Welcome to the Inspired Home Winter Issue!

Although I have not yet noticed one snowflake, winter will surely arrive after chasing the tails of our most perfect fall season. Flurries will inevitably announce their arrival soon and frost our landscape for the anticipated winter holiday season. I love winter, especially when a blizzard “powers us down” and we are at the mercy of Mother Nature.

My family’s favorite Christmas took place during a blizzard. We couldn’t travel out of town; we hunkered down. I had nothing to serve as a Christmas dinner and grocery stores were closed. The brave men in our family left on a dangerous quest to find food while the women set out on foot for a peaceful, silent hike in the snowy Red River woods. We arrived home after our hike and were greeted with a delicious “goat” stew already prepared. Thank goodness for The Asian-American market! Sometimes, a lot of careful planning can go sideways!

If you have been reading Inspired Home over the years, you’ll know we love sharing new ideas, from holiday décor to entertaining our family and friends. In this issue, you will learn how decorating our homes fosters our well-being, it is good for your soul. The simple act of opening our favorite tree ornaments that have been in storage creates a calming reflection. Enjoy reading “Deck the Halls A Holiday Rx,” to learn more. We have so much to share about loving our homes and living well. There is no better time than the holidays to take inventory of our blessings. Preparation, decorating and scurrying around shopping for the perfect gift are important. But it is also time to reflect on those who don’t experience the security of a peaceful, silent night. This is a year to hope and pray for peace across the vastness of this Earth we share.

Wood is an international chef who worked in London, Stockholm, Toronto, Vancouver, Palm Beach and Houston before moving to Fargo with wife Susie, a doctor with Sanford Health. Most recently he operated The Blue Goose Café in the Plains Art Museum.

Embracing sustainable Scandinavian-like holiday decor is all about simplicity, natural elements, and a neutral palette. This creative and minimalist approach focuses on clean lines, earthy materials like wood and greenery, and soft, muted colors to create a cozy yet elegant atmosphere.

From minimalist Christmas trees with simple ornaments to thoughtful centerpieces and sustainable decor, the design celebrates the beauty of less while still feeling festive. One key aspect is incorporating natural elements such as pine branches, eucalyptus, and candles, which add warmth and charm without overwhelming the space. IH: Describe the design style used for your holiday decorating.

KW: I usually lean toward a traditional style with a vintage/antique touch. Decorating for the holidays feels like a cozy ritual, layering textures and adding earthy touches that reflect the warmth of the season.

IH: What is important to you in terms of your personal style?

KW: I’m a homebody. I need to make our home feel cozy - especially during the Holidays. I find so much joy in creating a safe haven for me and my family to relax in.

IH: How were your design elements sourced?

KW: Most of my decor items are found at thrift stores, vintage shops, or the marketplace. I find the most inspiration in second-hand pieces because they bring a new sense of life to our home.

IH: What was important to you as you planned your design?

KW: Functionality! I always try to find decor that looks good and also serves a purpose. We have a smaller home, so storage becomes an issue. Having pieces that can be used and are functional is a must!

hen we think gold, “subtle” may not be the first word that comes to mind — perhaps glamourous, sophisticated, or even a bit gaudy. Now, however, metallic gold is showing up in understated and not-so-understated ways in décor adding sophistication and elegance.

Metals have a long history in interior decoration. Since ancient times, civilizations, such as the Egyptians and Romans, have used precious metals to adorn palaces and temples. At that time, metals were a symbol of power and wealth. Today, interior designers continue to explore the potential of metallics, taking advantage of their versatility and timeless beauty. Whether through the soft shine of copper or the splendor of gold, metallics can elevate any space, making it unique and memorable. These finishes are valued for their durability, ability to reflect light and add depth. In décor, they can have a positive psychological impact. Areas decorated with metallic elements tend to be perceived as sophisticated. Their reflective nature can also create a sense of spaciousness and light in a room, enhancing the overall mood

