Además de ser un fanático del deporte (con control remoto en mano), pasó algunos de “sus mejores años” como periodista en Editorial Motorpress-Televisa. Recorrió portales de Internet, vivió en Miami por algunos meses durante el “web boom” del año 2000 y, finalmente, conoció el verdadero amor hace poco más de dos años: su hijo Diego.

Lic. en Comunicación por la UNAM con post grado en Comercio Exterior por el ITAM y Docencia Universitaria por la Universidad del Tepeyac. Ha colaborado en diversos diarios y revistas especializadas en materia de cultura, laboral y turismo. Guionista de Radio y Televisión.

Michelle es Cancunense, ya que vive ahí desde hace más de 20 años. Graduada del ITESM campus Monterrey en Comercio Internacional y con un postgrado en Administración de Negocios y Mercadotecnia cursado en Harvard University. Tiene su propio negocio en la famosa 5ta Avenida de Playa del Carmen. Le gusta mucho la moda, viajar y conocer gente, pero lo que más disfruta es la vida en el Caribe Mexicano.

She has her own business at Playa del Carmen’s famous Fifth Avenue, and enjoys fashion, traveling, and meeting new people, but what she likes best is living in the Mexican Caribbean.

Osbaldo Ruiz Villanueva Empresario exitoso, ecologista de corazón, viajero constante e innegable trendsetter. Graduado en Ciencias de la Comunicación, es dueño de su propio negocio y colaborador en el Consorcio Educativo Anáhuac. Es experto en temas de ecología, moda, viajes, y en especial de este destino, ya que es la definición misma de un playense consumado. Su auto descripción es tan única como su propia personalidad: Libre, abstracto, creativo, a veces alucinante, sin límites, necesariamente atrevido, sensible, despejado y desatado pero siempre sofisticado. Osbaldo is a successful businessman, an ecologist at heart, a constant traveler and an undeniable trendsetter. Graduated in Communication Sciences, he is currently a business owner and collaborator in the Anahuac Educational Consortium. He is an expert on ecology, travel, and in particular, this destination, being the definition of a real Playense himself. His self description is as unique as his own personality: free, abstract, creative, and sometimes hallucinatory, without limits, necessarily bold, sensitive, clear and unleashed, but always sophisticated. N Riviera Maya Magazine tiene el honor de presentarles su nueva sección de Polo, deporte e industria con gran crecimiento en el Caribe Mexicano. De misma forma, nos enorgullece informarle que ya contamos con el IN Riviera Maya’s Polo Team, integrado por cuatro grandes polistas quienes jugarán todos los años en el torneo más importante del sur de México, La Copa Del Rey; de la que somos la revista oficial y con distribución exclusiva. El Polo es glamour, velocidad, destreza y pasión, el Caribe Mexicano cuenta con varios torneos nacionales e internacionales a lo largo del año, dos clubes ecuestres de Polo con todas las instalaciones para práctica, hospedaje, y torneos profesionales. El Polo lo traen a México los mineros Ingleses en 1880, pero la familia Escandón – Barron lo introduce e impulsa la cultura ecuestre mexicana. En 1936 la primer medalla Olímpica de bronce en la historia de México fue en Polo, en el mundial de Polo de 1987 México llegó al subcampeonato. En 2008 México fue la sede del Mundial de Polo y hoy, considerado por muchos, el mejor jugador Polo de mundo es un mexicano.

Polo is an intriguing sport that has glamour, speed, skill, and passion, and the Mexican Caribbean boasts various national and international tournaments throughout the year, plus two equestrian Polo clubs with all the necessary facilities for practicing, horse keeping, and professional tournaments. Polo was brought to Mexico by English miners in 1880, but it was the Escandon-Barron family who really introduced and drove the equestrian culture in Mexico. In 1936, the first Bronze Olympic medal in the history of Mexico was won in Polo; in the World Polo Championship of 1987 Mexico was strong enough to reach the semifinals. n las Olimpiadas de 1952 Liz Hartal, una joven con secuelas de polio, ganó la medalla de plata en Adiestramiento y se convirtió en la primera mujer en compartir el podio olímpico junto con hombres. El hecho de que estaba paralizada de las rodillas a los pies atrajo la atención de terapeutas alrededor del mundo y el caso se estudió concienzudamente. Lo que encontraron cambió nuestra percepción de los caballos para siempre: que la cadencia y ritmo de la marcha del caballo le da al jinete un sinnúmero de beneficios tanto físicos como psicológicos. La equinoterapia, como se le conoce desde entonces, mejora la coordinación y el equilibrio, fortalece la musculatura y regula la respiración, además es muy efectiva para tratar enfermedades mentales. Actualmente se utiliza para atender todo tipo de problemas tanto psicomotores como psíquicos y los pacientes que se someten a la terapia muestran mejorías impresionantes.

