Green Beans Almondine
Ingredients: Kosher salt 1 lb. green beans, trimmed 3 tbsp. unsalted butter 1/2 c. raw sliced almonds 1 shallot, finely chopped
2 cloves garlic, finely chopped Zest of 1 lemon 2 tsp. fresh lemon juice Freshly ground black pepper
Directions: Bring a large pot of salted water to a boil. Meanwhile, prep an ice bath by filling a large bowl with ice and water. Cook green beans until crisp-tender, 2 to 3 minutes (you want them to be slightly undercooked as they will continue to cook later). Using a slotted spoon, immediately transfer beans to ice bath. Drain. In large skillet over medium-low heat, melt butter until lightly bubbling. Add almonds and cook, stirring frequently, until golden brown, 3 to 4 minutes. Reduce heat to low and add shallots and garlic. Cook, stirring occasionally, until fragrant, 2 to 3 minutes. Add green beans and toss until combined and beans are tender. Stir in lemon zest and juice, tossing to coat; season with salt and pepper.

Holiday Food Drives Join us in the fight against hunger! We will be collecting money and non-perishable food items at our offices from Nov. 1 until Dec. 8 to benefit the Heart of Alabama Food Bank (HAFB). We are also sponsoring 12's Day of Giving on Dec. 8, 2023 at Renfroe's Market where we will be collecting food, toys and monetary donations for the Christmas Clearing House, HAFB and Toys for Tots. For your donation valued at $5 or more, we will give you your choice of one of our adorable stuffed animals, including our newest addition, Good Boy Bo! Help us make this holiday season merry and bright for families in need!

2024 YOUTH TOUR We are currently accepting applications for our 2024Youth Tour. The competition is open to any high school junior who lives or goes to school in one of the eight counties served by Dixie. The 2024 Montgomery Youth Tour will be held March 13-15. It will boast the participation of approximately 150 high school students representing 17 cooperatives from around the state. Students will enjoy activities such as participating in leadership sessions, taking part in several team-building activities, meeting with Legislators, and touring the Alabama Department of Archives, the Alabama State House, the Dexter Avenue King Memorial Baptist Church, and the Alabama Capitol. Tour sites may vary. The 2024 Youth Tour Packet and Application are available at www.dixie.coop/youth-tour. 2024 CO-OP SCHOLARSHIPS Dixie Electric Cooperative will be awarding 12 $3,000 scholarships in 2024. Our scholarship program is available to any graduating high school senior who is the dependent of a cooperative member. The scholarship funds can be used at a four-year or two-year college or university, as well as any technical or trade school.
