ell, here we are! How can it be that a year has passed and we are amidst the anticipation of another winter holiday season? Loved ones will gather, highways and airports will hum with activity and our social calendars will once more be full of events that may even at times try the most patient of souls. But despite the hurriedness we will settle into a most satisfying and comforting rhythm of reuniting with our families and friends. Creating the glitz and shine of the holidays is a gratifying aspect at this time of year and in this issue, we hope you find beautiful inspiration to present your home in all its finery. We have gathered beautiful ideas from area artists, designers and yes, even our Inspired Home readers and we’re ready to share! Decorating our homes in preparedness is a tradition of great importance. Not only is it a time of calming reflection as we unpack our favorite tree ornaments, it is an activity that is good for our souls and for all who view it. As I write this, I feel there is no better time than now to appreciate the peaceful security and calm of our holiday season. LAUREN F. CARLSON recently moved back home to Fargo with her husband and daughter after living in Upstate New York for 8 years where she worked at Cornell University as a research technician. There she worked with hemp for CBD/grain/fiber and willow for bioenergy. After having a baby she took some time off to be a mom. She loves knitting, running, cross-stitch, and of course, Scandinavian baking. SARAH DOLYNIUK A career in the interior design world, along with a genuine interest in connection, led Sarah here to Inspired Home Magazine. She loves date nights (or days) with her boyfriend, nature photography (iphone style), walks with her dog, kissing on her rescue kitties, listening to podcasts, reading, yoga, antiquing, getting lost in a good television show, and enjoying a citrusy IPA or glass of wine. BAILEY HOVLAND Before earning an English writing degree at Concordia College, Hovland dreamed of being an interior designer. Now, serving Inspired Home Magazine as a writer and social media director, she has the best of both worlds—pairing the power of words with innovative interior design.
CHELSEY MALSTROM Born and raised in Detroit Lakes, MN, Chelsey enjoys all things lakes country. Finding her love for wine working at Epcot Food and Wine Festival in 2012, she was thrilled to move back to Detroit Lakes to help run the family business. KINSEY WALLACE A licensed real estate agent and photographer based in the FM area, Kinsey can wholeheartedly say she found her calling and has met amazing people along the way! Obsessed with interior design and home renovation, she is, by her own admission, a true introvert that enjoys spending her free time traveling, reading, and enjoying the outdoors with her dogs, Finley and Murphy.
GRANVILLE WOOD Wood is an international chef who worked in London, Stockholm, Toronto, Vancouver, Palm Beach and Houston before moving to Fargo with wife Susie, a doctor with Sanford Health. Most recently he operated The Blue Goose Café in the Plains Art Museum.