El Centro de Equinoterapia de Playa del Carmen se concentra en apoyar a familias pobres que no pueden costear las tarifas de las terapias. Ubicado en el Rancho Guadalupano, ofrecen sus servicios los lunes, jueves, sábados y domingos. Las terapias se brindan a bajo costo, de acuerdo a las posibilidades de pago del paciente. En Tulum la CRIM (Centros de Rehabilitación Integral Municipal) ofrece terapias gratuitas los lunes, miércoles, jueves y viernes en el Rancho Santa Cruz. Sus caballos están propiamente entrenados y sus terapeutas capacitados y aunque durante el verano solo estuvieron abiertos para los 20 niños que ya estaban en terapia, este septiembre abre para todo el público. ¿Cómo funciona la equinoterapia? Básicamente se vale de los movimientos tridimensionales de montar a caballo para estimular los músculos y las articulaciones del jinete. El caballo nos sube y nos baja, nos mueve de lado a lado, nos rota y bascula la cadera. Su marcha es igual a la nuestra pues compartimos la misma biomecánica de movimiento, es como si nosotros, sentados en el animal, camináramos como centauros. La temperatura del caballo es un grado mayor que la del humano, casi dos cuando está trabajando, y ese calor distiende y relaja los músculos del jinete. Además su balanceo regular recuerda al propio ritmo cardiaco lo que produce un efecto tranquilizador. Claro que no basta con subirse al caballo y darse una vuelta, la equinoterapia es un procedimiento terapéutico especializado y solo es efectivo cuándo la realiza un profesional. La cadencia y el ritmo de la marcha del caballo son clave. El sube y baja debe de ser continuo y rítmico, el lado a lado con la misma amplitud y debe producirse una rotación ligera en la cadera del jinete. Para cada enfermedad hay un tipo específico de terapia y así, por ejemplo, para tratar discapacidades físicas se utiliza la hipoterapia, que se enfoca en la transmisión del calor corporal y el movimiento tridimensional, mientras la equinoterapia social aprovecha la relación que se forma entre el caballo y el paciente para ayudarlo a superar sus problemas de adaptación con la sociedad. 32 IN RIVIERA MAYA

Equine therapy, as it has been known thereafter, improves coordination and equilibrium, strengthens muscle and regulates breathing, and is very effective in treating mental illnesses. It is used to nurse many types of problems, from psychomotor to psychological, and patients that are treated with this form of therapy show impressive improvements. How does equine therapy work? Basically it consists of three-dimensional motions while mounted on the horse, to stimulate the muscles and points of articulation of the rider. The horse brings us up and down, from side to side, rotating and tilting the hips. Its gate is similar to ours, and thus we share the same biomechanics of movement, making us, seated astride the animal, feel like centaurs. The temperature of a horse is a grade higher than that of a human, or two when active, and this body heat expands and relaxes the muscles of the rider. Also, the regular, balanced pace of the horse reminds us of our own cardiac rhythm, producing a tranquilizing effect. Of course, this is different from simply mounting a horse and going for a run: equine therapy is a specialized, therapeutic procedure that is only effective when administered by a professional. The regularity and rhythm of the horse’s gait are key. The rise and fall has to be continuous and rhythmic, and the side to side motions the same range every time, producing a light rotation in the hips of the rider. For each illness there is a special type of therapy. For example, to treat physical disabilities hippotherapy is used, a form that focuses on the transmission of body heat and three-dimensional movement, while social equine therapy highlights the relationship between the horse and the patient to help overcome his or her problems with adapting to society. Trabaja con caballos criollos y bajo la supervisión de un equipo de especialistas equinoterapéutas de la Universidad Anáhuac de Cancún. La Hacienda forma parte del mismo grupo empresarial que Tres Ríos por lo que dos veces por semana se ofrecen tratamientos gratuitos a los huéspedes de éste desarrollo. Finalmente, en Cozumel el Rancho Universo cuenta con 8 hectáreas y toda la infraestructura reglamentaria, sus caballos están entrenados por British Horse Society, la AMET (Asociación Mexicana de Equitación Terapéutica) y la FRDI (Federación de Equitación Terapéutica Internacional). Posiblemente el secreto de la equinoterapia reside en que el caballo mismo es la cura, es decir que la terapia es un ser vivo con el cual nos podemos relacionar y crear un vínculo. Además de que da una sensación de confianza y seguridad nos relaja y nos concentra, nos sitúa en la actitud correcta y, cuando se trata de sanar, la actitud lo es todo. Tal vez por eso sea más efectiva en niños que en adultos, porque son personas más abiertas que nosotros, menos amuralladas y el caballo salta sobre sus bardas sin dificultad.

