My memorable moments include a recent stay at Los Poblanos Inn and Organic Farm in Albuquerque, a place of natural beauty and unexpected activities. Flinging open the drapes I saw the antithesis of my colorful expectation. What I saw was a snowy-white albino peacock, strutting and calling as if to announce to the world that he was now granting photo ops. Completely enchanted, I experienced the first of many memorable moments at Los Poblanos. Same Time Next Year!
I
have been going to my friend Bebe’s for a girls’ weekend for the same weekend each year, for the last three years. It is such a treat and important to me I miss out on important events at home. I allow myself this once-a-year luxury and throw all obligations and guilt to the wind. Bebe and her husband Bob own the White Doe Inn in Manteo, North Carolina. This year, we invited our good friend Robin Hester, a fellow innkeeper of Sobotta Manor, Mary Hughes & new contributor, to join us! Out of all the people I know, Robin Robin Hester is the world’s best shopper and a specialist at finding treasure at discount and consignment stores. She is also knowledgeable about great things like decorating and tips for traveling and innkeeping. I’ve asked her to join us here at the magazine, with her own column. As the weekend unfolded, I realized I would need to buy another suitcase as the shopping and treasure-hunting was turning out quite prosperously. With all the laughing and cajoling, we soon forgot our stresses and worries from home and had some good old-fashioned fun. But we had our laptops with us - and had a Facebook half-day session and did some great work on our individual sites, so it wasn’t all play. Day four we had to purchase another suitcase as Robin kept finding great things for my daughters! (And, as our weekend takes place three weeks before Christmas we hit the jackpot!) This trip is such a luxury in my life more than jewels or cars. It is friends sharing and spending time together and exiting from our lives for just a few days. (Bob even disappears!) We got to refuel and reenergize, not to mention sleep in - I wouldn’t trade it for anything in the world and I can’t wait ‘til next year!

f I were a celebrity, and really wanted some peace, quiet and privacy, where would I go? What a great question - even if you are not a movie star - because most of us want a refuge from our lives. We all need some TLC. Add some 700-thread count sheets and fine furnishings, and you have yourself a fabulous cocktail called the Casa Grandview. Located in Florida, it too is set amidst movie stars and the nouveau riche, but it is well grounded and down to earth. That is a guarantee. The traveling connoisseurs of the bed and breakfast industry see a changing landscape these days: gone are the days of antiquated accommodations and hosts who emulate your aunt and uncle. Fast-forward to the new

millennium and you will discover cutting edge luxury properties popping up all over North America. This perfect example of a boutique luxury bed and breakfast inn sits amongst the peaceful streets of West Palm Beach. Owners Cheryl and Kirk Grantham didn’t intend to be in the innkeeping business. Their story is unique, as Cheryl recalls with a laugh, “It happened quite by accident!” The Granthams moved from their West Palm Beach home of 25 years, to the Grandview Heights historic neighborhood in 2004, and Inns Magazine Luxury 2013
purchased a 4,000 sq. ft. house. It’s actually two houses - a 1919 Spanish Mission style and a 1925 Mediterranean Revival moved to their present site and joined together. Over the next few years, while Kirk was running his busy real estate and law practice, neighboring properties came up for sale. Being in the business, he and Cheryl decided to buy abutting properties and offer them as rentals. “Our journey into the accommodation business started out one property at a time,” Cheryl says. each home’s historic integrity in mind. Cheryl furnished and decorated their rentals lavishly. “People coming to our area are looking for beautiful, elegant, but no fuss accommodations.” Cheryl and Kirk stayed true to their vision. “We wanted our places to offer beautiful amenities appealing to travelers, yet be family and pet friendly,” she says. “As our little business grew, more properties were acquired and restored,” explains Cheryl. This private urban renewal has turned into a colossal undertaking. With 12 luxury suites and cottages, two pools, and
amenities that will make ‘the Donald’ grin with delight, they began receiving accolades and top reviews. “Guests were happy with their stays as they were self-catering and at their own pace,” observes Cheryl. “Guests were requesting stays from a few nights to a few weeks. Kirk and I couldn’t believe the response!” They were catapulted to a successful destination for the Palm Beach area.
Casa Grandview is a destination resort experience with a personalized residential lifestyle. You would think that would be enough to suffice this couple? No, not quite. They looked at their own home and thought they could offer bed and breakfast accommodations for those looking for a touch of home for nightly getaways. Originally two houses joined as one, the renewal started once again. They ended up offering three bed and breakfast suites in one two story section of the main house, completely separate from Kirk and Cheryl’s living space, and two cottage style suites just across from the inn.

