A lot has changed at Westfield Kotara since it was officially opened in 1965. Over the years the iconic shopping precinct has undergone several changes of ownership, a number of new names (remember shopping at Garden City, or even Kotara Fair?) and millions of dollars of refurbishment and redevelopment. So what better way to celebrate its 50th anniversary in 2015 than by taking the Westfield Kotara experience to a whole new level? This month will see the launch of a $55 million dining and entertainment development, the likes of which has never been seen before in Newcastle. Embracing the region’s love for the great outdoors, Westfield Kotara is going alfresco – transforming level three of the centre into a lifestyle precinct that invites shoppers to “escape to the garden” on The Rooftop. But it’s more than just a marketing tagline. Every element in the design has been carefully selected to help create a truly welcoming area – an embodiment of Newcastle’s laid back lifestyle fused with the beauty and serenity of the Hunter’s renowned vineyard region. The minimalist concrete and glass favoured by the centre’s lower levels has been left behind for an abundance of lush green foliage and the warmth of more than 5km of handsome ironbark timber decking, sourced close to home in Taree. Beautifully styled to make you feel right at home but luxurious enough to make you wish this was how your outdoor area actually looked, The Rooftop also incorporates more than 220 individual furniture and bespoke styling pieces and a series of elegant exposed brick chimneys scattered throughout the openair dining precinct. A landscaped garden and playground will help it feel like home for all ages, while a grassed area and permanent stage will ensure The Rooftop is a place to go to be entertained, not just to eat. And there will certainly be plenty of entertainment on offer especially in the lead-up to Christmas, with a range of events, exciting activities, special guests and live music planned to make this a festive season you won’t forget. Of course the way it has been designed means the space will be a hive of activity year-round, with musical performances, kids’ entertainment and community activities providing ever-changing opportunities for residents and visitors alike to discover and enjoy.

While the look of the open-air dining precinct will be distinctly Hunter-inspired, the tastes on offer come from much further afield with an array of international flavours on the menu including Greek, Asian, Mexican, Italian and Portuguese. Many of these will be looking to tempt the tastebuds of Novocastrians for the first time, never having operated in the region before, becoming a part of The Rooftop’s next level dining experience. Among these is Criniti’s, a family-owned restaurant that will bring its signature slice of Southern Italy to Newcastle for the first time. Boasting an indoor and outdoor seating area, the restaurant will be complete with Criniti’s famous wood-fired pizza ovens, an in-house gelato bar and outside gelato cart and will include delicious Italian pastries, cakes and desserts from the in-house Pasticcercia. Dishes served will be an extension of the current award-winning menu created by head chef John Lanzafame and will include fresh pasta and Criniti’s famous one, two and three-metre wood-fired pizzas. The interior will have Criniti’s unique watercolour paintings of Italian icons and will include a sporting helmet signed by Italian motorcycle legend Valentino Rossi. The international journey of flavours will also cross the Mediterranean to allow Novocastrians to eat like a Greek local at Zeus. Bringing wholesome Hellenic street food to Newcastle for the first time, Zeus gives Australians an innovative food experience that incorporates the founders’ passion for Hellenic food, culture and tradition. The restaurant interior will also capture the essence of a traditional Greek kitchen, with its iconic sleek, white-tiled walls, bronze fittings and wooden shelves. Sample Zeus’ famous gyros varieties including, the ‘Uncle Tzimmy Classic’ (a classic gyros as the name suggests) and the ‘Papou Niko,’ a salty chargrilled pork wrapped in pita with Aegean slaw, onions, preserved lemon mayo and parsley. And be sure to finish up your meal with Loukoumades, a traditional Greek dessert sure to satisfy any sweet tooth!

A premium entertainment venue in every sense, it will boast one VMAX cinema, two Gold Glass cinemas and five General Admission cinemas, with state-of-the-art digital technology providing the ultimate big screen movie experience.

Another restaurant looking to conquer Novocastrians’ love of sweet dishes will be San Churro, with the Spanish chocolateria heading to the Hunter with their heavenly signature dish – churros. Made to an authentic recipe and cooked fresh to order, they are dusted in sugar before being served with a dip-cup of pure melted couverture chocolate or Spanish caramel, in what is the traditional Spanish way to start a day or end the night. Now that’s one traditional I’m sure Novocastrians will be more than happy to adopt!

This will be all (choc) topped off with a jaw dropping candy bar, making your trip to Event Cinema Kotara an experience like no other. But while a bucket of popcorn from the candy bar may satisfy the film buffs, foodies looking for something more substantial will also be sure to find plenty of reasons to savour a visit to The Rooftop.

Like the sound of these three? Well there are plenty of other restaurants to sample for the first time, including Kinn Thai (traditional Thai with a twist) and Mad Mex (bringing the best Baja-style burritos to you). The Rooftop will also be home to a host of old favourites offering a new look and feel, such as Noodle Hut, Grill’d and Lonestar Rib House.