under the supervision of a team of equine therapy specialists of the Universidad Anahuac de Cancun, the Hacienda forms part of the same enterprise group as the Hacienda Tres Rios resort, which offers its guests biweekly treatments at no extra charge. The Center of equine therapy of Playa del Carmen concentrates on supporting poor families that can’t afford the cost of therapy on their own. Located in Guadalupano Ranch, it offers its services Mondays, Thursdays, Saturdays, and Sundays. The therapy is offered at a low cost, according to the payment options available for the patient. In Tulum, the CRIM (Municipal Center of Integral Rehabilitation) offers free therapy on Mondays, Wednesdays, Thursdays, and Fridays in Rancho Santa Cruz. Its horses are properly trained and its therapists capable of administering therapy, and although during the summer it was only open for 20 children who were already in therapy, this September it will open for the general public as well. Finally, in Cozumel the Rancho Universo offers 8 hectares of trail space, and all the necessary regulatory infrastructure in place. Its horses are trained by the British Horse Society, the AMET (Mexican Equine Therapy Association) and the FRDI (International Equine Therapy Federation). Possibly the secret of equine therapy lies in that the horse itself is the cure; to be with the animal gives us the ability to relate to it, thus creating a link. Also, it gives us a sense of trust and security, it relaxes us, and makes us pay attention, giving us a better attitude; and when ones attitude is treated and mended, everything else will follow suit. Perhaps because of this, the therapy is more effective in treating children given that kids tend to be more open than adults, less influenced by today’s society, so the horse can jump over whatever boundaries kids may have with more ease.

En este contexto, la Asociación de Turismo Médico de Cancún-Riviera Maya, la Oficina de Visitantes y Convenciones de Cancún (OVC), la Asociación de Hoteles y Fideicomiso de Promoción Turística de la Riviera Maya, junto con los gobiernos estatal y federal, apuestan a posicionar al Caribe Mexicano, no sólo como destino inigualable de sol y playa, sino como un lugar ideal para esta práctica. In this program, developed over 17 years by Xcaret EcoPark in Partnership with Flora, Fauna y Cultura de Mexico, A.C., a sample of tissue from the top and bottom shells or plastrons of hatchlings from green and loggerhead turtles was taken, and each was grafted on the opposite side, and the switch created a color difference between the two parts of shell, marking the turtles naturally. As turtle shells are divided into parts, each year a different shell sample from a different part was used, to avoid confusing different generations of turtles with each other, and to have a way of knowing which year a turtle was born in. Finally, after a year of retention in ponds, the turtles were released and... lo and behold, the data gathered has given us many tools to help us better understand these species of turtle that have for years visited the beautiful beaches of the Riviera Maya, making the area one of its favorite egg-laying spots.

PROGRAMA DE CONSERVACIÓN DE TORTUGAS MARINAS DE FLORA, FAUNA Y CULTURA DE MÉXICO THE SEA TURTLE BREEDING PROGRAM OF FLORA, FAUNA Y CULTURA DE MEXICO