verywhere you look, it’s beginning to look a lot like Christmas. And the good news is, it’s actually healthy to embrace this season and put our focus on holiday decorating and preparations. Hanging the mistletoe, decorating the tree, making Christmas ornaments and lighting the candles will all have a positive holiday impact on your family and friends. Holiday decorating is a healthy distraction. Your mind can take a break from politics, viruses and other stressors. Direct your focus to make your space festive where relaxation, positivity and appreciation rule. It allows you a bit of healthy control. Decorating gives you a sense of embracing your environment in an uplifting manner, creating a positive and welcoming place to be. Life and world events can, at times, feel out of our control, so take this opportunity to reclaim positivity while you sprinkle holiday cheer everywhere for you and your family. Scandinavia is a story of contrasts, a land of vast differences with sparsely populated landscapes and extreme weather. It is a large land mass that extends way north, well into the Arctic Circle, with short dramatic springs, endless summer sunlight and almost zero sunlight in winter, with temperatures well below zero. The cold winter days are so short, they may not see any daylight at all. The natural elements of forests, lakes and streams, in all their primitive glory, have shaped the mindset of its people. They embrace nature, and they adapt rather than forcing nature to adapt to them. The Scandinavian people have great respect for nature — they are humbled by its dominance. With their deep respect toward the natural world, their ability to find happiness in the everyday experience and their strong values of trust and equality, it is no coincidence that the Nordic countries consistently rate at the top of the world in happiness surveys. There is something deep, substantial and beneficial we can all learn from them. Scandinavians have a unique relationship to light and fire. Gathering together around a fire is something people have done for centuries. In Scandinavia, the tradition has never gone away — light and fire are a very important part of life. Candles are an essential part of the Nordic culture year-round, especially during the holidays, bringing warmth and light to the long, dark winter nights. Always an inspiration to artists, it is a time in which we reflect upon faith and human emotions while we marvel at ice, snow and wind. Owls are enigmatic. They are beautiful, mysterious and intriguing. Often seen as symbols of wisdom and knowledge, they are elusive and silent in flight. If you have been fortunate to experience their presence, you will never forget the moment. Inspired Home asked photographer and nature enthusiast Annie Goldade Laughlin to share her experiences photographing these amazing creatures.
IH: Who is Annie Laughlin?
AL: I grew up in Breckenridge, Minnesota, a small farming town that I love. I always had a love for animals and nature. My parents, who still reside in Breckenridge, always took us on road trips and encouraged us to be outdoors. We have a family lake home in Northern Wisconsin that I love dearly. My brother Michael lives in Minneapolis with his wife Samantha, and my sister Kristi resides in Madison, Wisconsin, with her fiancé Jeff. I graduated from high school and attended the University of North Dakota for nursing, graduating in 2013. I have been with Sanford Home Care for the last five years and enjoy it very much. In my spare weekends in the summertime, I love to sneak away to the quiet of our lake home. The fall and winter months are when my wildlife photography pursuits pick up. Every opportunity I get, I’m outdoors scouting for wildlife with my 4-year-old daughter, Charlie.

AL: My dad has been my No. 1 inspiration. He is a hobby artist as well, practicing in ceramics and painting. At a young age, he encouraged me to use his fancy Nikon to practice. I bounce ideas off of him all the time. Every time I want to go on an adventure to see and photograph wildlife, my dad will join in.

A grassland species, the short-eared owl is known for its short tufts of feathers resembling mammalian ears. Captured with Laughlin's husband this spring in a field, they passed the camera back and forth to view these amazing creatures as they were migrating. One of the smallest species of owls in North America, this saw-whet owl with a cat-like adorable face is a skilled hunter by night. This was the first time Laughlin had ever encountered a northern saw-whet owl. Difficult to find; they usually have countless branches camouflaging their protected space.

We were sitting around a campfire visiting and someone said, “Cool, there’s an owl in the tree right there!” Curiosity sparked in me at that moment as we saw this massive owl silently fly into the forest. I thought, “Wow, that is so cool.” I made it a New Year’s resolution to find one owl and try to photograph it. That fall, I was amazed by how challenging and difficult it was to actually see an owl in the wild — let alone photograph one! After many failures, one snowy evening in January, I was able to watch and photograph my first owl, a short-eared owl. I was hooked. IH: I truly believe if everyone respected the natural world, our world would be a better place. Thoughts? AL: Yes, I agree 100 percent. IH: Can you share any interesting situations you have experienced while photographing in the wild? AL: Every experience I have ever had with an owl is a good one. and how they hunt. That’s the best part about owls. They are each so cool and special. For example, the northern saw-whets are only here during the winter months. They are one of the most petite owls, and their defense mechanism is to “not” fly away. However, they are very tricky to find. On the other hand, short-eared owls can migrate in groups, so there are usually several of them. They prefer fields and grasslands, but the minute they detect a human — poof ! They are gone. My most memorable experience was in Northern
Minnesota photographing my favorite, the largest owl species in North America, the great gray owl. It was the fourth of July and this particular owl was hunting within feet of us. I couldn't believe my eyes. I wish I could relive that day. IH: What do you wish for when people see your wildlife photography? AL: My hope is that they appreciate the continued on page 42

