In this edition I hope you’ll love the beautiful quirky Christmas decorations that say ‘be silly this Christmas’ or the traditional trinkets that say ‘it’s all about family’, each will have their place and each will touch you in a special way – we sincerely hope they bring a smile to your face and say ‘relax, enjoy’ Christmas is a time for fun, family, and friends and the best part is …. it’s only a few weeks away. If it’s the long evenings and barbecues you enjoy the most, I’m sure you’ll find the fashion to your liking as well, as we see subtle colour dominating the windows as we embrace the pretty pastel trend. WELL HEELED

According to George Bernard Shaw you can tell who’s a gentleman by looking at their boots. I couldn’t agree more, being ‘well heeled’, and not just in the monetary sense, certainly sets a man apart in my view. Which is why I am so excited by a new collaboration between iconic New Zealand fashion brands Barkers and McKinlays. Barkers has acquired an enviable reputation in New Zealand for producing clothes that combine quality materials and classically tailored cut to create an effortless style. Similarly, McKinlays is renowned for making fine footwear at its Dunedin factory since 1870 using bootmaking techniques handed down through the generations. Now these two staples of the mens’ fashion industry have put their heads together to come up with a classic Kiwi boot. The collection, featuring two leather and one suede boot styles, showcases the distinctive Barkers aesthetic combined with McKinlays high-quality traditional manufacturing. Barkers’ Head of Merchandise, Paul Biddle, said: ”We wanted to create a really honest, genuine interpretation of a classic Kiwi boot style using premium NZ materials and honouring the incredible manufacturing skills of the team at McKinlays.” The result is a contemporary design that brings traditional manufacturing techniques and materials together with modern, refined style.

Where possible, materials were sourced in New Zealand, including top grade leather from Tasman Leather in Whanganui. The premium suede was sourced from Italy. Hand-made by artisan shoemakers with decades in the trade, the boots are a return to old-world craftsmanship, with a proud history stretching all the way back to New Zealand’s pioneer days. Now being run by the fifth generation of McKinlays brothers Graeme and David McKinlay - the company makes its footwear using “veldtschoen” construction, containing stitched through and cement construction. The “veldt” method is noted for its inherent comfort, flexibility and strength. The company makes between 130 and 160 pairs of shoes each day in its Dunedin factory. High quality footwear, made to last, has always attracted discerning buyers be they miners of Otago’s gold rush days, farmers or today’s man about town. As production has increased to meet growing demand, the company has strived to retain the traditional skills and techniques that set McKinlays shoes apart from the mass produced mainstream. Its products have a loyal following well beyond our shores with customers in America, Canada, Denmark, England, France, Italy, Germany, Sweden, Hong Kong and Singapore. Now its collaboration with Barkers is sure to appeal to a new market of fashion-aware gentlemen who demand both style and substance – from the boots up. SUMMER14 | ENVY | 5

What do Aristotle and a high end hairdressing group have in common? They both believe that ‘the whole is more than the sum of its parts’.

This mantra has stood iconic Auckland hairdressers Schnips PHd in more than good stead for the past 35 years. Schnips PHd (professional hair design) is one of New Zealand’s oldest and largest privately-owned hairdressing groups. A commitment to making every client look and feel magnificent has always been a major factor in its continuing success. Schnips PHd owners, Paul Goldsmith, Clive Wylie and Natalee Stone, have been associated with the business throughout the years and now oversee four of Auckland’s busiest salons which employ around 55 to 60 staff. Its latest salon has just opened in Sylvia Park where Envy caught up with director Paul Goldsmith, who has been in the hairdressing industry here and overseas for almost 40 years.

There I was, cutting hair in the wilds of Africa, while the client sat there with a rifle across his lap while elephants were wandering around behind me.” It’s hordes, not herds, that have been flocking to the Schnips PHd Sylvia Park salon since it opened in mid-November, its location selected, said Paul, because it is in a high end mall

THE NEW FRAGRANCE

ALICIA KEYS

ALICIA KEYS

Alicia Keys grew up in the tough neighbourhood of Hell’s Kitchen, New York, but became an inspirational role model to women the world over. Now she is the face of Givenchy’s newest fragrance, Dahlia Divin. Is there anything this stunning performer cannot do?

Every Christmas my father gave my mother a small bottle of perfume that she would dab behind her ears and wrists, but only ‘on special occasions’.

of his electricity and creativity. Life is a huge inspiration for me – full of endless perspectives and lessons!

