The History of
St. Patrick’s Day
St. Patrick was a bishop born in Great Britain around the year 395 A.D, near Scotland. It is believed that he was given a dream by God to convert the Irish to Christianity. In response to this he began studying for his priesthood and arrived in Ireland to fulfill his dreams. After almost 30 years of missionary work, St. Patrick died in Ireland on 17 March. He was forgotten after his death but was named Ireland’s patron saint after centuries of myths surrounding his life and work. In the 17th Century, the day became an official feast day for the Catholic Church, although, over the centuries it has become more secular, focusing on the celebration of Irish ancestry and their culture. Today’s Irish culture is still made up of elements from the early Irish times, folklore, literature, flora, music and dance. St. Patrick’s Day is a celebration of the patron saint of Ireland himself, and the arrival of Christianity in Ireland.

SILVER LAKES CHIEF EXECUTIVE OFFICER JAN DE WET CEO
During the first week of March 2015, the Silver Lakes Golf Club will host the South African Amateur Championship, the second oldest amateur golf championship in the world. A number of our residents and golf members will be competing in this event and would surely appreciate a show of support from our residents. A number of international players will also be competing in this event that we look forward to welcoming along with golfers from across the country. We can be truly proud to showcase our beautiful estate and course at a prestigious event such as this. Another important event in our golfing calendar is the Club Championship that will be hosted towards the middle of the month. I would like to wish all our members participating in this event the best of luck and a consistent performance over the two days of play. Our new shuttle bus service, consisting of two brand new Toyota Quantum minibuses should be fully operational during this month and will provide a far more reliable and effective service than the vehicles they are replacing. March is also the last month of our financial year, and we are confident that we will be finishing off this financial year as a turning point in the long term financial sustainability of Silver Lakes. We also firmly believe in delivering on our mandate from members to provide a safe and secure estate, with a sustainable base of operations and sound financial position.

STORM WATER AND SWIMMING POOL WATER INTO SEWER LINES We wish to bring the following to your attention. There is a growing concern regarding storm water and swimming pool water being discharged into the sewer reticulation system. Homeowners are requested to inspect their properties and effect necessary changes (if applicable) to help alleviate surcharging of the sewer reticulation system on the Estate. Lower laying properties suffer unwanted sewerage build-ups and spillages. For ease of reference see the following Estate Rules: 5.1.11 Swimming pool, Jacuzzi, hot tub, fish pond or fountain water may not be emptied onto the golf course, any communal areas, neighbouring properties or into the municipal sewer system but shall be appropriately channelled into the storm water drainage system. 5.8.3.13 Storm water may not be discharged into the sewerage system but must be channelled into the storm water system. Members with low-lying units may not refuse to accept storm water from higher lying units. 5.9.1.1 Sewage must only be discharged into the sewerage reticulation system of the township and not into the storm-water reticulation system, streams, and/or dams in the township and must comply with local authority regulations. 5.9.1.2 Storm water effluent from hard surfaces such as roofs, paving, etc. must be discharged into the nearest storm-water reticulation system of the township and not into the sewerage system.

Ensure that the area is sunny enough to promote vigorous growth. Heavy pedestrian traffic on a shady area of lawn will be problematic. If everything fails, there is still the option of artificial lawn. A good alternative and ideal for low maintenance gardening.
THE GARDEN GROUP
THE USE OF CLIMBERS Climbers are perfect to transform an unsightly wall without encroaching on available space around the pool.
PLANTS AROUND THE SWIMMINGPOOL
Avoid using deciduous climbers, as leaves dropping into the pool will be a problem in autumn.