Those who want to take their entertainment experience to the next level will also be well catered for when the centrepiece of The Rooftop’s entertainment precinct is unveiled next month Event Cinema’s “best-in-class” 8-screen complex.

Nando’s will also be on hand to add some extra spice to Westfield’s next level dining experience with its famous butterfly-cut, flame-grilled peri peri chicken. The Nando’s cockerel first landed on the shores of Western Australia in 1990 in Tuart Hill, Perth, and today is much loved by Australians across the country. Each one of the Nando restaurants has its own special design and earthy textures and colours inspired by the sunny Afro-Portuguese roots. The Kotara restaurant will feature Lutindzi Grass Baskets, which are currently being handwoven in Swaziland and will help bring the colours of Africa to life in Newcastle. Can’t wait to sink your teeth into one (or all) of these dining delights? The Rooftop dining precinct will be officially launched on Thursday, November 26th, while the cinema launch will follow in mid-December. Not a bad way for Kotara to celebrate its 50th birthday – and the best thing is, we’re the ones getting the gift!

Australians love a World Cup campaign. Cricket fans rejoiced after securing the prized piece of silverware on home soil in March, football followers were devastated with our early exit in Brazil during 2014, and as we go to print the Rugby World Cup wraps up in the UK. The members of these teams are household names, adorning cereal boxes and magazine covers across the country. But there’s another squad of elite Australian representatives flying under the radar, quietly toiling away in a bid to qualify for their own tilt at World Cup glory.... They are the Australian Baking Team. 6 | www.intouchmagazine.com.au

While their story might not have hit the headlines too often (until now!), these four men are hoping their passionate pursuit of a prize no Australian team has ever secured before will finally put their field of expertise on the map.

The bakers were selected last November and since March they have been practising individually as well as getting together for a monthly team session. Their preparation schedule also includes four gruelling week-long training sessions at the Hunter TAFE Hunter Valley Hotel Academy at Kurri Kurri.

You need to be not only well drilled and timed and understand all the technical stuff you need to know to fit into that eight hours of comp time, you have to be fit as well.

You might have a crowd of 5000 to 7000 people in grandstands watching all these teams compete in their little booths, it is super addictive. “Australia’s never gone past the qualifier before, never been to France but I think this is a strong, very well experienced team.” And Mr Gibson would certainly know just how good you need to be, with a long list of international competitions under his belt as both a participant and a judge. This includes the Pastry World Cup and its equivalent for chocolatiers, the World Chocolate Masters. And if he can secure a spot at the Bakery World Cup he will become the only person on earth to have participated in all three.

Thankfully for the Aussies, two of the biggest threats in the Asia Pacific region, Japan and Taiwan, have already qualified for the French final after placing on the podium at the last Bakery World Cup. Mr Gibson said they haven’t talked about who their biggest rivals are, instead focussing on their team game plan to ensure they end up in the top two of the six teams battling it out in Jakarta. As team captain and the bread specialist, a lot of the burden will sit on Dean Tilden’s shoulders. During the eight hour competition he will have to prepare and bake 10 different doughs – including everything from a sourdough and a French baguette to a bread of country, a mystery bread and the local speciality of the Asia Pacific region, the traditional plain steam bun.


COVER STORY AUSTRALIAN BAKING TEAM “As a teacher, I’ve competed in Italy, Japan, France, Singapore, I’ve been to so many countries in pastry and chocolate and bread, but as an educator it’s exactly what we should be doing,” Mr Gibson agreed. “The biggest difference between Australia and those other countries is that most of those schools invest in their teachers to go and do these competitions to attract students. Hunter TAFE is a major sponsor (of our team), which is awesome. I’m really proud that they’re on board with this team and they’re buying into the benefits of having two guys not only representing the country but being teachers as well - I think that’s pretty cool.” Sponsorship is an important aspect of the team’s World Cup bid, given Australia’s distance from the host countries. Mr Tilden said companies were now getting on board to support the team, which is being managed, coached and funded by the Southern Cross Baking Group. This group was co-founded by Mr Noy in 2009 as a means of exposing team members to these high level competitions, which in turn provides them with the latest baking knowledge, technique and innovation that they can then pass on to the next generation of Australian bakers. “It’s a serious business and an expensive business. We’re chasing sponsors still, it takes a fair bit of funding because we have to go such a long way with freight,” Mr Gibson said. “And for Dean, he has a very strict criteria, which is the same all over the globe. He has to make French baguettes with French flour.

Added to this, Mr Tilden said, is the pressure of ensuring all his finished products end up within the narrowest of weight ranges: “You’ve got one gram, two grams either way for your weights and if you’re over that you don’t get any points for it.”