ontra viento y marea, con apoyos que llegan a cuentagotas, pero eso sí, con un gran espíritu de conservación, Flora, Fauna y Cultura de México, A.C. nos cuenta lo que fue y los resultados que ha arrojado el programa de marcado de crías por auto-injerto o marca viva, como parte del Programa de Conservación de Tortugas Marinas. En este programa, desarrollado durante 17 años por Parque Xcaret en alianza con Flora, Fauna y Cultura de México, lo que se hacía era tomar un pedazo de tejido del caparazón y otro de la parte inferior o plastrón de crías recién nacidas de tortugas de las especies blanca y caguama, e injertar cada uno en el lado opuesto, con el propósito de crear, por la diferencia de color entre uno y otro, una marca de su mismo tejido. Como los caparazones de las tortugas se dividen en escudos, cada año se iba haciendo el injerto en un escudo diferente para no confundir una generación con otra y saber en qué año había nacido. Finalmente, luego de un año de retenerlas en estanques, se les liberaba y… ¡oh sorpresa!, la información nos ha dado muchas “armas” que ayudan a comprender mucho mejor a estas especies de tortuga que han asaltado durante años las hermosas playas de la Riviera Maya como uno de sus sitios favoritos para depositar sus huevos. Gina Escoto, Coordinadora Ejecutiva de Flora, Fauna y Cultura de México, A.C., nos cuenta: “cuando las tortugas nacen miden 5 centímetros aproximadamente y es imposible ponerles una marca metálica o algún transmisor, por ello es que se optó por el auto-injerto. El programa empezó hace 20 años y se llevó a cabo durante el número de años que nos permitieron los escudos de los caparazones sin repetir la posición. Dicha marca o injerto lo que hace es seguir creciendo junto con la tortuga y se convierte en una especie de acta de nacimiento.” 66 IN RIVIERA MAYA

Gina Escoto, Executive Coordinator of Flora, Fauna and Culture of Mexico AC tells us: “since the turtles were born measuring 5 centimeters long, we couldn’t give them a metal marker or a transmitter, so we opted for the graft markers. The program began 20 years ago, and it took place during the number of years it allowed us to match parts of the shells without repeating the positions of the graftings. The graft marker continues to grow with the turtle and becomes a kind of birth certificate for the turtle. “ INFORMATION OBTAINED FROM THE SEA In 1991 a turtle arrived on Xcacel beach, depositing between 100 and 120 eggs, and the offspring that were born were marked immediately with the grafting technique. “This generation was nursed for a year in the facilities of Xcaret to overcome the critical stage; then they were marked with a metal plate and released into the sea. When we started

INFORMACIÓN QUE VINO DEL MAR En 1991 llegó a desovar una tortuga Blanca a la playa de Xcacel, dicho ejemplar depositó entre 100 y 120 huevos, de ahí nacieron las crías que inmediatamente fueron marcadas con la técnica de auto-injerto. “A esta generación se le cuidó durante un año en las instalaciones de Xcaret para que superaran la etapa crítica, luego se les marcó con una placa metálica y se liberaron en el mar. Cuando empezamos este programa no se sabía a ciencia cierta si es que las tortugas regresaban a desovar a la playa donde ellas mismas habían nacido, a qué edad alcanzaban la madurez sexual, entre otras cosas. Trece años después confirmamos esas teorías gracias a una tortuga marcada con auto-injerto y que aún conservaba la placa metálica J3630 (código internacional para reconocimiento de tortugas marinas. En caso de que sea vista en algún otro lado del mundo se reporta)”, nos comentó Gina. J3630, UNA GRAN HISTORIA Hoy se sabe que la tortuga J3630 fue vista 8 veces saliendo del mar a desovar en el año 2004, depositando 6 nidadas durante esa temporada. Dos años más tarde, ese mismo ejemplar regresó a Xcacel 12 veces dejando 6 nidos más, y otras 8 veces en 2008, contribuyendo con 5 nidos. En este 2011, ya con 20 años de edad, esta tortuga ha sido vista en Xcacel (sí, de nueva cuenta) y se tienen registrados dos desoves. En resumen, nuestra querida J3630, ya con 20 años de edad y originaria de Xcacel, ha puesto un total de 19 nidos, contribuyendo de manera importante a la perpetuación de la especie con 1,427 crías que han nacido en la misma playa donde su madre la trajo al mundo hace 20 años. El siguiente paso del programa es colocar transmisores satelitales a tortugas con auto-injerto, para poder obtener información de a dónde van, qué tanto se desplazan, cuáles son sus zonas de alimentación, etcétera. “Este año ya se colocaron transmisores satelitales a dos tortugas, pero no pudimos, por problema de tiempos, hacerlo con tortugas con auto-injerto. Pero lo que nos encantaría es tener los recursos para poder hacerlo con aquellas tortugas, y entonces sí, tendríamos una historia de vida muy completa que nos ayudaría a comprenderlas mejor y poder ayudar de la mejor manera a la conservación de las tortugas marinas”, finalizó la coordinadora de Flora, Fauna y Cultura de México. Hoy podemos decir que los resultados de este programa son alentadores. Después de la J3630, Flora, Fauna y Cultura de México ha registrado anidando más de 30 tortugas blancas con auto-injerto de entre 12 y 20 años de edad.

