recently moved back home to Fargo with her husband and daughter after living in Upstate New York for 8 years where she worked at Cornell University as a research technician. There she worked with hemp for CBD/grain/fiber and willow for bioenergy. After having a baby she took some time off to be a mom. She loves knitting, running, cross-stitch, and of course, Scandinavian baking.

A career in the interior design world, along with a genuine interest in connection, led Sarah here to Inspired Home Magazine. She loves date nights (or days) with her fiancé, nature photography (iphone style), walks with her dog, kissing on her rescue kitties, listening to podcasts, reading, yoga, antiquing, getting lost in a good television show, and enjoying a citrusy IPA or glass of wine.

Wood is an international chef who worked in London, Stockholm, Toronto, Vancouver, Palm Beach and Houston before moving to Fargo with wife Susie, a doctor with Sanford Health. Most recently he operated The Blue Goose Café in the Plains Art Museum.

The hauntingly beautiful Nordic island called Iceland was first settled by Viking explorers in 874. In the middle of the North Atlantic Ocean, just south of the Arctic Circle, between 63.4°N and 66.5°N latitude, this land of extreme scientific contrasts and dramatic landscapes stretches over an area of 39.997 square miles, slightly smaller than the state of Kentucky. Iceland measures approximately 305 miles east to west and 185 miles

north to south.

With a much milder climate than you might expect from its global location, Iceland receives the tailend of the Gulf Stream that brings warmer seas to the south and west coasts, moderating the climate significantly. When that milder Atlantic air meets Arctic air, frequent weather changes and strong storms can occur abruptly. The northern region experiences colder

Wallace’s favorite hiking trails began and ended where this picture was taken, on the Skóga River canyon. The Skógafoss, south of this location, is Iceland’s largest waterfall and is fed by two glaciers.

Discovered by sheep herders in 2016, Stuðlagil Canyon in the Jökuldalur Glacier Valley is home to this geological gorge lined with basalt columns. As volcanic magma cooled, hardened and shrunk, it cracked into iconic geometric shapes.

winter months and warmer summers than the south. Reykjavik, the capital and largest city, is located in southwestern Iceland, with average temperatures of 39.2˚F in January to 54.5˚F in June. A sparsely populated country of nearly 380,000, roughly 180,000 call Reykjavik home.

Iceland, “The Land of Fire and Ice,” was formed from volcanic eruptions and is one of the youngest landmasses on the planet, with rocks dating back from 14 to 16 million

years ago. This geological island is home to some of the largest glaciers in Europe and some of the world’s most active volcanoes on Earth, 200 to be exact. Scientists know 32 remain active, erupting every four years on average. The island owes its existence to a unique geological position on top of a volcanic hotspot with a magma plume underneath the Mid-Atlantic Ocean Ridge, where two tectonic plates, Eurasia and North America, are slowly

shifting and spreading apart. The landmass is continuously growing in the middle by about 2 cm per year, but interestingly, Iceland is not growing in size because the edges of the land mass are constantly being eroded at a similar rate each year.

THE TRIP

Inspired Home asked architectural photographer, Kinsey Wallace, Realtor at Red Leaf Custom Homes and Inspired Home staff photographer to share her experiences about her recent travel to Iceland. Using her extraordinary photos, this is her story.

The summer of August 2023 brought unforgettable adventure to Realtor and architectural photographer Kinsey Wallace. A spontaneous trip encouraged by her uncle landed Wallace, her sister and two of her uncle’s friends in Reykjavik, Iceland. Renting a van to travel the island was the beginning of experiencing a country that she could not have imagined.

“It was nothing like what I had expected,” she says. “It was an “out of this world” feeling when we first arrived. It was mostly black basalt rock within my view, a direct result of volcanic activity.” In the sparsely populated country, sights of life and greenery became noticeable as they started traveling beyond the city.

The Jökulsárlón glacier lagoon created by melted glacial water, continues to grow as ice blocks crumble from Iceland’s Vatnajökulin, Europe’s largest glacier. Seals swimming was a common site.

Near Rangárþing eystra, Southern Iceland, Wallace’s sister prepared their first evening meal. Camping was a good choice for the traveling and hiking schedule. Reykjavik

The geothermal field in Hverir is impressive with its surreal lunar-like landscape. Bubbling mud pools and steam vents release heat and hydrogen sulfide from deep within the earth. Colorful mineral deposits cover the surface.

Icelandic sheep were brought with Norwegian settlers in the 9th and 10th centuries. Most roam freely in the summertime throughout the island and are common sites on grasslands.

Located in Skaftafell National Park, Svartifoss, or “Black Falls” tumbles down 80 feet over a cliff of dramatic hexagonal basalt columns that surround its crescent shape. Fed by the Svinafellsjökull glacier, it is one of over 10,000 waterfalls in Iceland.

