From the Editors... Every year we escape home for the Christmas holidays. What started as a way of getting out of providing the family Christmas Day venue (which we did for 15 years straight!) rapidly became a trend that has seen us celebrate the big day everywhere from Lake Crackenback and Freemantle in Australia to Morgan Bay in South Africa and Lake Wanaka in New Zealand – and almost everywhere in between! This year, however, we find ourselves at home this Christmas (don’t tell anyone!). Embracing the #Staycation concept, we’ve decided to holiday at home this year and get out and enjoy all that our beautiful area has to offer visitors. With everything from sand-dune-sliding to sunsoaking to shopping and even some more cultural pursuits, we’ll be tourists in our town. And we can’t wait! You too can ‘Holiday at Home’ this Summer – with our special guide on page 12. The anticipation of Christmas is a great way to keep the kids busy in those first few days after school breaks up for another year. But once the final present has been unwrapped and the tree has come down, many parents are left staring down the barrel of four long weeks without any other plans in sight. On this very special occasion, Christine will share personal anecdotes on life and her successes in the Australian Entertainment Industry, her advocacy work for diversity and inclusion and the importance of First Nations culture, languages and songlines. Christine will also incorporate the 2019 NAIDOC Week theme. Christine will perform a selection of songs from her acclaimed music career, including songs from the Torres Strait Islands, Sunshine on a Rainy Day and the unofficial national anthem My Island Home, which was selected by the National Film and Sound Archives to be inducted into the Sounds of Australia Registry alongside Midnight Oil and The Wiggles. Christine Anu is one of Australia’s most acclaimed entertainers. A multi-award winning recording artist, Christine has also made widely acclaimed appearances in major films including Baz Luhrmann’s Moulin Rouge, The Matrix Reloaded and Dating the Enemy. HIGHLIGHTS The Art of Problem Solving Exhibition Newcastle Toy Run - Superhero Edition! Sunday 2nd December The annual community fundraising event Bikers For Kids Toy Run is back! This huge event raises funds and collects toys for disadvantaged families that would otherwise go without. Riders will depart Stockton at about 9.30am and make their way to Wickham Park for a Community Fun Day (10am–1.30pm). Tuesday 4th December – Sunday 24th February, 2019 Everyday problems are the canvas for creative inventions, with engineers changing the world through innovative problem solving. The Art of Problem Solving exhibition is showcasing some of UoN's most exciting engineering and computing creations – sensor gloves that teach sign language, a heart rate monitor for cows, a VR game to teach literacy, satellites that map the effects of climate change, a computer game you can control with your mind, and advanced nanomaterials that help with cancer detection. Whatever your interests, this exhibition is sure to open your mind to the endless possibilities of future technologies. Nikon-Walkley Press Photography Exhibition 2018 Monday 10th December – Monday 28th January Running since 1956, the annual Walkley Awards are the pinnacle of achievement for any Australian journalist. No matter their era, Walkley Award-winning stories have always highlighted Australia’s history, people and current events. See the biggest stories of the past year through the lenses of Australia’s best press photographers in the travelling exhibition, which will arrive at Wallsend Library this month. Changing of the Guard Monday 10th December At exactly 10am at the RAAF Base in Williamtown, the first two F-35A's will officially arrive! Following an F-18 handling demo, the two F-35A aircraft will be joined by an F-18 for a coastal transit to showcase the aircraft to the people of Newcastle before returning to Williamtown for an official ceremony. With large crowds expected, it is recommended to arrive early (or avoid the area completely). Fighter World will be open from 8am to accommodate visitors for this historic event!

Monday, 31st December Catch the Steve Edmonds Band at Lizotte's this New Years Eve, as they perform their acclaimed Jimi Hendrix Tribute show for the first time in Newcastle! This is two part show features a heartfelt tribute to the great music and imagery of Jimi Hendrix, as well as a tribute to the great guitar anthems and bands of the 70's featuring some special guests. Winging your way to an exotic location might sound like the ideal way to spend your summer holidays. But throw in the headache of having to organise passports, travel insurance, connecting flights and foreign currency conversions and there’s certainly something to be said for keeping your vacation plans a bit more ‘low key’. At intouch Magazine we know how lucky we are to live and work in an area as vibrant, beautiful and diverse as Newcastle, Lake Macquarie or the broader Hunter region. So this month we’ve decided to celebrate the long list of reasons to ditch that far-flung travel itinerary and make the most of what’s on offer right here on our doorstep.

We’ve slopped on some sunscreen and slapped on our rose-coloured ‘tourist’ sunnies to compile a summer ‘staycation’ #bucketlist of Insta-worthy things to see and do, with a range of free and paid experiences that showcase exactly what makes this region so great. #StretchYourLegs – Bathers Way and the Newcastle Memorial Walk One of the best ways to get to know a new place is to ditch the motorised transport options and explore the city on foot. Even locals who think they know the ins and outs of every back street will spot something they’ve never noticed before when they slow things down a notch to stretch their legs with a leisurely walk. While our region has plenty of picturesque walking trails, it’s hard to go past Bathers Way and the Newcastle Memorial Walk when you’re narrowing down the list to that single “mustdo” experience. Connecting Newcastle’s five main beaches from the Merewether Ocean Baths to Nobbys Beach, Bathers Way traces a scenic 5.8km long trail along the edge of the city’s spectacular coastline. It also links up with the spectacular Newcastle Memorial Walk between Strzelecki Lookout and Bar Beach. Built to commemorate the 100th anniversary of the ANZAC landing at Gallipoli in 1915 and the commencement of steel making in Newcastle, the 450m-long clifftop walkway provides unsurpassed views of the ocean, city and up into the Hunter