I have no idea what the perfume was called, only that when I catch the scent of lily-of-the valley flowers I am a child again, safe in my mother’s arms.

A lot of things! I’m really proud of the work I’ve done for over a decade with Keep a Child Alive to get women and children the treatment and education they need to fight HIV and live a full, happy life. Experience has taught me that the best life has to offer is right in front of me with my husband and child.

Apparently most women share a similar memory when certain scents evoke comfort and familiarity - even megastars like the amazing Alicia Keys. The multi-Grammy award winner with more than 30 million albums sold worldwide, has revealed how she is filled with love and good memories when she smells her grandmother’s favourite perfume, gardenia, or the white musk favoured by her mother. It’s no wonder Alicia Keys has been called a modern-day Renaissance woman: singing aside, she’s an accomplished actress, songwriter, music producer, entrepreneur and a powerful force in the global fight against HIV/AIDS. She recently took part in a demonstration calling for the release of the kidnapped Nigerian schoolgirls despite being heavily pregnant (her second baby is due at the end of December). As beautiful on the inside as out, Key’s embodiment of a modern goddess has made her the muse of one of the most respected fashion houses in Paris. Parfums Givency has made her the face of its new fragrance, Dahlia Divin, “a fragrance like a mantle of light, as sensual as satin, as delicate as a veil and as intricate as embroidery”. In the perfume’s advertising campaign she shines in a stunning haute couture gown by Givenchy’s Riccardo Tisci, which required 500 hours of work. She also composed some music especially for the shoot. Keys paused for breath long enough to answer some questions for Envy readers. What inspires you?

My son, Egypt, and my family are my number one inspirations. I draw a lot of inspiration from my husband (American hip hop recording artist and record producer, Swizz Beatz) because

What are you passionate about?

What does being the face of Dahlia Divin mean to you?

We all remember when we were little girls and we put our mother’s perfume on for the first time – we felt beautiful and strong. To be the muse of Dahlia Divin is so synergistic because Givenchy and I have a lot in common and it’s exciting to expand together. What I love about this collaboration is we begin to see different facets of beauty in all its complexity and natural diversity. The notes of Dahlia Divin are meant to represent the intricacies of a woman – she is a force to be reckoned with. How would you describe the fragrance?

It’s timeless, full and sensual with three distinct notes, Mirabelle plum, jasmine and sandalwood. Sandalwood is one of my favourites and I burn sandalwood incense when I write. Dahlia Divin embodies today’s code of beauty – charisma, strength, confidence and more importantly, inner beauty that radiates on the outside. What is your favourite perfume memory?

My grandmother’s scent was the flower gardenia and my mother’s was white musk. They fill me with love and good memories because both my mother and grandmother are tremendous inspirations to me. As you grow up, these scents tend to come back to you in different ways. What’s your best beauty habit?

Taking time for myself when I need it. I’m a big believer in exercising to rejuvenate the mind and body and I try to live a really healthy lifestyle. It sounds clichéd, but I do believe beauty comes from within and if you take care of yourself, then your natural self is far better than anything else. Thanks to Alicia Keys for sharing her thoughts with us and very best wishes for the new arrival. SUMMER14 | ENVY | 23

BENNY TIPENE

Singer-songwriter Benny Tipene doesn’t take himself too seriously despite being on the cusp of a seriously stellar music career. from a play on words. It was named after a song on the EP called ‘Toulouse’. The lyrics in the chorus are “What have you got to lose? Nothing.” My friend said “What are you saying? Toulouse? The southern French capital?”. From that stemmed writing it that way on set lists and when it came to writing out the album tracks I thought that it was the coolest sounding track name. You have said that coming third in the X Factor was the best thing that could have happened to you. Why?

I just didn’t like the idea of having “X-Factor champion” attached to my name. I mean no disrespect to the show, I just mean that I want to continue on afterwards and be solely recognised for the music I write. What was it like performing with Anika Moa on the ‘So good they named it twice’ tour?

Envy caught up with the boy from Palmerston North just days before his appearance at the NZ Music Awards where his first album ‘Toulouse’ was up for Best Pop Album. He was relaxed about his chances against the other nominees, Lorde and Stan Walker. “Pretty sure no one has listened to Lorde before so I’ve got this one in the bag,” he said. You’ve got a reputation as a bit of a wag. What were you like at school?