“So for that we had to import a couple of tonnes of French flour for us to practice with because French flour is very different to Australian flour. I always say we’ve got to be more French than the French if we’re going to be a chance and that’s definitely our goal. Australians love the underdog and I think this story is about that, we’ve got four guys that are going to take it to the big countries.”

But, as they say, there is no ‘I’ in team – with the teammates able to work together to support each other during the event. “We’ve all got our own roles,” Mr Gibson said. “Ben Haslett is the Viennoiserie candidate, which is the French word for pastry. So he does the croissant, Danish, laminated brioche and some other sweet doughs; Dean is the artisan baker and he has probably the toughest task because it is a bread competition and a lot of the big marks are on the baguettes, the sourdough, bread from your country. “But while we all have our own roles we all also cross over, meaning I need to be able to help Ben and I’m doing some moulding and some finishing for Dean so that if anything goes wrong on the day we are able to multitask. And that’s the way a champion team works, rather than as a few strong individuals.” Dean Gibson’s main role however, is to provide the wow factor for the team as its artistic candidate – put simply, he has to create a sculpture out of dough. While he has an extensive background working with chocolate to create some truly amazing creations (try Googling his name and ‘the Kraken’ if you really want to blow your mind), taking on the artistic challenge in this competition is on a different level altogether. He has even been receiving some mentoring support from a local sculptor to help give it a truly artistic edge. “To make a sculpture out of bread is a very big challenge considering everything has to be baked and it’s a lot more technical because you have to control things like dough movement and yeast,” Mr Gibson said.

“For a competition like this you have to have an element of surprise and I treat it a bit like a show. When I put up the full structure it will only be in the last 20 minutes of that eight hour competition, to give the judges that surprise. “Hopefully all the other teams have put theirs up for quite a while and the judges have had plenty of time to look at them, so hopefully when I put mine up it’ll be new and we’ll win – that’s the goal.”

Taking it to the baking heavyweights is certainly something that is motivating Mr Tilden, who has come a long way since gaining his first experience in a bakery in Tenambit at the age of 14 sweeping floors and chopping dates.

While Mr Gibson is keeping his dough close to his chest in the lead-up to the competition, he did reveal to intouch Magazine that it would be something truly spectacular – if he can pull it together on the day! “What I’ve created hasn’t been done before and it’s pretty exciting. My theme is Australian Gold Rush and it’s very Australian; the elements on there all Australians could definitely connect with it,” he said. “The day before the competition all the teams get two hours of preparation, setting up moulds, making preferments and for me I’ve got parts of my showpiece that I need to construct and bake and dry overnight so that it’ll stand up. While Mr Gibson has competed and judged at a similar level before, securing a ticket to France would represent a whole new level of competition for Mr Tilden and Mr Haslett. It also represents an opportunity to lift the profile of baking in Australia to all new heights. This is one of the driving forces behind the team’s World Cup attempt – as is the chance to motivate and inspire the next generation of bakers Mr Gibson and Mr Tilden are teaching at Hunter TAFE. “I don’t want to be just a TAFE teacher that sits on his butt and teaches what he learnt 20 years ago, I want to stay at the top, I want to be current, I want to be relevant,” Mr Tilden said.

“When I’m sitting here talking about it now I’m starting to get the butterflies,” he said. “I’m nervous and I’m scared but I’m looking forward to it. From the start I’ve always said that I want to beat the Asians at steam buns and I want to beat the French at baguettes. “There would be nothing better than for a little Aussie fella to do something like that, just to put Aussies on the map.” For Mr Gibson, who also entered the world of baking at the age of 14 in Edgeworth and has been competing at a high level for the past 16 years, the Bakery World Cup represents his chance to go out with a bang. “I did my first competition in 1999 when I represented Australia at the Coupe du Monde de la Patisserie,” he said. “I was working for (Neil Perry’s restaurant) Rockpool then as a pastry chef – that was a massive pastry kitchen so I was fairly experienced - but once I saw the Coupe du Monde I saw how they treated all those other guys and I wanted to be like them, they were like rock stars. Since then I’ve had quite a lot of competition experience but this is my last, this is my greatest hits tour. “There’s nothing more for me to achieve really, although I thought for me to finish by being a dual international was something that would be a good challenge. Catapult Choreographic Hub presents The Flipside Project, a unique dance program open to Students attending Public Primary and Secondary Schools from the Central Coast, Newcastle region and Upper Hunter. The Flipside Project's intensive programs are devised to simulate the working processes of a professional contemporary dance company, through daily morning contemporary technique class, creative task development, choreography and rehearsals, working together to create new full-length contemporary work. The ten plays this year come from writers of all ages from local areas as well as from Sydney, Melbourne and as far as New York. Several of the plays were written by younger writers, keen to have their work performed on the stage. Under Pressure, one of the ten plays chosen to be performed, is a science fiction piece written by a Year 12 student at Morisset High School who hopes to be a scriptwriter when she finishes school and Mothers Day, a comedy, was written by a first year Communications student at the University of Technology Sydney, William Hall.