Valley. It is also an excellent location for a spot of whale watching during the peak migration season from June through to November. Notable mentions: The 1km stretch along the break-wall to Nobbys Head provides a much shorter coastal highlight, with the steep climb to the iconic Nobbys Lighthouse (accessible 10am-4pm every Sunday) well worth it for the spectacular 360-degree views from the top. The Fernleigh Track is a local favourite for joggers and cyclists, stretching 15km along a former rail corridor from Adamstown to Belmont, while the Lake Macquarie sculpture walk and fitness trail winds along 2km of foreshore between Eleebana and Warners Bay, with plenty to see and do along the way.

#BackToNature – Hunter Wetlands Centre Newcastle has an amazingly diverse topography, from its kilometres of sandy beaches to the dense bushland of the Glenrock State Conservation Area. Just 15km from the coastline is yet another amazing natural asset – the Hunter Wetlands Centre. Bursting with wildlife on the land, in the air and below the surface of its waterways, the 45-hectare site has been carefully conserved and rehabilitated to become a vibrant ecosystem of national and international significance. Explore its extensive network of walking and cycling trails, or get closer to the action by hiring a canoe to paddle a meandering 2km route around Ironbark Creek. There’s also guided walking and ‘buggy’ tours and Segway adventures, as well as dipnetting, magpie geese feeding and reptile talks for


the kids. Naturally, the site is also a birdwatcher’s wonderland, with more than 1000 birds spotted at the wetlands centre every month. With all these activities on offer, you’re sure to work up an appetite, so either pack a picnic to enjoy by the water’s edge or relax on the verandah overlooking the main pond while you savour a bite to eat from the on-site café. Notable mentions: Mountain bikers, joggers and hikers flock to the pristine surrounds of Glenrock State Conservation Area. Located just 5km from the centre of Newcastle, it boasts more than 34km of single track and management trails in the northern half of the park, as well as a diverse range of environments from deep gullies and coastal rainforest to beaches, rocky cliffs, waterfalls and rock pools. Blackbutt Reserve in Kotara occupies over 182 hectares of natural bushland, with opportunities to enjoy nature trails, wildlife exhibits, children’s playgrounds or passive recreation activities, while further up the Hunter Valley the Watagans National Park offers a stunning wilderness experience, with hiking, biking and 4WD adventures, panoramic lookouts and quiet campgrounds for longer escapes.

#TakeADip – Caves Beach With five magnificent beaches along a 6km stretch, it’s no wonder Newcastle is a mecca for sun-seekers. But travel a little further down the coast to the Swansea Peninsula, and you’ll find a truly magical seaside experience at Caves Beach. Located to the north of Hams Beach, Caves Beach is a 300m-long stretch of pristine coastline ideal for swimming and popular among local surfers for its reliable point break. Of course, the main attraction for tourists it the network of sea caves located along the foot of the cliffs at the southern

end of the beach, near the surf lifesaving club. You’ll need to time your visit with the movements of the ocean, however, with the naturally-occurring nooks and crannies of the caves only able to be explored at low tide. Notable mentions: Newcastle’s iconic Bogey Hole is the oldest ocean pool on the east coast of Australia, hand-hewn out of a wave cut rock platform by convicts in 1819 for the personal use of Major James Morisset. These days it is a popular swimming spot among locals and visitors, accessible from King Edward Park. The Merewether Baths provide a more sheltered swimming location with two large swimming pools, including one suitable for younger children. It is renowned as the largest ocean baths complex in the Southern Hemisphere.

#StepBackInTime – Morpeth Located in the Maitland local government area on the banks of the Hunter River, the charming village of Morpeth has a rich and vibrant history that stretches back to the early 1800s. Originally part of a 1000-hectare grant made to Lieutenant Edward Charles Close in 1821, the township of Morpeth began to emerge in 1834 and went on to become one of the busiest inland river ports in NSW. Now a vibrant tourism destination known for its cobblestone laneways filled with an interesting collection of cafes, speciality shops, art galleries and boutique stores, Morpeth is also popular among history buffs for its stunning heritage architecture. The free Morpeth Heritage Walk brochure list 25 places of historical interest around the beautifully preserved river port, with many of the town’s most impressive sandstone buildings built along the main thoroughfare of Swan Street including the CBC Bank (1889), the Morpeth Court House (1862) and the Arnott Bakehouse (1851), where Australian biscuit icon