J3630, A GREAT STORY Today we know that the turtle named J3630 was seen 8 times, coming out of the sea to spawn in the year 2004, laying 6 nests during the season. Two years later, this same turtle came back to Xcacel 12 times, leaving another 6 nests, and another 8 times in 2008, contributing 5 nests. In year 2011, this turtle has been seen in Xcacel (yes, again) and two spawnings have been recorded already. To put it simply, our beloved J3630, already 20 years old and originally from Xcacel, has had a total of 19 nests, contributing significantly to the perpetuation of the species with 1,427 baby turtles born on the same beach where the mother was brought into the world 20 years ago. The program’s next step is to locate the graft-marked turtles from the class of 1991 and implant them with a satellite transmitter in order to get information on where they go, how far they travel, what their feeding areas are, and so on. “This year we placed two satellite transmitters on two turtles, but could not, due to time constraints, place any on turtles with graft markers, but the main goal is to have the resources to do so with those turtles, then we would have a full life story that would help us understand them better and to find the best way to conserve sea turtles,” concluded the coordinator of Flora, Fauna and Culture of Mexico AC.

Today we can say that the results of this program are encouraging. Since J3630, Flora, Fauna and Culture of Mexico AC has recorded 29 graft-marked green turtles between 12 and 20 years of age nesting.

Otra gran noticia es que por primera vez se registró la anidación de 3 tortugas caguama con auto-injerto, lo cual es un hecho único a nivel mundial y de gran relevancia para la investigación sobre esta especie cuyas poblaciones se encuentran en una situación crítica a nivel mundial.

Another piece of good news is the first recorded nesting of three graft-marked loggerheads, a feat of great importance to future research on this species whose populations are at a critical level around the world.

Through submitting scenic, funny, or action-filled photographs of golf, participants can compete for a spot in the prestigious Pro-Am of the Mayakoba Golf Classic. To participate in Fotogolf, contestants must upload their image to the web form at www.MayakobaGolfClassic.com / fotogolf.

This year contestants may upload as many photos as they would like between September 19, 2011 to January 13, 2012. Afterward, the finalists will be selected by the organizing committee and the finalists’ photos will be judged by online voters, by whom a winner will be selected on January 31, 2012.

For the 2010-2011 Fotogolf contest 180 photographs were submitted and almost 5,000 online votes decided the winner of the Pro-Am spot of the Mayakoba Golf Classic 2011.

Para concursar en Fotogolf los concursantes deben subir su imagen a la página de www.MayakobaGolfClassic.com/fotogolf. Este año todos los concursantes podrán subir la cantidad de fotos que deseen para participar del 19 de Septiembre de 2011 al 13 de Enero de 2012. Posteriormente, se hará la selección de las fotos finalistas por parte del comité organizador y las fotos finalistas competirán entre sí mediante el voto en línea, dándose a conocer el ganador el día 31 de Enero 2012. En el concurso de Fotogolf de 2010-2011 se ingresaron 180 fotografías y se tuvieron casi 5,000 votos en línea para decidir al ganador del lugar en el Pro-Am para el Mayakoba Golf Classic 2011. “Desde que salió la convocatoria fue una experiencia emocionante. Seleccioné la fotografía y la inscribí. Una vez que quedé entre los finalistas, promocioné con familiares y amigos el que apoyaran con su voto mi foto. El último día en una final muy cerrada, vi que mi foto fue la ganadora, fue una experiencia fantástica, recibir las felicitaciones y el apoyo de tantos amigos.

El zafiro puede ser hallado en yacimientos de rutilo, bauxita, hematita. Los mayores productores mundiales se encuentran en África, aunque también existen yacimientos en Sudamérica; por otra parte hay zafiros en Cachemira (India), Queensland Central Australia, Siam y Sri Lanka. Aunque la Antártida es rica en este mineral, se ha restringido la explotación por cuestiones ecológicas.

The town of Coober Pedy in the South Australian desert depends almost exclusively on the export of this stone. In Mexico, you can find the amber-colored fire opal, as well as other varieties and colors. The Geyserite variety of opal is named after its source, the geysers of Yellowstone Park in the United States.