Two Inns experts, Mary White of BnBfinder and Mary Hughes, Editor of Inns Magazine, field questions from Innkeepers and travelers During a recent bed & breakfast stay, my husband was so comfortable that he walked out of our room on our way to breakfast and realized he had only put his socks on, but not his shoes. He asked me if it was okay to go to breakfast in just his socks and I wasn’t sure. What do you think? Susan Peterson, New York, NY Well, we certainly understand the feeling of being comfortable at a bed and breakfast. Innkeepers want their guests to feel relaxed, so going to breakfast in socks or slippers, especially at a smaller inn, is probably okay; although, we would not suggest bare feet. In your husband’s case we doubt anyone even noticed. On the other hand, going to breakfast in a bathrobe would probably not be appropriate. However, as with everything when it comes to bed and breakfast getaways, all inns are different so there are no absolute rules. I recently stayed at a great, boutiquestyle B&B that is highly rated. I was very disappointed in parts of my stay, so I thought I would point out some things that I think B&B owners should consider from a guest’s perspective: The front door was not marked properly as the main entrance, so I had trouble

finding out where to enter. I went around the entire ground floor knocking on all the doors to try and get in. To make matters worse, the owners weren’t there at the time. Our room was on the third floor and I, being a woman, had to lift my heavy bag up the stairs while the B&B host walked behind me. I didn’t expect her to carry it, but it would have been nice if she helped me by picking up the back end of it. Once we got to our suite it was lovely and we enjoyed our stay. The next morning after a fabulous breakfast we said our goodbyes. As I was backing out of the driveway, I noticed someone leaning out of the neighboring house taking photos of my car. I immediately called the innkeeper and told her about this. I was shocked when she said, “Yes we are aware of the neighbor and he doesn’t like it that we are a B&B, and I think we are going to have to give him a cease and desist letter.” So here I am at home and concerned that this stranger has photos of me and my car. I’m at a loss for how this innkeeper should handle the neighbor in this situation. It was so strange, and I’m wondering if you have any suggestions.
Thankfully, this is an unusual experience. The advice you gave about the innkeeper marking the front door entrance and perhaps helping with luggage to the third floor room is good. While some people do object to B&Bs as neighbors, most see them as an asset to the neighborhood or don’t think about it. Depending on the town and the zoning, the innkeeper may first want to speak with the neighbor to determine why they are upset. Sometimes you can kill them with kindness or educate them; it’s possible they don’t understand what a B&B is. If that doesn’t work, the innkeeper will have to explore her legal rights because you are right: as a guest you shouldn’t be made to feel uncomfortable. I’m an aspiring innkeeper and I love the feel of Deneen Pottery mugs. I’ve used them at many B&Bs I’ve stayed at and noticed many inns sell them. Do innkeepers who sell these mugs typically break even or are they a source of revenue? If I decide to sell them, do you have any suggestions on how to make sure I sell the most? I told her I would get back to her as I had to discuss this with my husband. At first we felt weird at the thought of having someone in our home over the holidays (this client is alone). Anyways, after a long thought we said yes and told her that breakfast will not be as usual though we would provide a nice setting as usual but we may have something set up for her in her suite, as there is a kitchenette there. If that was okay, then she would be more than welcome to come and stay. She said that was fine and that she didn’t want to be intrusive. So in retrospect, we feel lucky that someone on their on own, who maybe doesn’t celebrate Christmas, would choose our B&B to stay as a special treat away. Do you have any advice or comments that could help us make her stay special without being too intrusive on her or us? Thanks, B&B owners in Michigan