The darker side of the village’s history can also be discovered by those who dare to take the Morpeth Ghost and Heritage Tour, where you will be regaled with tales of ghosts, hauntings, dark history, murder and strange folklore. Notable mentions: As one of oldest settlements in Australia, Newcastle is chock full of heritage highlights including Christ Church Cathedral, Miss Porter’s House, the Convict Lumber Yard and the towering battlements of Fort Scratchley, which famously fired on an attacking Japanese submarine in 1942 to become Australia’s only coastal fortification to fire on an enemy naval vessel. One of the best things about visiting Newcastle and the surrounding regions are the variety of amazing views on offer, from striking urban landscapes to tranquil ocean vistas, and the towering treetops of our national parks that form a lush green tablecloth over the land. While there are countless spectacular spots where you can take in the views, Tomaree Head in Port Stephens has to be one of the most magnificent. Located at the far end of the peninsula at Shoal Bay, Tomaree Head towers 161m above sea level, with the climb to the summit offering an at times taxing yet very rewarding challenge. From the top, you’ll enjoy panoramic views of Yacaaba Head, Cabbage Tree, Boondelbah and Broughton Islands from the north platform, with Zenith, Wreck and Box Beaches, Fingal Island and Point Stephens Lighthouse sure to impress from the south platform. Don’t forget to pack your binoculars for a spot of dolphin or whale watching, and make sure you take the extra time out to visit the historic World War II gun emplacements along the Fort Tomaree Walk on the way back down. Notable mentions: There’s plenty of places to check out awesome coastal views in Newcastle too, with King Edward Park one of the best multi-functional spaces to explore, with lush green gardens and towering Norfolk Pines providing the perfect picnic backdrop, a multi-level playground to keep the kids entertained and, of course, the stunning scenery, best viewed from Shepherds Hill. Head further afield, and it’s hard to go past the 412m-high Mount Sugarloaf, which is home to the television and radio transmitters that broadcast into the

Hunter Region. A short but at times steep walk to the summit will pay off with spectacular 360-degree views over Newcastle, Lake Macquarie and the coastline.

#ActionPackedAdventure – Sand Dune Safaris If you’re looking for a little more action, these holidays there are plenty of options to choose from across the region. Combining one of Newcastle’s biggest assets with the need for speed, Sand Dune Safaris is a must-do for visitors and locals alike, with a host of adrenaline-filled activities on the largest moving sand dunes in the Southern Hemisphere. Launch yourself from the top of one of Stockton’s highest dunes and surf or slide down the silky-smooth sand as part of a sandboarding adventure, or take a stunning 4WD journey to discover the history behind the last legal squatter settlement in Australia – Tin City, while also learning more about the Aboriginal and military history of the area. Set to Light up Cinema Under the Stars in Newcastle Newcastle Permanent’s Cinema Under the Stars is returning to light up the night in Newcastle for its 12th time. John Earle was welcomed back to the Cooks Hill Galleries as a resident exhibitor about 18 months ago and so we asked Gallery Director Mark Widdup to tell us a little about this amazing local talent. “John first came to my notice when judging the Gosford art prize, circa 1977, when he exhibited a fine black and white artwork which exposed a detail drawing skill rarely seen! I gave the work a highly commended at the time. Years went by, and the development of his detailed seascapes and harbour scenes took the limelight. The general feeling was that John’s realism was awe-inspiring, especially when he produced the large panoramic subject. For those who remember this period (brought to light with this months cover of intouch Magazine), there were the iconic subject matters of Nobby’s headland, The Bogey Hole, Burwood Beach and

Merewether to Bar Beach coastline. His art immortalised our local seascape more than anyone before. Olsen Ormandy's Creative Force Hits Newcastle Art Gallery Newcastle Art Gallery's current exhibition, OLSEN ORMANDY: a creative force, is a visual spectacle well worth seeing during the Summer school holidays. Featuring a series of more than 50 works of art and sculptures by artists Louise Olsen and Stephen Ormandy, the exhibition celebrates the pair’s three decades of creative partnership and evolving artistic practice. This vibrant creative tour de force showcases individual works of art alongside pieces made in collaboration, drawing on Olsen and Ormandy’s substantial archive but also incorporating new paintings and large-scale sculptural installations. chroma clashes from orange to blue rendered in a painterly application. A highlight of the exhibition is a new expression of Ormandy’s life-sized totems, rendered in signature resin. Also on display is a series of mesmerising, never-before-seen watercolours by Olsen, exploring in two dimensions many of the themes of her decades of design and sculpture work. with art and have been learning, creating and making ever since.” Vanessa lives and works on a property in the Hunter Valley and is currently doing a PhD at the University of Newcastle in Fine Art, researching the history of Australian Tempera (an archaic type of paint made with pigments bound in a watersoluble emulsion, such as water and egg yolk) and its future as a foundation for a sustainable art practice. Giving Back to a World of Inspiration

“I am inspired and awed by the natural world. The beauty and the frailty,” Vanessa said. “I do a lot of reading and love to spend time in nature. Generally, the latest design comes out of a significant experience or new knowledge of a particular animal or plant. Eventually, I would love to be able to draw every animal, tree, bird, insect, star and flower but that would take a hundred lifetimes.” Vanessa is also passionate about giving back to the world that inspires her. When asked to nominate her favourite creation, Vanessa’s choice was, not surprisingly, guided by a fairly altruistic motive. “I love every aspect of the process, from the first seed of an idea through the development of the artwork to the final moment when it’s finished,” she said. “Every time I create a new work I learn something new, this is exciting and fulfilling. “I love them all but if we have to choose one then let it be the Precious Bee print with gold leaf because, for every one that sells, 10 per cent is donated to the Future Bees Fund, a research group at the University of Western Australia.” Vanessa has been selling her works at the Olive Tree Market for the past few years and said it was an invaluable event for local artist such as herself. “Three-and-a-half years ago I had my first stall at the Olive Tree Market,” she said. “The market is a wonderful opportunity for artisans to share their work and the Newcastle community is so supportive and encouraging.” You can check out Vanessa’s work as The Apothecary Artist at the upcoming Olive Tree Markets, which will be held twice in the lead-up to Christmas at Newcastle Civic Park, on December 1 and 15 from 9am–3pm.