Los vinos mexicanos a la par de ganar un gran reconocimiento internacional, han formando su propia historia y su muy particular personalidad. A pesar de que en México, está la bodega más antigua de Vino en América, Casa Madero fundada en 1597, es a últimas fechas que el vino mexicano ha salido de México y ha reclamado su lugar en el mundo. En Xcaret, nos consideramos un parque cultural, y nuestra meta es que todos nuestros visitantes experimenten México a través de la música, el arte, la cultura y la gastronomía, es por eso que tenemos una Cava. Deseamos que nuestros visitantes sepan como sabe México, y los vinos junto la gastronomía son la mejor manera. Mexican wines are at a high enough level to win international recognition, while forming its own history and a very special personality. Mexico boasts the oldest winery in all of the Americas, Casa Madero, founded in 1597, but as of lately Mexican wine has spread beyond Mexico and is starting to reclaim its place in the world. In Xcaret, we consider ourselves a cultural park, and our mission is to invite all of our visitors to experience Mexico through its music, art, culture, and cuisine, this is why we created a wine cellar. We want our visitors to truly get to know Mexico, and enjoying its food and wine is the best way to do it. On the wine cellar’s menu we feel privileged to use our Mexican ingredients, and although we don’t always serve strictly Mexican dishes we always have a strong Mexican accent in our cuisine, situated as we are at the heart of the “Mundo Maya”. We fuse innovative cooking techniques with ingredients of the past, including chaya, cuitlacoche, achiote, and cacao. Our intention is to show off our national cuisine, our local ingredients, and the prehispanic cooking techniques such as the pib, the use of the mortar and pestle, and the traditional “Stone Soup”, Caldo de Piedra from Oaxaca. We also showcase more modern techniques, adding decorative and delicious touches with chaya foam, chocolate etherification, and smoked dishes. This gives us a great range of flavors, textures, and options to make unique dishes that still feel very Mexican. Through our daily tastings, we take our visitors on a journey through Mexico and the world, as we serve wines from Baja California, Queretaro, and Coahuila, with Yucatecan food, chaya tamales, or a rich Mole Negro from Oaxaca. RECORRIDO CULINARIO PLASMADO EN SU HISTÓRICO MENÚ A CULINARY TOUR REFLECTED IN A HISTORIC MENU

rimero fue el Festival de la Cocina Mexicana Las Rutas de México, en el marco de las celebraciones del bicentenario; ahora motivados por las fiestas patrias, emprendemos esta nueva aventura gastronómica haciendo honor a los más tradicionales restaurantes de la Ciudad de México, aquéllos que escribieron la historia de nuestro país, o más concretamente aquéllos que han ayudado crear en parte nuestra identidad como mexicanos. El chef mexicano Daniel García será quien nos recree las texturas, colores y sabores de estos recintos sazonados con un poco de historia. El recorrido nos llevará por las antiguas calles del centro de la ciudad que albergan algunos de los más antiguos: empezamos visitando la calle de República de Guatemala para degustar un poco del histórico Café Tacuba que ha acompañado con sus delicias a muchos personajes, artistas y políticos desde 1912 y que ofreciera el banquete de boda al gran muralista mexicano Diego Rivera y la escritora Guadalupe Marín. Continuamos por la calle Venustiano Carranza para detenernos en uno de los más antiguos restaurantes El gallo de Oro que desde 1874, en sus orígenes como cantina, impulsó las importaciones marítimas del aceite de oliva, las alcaparras, las aceitunas sevillanas y los quesos europeos que logró la atención de intelectuales de la talla del poeta Manuel Acuña y Justo Sierra. Y de paso nos adentramos en una vieja casona del siglo XVI quien recibió la licencia número 1 en 1860: La Hostería de Santo Domingo considerado monumento colonial de la Ciudad de México, resguarda en sus muros el testimonio de todo lo acontecido en su devenir. Parada obligada en el Salón Corona lugar mítico que cumplió 80 años de existencia y finalizamos nuestro recorrido por el centro histórico en el Restaurante Prendes para saborear los 100 años de presencia gastronómica que llenó la boca a quienes solían contar historias, Diego Rivera, y el maestro Justo Sierra que solían hablar de filosofía y a David Alfaro Siqueiros de política, se cuenta que el mismo dueño atendía y que aún se le recuerda sirviendo personalmente sus ostiones en la concha a Trotsky o servirle su pescado blanco al General Lázaro Cárdenas. Para seguir atrapando en el paladar el gusto de nuestra historia llegaremos al restaurante que confronta sentimientos en torno al arte, la arquitectura, la gastronomía y la historia que inicia desde el siglo en que Hernán Cortés instaló aquí su hacienda y que ahora nos remonta con una cocina mexicana de excepción. Reviviremos también unos de los pocos sobrevivientes de la época de oro de la Zona Rosa, la Fonda del Refugio quien con 57 años de trayectoria preserva la tradición por los sabores mexicanos de recetas de antaño; para después trasladarnos al sur de la ciudad en donde se encuentra un lugar inspirado en los tiempos coloniales de tradición poblana La Fonda de Santa Clara, que defiende la cocina tradicional prehispánica. 108 IN RIVIERA MAYA