and contributing to our well-being. Metallics are incredibly versatile. They play an important role in many design styles from modern and maximalist to traditional and contemporary styles. Scandinavian styles that value simplicity and functionality are complemented by small metallic details for contrast. Clean lines, geometric shapes and polished finishes are characteristics of these styles, and mixed metals such as stainless steel, chrome and nickel combine perfectly with them all. The key to using metallics effectively is balance. A harmonious combination of different metals can create a cohesive and visually exciting room and their ability to adapt to different design styles makes them a great choice in your interior design. Metallic gold tones, which fall on the warm side of the color wheel, easily mix with most color palettes. They work especially well when set against deep-tone backdrops or when partnered with saturated sunset hues, rich jewel tones and shadowy neutrals that allow their sparkle to shine. Think of golden silk pillows popping off a ruby red bedspread or gold metal shelves advancing into view when placed against terra cotta walls.

Look across the color wheel for contrasting blue-tone hues that you can use to enhance metallic gold’s presence in your color scheme. On the cool side of the color wheel, you’ll also find rich jewel tones, including turquoise, emerald green, cobalt and sapphire blues, that make lush companions for gold. Although considered a fine metal, gold is simply an organic material mined from the Earth and is a good choice for brightening neutral, nature-inspired rooms. Pair metallic gold with warm, deep-tone neutrals, such as charcoal or slate gray, chocolate brown, rich olive green and dark tan or beige. When working with whites, use a warmer shade. A Perfect Place

Setting the table means more than just another task. The way we set our table not only reflects our culture, but also fosters the way we interact with each other at mealtimes and, ultimately, influences how we receive our food.

Cultures around the world set their tables in distinctive ways. Ever since humans first came into being, the sharing of food over a communal table has been a part of our shared story — the

A Christmas Remembered

EDITOR’S NOTE

We ran this heart warming, true story five years ago. I felt its charm and message of charity was very appropriate to be read and cherished again for our Holiday issue.

Happy Holidays!

Several years ago, my husband and I were preparing our traditional Christmas Eve meal. The table was set beautifully with Christmas dishes, my finest sterling silverware and an arrangement of flowers in an antique gold vase. It was quiet. We both were feeling a sense of loneliness this holiday. Our three teenage daughters were not with us for the first time; friends had invited them to spend Christmas vacation in Florida.

My husband and I were about to sit down to eat when our business line rang. We owned a transmission repair business, and with the minus-38-degree weather that night, my husband decided to answer the phone.

A young man was calling from a truck stop in Moorhead and explained

that he and his family were en route from Minneapolis to Hallock, Minnesota, to spend Christmas with relatives. The bitter cold was causing transmission problems with his car.

I listened intently to the conversation and heard my husband tell the traveler he would send a tow truck to pick up his car and we would bring his family to our home in our station wagon.

The young family needed a ride to Hallock. I had been thinking about the situation for a few moments when I remembered a previous conversation with another young man. Earlier that day, I had been Christmas shopping at a local electronics store in the mall where I met a friendly salesperson. I recalled he mentioned his hometown of Hallock.

Determined, I decided to call him at work. He came to the phone, and I explained the situation at hand. I simply asked, “Are you going home for Christmas?” He replied without hesitation, “I haven’t been home for Christmas in six years, but I guess I could surprise my parents. I get off work in 20 minutes. I have to fill up my car with gas. I need directions to your house.”

I hurriedly packed blankets and food for their cold winter’s night journey. We drove to the truck stop where we unloaded the young family and wrapped mother and child in warm blankets. We transferred their suitcases and presents into our station wagon.

When we arrived home, we drove into

our heated garage. Just a few minutes later, like a Christmas miracle, the young electronics salesperson, still donning the Santa hat he had worn earlier that day at work, pulled up in a vintage red Cadillac Eldorado. We motioned to him to drive into the warm garage alongside our station wagon. Immediately, the two young men recognized each other. They had gone to high school together in Hallock.

Together they began loading presents and luggage into the red Cadillac’s trunk. The mother and their sleeping 2-year-old child were tucked warmly in the backseat with blankets when the little one woke up and sleepily asked, “How is Santa Claus ever going to find me?” The mother softly replied, “Santa has already found you. It is so cold this evening that Santa Claus himself is driving you to grandpa and grandma’s house tonight.”