Ernie Merrick never wanted to be a football coach. As a young man in Scotland he had dreams of being a professional football player, although, as he explains, he wasn’t a very good one of those. At the age of 22, he came to Australia on a one-year working holiday, chasing very different dreams of sun, sand and surf – a far cry from the grey and gloomy surrounds of Glasgow where he was working as a PE teacher. He continued to play football on the weekends for a Melbourne club called Doveton SC, but it wasn’t until his team’s coach left in 1979, and he was asked to step into the role that he had his first – albeit reluctant – taste of taking the reins for a team. Almost 40 years later Merrick is still calling the shots from the sidelines and is now part-way through his second season in charge at the Newcastle Jets. Along the way, he has collected two A-League premiershipchampionship doubles and twice been named the competition’s coach of the year. Despite his initial reluctance for the role, and his selfeffacing assessment of his skills, it’s clear Merrick has achieved plenty of success directing players around the park. “I was a very average soccer player, football player, and the professional teams used to phone me up and I used to go for a trial and they said, ‘You did really well, but don't phone us, we'll phone you,’ and I'm still waiting on the call back,” Merrick said with a laugh. 20 | www.intouchmagazine.com.au

“So I think (coming to Australia) was a combination of the economics of Scotland, the weather and the fact that I realised that I wasn't good enough to be a full-time football player. “After coming out (in 1975)… I played some state level games for Doveton Soccer Club. When the coach resigned, they tried to talk me into coaching. I said, ‘No, I'm not interested in coaching. I’m a bad player; I’ll probably be a very average coach.’ “I got talked into doing that eventually, and I was right, I was a very average coach. We survived, but to me, it was always beating my head against the wall. “Then I began to realise – it only took me about ten years – that a decent coach doesn’t actually coach technique and strategy, that’s the easy part. You really just coach people and you deal with people, and you try and motivate people to believe in themselves and to be the best that they can be. “There's slow players that are fantastic players; there's quick players that are terrific, there are ones with technique, there's players with a lot of heart. “I thought everything was about technique and strategy, but I discovered that it's really about just getting the best out of people. “So, after ruining quite a few soccer careers in my first years, I think I’ve had a wee bit of success ever since.” After moving on to coach several teams in the National Soccer League while still working as a PE teacher, Merrick accepted the role of head football coach at the Victorian Institute of Sport. Surrounded by high-level coaches across a variety of sports, Merrick said his 13-year stint at the Institute

was responsible for shaping him into the coach he is today. “I was fortunate enough to land the position of head football coach at the Victorian Institute of Sport,” he said. “The program manager, Peter Spence, was very big on us coaches, whether it be Cathy Freeman’s coach or the cricket coach or the hockey coach, all sharing information and having regular speakers in and doing little courses on people management and leadership skills. “I think I developed into a better coach through spending 13 years at the Victorian Institute of Sport developing the talent of 14, 15, 16-year-olds to play for Australia under 17, under 20 level, and I think that was a turning point for me.” When the A-League was established in 2004 Merrick was invited to become the coach of the Melbourne Victory. It was a rocky start in the professional ranks – the team placed second last in inaugural season (2005–2006), but by the end of the next competition Merrick had taken them all the way to the top, capping off his meteoric rise with a premiership/championship double. He repeated this feat two seasons later then took the Victory to the grand final the following year as well, before parting ways with the club in 2011. An 11-month stint in Hong Kong followed before he returned to the A-League with the Wellington Phoenix in 2013. He stayed on for a couple of years before resigning in December 2016. Six months later he was given the mammoth task of turning the Newcastle Jet’s ailing fortunes around, with the team having spent the past two seasons at the bottom of the ladder. Fortunately for the fans and players alike, it didn’t take Merrick long to work his magic, taking the Jets all the way to the grand final in his first year in the job. While the team fell agonisingly short of victory at the final hurdle – in part due to a controversial technical fault with the VAR (video assistant referee) – the incredible turnaround from wooden spooners to genuine contenders was a massive achievement in itself for both the coach and the team. The 65-year-old’s initial two-year tenure at the club has already been extended through to the end of the 2019–2020 A-League season. By the time that rolls around Merrick will have been coaching for 40 years. While the once reluctant coach never dreamed he would reach that milestone, he hopes to be able to chalk it up with another A-League championship under this belt.

“Well, at 65, I still don't feel as though I’ve peaked. I don't think I've had my best yet. That's my standard line,” Merrick said. “I like to keep myself fit, I've got a lot of energy, so I really enjoy what I'm doing, and I would just love to win a grand final with the Newcastle Jets. “Our fans, Newcastle fans are fantastic. They seem to be really supportive win, lose or draw, and I feel as though it would be a great reward for the amount of time they have backed this club and stood behind this club and come out in numbers, even though perhaps (the team was) not having a lot of success. “So I'd like to reward the fans by doing really well in the finals, and maybe even winning something really big like the grand final, as long as the VAR is not there!”

