We were blown away by the response. From the person who picked it up in Hunter Mall, and the thousands who received it in their letterbox to those who had it emailed to them - it seems that we really did manage to pack something for everyone into the first issue. And to those who stopped by our offices to pick up extra copies for friends - nice to meet you! We think we've achieved our goal of giving Newcastle & Lake Macquarie a high quality, relevant, free lifestyle magazine to be proud of and we look forward to bringing intouch magazine to you for many years to come. I'm always excited to find websites and magazines like intouch popping up. There is so much going on in Newcastle, people need to know about it! WHAT’S ON NEWCASTLE PHOTOWALKS

It’s a worldwide phenomenon for photography enthusiasts and, thanks to Newcastle & the Hunter Photowalks, we now have our very own monthly photowalks. What’s a "Photowalk" you may ask? Photowalking is, in fact, a recognised term (someone should tell my spell-checker!), which is even defined in Wikipedia. "Photowalking is the act of walking with a camera for the main purpose of taking pictures of things that the photographer may find interesting. It is often a communal activity organised by camera clubs, online forums or commercial organisations, sometimes in the form of a walking tour." Who knew! Mates, and keen photographers Dave Bean and Paul Beatty are the founders of Newcastle Photowalks. Dave & Paul created the group so that local photographers could meet and take photos. They encourage professional photographers to come along to help and amateur photographers to build on their passion by joining in and gaining insight and tips from the pros. Dave said they were happy to take as many people on the walk as possible from beginners to professionals. "We’re about walking and shooting with whoever is keen to try out their new DSLR or one they have been shooting with for years, film camera enthusiasts and even those with the trusty iPhone! We meet, walk and shoot whatever takes our fancy," he said. Dave has 7 years experience photographing people and places in Maitland, Newcastle and the Hunter. He has worked all over Australia and the Philippines. He is a dedicated musician and works as a full-time tattooer at Diabolik Tattoo in Newcastle. Coming up with unique and creative ideas is what he lives and thrives on. He loves landscape, weddings and people, but it doesn’t stop there. Dave is inspired by night photography, open shutter/low light shots and time-lapse photography. Basically anything creative. Paul has been a part time photographer for many years. He cut his teeth on live music photography in Newcastle. He also loves a day out on a family shoot or a wedding. When Paul and Dave met up and did their first landscape shoot, he fell in love with the craft of the "slow burn". Long exposure work showed him a new side to photography and finding new ways to create and see the world is what makes Paul passionate about photography. Dave & Pauls inaugural monthly photowalk was held in June at Merewether Baths and produced a range of different shots by a range of different but equally passionate photographers. 6 | www.intouchmagazine.com.au
Spurred on by the success of the first photowalk, Newcastle Photowalks will be hosting another photowalk in July and this time they’ll be joined by their well-known Sydney friends, The Photowalk Guys. This one is going to be huge! We managed to get Dave to stand still for a moment to speak to us about the next photowalk, which will start at Nobby’s on July 11th. Where did the photowalk idea come from? I was looking for either clubs or people to shoot with or anything really to be able to shoot with some other people. I often go shooting on my own and wanted to start either helping other people out or just shoot with them. So I started searching the web and found out that in the USA there were a lot of photowalk companies. I searched for something similar in Australia and nothing really came up until I stumbled upon The Photowalk Guys in Sydney. I went and did a few of their walks and asked the guys if they wanted to do one in Newcastle. They said they probably wouldn't go that far. I decided Newcastle needed this so I started it myself with the blessing of The Photowalk Guys. What photowalks have you already done in the area? This will only be our second walk. The first walk was at Merewether Baths and we have The Photowalk Guys joining us on this one now. What types of people came along? Do you have to be an experienced photographer to walk the photowalk? Not at all that's definitely the point of them. People get interested in photography and don't really know what to shoot or how to approach that subject. So that's why we have the walks to help those people out as well as advanced photographers. It mainly gives those guys a reason to shoot out of work. So we had all levels on the walk. Everyone sees things a little differently (luckily!) – did this come through in the last photowalk? It definitely did. The way each person’s life experiences and the way they view what is beautiful to look at and how it needs to be captured is completely different. This is the main reason why we get everyone to upload as many photos as they can or want. It shows the other walkers that there are so many different points of view of a single subject. What were the most memorable shots resulting from the last photowalk? There were some great shots! The ones that struck a chord for me were the ones that were not the usual photos of the