The festival began back in 2013 when it was run by a committee of Tantrum’s young adult members - this year it is produced by emerging artist James Chapman, who is thrilled to be back with the festival this year to make it even bigger and better.

There are also some plays by more established writers, such as Buffalo-based Donna Hoke, whose work has been commissioned, produced, and/or developed in 34 states and on five continents. Her work, Lifelines, is an intimate portrait of a mother’s memories and sadness for her lost son. Many names and faces will be familiar to audiences, with directing by local talents such as John Wood, Emily Daly and Lyndon Buckley – who is normally seen working the lighting desk as a CONDA-winning lighting designer, but is excited to try his hand at directing for the first time. “I’ve been involved in the creative arts for a long time, but I’ve never had the chance to sit in the director’s chair,” says Lyndon. Hissyfest will run at The Playhouse, Newcastle for two days only on Friday 6 and Saturday 7 November at 8pm, with a matinee performance also on the Saturday. Hi Paula (or would you prefer Jonesy?), Thanks for taking the time to answer some questions for Intouch Magazine.

under pressure well beyond my experience. I had the desire to progress to be a registered nurse but the system beat me. I returned briefly to the accounts department to consider my future and spent each lunch hour thumbing through the classifieds. One day there was a position going for a junior in a record company - I was a big music fan and spent hours and lots of money in my local record store so I applied and eventually got the job. Soon after that I was offered a job in said local record store and started to meet loads of people in the industry. The rest, as they say, is history!

Your resume also highlights the fact you really did start on the ground floor of the entertainment industry in Sydney – as a music store retail assistant – before working your way through the marketing and promotions ranks at various labels to the point where, just 13 years later, you established your own music PR company with no less than Midnight Oil and Silverchair as your first major clients. Did you ever imagine this is where you would end up?

You’ve spent more than a quarter of a century involved in the music business – but I noticed on your LinkedIn profile that you began your working life as an Accounts Clerk and Trainee Not at all! I’ve always been an avid fan of Australian music and I’ve been a fan of Midnight Oil since I was a teenager, Nurse at St Vincent’s Hospital in Sydney. The two industries unfortunately too young to get into the pubs they played. In are worlds apart – so what prompted the shift from one to 1996 whilst I was working at a label in Brisbane, I was fortunate the other? enough to finally work with them on their ‘Breathe’ tour. To an onlooker, being a publicist in the music industry sounds like a pretty awesome job, but I imagine the reality of it would be far closer to gruelling than glamourous, especially when you’re in the thick of promoting something like the juggernaut that is Groovin’ The Moo. What are the best – and worst – parts of your job? Yes there is an element of glamour but to be honest that’s more in the form of meeting some celebrities here and there and I don’t refer to my clients in this way. They are people just like you and I, and I’ve always treated them us such - to me that is the only way to conduct my business. Publicity work is definitely more gruelling than glamourous, it involves a lot of preparation and strategic planning and an intrinsic knowledge of your client. My aim is to get the best possible exposure for any client and that often brings crazy deadlines and lots of hard work along with very long days. I would say one of the worst parts of my job are the many hours sitting in front of a computer screen doing horribly boring but crucial work like database management. Music publicity also brings much fun, especially when you’ve worked so hard and then get to experience your artists in the live arena and see the audience buzzing along with them, it’s quite addictive in that way.

I’ve always connected to regional centres. I’d say ultimately a public acknowledgement from a client is the bee’s knees, whether it is a credit on an album or receiving an ARIA award, it is an honour and very fulfilling to be recognised in this way. Looking at the Australian bands you’ve got on your client roster such as Paul Kelly, John Butler Trio and Midnight Oil, you represent quite a few artists with a strong social conscience. Is this something that is important or resonates with you? Absolutely yes, in fact I would say it drives me but that can be exhausting too, as you don’t really switch off. I need to be well across social and political issues and that means tuning into a lot of media all the time, as managing media is my profession. However, I am naturally driven to be interested in who is running the country and what they have to say. I’ve also had a long interest in the environmental issues going way back to supporting the Nuclear Disarmament Party in the early 80's and being interested in the plight of our indigenous peoples since I was a teenager. I read an article in which you wrote about the way your long association with these artists has taught you a lot about Australia’s indigenous culture – as has your involvement with the Bush Bands Business program. In your experience, what role or importance does music have in the lives of indigenous people? I believe it is paramount to their wellbeing and a fundamental part of their temperament. Some of their lives literally change in the most positive way when they are involved with music. It brings them worth, acceptance and the ability to keep their stories alive. It drives goals and self-respect as well as respect in community. I have witnessed some of the most incredible voices and self-taught musicians from my Bush Bands work and I consider it a privilege and honour to be a guest in their world. Throughout my involvement over the past five years I have not only been accepted by many but I am now friends with quite a few of the artists. I’ve also been fortunate enough to rekindle friendships several times over the years as musicians