METHOD 1. To make the Marie-Rose Sauce - combine all ingredients well, cover and refrigerate until needed. 2. Roughly chop king prawns (if using) into bite-sized pieces, or use smaller whole prawns. 3. Peel and dice avocados and toss with the lemon juice. Add prawn and just enough Marie-Rose sauce to coat well when lightly mixed. 4. Place lettuce in the base of individual serving bowls. Top with prawn and avocado mixture and place a sprig of chervil or dill on top with a cut cherry tomato. Dress the plate with lemon wedges.

Around the World There are many Christmas traditions around the world, and even more Christmas food delights. The Hunter Valley’s best specialist imported food supplier, Bibina in Warners Bay, has a massive range of hard-to-get foods, including many Christmas delights from around the world. Germany – With its Advent calendars, mulled wine and Christmas Markets, Germany celebrates Christmas in style. Dessert typically includes Christmas Stollen. United Kingdom – Christmas in the cold winters of the British Isles usually means hot roast meals surrounded by lots of delightful fudges, toffees and shortbread biscuits. Roast Turkey Buffé Bibina has frozen Turkey Buffé, which is the filleted breast portion of a large turkey. It’s really easy to cook, and you get lots of succulent, moist white meat which is not only awesome on the day but great for leftovers too. Bibina’s Turkey Buffé’s are approximately 2kg each, with little wastage (no bones). It takes about 24 hours to defrost in the fridge.

Roast Turkey (breast) Buffé in Serrano Ham with Chestnut Mash and Pistou Serves: 8–10 Preparation time: 30 minutes Cooking time: 80 minutes Ingredients: • 1 x Ingham’s Turkey Buffé • 1 cup extra virgin olive oil • Sea salt flakes and freshlyground white pepper • 12 thin slices Serrano ham • 1kg waxy potatoes, peeled • 1 cup cream • 200g unsalted butter • 1½ cup cooked chestnuts

1 bunch basil leaves ½ bunch parsley leaves ¼ bunch mint leaves 4 cloves garlic, minced 2 anchovy fillets 100g pine nuts, toasted 1 tsp white wine vinegar ½ cup Parmesan, finely grated Green beans, to serve

Method: 1. Preheat oven to 200°C. Rub the Turkey Buffé with 1 tbsp olive oil, then season generously with salt and pepper. Cook the Turkey Buffé approximately 30mins per kg. With 30 minutes cooking to go, remove from the oven and drape the Serrano slices over. Bake again for the final 30 minutes. 2. Steam the potatoes until just tender, then press through a fine sieve. Heat the cream and butter in a medium saucepan until simmering, then transfer to a blender with the chestnuts and purée until smooth. Fold into the potato mixture, then season with salt and pepper. 3. Combine the herbs, garlic, anchovies, pine nuts, vinegar and remaining olive oil in a blender and purée until smooth. Fold in the Parmesan, then season with salt and pepper. Carve the turkey and serve with the chestnut mash, green beans and a spoon of pistou.

Christmas Lights Display in the Southern Hemisphere! WORDS MICHELLE MEEHAN - Features Writer

David Wells starts putting up his Christmas lights in August each year. While it may seem a tad early to be getting into the festive spirit, too much time is almost never enough when your display contains more than two million lights. As the event set-up manager at Hunter Valley Gardens, David is part of the team and leader of the hard-working muscle behind the largest Christmas Lights display in the Southern Hemisphere. The Christmas Lights Spectacular takes about three months to be physically set up by David and his team plus the other dedicated Garden workers totalling 25 people. However, when you take the pre-planning into account, including sourcing new additions, tagging and testing all of the lights and ensuring everything complies with strict safety standards, as well as the pack-down at the end of the season, organising the Christmas Lights is almost a year-round job. “We start in August, usually the second or third week in August, we start setting up the string lights and add in the trees. Then as we get closer to the event, we start putting out some of the other displays, the larger displays,” David said. “When we get to October, that's when nearly everything comes out; then we look at doing all of the powering up. “There’s about 12 people in my team that help with the physical set-up, I just mostly manage and organise them, and I worked out that for the set-up we basically do about 6500 man hours. “Packing up is a lot quicker. We usually pack up within six weeks, which is about half the time because with setting up it's a lot more detailed in regards to putting strings in trees

and putting displays out. When we're packing up, it’s a lot less time consuming so usually by the first or second week in March; we'll have everything packed away.” David has worked at Hunter Valley Gardens for around 18 years and has been involved with setting up the lights since the idea was first dreamed up 12 years ago. A lot has changed over that time, with the display growing from a far more modest version to one that now encompasses more than two million lights and 16 major displays, spread over 5 hectares of the world-renowned gardens. Each year the event grows a little bigger, with more lights and new features designed to enhance what is already a truly magical atmosphere. David is responsible for planning where every single light goes, from the tiniest string lights to the towering 12m, 9m and 6m high “mega trees” that are truly a sight to behold. “The team and I organise where everything goes,” he said. “There are certain things that stay in the same spot, that are designed for certain areas, for example, the 12 Days of Christmas display stays in the border garden because it's basically designed for that space, while there are a few other areas that stay the same because of the size of the displays. “Then we have new stuff each year that we need to put out and build, and there are some lights that fail that we take out and replace with newer displays.

