to use this. Well, it came in perfectly for use in our new bed-sitting suite, even if my husband and two friends are still recovering from moving the 500-pound unit! Thank goodness my other half is a fabulous painter too! If he lost his day job at least he would be re-employable as a painter. It all started to come together: the paint went up on the walls, curtains were hung, carpets cleaned, two incredible wing chairs purchased, one loveseat given to me, and an armoire found on the internet, even Sealy Mattress Fed-Exed a mattress to us! The kitchen was filled with dishes and finds at local ‘treasure’ stores. A fellow gym member gave me two toasters, and another, a microwave! The night before our first guests were to arrive, there we were, hanging a TV on the wall and fluffing towels and putting tea and coffee in the cupboard and making the bed. Just before our guests arrived there was my husband adjusting the TV’s slant, so it was perfect! So much goes into this business! Sometimes it is better not to know – for guests, ignorance really is bliss!

or many in Ontario, the first taste of the wilderness began when we were kids, with our first visit to Algonquin Provincial Park. Who forgets spotting your first bear? If you’re like me, preferring finer comforts, the time for sleeping rough and cooking over the fire pit is past. But, if like me, you still long for the true outdoors, you’ll be happy to discover that authentic wilderness experience can still be found, and it’s at Killarney Lodge.
Driving north out of the city, for Algonquin Park, I start to notice the population density dwindles, the pressured pace eases. I see the wilds again: forest, bare rock, landscape dotted with lakes, a moose (no kidding!). That is the secret of Killarney

Here wonderful nature is paired with wonderful cuisine, and accommodation, explain Poppy Rowland and Eric Miglin, owners. “We made that decision when we came here, to concentrate on the guests’ experience of the park, the menu, the décor, and the lodging,” says Eric. “What really makes me happy,” says Poppy, “is to have the ability with Mother Nature to produce a place where people can really enjoy themselves.”

stroll, on the lookout for beaver and moose. Staff was happy to offer a picnic lunch for my excursion, too. For them, the question is always, “What can we do better, this year?” says Eric. And it shows, especially in the menu - favorites in evidence, but not ‘the same old thing’ at all! If you’re like me, vacations are a treat, and I’m a long way from my ‘smores’ days at camp. My heart set on something special, the staff gladly obliged, but how to choose? Apple-stuffed French Toast, Lorraine Frittatta, Prime Roast Rib of Beef, Rack of Lamb: menus change daily, and the variety of choice includes vegetarian offerings.

Being an innkeeper, you need to be connected to your guests,” he says. “When I first started I didn’t appreciate how much I would enjoy that!”

in the longevity of the staff. “We’ve worked together for so many years,” she says, “sometimes we’re laughing so hard we can’t stand it.” Eric agrees. The family atmosphere, that ‘vibe’, rubs off on the guests. INN Life: Innkeeping Chefs Gail and Ralph Swan, The Swan and The Peacock Bed and Breakfast, Ayr, Ontario
Quiet village life was just perfect for murder, according to Dame Agatha Christie, so coming to The Swan and The Peacock Bed and Breakfast for a little taste of murder seems just right for the village of Ayr, Ontario, close to Mennonite country. Dating from the 1920s, the era that launched murder mysteries to popularity, this historically elegant home offers a Murder Mystery Weekend, which culminates in a four-course dinner, during which guests struggle to discover ‘whodunit’. “Years ago, my sister-in-law invited us to one, and we loved it,” says Gail Swan, innkeeper. “Because we loved doing the murder mysteries ourselves so much, we thought it would be a unique way for people to come to our B&B for a weekend.” Each Murder Mystery is set to a theme, and Gail plans the menu to match. “I try to make the experience as authentic as possible,” she explains. “The Mexican theme serves Mexican food, for the Italian we serve pasta, and so on.” From the appetizer through soup and salad, the main course and dessert, the murder is key, but culinary special requests are welcome. There is even a Colorado Beer tasting theme, for which all the dishes are made with beer as an ingredient. Of course the California Wine theme dishes are made with California wine, even down to the cheesecake. So far, these innkeepers have the makings of 21 different themes to choose from. Of course the Murder Mystery Weekends require more preparation for both guests and innkeepers, than the bed and breakfast’s usual guest stay, but that doesn’t seem to deter anyone. What drove Gail and Ralph Swan to murder? “Meeting great people,” says Gail. “Everyone has a wonderful time, even if no one figures out whodunit!”