return as mentors themselves or as members of another band. A band of young fellas from Kintore far west of Alice Springs actually called me Ami-mi, which in Lurita Language translates to Grandmother. We may find that odd but in their world that is a massive compliment and I took it with open arms. Can you tell us a little bit about the work you have done as a mentor with the Bush Bands Business program? Well I should start by explaining what it is. The Bush Bands Bash (www.bushbandsbash.net.au) is the premier Central Australian Indigenous music showcase event. Presented by MusicNT, the concert features eight bands from the Northern Territory, Western Australia and South Australia, performing to a mixed audience of thousands. The Business component is held three days prior to the concert on camp at Ross Rover Resort about an hour out of Alice. Not only do the bands make incredibly punishing drives to get to camp but come the weekend their families have driven hundreds of kilometres from community to Alice town centre to witness them perform live on the big stage. It brings musicians, technicians and support workers together with local and national music industry and media representatives for intensive workshops and rehearsals. I was initially funded to get out there through John Butler’s THE SEED program (www.theseedfund.org) Initially it can be quite confronting as many of the attendees do not speak English and there are customs and culture to consider. I regard our first Australians as the most important people in this country and the sincerity and interest I naturally expressed to them built rapport quite fast. I think I have the most advantageous position as a mentor because it involves helping to write the band biographies and then having a lot of fun doing photo shoots for each band to provide them with a media kit once they finish at the event. Priceless for many who just don’t know where to start, the importance of such tools or who simply do not have the resources to create such things in community. And believe me, once you get these bands in front of a camera they deliver the goods!

There’s certainly more indigenous artists than ever before making a name for themselves on the Australian music scene. How important do you think a program like Bush Bands Business and the performance opportunities of the Bush Bands Bash are to helping these emerging artists step up to the next level? Bush Bands is extremely important. Throughout my time there I have witnessed bands and individual band members evolve into charismatic, well developed musicians performing and engaging like true professionals, yet the bulk of them are selftaught. Generally speaking Aboriginal Australians can be very shy and this experience really does bring them out of their shell. With success comes confidence.

Although many of the attendees live in some of the most remote communities on earth they learn how to get their music and stories to a wider audience and they have excellent examples from their peers with Briggs, Gurrumul, Thelma Plum, Dan Sultan and many more leading the way. You’ve been involved in some amazing events and festivals over the years and promoted a host of sensational artists and bands – what has been the highlight of your career so far? Four words … working with MIDNIGHT OIL. They are the best mentors ever! Is there one artist or band you haven’t represented that you wish you could? HANDS ON qualifications from Tillys College CERTIFICATE III IN EARLY CHILDHOOD EDUCATION & CARE DIPLOMA OF EARLY CHILDHOOD EDUCATION & CARE

Tillys College of Childcare is pretty unique! It’s the only training college in the Hunter and Newcastle areas which enables students to study within a working childcare centre, giving students the opportunity to gain hands on experience while they study. We spoke to Donna MacIntyre (who, along with her husband founded Tillys) to find out a bit more about the College. What is it about gaining a Childcare qualification at Tillys that’s different from studying elsewhere? Small class sizes and the hands-on experience that you can only get from a college located within a working childcare centre.

What qualifications can students gain? How long does it take? The Certificate III in Early Childhood Education and Care takes approximately 6 months to complete and the Diploma of Early Childhood Education and Care takes approximately 12 months to complete. How many students do Tillys College take each year? This varies, we have two intakes of the Certificate III (February and July) and usually

one intake of the Diploma in February each year. What pre-requisites do students have to have to be accepted into Tillys College (entry requirements)? There are no entry requirements to study at Tillys CCC but students have to have an interest in working in the early childhood field. Are positions available for graduates after they have completed their training? A very large portion of our graduating students gain a position working within one of our childcare centres. What are the personal qualities in your students that make them exceptional childcare workers? Students need to be interested in studying childcare and working in the early childhood field. They need to be motivated and work well as part of a team. Childcare workers deal with children and their families; therefore, excellent communication skills and patience are needed. Does the college have to receive accreditation? Tillys CCC is audited by ASQA to ensure that we are meeting all the standards set out by ASQA. The childcare centre that the college is located at recently had its assessment and rating visit by DECS and received a rating of exceeding the National Quality Standards. MUST HAVES.

