MOMENTS TO SAVOR WITH INSPIRATO beginning its ninth year, we’ve now welcomed members on more than 120,000 vacations around the world. During that time, I’ve developed a definite point of view on how the best trips unfold. Whether you’re relaxing at the beach, skiing in the mountains, or exploring a new city, for me there are three essential moments common to every great travel experience. The first is the moment when you arrive. You step inside your place and immediately have a sense for how closely it matches (or ideally exceeds) your expectations, how your guests will interact during the rhythm of the day, and how you will all remember your time together. It’s make-orbreak, excitement or disappointment, and when everything feels right, it sets a magical tone for everything to come. The second is the moment you let go and actually begin to relax. This usually takes a day or two. You know it’s happening when you’re able to set aside your mental “to-do” list and you begin enjoying where you are and who you’re with. It’s when the fun really starts. The last essential moment is when you begin looking forward to your next trip, perhaps even planning it. This may seem counterintuitive, but in my experience, the best vacations always involve thinking about where you want to go next. That’s because at Inspirato we believe

that spending time with your loved ones brings the most reward when practiced as a lifestyle, not as a once- or twice-a-year obligation. To showcase just how wonderful that vacation lifestyle can be, this newest issue of INSPIRATO magazine features a gorgeous photo essay of coastal Maine that makes me want to start planning that trip right now. There’s also a surprising story about how Hurricane Maria inspired Puerto Rico’s farm-to-table movement. The Drink department, about the newest Super Tuscan wine, Urlari, shows the unexpected experiences that can come from travel: The winery only exists because its founders met randomly on a ski lift in Chile. ince its founding three years ago, Inspirato’s Events team has created hundreds of single-day events for members to enjoy. This fall, they “wanted to see if we could flex our muscles a bit and do an event that lasted a long weekend,” says Inspirato Events Specialist Elizabeth Settambrino. The team came up with a threenight Michelin-Star Weekend in NYC (October 18–21) that included lodging at 1 Hotel Central Park and private seven-course tasting menus at three Michelin-starred restaurants, including Thomas Keller’s acclaimed French restaurant Per Se. It sold out so quickly—in mere hours—a second event was added the following weekend (October 25–28). Aside from the dates, the two weekends were identical. In addition to dinner at Per Se, members enjoyed dinners at Eleven Madison Park, which has three Michelin stars and was ranked as the 2018 Best Restaurant in the World, and at Momofuku Ko, which has two Michelin stars. Also included was a private before-hours tour of the Museum of Modern Art, drinks at the iconic Rainbow Room, and a baking class at the Brooklyn outpost of Milk Bar, which has been featured prominently on the Netflix show “Chef’s Table.” The success of these weekends helped spur the launch of Inspirato Only experiences, a selection of exclusive, curated adventures reserved solely for members and their guests.

nspirato hosted its first golf tournament on the East Coast this past June. The two-man scramble, shotgun start Annual East Coast Member-Guest Golf Tournament drew 130 golfers to the Greenwich Country Club, which was closed to the public for the day. Players initially worried about the possibility of rain, but the weather cleared up and it turned into a beautiful day for golf. Play started following a luncheon. At an awards dinner, prizes were given to the top three teams, and also for the shot closest to the pin and for the longest drive (men’s and women’s). Member Matt Sullivan and Tanya Balkan won the latter. Tournament winners Ryan Jasinski and Greg Michas won a 2018 U.S. Open Golf Experience for Two. Second-place finishers Matthew Cohen and Jason Zegans won a prize from The Surrey Hotel in NYC. Member Anthony Busacca won closest to the pin; his prize was a one-month Cadillac loaner vehicle.

he sixth Member Summit, “A Tale of Exploration,” was held in Washington, D.C., at the Smithsonian American Art Museum’s Renwick Gallery. More than 145 members and guests met to mingle, talk about travel, enjoy wine and a threecourse dinner, see the exhibit No Spectators: The Art of Burning Man after hours, and hear travel writer and essayist Pico Iyer speak about “Why We Travel.” Iyer, who has done several TED Talks that colletively have been viewed more than 5 million times, has published in Time, Condé Nast Traveler, Harper’s, The New Yorker, Sports Illustrated, and on Salon.com; his books include Video Night in Kathmandu, Cuba and the Night, Tropical Classical, and The Global Soul. His talk was a compilation of his writings and TED Talks, woven into a message specific to members.

n 1773, Filippo Mazzei was the first person to bring European vines to the New World; he established a 193-acre winery near Thomas Jefferson’s Monticello estate in Virginia. Fast forward to today and the Mazzei family has been making wine for 24 generations. The family has a spectacular estate in Chianti, Fonterutoli, which Inspirato members can visit for tastings. Closer to home, members can attend bi-annual Mazzei Wine Dinners prepared by the estate’s executive chef Lorenzo Baldacci. Baldacci will be traveling to the U.S. for four dinners in February 2019. Last February, Denver and Houston were the lucky cities: Baldacci worked with local chefs at Café Annie and Amerigo’s Grille (Houston and The Woodlands) and at Il Posto and Tavernetta (Denver). Between 20 and 60 guests attended each of the dinners, all four of which sold out. Between courses Baldacci talked about Italian winemaking and poured Mazzei wines including Vermentino Belguardo 2016, Fonterutoli Chianti Classico DOCG 2014, Philip IGT Toscana 2012, and Tirreno Maremma IGT 2014. The menus at each of the four dinners were unique, and included traditional Italian-inspired fare like Arrabbiata spaghetti with spicy marinara and Italian seasoning, garlic, shallots, mushrooms, olive oil (Amerigo’s Grille), and more locally inspired dishes like Gulf Red Snapper with fisherman’s-style crab, tomato broth and saffron aioli (at Café Annie).

and she took it upon herself to put together an itinerary that we all could enjoy. The planning—and the unknowns that came with it—were a big part of the trip’s appeal, at least for her. I just kept thinking about how nice it would be to belong to a club that could do all of this for us, like, ahem, Inspirato! But my wife pulled it off. The Azores feel like “Hawaii meets Europe.” They share lush volcanic landscapes and temperate climates, but the Azores have centuries of European influence through their connection to Portugal. Plus, you can’t beat the access: the islands are only about a four-hour

INSPIRATO MAGAZINE | WINTER/SPRING 2019

flight from Boston and New York. We had a very authentic visit, staying in quaint, borderline rustic hotels and discovering typical Portuguese casual eateries called tascas. The local seafood and wines were incredible and an outstanding value compared to elsewhere in Europe. The uncertainty of it all gave our time in the Azores a charged feel that heightened our experience. We were all in this together. Fortunately, the islands exceeded our expectations. Contrast that with our arrival in Lisbon for our Inspirato cruise vacation. From the moment we arrived, we didn’t have to worry about where

we were going to go, or eat, or what to do. The most immediate difference I noticed was just how relaxed all of us were when all our needs were met. We also enjoyed the flexibility to do our own things, whether that was discovering a quaint village on foot or taking a tuktuk tour. We’d then gather for dinner and share the day’s adventures. By the end of our trip, our friendships had deepened, we made new friends, and I learned the value of travel to strengthen those bonds. At its best, travel teaches us about other cultures, but also about ourselves. To go through it with friends was icing on the cake.

TIPS FOR FRIENDLY TRAVEL PICK YOUR COMPANIONS: Are you all foodies or adrenaline-seekers? Is everyone okay facing unknowns or not? A weekend away together is a good test before an international adventure.