The untouched and remote beauty of the island became increasingly apparent to Wallace. “There were so many euphoric moments, volcanic rock, waterfalls, black sandy beaches, glaciers, geothermal fields and heavily wooded forests,” Wallace says. “I was in awe of the geothermal field because it looked as if we were on another planet.” Iceland, known for having the most volcanic activity in the world, was something Wallace wanted to experience most of all, but the closest volcano to them was actively releasing heat but no lava with it.

Waterfalls are abundant in Iceland, with more than 10,000. The third highest at 420 feet is the Hengifoss Falls, one of Wallace’s favorites. The strata of red and black layers, 5 to 6 million years old, define the rock surrounding the majestic falls. Created by years of volcanic episodes of lava hardening between layers of dirt rich in clay and iron, the result is stunning.

Wallace was impressed with the people of Iceland. They are innate storytellers, humble

Coined as the “safest country in the world,” Wallace adds, “they do not have an army, air force or navy. They have a Coast Guard and a small peacekeeping force of police that do not carry guns.”

The Icelandic diet is a healthy one. “It’s one of the healthiest in the world, very wholesome ingredients. They are the only country in the world that doesn’t have a McDonald’s. They eat a lot of fish and lamb. One Icelandic staple meal we ate was lamb soup, and it was delicious.”

Looking back, Wallace, an outdoor enthusiast, relished her time hiking across Iceland’s unforgettable landscape traveling the country in a van that gave them great access to its mystery and raw beauty. TWO FARM GIRLS

For sisters and owners of A + A Home Designs, Amanda Fisher and Alicia Holubok, life began in rural North Dakota, south of Wahpeton near their family farm. Fisher, while attending NDSU became interested, pursued and received an Ag Economics degree with hopes of going back to the family farm operation. Holubok, who had always had a natural interest in interior design attended and graduated from NDSU with her degree. As life would soon have it, circumstances eventually brought them both back home to the family farm. Both married and raised families of their own, and their husbands both interested in agriculture, chose to be a part of the family farm operation.

The sisters, channeling their mutual passions chose an eventful path as the impetus to start their own business. Fisher explains, “In 2019 we relocated our family farm requiring a new location with a new shop building and office. For as long as I can remember, I’ve loved floor plans, architecture and laying out designs so Alicia and I took on the task of designing our new office space and shop. We drew up the floor plans and made an interior design plan. It was fun!”

THE BEGINNING OF A BUSINESS

The two realized doing similar projects could become a rewarding career. “I took it to the next level and wanted to learn more about residential house design so I took some courses at NDSCS in their Architectural Drafting program and learned the basics of designing a home,” Fisher explains. In addition to understanding how to design a home, both designers knew they wanted cabinetry design as a part of their new business. “After sifting through different options, we landed on Crystal Cabinets. Their company values and high quality are what drew us in and we couldn’t be happier with their product.” Their first few projects were for close friends and family which helped build their portfolio. After working part-time, they began getting referrals and getting busier. In 2017, they started their own business, A + A Home Designs focusing on cabinetry design, interior design and custom house planning. “If you had told me 10 years ago that I would be doing this I would have laughed and said, “Funny, yeah right,” Fisher quips. “So here we are today. We have built a solid portfolio and we are still having fun!

DYNAMIC DUO

The unique differences of the sisters like in any family, bring creative and equally valuable contributions to each project. One thing Fisher wants to note is that the two sisters are different. “We look a lot alike but we don’t always agree. I think that’s what makes our designs so great because we go back and forth with each other until the design is just right.” Holubok agrees, “I usually take on the interior details and the cabinetry while she focuses on the custom home plans. We rely on each other for the initial designs but once we reach a point where we both agree, we work on things separately to get things done.”

A genuine love of interior design is a key element in Holubok’s contributions. She explains, “My favorite part is getting to create different design styles. Some styles can direct how you should feel almost like background music in a movie but with residential design the end goal is clear and that is to make the client feel at home and comfortable in their requested style.”

A FOREVER BUILD

The initial meeting with their clients and three young daughters began unusually. Fisher shares, “This project began because the clients had purchased a planter from our farm and when they came to get it, they noticed our A + A business name on my vehicle. They asked my husband about it and then

we connected.” The result of that planter purchase was a beautiful home situated on a breathtaking natural site on Cottonwood Lake, surrounded by trees and hills. Surrounded by natural beauty, the home’s interior beauty speaks to elegance and total sophistication. Fisher adds with a smile, “I recently read a comment on our social media that made me laugh and described the style of the home perfectly, ‘It’s like classic and modern had a baby.”’ The clients liked transitional features but deep down had a love for traditional elements so A +A decided to find a nice balance in between. Achieving that balance was a challenge the sisters were happy to be tasked with. Holubok feels the kitchen cabinetry with its stain color, door style and use of mouldings helped create a traditional aesthetic in the kitchen, while the range hood, cabinetry hardware, lighting and plumbing fixtures lend a more transitional element.