Elize Malan
Stands are becoming smaller, houses more compact and usually consist of more than one storey. These facts definitely influence the size and placement of the home owner’s swimming pool. The majority of swimming pools nowadays tend to be rather small, usually form an integral part of the entertainment area, and of original architectural design. As such, the use of plants and lawn around swimming pools has diminished. Container gardening has become an important addition to the pool area. The use of built-in plant boxes, often with a water feature, has changed the pool plant environment for the better. Although a wide variety of plants are suitable for use around the pool, I would like to mention a few pitfalls that often happen:
Hedera helix and Ficus pumila are both excellent choices and can be pruned to remain neat throughout the year. Trachelospermum jasminoides is often used as a groundcover, but with support, it becomes a perfect evergreen climber. Prevent wrong choices from becoming expensive mistakes and remove or replace the plants that should not have been planted near the pool. • If you require any help with a design of your pool are or complete garden revamp please call our office for a landscaper to assist you. 012 804 1807/1581 Elize Malan Horticulturist
PALMS NEAR A POOL Find out beforehand up to what size the mature plant will grow. You don’t want a cracked container, or cracked paving due to plant roots. Will the palm drop seeds into your pool? These round seeds are difficult to remove and also block the pool cleaner. The slow growing Rhapis palm would be a better choice than Washingtonia. Phoenix roebelinii is well suited for containers and will not outgrow its space. The following plants can be used instead of palms and will give slender height to a pool landscape:
Beaucarnia recurvata Cordyline varieties Aloe bainesii Yucca
CHOOSE YOUR SHRUBS CAREFULLY Can they successfully be pruned to stay within bounds and have unwanted flowers and seeds removed? If planted in containers, compost has to be added. After a few years these plants will need new soil. Make sure that it is possible to do this maintenance around the pool. The majority of hedge shrubs can be successfully planted near a pool:
Duranta Abelia Freylinia Murraya exotica
PLANTING LAWN Lawn does not take kindly to swimming pool water. To prevent soggy, trampled lawn areas, allow for some slope away for the pool. Prevent the backwash from the pool filter flowing onto your lawn or into flower beds. INTRA MUROS MAR 2015 (11) DESIGNED BY

When I think of March, I immediately think of the ides of March and the warning Caesar received before his assassination: “Beware the ides of March”. I guess Caesar should have taken heed of the warnings he received but instead he ventured forth and met his demise.
The 2015 Silver Lakes Events will be approximately on the dates below : Since we are negotiating with a new service provider and as you will see in the Environmental article there are big changes and building activities planned for about 5-6 months, starting in March 2015. We will have to work around what is happening at the Club around our normal yearly dates – so PLEASE keep reading notices to know exactly what is happening around those dates, where and when. YEARLY 2015
Mid March heralds the beginning of autumn and on 21 March 2015 a holiday known as Human Rights Day is celebrated. I am particularly partial to the month of March as it is my birthday month and St Patrick’s Day on 17 March.
MARCH International Day as part of the World Reconciliation day - Saturday 21 March - Tea with Seline-type event, possibly part of Monthly Moms and Tots Tea
We have had a busy year up to this point, mainly with the installation of the electricity smart meters by a contractor appointed by Tshwane, the hosting of the SA Amateur Championship by the golf club, the upgrade of the squash courts and imminent improvements to the golf course and clubhouse. 2015 will prove to be a very productive and constructive year.
APRIL Easter Holidays Garden Competition
On 21 March 2015, a social event will be hosted at the clubhouse called International Day. One of the attractions will be a cooking demonstration by Seline van der Wat of Masterchef fame.
JUNE Race of Faith Father’s Day – Sunday 21 June – Special Sunday Lunch
The swimming pool at the Clubhouse is looking ever so inviting, why not enjoy the last days of summer with a refreshing dip?
JULY Winter school holidays July - September - Charity Month
We are also planning on having a Constitutional General Meeting later this year to approve the updated Memorandum of Incorporation and Rules. These documents will be circulated soon for comments and input.
AUGUST Women’s day - Sunday 9 August - revisit this day and make it more exciting, maybe include in a golf day?
MAY Mother’s Day - Sunday 10 May
While writing this article, I was thinking about things that I would like to have changed on the Estate that would make living in Silver Lakes even better. There are several things that come to my mind but I would like to hear from you, what things would you like changed, that would improve and make your life in Silver Lakes better for you. Send your ideas to me at liaison@silverlakes.co.za. Title your email: “What I would change if I was chairman for a day”.

ENVIRONMENTAL IN SILVER LAKES Last month we explained all the exciting new projects that will happen in Silver Lakes. As you would have realised, the Club will be a bit of a building site for a period of 4-5 months, but we will try to keep the disruption to the sides of the area, with builder’s entrances either side of the terrain. This will be a discomfort for a little while that will give us the face-lift our Clubhouse needed. For all to see is the legacy of the fantastic rains we had. The golf course is a green as ever and Andrew and his team are working
At the Club we will have finished most of the gardening for the moment by the end of February. From there we will be working up Pebble Beach Drive towards the gate at Silver Lakes Drive. On the above map, you will see the areas that we will give all our attention to: Possible positions of New Corners with signature and roses Gates Bridges Main Route of attention
hard to have the course in a tip-top shape for the upcoming SA Amateur Championship in March. Good luck to all with this championship. We encourage all home owners to make this tournament special for all our visitors. Watch fromm your homes or from the golf course, and encourage them. On the environmental side, we have big plans to finish our tidy-up efforts during the course of 2015 and to start developing those few areas where we will establish the Silver Lakes look-and-feel.