I had a knack for getting kicked out of class quite often. One day during PE we had to stay inside and watch a video on ‘How to Play Sports’, which I thought was ridiculous. I put my hand up and asked if anyone was actually watching the video and why are we inside on a beautiful day. The teacher didn’t answer my question and just kicked me out. The classroom was on the second floor and I decided to wrap a hose in and out of the staircase all the way from the top to the bottom. After I had completed that I thought it would be funny to switch the hose on and take off. Eventually they found out it was me and I ended up in the withdrawal room for a week. I saw Wolfgang the Sausage Dog with you on your Facebook page. Can you tell me something about him?

Unfortunately the dog isn’t mine, he belongs to my friend Taryn. I offered to look after Wolfie whilst his parents were at work so we hung out for the day. We sat outside while I did interviews over the phone for my new album, went for walks and ended the day with a cuddle on the couch. The cutest thing about him would probably be his cute little face. He’s a pretty small dog and his little legs are pretty cute too. Great and well deserved news about the Best Pop Album nomination. Just wondering where the title came from. Toulouse is famous for its sausages and I can’t help thinking Wolfgang might have had a paw in the album’s production.

Ha ha. I wish it was to do with Wolfgang. But the title comes 42 | ENVY | SYLVIA PARK

It was an amazing experience to perform with Anika Moa. She is an incredible musician and she’s super hilarious. I had just as much fun with her off stage as I did on stage. Your new album comes out in a month, just before Christmas. What promotions have you got planned?

I’ve just completed some JB HI-FI in-store signing and performing sessions around the country which was a lot of fun. I’ll be doing some more shows around the country soon to promote my new album ‘BRICKS’. How will you be celebrating Christmas?

I will be celebrating Christmas at home in Palmerston North this year. I always love going home and spending time with my family as I live up in Auckland. Ain’t nothing like a good home cooked meal too! What will you be doing this time next year?

Hopefully playing more shows with my band and preparing for the summer festivals. And maybe I’ll have some new music out so keep an eye and an ear out.

BROOKE FRASER ON THE WORLD STAGE

The incredibly catchy ‘Something in the Water’ soundly established New Zealander Brooke Fraser on the world stage. Her eagerly-awaited fourth album ‘Brutal Romantic’ marks a significant musical evolution that is guaranteed to strengthen her reputation as a singer of international repute. She looks different, she sounds different – the sweet-singing melody maker has matured into a voice to be reckoned with.

ever had making music.

The production of the album took her to London, Los Angeles, Stockholm and New York but she’s excited to be coming home to New Zealand to tour early next year.

I wanted a phrase that encapsulated the tension and balance of the sound of the album and this felt just right.

The globetrotting performer took time out from her hectic schedule to talk to Envy. Sydney is your home now. How often do you get back to New Zealand and how are you feeling about next year’s tour?

I actually live in Los Angeles now (don’t worry, not even I know where I live half the time!) In the past two years I’ve lived in Stockholm, New York and now here in L.A. I get back to NZ at least a few times a year and always love it. I can’t wait to be back next year to play my new stuff for everyone, particularly in venues of the scale we’re playing this time. I’m playing a different kind of show to anything I’ve done before… It’s more demanding for me even though I’m not necessarily covering as many instruments, but more gear and stage, and vocally I’ve really pushed myself on “Brutal Romantic” so it’s a big vocal performance for me to pull off every night. Your new album sees you venturing to new musical territory. How did the album evolve?

I love all the tracks that are really beat driven… “Start a War”, “Magical Machine”, “Thunder”, “Psychosocial”… plus ones that are really fun to sing live – “Je Suis Pret” and “Brutal Romance” are two songs I have big soft spots for. I set out to make an organic album with electronic albums but that on its head as the process unfolded. I wrote and learned to write in a completely different way, from different starting points than usual, which was uncomfortable and exhilarating all at once. I have found the whole process so refreshing this time around and am having more fun than I’ve

Where did the name come from?

What took you to Sweden?

Instinct! I felt like the Scandinavian winter would give me a good creative jolt and put me in a different writing headspace, which it did. It didn’t hurt that Stockholm is one of the most beautiful cities in the world as well as a real creative hub. Would you describe yourself as a romantic?

Not particularly, actually. Early in our marriage my hubby brought home “Romeo & Juliet” for us to watch on DVD, and I asked him if we could please take it back and get “Transporter III” instead. ‘Something in the Water’ has been a phenomenal success. Can you tell me something about the song’s personal significance to you and causes close to your heart?