We certainly love making them, and we especially love making them for innkeepers because they USE them. This is the single best way to sell the most mugs - use them to serve coffee to your guests. Breakfast is a big part of the B&B experience, and when you use the mugs to serve coffee or tea they become a tangible part of the experience. One innkeeper mentioned a sign they have on display with their mugs that says ‘When you drink from our mug at home you will be right back here with us.’ Most innkeepers sell the mugs for more

than what they cost, so a break even is definitely achieved. Some innkeepers see the potential the mugs have for marketing and would prefer to sell the mugs just above cost so that many of their guests take them home. The innkeeper that sells the most mugs per year is Julie Rolsen, owner and innkeeper at the Garth Mansion in Hannibal, MO. She has taught us to explore colors - the more colors you have the more mugs you will sell. Besides having her mugs set out on a warming tray (so they are warm when picked up), she also greets her guests and tells them to be sure to pick up a mug that best matches their outfit. “Find your favorite, each one Inns Magazine Luxury 2013
Not all people celebrate Christmas as you know, and letting guests know ahead of time that things might be paired down or minimal is fine. I think a gift for your guest might be a great idea as a ‘substitution’ for less time spent with them, etc. How about a luxury box of chocolates wrapped up with bottles of Italian sodas, and snacks as a nice surprise? Some people just look for a diversion and or peace and quiet and either way look at it as a compliment: of ALL the places in the world they chose to stay with you. Sometimes we don’t need to make ‘a lot’ out of it, guests enjoy it for what it is.

At a bed and breakfast called Log Cabin Heaven in Elora, Ontario, you learn to make mozzarella and Ricotta cheese, from start to finish. You take inexpensive homogenized milk, and, in a short time, you have melt-in-your-mouth cheese, plus a cooking lesson that incorporates the cheese into some decadent recipes.
Basic Cheesemaking for the Home Kitchen is offered year round at Log Cabin Heaven B&B, Elora ON. For 1-10 adults in a private group: four hours, hands on, you get to eat what you create, take some home, and the info is emailed to you. www. logcabinheaven.com
Owners of Log Cabin Heaven, Daryl and Ro Cober, have been offering the cheese course for four years. Originally, Daryl was looking to make buffalo cheese and then studied how to make it at home. Cheese making is normally thought to be very expensive, but it doesn’t have to be, Daryl says. “We can make cheese in the kitchen without spending hardly any money at all. I had a grandmother who came to stay here to learn to make cheese - she takes her grandchildren to the cottage to bake all the time she now takes them to make cheese!”

Excerpts from Log Cabin Heaven – Basic Cheese Making for the Home Kitchen:

Here are the basics for making cheese without investing large amounts of money on special equipment and exotic ingredients, with steps including what utensils you will need (including the double boiler), even where to buy your supplies. (Note: instructions are summary only!) The ingredients you will need: Homogenized Milk – Usually 3.25%, Citric Acid – Powdered, Liquid Rennet, Cheesecloth, Pickling or Kosher Salt, Apple Cider Vinegar, Pure Water. www.innsmagazine.com
Basic Steps:
Sterilize your kitchen, cheese pot and utensils. Make sure your kitchen counter tops are clean and your sink and surrounding areas are clean. 1. Prepare your double-boiler. Fill with warm water. The jar container should be placed in the bottom to hold the cheese pot from coming into direct contact with the bottom of the boiler. Place the double boiler on the stove. 2. Prepare the milk. The first step is to sour the milk. Add 3 teaspoons of Citric Acid to Two cups of Cool Water. Stir until dissolved. Pour five bags (6.6 L) of milk into the cheese pot. Slowly add the Citric Acid Solution while quickly stirring the milk to ensure even distribution throughout. Place the cheese pot into the double boiler and adjust the outer water level to be within an inch of the milk level. 3. Preparing the brine. Place one liter of water in a pan on the stove. Add 200 ml of Pickling or Kosher Salt. (1/5 the amount of water) Slowly heat and stir until all the www.innsmagazine.com
salt is dissolved in the water. Pour the solution into one of the large glass bowls and set aside to cool. 4. Adding the Rennet. Add 1â „2 teaspoon of Liquid Rennet to 1 cup of cool Pure Water. Stir. Hold the skimmer above the milk surface and slowly pour the rennet solution onto the skimmer. Use the skimmer to gently stir the rennet into the milk. You will see the solids starting to separate fro the milk. 5. Cutting the curds. Use the long knife to cut the curds into one inch squares. Use the skimmer to slice the curd horizontally beneath the surface into one inch cubes. 6. Cooking the curds. (Mozzarella requires the curds to be cooked for a period of time.) 7. Crushing the salt. Place 1 teaspoon of Pickling or Kosher Salt on the cutting board. Use a large table spoon to gently crush the salt into a fine flaky powder.