Danielle Deschamps-Stabler, at The Mast Farm Inn, Valle Crucis, North Carolina Here in the idyllic Appalachians of North Carolina, come to the historic rural Valle Crucis. It was amazing.” Danielle began her love affair with cooking, in college. INN Life: Innkeeping Chefs Jason and Miranda McMillan of the Athlone Inn & Restaurant, Gananoque, Ontario New owners of this historic property, Jason and Miranda McMillan have been in the Thousand Islands neighborhood in Gananoque for more than twenty years. Both are excited by the opportunities, especially Chef Jason. “I would often find myself caught in the kitchen without a chance to visit with the diners,” he says. “Living on site and being a part of the everyday, I can chat with our guests and really get to know our clientele personally.” His grandparents’ restaurant in Nanaimo, BC, proved an irresistible introduction to the culinary arts for Jason. “The days would end with clam digs and fresh, wild BC salmon dinners on the beach,” he says. Miranda shares his love for food, with years of experience in hospitality. “We happened on a last-minute chance to purchase the inn,” explains Jason. It has certainly added a new dimension to the couples’ skill set! “The chef hat comes off to don the plumber hat, then switches to the landscaping hat...” he says. “Sometimes I find myself wearing multiple hats at the same time – like taking a phone reservation while my head is in the oven.” But the duo enjoy the challenges that their combination venture brings. Inspired, he became creative in the kitchen. Joining his wife, where she had a dentistry practise, in Norris Point, in Gros Morne National Park, they started small. “Our dream was an upscale inn featuring gourmet food and fine wines,” says Marina. “Now with a four-and-a-half star country inn rating, this is how Sugar Hill Inn came to be.” “It was always the plan to have him in the kitchen and manage the running of the inn,” Marina explains. Vince was involved in every stage of the business, from the ground up. “I’ve learned refrigeration, electrical, plumbing – there’s not much that I can’t handle,” he says. “I’ve become a jack of all trades, over the years.”

Their remote location is the special draw, and challenge. Sourcing the best food is extra effort, prompting the inn’s own garden for shallots, garlic, and more. Gardening gives Vince a break from business demands, too. And Vince specially imports European wines, so guests can sample labels that can’t be found elsewhere. My husband and I want to try a B&B when we take our daughter to college in the fall but she will be staying with us the first night. Do B&Bs have cots or rollaway beds like hotels? Judy Madison, WI A B&B is a great choice for many reasons, especially during this exciting but anxious time. Your innkeeper will be able to help you navigate the area your daughter will call home for the next four years, and hopefully, you’ll plan on staying an extra night or two for a getaway with your husband. Your daughter is also going to love what we predict will be a delicious breakfast before the reality of dorm food. Ask the innkeeper which room they recommend as most inns can accommodate an additional person in one or several of their rooms. A word of caution: Inns book early especially for freshman drop off, parents’ visiting weekends, and graduation, so plan ahead. While graduation may be the furthest thing from your mind, an added bonus of establishing a good relationship with a B&B in freshman year is that you are more likely to have a place to stay for graduation! I’m excited to try my first B&B this summer. On the B&B’s website it says that breakfast is served from 8am – 9:30am on weekends; the problem is we love to sleep in (at least until 10am). Will we miss breakfast completely? Jeff, QC The beauty of staying at a B&B is that each one is different, so it’s okay to ask the