I looked at my watch. In less than an hour from the time the young father called for help, they were on their way north.

As I reheated the oyster stew for our Christmas Eve dinner, I prayed: “Thank you, God, for our meal we are about to receive. Thank you for our new friends and guide them safely north to their families. Thank you for this unusual Christmas Eve that you provided us—one we both thought would be lonely. Thank you for reminding us that a simple act of kindness can create a cherished memory.

A Nordic Holiday Tradition...

...worth a delicious try

The word glögg is spoken by the Swedish and Icelanders, gløgg by Norwegians and Danes, and glögg by the Finnish and Estonians. No matter how it’s pronounced or spelled, this Nordic mulled holiday drink has been warming souls since the early 1600s. Traditionally, spices were added to the poor-tasting wines of the time to enhance the flavor. As the wines improved over time, the warm-spiced Gløgg remained popular, eventually becoming a traditional Christmas beverage.

Commonly used spices in gløgg are cloves, cinnamon, cardamom and ginger. Other flavorful ingredients include citrus peel from oranges and lemons, almonds and even raisons. Many recipes call for a red wine base with the addition of port, sherry, vodka, akvavit or brandy. Purchasing a high-end red wine is not necessary for this liquid treat, as the spices, fruit and nuts will take flavor command over this unique holiday beverage.

At Christmas in Sweden, gingerbread and lussebullar (also called lussekatter), a type of sweet bun with saffron and raisins, are typically offered. It is traditionally served at Julbord, translated literally to the “Christmas table,” the traditional Scandinavian Christmas buffet.

In Denmark, gløgg holiday pairings typically include æbleskiver (Danish pancakes) sprinkled with powdered sugar and accompanied by strawberry marmalade. In Norway, gløgg is paired with its popular holiday treat, rice pudding or riskrem. Perfect for a gathering this holiday season, serve a warm cup of gløgg with cookies, small sandwiches, hors d’oeuvres or other nibbles. Dating back to the 1600s, this warm-spiced Christmas drink is still enjoyed today during the holidays. In Scandinavian countries, outdoor markets traditionally draw revelers during the holidays for food, social interaction, and gløgg. Try it for yourself this Christmas and fill your home with its wonderful soothing fragrance.

Another Scandinavian classic enjoyed with gløgg is riskrem. This Norwegian dessert, similar to rice pudding, is flavored with cinnamon, vanilla and raisins and served chilled.

SPICED ORANGE GLØGG

(non-alcoholic option listed below)

INGREDIENTS:

2 cups orange juice

¼ cup firmly packed brown sugar

1 tsp. slightly crushed cardamom seeds

CLASSIC GLØGG

INGREDIENTS:

½ cup raisins

1 cup akevitt (or brandy or vodka)

1 cup water

½ cup sugar

2 cinnamon sticks, broken in half

4 whole cloves

6 whole cardamom seeds, crushed

Peel of 1 orange, thinly shaved

1 small piece ginger, peeled and cut in half

2 cups burgundy or pinot noir wine

2 cups port wine

Blanched almonds

METHOD:

Soak raisins in akevitt (or brandy or vodka) for 30 minutes.

Put a large pot on the stove over high heat. Add water and sugar to the pot and stir with a wooden spoon until the sugar is completely dissolved.

Lower the heat to medium and add cinnamon, cloves, cardamom seeds, orange peel and ginger. Stir again with wooden spoon. Do not allow the mix to come to a boil from this point on.

Add the akevitt-raisin mixture, burgundy or pinot noir wine and port wine.

Sweeten and spice to taste. Strain, garnish with raisins and slices of blanched almond and serve hot off the stove.

Note: The drink can be made a day ahead and kept covered, on the stove, at room temperature. Reheat before serving.

1 28-ounce bottle white table wine, Reisling or Rhine (or 4 cups white grape juice)

METHOD:

In a non-aluminum saucepan, combine the orange juice, brown sugar, cardamom and ginger. Heat slowly to a boil. Add wine (or grape juice).

Serves six to eight.