PLAN SPONTANEITY: Build a flexible itinerary and don’t be afraid to venture off it. Commit to a policy where everyone expresses their preferences, has a vote, and is okay splitting off.

MAKE A FINANCIAL PLAN: Avoid any awkwardness around expenses by making a plan in advance or trusting that everything evens out. All-inclusive vacations, such as our membersonly cruises, help remove any issues around expenses since there are no bills at the end.

a member with us for more than a few months, you likely have noticed our Inspirato Only experiential travel vacations. From our annual European cruises, to expeditions to the Galapagos and Antarctica, and African safaris, we believe these experiences offer more memorable vacation options. They’re also among my favorite ways to travel with family and friends. Last fall, I had the chance to join friends on two very different experiences backto-back: a trip to the Azores that my wife planned as part of her milestone birthday celebration (I was only able to join for a few days to scout it as a possible destination for an Inspirato Only experience in 2020), followed immediately by our members-only cruise on Portugal’s Douro River. My wife had long wanted to visit the Azores, the storied, yet still largely undiscovered, archipelago in the middle of the Atlantic,

North America’s biggest ski area has more than 8,000 acres of terrain that’ll take days to ski. town that handles the influx of winter and summer visitors with charm, elegance, and a good deal of mountain-people authenticity that draws thrillseekers from around the world. One could argue that its international vibe, outdoors-minded population— helped, no doubt, by hosting 2010 Winter Olympic alpine events—makes Whistler the closest Canada and the U.S. have to Chamonix, the legendary capital of adventure sports located in the French Alps. But perhaps Whistler Blackcomb’s most appealing attribute is access: The ski area is little more than a two-hour drive north from the international airport in Vancouver, British Columbia. Rarely does going this big come so easily. —THE EDITORS

T

he stats attributed to Whistler Blackcomb boggle the mind. To wit: an average snowfall of more than 38 feet, a top-to-bottom vertical descent of a mile (on Blackcomb), 2,200 acres of expert terrain alone, 7-mile-long ski runs, year-round skiing on groomed glaciers, and a gondola between the two mountains that carries skiers and boarders 1,427 feet above the valley floor (by comparison, the Empire State Building tops out at 1,454 feet). For skiers and boarders in North America, Whistler is just about as close to a sure thing as can be found on the continent. Superlatives aside, what makes Whistler truly special is its village, a compact, pedestrian-friendly

Inspirato has played an integral role in helping Brett Young become a multi-platinum-selling countrymusic artist—and with his recent honeymoon. BY THE EDITORS

T

hree years ago, Brett Young was just another anonymous singer/songwriter hoping to make it in the country music business in Nashville. Today he’s the owner of a platinum album, Brett Young, and the recently released Ticket to L.A. He’s also newly married to his long-time girlfriend, Taylor Mills. Days after returning from his honeymoon and before he kicked off his winter tour across the United States, Young took some time to share how his overnight success, 10 years in the making, was due to hard work and the generosity and resolute support of Inspirato members Rutherford and Rhonda Polhill. Inspirato: You were born and raised in Huntington Beach, California, aka Surf City, U.S.A. How did you ever become a fan of country music? Brett: It was because of my older sister. We’d battle for shotgun in the car, and when I’d win she’d kick the back of my seat to annoy me. To get her back, I’d turn on the country-music station in the car. She hated country back then. (Now, she loves it.) Then I heard Tim McGraw’s “Don’t Take the Girl,” and I was like “Whoa, what’s going on here?” And I started listening to the storytelling in the songs and soon enough I was getting into artists like BlackHawk and Shenandoah. Country music just made sense to me. It went from there. I was a bit of an outlier among my friends who were all into Southern California punk.

Where and how did you develop your love of writing and performing music? My dad is a pastor, so I grew up going to church and playing guitar at church services, learning to play worship songs. When I got to high school, which was a church school, I was performing in front of the whole student body on Friday mornings, playing worship songs, so that’s how I grew into a performer. But music wasn’t my thing. I was on track to play pro baseball.

COUNTRY MUSIC SENSATION Brett Young’s seeming overnight success came after more than 10 years of paying his dues by playing bars and restaurants.

I was a pitcher for Fresno State University in California, but an elbow surgery put an end to that. About that time, I heard Gavin DeGraw’s Chariot, and he doesn’t do country, but I still fell in love with the songwriting—to be honest and vulnerable like he was. It showed me that there was a path out there to write the songs I wanted to write. So, I set out to do it. How did that go? I was making a living as a bartender and resident musician in restaurants and bars around Los Angeles, mostly playing covers. One of the gigs was in the lobby bar of the Montage Beverly Hills, playing every Wednesday night from 8 to midnight. After paying my backup band and buying dinner, I nearly always lost money playing there, but I kept at it because everyone who was anyone would come through that lobby eventually. One night, Rutherford “Ruddy” Polhill, a guy from Atlanta who was in town for an eye-surgery consultation, sat down to listen and told me he believed I could make it in the music business. Then a month later, he brought out his wife and daughters to hear me play, and soon after that, they flew me to Atlanta to perform at their birthday party. That’s how much the whole family believed in me. We worked out an arrangement where they staked me, and we were going to figure out how to hack the Nashville music scene and get a recording contract for me.

Speaking of your honeymoon, how did you and Taylor pick St. Croix in the U.S. Virgin Islands as the destination? Taylor and I love being warm and near the ocean, and she’d been to the British Virgin Islands before and wanted to show me the Caribbean. We saw the house that Inspirato had available on St. Croix and said, “That’s it!” We arrived in St. Croix and it was just perfect. Warm and sunny, and then we’re driving out to the house, and it’s at the end of this long drive, situated on a cliff with the waves crashing below. It’s just an insane property. The photos of it are incredible, but they don’t do the setting justice. And then it started raining—and it never really stopped. But whenever there was sun, we’d dash out to the beach for the hour or two it was out. We did have one perfect beach day at Judith’s Fancy, lounging on the beach with drinks in our hand. That was pretty special. But as I said before, Inspirato thinks of everything. To distract us from the rain, Sarah, our Destination Concierge, set us up with massages right before dinner on the first night. The second night, we had a chef come to make us anything we wanted. I know it sounds corny, but I wanted chicken parmesan. That paired with a special bottle of wine I’d brought made it a special meal. The weather wasn’t ideal, but it was still pretty dramatic, and when it’s your honeymoon, it was super romantic, as well. It’s not the worst thing to be stuck inside a gorgeous house over the ocean for a week, knowing that every last detail is, and will be, taken care of. Can we expect a song to come out of the adventure? You never know! 