numbers on the swimming lanes but instead shot the opposite way with a backdrop of unusual clouds or reflections from pelicans. Speaking of pelicans, you chose a “winning shot” out of the last photowalk – who was the winner and why was their work selected? It was quite a hard task to do. There were some spectacular shots - some technically better than others but that is not really the name of the game here. It’s more about the point-of-view and artistic elements. The prize thing is really just a tiny part of the walk and primarily to keep the interest there, it's not the point of the walks. The walks are totally fun and if you don't want to enter that's also totally fine. The next photowalk will be held at Nobby’s headland and we hear you have The Photowalk Guys coming along – who are they and what will they bring to the pavement for this bunch of walkers? The photowalk guys are two absolutely great guys from Sydney. As I said earlier, they were not going to do Newcastle as a walk but I think that with all the interest shown in the first walk, we demonstrated to them how great our city actually is. And who wouldn't want to be a part of that! The next walk is Nobby's. We decided not to do that for the first one because a lot of photographers have shot that so Merewether Baths was an excellent first choice. Now people know what it's all about I'm really keen to see the different images taken at Nobby's. Where is your dream photo location? I have so many to list, but maybe Yellowstone National Park or Joshua Tree (both in America.) The ultimate would have to be going back to Finland and getting the northern lights. Where can we find you when you’re not hosting a photowalk? I work as a tattooer at Diabolik Tattoo on Kings St, Newcastle, but outside of that photographing all the natural areas around and in our city. I also photograph weddings and families. And every now and then fishing the banks of the Hunter River. Get along and join Dave, Paul and The Photowalk Guys as they check out and photograph, Nobbys Head Lighthouse for the first time. This photowalk will be held on Saturday the 11th of July, kick off at 4pm and wrap up around 6pm. Since then her shows have been unmissable treats - always hilarious, honest and occasionally shocking. She has sold out countless theatrical runs in Australia and has taken her shows to Montreal, Edinburgh and London's West End. The release of Judiths first book The Lucy Family Alphabet (Penguin, 2008) introduced a whole new set of fans to Judith's work. The memoir recounted touching yet hilarious stories of life with her eccentric Irish parents and her discovery at age 25 that she was adopted. The book quickly became a best seller and cemented Judith as an author. She followed this up with the release of her second book, Drink, Smoke, Pass Out (Penguin, 2012) In 2014, Penguin released a special edition of The Lucy Family Alphabet in conjunction with the McGrath Foundation. A truly awful year for Judith always leads to a great show for her fans and 2014 was magnificently terrible. Think death and early menopause and you’ll be in the ballpark. Judith is one of Australia's most popular comedians. A bestselling author, her work in television and film and her sell-out national tours have made her a household name.
Judith sprang to national attention as a cast member of the iconic Late Show in 1993. Since then she has headlined feature films, performed to hundreds of thousands of fans from the Sydney Opera House to London’s West End, has released two best-selling books and headlined two documentary series for ABC. It is Judith's distinctive stage shows that set her apart painfully honest, sharply observed and with a joke rate second to none. It is no surprise that Judith's live audiences have grown every year since her first solo show. It is virtually impossible to imagine the Australian comedy scene without Judith Lucy and luckily in 2015, you won’t have to. KARISE EDEN THINGS I’VE DONE TOUR Karise Eden first captured the nation’s attention in 2012 when she won the television series The Voice at the age of 19 with a uniquely soulful yet powerful vocal style. She broke records for the most number of singles in the national sales chart (previously held by The Beatles) and went on to have the biggest selling album nationally for an Australian artist that year. Few comics in the world are as well-loved as Steady Eddy, continually packing theatres out from coast to coast for over 20 years. When he is not standing in front of a crowd, creating massive audience laughs, Steady Eddy prefers to spend his time on deeper issues, like being an activist against coal seam gas mining and mass dolphin slaughter.

Christopher Widdows (aka Steady Eddy) is often referred to as “The Bent Man of Comedy.” Born with Cerebral Palsy, “Steady” is anything but your average funny-guy.
Steady will be joined onstage by Alan Glover. You’ve probably laughed along with Alan Glover over the years without even knowing it. Alan has appeared on many hidden camera shows in the 80’s & 90’s (like You’ve Got To Be Joking and Just Kidding) and other TV programs, either as an actor or a stand-up – which is his true love.
He’s won just about every accolade there is, including an Aria Award (that’s right, an Aria Award) and the prestigious Mo Award (twice). He has performed at the invite-only Montreal Just for Laughs Comedy Festival and the LA Comedy Store. During his career, Steady Eddy has travelled half way around the world, enjoying audiences from many different countries.
Kicking off at Sydney’s Comedy Store in 1983, Alan has travelled Australia and the world just for the laughs. Originally Sydney based, Alan moved to the Hunter over 25 years ago. He’s performed at many local comedy venues (remember SJ’s back in the day?), at the Civic Theatre as both an actor and a comedian, and at many festivals, conferences and private events. ALEX BOWEN Following his successful independent debut release in early 2013 and signing a record deal with Foghorn Records late in 2014, Alex Bowen has been bunkered away in the hills of Byron Bay writing and recording his new single The Book of Life. The new upbeat record briefly continues the blues/country feel though it unveils a real pop/rock sensibility, with Alex once again proving his place internationally as a genuine, gifted singer/songwriter.