“But with all of that, it just comes down to pre-organising to have a look at where we need lights, looking at the best opportunity and the best viewing area for each display.” David also works with lighting manufacturers to create custom-designed displays for Hunter Valley Gardens, such as the giant world globe, which spans 4m in diametre and is the centrepiece of the spectacular Around the World display. “There isn’t a lights catalogue that you can go through and pick everything from. They’ll have pictures of certain lights and certain designs that they've built for people in different parts of either Australia or over the world, but then there's also specific displays that we want custom made. “If there's a design or concept we come up with, we can take it to the lighting companies and say, ‘We’re looking at this, can you make it?’ “We've had some different things over the years, like the globe for our Around the World display, where we basically just said to them this is what we’re after, and they've made it for us.” David said the 2018 display was the biggest and best yet, with all the traditional favourites including Princess Castle and Carriage, Candyland, the Fairy Garden and Santa’s Workshop, as well as a host of new additions that help the display feel fresh and new, especially for those who love to return year after year. New lights include a magnificent 5m-tall bauble perched in between the amphitheatre and the formal garden, as well as a large rocking horse and a selection of giant stars. Hot air balloons and parachutes hang from the branches of the trees, while oversized rainbows and a magical unicorn and carriage add a colourful, fairy-tale atmosphere to the display. A variety of live entertainment and a collection of incredible rides including a Ferris wheel, swing chair, oldfashioned carousel, super slide and inflatable zones will be sure to keep the kids busy, while a selection of tasty food and beverage stalls will be on hand for those who work up an appetite exploring the lights. The Christmas Lights Spectacular was officially switched on at the start of November and will run through until January 26, 2019. The lights open at 5.30pm each day (apart from Christmas Day), with tickets available for the display alone or as a dual day/night pass, which also gives you access to the explore the fabulous floral displays of the garden between 9am and 4pm. Tokens for individual rides are $6 each, while unlimited ride wristbands are $15. The rides are open during the Christmas Lights Spectacular from 5.30pm – 9.45pm daily. Olympics “Missile” Homing in on Lake Macquarie

Olympics silver medallist James “The Missile” Magnussen will share his aquatic prowess with budding young local swimmers as part of Lake Macquarie City Council’s 2019 Swim with the Stars. Magnussen will join Commonwealth Games backstroke silver medallist Bradley Woodward and breaststroke bronze medallist Matt Wilson at the all-day clinic on January 20 at the Speers Point Swim Centre. With Christmas approaching, busy-ness is gathering pace. Despite looking forward to the holiday season, many people can find this time of year stressful. Expectations about how Christmas should be can place pressure on us, which can feel overwhelming. It’s easy to make comparisons between our personal situation and the images portrayed on television and social media. So being mindful about this can help make this time more manageable, happy and peaceful. Behind the tradition of gift-giving is the story of a real man, who lived in modern-day Turkey. He became known for his kindness in helping the poor and giving gifts secretly to help people in need. He later became known as St. Nicholas.

Even further back is the original Christmas, with the birth of a baby, Jesus, in a stable, in Bethlehem, Israel. In the first Christmas, there was no glitter, and the circumstances of his birth were humble, even by the standards of 2000 years ago. Yet he would have a profound impact on history. One of the messages in these stories is that the impact we have on others defines us far more than possessions or social approval. Healthy relationships provide connection and support. Being able to share the reality of our lives, helps us to find common ground, and reduce stress. However, relationships don’t just happen. They take work to build and maintain, and there are inevitable frustrations and disappointments. Dr John Gottman (see Gottman.com) has devoted his career to helping couples and families improve relationships. He stresses that the way we listen and speak to each other, shapes not only the relationship but also has an impact on personal health. He pointed to four negative styles that he called The Four Horsemen of the Apocalypse, because of how they damage relationships. These are: criticism, defensiveness, contempt and stonewalling. • Criticism involves raising an issue in a way that focuses on the other person’s character, inferring some kind of blame or defectiveness, rather than telling them how you feel, what you need, and what you would like to be different. • Defensiveness is a way of trying to avoid issues by trying to shift responsibility or blame onto the other person, rather than listening to them. • Contempt involves putting others down or implying that they are inferior. Contempt is the single best predictor of relationship failure. The antidote to contempt is to express appreciation for each other. This also reduces tension and stress.

• Stonewalling involves ignoring or avoiding what the other person is saying. Stonewalling causes stress and raises the heart rate, because it puts the person in a no-win situation. Stonewalling can be avoided by taking time to calm down and come back to the issue later. We all can say the wrong thing, particularly when disagreements become heated. Being able to come back and talk calmly, can help mend any hurt that has been caused. Talking reflectively without getting defensive or upset helps to restore the connection, respect and trust. Christmas can place a lot of stress on relationships. Perhaps the following may provide a pause for quiet reflection: 1. What do relationships mean for me? 2. When I am with others, am I listening, or preoccupied with my own thoughts? 3. Do I jump to conclusions or check with others if I’m not sure what they are trying to say? 4. Do I think before I react? 5. Are my relationships “ME” or “US”? 6. Do I take my stress out on people around me? 7. Are there winners and losers in my relationships, or do we help each other out? 8. Do I notice positive things about others, or do I point out the negative? Wishing you a safe and peaceful Christmas.

New Years Eve WORDS CHLOE O'SULLIVAN - On Tour With the Kid

New Year's Eve is always a huge disappointment. You don’t even have to have a bad night for it to be a let down — the pressure of all the things that will magically change once the clock ticks over to midnight. If you don’t like your thighs or your partner or any other number of things at 11.59pm, those things will still be exactly as they were when the clock says 12.01am. Granted you’ll be slightly more inebriated, but the thighs you hate and the partner whose every word annoys you will still be there.