innkeeper when making your reservation about having a later breakfast (or earlier for those who might need to be up and out early). While we would not expect the innkeeper to create a cooked-to-order breakfast before or after the stated breakfast times, most can make some sort of arrangement for you. Ah, Andalusia. Even the city names of this romantic region of Spain inspire the imagination: Cordoba, Grenada, Seville. And, Andalusia has an inspired culinary tradition. Not the least of which is Gazpacho! This raw vegetable soup is tomato based. Traditionally served cold, it is a light and refreshing summer treat.
Gazpacho a la Inns Ingredients: Water (chilled) Raw vegetables of choice (carrots, celery, green or yellow beans, cucumber, bell pepper, garlic, onion) Tomatoes Olive oil (to taste) Wine vinegar (to taste) Salt (to taste)
Method:
(We at Inns opted for the traditional Andalusian
way, using mortar and pestle, but it can always be substituted for a blender or food processor!)
Wash all vegetables. Peel tomatoes, garlic, and
onion. Pound the tomatoes with a mortar to puree, and set aside. Chop remaining vegetables, and
place in a container. Slightly puree vegetables by pounding with mortar, to preferred consistency
that retains some texture and avoids a completely smooth thickness. Add tomato puree to the
container’s contents, and blend. Add chilled water,
olive oil, wine vinegar and salt, to taste, and blend.
Chill until serving.
The flare of Gazpacho is in its garnishes. Different regions of Andalusia offer their own unique varieties from cucumber, to hard-boiled egg.
You can even serve this soup chilled over ice, if desired. Ole!

It’s a man’s world, too, and innkeepers are stepping up with guy-centered activities. Guys can hit the open range and experience life as it once was at Meadowlake Ranch Inn and Dude Ranch in Sand Springs, Oklahoma. They can learn how to ride a horse, rope a steer, handle a bow, throw a tomahawk and bowie knife and shoot a gun and rifle during a 3-day stay. When evening rolls around guests can gather by the fire for a grilled BBQ dinner, acoustic guitar playing and cowboy poetry before grabbing some shut eye in an authentic teepee. orothy, returning home from the land of Oz, told her friends that if you’re ever looking for your heart’s desire, you should look no further than your own back yard. We all learned that lesson, during the economic downturn, with the idea of forgoing a travel vacation in favor of staying close to home. Not only was a new word invented, but a new opportunity for fun and adventure, hence The Staycation was born. Funny we all know the famous attractions far away, but for many of us we know very little about what’s in our own neighborhood. Every community has a treasure chest of hidden gems. Begin your hunt with your community information source. A municipal recreation department, visitors’ centre, the town hall or library will stock local brochures chock full of things to do and see, close to home. The official website of your district will likely host lots of links offering where to eat, where to stay, and what to see.

Makeover Magic Creating an Unforgettable Bedroom for $500 By Mary Hughes Bedroom before

hen you are in the Bed and Breakfast business, one of the most important things is to have attractive bedrooms. No one in the world wants to stay in an unattractive space. For many innkeepers keeping the rooms fresh and new is a constant battle, as it is costly to redecorate, and then there is the thought, “Where do I begin?” One of my passions is decorating and creating, and I am always buying vintage style linens, pretty and fresh designs. It seems I am addicted, or as my mother politely says, I am ‘a collector’. (I like that saying better, I feel less ‘labeled’.)