DESIGN FAVES

As in any project, some design aspects stand out to A + A. With a change of plans, what was to be a hidden pantry, became a showcase pantry with custom glass French doors designed by Crystal Cabinets – a design element they and the homeowners loved. Another high point for the design duo was their ability to highlight the stunning vista surrounding the home. Fisher explains, “When we worked on site it was a treat to take in the view while being there and I was so happy that it was captured appropriately.” Holubok’s favorite was “the stained wood cabinetry and cased openings with the transoms.” The warm, richly stained wood proved that any stain can work when considering the entire space.

The earthy neutrals of the primary suite allow the ever-changing colors of nature to add design interest to the room. The profound lake view is shared with the rest of the rooms on the main level. A combined tub and shower in the primary bathroom utilized the space efficiently where water can splash worry-free. Ragnar Mt.Royale wall tile is accented by Mist Green insets by Ceramic Tile Works.

Proud of the work completed on this rural home, it is another success story to add to their portfolio. What good is the warmth of summer, without the cold of winter to give it sweetness.

One thing that unites all North Dakotans is that when summer arrives and warm breezes blow, we are outside whether at the lake, around the grill, gardening, playing golf-tennis-pickle ball, or just relaxing by the pool. It is the season when we say, “Food just tastes better outside,” from grilling in the backyard, outside at a café or a picnic in the park. There is an art to picnicking and the wonderful thing about it is anyone can do it.

When I moved my wife and daughter to England, after we had settled into our lovely, thatched cottage located in a small village in Oxfordshire, we set out to explore the area. Driving down the narrow lanes lined with hedgerows, we would occasionally come across a car parked on the side of the road. Off in the soft grass would be a family on a spread-out blanket enjoying a picnic lunch or just relaxing, taking in the day.

1 3-4 lb. pound chicken cut into 8 pieces with extra drumsticks

3 cups buttermilk

2 Tbsp. Tabasco sauce

1 Tbsp. Kosher salt

Mix ingredients and marinate chicken pieces covered in refrigerator overnight.

METHOD:

Heat 4 cups of vegetable oil to 350 degrees in a deep straight-sided pan.

Take chicken pieces out of the marinade, shaking off excess. Coat well in the flour mixture. Don’t worry if the flour mixture gets wet and a bit lumpy just mix it up and continue using.

1 Tbsp. baking powder

2 Tbsp. paprika

1 Tbsp. chili powder

2 tsp. garlic powder

1 tsp. cayenne pepper Mix well.

Once the oil has come to 350 degrees, fry one or two pieces at a time, so oil does not drop below that temperature. Do not mess with the chicken or you might knock off the coating. When the chicken is golden brown and reads 180 degrees on a quick read thermometer (4-5 minutes), lift out carefully and put on a clean draining rack. Cool and cover with a clean kitchen towel until ready to pack up. (And don’t forget the honey!)

My wife, an East Texas girl, who was raised on a cattle ranch, thought it was amusing and wondered why people ate lunch outside so close to their car. I got it, being raised in England; but I must admit on occasion, seeing it through her eyes, it was kind of funny. Nevertheless, there is something pure about spreading out a blanket, opening the picnic basket and passing around the sandwiches or the cold fried chicken. Everyone is making up their plates, wondering if the ants have caught on to our presence yet.

As apartment dwellers, my family spent a

good portion of my formative years picnicking at all the beautiful parks in Toronto and other areas of Southern Ontario. My early twenties were spent crisscrossing Canada and America, mastering the art of sandwich making while searching out the perfect backroad spot to spread out the blanket for lunch, and maybe even a nap before hitting the road again. These days, like most people, we spend our time in our backyard; others are at the lake.

This does not mean you cannot pack up a picnic basket and get out to one of our nice

parks. Island Park is always a favorite with lots of room and plenty of shade trees, plus a great play area for the kiddos. Or pack a picnic to take to the lake so you won’t have to cook when you arrive!

How to Pack Your Picnic Basket

ESSENTIALS:

Buy a real wicker picnic basket. Good ones come with plastic utensils, glasses and plates.

Paper Napkins, wet wipes and ziplock bags for trash.

