Mary C's Red Velvet Cake Ingredients: 2 ½ cups cake flour 1 ½ cups sugar 2 eggs 1 cup buttermilk 1 ½ cups Wesson oil 1 tsp. vanilla 1 tsp. baking soda

1 tsp. vinegar 1 oz. red food coloring 8 oz. cream cheese 1 stick butter 1 box powdered sugar 1 cup pecans, chopped Dash of salt

Directions: Mix all dry ingredients in a bowl. Add liquid ingredients and mix until well incorporated. Distribute the batter between two prepared cake pans. Tap the pans on the counter to remove air bubbles. Bake for 25 to 30 minutes or until a toothpick inserted into the center of the cake comes out clean. Place on a wire rack to cool. In a mixing bowl, beat the cream cheese until smooth. Add butter and mix for about 30 seconds to 1 minute until well combined and smooth. Mix in powdered sugar, salt, and vanilla extract and continue mixing until fully combined, scraping down the sides of the bowl as needed. Fold in chopped pecans. Place one cake layer on a cake stand or plate, top with a layer of frosting, and smooth it out into one even layer. Place the second layer on top, then use the remaining frosting to frost the top and sides of the cake.

Distracted Driving Awareness The holidays are a time for family, food, and for many, travel. If you are traveling during the holiday season, remember to be safe on the road. Distracted driving is not limited to cell phone use alone. Any activity that takes your attention from driving is considered distracted driving. This puts the driver, passengers, pedestrians, and other drivers in danger. Remember to put your phone away before shifting into gear. Always be aware of your surroundings and slow down, especially in roadwork or utility work zones. Do not risk your life or the lives of others.

HOLIDAY LIGHTING SAFETY It's time to deck those halls! Statistics show that home fires and electrical accidents typically increase during winter months, so keep these holiday lighting tips in mind for a safe holiday season.

Carefully inspect all electrical decorations before you use them. Cracked or damaged sockets and/or loose or exposed wires can cause serious shock or start a fire.

Before changing bulbs or fuses, make sure to always unplug electrical decorations.

Turn off all indoor and outdoor electrical decorations before leaving home or going to sleep.