irst there was the Festival of Mexican Cuisine Routes of Mexico, as part of the bicentennial celebrations, now motivated by national holidays, we undertake this new gastronomic adventure honoring the most traditional restaurants in Mexico City, those who wrote the history of our country, or more specifically those who have helped create part of our identity as Mexicans. Mexican Chef Daniel Garcia will be recreating the textures, colors and flavors of these venues seasoned with a little history. The tour takes us through the ancient streets of the city that hosts some of the oldest restaurants. We start by visiting “Calle de República de Guatemala” to taste a bit of the historical Café Tacuba, which has been the accompaniment to the delight of many characters, artists and politicians since 1912 and been the site of the wedding banquets of both the great Mexican muralist Diego Rivera, and the writer Guadalupe Marin. We continue down the street of Venustiano Carranza, to stop at one of the oldest restaurants “El gallo de Oro” from 1874. Originally a grill and bar that boosted the marine imports of olive oil, sea salt, capers, Sevillana olives, and European cheeses, catching the attention of scholars of such stature like Manuel Acuña and Justo Sierra. Our next step is to an old house of the sixteenth century that received license number 1 in 1860 “La Hosteria de Santo Domingo”, considered a colonial monument in Mexico City, and shelters within its walls the testimony of all that occurred in its magnificent tenure. We stop in the “Crown Room”, a mythical place with 80 years of history, and end our tour through the historic center at the “Prendes” restaurant to taste 100 years of gastronomic presence, and a mouthful of stories, artist Diego Rivera and teacher Justo Sierra used to talk of philosophy there, and David Alfaro Siqueiros would talk politics, the owner used to attend and still remembers him, personally serving oysters to Trotsky, and whitefish to General Lazaro Cardenas. To continue capturing the taste of history on our palate, we arrive to a restaurant to confront feelings about art, architecture, and cuisine which begins in the century when Hernan Cortes settled his Hacienda We also glimpse one of the few survivors of the golden age of the Zona Rosa, “Fonda del Refugio”, which with 57 years of experience preserves the tradition of Mexican flavors in its old recipes, and then move south of the city where we find a place inspired by the tradition of colonial times, “Puebla La Fonda de Santa Clara”, which advocates pre-Hispanic cuisine. Finally we arrive at the flavors of the “Old San Angel Inn” restaurant, a Hacienda that was formerly a Carmelite monastery and later a produced pulque, and in 1906 it became a hotel and restaurant rich in tradition. In this culinary journey through various parts of the metropolis known as the City of Hope, we will have to write another part of the story in the book of memories that takes us back to moments of pleasure, an expression of our Mexico we have today, of the satisfaction we take from serving each of the dishes from our menu full of customs and legendary traditions. LOS SIETE AZULES QUE SE UNEN AL CIELO THE SEVEN BLUES THAT MEET THE SKY