Even before the night gets here, it’s the pressure to make plans. First, you have to get through Christmas, which let’s face it is less like a Myer catalogue and more like a Jerry Springer episode interrupted by a baked dinner. You finally get all the crazy relatives out of the house and are just beginning to unwind, and everyone you run into wants to know what you are doing for New Year's Eve. I have learned after years of trial and error that telling people you are staying home, wearing yoga pants (so I can eat anything I like and not have to undo your jeans), watching the fireworks from the comfort of my front step and going to bed to watch an old Michael J Fox movie, is not an acceptable answer. I say it’s unacceptable because as soon as I reveal said plans, I get lots of sad eyes followed by invitations. It’s hard to explain to anyone that my yoga pants are a much more attractive option than going out. For years now I have decided that I will start the year exactly how I plan to finish it. For me, that means with the kid, and only the options that mean being able to be with her are on the table. They have been the best NYE’s ever. We have welcomed the coming year at backyard BBQs, at Lizotte’s listening to Beatles classics and sitting by the water, thankful for where we live and that she is by my side. This year we are heading to my favourite holiday spot, The Boogie Woogie Beach House in Old Bar. My best friend and her son are joining us. We are taking over the Blondie suite and plan on sitting on the gorgeous balcony overlooking their venue, the Flow Bar. That night the intimate venue will be hosting a party dedicated to 1988. I’m picturing great food on the beach houses outdoor lounges, some seriously loud singing to the soundtrack of Dirty Dancing (much to the embarrassment of the kids) and some serious reminiscing. At the end of the night, we are then ten steps back to our suite. The place was a back-packers, but music-loving owner Steve has transformed the space into something so stunning it really needs to be seen in person. Each room is themed, and the bathrooms are transformed by huge mosaics made in Italian tile of all the greats... Bowie, Blondie, Dave Grohl, Louis Armstrong and Nick Cave. The extensive record library lines the walls and can be borrowed and played in the record players provided in each room. The service is exceptional. It’s these kinds of things that keep you coming back. Given my ideal NYE would be the comfort of my own home, The Boogie Woogie Beach house is the ideal alternative. And with Old Bar beach only a few steps from the front door, my first day of 2019 will be filled with sun, sand and 3 of my favourite people on earth.

The connotation behind the word diet bothers me – as it’s simply just a ‘quick fix’. The word diet is often something temporary and is mainly referred to as weight loss. A recent article stated that diet is “a regimen of eating or drinking sparingly to reduce one's weight.” This is the definition almost all of us think of when it comes to the word – a temporary way of living to achieve the desired outcome of weight loss. Known for its natural wonders, fabulous food and centuriesold culture, Croatia was high on Glenys Mullholland’s bucket list. And it started to creep up the order when fellow travellers returned raving about it. In September this year, this Novocastrian and several friends went to Croatia and Montenegro for 13 days as part of five-week Europe trip. The verdict was: “Incredible – it was all I had heard and a lot more!” For this office manager, travel is all about history and learning as you go. She researches a little before setting off to a new destination, then likes to wander, especially the back streets, to soak up the culture, absorb the atmosphere and really feel the place. It was during one of these jaunts in Dubrovnik’s old town, Glenys stumbled on a photographic exhibition: Kosovo War – the end of Yugoslavia by Wade Goddard at his acclaimed War Photo Limited Gallery. “Walking from photo to photo the story of the war started to build and about halfway around, an image of a little boy with tears rolling down his face hit me in the heart. I could feel his pain, and I came undone.” Sobbing, Glenys left the gallery, she regained her composure and returned to view the rest of the 60 images. “What hit me was I didn’t know about the region’s recent history – in the early 1990s it was just a soundbite on the television and we took no notice.” The war between the Kosovo Liberation Army and Federal Republic of Yugoslavia forces, from February 1998 to June 1999, claimed more than 10,000 lives and displaced a million-plus people. “During the rest of our stay, we wanted to learn more about the war. We did it with care and respect and soon discovered it was still very raw for people.” Staying in Airbnbs, they found that the war had impacted most families. In the countryside, they saw bullet holes in homes and deserted villages, while in Montenegro, they witnessed open hostility when a German tourist tried to pay for