A said favorite of the Vikings during their long voyages, ebelskivers are delicious, pancake-like, fluffy treats that are often enjoyed with a cup of hot gløgg at Christmas. Filled with sweet or savory fillings, they are also enjoyed with syrup, dusted with powdered sugar, or dipped in chocolate or jams.

It is hard to believe I am saying this already, but tis’ the season for another special edition of Inspired Home Holiday Pets.  While we have touched on this subject in the past, it is important to emphasize that the holidays can be stressful not just for humans, but for the furry counterparts that live in the home as well. While it is easy to be distracted by baking cookies, wrapping presents and being jolly all day long, pausing for a moment to make sure your home is pet-proof for the holidays can prevent unnecessary injury or additional stress this time of year.

We spoke with Dr. Amy Anderson, veterinarian at the West Fargo Animal Hospital for some helpful hints on what we can be done to better help our family pets get through the holidays. Preemptive planning can help reduce the amount of

unexpected holiday tension for both you and your pets. Anticipating obstacles you may need to hurdle will help you achieve a smoother transition into one of the busiest times of the year.

For many families, Christmas trees are abundant this time of year. Perhaps you have one upstairs in the living area, and a second one down in the family room. Unless you have your eye on that tree 24/7, there is a good chance you may have a pet that enjoys batting around the ornaments or scaling that tannenbaum from trunk to tree topper.

Dr. Anderson says that a live Christmas tree can be a very enticing plaything for most cats. The smell and texture of a fresh pine alone are enough to tempt the most disciplined of felines. “Use inexpensive, unbreakable ornaments. Do not use tinsel or other

thin garland-like material to decorate the tree — cats can ingest these materials and develop severe intestinal obstructions that are often only treated with surgery.” She also suggests leaving the bottom third of the tree undecorated to remove the temptation of “low-hanging fruit.”

Whether your tree is artificial or live, make sure that the tree is well anchored so it doesn’t tip over, or try using a smaller tree that can be placed on a table and out of reach.  While dogs tend to be better at ignoring the tree, Dr. Anderson recommends using

a gate or a small fence to detract from any temptation. In either scenario, it’s important to supervise your pets around potentially harmful decorations.

She also says be wary of kitsch holiday pet stocking stuffers like green and red rawhide candy canes. This is one of the most popular offenders. “The white, bleached rawhide that is often found in cheap Christmas toys can be very difficult to digest and, if large chunks are ingested, could even cause a bowel obstruction. Also, I would stay away from the bones with pretty red and green dyes.

Dogs with food allergies are often allergic to dyes, so these bones could be a problem for that reason.”

Instead, she suggests, give your pet the treat he or she loves best. It’s okay to stick to the oldies but goodies to assure that your pet doesn’t have an adverse reaction to a new treat this holiday season.

Whether you have a cat, a dog or both, take a long “paws” and think about what you can do to protect your pet this holiday season. By doing so, you will ensure your future will be merry and bright.

Board? Let’s get creative…

Ilove the holiday season, gathering with friends and family, and the angst of shopping for just the right gift. At the end of the day, it is all about the food and wine. Whether it is a casual after-work get-together, a quiet evening with family before the main event or a full-on neighborhood bash, food becomes the centerpiece, along with choice wines and

perhaps a signature cocktail.

It’s the holidays, so let’s make it fun and tasty. Cheese and charcuterie have been staple party fare for years, for good reason. They give guests a range of flavors and textures to choose from. The host gets to prepare the board before guests arrive, which allows them to join the festivities instead of working in the kitchen.

A great holiday charcuterie board is a centerpiece that combines salty, sweet, crunchy, and creamy flavors with a variety of textures, colors, and shapes.

With numerous opportunities, the host can take advantage of excellent items in a market to round out their boards, such as hummus and various accouterments like pickles, seasoned nuts and spicy jellies. Thanks to Luna Market in Brewhalla on First Street North for their excellent variety of American and European cheeses and aged hard sausages. They can be the centerpiece for your tasty masterpiece. Garnish with condiments like mustards, cornichons and pickles, and freshly

baked baguettes. You’ll be on your way to creating a classic showstopping cheeseboard! Highlight cheese flavor differences from a Bent River Camembert style cheese from Mankato, Minnesota, and a classic French Camembert de Normandie to goat’s milk California Humboldt Fog and Toma di Capra goat’s cheese from Italy. The options are endless. Consider cow’s milk, sheep’s milk, goat’s milk. Rinds vary from savory, rindwashed, mild and sweet to nutty dry rind.