That is probably one of the minor reasons I opened my own bed and breakfast so I could create and design. I never get tired of doing it! It is fulfilling when you have created a space that people love to come to! The bedroom is what sells the B&B experience in most cases. When potential guests are looking for a destination, the bedroom is what they like to see, first. When looking to redecorate, take into consideration the architecture of the building. In this case it was an 1850 log home with additions, so in keeping with the design I searched for a rustic, elegant ensemble that was warm and inviting. I discovered the Victorian Heart Company (VHC) located in Branson, Missouri,

which is famous for product lines, Nancy’s Nook, Bella Taylor, Lasting Impressions and more. One of their lines which is wonderful for lodges and cabins is the Truman line. For this bedroom makeover, on the suggestion of VHC Marketing Director Keisha Baxter, we chose a cotton woven coverlet, which is perfect and light and can be used throughout the year. Underneath, the bed sheets were a wheat-colored microfiber set, which are easy care and no iron sheets. Just what a B&B needs - low maintenance! Lots and lots of pillows made the room look inviting and romantic! Fabric euro shams and quilted shams were the perfect backdrop to the smaller 16”x16” flowered fabric coordinated pillows, in front. www.innsmagazine.com
The floor beside the bed, what you are stepping on when getting in and out of bed, is very important. So, we loved the Tea Cabin Braided Jute Rugs in a rectangular design. lways wanted to own your own inn? Here is the perfect opportunity. In twenty-three years of my writing career I have to admit this adventure was a first for me. And let me tell you, I have been on a few adventures! This one is in a class of its own. I received a call from a gentleman named Chip Johns, a rancher from just outside El Paso, Texas. He admitted to me that it was an unusual call but asked me to hear him out. So I agreed to listen to his story: He had acquired a property named Mile Hi Lodge, 15 years ago. For many reasons, but the two most important reasons he gave me were that, one, it has historical significance and is the highest house in Texas, and two, it is right in front of the 10,000 acres of land that he also owns.

Chip thought the setting would make an amazing destination for guests. Because it sits high atop the Hueco Mountains, the views are spectacular. He believed people would love to come up there. Not to mention that it is the only house on the mountain range - there is absolutely nothing like it in the area. It even met with the famous: it was a rental for actor Bruce Willis while making the movie Last Man Standing. Chip admitted to me that he is not an innkeeper. He rented the entire lodge out for nightly rentals but felt this special property could really be ‘something’. I could hear the earnestness in his voice – and then the question came: “Mary, would you like to come down and see the lodge? I need your help to tell the story! My historic house needs to find an owner, because I just don’t have the time to look after it anymore. I feel it needs to be made into an Inn and I know I could use your help.” Inns Magazine Gourmet 2012

I told Chip he had a very interesting proposition. But I am not a real estate agent, and I had to think about how I could meet this request. We talked a few more times and two weeks later I was heading off to El Paso, in 100-degree weather and all to see Mile Hi Lodge. Chip Johns, as it turns out, is a man that wears many hats. (He owns almost as many cowboy hats as have ever been made!) I discovered his early career involved the food industry and that he was a major supplier to fast food chains. He had been in politics, a professional polo player, a constant real estate investor, and, for the last 27 years, a rancher with a quarter of a million acres that is home to 1000 head of cattle. That is as much as I can remember, but I am sure there is more that I may have missed. I could see why his hands are full!

It was clear he wanted to find the right buyer or lessee: an innkeeper for a property that could be so much more than the average inn. I arrived at Mile Hi Lodge, that afternoon. After I landed in El Paso, I found the property was about 20 minutes outside of town. The name Mile Hi comes from the lodge’s elevation: it is literally over a mile high from sea level, making it the highest house in Texas. The adobe-style house sprawls across the top of the hill and the view is staggering. I entered this ‘diamond-in-the-rough’ and through the entryway my first stop was

a vast bar and entertaining room. The lodge has a fireplace in most rooms, and this 1,000 sq. ft. space has two wood-burning stoves, one at either end. The skylight, a custom vaulted, boxed ceiling lets the day’s rays stream in, making it bright and welcoming.
Adjacent, is the great room, approximately 1,500 sq.ft. and faces west. It offers Inns Magazine Gourmet 2012
a large sitting area in front of the stone fireplace. The dining area is located at the other end, and there is an enormous deck that overlooks the mountains, for miles. The kitchen is in the centre of the lodge and boasts a roomy, chef-inspired environment, decked out with a granite-top centre island, in the shape of Texas no less! The five guest rooms are on the southeast side of the building, most with fireplaces and bathrooms. The master suite, being the largest, has two patios, a sitting area and fireplace.