NEIL SLATER ON SHARING NEWCASTLE WITH THE WORLD WORDS: Quentin von Essen IMAGES: Shane Williams Known and admired by many, restaurateur Neil Slater has always been a very keen and vocal supporter of Newcastle. While he is not short of ideas himself, Neil has always demonstrated a willingness to support others in making Newcastle a better place for all. Growing up in Waratah West as the eldest of five children, Neil was schooled at Marist Brothers in Hamilton before attending teachers college and qualifying as a teacher in 1978. After deciding that teaching was not for him, he entered the world of hospitality working as a waiter and barman at various bars and restaurants including 5 years in Thredbo – determined to one day have his own restaurant. At the age of 30 Neil met his wife Donna Davis and a great combination was formed. In 1987, they left Thredbo to return to Newcastle where he and Donna bought a house and with enough equity in their home – thanks to escalating house prices at the time, were able to open their own restaurant – Scratchleys On The Wharf . Today Donna and Neil have three children Jackson 23, Elkie 21 and Zac 17. Neil and I caught up over a cup of coffee (a hot chocolate for him) to discuss the various projects - the wins and the losses - that he has been involved in and his views on the future direction of this city he loves so much. 18 | www.intouchmagazine.com.au
As the owner of one of Newcastle’s finest dining spots, how did it all come about, how did you manage to secure such a fantastic location for Scratchleys On The Wharf? In 1987 alfresco dining in Newcastle was one of the fastest growing dining trends and with the Queens Wharf at the time doing so well, I just knew that the foreshore was the place to be. At that time they were moving the Stockton Ferry Terminal, so I made a few inquiries and learned that the site was going out for tender. Fortunately I managed to win the tender (which I also helped write) and Scratchleys was opened in 1989.
I often see OzHarvest vans travelling around Newcastle and Lake Macquarie. What is Oz Harvest and what is your involvement? OzHarvest is an amazing charity established in 2004 to collect excess and unwanted food, and redistribute it to people in need. It’s a not-for-profit organisation that now distributes approximately 120,000 meals a month to more than 165 charities. The vans collect excess food, fresh produce and unsold fresh meals from restaurants and catering companies across Sydney, Canberra, Newcastle and Wollongong.
I only became involved after listening to a presentation from Ronni Kahn – the founding Director of OzHarvest (and who I consider to be a saint) talk about food wastage as well as the social and environmental impact of this wastage, and what could and should be done. That must have been unbelievably disappointing for you after putting in so much work and also spending so much money during the process. What happened next? Frustrated and somewhat deflated, I then threw my efforts into another project and that was to bring OzHarvest to Newcastle. Working on OzHarvest was a welcome distraction and a far better alternative to becoming all bitter and twisted over Nobby’s.
But I do not want to take the credit for the success of OzHarvest. There are far smarter and more capable people than me out there. Let’s face it, anybody can come up with an idea or even improve on an idea. In reality, it’s those people that actually make it happen that are the really smart ones. The secret to success is to include very capable and smart people in these types of projects and let them get on with it. Without people like Leonie Young, Monique Maguire and Shane Johns, OzHarvest in Newcastle would not be successful.
COVER STORY SHARING NEWCASTLE Fernleigh Track to Nobby’s – a distance of approximately 21 kilometres. In reality this is not a new idea - but yes it is definitely worth pursuing. I don’t want to own the idea or even be the person who comes up with the idea, I just want to be a part of it and applaud the end result. Of course there will be the doubters, those that claim there is no money or that it is impossible and cannot be done. Yes it’s going to be expensive but given the significance of the tunnels to the coal mining industry – perhaps we can secure mining sector funding. As for whether it could be done - well we have access to the best mining and tunnelling experts in the country, if not the world, to call on to answer that question. Personally, I support the project, and like the Memorial Walk, I would prefer to keep the ocean in view instead of taking the walk underground and going through tunnels. Will the recent success of Memorial Walk help in gaining support? Nothing breeds success like success. After the success of Merewether Surf House and the Memorial Walk project – we need to capitalise on this success and keep the energy up. We are on this big verge of change and we need to use it to embrace tourism. It is up to us to make this wonderful city of ours a better place to live.