The red line indicates the main route of our attention this year. We will try to upgrade and revamp the Glen Eagles circle route especially concentrating on removing unnecessary hard objects such as concrete balls and rocks. Plants and specially designed features will be more inviting with a soft approach towards gardening in general. We will be encouraging the homeowners to embrace the friendly and inviting manner of garden design. The green circles indicating the new corners our architects are in the process of designing. These will include new signage towards the main attractions in Silver Lakes, e.g. the Clubhouse and the Game Reserve. This will also include showing the direction of numbering in Glen Eagles Drive, so that visitors do not have to drive the whole circle of Glen Eagles to get to their destination.

The red circles indicate the gates to the Estate and the Game Reserve. Even though we will be re-building and adding a roof to the gate at Silver Lakes Drive, we will be looking at this gate in full from the external approach to the gate such as the sidewalks, circles, and signage. Once inside, we will be revamping the fountain soon. The gate at the Game Reserve will be replanted and tidied up. At the Solomon Mahlangu Drive gate, we will be adding a few new touches and the long awaited signage. The blue circles indicate the bridges of which one needs serious repair. The others will be given a new image face-lift. As you would have seen around the Estate our garden company, The Garden Group, has been hard at work tidying up the gardens and establishing new gardens. Ollie and his much smaller group has been very busy finishing the last of the street corners. These corners will stay as they are now with only lawn until we do the new corners and plant some trees.
TWO NEW WORK GROUPS Calling for Silver Lakes homeowners to join two new working groups. As part of the Environmental and Social Portfolio, we are going to join forces with our homeowners to get a bit more of your input. I will be starting these working groups in February/March. Please contact me on 083 448 9441 or email me at mathews@iafrica.com if you would like to join any of these working groups. The Lost Jewels of January Koos Marais The frantic village weaver has returned to its site in our garden just outside my office door. Five previous attempts at constructing his intricate, woven home, high up at the end of a branch of the white stinkwood, to the satisfaction of a prospective wife, had failed. He destroyed all of them, in fits of fury and disappointment, after witnessing the small female’s disinterest and nonchalant dismissal of his dedicated labours. Like the dozens of contractors entering our estate on the second Monday of January every year, the little weaver is also back, keen to work, and build a future. It takes the weaver approximately a day and a half to build its nest. It prefers the end of a thin branch, which he strips off all its leaves. Ideally, it should be over water or close to it. Certain areas in Silver Lakes are home to dozens of village weavers, particularly at the edges of our lakes. Competition in these favourite areas, are fierce and strangers are met with open hostility. My little friend was obviously violently encouraged to find an alternative location to erect his abode. He had to take second best, our garden, some distance away from the twittering masses in their intricately woven compounds overhanging the watercourses. Village weavers are polygynous, but our little fellow has not been successful in attracting even one female. Nature is cruel, operating on Darwin’s survival-of-the-fittest tenet. Perhaps it is better for the well-being of the species that my un-
fortunate friend is being rejected repeatedly. Perhaps his genes would weaken the species as a whole. It is better that the bold and strong male village weavers attract all the female birds. Life is indeed unfair. One has to work hard or clever in order to prosper and survive. Against all logic, I still hold my breath and look up from my computer every now and then in the hope of finding a new female neighbour, entering my friend’s fine residence. Perhaps his powers of persuasion, and an improved weaving technique, have finally combined to satisfy the whims of the female gender. The weaver knows that time is running out. Spring’s mad breeding urge attains frantic proportions in midsummer. In another month’s time, most birds will be less active, preparing for the moult, and some for the great migration. However, right now, there is still time for a last chance for my little friend. Not only does he have to contend with so many competitors, but January also brings the big rains, and with it violent thunderstorms and winds destroying many birds’ nests, or ejecting eggs or little chicks from their nests. When I jog around the estate early in the mornings in the bright and clear dawns following the previous night’s murderous thunderstorms, I see the pathetic little carcasses, not yet clad by feathers, lying on the tar beneath the big green trees. I know that Darwin has been at his cynical best again. The blue pink cadaver is another symbol of how tough life really