Gosh, this is quite a mixed question… haha. “Something in the Water” was a song that opened a lot of doors for us, particularly in Europe where it was a top 20 radio hit in a bunch of places. I’m thankful for that. Causes close to my heart… I love the work of World Vision and am a big advocate for child sponsorship. I’ve personally seen how it transforms communities for the long term. Same with clean water initiatives – my personal allegiance lies with an organisation called Charity:Water whose model is contemporary, comprehensive and hugely effective. How will you celebrate Christmas? I have no idea yet!

What do you think you will be doing this time next year?

I do believe I’ll still be on the road touring “Brutal Romantic”! SUMMER14 | ENVY | 43

K&K

You could say fashion is in the genes of the Korpus family who have run the successful K&K Fashions for more than 30 years. When he was a child growing up in his native Romania at the end of the war, company founder Ady Korpus would watch his skilled seamstress mother design and make stylish clothes.

“I was in particular fascinated by the way my mum designed and cut the garments.”

Fast forward to 1980s New Zealand and Ady’s interest in fashion is rekindled and K&K is born.

After finishing school he went to university to study civil engineering but soon after, the family left Romania because of political unrest and he had to find work.

Today the fashion chain is run by his son and wife, Arvi and Rachel, who are bringing its exclusive designs to a new generation of Kiwi women of all shapes and sizes.

He managed a furniture store for some years and furthered his education by completing a diploma in interior design and furniture design.

I’m definitely more of a Bridget Jones than a Twiggy-kind of shape and I’m in good company - around 65 per cent of women in New Zealand are a size 16 or bigger.

By this time he had met his wife of 48 years, Ilana, and the couple moved to New Zealand.

Curvy girls are here to stay and thank goodness there is one national retailer which celebrates - not berates – those voluptuous proportions. K&K Fashions, a Kiwi-owned family-run business that caters for sizes 10-26, prides itself on achieving a perfect fit regardless of whether your measurements are small, medium or large. Run with traditional family values, the company was founded by Ady and Ilana Korpus in 1981 (hence the name K&K). It has since grown to an 18 store chain to become the biggest retailer in New Zealand offering style options for those of us with more than our fair share of natural assets. ENVY caught up with Ady to ask how K&K came about. Ady said he learnt his trade at his mother’s knee in his native Romania. He was born in Budapest but grew up in Cruj in Transylvania where his family moved at the end of the war. His father was an accountant with an insurance company and his mother ran her own fashion business. “I had a very happy childhood as a single child in a very loving family.

A new country, a new start and a new business venture followed in that order. “My wife always had a flair for fashion. Her friends were always seeking her advice on what to buy and what to wear. I was looking to start a business in retail so we decided to get involved in the fashion business.” K&K’s mission statement has always been to provide the latest international fashions to women of all sizes at affordable prices. It’s a philosophy that’s paid dividends. Its designers go overseas several times a year to see what’s trending before interpreting and adapting styles for the Kiwi woman’s bodyshape. The result is boutique-style fashions without boutique prices. Its highly-trained sales team know how to wardrobe women from top to toe and are another reason why customers keep coming back. Now Ady and Ilana are in semi-retirement and have handed over the management to their son Arvi and his wife Rachel who are spearheading the company’s expansion plans. We asked Rachel what is trending this season.

“My mother was a top seamstress and fashion designer. She had a workshop with ten ladies working for her.

“This summer we have a mix of monochrome and bright colours and prints for a summery feel. “Harem pants, resort shirts and kaftans are popular and there is a strong trend for fringes which we have incorporated in a few pieces.

“As a child I was always interested in fashion and spent a lot of time in the workshop watching my mum and the other ladies sewing garments.

“We have just launched our new Coco & Belle range for evening wear. This is a European inspired range of dressed up items perfect for Christmas parties and summer weddings.”

PETER JEFFARES

Life has a funny way of coming up and biting us when we least expect it. Some call it experience, to others it’s bad luck. It’s how we deal with those potentially life-changing episodes that sets people apart, whether they chose to live life half full or half empty.

“I gave up smoking and changed my diet and set myself the goal of taking part in the Auckland half marathon at the end of October.

I’d like to think I’m the former although I’m not sure those close to me would necessarily agree.

“I dodged a bullet really and although they think I might have had a mild heart attack the night before when I had indigestion that wasn’t indigestion, I count myself as one of the lucky ones.”

