AVAILABLE FROM 88 BBQ & BUTCHER SPECIALISING IN ASIAN MEATS AND CHINESE DELICACIES Method Wash the meat, pat dry and score the pork belly skin in vertical lines about 2 – 3cm apart. To help ensure the best crunch, place the pork belly in a strainer and pour a kettle of boiling hot water over the skin, let it blanch and cook a little. Pat dry the pork especially the skin and the scored lines. The drier the skin, the crunchier the crackle will be.
1. Describe the flavours at Fast Wok? The rich cuisine at Fast Wok is showcased by the marrying of savoury, sweet, sour and spicy flavours. With the use of various Chinese herbs and spices, we’re able to prepare the most authentic Malaysian food.

2. What is the difference between Chinese and Malaysian dishes and flavours? Malaysian food is a combination of Malay food, Chinese food and Indian food. Malaysian and Chinese food is similar, but with their own distinct flavour. Malaysian foods tend to be relatively hot and spicy with generous use of chillies and spices, whereas Chinese food is generally milder. 3. Tell us about your cooking history? I started working in the kitchen at the age of thirteen as a kitchen hand. After a few years of intensive training and learning, I then went on to work at a few hotels and restaurants in Malaysia and overseas. I started Fast Wok about three years ago, where I always tried to create my own menu where every customer loves the food! 4. Signature Dish at Fast Wok? I guess a signature dish is not by any choice of mine but by customer demand. There are a few popular dishes at Fast Wok; one of them is Nasi Lemak, where the rice is soaked in rich coconut milk served with curry chicken or beef, anchovies, boiled egg, pickled vegies and cucumber slices. It is a very authentic Malaysian dish. Another dish is Laksa which is a Malaysian spicy curry noodle soup. There are also Fried Kuey Teow, Roti Canai, Tofu Goreng and so on. 5. Who is your favourite celebrity chef? I always wanted to be a chef under the influence of my father. I had the good fortune to learn from him and he displayed the guidelines to cooking, so I set him as my favourite chef and mentor. 6. Weapon of choice in the kitchen and why? Would be the Wok Burner. The power and heat the flames generate can largely influence the taste, smell and the look of the food. 7. An ingredient you can’t live without and why? All ingredients are important and have a role in the kitchen, but in my opinion, salt is the key to all recipes as it gives that special taste to each dish. 8. What makes Fast Wok different to a traditional Chinese restaurant? What makes Fast Wok different to a traditional Chinese restaurant is that as well as cooking traditional Chinese food, we also offer a range of authentic Malaysian dishes and dessert. 9. Apart from amazing Chinese and Malaysian dishes, what else does Fast Wok offer? Apart from delicious Chinese and Malaysian dishes, we also offer friendly and efficient customer service. We pay attention to what each customer want (and doesn’t want) in their meals and always prepare dishes that are requested outside of the menu. I know that some people choose to go somewhere for not only the food but for the great service, so I want to make sure that all my customers are satisfied and happy throughout their visit to my restaurant. 10. What do you love most about being the head chef at Fast Wok? It is fantastic being the head chef at Fast Wok. I have the freedom of expression with the food, able to put my own stamp on the menu and have more time for creating new dishes for the restaurant and my diners. Fast Wok is open 7 days a week for lunch and dinner.
1kg Pork Belly Rock Salt Marinade 2 cloves garlic, crushed 3 tbsp. sugar 2 tbsp. soy sauce 2 tbsp. char siu sauce 1 tsp. 5 spice powder Pepper to taste

Mix all the marinade ingredients together to form a paste substance. Rub marinade evenly into the meat. Do NOT rub on the skin. If marinade gets on the skin, clean it with a paper towel.

Place the pork belly in a baking dish, cover with cling wrap and leave in fridge to marinade for at least 2 – 3 hours. Overnight is even better. Preheat oven at 200C. Remove pork belly from fridge and pat the skin dry to ensure there is no moisture. Sprinkle rock salt all over the skin. Roast the pork belly for about 1.5 hours (closest to the top element as possible) Ensure that the pork belly is checked at timed intervals. The skin will be very crispy with very small blistering bubbles in the skin.