Lift the cheesecloth containing the curds form the colander and gently squeeze the curd mass to drain as much whey as possible. Return any whey back to the cheese pot. 9. Final Cooking. The curds must now be cooked until they are ready for stretching. 10. Stretching the Curds. Place the curd mass on the cutting board. Sprinkle the crushed salt on the curds and start kneading like bread dough. Break off a handful and roll into a ball. Place into cold brine solution. Let the cheese balls sit in the cold brine for 1 to 2 hours. 11. Eating the Cheese. Remove the cheese from the brine and gently pat dry with a paper towel. Your fresh mozzarella is ready to eat. Say Cheese!

I have had a love affair with popcorn my entire life. When we have family gatherings, I still make a huge bowl, and believe me, it is a HUGE bowl! Somehow, it all goes. Everyone gobbles it up. I have discovered some interesting and entertaining ideas that take this old tradition a notch up, whether entertaining at home or for a B&B offering a snack, these are certainly worth a try!

Road Popcorn Truffles Ingredients 1 cup popped popcorn 1 cup mini marshmallows 1 cup peanuts salted 1 pound chocolate wafers pan spray mini muffin pans
Method: Spray the muffin pans with pan spray. Divide popcorn, marshmallows and peanuts equally into each cup of the mini-muffin pans. In a microwaveable container, melt chocolate in microwave on high for 45 seconds. Stir chocolate. Repeat microwaving and stirring, 15 seconds at a time, until chocolate is melted smooth. Divide chocolate into each muffin cup by pouring into the center of each cup, filling each to top. Gently tap muffin tin on counter to eliminate air bubbles. Place in refrigerator and cool until chocolate is fully set. Unmold and enjoy! Can use paper cups too!

Southwest Cheddar Chipotle Popcorn
Ingredients 9 cups popped popcorn 1 cup old cheddar, powdered or very fine shred 1 tbsp chipotle chillies, dry, ground 1 tbsp cilantro, chopped 2 oz butter, melted 1 tsp popcorn salt 1 brown paper lunch bag Method: Place popped corn in bag and add melted butter and salt, close bag and shake vigorously. Add cheddar, chipotle and cilantro and shake vigorously. Enjoy!
Popcorn Turtles Ingredients 1 cup brown sugar 1 cup granulated sugar 1 cup dark corn syrup 1 cup butter 2 cups evaporated milk 1 tsp vanilla 2 cups pecans

2 cups popped corn 1 cup cherries, dried 8 oz dark chocolate 8 qt heavy saucepan 1 sheet pan, greased Method: Combine sugars, syrup, butter and 1 cup evaporated milk in sauce pot and bring to boil. Add remaining evaporated milk slowly, stirring constantly and continue to boil. Cook until candy thermometer reaches 255 degrees or hardball stage. Add vanilla, pecans and cherries and stir to combine. Gently fold in popcorn to coat. Drop mixture by the spoonful onto sheet pan to form small clusters and allow to cool. Melt chocolate over double boiler. Drizzle chocolate over cooled clusters and cool. Enjoy! Microwave

Ingredients 2 cups Cheerios 2 cups Crispix 2 cups of popped popcorn 1/2 cup pecans (I never use them)

1/2 cup sugar 1/4 cup butter 2 tbsp corn syrup 1/4 tsp baking soda Method: In a large microwaveable bowl place butter, sugar and corn syrup. Microwave on high for 1 minute. Stir. Microwave for 1 1/2 minutes until boiling. Stir. Reduce power to 30% and cook another 2 to 2 1/2 minutes. Stir in baking soda and the cereals and popcorn. Toss gently. Cook mix on high for 2 to 2 1/2 minutes, stirring twice. Spread mix on wax paper lined baking sheet to cool. Store in a tightly covered container.