But one person I’m confident has learned the benefits of positivity over adversity is Peter Jeffares, the larger than life owner of PAK ‘nSAVE at Sylvia Park for the past eight years. His office is full of stuff from grateful people and organisations he has been happy to help. There’s a mounted mere from someone he spent a couple of hours with giving advice; a teddy bear from a cancer charity, signed rugby and basketballs from teams he’s sponsored, and currently in pride of place is a brand-new Gibson guitar worth several thousand dollars. It won’t be sitting there for long, however. Peter is planning on giving it away before Christmas to a school or similar for them to raffle off to raise funds. He’s raised about $10,000 for the Heart Foundation in the past two years and aims to add substantially to that amount before the year is out. And I mustn’t forget the weekly supply of groceries he donates to the Mt Wellington combined churches food bank, several banana-boxes worth to help feed needy families in the area. But running one of the largest supermarkets in the country is no walk in the park (or as Peter would prefer it, round of golf). It’s hard work and nearly four years ago his world came tumbling down when he was rushed to Auckland Hospital for emergency heart surgery. A routine visit to his doctor resulted in an out of the blue diagnosis that probably saved his life. In January 2011 he went to his GP to get a repeat prescription for cholesterol tablets. After mentioning he had been suffering from indigestion the doctor wisely hooked him up to an ECG machine to check out his heart. “A week later I had a quadruple heart bypass and had to alter my lifestyle from that point.

Friends and contacts were quick to sponsor his half marathon effort and he raised $6,000 for the Heart Foundation. He’s got an on-going commitment to the charity and last year raised another $4-5,000 for the Heart Foundation by organising a golf tournament at the Aviation Golf Club where he is a popular member. He said he is planning another fundraiser before the end of the year at which he hopes to raise a similar amount. Peter was brought up in Stratford where his father ran a building company but chose to work as a storeman at a wine and spirits merchants rather than enter the family firm. “When I was younger I played a lot of sport, especially tennis, badminton and later squash and represented Taranaki at junior and senior levels in tennis and badminton. “I’ve always been quite competitive so I’ve always had the desire to succeed, I don’t like to come second. When I was working for Foodstuffs I saw some successful guys and decided I’d like to be one too. So 17 years ago I made the transition from working for Foodstuffs to working for myself. “I always make the joke that I’ve only had three bosses in my career and the last one is definitely the best.” Peter and his team at PAK ‘nSAVE are currently preparing for the Christmas rush and are stocking up on perennial favourites such as scorched almonds and chocolates, cloves for dressing the ham and passion fruit pulp for pavlovas. After the festive shopping bonanza, Peter plans to spend time relaxing with his family, wife Nicola and daughters Jane and Kate, at their bach in Stanmore Bay. On the menu will be a large chicken, ham and all the traditional fare of a typical Kiwi Christmas by the beach. SUMMER14 | ENVY | 53

ANNABEL LANGBEIN

Annabel Langbein is one of New Zealand’s best-loved food writers and the star of her own international TV series. Her fresh, free-spirited approach embraces the growing desire to live a simpler, less harried way of life. I lost my appetite for TV cookery after being made to sit through ‘My Kitchen Rules’. What tripe! Gordon Ramsey’s blasphemies make me boil, Jamie’s pukka tukka is just too easy-peasy and as for Nigella and her epicurean eroticism – it turns me off. So when I tuned into Annabel Langbein’s latest TV series of The Free Range Cook, I was ready to channel hop faster than a hot knife through butter. But something made me hesitate, perhaps the stunning Southern Alps scenery, the equally beautiful Langbein or the so-tempting plate of duck salad with a marmalade dressing. Probably all three. I’ve been hooked ever since and am not looking forward to the end of the series in mid-December. My tastebuds have been well and truly re-awakened by the woman called the queen of Kiwi cuisine by a British newspaper. She’s also been referred to as a ‘blonde Nigella’ but similarities between Langbein and the dusky and busty domestic goddess go no further than their skill with a rolling pin. Annabel is the epitomy of wholesomeness, 100% pure New Zealand. Watching her cook through a year of harvests in her lakeside Wanaka garden, following her travels around the country meeting Kiwi characters and seeing her serve delicious meals for family and friends, has won me over. Will somebody please buy me her book for Christmas! It comes as no surprise that she has published 21 cookbooks and that her fun, down-to-earth approach, no-fail recipes and clever kitchen tips and tricks have earned her a passionate international following. Describing herself as “an adventurer at heart”, Annabel left home at 16 and lived the hippy dream of growing vegetables, cooking over a fire and living off the land alongside the Whanganui River. With the help of a Julia Child recipe book her mother gave her when she as 14, Annabel wasted no time transforming her produce into delicious dishes. “Growing my own food and cooking it has been a central theme in my life for as long as I remember,” she said. “I can’t think of a better way to create a good life”. Within a couple of years she had become a seasoned hunter and fisher and was making her living as a trapper, fishing professionally for crayfish and eels, even jumping out of helicopters to recover live deer. She first met husband Ted Hewetson while working as a possum trapper on his family’s farm on the East Cape. After studying horticulture at Lincoln University and a stint of restaurant cooking in Gisborne, she headed to South 54 | ENVY | SYLVIA PARK