A wooden cutting board and knife

Don’t forget the blanket FOOD — EVERYONE HAS DIFFERENT TASTES, HERE ARE SOME IDEAS:

Hit the deli for some good sliced meats, salami, soppressata, roast beef and smoked turkey

Cheeses, everyone loves cheese: Aged cheddar, Havarti, goats’ cheese, Brie

Hummus, flatbreads, sliced cucumber and radishes

Deli potato salad or other premade salads

Carrot sticks, celery sticks and cherry tomatoes

Olives and gherkin pickles

A good loaf of French bread and assorted crackers

Good mustard and other spreads

• Apple slices, melon balls, grapes

• Lemon bars and specialty cookies from the bakery

• Sparkling and still water; juice boxes for the kiddos

• A nice French Rose or Chenin Blanc and a Beaujolais; plastic wine glasses

Iget a lot of inspiration for baking by looking out my windows in summer. Our flower gardens are in full bloom with pops of peach from roses, pink hues from cosmos and bursts of lavender color surround me. Since I began gardening, I’ve always incorporated lavender. It is great for pollinators and is appreciated for its color, long blooms and intoxicating smell when the breeze blows it just right.

In late summer, I enjoy harvesting and drying my lavender to use in candles and soaps. Incorporating it dried, into my baking, is a perfect way to enjoy the fragrant floral days of summer well into the fall and winter seasons. Lavender is simple to process. Just after the bloom, I harvest the stems, rinse them well, and hang or lay them flat to dry. It will only take a couple of days, depending on the humidity.

My favorite way to use this fragrant natural flavor is in fig and lavender cake or cupcakes with goat cheese frosting. If you don’t have dried lavender, don’t let that stop you! You can purchase dried lavender or edible lavender oil online, at specialty stores and in grocery stores. This cake is easy

to make. My favorite components of this cake (besides the lavender) are the dried figs and their seeds. The fig itself is chewy and the seeds add a delicious crunch. One baking tip for chopping the figs is to first coat them in flour. This will help keep the figs from sticking together (and on your knife) when you chop them. It will also hinder the figs from sinking to the bottom of your cake batter.

The frosting for this cake is similar to cream cheese frosting but one level up because I use goat cheese. It is the perfect blend of tang and sweetness. I like the frosting to be soft, somewhere between a frosting and a very thick glaze. You can dollop it on top of the cake, smear it over to the sides and let gravity take over. If you like a thicker frosting, you may add more powdered sugar and omit the tablespoon of whole milk.

The texture is soft and almost pillow-like, thanks to the addition of the beaten egg white, which you gently fold in at the end just before baking. This cake does not require a special occasion to be made. It is a humble cake with a sophisticated twist.

FIG AND LAVENDER CAKE WITH GOAT CHEESE FROSTING

The fragrant flavor of a summer garden, all year long

FOR THE CAKE:

½ cup salted butter, softened

1 cup granulated sugar

2 large eggs, separated

2/3 cup milk

2 cups all-purpose flour

2 tsp. baking powder

¼ tsp. salt

6-7 dried figs, dusted in flour and chopped

1 Tbsp. crushed lavender

METHOD:

Beat softened butter with sugar until pale yellow, 2-3 minutes. Add in egg yolks and chopped dried figs.

In another bowl, mix flour, baking powder and salt. Alternating with the milk, add dry ingredients to the butter mixture. Beat well.

Whip egg whites until stiff peaks form. Fold gently into the cake batter until well incorporated.

Line a 9-inch cake pan with a parchment round. Butter and flour. You can also spray well with a baking spray. This recipe also makes about 12-15 cupcakes. Bake at 350 degrees F. for approximately 40 minutes or until golden brown.

FOR THE FROSTING:

½ cup salted butter, softened

8 oz. plain goat cheese

1 vanilla bean scraped (or 1 tsp. vanilla extract)

1 Tbsp. whole milk

2-4 cups powdered sugar ¼ tsp. salt

METHOD:

Whip butter and goat cheese together with vanilla bean until smooth. Add in milk, powdered sugar and salt, and beat until fluffy. Add more sugar if you prefer a thicker frosting. Dollop and smear on top of the cake. Enjoy!

Lavendula , lavender

Lavender, is a beautiful perennial flower and a great plant to attract butterflies, bees, and other pollinators to your garden. This Mediterranean native is now cultivated, grown and loved around the world. Grow them alongside your herb garden, in a perennial flower bed or in containers where you can enjoy their fragrance up close. According to the Minnesota State Horticultural Society, the best lavender varieties for the north are all cultivars of Lavendula augustifolia, the so-called common or English lavender. The ‘Hidcote’ and ‘Munstead’ are two examples. A new variety, Phenomenal™ lavender is especially hardy in our zone 4. Add them to your garden where the sun is abundant and there is good drainage. You'll be delighted with their fragrant beauty and usefulness.