Venture into the world of blue cheeses — Gorgonzola, Stilton, Maytag Blue and hard cheeses like Manchego and Parmesan. A board should balance flavors and textures: soft, hard, medium, mild and strong. Consider Brie, Manchego, Gouda and Stilton. The “board” can be almost anything clean and food-worthy. Use a beautiful piece of marble or granite, a cutting board, or an interesting piece of smooth, aged wood. Maybe a basket lined with linens. Keep it interesting and fun.

Cheese fondue with ragged pieces of torn Italian bread for dipping – perfection. Pair cheese with apples, fresh-cut vegetables, or baby-boiled potatoes for a royal treat.

With the cheeses, incorporate slices of hard salami or soppressata, prosciutto, fresh fruits, deviled eggs with caviar, smoked fish, radishes, dried apricots, nuts and berries. I like using savory relishes like shallot cranberry relish, hot pepper jelly, crostini, fancy crackers or breadsticks. Pre-slice some cheeses and meats and leave a chunk of each on the board. My favorite addition to a bright and cheery board is cheese fondue with ragged pieces of torn Italian bread for dipping that gooey cheese

around, then paired with small, boiled potatoes and fresh-cut vegetables. You can expand your boards, giving them a Mediterranean feel by incorporating feta cheese, red pepper hummus, olives, spicy yogurt dip, pickled artichokes, imported tinned tuna and pita bread. There are no specific rules; let your imagination run free. If you want to put a stamp on your entertaining prowess, bring out a chocolate board at the evening’s end. Chocolate truffles, chocolate bark, chocolate mousse cups,

chocolate-dipped strawberries and potato chips for a shot of salty and sweetness.

Select an array of wines: A well-chilled Sauvignon Blanc from New Zealand, a mediumbodied Pinot Noir, which can also have a light chill, and a full-bodied Cabernet. Your favorite wine merchant can direct you to some good choices. Cheese, like wine, is a product of its “terroir,” the natural environment in which it is produced. This will help you in your choices. Enjoy your holidays!

Celebrate with Scandinavian Almond Cake

I didn’t realize then how a cake would play such a big role in my adult life so many years later.

For years, I remember seeing a 3 by 5 inch recipe card bordered in rosmål taped inside my mom’s kitchen cupboard — the one where she kept her holiday china and sometimes a stashed bar of chocolate. The recipe was for Scandinavian Almond Cake. I didn’t realize then how that cake would play such a big role in my adult life so many years later.

I started making this classic Scandinavian cake after moving from Fargo to New York State in 2013. I wanted to bring a little piece of North Dakota with me to Upstate New York. I would make it and bring it everywhere — to work, dinner parties, picnics and holiday parties. Most, if not all, Dakotans and Minnesotans would recognize this cake by its traditional shape, but in New York, it was a novel dessert. I started selling it at our local farmer’s market and it was always a best seller behind the hard-to-beat Swedish Kringle. I described Scandinavian Almond Cake to my customers as being similar to a pound cake. It is sponge-like, dense with flavor, yet light in texture, and it is quicker and easier to make than a pound cake.

Best of all, this cake is foolproof. It is the most flavorful,

moist and impressive cake — and you can make it in three minutes. Really! That’s all it takes. It’s a one-bowl, dump-in-all-the-ingredients, stir-and-bake cake. There are no tricks or special tips for making this cake. Simply follow the directions and, within 40 minutes, you’ll have the most tempting dessert. It is baked in a traditional rectangular pan with ridges, which makes a pretty cake, and perfect for slicing. Besides being a great cake to bring to a gathering, the pan itself makes a great gift. It comes with the recipe, is quite affordable and beautiful rosmåled serving trays are also available. They can be found online or at any specialty Scandinavian store, like Fargo’s own Stabo Scandinavian Imports. I enjoy gifting them to my non-Midwest friends.