Another successful project that paid off, after years of effort and dogged determination is the Memorial Walk, which makes up part of Bathers Way. What were the challenges here – and how were they overcome? There were many, many challenges but the biggest was no doubt the raising of $4.8 million to build the Memorial Walk. It must be said that the former member for Newcastle – Tim Owen was instrumental in sourcing $3 million in funding for the project. My thoughts were that it was an unbelievably good project – but the walkway needed to maintain a view of the ocean for it to be truly great. The issue was money. I involved everyone I could think of – Jodi McKay, the then member for Newcastle and also John Tate. Long-time friend – former class mate and collaborator, architect Barney Collins then drew up the designs for the bridge. After months of frustration and getting nowhere, I eventually received a phone call from Tim Owen who loved the idea and was determined to make this project happen. He then approached BHP Billiton in Melbourne and gained a $3million contribution to the project. Newcastle City Council agreed to contribute $1.5 million. What of Newcastle and the years ahead? What of Newcastle’s tourism offering? I am firm in my belief that Newcastle should expect more for itself. After all, Newcastle is a significant contributor to the State’s GDP and therefore deserves nothing less than the best there is. We deserve and should accept nothing less. What we build and improve on has to be good for Newcastle now and well into the future and of course for tourism. But, tourism has been a slow and frustrating journey for Newcastle, which has been overshadowed by the success of Hunter Valley Wine Country as a popular tourism destination. However, having said that, I believe that Newcastle now has the critical mass to make tourism work. Newcastle had a brief burst of energy in the tourism sector during the post BHP days – the period between 1997 and 2000, but fell off the radar once the city recognised that it was going to survive the closure of BHP and therefore tourism did not get the attention it deserves. Unfortunately, despite having a great deal to offer the tourist, Newcastle has a relatively small and under developed tourism industry and is therefore unable to compete for the dollar for
dollar funding model that is currently in place. The reality is that the funding model really needs to be adapted if the state is going to take tourism seriously. What learnings should we take from those projects that have been passed in and those that have gone ahead? When it comes to learnings – we need to learn from other cities in countries far more established than ourselves. When you travel to other countries around the world with histories far older than ours, you see just how they have made use of their ancient buildings – be they forts, castles, ancient homes, etc. This is an effective and adaptive use of assets. It’s frustrating to see so many beautiful and iconic buildings in Newcastle going to waste instead of getting involved in Public, Private Partnerships (PPP) which would allow us to more effectively preserve them - retain the building and with it our local history and heritage. The Lighthouse is one example, but so is the Post Office. The solution is PPP – after all it’s happening in every other part of the world. So why can’t it happen here? These old facilities are expensive to retain and maintain and they therefore need a sustainable business inside them to be viable. The challenge for Newcastle is to get our head into that space. Merewether Baths is an excellent example of heritage and technology coming together. The pool is an absolute asset to the city and now has a sophisticated pump system – pumping out clear and clean water. Now we just need to redevelop the pavilion and make it a self-sustaining option. Merewether Surf House is another classic example. The Surf house as it currently stands is a result of 20 years of debate which resulted in what it is today. Look how well it is working, it’s just a pity that it took so long to get there. You can consider that lost opportunity. Do you see an extension to Bathers Way Walk – linking Merewether to Burwood ever happening? Do you support the concept? This is all about re-opening the three old mining tunnels between Merewether and Burwood beaches and, much like the Bondi-to-Coogee path, this would be a wonderful way to extend the Bathers Way Walk. This would allow people to walk from

According to Wikipedia “Fashion is a popular style or practice, especially in clothing, footwear, accessories, makeup, body piercing, or furniture. Fashion is a distinctive and often habitual trend in the style in which a person dresses.” A relatively broad definition I’m sure you will agree. So I started thinking, what is in fashion at the moment. We all know what we like, but, is it fashionable. OMG, I would hate anyone to think that I was a "dag" heaven forbid. "Dag" - is that even a word anymore? Hmmm, what word do we apply to someone who is not in fashion? According to the urban dictionary, the word dag is still in vogue as we can say “I'm a bit of a dag today, I'm wearing my trackie-daks”. Now we all know that trackie daks are not in vogue and are utterly daggy. We may like to wear them around the house, (note "around the house" not out shopping) and not the type that show your bottom or g-banger. So for the record, trackie daks are not fashionable.
Jeans, mmm, jeans are fashionable so what is on trend for the coming seasons. According to Pop Sugar’s ultimate guide to Spring Denim, chances are, we are all in need of an update. Bugger, there is namely a whopping seven styles! Slashed, white (yuk), boyfriend, overalls (really – the denim jumpsuit circa ABBA Arrival 1975 is much more appealing in my book), cigarette leg, flairs and patchwork. Nothing new in any of this and I still prefer my 501’s so I guess that makes me a bit of a dag. So, in my quest for fashion supremacy I kept googling – what are the key trends for Spring 2015. Now I know that you are thinking but it's freezing outside – the truth is, most of the good winter stuff is gone and the boutiques are gearing up for Summer. Sad but true. Now is the best time to snag an amazing winter outfit especially if you are a size 6 or 18 because that’s what tends to be left on the sale racks right about now.
Trend 7 Cold Shoulder, again – I like this one, a slather of fake tan, shimmy those shoulders voila! What’s not to like. Trend 8 The Sultry Suit Trend 9 Anything white, and ladies for the grand finale... Trend 10 Cool Culottes. Yes, I am serious. Now that is something to think about. I had a fabulous pair of culottes when I was 10, and I wore them with a white boob tube, three of these Springs key trends. So there it is... I have always been fashionable, nothing daggy here LOL!