a Norwegian Christmas tradition The list of things that make Christmas time memorable for me is endless — food traditions, Christmas morning hikes and decorating the tree with many wonky-looking snowmen I made in my third-grade art class. For me, Christmas orbits around food and my grandparents’ farm near Buxton, North Dakota. For weeks leading up to Christmas, I would daydream about my Grandma Jo’s gravy, my aunt’s kringle and getting bundled up (sometimes in my grandparents’ old snowmobile suits from the 1970s) to play in the snow until it was too dark to see. I still feel this way at age 37. The dessert tray was my favorite (and first) thing to scope out. It came in the shape of a Christmas tree and had compartments that held different confections and treats, such as iced sugar cookies, homemade fudge, peanut brittle and berlinerkranser. It was always a good mix of traditional Norwegian cookies and pretzels baked with M&Ms made to look like reindeer. One of the syv slag kakers or “seven sorts of cookies” often represented with our Norwegian Christmas desserts was fattigman or “poor man cookies.” Fattigman is a bit of a misnomer. In English, it means poor man, but the cookie made its way into Norwegian food culture at the turn of the 18th century when the ingredients would have been very expensive. Eggs, sugar, cream, cognac, cardamom and cinnamon are the key players and, to be honest, cardamom is still expensive! So, how did this name come to be? It seems the cookie title is widely

accepted as being a satirical name. Regardless of the name’s origin, for my Great-grandma Verna, they were a year-round Norwegian staple. She passed away at the age of nearly 109 years, so I am grateful for the day she introduced me to these golden fried bits of heaven. She never used cognac in hers, to my knowledge, but my 8-year-old self didn’t care. Making fattigman does take some time and planning. I recommend making the dough a day before. It needs to rest in the fridge to make rolling and frying successful. It is similar, in one sense, to making cut-out cookies in that you roll the dough out to 1/8” and will need to gently move the shapes to a pan — or in the case of fattigman, to the oil to fry. I used a fluted pastry cutter to make the shape by hand, but you can purchase a fattigman pastry cutter at any Scandinavian specialty store or online. To cut the dough with a pastry cutter, first cut strips 11/4” wide, then cut across these to make a diamond shape. It sounds harder than it is, trust me. Then make a slit in the middle of each diamond with a knife. Gently tuck two corners through the slit. Don’t worry if they don’t look perfect; I think that is the joy in making fattigman and it gives them their rustic, iconic shape. Traditions are traditions for a reason, but if you’re looking to try something new this Christmas, fattigman is worth the effort. Start a new holiday food tradition this year. From now on, your family members will scope out the dessert tray for these heavenly fried little knots for years to come.

FAT T I G M A N INGREDIENTS:
I used my hand mixer but a stand mixer with a whisk or paddle attachment will work perfectly for this step.

METHOD:
In a separate bowl whisk the cream to stiff peaks then gently fold it into the egg and sugar mixture.
Prepare the dough a day ahead. Whisk the egg yolks and sugar together until light, fluffy and pale yellow. Add the cognac or brandy, if using. Whip the heavy cream until firm and fold it into the egg/sugar mixture. Sift flour and cardamom together and mix until well incorporated. Have a little sprinkle of flour on reserve to mix in if the dough is too sticky the next day. When ready to shape and fry, heat the lard or vegetable oil in a large saucepan to 350 degrees. Roll the dough out to 1/8” on a lightly floured surface. Using a pastry cutter, cut the dough into strips 11/4” wide. Cut across the strip to make diamond shapes. Place a small slit in the middle of each diamond. Gently tuck two corners through the slit to achieve a knot shape. Once lard or oil has read 350 degrees, drop in the fattigman, a few at a time. Don’t add too many that you lower the temperature of the oil. Fry until light brown, just a couple of short minutes. Sprinkle the fattigman with a mixture of powdered sugar and cinnamon while still hot. If you are making them in advance, heat them in the oven just before serving and then sprinkle with sugar/cinnamon mixture.
Sift flour and cardamom together, which makes it easier to blend into the remaining dry ingredients.