America for two years. It was here she started her first food business, making croissants in a small town in Brazil. The globetrotter then went to New York to study culinary anthropology and nutrition before returning to New Zealand. A horse-riding accident proved to be a life-changing moment for Annabel. Hospitalised for four months she was only given a five per cent chance of ever walking again. Determined and resourceful, she used her convalescence to start her writing career with a fortnightly food column in The Listener. From the columns, she published her first cookbook herself which in turn led to the creation of her own multi-media company, Annabel Langbein Media. Her latest book, ‘The Free Range Cook Through the Seasons’ is crammed with garden-to-table recipes, delicious ‘fridge fixings’ - handy sauces, pastes, pickles and sprinkles guaranteed to make mid-week meals memorable and awesome - along with photographs and illustrations. The hardback book costs $59.95 and is available from all book retailers. All images from Annabel Langbein Media

Annabel Langbein’s Duck Salad with Marmalade Dressing

If you use a barbecued or roasted duck from an Asian takeaway or supermarket this salad is fast work, and even more so if you make the Marmalade Dressing in advance and have it ready in the fridge. If you can’t get duck it’s also good with chicken. Prep time 20 mins Serves 6 Marmalade Dressing • 2 tbsp marmalade • ½ cup orange juice • 2 tbsp neutral oil • 1 tbsp rice vinegar • 2 tsp fish sauce • 1 tsp sesame oil • 1 tsp finely grated fresh ginger • ½ tsp five-spice powder • ground black pepper, to taste

Salad • flesh of 4 cooked duck legs or 1 whole cooked duck, cut or torn into chunks • 6 handfuls salad leaves • 150g snow peas, very finely sliced • 2 spring onions, finely shredded • 2 cups mung bean sprouts • ½ cup roasted peanuts or cashews • ¼ cup torn mint leaves

To make Marmalade Dressing, place all ingredients in a small jar and shake to combine. Store in the fridge for up to 2 weeks. To make the salad, combine all ingredients in a serving bowl, toss through dressing and serve. This recipe is from Annabel’s new TV series Annabel Langbein The Free Range Cook: Through the Seasons (7pm Saturday nights on TV One) and the accompanying book (Annabel Langbein Media, $59.95). SMART SUSHI

Call me a sushi snob if you like, but I’m picky where I buy those little rolls of deliciousness that have knocked ‘fush n chips’ and the like out of the water to become New Zealand’s most popular takeaway.

But sushi’s popularity is a relatively recent phenomena, as prior to the 1990s few Aucklanders knew what it was, let alone had savoured it. Not so anymore. Smart Sushi began in 2000 and now comprises seven outlets around Auckland including Sylvia Park. Smart Sushi is not a franchise but a family business founded by Jackie and Ok-Jong Joo. Husband and wife, Ok-Jong and Jackie, worked in their first Smart Sushi store in Onehunga. Ok-Jong was the chef and Jackie served the customers at the counter. Jackie said this had given both of them a very good understanding of the needs of the kitchen and the clients. They pass on their invaluable expertise to their staff through training and supervisory support. As well as this, Jackie and Ok-Jong have always insisted on employing top quality staff and lifting up their skill for their outlets. Lee, their master chef and manager in Sylvia Park, has been with them for 13 years. She has a passion and commitment to her role which is more than reflected in the sensational sushi and service she and her team provide. Apparently Smart Sushi’s excellent reputation has spread far beyond our shores, and here’s a story to prove it. Two New Zealanders were flying home from Europe and sitting alongside each other. They were complete strangers but soon conversation was flowing. A debate arose as to what was the tastiest sushi in Auckland with the best service. “I know the best place,” said one. The other insisted that he knew the best. The good natured argument ended with laughter when they discovered they were both speaking of the same place – Smart Sushi! The atmosphere of the Sylvia Park Smart Sushi store and all the other six outlets is busy but cheerful.

four times a week. Customers also love the tasty vinegar rice used in the sushi. A new line, ‘tuna ruby roll’ has proved to be a popular addition to the menu. It is part of Smart Sushi’s expanded seafood menu.