But, getting back to the original idea because we all want to be fashionable, what is coming for Spring 2015. So ladies here it is. The good peeps at Pop Sugar are putting their money on the following trends: Trend 1 Stripes – direction doesn’t matter: vertical, horizontal, diagonal (there are those of us that know better, horizontal stripes don’t always work). Trend 2 Front Folds – this is where ruffles, folds and frills decorate the torso (note: stay well clear if you have boobs). Trend 3 The Sexy Sheath – we would have called them the boob tube dress back in the day, the good news is that there is nothing here made from Terry towelling. Trend 4 The New Shirt. To be honest, there was nothing very new about it to me, it buttons up the front and has two sleeves. Trend 5 One of my all time favourites “Pastels”. Pastels for Spring, how original, I cannot see myself wearing sky blue anytime soon, call me daggy if you will. Trend 6 Cobalt Blue – this is probably on the money.

Long hot showers, crisp winds and airconditioning suck all the moisture out of your skin, so winter calls for deep hydration. Dry skin can lead to signs of ageing, itching and trouble getting your makeup to stay put. Not good. All-year maintenance is key and that means switching up your routine. The best part? You won’t be scrambling to hydrate, exfoliate and buff your skin into shape for bikini season when we start to see the first signs of spring. LIPS You probably notice that the second the wind picks up, your lips start to feel dry and chapped. You can keep them pretty and plumped by always having a lip balm on you, but if you need a little extra help, here’s what to do. When you step out of the shower, lightly brush over your lips with a towel to remove any dead skin. Next, use a lip scrub to exfoliate and follow up with a slathering of lip balm, then reapply as needed.

When choosing your skirt or dress, avoid short and tight styles and go for longer lengths, asymmetrical hemlines, sharp lines and heavy fabrics. This look needs to be luxe and layered to work! Your dress or skirt will cut your legs off at a certain point, so lengthen them by wearing heels. A dress or skirt over leather pants is perfect for the office or going out – two occasions that can be very tricky to dress for during winter. Layer up different fabrics and textures. They’ll contrast against the leather pants and you’ll look like you’re casually waiting outside Paris Fashion Week (bonus). Since your outfit is already quite busy, keep your accessories simple. Looking out over one of the world’s most picturesque harbours, the Queen’s Wharf Hotel is hard to beat for a relaxing meal or drink with family, friends or colleagues. Before it was renamed the Queens Wharf Hotel, this popular restaurant and bar was known as The Queens Wharf Brewery consisting of two bars, a restaurant and electronic gaming machines and was a popular venue for food, drink and live entertainment. For many growing up in Newcastle it was considered a rite of passage and many a good time was had sitting under the sails with a group of friends on a hot sunny day or a warm evening spent on the balcony overlooking the dark waters and lights of the harbour. That was before increased competition in the local area for licensed bars, the enforcement of more stringent liquor laws and the overall need for repair and renovation to the premises took its toll. Current owners, Claire and Ben Dawson purchased the ailing hotel in May 2014 and immediately set about renovating the iconic landmark
For Claire and Ben, the aim was to use as many recycled materials as they could – including a 300 year-old Russian elm for part of the renovations and involve as much local labour as possible. Much of the seating, steel-work and upholstery work was carried out by local Newcastle businesses. With the floor’s colour modelled on driftwood and the huge fireplace lined with granite boulders inspired by the break-wall, the hotel with its new and modern nautical flavour has been designed to suit its unique harbourside location. The music lives on and live music is still very much a part of the overall experience at the Queens Wharf Hotel, but without the loud rock bands of the previous venue. Instead the music is more low key and easy listening with DJ’s and solo artists taking to the upstairs stage. Open 7 days for lunch and dinner, the menu has undergone a similar transformation and is designed to deliver new, fresh taste experiences for the hotels clientele. As you would expect, the menu features plenty of fresh seafood as well as a host of other tasty dishes. The Lunch and dinner menu changes seasonally and includes locally sourced produce. Menu items include Sydney rock oysters and a choice of small dishes to be shared such as Australian salt & pepper squid, a seafood mezze made up of natural
oysters, king prawns, battered barramundi, soft shell crab and smoked Tasmanian salmon and a charcuterie plate consisting of a rotational selection of salami, cured ham & chorizo served with warm sourdough and pickled vegetables. Also available is a selection of pizzas. For those who prefer something lighter and greener, there is a choice of four "not so average" salads to choose from such as a roasted beetroot and kale salad with quinoa, goat’s cheese, pine nuts with a honey balsamic dressing. My favourites are the panzanella salad involving grilled chicken breast, cherry tomatoes, bocconcini, garlic croutons, grilled peppers, and the house cured Salmon salad with avocado, wild roquette, asparagus, lime and mango dressing. For mains there is the market fish of the day, the organic ginger beer battered Barramundi fillets, a panko crusted chicken breast, a marinara seafood pasta in a rich napolitano sauce, Tasmanian crispy skin salmon, an Emerald Valley sirloin cooked to your liking and the Emerald Valley scotch fillet topped with king prawns and salt and pepper squid. Grazing or small plates for sharing More and more restaurants are featuring small plates on their menus. These are meant for the table for a few people to pass and share. This trend takes its cue from traditional Spanish tapas where guests can sit leisurely and graze from many different dishes at once. Whether it’s called tapas, divvy dishes or meze, just about every culture has their version of these tasty little dishes. Italy has the antipasto platter, in Turkey and Cyprus its mezze, Mexico its antajitas, Argentina has the picada and Venice the cicchetti which are typically eaten for lunch or as late-afternoon snacks. The common theme amongst them all is that they are designed to be shared and served at ease and encourage conversation. Fermented foods While they have been around for ages in Asian grocers and continental delicatessens, fermented and pickled foods such as kimchi, sauerkraut and miso are increasingly being used in restaurant kitchens and are also making their way onto the shelves of specialty stores. Fermented foods are foods which undergo a process called lacto-fermentation creating a food which acts as an excellent probiotic and with great health and digestion benefits. Fermented foods have a complex flavour and are a great addition to main meals or just as a side dish or snack.