ingredients Frying is the easy part! Have plenty of cooling racks and paper towels on hand to rid excess oil.
Mix thoroughly but avoid over working the dough. I usually mix half at a time by hand, but to speed things up, a stand or hand mixer works fine.
Roll dough into a rectangle. Cut into diamond shapes about 1 ¼ - inch wide by 3 ½ - inches long. If using a pastry cutter, cut strips first then cross diagonally. Cut a center slit in each strip.
Gently tuck two corners in the center slit. Don't worry, it is easier than it sounds. Work quickly so the dough stays cold.

Christmas Markets around the world...
aving spent some time in Stockholm, I have never seen people embrace winter as heartedly as Scandinavians, especially during the holidays when Christmas markets open throughout the region and across Europe. Christmas markets are a delight, and it takes some real grit for both the vendors and attendees to bundle up and brave the cold. But after a few mugs of German warm mulled wine, “glühwein,” the chill fades and the shopping begins. The markets are bright and cheery, with rosy cheeks on the children as they gaze starry-eyed at all the potential gifts. Christmas markets are a festive shopping experience with sleigh rides, music, dancing, and skating rinks. Then there is the food: the ever-present aroma of sausages grilling, fried potatoes lathered in melted farmers cheese plus so many sweets to choose from. One of my favorite savory dishes is the Swiss raclette, a wheel of gruyère cheese perched above a warm fire so as the cheese oozes and melts the attendant scrapes it off and slathers it across a chunk of warm bread or over freshly fried potatoes. A common thread throughout all the markets regardless of country is fried dough in various forms, sausages, and bratwurst - all with so many tempting toppings cleverly designed to not require plates - just lots of napkins.

A fantastic combination of ingredients popular in Austria and Germany is “flammkuchen,” or flame-cake is a brilliant crisp flatbread topped with crème fraîche, onion, and bacon, then baked. Not to be outdone, Hungary offers up “Langos,” a fried bread similar to Navajo flatbread topped with sour cream, garlic, and lots of shredded cheese. A must-eat Swiss Christmas market bread is the “chäsbängel.” It is a hollowed-out baguette filled with melted, gooey fondue cheese. Fried potato pancakes topped with sauerkraut or apple sauce are a popular German treat. The Christmas market in Oslo, Norway has “kjøttboller,” a pork and beef meatball seasoned with nutmeg, ginger and allspice served with cabbage or potatoes with lingonberry jam. Bergen, Norway boasts having the largest gingerbread village in the world, a miniature version of the charming city – over 2000 works. It’s quite remarkable, plus it smells delicious, but look, don’t nibble. Other sweet treats found at Christmas market are fancy marzipan creations such as the German “schneeballen,” a shortcrust pastry shaped into a ball and deep-fried filled with hazelnuts or marzipan, chocolate dipped and dusted with powdered sugar to represent a snowball. French “beignets,” or fritters are small squares deep-fried and sprinkled with powdered sugar and “poffertjes,” small puffy Dutch pancakes topped with butter and sugar – all popular holiday childhood treats. The strongest concentration of Christmas markets throughout Europe is in Germany, Austria, Holland, Latvia, Estonia and Finland. Sweden and Norway's Christmas markets are smaller, more intimate, but equally charming. They all take their markets seriously with awards given out for their overall displays which are listed in travel guides as holiday excursions. Like the successful Farmers’ Market Downtown Fargo, with easy access, skating rink and stage at Broadway Square, it would be an ideal location to have our very own European-style outdoor Christmas market. Our weather in early to mid-November through early December would be perfect timing. There is something special about outdoor markets with the smells of roasting chestnuts, all the food aromas, and warming bonfires. Based on past experiences, merchants benefit greatly from these events with exposure to potential patrons who might never have crossed their thresholds. With arts and crafts workshops, concerts, and carnival rides, it could be quite an event. We have so many talented craftsmen, artists, and merchants to show their wares, and the food could be wonderful. Our diverse culture would allow us to have a plethora of cultures to draw from: Asian, West African, Hispanic, Caribbean, and of course Nordic. What a great opportunity for the FM community to come together at such a special time of the year drawing crowds from all over the region for a true outdoor Christmas Market.

