Christmas is one of our favourite times of year, with the air filled with the delicious scents of mulled wine and mince pies, the city alight with beautiful twinkling decorations and the feeling of nostalgic excitement all around. It’s the extra community spirit that makes the season so unique, with events such as the Burning the Clocks parade which will fill the streets on December 21st, a tradition now synonymous with Christmas in Brighton, whatever your beliefs. BURNING THE CLOCKS 21st December | 6.30pm Since it began in 1994, Burning The Clocks has become a festive Brighton tradition that feels as old as Christmas itself. Acting as an uplifting antidote to the excesses of a commercial Christmas, paper and willow lanterns are paraded through the city before being burnt on a huge bonfire on the beach. Each lantern maker becomes a part of the show as they invest the lanterns with their wishes, hopes, and fears and then pass them into the fire. ard to believe that it’s almost been a decade since The Return of the King, the final film of the Lord of the Rings trilogy was released. Based on the much loved JRR Tolkien novel, Peter Jackson now brings his cinema magic to The Hobbit which follows the young Bilbo Baggins on his first adventure sixty years before Frodo’s turmoil with the One Ring. An Unexpected Journey is the first of three films to come from the book. After being approached out of the blue by the notorious wizard Gandalf, Bilbo finds himself joining a company of thirteen dwarves seeking to reclaim their lost kingdom from the fearsome dragon Smaug. On a journey that sees escapes from deadly orcs, goblin tunnels and giant spiders, the dwarves (and Bilbo himself) will realise there’s more to hobbits than meets the eye. 16 | INSIDE MAGAZINE

CARAMELISED RED ONION • GARLIC BREAD • MULLED WINE These rich, indulgent recipes are quick and easy to follow, and will be sure to get you feeling festive on a cold winter’s evening. They’re also perfect for when entertaining friends and family.

Pre-head oven to 200C/400F/Gas 6 and remove the camembert from any plastic packaging. Use a knife to pierce the rind, stuffing the holes with the garlic rosemary, place back into its wooden box and into the centre of the oven for around 20 - 25 minutes until the camembert and garlic are soft through. Enjoy warm from the oven. Serves 2 1 whole camembert (in box) • 4-5 cloves garlic • 4-5 sprigs rosemary

This recipe allows for the onions to caramelise naturally without the addition of sugar. Heat the olive oil in a large pan and add the chopped red onions, simmering gently on a very low heat for around 30 minutes stirring occasionally. Add the balsamic vinegar glaze one tablespoon at a time to taste, continue simmering for a further 10 minutes. At this stage stir and check the onions regularly so they don’t burn. The caramelised onions make a delicious accompaniment to the garlic bread and camembert. Serves 24-5 medium red onions) • 4 tbsp olive oil) • 2-4 tbsp balsamic vinegar glaze

Make garlic butter by combining olive oil, crushed garlic and seasoning with plain butter. Cut the loaf into slices and spread with garlic butter, heat in the oven for around 5 minutes. Serves 2 1 rustic loaf of bread • 2-4 cloves crushed garlic • 4 tbsp butter • 1 tsp olive oil • pinch of salt, pepper & dried basil

Mulled wine is the perfect festive drink, and easy to make – simply combine all ingredients in a large saucepan, stirring until the sugar has dissolved, and gently heat. Serve warm in heatproof glasses, and you’ll find your home filled with the delicious scents of Christmas spices! Serves 2 1 bottle red wine • 50g brown sugar • 1 cinnamon stick • 2 star anise • 2 cloves • 1 orange, sliced • 1 lemon, sliced INSIDE MAGAZINE | 25

A small step to better health

A

fter an overindulgent Christmas season, many of us make unrealistic New Year resolutions about health and fitness that we often fail to keep. Well, we needn’t put so much pressure on ourselves; even a small increase in activity can make a huge difference to long-term health. Research has shown that long periods of sitting or lying down throughout the day can lead to an increased risk of heart disease, Alzheimer’s and diabetes, as well as shortening our life expectancy. In fact, inactivity might have a more negative impact on our health than being overweight! The more we can get up and move about, the better! Evidence suggests that a minimum of 30 minutes of daily activity can reduce such health risks, as well as having a positive impact on blood pressure, energy levels, depression, osteoporosis, pain from arthritis, quality of life... The list goes on! I’m not suggesting you join a gym, unless you really want to; it’s much easier to make permanent changes to your activity levels if you find something you enjoy or something you can easily fit into your day. Many of us have a sedentary lifestyle: using public transport or driving to work/shops/social engagements, working at a desk for 8 hours then coming home and 26 | INSIDE MAGAZINE

sitting on the sofa to unwind, watching TV, lying in bed and sleeping for several hours. Even so, it is surprisingly easy to find 30 minutes or more in which to be active and although longer periods of activity are better than shorter ones, we don’t have to do it all in one go; there are lots of ways to increase your activity throughout the day. Maybe walk or cycle to your destination, park your car further from the shops or office door, take the stairs instead of the lift, or get off the bus a stop early. Could you walk to your colleague’s desk to discuss something in person rather than picking up the phone or emailing? Perhaps take a stroll around the block in your lunch break. Even something as low in activity as getting up during TV ad breaks to make a cuppa or standing and doing the washing up instead of putting it in the dishwasher can help, because standing demands a lot more of your body than sitting or lying. hy is it that we all choose the New Year to “give up smoking, get fit, eat more healthily, join a book club etc.?” Yes, it is a New Year and the traditional time for resolutions but it also tends to be grey, cold and wet, we’re paying off Christmas and it seems almost impossible to be motivated! We set ourselves all these goals to change sometimes lifelong habits and then wonder why it’s such a monumental task so…. this year, why not chose to do it differently? Begin the year by listing the things you would like to tackle or change and instead of deciding to start them all in January, plan for them throughout the year. Look at key times for you – are you under extra pressure at work during certain months? Are there times when childcare creates obstacles? Factor these things into your plan and don’t create extra pressure for yourself So, if fitness is on your agenda, be realistic – are you going to make yourself go to the gym/out for a run in the depths of January/February or could you start a healthy eating plan and build up to exercise a couple of months into the year when the world seems a more promising place? 28 | INSIDE MAGAZINE

Start with something small you know you can change, as this will start your motivation by creating a sense of achievement. I work with many clients focusing on the task in hand. So many of us are so busy at looking at the bigger picture it just seems too daunting to tackle. If you break this down into bite size chunks and then plan your changes throughout the year, it will feel more do-able and you are more likely to succeed. The thing about changing habits is commitment and that’s taking one small step each day but making sure you take that step. You want to start running? You don’t need to start with a Marathon. Commit to learning to run and gradually build up practicing every day and then this too will become a habit but a positive one. It’s the same with all your goals, start small and grow. Focus on the end reward, how you will feel at the end of the year when you know you’ve achieved some of your goals if not all of them? Imagine what it will feel like to be able to tell people you’ve “quit smoking and have done for 10/12 months now?” The answer is FANTASTIC! Good luck & Happy New Year.