In Norway, this cake is served at Christmas time and on Constitution Day, Syttende Mai. But the truth is, this cake is wonderful all year-round. It makes a great summer cake garnished with whipped cream and fresh berries and a perfect autumn dessert with a dusting of powdered sugar. I served one at my baby shower topped with toasted almonds. I prefer this cake without a lot of bells or whistles, but the ways to dress it up are endless.

Despite making this recipe many times over the years, I now have my almond cake recipe card taped to my cupboard just as my mom did. I can recite the recipe forward and backward and upside down but there is something comforting about having it right there on the kitchen cupboard as it has always been.

TRADITIONAL SCANDINAVIAN ALMOND CAKE

This is easy to make and makes a beautiful presentation on your holiday table!

INGREDIENTS:

1¼ cup sugar

1 egg

1½ tsp. almond extract

2/3 cup milk

1¼ cup all-purpose flour

½ tsp. baking powder

1 stick butter, melted

METHOD:

Preheat oven to 350 degrees. Mix all ingredients well. Spray the pan generously with non-stick baking spray. Pour batter into pan. Bake for 40-50 minutes or until edges are golden brown and a toothpick inserted comes out clean. Cool in pan before removing. The cake will break if removed too soon. Sprinkle with confectioners’ sugar. Enjoy!

VARIATIONS:

Before putting the batter into the pan, sprinkle sliced almonds on the bottom or, after baking, top with fresh fruit and whipped cream.

The traditional cake pan, which includes the recipe coupled with the cheery serving tray, makes a great holiday gift. Although this is a traditional cake served in Scandinavia at Christmas, it is a great dessert to enjoy all year. Garnish with whipped cream and berries, top with toasted almonds, or simply sprinkle with powdered sugar. The ways to dress this cake up are endless.

Rooted in daily life, Japanese sado, the preparation and presentation of tea is a comprehensive cultural and art activity combining daily behaviors, religion, philosophy, ethics and aesthetics. In India, chai has deep cultural roots, serving as a symbol of hospitality, warmth and a shared moment of friendship. It is often enjoyed by guests, and the act of preparing and serving chai is considered an important part of Indian hospitality.

Apart from its delightful taste and cultural importance, chai is believed to offer several potential health benefits. The spices commonly used in chai, such as ginger, cardamom, and cinnamon, have been associated with possible anti-inflammatory and antioxidant properties. The caffeine content in chai can help increase focus and energy, while also improving mental alertness. Chai has also been shown to aid digestion and reduce bloating, making it a great choice after a heavy meal.

In winter, with a cup in hand, the warmth emanating from the chai offers solace and comfort, inviting a moment of respite from our bustling world. The tactile connection to the cup, whether earthenware or delicate porcelain, deepens the bond with this centuries-old tradition.

CHAI TEA

Enjoy sipping this tea with all its comforting warm spice flavors. A perfect choice for our cold winters!

INGREDIENTS:

8 cardamom seeds

8 cloves

4 black peppercorns

2 cinnamon sticks

1 1-inch piece fresh ginger, sliced

2 cups whole milk

4 bags of black tea (such as Darjeeling)

8 teaspoons sugar or more, to taste

METHOD:

Step 1

Place the cardamom, cloves, and peppercorns in a sealable plastic bag and crush with a heavy skillet.

Step 2

Place the crushed spices in a medium saucepan, along with the cinnamon sticks, ginger, milk and 2 cups water; bring to a boil. Remove from heat, add the tea bags, cover and let steep for 10 minutes.

Make extra and package this chai tea recipe. It makes a great holiday gift that will be truly appreciated!

What is cardamom?

Native to Sri Lanka, India and Guatemala, cardamom is a spice from the seed pods of the cardamom plant and a close relative to ginger and turmeric. The triangle-shaped pods are made up of spindle-shaped clusters of seeds with a thin outer shell that can be enjoyed both whole or ground. The spice is frequently used in both sweet and savory dishes in global cuisines often in India and widely in Scandinavia. Its complex flavor is slightly sweet, piney, peppery and floral with hints of citrus and a menthol note.