What’s the first step to hacking Nashville? Well, we eventually figured out you really can’t hack the system. It works like it does for a reason. What we did figure out, though, was that success starts with songwriting. In June 2015, we set up a weeklong songwriting retreat at a huge beachfront Inspirato house, Casa de Colores, outside Puerto Vallarta, figuring it’d be easy to get great songwriters to come down to Mexico for a free beach vacation and to collaborate with me on new material. And being an Inspirato set-up, we didn’t have to worry about anything except getting to know each other and writing music. We had two songwriting teams come down for three days each, and we had a production engineer recording every session. First was Trent Tomlinson and Tyler Reeve. That first day, we wrote “In Case You Didn’t Know.” That song was released as a single about a year later and went to No. 1 on the charts and became a multi-platinum-selling single. [To date, the song’s YouTube video has been viewed more than 210 million times.] The next songwriting duo to come in was the husband-andwife team of Ben Caver and Sara Haze. We didn’t get too far, though, as I got my first and only case of sun poisoning in my life on the second day with them. But they’ve stayed close—they even recorded a cover of “Forever Young” for my wedding. Two months after that trip, I signed a record contract. My career’s been going nonstop in the years since that week in Mexico. Except for a weeklong Inspirato vacation to Cabo last year with the Polhills, my then-fiancée Taylor, and two other couples who are special to us, my wedding and honeymoon this past November was the first time I’ve taken an extended break from music.

ook at this purslane,” says Daniella Rodríguez Besosa, on her farm in a mountainous region about a 90-minute drive southwest of Puerto Rico’s capital, San Juan. Pointing to the stubby green succulent, she says: “Most people consider this a weed and pull it out.” On her 6-acre farm in Aibonito, its air sweetened with birdsong and its fields buzzing with life as honeybees flit from bright red cosmos to burgundyveined translucent lanterns of tomatillos, Rodríguez Besosa cultivates it for one of San Juan’s top restaurants, 1919, in the Condado Vanderbilt hotel. When I ask what else she grows, she says in rapid-fire staccato: “basil, arugula, radishes, beets, peppers, eggplant, carrots, and, over there in the corner, green beans, cilantro, sweet peppers. With winter coming we’ll plant cabbage, bok choy, pineapple, tarragon, passionfruit, dragonfruit, and breadfruit.” And that’s just a partial inventory. The plantain and banana trees are toward the back of the property, to make the fruit harder to steal. And there are tomatoes, though when I’m there, “it’s really not tomato season,” she says. “We shouldn’t be planting tomatoes, but we like pushing boundaries.” Her rescue dog, a muscular mutt named Coa, bounds between the rows when Rodríguez Besosa calls. This idyll belies what has been a difficult year for Rodríguez Besosa, 33, and most other Puerto Rican farmers. Slender and strong, with penetrating eyes, she has been working relentlessly since Hurricane Maria made landfall on the island in September 2017. “Everything was vaporized,” she says. Yet, assisted by grants from relief agencies, she has started over. She calls her new farm Siembra Tres Vidas, a garden with three lives. Rodríguez Besosa’s approach is emblematic of a new mentality on the island that’s gained momentum since the hurricane. For the past century, Puerto Rico, a U.S. territory, has

grown crops primarily for export, such as coffee and sugar, and its residents relied heavily on food shipped to the island. “We don’t need to be exporting products,” she says. “We need to be producing a huge diversity of food for our people.” In San Juan, I dine at chef Juan Jose Cuevas’ restaurant, 1919. Cuevas, a Puerto Rican native who oversaw the kitchens of Michelin-starred restaurants including New York’s Blue Hill, organized daily meals for thousands of hurricane survivors in the months after Maria. At 1919, amid amber tones and elegant décor, he presents a contemporary menu that features mostly local fish and vegetables. One of his star dishes is wahoo with purslane, the succulent grown on Rodríguez Besosa’s farm. In the first months after the hurricane, not much fresh produce was available, Cuevas says, but “what I am getting now is 10 times better, in quality and diversity, than what I got before Maria.” Cuevas and other chefs are partnering with farmers, agreeing to buy their produce in advance of planting, giving the farmers some financial security. While local farmers still grow Puerto Rican staples, such as yuca and cassava—“the diet of our ancestors,” Cuevas says—they’re also planting more carrots, beets, kale, and collard greens, in part based on what chefs want for their restaurants. “Chefs can have a huge impact on the economy of Puerto Rico, now more than ever,” he says. “We have the power to support farmers so they can continue growing.” Noting that the island imports more than 80 percent of its food, Cuevas says, “We cannot depend so much on importing stuff. We can grow items ourselves, and we can be sustainable if another disaster happens.” The crisis has provided the opportunity to experiment, he says, which is precisely what the wife-and-husband team of Angelie Martinez and Efren Robles are doing on a half-acre farm, called Frutos del Guacabo, near Manatí on Puerto Rico’s north coast.

Arriving on a dirt driveway lined with tomato plants, I see goats in a corral with a crowing rooster perched on a post. The scents of lemon basil and oregano blend in the air, and the sound of flowing water rises from a hydroponic network of white PVC pipes. Robles warmly greets me and introduces me to something I’ve never tasted, a Brazilian flower called a lemon drop that sets my tongue tingling with a sour citrus flavor. Before starting the farm in 2010, Robles worked as a mechanic; Martinez as a chemist. They grow some plants in the earth, others in water carefully monitored for pH to produce the highest quality produce, using organic practices and shunning pesticides. The property abuts a craggy limestone slope and most of the goats, which provide milk to make cheese, are free to climb it. The diversity of plants grown on this tiny plot is staggering: bok choy, cherry tomatoes, passionfruit, and microgreens that are sent live in tiny trays to San Juan’s top chefs. The farm is helping to popularize the Habanada pepper, a sweet version of the hot Habanero pepper. “We look for products that are in demand,” Robles says. Frutos del Guacabo is also a distribution center for more than 50 of the region’s growers, and a model for what can be done with little land. But Martinez and Robles haven’t forgotten their traditions. “We sell jams of papaya or pineapple,” Robles says. “We make hot sauce with the skin of pineapple fermented with peppers; that’s the way our grandmothers used to do it.” After the hurricane, it took 177 days to rebuild the farm and get back on the road delivering food, Robles says. If he and his wife can turn half an acre into an Eden-like garden, he believes anyone can—and that the future of the island depends on it. “We are trying to educate people that food self-sufficiency is viable; that they can start farming,” Robles says. “Our role is to show people this can be done. It’s not only economic but social; you need to grow your own food—it’s that simple.” Chef Peter Schintler of San Juan’s esteemed Marmalade restaurant is awed by what Martinez and Robles accomplish at Frutos del Guacabo. “It almost looks like a Jurassic garden,” he says. “The amount of passion and love … you can taste it in their product.”

At True Leaf Farm in Palomas, about an hour south of San Juan, Gabriel Mejia shows that attentiveness can produce tiny bursts of flavor in edible flowers, herbs, and microgreens. Mejia, 29, studied horticulture at the University of Puerto Rico. After the hurricane, which toppled his greenhouses, he rebuilt his battered farm. Top chefs, such as Jose Santaella, eagerly buy his peppermint tops, mini cilantro, micro basil, baby radishes, and zucchini blossoms. Mejia cultivates what chefs ask him to grow. “It’s their last detail,” he says. “The level of attention and care this requires is humongous. If you’re not passionate, you’re not going to deliver a product they’ll put on their plate.” As I bid Mejia farewell, he loads a large white cooler of freshly harvested produce into his dented Toyota sedan and drives down the vertiginous hills to San Juan. That night at the popular Santaella restaurant in San Juan’s Santurce District, I meet Erin Schrode, operations director of Jose Andres’ food relief group Chefs for Puerto Rico. We order malanga fritters with local avocados. When the appetizer arrives, Schrode tells me the fritters are topped by microgreens grown by Mejia. The tiny cilantro leaves are the perfect touch. Schrode notes that many of the young growers seeking to change the way Puerto Ricans farm are women and says Rodríguez Besosa’s vegetables and fruits are among the best on the island. “Daniella’s produce is of a quality that’s so exquisite. She’s amazing, her passion,” Schrode says. That passion is reflected in Rodríguez Besosa’s commitment to her farm, her community, her island. More than 150,000 people fled Puerto Rico in the first six months after the 2017 hurricane and haven’t returned. Asked if she ever considered leaving, Rodríguez Besosa emphatically says, “Never. I’m staying put. It’s conviction. We stay where we’re needed.”