Okay, I will start with the really boring ones because there are just some things that a girl cannot live without. No wardrobe should be without at least one good pair of black pants. Why? Because they are great on fat days and when everything else is in the wash. I have numerous pairs of black pants, my favourites are my very wide-leg palazzo pants. They go with most things, but best worn with high heels as they can make you feel a little dumpy especially after a barrel of KFC. Another favourite is my 7/8 capri pants, they are a little bit Audrey Hepburn and look fab with a heel or this seasons must have ballet flat. So the first rule is… own a fab black pant (pant is fashion-speak for pants). My second go-to is the kaftan. All ladies must own a fabulous kaftan. Why? Because they are also excellent on fat days. A blingy kaftan is great over jeans or your capri pants, also fabulous when you’ve had your spray tan and are rocking a great pair of heels. A few words of advice when wearing said amazing kaftan, steer clear of the blue eye shadow, nobody wants to look like Endora and for those of you with dark shoulder length hair, please remember that Demis Roussos was never really a fashion icon. Just saying. Jeans. We all need a good pair of jeans. Why? Because they come in so many different shapes and the flared leg is back - which is splendid if you have a big bum (which apparently is also really fashionable right now.) You can also get quite a few wears out of your jeans before they have to be washed and they will go with your fabulous kaftan. A blazer. Yes, I said it, a good blazer or at least a good jacket. Something that finishes at hip level and can be worn with your palazzo pant, capris, jeans and your tube skirt (that one comes next). Note: looks rubbish with the kaftan. A good blazer or jacket instantly dresses up any outfit and is especially good for that parent-teacher meeting or unexpected visit to the court-house. The tube skirt. Note ladies, this one is very age dependent. If you are older than 29, it must cover your nickers and is best worn somewhere “just” above the knee. A heavier fabric is best because it keeps you sucked in and provides the best silhouette. There is a rumour that says a longer line pencil skirt is going to be all the rage. I don’t think anybody really cares what’s happening in Milan, it doesn’t appear to be happening in Maitland, yet!

White shirt. Yes boring, but very essential especially when worn with a clever scarf, fab hat and sunglasses. Great with black pants, jeans, under a blazer and with the tube/pencil skirt. You can’t really bugger this look up - just don’t eat things that contain tomato. The cocktail dress. This is the tricky one. Black is always safe (and slimming). Team it with statement jewellery (costume of course) and a silly hat and your off to the races! Loose the hat, pull your hair up, add some danglyspangly earrings, grab yourself a never ending glass of champagne and you're dressed for any spectacular soiree. If it goes with your blazer and your fabulous scarf, that is just a bonus. Trackie-daks, because we can’t always be fabulous but because they are comfortable. Trackie-daks are never to be worn out of the house because nobody ever needs to know that we have days when we are not fabulous. AAhhhggghh – the swimming costume. Actually, no, we don’t really need this item and we are trying to save money. In addition to all of the above, you will need numerous shirts, top and blouses that won’t match anything else in your wardrobe and don’t actually fit properly but you had to buy them because they were a bargain. You must have at least 3 maxi dresses that make you look like you’re in your third trimester. You will also need two pairs of baggy cotton trousers because they are more respectable that track daks and a lot more forgiving than shorts. Some linen, we all need clothing that looks like you’ve slept in it because that’s what linen does and oh, and did I mention that you will need lots of shoes and handbags. Please ladies, rest assured that you will find one dress that you actually really like. It will cost $29.95 and you will wear it for most of summer because it’s really, really comfy. It may look like a moo-moo and that’s quite okay because when that temperature gauge hits 41 degrees, who cares. So ladies, you must always continue to shop, because you just never know when you are going to find that absolute wardrobe must have. Live n' Cooking

from your own kitchen! As a self-proclaimed amateur home cook (not a bad one if I may say so myself!) and proud owner of the “Live & Cooking at Lizottes” Cookbook, I was particularly excited to read that Brian will be providing weekly home-cooking tips to his Lizotte’s aficionados! With Brian’s permission we’ll be sharing his tips each month and throwing in a recipe or two from his beautiful cookbook, so we can all get that Live n Cooking experience in our own kitchens (without the live entertainment of course!) Intouch: How do we make the most of a beautiful cut of lamb? Brian: Lamb is such a succulent and versatile meat, but due to the cost is very precious and generally only for special occasion. Below are several handy hints to make the most of your lamb. • Always season your Lamb before you put it on the grill. Best friends Salt and Pepper are always a must for me but some of you might feel a little more adventurous and want to put a few chilli flakes, dried herbs or even some corn flour to add a crunchy texture. • For a lamb cutlet to be cooked medium-rare - 1 minute either side on a medium-high heat. • For a cheaper option, buy lamb strips, they are very versatile and still just as delicious!!

AT HOME

Lamb marries with strong Greek flavours such as garlic and oregano. Because Lamb is such a strong flavour, I suggest sticking to basics. Lamb is easy to marinate and only takes a minimum half hour for flavours to absorb. Of course the stronger the flavour, the longer you marinate.