Lake Macquarie City Council will host a series of community workshops aimed at helping residents cut down on their food waste. Council’s Manager Sustainability, Alice Howe, said the Lake Mac Food Lovers Workshops will help residents reduce food waste and save them money. "It is not a very well-known fact that on average, a third of the waste that goes into the average garbage bin in Lake Macquarie City is food," Ms Howe said.

They soon discovered that they were onto a really good thing and decided to trade in the city life and move permanently to the Hunter where they started producing their own wines under the McLeish Estate Wines label and expanded their plantings of Semillon and Chardonnay to also include Verdelho, Sauvignon Blanc, Shiraz, Merlot and Cabernet Sauvignon.
With Andrew Thomas, who earned his stripes at Tyrell's, as their winemaker McLeish Estate are widely recognised for producing an amazing range of single vineyard Semillon's that are regularly winning both national and international awards and are celebrated throughout the world. With a wine that has become a true champion wine of the world, the much decorated McLeish 2007 Semillon was awarded the World’s Best Semillon at the 2012 and 2013 London International Wine Challenge and took home three trophies at the 2013 Sydney International Wine Competition. In 2014, the McLeish Estate Semillon went on to achieve unprecedented success, receiving four trophies at the Sydney Royal Wine Show for Best NSW Wine, Best White Wine, Best Single Vineyard Wine and Best Small Producer Wine, as well as trophies at the Sydney International Wine Competition and the 2014 Australian Boutique Wine Awards where it was awarded trophies for Best Semillon and Best White Wine of the show. The 2007 Semillon then also picked up trophies at the 2014 Australian Boutique Wine Awards and NSW Small Winemaker Show as well. With passion at the helm and a continual pursuit for excellence - which is largely behind all successful endeavours, McLeish Estate have time and again proved that the 2007 Semillon is no "one off" success story. ASIAN FLAVOURS ABOUND AT A LOCAL FAVOURITE Oishii Japanese Thai Restaurant is one of few restaurants that are open 7 days a week, so we decided to take up the opportunity to have dinner at this popular Pokolbin restaurant in the middle of the week and were surprised to see just how busy this charming family owned and operated restaurant was. Dining at Oishii is like few other restaurant experiences and it is easy to see why Oishii has become a highly recommended and favourite dining destination amongst locals and visitors. Located within the Tempus Two complex in Pokolbin and overlooking the architecturally designed amphitheatre and vines, Oishii provides a conveniently located, relaxed and affordable dining alternative with dishes designed to please every palate. The menu at Oishii is a combination of two Asian cultures - Thai and Japanese, and includes traditional Thai favourites such as Thai fish cakes, stir fried vegetables, chicken cashew nuts, green curry chicken and other fragrant Thai curries right through to Japanese dishes that include assorted sushi and sashimi selections, teppanyaki and teriyaki. There are also a variety of vegetarian dishes. We decided on the chicken satay and assorted sushi and nori rolls for entree as well as the miso soup which proved to be a perfect accompaniment to the Japanese dishes. We then made a selection of three Thai
dishes all served with steamed rice for main courses. The first included the lamb yellow curry which was selected from the specials board. This dish was superbly presented and the lamb deliciously tender with just a hint of ginger and crushed garlic. The sweet and sour chicken - looking colourful and healthy, was served with cucumber, tomatoes and shiitake mushrooms and with a tangy and extremely delicious sweet and sour sauce. Our last dish was our favourite and a very traditional Thai meal - the Panang duck curry and as I later discovered a very popular dish amongst Oishii's patrons. It came served with juicy and generous slices of skinless duck sitting within a deep-flavoured Panang curry sauce and after the first taste it was easy to see why this dish was such a favourite... Absolutely delicious and left us wanting more. The dishes are perfect for sharing and ideal for families or groups of friends. The setting is minimalist and with a Thai-themed dining room. Diners also have the option of dining outside on the terrace overlooking the vines - a perfect setting for those warmer days and evenings. The Newcastle and Lake Macquarie art galleries are also ideal venues to paint away your children’s holiday blues. A different workshop will be held at Newcastle Art Gallery during each week of the school holidays. Week one (June 30 – July 3) will feature Paper Sculpture and Patterned Drawings, inspired by the current exhibition Distillation: the art of Brett McMahon. Discover the wonders of constructing a colourful wall sculpture from paper and creating geometric drawings, with sessions designed for children aged 5-8 years (July 2, 3); aged 8-12 years (July 1) and the sibling friendly 