T

he partnership that resulted in the Tuscan winery Urlari started on a ski lift in Portillo, Chile, and today its wines are imported by a company based in Teton Village, Wyoming, the small community at the base of the Jackson Hole Mountain Resort. Italian co-founder Roberto Cristoforetti is both a certified fruit farmer and handcrafts custom ski boots for the world’s best ski racers. (Since the 1984 Sarajevo Olympics, 83 Olympic medals have been won in Cristoforetti-made boots by skiers including Alberto Tomba, Hermann Maier, Tommy Moe, Picabo Street, and Julia Mancuso; he plans to retire after the 2019-2020 race season.) Urlari’s other co-founder, Mary Kate Buckley, has skied her entire adult life and this past summer started as president of Jackson Hole Mountain Resort. In 2002 the two found themselves on a lift together in Portillo. Initially they chatted—in German, because that was their common language—about athletic footwear. At the time, Buckley was Regional Vice President and General Manager for Nike’s Americas Region and was curious that top World Cup racers all had custom boots. As their friendship grew, Buckley soon learned of Cristoforetti’s passion for wine, which had its roots in his friendship with Italian ski racer Alberto Tomba (who was known as much for being an oenophile as for his dominance in skiing’s technical events). Tomba invited Cristoforetti to accompany him to wineries in Bordeaux, Burgundy, Tuscany, Chile, and California. Buckley had been introduced to fine wine in the mid-1990s when she was working for Disney and based in Hong Kong but often working in Tokyo. “In Tokyo, I sat in an office next to Guy [Aelvoet, president of Disney Consumer Products in Japan] and he became my mentor and a friend,” she says. “Guy shared his appreciation for fine food and fine wines. When [he] introduced me to a new wine, he’d not only introduce me to the quality of its attributes, but could speak articulately about the winery that produced

it and details that translated [it] from being simply a great product in a bottle to a reflection of the deep passion and rich histories of its owners.” By the time Cristoforetti and Buckley met, he was a partner in a start-up Tuscan winery. Later, he mentioned to Buckley that he was thinking about planting his own vineyards. (He grew up in a family of fruit farmers.) Inspired by his passion and always looking for new challenges, Buckley encouraged him, offered to be his partner, and to help—initially with marketing, and, eventually, sales. (Of course Buckley checked in with her wine mentor, Aelvoet: “When I told him I was thinking about starting a winery in Tuscany, he weighed in, first to warn me how challenging it would be to start a winery from nothing but then to support with advice and cheer me on at every stage,” she says.) Cristoforetti began searching for suitable land and, in 2004, found it. It was while Buckley and Cristoforetti stood on a 25-acre plot of sheep pasture in Riparbella, in Tuscany’s coastal Maremma region 4 miles from the Tyrrhenian Sea, that they created the product vision for Urlari. The sloping pasture has an elevation between 700 and 800 feet and is surrounded by dense forests in which locals hunt for wild boars. As the pasture was being transformed into vineyards— 15 of the 25 acres were planted—evidence of it being cultivated since Etruscan times was found, including fragments of a wine vessel, a hairpiece, and a coin dating to 200 B.C. that eventually inspired the winery’s labels. Unusual for the region, Cristoforetti planted grapes very close together. (This is seen more often in Bordeaux.) “When the plants are so close, they fight for the limited water, so only the strong plants and grapes survive, and those that survive are going to be more intense than they otherwise would be,” he says. To make Urlari’s first wines, Cristoforetti approached winemaker Jean-Philippe Fort, even though the Bordeaux

manager of Dornan’s Wine Shop, which has a 1,500-plus bottle list and has earned a Wine Spectator Best of Award of Excellence every year for 31 years, remembers the first time Buckley came in. “She walked into the shop and told me she had started a winery in Italy,” he says. “We like helping out smaller, individual wineries that are giving it a go, so I tasted the wines. It was nice stuff, a really, really good quality wine. I had no doubt it would sell.” Other bottle shops and restaurants in Jackson Hole quickly followed. Making inroads in New York was more difficult. “I got a copy of Wine Spectator’s list of best restaurants for wine,” Buckley says. “And then I cold-called the ones in New York City.” Most restaurants wouldn’t see her, but “the ones I got in front of with the wine bought it,” she says. After Buckley had gotten Urlari onto the wine lists of restaurants like Keens Steakhouse, Delmonicos, Bar Italia, and Caravaggio, importers took notice. Today Urlari’s three wines—Pervale, L’Urlo (100% Merlot), and Ritasso (100% Sangiovese)—are sold through distributors in Montana, Utah, and Wyoming, and importers in the NY/NJ/ CT area and Pennsylvania. The 2017 New York International Wine Competition recognized Urlari as the Tuscan Winery of the Year, and its 2011 vintage Pervale won a “Double Gold” from a panel of top wine critics. James Suckling, regarded as one of the world’s top wine critics, has awarded scores of 93 points for Pervale, 93 points for L’Urlo, and 92 points for Ritasso. On the phone in the middle of the most recent harvest, I asked Cristoforetti if Olympic skiers or grapes are more difficult to work with. He didn’t hesitate: “Grapes.” And that makes Urlari’s success all the sweeter. Buckley says, “Building a new business from scratch—literally going from standing in a sheep pasture and envisioning a wine made from grapes of plants that have yet to be planted and encountering hurdles along the way, to winning awards and having people enjoy all of our work—that’s so much fun.”  Dina Mishev is Inspirato’s editor.

native had never before agreed to work with a winery outside of France. (More than 40 percent of the wines Fort consults for are Grand Cru Classe, including Chateau Angelus, a Premier Grand Cru.) Intrigued by Urlari’s terroir and facilities, Fort agreed, officially bringing together the three world wine cultures Cristoforetti most esteems: Italian, American, and French. In 2010, using the 2008 vintage, Urlari produced about 8,000 bottles of its first wine, Pervale, a blend of Sangiovese (28%), Cabernet Sauvignon (25%), Cabernet Franc (25%), Merlot (15%), and Alicante Bouschet (7%). “Roberto sold these mostly from the back of his car throughout Italy,” Buckley says. Urlari’s second vintage, 2009, produced 24,000 bottles, and the winery extended its distribution. Its first export customer was Aelvoet’s son-in-law, who owned a restaurant in Belgium. “He bought 50 cases based solely on Guy’s recommendation,” Buckley says. Not all sales were so easy though. “We thought the hard part would be making the wine, but the really hard part is selling it,” says Buckley. “There are so many wine labels in the U.S., and nobody needs another one.” She briefly looked for an importer, but was unsuccessful. “So I got my importer license,” she says. “If you look at the label today, you’ll see it says ‘Imported by Urlari USA, LLC Teton Village, WY.’” (Buckley bought a home at the base of the Jackson Hole Mountain Resort the year after she and Cristoforetti bought the land for Urlari and she became a full-time Wyoming resident in 2009.) Her strategy was to sell wine to stores and restaurants in Jackson Hole and also to restaurants in New York City. “It’s the most competitive market in which everyone wants to sell their wine,” she says. “While I had never sold wine or anything else, I had confidence that the most sophisticated wine directors in New York would recognize and buy a truly unique, high-quality wine.” In Jackson Hole, Buckley was able to walk into wine shops and restaurants without appointments and talk with owners and sommeliers. MOVING AHEAD A timeless company re-emerges. BY TOM BIE