INSTRUMENTS • 250g fresh breadcrumbs • ½ bunch continental parsley, finely chopped • 3 garlic cloves, crushed • 50ml olive oil • 6 lamb racks, trimmed • 100g unsalted butter • Salt and pepper to taste • ½ cup mustard • 50g grana parmesan, grated • 2 teaspoons native mountain pepper Native Jus: • 1 teaspoon native mint; • 250ml red wine jus (see Key Crew Members); and • Salt and Pepper to taste

RHYTHM 01 Pre-heat oven to very hot (240o C) 02 To make the Jus, heat the stock and mint in a pan over a medium to high heat and reduce by half, stirring occasionally. Check seasoning, strain and keep warm. 03 Add the parsley, mountain pepper, parmesan and garlic to the breadcrumbs and blitz in a food processor for 30 seconds. 04 Heat the oil in a large pan with the butter until foaming, but not coloured. Season the racks and add to the pan, skin side down. Cook for 3-4 minutes on each side (for medium rare). Remove from the pan and rest for 5 minutes. 05 Place the racks of lamb, fat side up on a chopping board and brush the mustard over the racks to apply a good coating. 06 Press a generous handful of the herb crust over the racks and transfer to a medium sized roasting tin and roast for 5-15 minutes (depending upon how you like your lamb to be served). Cover the bones with foil if browning too quickly. 07 Slice the racks in half and serve with the Jus and your choice of vegetables (Brian suggests baby peas). www.intouchmagazine.com.au | 27

After the sold out October events which included the Lakes Folly Dinner and Hunter in our Sights Wine Tasting, the next exciting event is Hunter Gatherer which will be held on November 12. detrimental impact on the Sloan’s business as it did with the overall tourism industry. What followed was more than four years of mental and financial stress and uncertainty for the Sloan family who, at that stage, were living on a property in Glenorie with 3 young children in tow What was supposed to be part of a retirement plan, now became a welcome distraction for Ken and Gwen who used every opportunity to "escape" to the Hunter Valley property to work and clear the land. Two years after purchasing the property, the Sloan’s came to realise just how good the soil was for vines and so decided to plant a vineyard. The next seven years were spent building the house and cellar door and also digging the dams for irrigation. They eventually moved to the Hunter Valley in 1997 and it has been home ever since.

At first the wines were contract made in the Upper Hunter by the Reynolds Wine Company, but in 2003 they decided to build a winery on the property now named Mistletoe Winery because of the vast amount of mistletoe growing on the ironbark tree which had once covered the property.

Share a Story for a lifelong love of learning WORDS: Jess Black Childrens Author There are countless articles written about boys being reluctant readers and parents agonising over how to get their boys to read. I have had a similar experience except that my own reluctant reader is a girl. My daughter Maggie (6) finds it difficult to concentrate at the best of times and getting her to sit still is virtually impossible. She’s a very strong, physical girl who likes to ‘do’. So imagine my disappointment when I try to read with her each night and I see she’s not engaged. In fact she’s making her reluctance very clear. I come from a family of readers and cannot imagine what it would be like to not see the fun and excitement of a story, especially when it’s being read to you! Both my husband and I worked at Scholastic for years and collected a fantastic library of stories for our daughters. But it didn’t seem to matter what I suggested for Maggie she would pull a face at story time. As an author who is used to kids being very excited to have me visit their school and read to them, I found Maggie’s reaction baffling. Here was mother/daughter time. Here was my undivided attention. Yet she still rejected it or asked if she could do a puzzle or play a game instead. Anything rather than read. It made me sad and frustrated but I had to be careful to hide my feelings. Nagging and pleading was not going to work and might alienate her further. How was I going to get this child to enjoy story time and later, reading? I bought fairy books. I bought friendship books. I bought branded books from shows and movies she liked. None of it worked. Just as I was beginning to tear my hair out I saw it. I knew as soon as I saw the cover of Lulu Bell and the Koala Joey that this would be a book Maggie would like. The chapter book featured a blonde haired girl with a big smile on the cover. She looked a lot like Maggie. She was wearing a wetsuit and standing next to a pink surfboard. Maggie loves swimming and is coveting her own pink surfboard for Christmas. Maggie reacted just as I thought she would. She pestered me all afternoon to read the book to her. That night I read it from cover to cover. And she listened completely engaged. I knew I’d struck a chord. Lulu and Maggie share many character traits. They are both a little bossy, full of life, love animals and both have a little sister. Now, I just had to keep it going. We have seven Lulu Bell books now and I also took Maggie to meet Belinda Murrell when she visited Newcastle for Book Week. Having Belinda sign her books was a thrill for Maggie and that moment left a lasting impression on her.