Up-Cycle the Old for
D
onna PochaskiThomas has made ‘vintage chic’ all her own, and is living her creation, in Schenectady, New York. But it wasn’t always like this. “In my 20s,” she says, “I thought it would be nice to own a B&B one day.” But she began her career in design. At home, she experimented with painting distressed antiques for her own decorating, and that led to a business for her, at first in the garage, and then, later, a full store. Then she and her husband, Cope Thomas, relocated to Schenectady. “We fell in love with The Stockade area of historic homes - some dating from the 1600s - along the river.” At last, ‘one day’ came along when Donna passed a classic brownstone that had attracted her interest. “I’m driving to work and I saw a big dump truck outside the house,” she says. After spending three days with the family, and discovering the most remarkable finds, including Louis Vuitton, Donna had found the real treasure of a future B&B. The transformation work began in earnest, in July 2012. “The house was so

thick with dust, you couldn’t even breathe!” she says, “And the paint on the walls had all gone gray.” First, the building had to be emptied of years of accumulated contents, and then, cleaned, cleaned, and cleaned! Built in 1887, the house offers four floors, and eight bedrooms. Donna is bringing her creative touch to the full renovation. “It’s shabby chic,” she explains, “taking something old that’s tired, and up-cycling it,

J
ust when I thought I had come full circle in my career, combining my former background in property management, with my love of shopping and travel, into my current life as innkeeper, Mary Hughes, Inns Editor, has asked me to become a contributing writer for Inns Magazine. It was a perfect fit, following the simple rule that says, ‘Write what you know’. The word luxury means many things to many people. For me, sleep is a luxury. As an Innkeeper, I keep pretty busy and sleep can sometimes elude me, but on a recent trip to the White Doe Inn Bed & Breakfast, in Manteo, North Carolina, from the time I walked though the door of the Inn, I was at peace.

The serenity of The White Doe permeates the experience. In my suite, the Virginia Dare bedchamber, I was met with a bed that looked inviting and comfortable and huge. I was already looking forward to falling into this giant marshmallow and being enveloped by it. Today I was not the innkeeper. Today I was a happy guest. Fine quality sheets adorned the bed, perfectly pressed, with the pillows just right and fluffy. I rested comfortably until it was time for me to freshen up and meet my friends for dinner. Then it happened: I opened the door to my en-suite and I knew it was divine intervention. I had a heated bath with Jacuzzi tub, a rain shower, fuzzy bath robes and all the natural light a contact lens wearer could wish for. Dreaming a bit, I decided that I was going to live here, at The White Doe Inn. Back to reality and dinner, I headed down the stairs and glanced around at the beautiful dining room, a coffee setup that a barista would love, a small shop with White Doe Inn mementos, and a unique antique chest from the innkeeper’s father that was not only historical, but beautiful. I was reminded of what warmth, comfort and Inns Magazine Luxury 2013
love these two extraordinary innkeepers had worked so hard for and achieved. Together, we walked the short walk to the harbor area where we dined on yummy fish tacos from the friendly and über yummy Ortega’s Southwestern Grill. On my last night, panic set in! How would I survive without that coffee machine? Yes, the one that makes a grand mocha latte and even smiles and says, ‘thank you’. Well, that could be an exaggeration, but I think if it could be programmed, it could do anything! In the parlor, I visited with innkeepers, Bob and Bebe Woody. I listened to them as they shared their past lives telling funny, wonderful stories as park rangers with another guest. That’s when it happened. I looked at the guest, and saw the gleam in his eyes. It had happened to him too. Like me, he would never forget these innkeepers and The White Doe Inn. Asked to write about luxury inns, I turned to my older and wiser friend, Webster, to define luxury: a pleasure out of the ordinary. My trips to the Mast Farm Inn have certainly been out of the ordinary for me. www.innsmagazine.com
Busy at the front desk, we inform her that the internet is down, the TV has been stolen and ATT’s tower must have been blown over by the wind! She graciously informs us that it is the Inn’s philosophy to disconnect from the ordinary and reconnect with the extra ordinary. She kindly offers my husband the use of the phone, and I check my emails using the house computer. After, I opt for a bubble bath and my husband is napping. Then it hits me: it’s probably been 10 years since I had taken the time for a daytime bubble bath and I surely had not seen my husband napping so comfortably in years.
One of the top ten meals of my life, dinner was simply unbelievable. We began our journey, convertible top down, to the small community of Valle Crucis, North Carolina. When we pulled up, I could not help but turn 360 degrees and just breathe in this amazing place. Old tobacco barns had been fully restored into private luxury suites. In sharp contrast, a state-of-the-art Porsche is parked out front (could it be a surprise for me? My birthday is in just a few short weeks…). In the breathtaking gardens of flowers, herbs and fresh vegetables, we caught our first glimpse of the Mast Farm chef as she filled a beautiful old tray with the bounty of the day. I suddenly felt as if we were a Norman Rockwell print that had suddenly come to life. We stepped up onto the old porch filled with swings and period furniture and opened the front doors, to be greeted with the sound of violins: in the comfy parlor was a group of young ladies, local musicians. It was magical.