5-12 years class (July 2, 3). Week two (July 7-10) will focus on Moving Mobiles and Abstract Formations, which will see kids create a retro ‘70s hanging sculpture with moveable parts. The Newcastle Museum is a great place to take the kids any time of the year, with ever-changing exhibitions and the fabulous Supernova and Mininova hands-on science centres that combine education and entertainment in an interactive way that appeals to kids of all ages. But the museum also has a number of adventurous activities planned especially for these school holidays. An Adventure with Song Writing will take kids on a musical adventure on July 1 and 8 as they create their own song on a ukulele with help from a few talented members of the Newcastle Youth Orchestra ($10, ages 8-12). An Adventure with Science: Science Show (July 7) will explore the incredible properties of liquid nitrogen. The presenters will use balloons, rubber balls and even a banana to show kids why liquid nitrogen is the coolest thing they’ll experience this winter. The show is aimed at children of all ages and is free. The Great Drawing Adventure on July 1 and 8 ($10) will encourage children aged 8-12 years to explore the museum with a sketch pad and pencil, drawing their “adventure” as they go while An Expedition in Zines will show kids how to draw, edit and create their own “zine” (July 10, $10, ages 12+). Of course, families looking for a whole day out and willing to venture a little further afield shouldn’t miss the annual extravaganza that is Snow Time in the Gardens. See the Hunter’s popular Hunter Valley Gardens transformed into a winter wonderland, with 13 snow-related activities on offer, guaranteeing fun for the whole family. With everything from the Snow Time Play Zone, the Giant Snow Globe – a new addition to this year’s event – as well as the chance to race down the Real Ice Toboggan, this really is the best way to enjoy the true delights of a snowy winter without having to leave the Hunter!

KEEPING YOUR IDENTITY SAFE Australians are more concerned with identity theft than a terrorist attack or plane crash. Identity theft is fast becoming a major epidemic of the 21st Century and occurs when a criminal uses another person’s personal information to take on that person’s identity. Personal information is the currency of the world of cybercrime and people are becoming increasingly concerned about the security of their personal information – especially when using the internet. We live in a digital world where we share information online and with that comes many benefits but also the risk that our information may be compromised. Let’s face it, most of us have a wealth of personal information that we keep readily available – credit cards in our wallet, mail, public and personal records, information saved in our computers and information posted on social media or online blogs. Scammers will go to great lengths to steal your personal details to commit fraudulent activities such as making unauthorised purchases on credit cards, open bank accounts, take out loans or carry out other forms of illegal business using your stolen details. They may even on-sell the information to other scammers for further illegal use.

If so, (Gill suggests) you have some healing work to do around money.” I encourage you to start telling yourself ‘you are worthy of abundance and receiving wealth’ and get clear on what you want in life to give your money a purpose.

A recent (and also alarming) survey by credit bureau Veda shows that almost 1 in 5 Australians (17% of the population) have had their personal information stolen at some stage. NSW had the highest proportion of residents who have been a victim of identity theft (19%), ahead of WA (17%), and Victoria and SA (both 15%), according to the national survey of more than 1,500 Australians. The opportunities and methods used by scammers are seemingly endless and although there is no guarantee that you will never be a victim, there are steps you can take to minimise your risk:
Victims of identity theft and fraud will vouch that having your identity stolen can be both emotionally and financially devastating. It can take months to reclaim your identity and the impact of having it stolen can last for years.
•Keep your credit card and ATM cards safe and do not disclose your personal identity number to anyone.
Methods used by scammers to obtain personal information include rummaging through household rubbish or stealing personal mail, setting up fake competitions and surveys online and also setting up fake social media accounts or online dating profiles in an attempt to connect with you. Cunning scammers will also try to trick you into providing your personal details by sending an email or text message that appears to have come from a trusted source such as your bank, telecommunications or energy provider. These scams are known as ’’phishing’’ and are designed to trick you into revealing your banking details. Scammers will even create ads for non-existent jobs and use the information provided in the application or simply hack into your mobile device or online bank account while you are using a public Wi-Fi service.
