During summer months, cooking outdoors is a great way to save energy and eliminate the unwanted heat that comes with cooking indoors.

Slow-Roasted Pork And Peppers

Ingredients:

3 lbs. boneless pork shoulder

6 bell peppers, halved and seeds removed

2 red onions, cut into 8 wedges each

2 tbsp. extra-virgin olive oil

1 tbsp. red wine vinegar

Directions:

8 cloves garlic, minced

2 tbsp. oregano leaves

1 tbsp. fennel seed, chopped

Kosher salt

Freshly ground black pepper

Preheat oven to 425 degrees. In a small bowl, stir together the garlic, oregano leaves, fennel, 1 tbsp. salt, and ½ tsp. pepper. Place the pork, fat side up, on a rimmed baking sheet. Rub all over with the garlic mixture. Roast until fragrant and sizzling, 20 minutes. Reduce heat to 300 degrees and continue to roast for 1 hour. Remove the sheet from the oven and arrange the peppers and onions around the pork. Drizzle with oil and season with ½ tsp. each salt and pepper. Tuck oregano sprigs around the vegetables and return to oven. Roast until the vegetables and pork are very tender, 2-2½ hours more. Transfer pork to a board and let rest for 10 minutes before slicing. Arrange pork and vegetables on a platter, and drizzle with vinegar and any pan juices from the baking sheet

Never attempt a project that is beyond your skill level. Knowing when to call a professional may help prevent electrical fires, injuries, and fatalities. However, if you do decide to D.I.Y., consider the following important safety tips before undertaking any home electrical project:

Make an effort to learn about your home electrical system so that you can safely navigate and maintain it.

Always turn off the power to the circuit that you plan to work on by switching off the circuit breaker in the main service panel.

Be sure to unplug any lamp or appliance before working on it.

Test the wires before you touch them to make sure that the power has been turned off.

Never touch plumbing or gas pipes when performing a D.I.Y. electrical project.