W

hen Inspirato member Joel Doub is fly-fishing one of his favorite rivers near a club property—like the Frying Pan River near Aspen, Colorado, or the Gallatin River near Big Sky, Montana—he enjoys using a fine, handcrafted fly rod. The difference between Doub and other fanatical fly-fishers is that Doub not only owns his fly rod, he also owns the company that built it. Doub and business partner Matt Barber bought Bozeman, Montana-based Tom Morgan Rodsmiths (TMR) in the summer of 2016, just a year before Morgan, a legendary rodbuilder renowned in fly-fishing circles, died of pneumonia. Following the purchase, Barber and

Doub both moved their families from Denver to Bozeman, and the two are now taking steps to modernize TMR while still honoring the history and tradition of Morgan and his unique rodbuilding methods. “We talk a lot about Tom Morgan and his philosophy as a rod designer,” Doub says. “Many rods at other companies have been designed by competition casters, built for distance or for a particular feel. But Tom—because he was a fishing guide first—always designed rods based on watching people fish. And for him that meant fishing on creeks in Montana. So the foundation of our rods is based on small-creek fishing because they are based on accuracy and presentation at shorter distances. They’re not

really built with a 70-foot cast in mind.” Barber tells the story of Morgan giving a casting presentation at a fly-fishing show, when the guy standing next to him pulled about 70 feet of line off of his reel before starting to cast. “Well, now we know the reel works,” Morgan said to the man. “Now, why don’t you put half of that line back on the reel. If you’re trying to catch a trout beyond 50 feet, you should get closer.” While TMR has been in business for more than two decades, Doub and Barber are keenly aware of momentum in the modern “maker economy”— where the popularity of quality, small-batch products like their fly rods mimics the more general distaste for mass-consumer culture. “Many people are just looking for that throwback

craftsmanship as a response to all the fast-paced technology,” Barber says. “It’s the idea of slowing down and getting to know the person who handplanes bamboo for your rod, or who makes your leather belt. It’s the opposite of walking into a big box store or ordering off Amazon and having it show up on your doorstep.” Doub feels their fly rods also offer a sense of longevity that’s increasingly rare in our throwaway consumerist culture. “One of our models is essentially the same rod that Tom Morgan designed 22 years ago, and that rod has a permanence to it,” Doub says. “If you buy a fly rod, and you buy it really well, then that should always be your fly rod, and possibly your kid’s fly rod. The idea is that, if you buy from a maker that you know

and trust, and they’re making a semi-timeless good, then there’s a connection to history and excellence that maybe you don’t get when you’re buying the cheapest, newest, fastest, lightest thing.” Practically every fly rod on Earth is built from one of three materials—bamboo, fiberglass, or graphite, with graphite being by far the most common. But Doub and Barber have continued the Tom Morgan tradition of producing rods out of each of the three materials, something rare among even large manufacturers, much less small-batch builders. Roughly 80 to 90 percent of their rods are graphite because it’s the most versatile material. And since it takes about 80 hours to build a bamboo rod, they limit those to just two a month. As for fiberglass? “Fiberglass

rods are a niche that’s developed as a response to hyper-stiff rods, and people are nostalgic for the first Fenwick they ever cast,” says Barber. “It’s a fairly small category for us. We sell more fiberglass blanks to at-home builders than we sell assembled fiberglass rods.” Despite the variety of methods and equipment available to modern anglers, enabling them to chase almost any species of fish, Doub and Barber intend to keep their focus primarily on building the best fly rods for trout. “I grew up on the East Coast and love fishing for albacore and stripers,” Barber says. “And we love going to Mexico and fishing for bonefish and permit. But as a company, we’re not trying to be every rod you own. We both love spey casting and salmon fishing, but we’re

trying to do one thing and do it really well: build a single-handed, 2- through 7-weight, freshwater rod. We know that the travel market has gotten big, and that saltwater is growing, but for right now, we’d rather not expand into things that may compromise quality because we may have to learn a new skill set.” There are other reasons for sticking to smaller rods. With much of TMR’s customer base living in cities like New York, Denver, or San Francisco, finding solitude for your fishing is at a premium. And that solitude is most-often found high in river drainages, where longer, heavier rods aren’t practical because the fish are smaller and the space for casting is condensed. “Being in the Adirondacks as a kid, I fished a lot of creeks,” says Barber. “Then I moved to Colorado, where small water is the key to your sanity. So if you can convince yourself to fish with a 3- or 4-weight rod, and get into small alpine lakes and small springcreeky areas, you’re better off than trying to battle the masses.” This unpleasantness of battling the masses applies not just to fishing but to running a company as well. “As business owners, we talk a lot about waypoints and focus,” Doub says. “When we look around the industry we see companies trying to be everything to everybody, and it can be hard to figure out what they’re about. But for us, we’re still working on building the perfect trout rod. We want to make the best rod in the world for fishing for trout in Montana.” Tom Bie is the editor and publisher of the fly-fishing magazine

Favorite Spots for Fly-fishing Inspirato has a number of properties that allow visitors to combine fly-fishing with their stay. Here are a few of Joel’s favorite spots, along with the time of year he prefers to fish them, and local fly shops that can help get you started: VAIL, CO The Eagle River flows through town and is one of the last true undammed streams in Colorado. It has a great population of brown and rainbow trout. “My favorite time of year is early June, when you can jump in a raft with a guide and float below Edwards,” Doub says. In mid- to late July both have a great hatch of Green Drakes. “While the Roaring Fork is a great river to float, I generally wade-fish it, from the town of Basalt all the way up to

Shop: Basalt’s Taylor Creek BIG SKY, MT “I live in Montana now, and I’m not sure what took me so long to get here!” Doub says. “The state has some of the most famous trout rivers in the world, including the Missouri, Big Hole, Beaverhead, Jefferson, Yellowstone, Ruby, Firehole, Gibbon, Lamar, and Madison, not to mention the Paradise Valley spring creeks, all of which are within a three-hour drive of Big Sky.” Big Sky’s home river is the Gallatin, which originates just south, in Yellowstone National Park. out of the house every once and a while,” she says. “And when they do, we’re there.” Of course, even the closest communities occasionally need to find some space for a while, and for that Roth Gullo leaves it all up to Inspirato to take her, her husband, and two daughters, age 4 and 6, to someplace very different. “It’s usually someplace tropical that’s a direct flight from Boston and has a beach,” she laughs. “My life is crazy enough raising a family while running a business seven days a week with 150 employees. When I travel, I want easy.” Right now, the Cayman Islands are her favorite Inspirato destination. “The residences inside the RitzCarlton resort are safe and super kid-friendly,” she says. “At this point, our lives really are all about survival, so anything we can do to make our vacation a true vacation, we do,” Roth Gullo says. “We hire a babysitter or nanny to take care of the kids so we can relax. And we will hire a cook, so we don’t have to worry about when the next meal is and who is making it.” To help her, Roth Gullo relies on Inspirato’s onsite destination team—and her Care team in Denver—to take care of everything. “The extras may seem like an indulgence, but if you come home exhausted, what was the point in going in the first place?” —THE EDITORS

REBECCA ON TRAVEL When it comes to traveling, Roth Gullo’s young children determine where and how she and her husband travel. Here’s what she’s learned: • Take your full-sized stroller, not the tiny travel one, and gate-check it. It becomes a luggage cart, shopping cart, beach/pool wagon, and, yes, will cart your tired kids around. • Take your own car seats. I never want to rely on renting car seats and then finding out they’re not available or they’re not as protective as I expected. • Pack your kids’ bathing suits in your carry-on. The first thing to do after checking in is to let the kids go to the pool or beach. It’s a hero move that will be even more heroic if your bags go missing.