Mile Hi is a perfect setting for couples’ getaways, a wedding venue and corporate retreats. The good news is, there are an abundance Fortune 500 Companies in El Paso! At the front of the lodge, there is the main patio which was one of my favorite places to sit. Even in the hot weather there was a constant, refreshing breeze on the beautifully appointed, walled patio, also with its own outdoor fireplace. Slightly down the hill, there sits a separate rock cottage that could be the owners’ or honeymoon accommodation.
Also included is a new bar with a corral, and approximately 50 acres of pastures for the cowboy in you! After all, where are you going to round up your resident longhorns and prized horses?

Chip was adamant that I had to sit out and watch the sunset, so with glass of wine in hand we sat and waited. As the sun hit the horizon, it magically sank and within a few
minutes the sky went a firey red. The lights in the distant JuĂĄrez, Mexico, turned on, in unison with the city lights of El Paso. Indeed, it is a special place. Chip is right: and the happy ending of this story is, here is a vendor who is willing to work with a buyer on many levels, including financing. Ingredients:
12 eggs 1 medium onion 1 cup regular plain unflavored yogurt 4 oz. salted butter ½ cup shredded hash brown potatoes, uncooked 4 oz. grated old cheddar cheese 4 oz. frozen spinach, defrosted and well drained 1 tsp Lawry’s seasoning salt (or to taste)
Method:
Combine the seasoning salt, yogurt and eggs and beat on high until well blended. Melt the butter in a frying pan and sauté the onions together with the hash browns until the onions are translucent and the hash browns are just beginning to brown. Let the onion / hash brown mixture cool for about 5 minutes. In a large bowl add the spinach and hash browns to the egg/yogurt mixture and stir lightly. Pour the mixture into a 9” square pan. Sprinkle the grated cheese on top of the mixture. Bake in a preheated 350 degree oven for 35-45 minutes, checking frequently to make sure the interior is cooked. Let stand for 10 minutes before slicing and serving.

Spinach and Red Pepper Tart of the White Swan Inn

Here is a favorite recipe provided by Cathy Russell, owner of White Swan Inn B&B on beautiful Lake Michigan. Guests loved this recipe, originally using asparagus. Tucked away between Chicago and Mackinack Island, at the White Swan Inn, guests can be assured of a relaxing atmosphere, comfortable surroundings, delicious food and attention to detail that is truly the better way to stay!
Ingredients:
½ (15 oz) package refrigerated pie crust, room temperature 1 tbsp olive oil ½ cup chopped red pepper ¼ cup chopped onion salt and pepper to taste 1 tsp dried basil, plus additional for garnishing 4 oz fresh spinach, washed and trimmed (approx. one cup well packed) 2 oz shredded mozzarella cheese 2 oz crumbled feta cheese 2 tbsp parmesan cheese
Method:
Preheat oven to 400 degrees.
In a large skillet, lightly sauté red pepper and onion in olive oil, season with salt, pepper and basil. Add fresh spinach and sauté for barely one minute more. Unroll pie crust and place on ungreased baking sheet. Sprinkle mozzarella cheese on pie crust within an inch of the edge. Spread sautéd vegetable and spinach mix evenly on top of mozzarella. Top with feta cheese. Fold edge of pie crust over vegetable/cheese mix. The crust will not cover vegetable mixture completely. Bake at 400 degrees for 20-25 minutes or until dough is golden brown. Remove from oven, sprinkle parmesan and additional basil evenly over the crust and exposed vegetables and bake for 5 more minutes. Cool on wire rack for 5 minutes before serving. 1 lb (450g) Fresh Garden Spinach 1 lb (450g) Boneless Pork Shoulder 1 tbsp (15g) Fine Sea Salt ½ tsp (1g) Fine Black Pepper 1 tbsp (15g) Chopped Onion 1 tbsp (15g) Chopped Garlic 1 tsp (1g) Ground Nutmeg 1 tsp (1g) Sweet Paprika 1 ea Lemon Zested Yield: One 2lb (900g) Terrine
Method:
Wash spinach to remove dirt or grit. Remove any large coarse stems. Cook briefly in a covered pan with only the liquid that clings to the spinach. Once wilted, cool completely and coarsely chop.