a tierra no se equivocó al dar paso a través de los años a la formación de cavernas, ríos subterráneos y cenotes, en especial a cuatro de ellos, situados al sur de Quintana Roo que fueron los responsables del nacimiento de Bacalar, la laguna de los siete colores. Más allá de los azules terrestres, existen los azules de Bacalar, los que vibran gracias a su delicada arena blanca; los que son forjados por los minerales que hay en el fondo; los que son proyectados por los diminutos cristales que se refrescan en el agua, creando efectos ópticos; y los que resultan de la fusión de todos y cada uno de los microorganismos que conviven en esta gran laguna. Sí, sin duda alguna Bacalar fue un plan maestro creado y planificado por la madre naturaleza para apropiarse de las pupilas de cualquier ser humano, un paraíso que se une a los milagros del Caribe Mexicano. No conforme con el espectáculo del colorido de sus aguas que se disfruta desde el exterior, a través de actividades como el buceo y el snorkel se puede introducir en el mundo acuático de la laguna, donde yacen colosales troncos que se abrazan intensamente contra varias raíces, como si se aferraran a vivir juntos para siempre; plantas acuáticas que se agitan dóciles al ritmo de las suaves corrientes; formaciones calizas subterráneas que reproducen figuras únicas, invitando a descubrir y explorar los más recónditos secretos de Bacalar. El nombre que ahora denomina la laguna proviene del vocablo maya Bakjalal que significa cercado ó rodeado de carrizos y fue bautizado como Bacalar de Salamanca en el año de 1523 a la llegada de los españoles. Doscientos años más tarde, en 1729, fue construido el fuerte de San Felipe, una obra dedicada a detener los ataques de los barcos piratas que acechaban el pueblo. En la actualidad, el Fuerte es un museo dónde a través de sus objetos relata las grandes batallas e historias del lugar. No es casualidad que en el 2007 Bacalar haya recibido el reconocimiento de “Pueblo mágico” otorgado por la Secretaria de Turismo. Mexican Caribbean goes INVERSIÓN DE 600 MILLONES DE DÓLARES THE 600 MILLION DOLLAR INVESTMENT ozumel albergará un parque eólico que generará energía eléctrica sin emitir absolutamente ninguna clase de contaminación. Gracias a su ubicación geográfica, la isla se presta para que este proyecto encabezado por Mexico Power Group se convierta muy pronto en una realidad… al menos en su primera fase que requiere de unas 1,000 hectáreas. La inversión total se calcula en aproximadamente 600 millones de dólares, pero se espera que a partir de enero de 2012 ya esté instalada, al menos, la primera mega-aspa. La finalidad es que tarde o temprano, Cozumel produzca la suficiente energía eléctrica como para vender a parte de la Riviera Maya. COZUMEL Y SUS RAZONES La Península de Yucatán en general es un área de vientos alisios de primavera y verano, que soplan regularmente en los océanos Pacífico y Atlántico, en las zonas tropicales hacia el ecuador. En condiciones normales, la presión atmosférica en el ecuador es inferior a la de los trópicos y por tanto, el aire tiende a circular de norte a sur (en el hemisferio norte) y de sur a norte (en el hemisferio sur). Pero al combinarse con la rotación de la Tierra, la dirección real en que soplan es de noreste a suroeste en el hemisferio norte, y de sureste a noroeste en el hemisferio sur. Su velocidad es de unos 20 kilómetros/hora; lo anterior hace que zonas como Cabo Catoche, la costa de Quintana Roo y el oriente de Cozumel hayan sido consideradas áreas con un gran potencial eólico. Las grandes ventajas de la energía eólica son claras a simple vista: para empezar, como ya lo mencionamos anteriormente, no es contaminante y por eso mismo evita daños ambientales tanto locales como transfronterizos. Al compararla con otras formas de producción de energía, tales como las centrales térmicas o las nucleares (no olvidemos la tragedia mundial que se derivó del terremoto y el tsunami que dañó de manera significativa los reactores nucleares de la planta de Fukushima, en Japón), resulta la más cercana a la sustentabilidad. Las plantas eoloeléctricas no utilizan combustibles como el carbón o derivados del petróleo o gas natural. Démosle todos la bienvenida a la energía eólica.

COZUMEL AND IT’S REASONS The Yucatan Peninsula, in general, is an area with trade winds which regularly blow during the spring and summer in the Atlantic and Pacific oceans, all the way down to the equator. In normal conditions atmospheric pressure along the equator is lower than in the tropics and because of this air tends to circulate north to south (in the Northern Hemisphere) and south to north (in the Southern Hemisphere). Its wind speed is about 20km/hour, thus places like Cabo Catoche, the coast of Quintana Roo and the eastern part of Cozumel are considered areas with great wind power potential. The biggest advantages of wind energy are clear, they don’t contaminate, thus avoiding releasing waste products into the environment, either locally or internationally. Compared with other forms of energy production such as thermal power plants and nuclear power plants (we cannot forget the worldwide tragedy that occurred due to the earthquake and tsunami that significantly impacted the Fukushima nuclear reactors in Japan), wind power brings us closer to sustainability. Wind power plants don’t use combustible fuels such as carbon or derivatives of petroleum or natural gas. We should all give a welcome cheer for wind energy. IN RIVIERA MAYA 149