AFTER HARVARD LAW School rejected her application, Rebecca Roth Gullo went to cooking school, and then took a job as a cook in a restaurant in Boston’s South End. And she hasn’t left the neighborhood since. Today she manages two full-service restaurants: The Gallows, a gastropub, and Banyan Bar + Refuge, which serves Asian fusion, and the Blackbird Donuts chain. “I live 90 seconds from two of my restaurants and within a four-minute walk of another,” Roth Gullo says. “I see my guests at the park with my kids and when I drop them off at school. I know the cops who patrol the neighborhood. Community is everything to me, and it’s always been an integral part of our restaurants. We have each other’s backs, and that matters so much in today’s fractured times, to know that I’m providing places for people to come together.” “There’s an old saying that ‘Boston is a very big town’— not a city, a town—and I believe it. I see it every day in my restaurants.” Roth Gullo points to the hundreds of first dates she’s hosted, then bridal or rehearsal dinners, then anniversary celebrations, and then those same couples coming in with their kids. The idea that her establishments serve as sort of common living rooms for her South End neighborhood is what gives her the most pleasure. “Everyone needs to eat. Everyone needs to get

elen and Chris Ireland knew they wanted to take their two kids, Caroline and Thomas, to Africa. Now a primary care physician, Helen worked in a hospital in Botswana during her medical school training. “From then I always knew Africa would be a part of my life and, eventually, my kids’ lives,” she says. “But I knew I couldn’t bring them too early.” After chatting with Inspirato co-founder and chief experience officer Brian Corbett on Inspirato’s 2016 Eastern Mediterranean cruise, the Irelands were inspired. “Brian had just returned from a trip to Africa with his kids, and his advice was to just go,” Helen says. Thomas would be 10 and Caroline, 7. “And it happened to be the year both my husband and I turned 40.” Because the family wanted to stay at Kenya’s Giraffe Manor, the world’s only hotel with resident giraffes (which often books up one year in advance), the Irelands started planning their July

2018 trip in the summer of 2017. Helen worked with Inspirato’s new bespoke travel team, which, for custom trips to Africa, partners with Rothschild Safaris. Rothschild has more than 30 years of experience planning trips to Africa and has planned more than 7,000 trips. Helen says her description to Rothschild Safaris of what the family wanted their Africa trip to be was “comfortably uncomfortable and authentic. I wanted it to be different enough to get [the kids] totally out of their comfort zone while still supportive enough to keep us all smiling, and authentic enough to provide education beyond textbooks in as non-touristy an environment as possible.” Beyond this and the stay at Giraffe Manor, neither she nor Chris had specific directions for Rothschild. “We weren’t completely aware of the options, and that was really the value of working with the Inspirato partner. Rothschild was the one who suggested we do Kenya as our

primary safari destination because it is family-friendly,” says Helen. By September 2017 the itinerary was set: Between June 23 and July 11, the Irelands would travel to a couple of different game reserves in Kenya, and also spend a night in Qatar and a few nights in Nairobi before ending the trip at the Six Senses Zil Pasyon in the Seychelles. About the Seychelles, Helen says, “I wanted to end it with just the four of us and feel like no one could reach us. I had always thought of the Seychelles as a honeymoon destination, but it ended up being lovely for the kids.” Four months after returning home, Helen says of the whole trip, “It was the best travel experience I’ve ever had and exactly what I asked for.” Of one specific location on the itinerary, Ol Malo Lodge, a privately owned game sanctuary on the banks of the Uaso Nyiro River in Kenya’s North Eastern Province and bordering the tribal lands of the nomadic Samburu people, she says, “It was probably the most amazing thing I’ve ever done with my kids. It felt like we were going and living with extended family.” “ONE OF MY BIG takeaways from this trip was that the kids actually liked the people more than the animals,” Helen says.

“That had been my experience being in Africa years prior.” At Ol Malo, Caroline was entranced by one of the women in the family who owns the property. “Chyulu is an incredibly strong female and my daughter had such a reverence for her,” Helen says. To Caroline’s delight, the Irelands shared quite a bit of time with Chyulu, her young children, and Marmite, a baby rescue zebra. “There was this weeks-old zebra wandering around with us,” Helen says. “It was amazing, and for the kids a moment of pure discovery of something that was so foreign and priceless and pure. It was moments like that that made this trip, and, thinking back on the trip now, I can’t believe how many of those moments we had.” One day on safari in the Mara North Conservancy—a private wilderness area bordering the Maasai Mara National Reserve, where Rothschild Safaris recommended the Irelands go because it is dedicated to low-density tourism—the family saw a lioness kill a just-born giraffe. “It was so young it had not even stood up yet,” Helen says. “We saw the kill completely. My son’s reaction was amazement, but Caroline’s initial reaction was tears. Eventually when she saw we weren’t fearful of it and we talked about the circle of life, it became something amazing for her too. It was straight out of the pages of National Geographic.” Helen says one of the things that bonded them as a family was a long game drive on which they saw little. They were in the Mara and hidden in bushes from which they could see a tree where their guide knew a leopard had stashed a kill. “Once a leopard has put its prey in a tree, it revisits it over the course of a few days,” Helen explains. But the family had spent a whole morning there without seeing the leopard. They left to eat lunch on a bluff overlooking a herd of hippos and, after lunch, would have been fine heading back to Saruni Mara, their boutique lodge. The guide suggested they give the tree and leopard another chance, though. “Probably at the three- or four-hour mark, my son was starting to act up and came out with the best quote of the trip, ‘Seriously, Mom, I have no idea why we’ve been sitting here for four hours watching a dead animal hanging in a tree.’ I looked at him and just started laughing. And then he was looking at me in total shock and then he started laughing. And then all of us, including the guide, started cracking up. It was such a lesson in perseverance and it just bonded us.” They did eventually see the leopard briefly later that afternoon, and then the next day watched it finish the prey, only to be surprised by the leopard’s year-old cub … standing directly in front of their truck. As excited as that guide was for the Irelands to see the leopard in the tree, he was quick to recognize when the kids had had enough. One afternoon, instead of taking them on a game drive, he hung out with Thomas and Caroline and made a bow and arrows for each. “We carried these with us for the rest of our trip and they’ve become irreplaceable souvenirs,” Helen says. A safari guide and member of the Samburu tribe at Ol Malo brought the Irelands to his house. “He knew my daughter liked dogs and he had a new puppy,” Helen says. Other Samburu invited the family to their homesteads, market, and school. “They even brought me to the town’s medical clinic, where I was sorely tempted to stay and work for a bit,” Helen says. Four months after the trip ended, Helen and Caroline were still wearing around their ankles the beads the Samburu women gave them. “We’ve been members of Inspirato since the early days, and the majority of my precious memories, or the ones that warm my heart and still put a smile on my face, have Inspirato as part of them,” Helen says. “The memories from this trip are just a bit brighter.” 