Cube the pork shoulder and grind twice through the small plate of your meat grinder (if you don’t have a meat grinder your butcher or grocery store can do this for you). In a large bowl, combine ground meat, spinach, seasonings, lemon zest, and mix by hand for 5 minutes or until sticky and well mixed. Fry a small piece to taste for seasoning, adjust if necessary to your taste. Pack meat solidly into a small terrine mould or small loaf pan. Bake in a pre-heated 350F degree oven, until the internal temperature reaches 150F degrees. The terrine will shrink from the sides and be firm to the touch but it should not be browned. Remove from the oven and chill for 24hrs in the pan. Place a small weight on the top of the terrine while chilling.

Spinach Strudel of the Orchard Inn

‘A mountain top escape on 20 beautiful acres’, the Orchard Inn, in Saluda, NC, offers an elegant mountain retreat with finely prepared fresh and local food, each day in the restaurant. Marianne Blazar and her husband, Marc, first met in 1978 while both independently operating charter yachts in the Virgin Islands. . They raised their family in St. Thomas, moving to Florida in ’97 so the boys could go to high school in the States. In 2008 they began a three year search for the perfect B&B and eventually landed in the charming historic town of Saluda, after purchasing the Orchard Inn. The Inn has a fine dining restaurant, where Marianne is able to hone the culinary skills she has spent a lifetime mastering. Marianne Blazar was born in Vienna, Austria. She started cooking with her grandmother, who was wheelchair bound, when she was 5 years old. “Grandmother taught me not only some basics, but also the appreciation of every morsel of food.” In post-war Austria, one needed to be very creative with whatever ingredients you could get! Marianne boasts farm to table, exquisitely prepared, healthful and creative European influenced cuisine. The menu changes daily and seasonally, using fresh, mostly organic, ingredients sourced from local farmers.
Ingredients: Spinach/Cream Cheese mix: 1 pound of Spinach (frozen or fresh) chopped and sautéed 1 medium onion, chopped and sautéed 1 small tomato, diced 1 small sweet pepper, diced 1 tsp of crushed garlic 4 eggs 12 oz cream cheese 1 cup of shredded cheddar cheese ½ cup bread crumbs ½ tsp of thyme ½ tsp of marjoram Pinch of cayenne Salt and pepper to taste
Pastry
2 sheets of puff pastry (package at Supermarket) Flour for working surface 8 oz of fresh spinach 1 egg 1 tsp of water mixed for glazing the strudel Oil for baking sheet
Method:
Mix the first 13 ingredients either in Cusinart Mixer or by hand. Flour working surface slightly, and roll out Puff Pastry to a square. Cut off two strips of each sheet, about one inch wide (for decorating strudel). Slightly oil baking sheet and preheat oven to 350 degrees. Layer Puff Pastry with fresh Spinach Leaves and then distribute the Spinach/Cream Cheese mix on top. Fold in sides and roll Puff Pastry, making sure no holes or splits occur, into an approximately four-inch thick strudel. Transfer Strudel to oiled baking sheet. Brush the Strudel with the egg/water mixture. Use the strips to decorate the Strudel, with crisscross or little squares. Brush again with the egg mixture. Put in oven and bake for 40 minutes at 350 degrees or until pastry is light golden/brown. Let cool for 15 minutes. Cut in two - inch portions and serve with greens. Bon Appetite!