Adding essential oils, such as lavender, can help relax you. Adding eucalyptus oil can have a calming effect and blends perfectly with the pine tree scents. Peppermint oil is a great addition for this holiday season and can be refreshing and energizing. Rosemary and lemon oils can have a very cleansing and energetic effect. Whichever you choose, the great thing is that you can experiment and use different combinations of spices and oils at different times to find and enjoy your personal favorites. Here’s a simple method for oven-drying oranges, or other citrus fruits:

Add all ingredients to a large pot. Pour in 4 - 5 cups of water. Turn the heat to medium-low and bring the pot to a simmer. Turn down the heat as much as possible to maintain a small, gentle simmer. Heat 4 - 5 hours, uncovered, until the potpourri is no longer fragrant. Stir occasionally and add more water, if needed.
This is a great gifting idea! Fill your favorite potpourri in a cellophane gift bag or use jelly jars with your special recipe attached. You can package them up to five days in advance and store them in the fridge. Fresh oranges can be substituted with dried.

Lay slices on paper towels, and blot dry with another paper towel
Line a large cookie sheet with parchment paper or use a baking sheet with a wire rack. Lay orange slices in a single layer on top of parchment paper or wire rack. Bake for 2 hours, turning oranges over halfway through bake time. Now bake in 15-minute increments until the orange slices are dry. Let cool completely. (Air dry for 24 hours.) Stores well in a cool, dark place for up to two years in a plastic bag or air-tight jar. HINT: Use for potpourri gift bags, drink garnish, cake decorations and seasonal wreaths or string them together for a colorful and fragrant holiday garland. Delicious to eat, too – dip half in chocolate as a sweet treat!

his homeowner lives life large, to the brim and full speed ahead – only stopping to refuel with her dainty demitasse cup of espresso in her hand. Meet Ashley Johnson. Ashley Johnson, her husband Brett and children Aidry and Vita are no strangers to memories evoked from the five homes they have lived in through the years. The homes represent a sum total of life that allowed them new opportunities and vantage points that would forever follow them with fond memories. Johnson adds,” We have built two new homes, one when we were first married in Fargo, and another in Edmond, Oklahoma where we had initially rented a 1,000 square foot bungalow. Truthfully, it left a lot to be desired. I reflect on this now with my husband, and we can honestly say that home really is where your family is also. That rental home felt just as special and cozy to us as any other.” The family’s return home to Fargo in June of 2016 brought their fourth home purchase in North Fargo. Living in the quaint rambler their family grew to add two new family members, their adopted cats, Wellington and Fancy. Happy and content, time marched on for the family. Johnson did not realize there would be a fifth and final home in her family’s future. Living in their rambler, they now lived even closer to a New England slate blue 3 story colonial – the home of her childhood dreams. Johnson explains, “I had loved it ever since I was a little girl. I grew up just a couple of blocks from it and I would comment I wanted to live there one day. It reminded me of my uncle’s home in North Andover, Massachusetts where we visited. I have always loved the historic east coast, it’s warmth and architecture. I wondered what Christmas mornings would feel like with all that natural light flooding through windows. It exuded a palpable warm holiday feel year-round.” Life went along as it tends to do until an unexpected phone call that changed the track of their lives forever. While in Minneapolis for a sorority sisters’ girl’s weekend, Johnson’s cell phone rang early Saturday morning while still asleep. The voice on the other end was her husband’s. His message was short and sweet, “It’s for sale.” “I knew instantly what he meant. I screamed. My friend Tiffany packed up her suitcase to head back to Fargo with me, while another girlfriend, a realtor there, started making calls to the listing broker. We drove straight from Minneapolis to Fargo for a private showing. My husband met me at the home and we made an offer on the spot.” In true form, Johnson wrote a letter to the home owners explaining her lifelong love of the