Team work and good relationships is a quality that Jackie and Ok-Jong try to engender among all their staff. In fact, a staff member surprised Jackie and Ok-Jong by singing a Smart Sushi song he composed. It celebrates Smart Sushi’s work ethic which one would describe as “excellence” and “good relationships”.

Jackie said her favourite sushi was the classic Teriyaki chicken and tuna Onigiri.

Its most popular dishes are Teriyaki chicken (made with an authentic sauce to a unique Smart Sushi recipe) and salmon, which is freshly delivered from a South Island farm three to

”Smart Sushi is not just a business to us,” said Jackie. “We have a passion for good food and we challenge ourselves to improve and expand what we offer.”

56 | ENVY | SYLVIA PARK

Smart Sushi’s motto is ‘old value, new attitude’ which appears on its paper bags and other packaging. It is a concept applied both to the recipes and the business.

Temari sushi

Try Jackie’s delicious recipe for a sushi to celebrate the Christmas season. This sushi is one of the easiest type to make – it requires no fancy equipment, just clingfilm. Ingredients: • 150g prepared sushi rice • 30g salmon (fresh or smoked), cut into 10 pieces • Wasabi • Mayonnaise • Soy sauce

2. Pick up all four corners of the clingfilm and gather in the middle. Twist the clingfilm to compact the rice and form a small ball. Repeat the process to make 10 smoked salmon balls.

How to make: 1. Lay a piece of clingfilm, about 10cm on a clean surface and place a piece of salmon at the centre of it. Mould roughly a generous tablespoon of sushi rice into a loose ball and place on top of it.

You can use other toppings such as cooked prawns, fish roe… etc.

3. Unwrap each sushi just before serving. Add a dab of wasabi mayonnaise (combined as a sauce) on each salmon sushi ball just before serving.

Merry Christmas to all of you from the Smart Sushi Sylvia Park Team! SUMMER14 | ENVY | 57

ECO-FRIENDLY EVS

I’ve been on most rides at Disneyland, Universal Studios and even ‘Fearfall’ at Rainbow’s End. But nothing comes close to the thrill I got when taken for a spin in a Tesla Roadster. I’ve discovered the true meaning of joyride.

Now, if like me, you thought electric cars were only for use on the golf course or by people who have lost their mobility, you’re living in the Dark Ages. Prepare to be enlightened. The Roadster is the glamour model in a fleet of stunning electric vehicles made by American carmakers Tesla. The conundrum is – how can a car so red be oh so green? It has everything you’d expect from a top of the range sports car – head turning good looks, stratosphericallyhigh performance and incredibly hard to get in and out of bucket seats. But nothing prepares you for its smooth as silk, almost silent acceleration that pushes you back in your seat with a g-force rush as it reaches 60mph in under four seconds. I’m telling you, if this car had been around back in the day, it would have been the time machine of choice in ‘Back to the Future’. I learned to love the Tesla Roadster at the launch of Sylvia Park’s electric vehicle charging station, the first shopping centre in NZ to install chargers to encourage motorists to switch to more eco-friendly EVs. Mall owner, Kiwi Income Property Trust, has a comprehensive sustainablilty strategy aimed at reducing its carbon footprint. The installation of the EV chargers has been hailed as a milestone in NZ’s battle against global warming. “It’s great to see a large influential organisation such as Sylvia Park leading the way,” said Mark Yates of Juice Point, suppliers of the chargers. “It represents real foresight to encourage the uptake of EVs when road transport is responsible for the biggest contribution to New Zealand’s greenhouse gas emission.” Shoppers can leave their EVs plugged into one of two charging stations while they enjoy a leisurely look round Sylvia Park or a visit to a restaurant or cinema, safe in the knowledge their car batteries will have been topped up in their absence. It gets even better – the service is absolutely free. 74 | ENVY | SYLVIA PARK