YES, IT RAINS about 15 days of every month on Kauai, the northernmost of the Hawaiian Islands. The entire island averages about 43 inches of rain annually, compared to 17 inches on Oahu. But all this rain has an upside: It’s responsible for the island’s distinctive landscape. The rain helped create the Waimea Canyon, the biggest gorge in the Pacific. The rain also feeds thousands of magnificent waterfalls, while light, misty sun-showers create some of the most spectacular rainbows on earth. Dubbed “The Garden Isle,” 97 percent of Kauai is covered by forests or mountains—rain-fed canopies so dense, and rain-eroded valleys that you can’t imagine anyone having ever lived in (although up to several thousand people did live in different valleys as recently as the early 20th century). Today, the island’s 67,000 residents are clustered in small, laid-back towns on the coasts. Much of the 3 percent of the island that isn’t forest or mountains is beach. Kauai residents like to claim their island

INSPIRATO MAGAZINE | WINTER/SPRING 2019

has more beaches than any other in the chain. Whether this is true or not, it’s not difficult to find a small beach you can have all to yourself. And unlike some of the more popular islands, Kauai’s beaches are made up of soft sand rather than lava, and easily accessed from the road that circumnavigates the island—the island’s only road that takes about 2.5 hours to travel by car. The 4,000-foot red cliffs and cavernous canyons of the island’s north and west coasts are too treacherous to build a road on, but they make ideal locations for filming adventure movies and shows set in remote locations or prehistoric times. More than 70 Hollywood movies and television shows have been filmed on Kauai, including classics such as Jurassic Park and Raiders of the Lost Ark. While your own time on the island likely won’t include such harrowing adventures as these movies do, you’ll certainly find no shortage of fun excursions and breathtaking sights.

Kayak the Napali Coast

The Napali Coast is spectacular. On one side is a tangle of thick vegetation; on the other side are steep, sheer cliffs—napali means “many cliffs” in Hawaiian—that end in roiling ocean. National Geographic once described it as “the finest coastal hike in the world.” The hike, while unforgettable, is a multi-day affair that requires camping and securing a permit several months in advance. In contrast, you can kayak the Napali Coast in just a day with much less planning, and without much ocean kayaking experience. If you’re comfortable in water and generally fit, you’ll be just fine, even if the trip is a somewhat daunting 17 miles long. You’ll gear up at Ke’e Beach and set out onto the water with an expert guide. Along the way, you’ll likely pass sea turtles floating lazily near the water’s surface, and channel their energy as you bob up and down on the ocean’s gentle swells. Following the path of your guide will take you close enough to the shore’s soaring cliffs to wave to the hikers above, or out a couple hundred meters into the open ocean, where you can marvel at the island’s remarkable landscape from afar. You’ll stop for lunch on Milolii Beach, which is accessible only by boat, and where you might just stumble upon a Hawaiian monk seal. A few hours later, the trip wraps up at Polihale Beach State Park.

Hike the Maha’ulepu Heritage Trail

BY LAND The 4-mile Maha’ulepu Heritage Trail traverses the last section of undeveloped shoreline in southern Kauai.

Set off from Shipwrecks Beach on the flat, 4-mile, out-and-back Maha’ulepu Heritage Trail to Punahoa Point. The trail, along the last stretch of undeveloped coastline on Kauai’s southern shore, passes 350,000-year-old sand dunes, cultural and geological sites, sturdy Kiawe and Ironwood trees, hillsides blanketed in colorful ilima flowers, limestone pinnacles, rocky inlets, tide pools, and the cliff that actors Anne Heche and Harrison Ford famously jumped from in the 1998 movie Six Days, Seven Nights. Jumping from this cliff, Makawehi Point, isn’t just a movie stunt: Brave Hawaiians and tourists do it too, timing their leaps with the waves. You can decide for yourself whether to take the plunge or simply peer over its sheer edge. Past Makawehi, groupings of fragile-looking limestone and sandstone pinnacles rise from the ocean. According to the trail guide, in the 1970s paleontologists from the Smithsonian Institution discovered bones from two extinct species of birds in these formations. From this ruggedness, the hike takes a jarring, quarter-mile detour onto the Poipu Bay Golf Course, a temporary workaround due to landslides. While the landscape couldn’t be more manicured and civilized, families of nene, an endangered, non-migratory species of goose indigenous to Hawaii and whose population was once as low as 30, seem not to care. They wander the greens like they own them. Back on the trail, you’ll pass a heiau, a sacred site where fish were offered to Keoniloa, the god of the sea, to ensure a good catch. And gazing out from the trail to the water, you’re likely to see humpback whales, Hawaiian monk seals, and green sea turtles, along with other wildlife. The trek concludes at Punahoa Point, the apex of the oldest sand-dune system in the region.

Tube the Irrigation Canals of Lihue Plantation

Along Kauai’s East Side, also known as the Coconut Coast for the groves of coconut palms that grow there, you’ll find a truly one-of-a-kind experience: tubing down old irrigation ditches on a former sugarcane plantation. Built deep in Kauai’s lush interior, Lihue Plantation is crisscrossed by a network of canals, tunnels, and flumes that were handdug all the way back in 1870. For more than a century, these ditches delivered water to irrigate the plantation’s sugar crops. But after sugarcane was taken out of production in 2000, they sat vacant, collecting rainwater for a few years before Kauai Backcountry Adventures bought the entire property with something uniquely fun in mind. Today, tourists plunk down into inner tubes and traverse the gently rolling waterways on exclusive tubing tours. Starting near the top

of Mount Waialeale, tubers descend through some of the most remote land on Kauai, passing through thick rainforest and sliding down small waterfalls. The water is decidedly more brisk than that lapping up against your favorite beach, as it comes down from Mount Waialeale, Kauai’s

second-tallest mountain. But it’s not so brisk that tubers need to wear anything more than their bathing suits. Except, of course, the helmet and headlamp (provided by your hosts), which come in handy as you wind through old irrigation tunnels, which can be up to a mile long.

As you take in the untamed land below, you’ll feel as if you’ve gone back to prehistoric times, especially as many helicopters chopper over Manawaiopuna Falls, a 400-foot-tall cascade, made popular by its appearance in the original Jurassic Park in 1993.

After, kayaking, hiking, and tubing—not to mention likely bouts of swimming, snorkeling, and possibly surfing in between—you might be ready to sit back and let someone else take the reins. A helicopter tour provides just such an opportunity, though with no less excitement. On its west side, Kauai’s tropical rainforest gives way to dryer, more desert-like conditions at Waimea Canyon, once dubbed “The Grand Canyon of the Pacific” by Mark Twain. More than 10 miles long and 3,600 feet deep, Waimea Canyon offers visitors a chance to peer at the topography of the island’s interior, marked by deep valley gorges and crested buttes. Rainbows frequently arch over the canyon, which was carved by the Waimea River long ago. The word “Waimea” is Hawaiian for “reddish water,” referencing the canyon’s red soil. The only way to truly appreciate the unique complexity of this landscape is with a bird’s-