house hoping it would give them an edge on the competition. And the rest is the Johnson family’s fifth home history. According to renderings found, the home was designed by History House Planners, Inc. to replicate the design of traditional colonial homes of the east coast and built in1983. The home’s exterior is a welcoming sight as you approach. A warm yellow door, double sash windows, tidy landscaping and mature trees all elicit comfort. Backyard charm is created with moss- covered footstones, and garden bench. A white picket fence surrounds the backyard with an arbor and trellis that lead to the Englishstyle garden, an anniversary gift created for the original home owner’s wife. “The previous owners get all the credit for that. It was just done so well,” adds Johnson. Notably,” Johnson laughs, “the home is completely symmetrical, which works well with my Type A personality. She also loves the simplicity and design elements of the home. “I love to cook and entertain so I love that there is a formal dining room, and a separate breakfast nook. I also appreciate our tea room in the formal sitting room which receives lovely light in the morning.” Family is the most important thing to Johnson so she appreciates the ample space to host large groups. “There are multiple living and dining spaces for guests so it is completely manageable.” Dayto-day living is also efficient and comfortable for the family. The roof is pitched which allows for a third story finished attic space which they utilize as a guest room that sleeps four. Charming window seats and

French doors that open to a multipurpose family room where our kids spend a large part of the day make it a great asset. She adds, “My husband works from home so he can have a quiet home office on the second floor, while our children have friends over – we are really able to spread out here.” During the holidays the residence takes on a new charm. Johnson explains, “I host every year and it is magical. The previous homeowners were gracious enough to leave us 32 candles that they had placed in every window sill at Christmas time. We now continue that Scandinavian tradition. A window sill candle is a sign of “welcome” dating back hundreds of years indicating that inside was food, shelter and warmth for any passersby that needed help. This symbol of warm welcome and inclusion is very special to me and my family. Our home is one of inclusivity and acceptance. Leaving us those candles was a most lovely gesture.” Johnson creates a warm holiday décor glow with lighting and soft neutral tones of golds, ivory and soft pinks. Fresh is a must – fresh flowers, spruce trees, plants, wreaths and candles. “I love our traditional tree with no trendy themes. Our big tree is a living time capsule. Growing up we had a traditional live tree with ornaments through the years and that was our family tradition that I wanted to continue in my own home. Our tree and home are filled with items passed down from grandparents, and great-grand parents. Ornaments from family trips to Norway, New York City, Mexico and Chicago, are also present and Johnsons adds, “with hopefully more to come.” From Popsicle stick ornaments made in pre-school to ornaments from their wedding, all make an important yearly sentimental appearance. 70 | Winter 2023
Family get togethers are an important event at the Johnson home and the more the merrier. With multiple rooms for people to gather, converse and enjoy a meal, entertaining is simplified.
The third story boasts of charm and warmth with its window seats and ample room for entertaining house guests overnight. This multi-purpose floor includes multiple sleeping quarters, game and TV room. Perfect for birthday party sleep-overs!

For California Cabernets, Napa is known to be king. Paso Robles in my opinion, without a doubt is queen, and this wine is a perfect example. Daou is a family business, founded by two Lebanese immigrant brothers on pursuit of the American Dream. Starting out strong with notes of cherry, plum, and tart raspberries, this wine is incredibly smooth, with a long-structured finish. Whether it is served to guests or given as a gift, it is a perfect choice for all your Cabernet lovers this holiday season.