I have spoken to primary aged children in countless schools around NSW over the last nine years. I’m invited to visit the school to get the kids pumped about books and reading and their own story telling. These experiences have taught me a few things: •Every child has a passion. Something they are good at and enjoy doing. All readers like to identify with their own image of themselves. They need to be hooked in by relating to the character they are reading about. I think that too often teachers and parents can get caught up with pushing their child to read ‘worthy’ books. I would suggest letting them read anything that gets them to like reading. •Don’t put their choice of reading material down. Encourage them with their reading by showing an active interest. When I’m in schools and talk to kids about the books they love they light up. Offer to read some of the book out loud to them. Having a parent read with a child means close proximity to the adult they are always trying to get attention from. Even if it’s not the most worthy of titles, they will one day progress to something else. Once they have been bitten by that bug. •Be a reading role model. Let your kids see you reading at home. I realised recently that at home my husband and I are often relax by looking at our phones or watching TV. We tend to save reading for when we are in bed. Our kids need to see us reading in order to value it. •Make reading fun! Even if your child is older you can read to them. Put on silly voices. Act out the story. Kids love to laugh, they love jokes and silliness and mayhem. •Check out what’s happening around town. Newcastle and Lake Macquarie libraries offer story time sessions for younger kids. They also hold author talks, writing workshops and book launches year round for kids reading picture books and chapter books. Being able to meet an author and chat to them leaves a deep impression on a child. •Rather than buying a toy or a treat as a reward - buy a book! Macleans Booksellers in Hamilton has an excellent children’s section and the staff there are friendly and knowledgeable about books and can help you select something age appropriate. •Numerous theatres around town will show plays and musicals based on popular books. This year alone the Civic Theatre hosted The Cranky Bear, The Very Hungry Caterpillar Show, and the 26 Storey Tree House. •Be consistent with reading at home. Reading every night is ideal but not always possible. Reading should be part of the family routine just as bath time and brushing teeth is.

For a while I was worried about what to do when we ran out of Lulu Bell books but it doesn’t seem to matter. She has had enough exposure to the joy of stories that she’s open to other books now and has even begun reading her own copies of Billy B Brown. So why is reading books important? Sharing stories, talking and singing every day helps your child’s development. You’re helping your child become familiar with sounds, words, language and the value of books. This all builds your child’s early literacy skills and sparks your child’s imagination, stimulates curiosity and helps with brain development. Exploring stories also helps your child learn the difference between ‘real’ and ‘make-believe’ and might help develop her own ideas. Reading or telling stories can also be safe ways to explore strong emotions, which can help your child understand change, as well as new or frightening events.

Surf, the wind, sand and coal dust are all environmental factors we need to deal with in the Hunter – not just their effects on us – but also the effects they will have on our outdoor furniture. As we all love to entertain outdoors, we should make sure we take our environment into consideration and invest in furniture that doesn’t need replacing every few years. Teak has long been a top choice for outdoor furnishings, due to its buttery gold colour and durability - premium teak has been celebrated for centuries as being the best choice of timber for outdoor furniture, and buying premium teak outdoor furniture means you can be assured that you have invested well. One thing to remember, however, is that not all teak is created equal, so this month we look at the benefits of buying premium teak and some tips to ensuring it stays long-lastingly beautiful!

► Finishes and Weathering - Teak has been recognised and

used for centuries in shipping because of its aesthetic appeal - it is simply beautiful to the eye. It is also a sensory experience – it feels luxurious, generous and silky smooth to touch. However, it is not only its inherent beauty that has seen Teak used on luxury and working sea-going vessels – it is its natural density and ability to withstand nature and its extremes. Fun fact – there is a teak bench in Hyde Park in London that is celebrated for being over 100 years in age and it continues to endure. Why does Premium Teak offer superior strength and longevity? Precisely because it has a higher natural oil versus water content. This is the critical determining factor in purchasing for strength, stability, endurance, durability and performance. The high natural oil content is innate. It does not need to be added and cannot be replicated by adding oils, waxes, stains to the product once the teak has been harvested. It is these natural oils that protect the teak from decay, provide rot resistance, prevent it from cracking or breaking down over time and offer a natural repellent to insects and rodents.

► Choosing Teak Furniture - Smell and touch any teak you

intend to purchase. It should be unoiled, not waxed or stained, and entirely natural. It has an aroma that has not been applied and cannot be replicated. The best indicator is however touch. Inferior grade teak just cannot perform the same way as premium teak. Again, if you feel and smell the timber, you will be able to spot the differences with ease. Inferior grades are younger, drier and often oiled waxed or stained and in the long term are prone to splitting, cracking and breaking down.

Buying only Premium A-Grade Teak is an investment in quality, elegance and timelessness. Don’t be tempted to buy B grade or replica items on the market just for the sake of purchasing teak; they simply will not perform as well and in the end this is a false economy as you will have to replace the furniture in a relatively short time.