After all these adventures, you earned some time for a refreshing cocktail and delicious meal. In general, Kauai is not a fancy place. That’s one reason the island’s devotees love it so much. The dining, like most things, tends to be low-key —fish tacos, plate lunches (two scoops of white rice, macaroni salad, and a meat—often Spam—it might not seem exciting but it is the quintessential Hawaiian meal), fresh fruit bowls and smoothies, and shave ice. Often, the best of these places to eat are tucked away in strip malls. But if during a stay filled to the brim with rugged, outdoor adventures, you’re looking for something more formal, head to Tidepools. Made up of a cluster of open-air hale pili (thatchedroof bungalows) that seem to float like massive lily pads atop koi lagoons within the Grand Hyatt Kauai Resort and Spa, Tidepools is very much “Hollywood Hawaiian.” Flickering tiki torches and dark koa wood create a retro ’60s vibe that wouldn’t look out of place in a mid-century travel brochure. This ambiance pairs perfectly with signature (and slightly over-the-top) cocktails such as the Tai Chi, made with Captain Morgan’s spiced and Malibu coconut spiced rum along with pineapple and orange juices, and the Lava Flow, which consists of light rum, coconut crème, pineapple juice, strawberry, and ice cream all blended together. You might be lucky enough to be seated at Table #42, which the staff says is the best in the house because of its secluded location in a separate hale, but, really, there’s no bad table in the house. Chef Kevin Horan, who came to Tidepools after stints in Las Vegas at Restaurant Guy Savoy and Mandarin Oriental, presents a contemporary Hawaiian menu. He uses traditional ingredients like opah, a fish with a rich, creamy taste, macadamia nuts, fresh-caught seafood, and beef, but does not necessarily prepare them traditionally. Adventurous palates will enjoy the opah topped with papaya-habanero sauce or caught-thatmorning macadamia nut-crusted mahi mahi topped with a roasted banana-macadamia nut sauce and papaya-avocado relish. Foie gras isn’t a traditional Hawaiian food, but Horan brings an island influence to the dish by pairing it with macadamianut mousse and strawberry-papaya jam. The fresh greens are grown on-site in the resort’s 4,000-square-foot hydroponic garden, which is open to resort guests for tours twice a week. Sitting here, cocktail in hand, watching the colors of the sunset streak across the sky behind the gently swaying palms makes for a fitting end to a day exploring this natural-born island paradise. 

huge orange pumpkins from the loamy earth. Often, on a country road, you’ll come across an unmanned farm stand with a sign that reads, “Fresh fruit and eggs.” If this happens to you during your visit to Maine, always stop and slip a few dollars into the can, for the honor system is alive and well here, and few experiences bring such pure pleasure as eating a handful of blueberries, freshpicked by a trusting old farmer (or just as likely, her barefoot children). Whether you’re taking a stroll on Ogunquit’s iconic Marginal Way (which runs above the rocky coastline) or climbing to the top of Mount Agamenticus in York, the coast of Maine is where you’ll most strongly feel the somewhereness of this land. But you can still find evidence of the primal, rugged landscape even in the cities and small towns that pepper the shoreline. There are charming little hamlets, such as York (a quintessential New England village located right on the border with New Hampshire), Wiscasset (the prettiest town in Maine, according to those in the know) and further north, Bar Harbor (a famous escape for the 19th-century elite), not to mention the vibrant metropolis of Portland. While this city has more James Beard Award-nominated restaurants than it has any right to, you can also find great eateries in Kennebunkport, Ogunquit, and Old Orchard Beach. After a day exploring tiny hidden beaches, there’s nothing better than finding a restaurant right on the water where you can sample fresh-caught seafood and farm-to-table fare. Maine’s famous for its lobster, but I taste the essence of Maine most poignantly when I slurp down an oyster. Eaten with french fries made from locally grown potatoes and you’re actually devouring Maine’s clear water, mineral-rich soil, clean air, and northern sunlight. It’s a gift, but that’s what coastal Maine is: a place of freely

given gifts, honor system delights, and wilderness, unbound. 

vintners frequently talk about the terroir of a wine. This French term refers to the interaction of landscape and beverage, the influence that the soil, the topography, and the geography have on the final product. The only real synonym for terroir is somewhereness. Neither term is perfect, but they both describe something important, something essential—how place and land exert a subtle influence on everything that grows and lives there. And I am convinced that there is no place in the world that has more somewhereness than Maine. Located at the northeastern corner of New England, Maine is a richness of wilderness. It is the most heavily forested state in the union, and, thanks to the many finger-like peninsulas that jut into the Atlantic Ocean, has more miles of coastline than California. There’s a saying in Maine: “You can’t get there from here.” Travelers to the state quickly learn its truth. Maine is made of winding roads and small towns, scenic byways, and hidden treasures. It’s a place where you want to get lost, because getting lost means discovering a secret beach where bioluminescence glows under the nighttime stars. Getting lost means stumbling upon a pine forest with trees that were once used as masts for the Royal Navy, tall and straight and regal (known fittingly as “King Pines”). Getting lost means finding a tiny harbor where you can buy lobsters from a fisherman out of the back of his pickup truck. Maybe he’ll invite you home for dinner. Stranger things have happened. Although Maine has entered the 21st century alongside the rest of the world, there are elements of traditional New England life that persist here. People continue to make their living off the land and to reap the benefits of the sea. It’s not uncommon to meet a fisherman who also harvests timber and makes his own furniture from fine-grained black locust wood. There are still lumberjacks in Maine, and there are hundreds of small family farms and fragrant apple orchards, places where people submerge their hands in the dirt on a daily basis, coaxing forth golden potatoes, leafy dark green lettuce, and

It’s one thing to describe a trip to the Galápagos; it’s something entirely different to experience these islands in the middle of the Pacific Ocean firsthand. One of the most protected wildlife sanctuaries in the world, this Ecuadorian archipelago has called to explorers since Charles Darwin visited in 1835. Ecologically speaking, little has changed. Sailors on the National Geographic Endeavor II will see penguins, iguanas, sea lions, fur seals, flamingos, crabs, dolphins, and maybe even hammerhead sharks, all while enjoying the ship’s amenities and staff. SIX COUNTRIES IN 3 DAYS THIS PAST SUMMER, I found myself in a sticky dilemma. Our middle daughter had just graduated from college and her travel plans with friends were not panning out. As her mother, I felt awful that none of her friends or her boyfriend could take time off from jobs, committed internships, or other travel to celebrate. That’s where Inspirato’s California team stepped in and helped me plan an epic mother-daughter adventure, taking us through Europe, all while staying in Inspirato hotels with bespoke planning and attention to detail. We began with a four-day biking trip and excursion in the Netherlands followed by a train to Bruges, Belgium, for two nights in a 500-yearold hotel within walking distance of the town square. From Belgium, we flew to Zurich and stayed at the Park Hyatt in an incredible suite with amazing concierge staff that set us up with a day excursion to Lucerne. We loved eating

fondue in the historic section of town, seated along the water from where we could watch the swans and tourists. Next was a train to Geneva, where we stayed on the lake at La Réserve. From Lucerne we took a day-trip to Chamonix, France, and rode the Mont Blanc cable car up to an altitude of 12,600 feet for a stunning view from the top of Europe. Next were Florence, Tuscany, and Rome, with many sights in between. We rented a car and drove along the Italian coast. We stopped in Siena and passed acres of sunflowers. Baha, our concierge at the Portrait Firenze in Florence, was fabulous with his suggestions for restaurants, places to shop, and the best gelato, along with securing museum tickets, train tickets, and arranging for our rental car. From Rome, we flew to Split, Croatia, and visited friends for a few days before traveling to our final destination, Paris.

Highlights for us were Italy’s food and art, architecture and sights in Croatia—especially Plitvice Lakes National Park—and Switzerland’s beautiful, scenic landscapes, especially viewed from the windows of our train. And it was Inspirato that made it all happen. The club’s concierges beautifully worked around experiences I had booked myself, like a cooking class in Florence and a limo in Rome for a day of sightseeing. We had a blast and there was never a dull moment—it felt as if we were contestants in the Amazing Race TV show with the intensity of our itinerary. Back home, we were thrilled to learn that we inspired another mother-daughter duo to contact Inspirato for their own version of our trip. Now my younger daughter expects me to do the same when she graduates from college. I say, “Let’s go!” —BY MICHELE KIRSCH