No small detail had been overlooked from the fresh flowers on the nightstand to the fresh baked brownies under glass. Reusable bottles filled with filter water were placed neatly on the nightstands and a box with everything you could have forgotten had been left for us, just in case. I jumped into the window seat with my cell phone and laptop and my husband began his quest for a TV remote. As I search for service, he realizes there is not a TV in the room. Now full blown panic has set in. My heart’s beating faster, my husband is red faced, and we head for the sweet and charming Innkeeper so she can fix this!
Then, completely on sensory overload, we return to our room. We jump in our comfy bed and talk about our perfect day. We talk until the early hours of the morning, something we have not done in 20 years. I notice on the way to breakfast we are holding hands, he even nuzzles my ear a little, I think who is this? At breakfast, we are once again astounded by the food at this little country inn. We spent the rest of our days and nights taking suggestions from the staff at the Inn. Our only connection here had been with each other. I had checked in, a frazzled innkeeper, and left, a happy honeymooner. Mike was happy to guarantee full confidentiality for the Earl’s visit. “Guests ring the gate and we let them in,” explains Mike. “We come out to the driveway to greet each guest.” Charles Spencer’s arrival was impressive: he pulled in, in an entourage of Cadillac Escalades, SUVs all with smoketinted windows. “We greeted him personally and he was very casual and laid back and acted like any other guest,” Mike says. www.innsmagazine.com

So much so, in fact, that their signature boutique hotel, Ryan Mansion, came to the attention of HRH Prince Charles and Camilla, Duchess of Cornwall. During preparations in 2008 for the 2009 Royal Canadian Tour by the couple, Ryan Mansion was among properties under consideration to provide accommodations. The future king and his wife chose Ryan Mansion. And why not? Designed to be the culmination of a life of success for fishing magnate James Ryan, this mansion is a reflection of the grandest luxury anywhere. The son of

an Irish immigrant, James Ryan built an empire of almost 200 schooners at the height of his business of fish trade with Europe, at the turn of the 20th Century. Ryan’s fortune afforded all the indulgences available. The mansion was built in 1909, completed in 1911. Ryan commissioned the same builder of the Titanic’s Grand Staircase to be the builder for the mansion’s own staircase. Throughout the inn you will find marble, intricate woodwork, much of the original installation preserved and refurbished for today’s grand travelers. There could be no grander travelers, except of course the Queen herself. To host members of the royal family is exceptional since it is usually their practise to stay at official residences, such as Government House. “These people live in a palace,” the owners

observed in interview. “That was in the back of our minds, preparing for their arrival.” And preparation took months. Ryan Mansion welcomed both the royals themselves, as well as fourteen members of the royal staff. Every detail had to be arranged and approved prior to their arrival. The reward for such painstaking service? Glowing reviews. “I have to give Ryan Mansion a 10 out of 10,” said the Duchess. And what did His Royal Highness Prince Charles have to say? “You could not have taken better care of myself and my wife.” So taken was he, the prince recommended it to his sister Princess Royal Princess Ann, who stayed at the mansion the following year. What better recommendation could you ask?

ichael Dunn enjoyed 16 years as one of the Senior Chefs for Her Majesty Queen Elizabeth II. He and his wife, Francine, lived in a flat in the Royal Mews of Windsor Castle. A flight attendant, Francine did the long commutes from the UK to North America while Michael participated in all the activities demanded of the British Royal Family. Michael has several medals awarded him by some of the world leaders he cooked for while in the Queen’s service.