•Take care when sharing your personal details such as date of birth, home address, tax file number or driver’s license numbers as these are your unique identification records. • Be careful what information you store on your computers and mobile devices •Secure your Wi-Fi network.
•Choose your passwords carefully. Set and use strong passwords which are difficult to guess and change them regularly - especially when using online banking. Don’t use the same password across a number of accounts or profiles. Don’t share your passwords with anyone. •Put a lock on your mailbox to ensure that your postal mail is not accessible to others •Shred all documents containing personal information before throwing them out (any bills, credit card applications and bank statements). •Regularly check your bank account and credit card statements to ensure that suspicious transactions are detected. •Get a copy of your credit report to ensure that no-one is using your name to borrow money or run up debts. Copies of credit reports can be obtained free of charge. THE REAL REAL ESTATE ROLLERCOASTER Buying a home is a process fraught with emotional ups and downs. For most people, it will be the most expensive and involved purchase they ever make. On top of the undeniable importance of this purchase, is the indisputable lack of time one has to make a decision before purchasing a home. The average amount of time a potential homebuyer spends looking at a prospective home is just 96 minutes! For a home that you may spend the next ten to twenty years living in, an hour and a half seems like an unjustly short amount of time to make such a drastic decision. This "hot" decision-making environment, where the pressure is on, is one of the key contributors to a buyer's emotional stress. But, the fact is, good homes sell fast, and buyers have to be ready to commit to a purchase in a short time. This said, the "sure fire" way to make a good decision in such a short period, is to learn to become a smart, analytical shopper. Not that emotions need to go entirely by the wayside. You must know when emotions are playing into your decisionmaking process, what is at the core of those emotions and whether or not they are helpful to your process. Be your psychologist, and the sooner you'll get off the doctor's couch and into a new home! One approach to help mitigate the emotional roller coaster of the buying process is to take the time to set out your specific priorities in terms of what you want and need in your new home. Ask yourself,
"in order of importance, what are the most important elements for my/our new home?" Proximity to schools, the location of the neighbourhood, commuting distance, amount of work that you’re prepared to do to improve the home, energy efficiency, shopping accessibility, and recreational facilities are just a few of the considerations a buyer should prioritise beforehand. If purchasing with a spouse or partner, you may discover your priorities are slightly or even greatly different – so do it together. It is very important that you spend the time to make compromises and get on the same page as best you can before you start home-hunting. Other aspects of your priority list may include the type of home you are after. These parameters could involve the size of the home or a particular style of home. If you've locked into a particular style of home, this might affect the neighbourhood parameter of your search, as not all houses of certain styles are in every neighbourhood.
If you’ve taken the time listing out and prioritising your wants and needs, you are now in a position to start looking around and ranking based on how well they fit into your priority system. Of course, there will need to be concessions to be made here. It may be difficult to find a home that fits your every single priority in exact order - but at least you've done some good analytical homework in advance and have a system for ranking your prospects.

Another tip for dealing with emotions is to catch yourself when you are honing in on one particular feature of a home as the "dream feature" of the home. A "dream home" is exactly that because it satisfies those myriad components (priorities) that create "your dream of your home". You may want to check in and ask yourself if you’re being clouded by one enticing feature and have lost touch with your list of priorities. Another dangerous aspect of buying a home based on your "gut" feeling is that your guttural instinct may be good for you, but not so great for resale. It is, in almost all cases, very important that you consider the potential re-sale value of your home as one of your top priorities. You don't want to be stuck with a "dream home" that turns out to be everybody else's nightmare. The investment aspect of purchasing a home lies in its resale value. That doesn't mean you have to buy in a well-established, totally investment-proof neighbourhood. You may have done your homework and feel confident in buying in a neighbourhood that has great potential for five to ten years down the line. Likewise, the home you are investing in may need improvements that you have the funds and the expertise to accomplish. But, you must at least consider the resale value of your potential home. Otherwise, you could be investing in a money pit, that you'll never be able to get off your hands. Keep in mind, smart sellers are bound to know the realm of buyers emotions, and will appeal to your weaknesses. Keep a critical eye, especially when a home seems to smell of professional home staging. It's not that home staging is trickery or dishonest, but you might need to work extra hard to look beyond the beautiful and well-appointed furniture, the incredible artwork, and the enticing smell of apple pie - as none of the above are included in your purchase. Just make sure you look at the house itself and not its decor and set-up. Oh - and DON'T EAT THE PIE! If all these steps have been taken, you've approached the searching process having analysed and prioritized your wants and needs, and you've considered the resale potential of the properties, then you can allow your emotions to guide you somewhat. Perhaps you've been lucky enough and smart enough to mine out two potential properties that both fit your priorities and parameters, at this point, a bit of the old gut instinct can refine your process and actually help, and not hinder the decision-making process.