What’s red and black but green all over? A Tesla Roadster being driven by Juice Point’s Mark Yates The charging station is located in Carpark 8 between Entry 1 and Entry 2 off Mt Wellington Highway. Yates said that switching to electric-powered cars made sense for many reasons, not least the economic benefits to both individuals and the country as a whole. Because New Zealand generates about 85 per cent of its electricity through renewable means (the third highest of any country globally) switching from petrol to electric-powered cars was a “no-brainer”, he said. “If 50 per cent of our light fleet were EVs, we as a country would save approximately $2 billion annually.” A Government report on the effects of poor air quality caused by vehicle emissions, estimated the cost to the country as $390 million annually from premature deaths, health issues and days off work. And if you are still not prepared to be a bright spark instead of a petrol head, consider the savings on running costs. If you travel the average distance of 14,000km a year in an EV instead of an average size car, you will save yourself about $2,000 on petrol or diesel costs. You will also find your maintenance costs are significantly reduced as well. For example the brake pads last about twice as long as a petrol or diesel car as a result of regenerative braking in these cars. That’s very fortunate, as in my limited experience, I expect you get to hit the brakes rather a lot in these zippy EVs. Electric cars are undoubtedly our future and the number of them on our roads is set to grow by upwards of 20,000 in the next six years. But don’t take my word for it, go test drive an EV yourself and if you can’t afford the near quarter of a million dollars for the Roadster, there are plenty of other stylish models to be had including the Audi A3 E-Tron, Holden Voly, Nissan LEAF, Mitsubishi Outlander PHEV and other types of Teslas in a more affordable price range.

THE TREPIDACIOUS TRAVELLER

Your teenage daughter or son announces they’re heading overseas on their OE – alone. Whatever you do, Don’t Panic. There IS a way for them to see the world safely while travelling independently that will satisfy both their wanderlust and your instinctive protectiveness. For over 50 years Contiki Holidays has been the worldwide leader in tours for young travellers aged 18-35. Founded by New Zealander John Anderson in the early 60s, Contiki has grown from a single minibus traversing Europe to a global phenomenon carrying over one million people a year with tours throughout Asia, Latin America, the USA and Canada, NZ and Australia. Amanda North, the twenty-something assistant manager at STA Travel in Sylvia Park, has been on two Contiki tours, one in Australia and more recently a tour of Eastern USA. In just under a fortnight, she visited New York and Boston before heading to the Lollapalooza music festival in Chicago. She was in a group of about 40 other Travel Experts from across the world checking out what the tour operator had to

offer. She wasn’t disappointed. “The tour started in New York which was brilliant, it was my first time there and I felt a bit overwhelmed by it coming from Auckland. When I moved from London I found Auckland really quiet so I’ve obviously got used to it. “Highlights of our stay were seeing ‘Rock of Ages’ on Broadway and doing a food cart tour. That sounds really weird but it was fantastic. You get taken on foot round different food carts and the guide told us their history and at each one we got a little taster of the food. That cost just $35USD for a half day tour, great value.” After three days in the Big Apple, Amanda got on a coach to Boston.

New York

Boston “Surprisingly, Boston was the highlight of the whole trip for me. I didn’t know much about Boston apart from hearing that it was nice. As soon as we got here I thought, I could live here, which I hadn’t felt about New York. The only other cities I feel the same about is Auckland and Sydney. “We did a tour of Harvard University which I wasn’t expecting to enjoy as much as I did. One of the first year students took us round and explained its history.”

a hotel and the benefits of a tour guide as well as organised activities. Most importantly, you are much safer travelling in a group and it’s heaps more fun! “Somewhere like America is very different from New Zealand. Each state has different laws which you have no idea about, you don’t know where the hotspots are or where to buy the best local food. That’s why Contiki is so amazing.

Amanda then flew to Chicago and enjoyed a day of shopping before heading to Lollapalooza.

“If I’d been travelling on my own I would never have done the food cart tour or visited Boston, let alone Harvard, both of which were the highlights of my trip.”

“It was the best festival I’ve ever been to. We saw Eminem, Kings of Leon and our very own Lorde. It’s held in a major park in the city and you stay in a hotel so you don’t have to worry about camping. It was surrounded by skyscrapers which made an amazing backdrop to the performers when night fell.

Book your Contiki trip at STA Travel Sylvia Park before 18 December 2014 save up to 10% plus get a free Survival Pack including a Europe or USA Lonely Planet Guide and $30 spending money on a MasterCard Multi-currency Cash Passport.

“Usually festival food is expensive and rubbish but there it was good as well as cheap. “On our last day in Chicago after the festival we did a bike tour alongside the shoreline of Lake Michigan before a gala dinner at the top of one of the skyscrapers with a panoramic view of the city.” Amanda said Contiki was a fantastic company to travel with for the under 35s and recommends it to everyone who is travelling by themselves. “If you are travelling on your own and don’t know anybody it’s an amazing way to save money because you’re not paying single supplements.