a pizza with Croatian money and his money was thrown back at him and told: “you are in Montenegro, not Croatia”. However, they also experienced friendliness, hospitality and passion. “At one stay, the son’s room was being let out during the uni break to pay for his tuition. We were greeted with sherry made by grandma and strudel by mum.” Glenys also enjoyed the natural beauty through a sevenday self-skippered sail around the islands, including the Split Island of Vis, Havre and “the best pizza ever” at Komiza. “The water was sapphire blue; even when anchored we could see the bottom. At night it was serene with the moon on the water, the coastline lights twinkling in the distance and the shore sounds drifting around us.” Of course, while in Croatia, Glenys soaked up the centuries-old history, including places made famous by the Game of Thrones tv series. She even sat on the throne. As for her next bucket-list tick, she is going to see what opportunities turn up. Though sitting high on the list is India, Morocco/Spain and New York. Through being an opportunist, Glenys has accumulated many memories, with her favourites including building a language school in Kampot, Cambodia through a Rotary project; visiting biblical sites in Israel; and finding London to be one her most-like cities. “I am travel-focused, though my trips are about the experience, how it makes me feel. Whether it is excitement, wonder, curiosity, gratitude, joy, sadness, compassion or love. My bucket list is based on seeing it, feeling it, experiencing it!” Kim-Cherie Davidson is an adventure coach and speaker. She helps women to live their adventure dreams. The Festive Season is upon us. Time for eating, drinking, and being merry. It is also time for workplace Christmas parties, which are a great way of building team spirit, but can result in all manner of trouble should they become TOO merry. Generally, the location of the Christmas party is considered part of the “workplace”, despite not being on work premises. This means that employers have a duty of care to provide a safe workplace for employees. To minimise risk, employers should: • Make sure workplace policies are up to date, including those on discrimination, bullying, harassment, alcohol and drugs. Circulate a reminder to staff about the policies, and make sure that employees are aware of their obligations under these documents. • Consider employees’ travel to and from the venue, and whether it would be appropriate to provide transport. • Provide employees with a start and finish time for the function. Make it clear that any festivities that continue after the finish time are not part of the work function. • Conduct a risk assessment of the venue. • Serve alcohol responsibly. Provide non-alcoholic options and plenty of water. Do not allow drinking games. • Provide adequate catering at the function to offset any alcohol consumed. • Train senior employees/managers on the workplace policies, and the appropriate conduct required at the party, and ensure that there is suitable supervision and monitoring at the event. • Check the business has all necessary insurance in place. With some careful planning and preparation, employers can keep Christmas parties as the fun event they should be and avoid having them snowball into a new year nightmare. As Benjamin Franklin once said, “In this world, nothing can be said to be certain, except death and taxes.” Death is an unpleasant topic, but we are lucky in Australia to have a well-developed set of laws that provide all with the opportunity to build wealth and provide a future for our families. Part of the law that allows us to leave our assets to chosen beneficiaries in the event of our death is the doctrine of testamentary freedom. We have not always had the freedom to choose who benefits from our estate. From the earliest days of western civilisation until around the 19th century when

things began to change, it was commonplace for the firstborn son to inherit the entire estate. In some countries, even today, people do not have the freedom to leave their estates as they wish. A delicate balance exists between testamentary freedom and the moral argument that a testator should provide for their family upon their death. The expectation that a testator should provide for their family, and in particular their spouse and children, is one that is based on community standards and notions of fairness. The Supreme Court of NSW applies the Succession Act (NSW) 2006, the Probate and Administration Act 1898 and other legislation to deceased estates. If a person dies without making a valid will, these laws govern who will benefit from the estate. Whether they know how it may work or not, every person already has a statutory will under the laws of intestacy. Often, the laws of intestacy fall short of what may have been desired by the deceased. Many disputes also arise where people have been left out of an estate or where they feel like they have received inadequate provision under the terms of a will. These types of claims are often called 'family provision' claims. Eligible persons that could make a claim for 'adequate provision' from an estate includes a legally married spouse, a de facto spouse, a former spouse, a child (including adopted and potentially step-children), a dependent grandchild, a dependent member of the household, or a person living in a close personal relationship. What might be considered to be 'adequate provision' will vary on a case by case basis and is determined by factors that are set out in legislation and legal precedent. How someone owns assets can become a significant issue in determining how those assets are to be dealt with

after death. There are many different ways assets can be owned, including as joint tenants, tenants in common and 'in trust'. These forms of ownership can have very consequences. Superannuation, for example, is an asset that is often owned 'in trust' and may not even become part of a person's 'actual estate'. There can also be significant tax consequences depending upon what assets are owned and who might ultimately receive them. Did you know, there are actually 2 different definitions of 'dependent' in relation to how superannuation may be treated after death? Did you also know that 'binding death benefit nominations' sent to a superannuation trustee automatically lapse by law after three years? There are many events and circumstances that can impact how assets are owned and what options exist for disposing of them after death. Knowing what will happen to your assets after your death is critical. Careful planning and management are required to avoid the risk of costly and protracted litigation, particularly as people's lives, relationships and financial affairs become more complex. This means that in addition to choosing who you intend to receive an interest in your estate, there must be a plan for how that can be achieved. While it may seem like a daunting task, the process of deciding who you should leave your estate to is not that difficult; and it has to be done. Can you train to become professional dancer and stay in Newcastle?

The answer is YES – but not all programs are the same!

Brett Morgan, Artistic Director and owner of National College of Dance, holds a rather impressive resume, with highlights that include performing more than 40 soloist roles for the iconic Australian Ballet Company and Acting Artistic Director with the prestigious Sydney Dance Company. So how did someone who danced for Her Majesty, The Queen, land in Newcastle, NSW? We caught up with him to find out.

Brett grew up in Lansvale, in the western suburbs of Sydney, and as a young student travelled two hours each way, every day, for good quality training, which is what he credits his amazing career to. He acknowledges the struggle for kids who come from regional areas, who dream of dancing on the world stage, and that is something he was determined to change.

The three-step process is a simple one that has been well received by parents of young dancers who may want to pursue a career while still attending school.

Students start by enrolling in a half-day class which then transitions into 1.5 days offering a Certificate III in Dance statement of attainment. This happens over Years 7, 8, 9 and 10.