She and Michael enjoyed a reunion of the Royal Household Staff in November, 2012. Held in St. George’s Hall, the Dunns had opportunity to reconnect with old friends, but, explains Francine, the affaire was catered, and not hosted by the current Royal Staff. “Chefs don’t want to be cooking for chefs!” she laughs.
“The Royal Family treat their staff really, really well – like family, really!” says Francine. When Michael decided to leave for Canada, the Queen invited him into her office to chat. “They talked for an hour, about where we were going. Amazing, when you think of her busy schedule!” She always takes a personal interest. “Home

I
have done many things in my life - raised my family with my former husband and, together, we owned and operated a construction company for over 25 years. An amazing time in my life, I learned many skills that prepared me for my later career, innkeeping.
One lesson I know is that there are no short cuts, especially in the bed and breakfast business. This career is a lot of hard work and we invest many, many hours behind the scenes to ensure guests a memorable stay. So when I was asked to contribute to Inns Magazine I wanted to think of some great places I have come across in my travels, as, there are a lot of nice destinations in our grand USA but I wanted to define ‘unusual’ as a pleasant surprise with a distinct flair. Two properties immediately come to mind. I was blown away by my visit to Danville Bed and Breakfast in Geneva, Florida.
The first thing you will notice is a beautiful southern wrap around porch. This opens up to reveal an entire town were Dan Shaw, the innkeeper, is also the Mayor. Dan is one of those people you meet and he immediately feels like an old friend. Danville was created from his imagination, and constructed, with the help of his wife Deborah, on their private airstrip. Built to be an airplane hanger, it has been converted into a two bedroom, two bathroom bed and breakfast. You can belly up to the bar at O’Shaw’s Irish Pub, a fully functional pub with an antique oak bar, a gas fireplace and dartboard. You will also find Danville City Hall, an office with an antique feel, along with a real typewriter. The Water Works sign leads to the restroom. The inn portion is at the end of Main Street. A balcony overlooks downtown with an awesome vantage point to watch a movie on the 15’ x 15’ movie screen. I really enjoyed seeing a movie, it was like a private screening. One more cool feature is the full size Photo Booth where you can actually take and print out photos with your sweetheart. This is a fun place and the owners are wonderful people.

Solomon’s Castle
One of my favorite places to visit is Solomon’s Castle in Ona, Florida. Really a castle, it has turrets, knights at the entrance, a lighthouse, and a replica of the Alamo renamed the ‘Solamo’. The southern hospitality and delicious food here are unmatched in the area. Currently there’s one bed and breakfast room, the Blue Moon Room. Just travel up the exterior of the castle to reach this extraordinary space, where the moonlight shining over the balcony is amazing. or cross the moat to eat outdoors. How cool is that! Alane, Howard’s daughter runs the restaurant along with her husband Dean. You must have her delicious walnut pie. When it comes to southern graciousness the castle is the best. It reminds me of the saying ‘Strangers are only friends you have not met yet.’

Made Plain and Simple White Doe Inn’s Famous Pecan Balls Ingredients:
1 cup butter, softened 1/2 cup sugar
2 tsp vanilla extract
2 cups all purpose flour
1 1/2 cup finely chopped pecans 3/4 cup confectioner’s sugar Method:
Preheat the oven to 300 degrees F. Combine the butter and sugar in a large mixer bowl. Beat at medium speed until light and fluffy, scraping bowl occasionally. Add vanilla, beating until blended. Add the flour and pecans gradually, beating well after each addition. Shape into balls, using a small scoop. Arrange 1 inch apart on an ungreased cookie sheet. Bake for 18 to 20 minutes or just until the cookies begin to brown around the edges. Cool on the cookie sheet for 2 to 3 minutes. Remove to a wire rack to cool slightly. Sprinkle the warm cookies with the confectioners’ sugar. 28