These photographs were proudly taken in Silver Lakes
is. My little friend had managed to be hatched by his proud parents, and he had managed to survive the violence of the storms, yet he will not produce offspring. His genes are going to be lost, as if he had never been hatched, or had been wiped out by a dark, murderous wind. January brings new activity for all the residents of Silver Lakes, for humans and for the feathered and furred co-habitants. For us humans it is far too easy to become lost again in the maze of our schedules, but fortunately, the wildlife knows better. They go about their daily lives exactly in the same way as they did in December. They bring a calm and steady atmosphere, reminding us to live, breathe, and smell and enjoy life, to live in the present, and to be grateful for the beauty and the wonders around us. At the same time, the ever-changing ecology is a reminder that time does not stand still. Suddenly one day one realises that the red-chested cuckoo’s melodious “piet-my-vrou” has gone silent. Can it really be that their brief summer visit is over? How long before the European Swallows begin to line up on the fences and telephone lines, discussing the long flight ahead? For now, we enjoy those warm, comforting, slow evenings, strolling around the dams or cycling through our own game reserve, absorbing the hope and the freshness that the abundance and variety of animals and birds bring to our lifestyle. All our dams
are overflowing, signalling vitality and joy. The fish are spawning, rising to the emerging nymphs and larvae, at dusk, making the blood of anglers burble like the surface of the water. Silver Lakes is a tranquil haven, every day of the year. In January, we tend to forget or ignore the beauty around us, because of the noise of the New Year and its demands. If we succumb to the temptation of busyness and business, we might miss the greatest show on earth, life itself. We all work hard to enable us to live here, but it is important to sit back, once a day, or week, or month to see, hear, touch, smell, and sense the magical spectacle around us. In the paraphrased words of the renowned professor TT Cloete, Afrikaans poet, “there is more poetry in a butterfly than in the literature.” I witness a few more nests being woven, and being destroyed, until one morning, my little friend’s frantic, twittering, shaking, display is answered by a friendly female. She enters the nest, and approves, beginning the eternal cycle of life. I go back to my computer, with a song in my heart. Beauty is indeed all around us, but in Silver Lakes, it is even truer. Let us enjoy the hard work, building our nests, raising our families, and continue to live in quiet harmony, with nature and with each other.
SILVER LAKES MATURE GOLFERS NEWS FROM THE MATURE GOLFERS GROUP PLAYING AT SILVER LAKES GOLF COURSE The year has teed off with a bang and the old boys are already showing great golfing skills with a high turnout of 44 players. We played our first 2 games in January at the Cullinan Golf Course due to Silver Lakes undergoing maintenance on the greens. The greens at Silver Lakes are now proving how good they are getting when on the 22 January there were no 2-clubs and a week later on 29 January there were seven 2-clubs. The Mature Golfer group is aiming to attract at least 50 players on a Thursday morning. We are also looking at encouraging the younger retired gents to join us. Greetings from Andrew COURSE NEWS
After the holiday season we hollow tined our greens, which is critical to healthy sustainable greens. Due to the age of our greens, it has become our practice in the past few years to over seed with new bent grasses, which has significantly improved our putting surfaces. The latest strain of bent grass is known as Alpha or T1. The issue of the past few years was that the time between over-seeding and playing was too short and we did not see the full benefit of the expensive process. This time, however, we allowed for the full 14 days for the seed to germinate develop some root structure. At the time of writing, it has been 3 weeks since we hollow tinned; it is a 4-6 week process to get the greens back to the best they can be, so
you will see improvements every day from now on. In the meantime, the bridge on is open for walkers and carts. The greens have now been lowered to 5 mm cutting height and we will push within the sensible periods to have the greens back to 3.5 mm soon. The short game area is virtually complete. The bunkers still need to be compacted and the bent grass on the greens still needs to knit a little so patience is the word. I was hoping to open on the 1st of Feb but I would rather let it mature a little and open when it is 100%. Please go and look at it, as it will be a great addition to the facilities.
CHAMPIONSHIPS SA Amateur Championships As everyone is now aware, the SA Amateur Championships is upon us. We are frantically trying to get our course in the condition expected for the SA Amateurs, and the club championships. The 50 mm of rain we had was a great help and some more in the next few weeks will be great.
Club Championships Club Championships are now imminent. We unfortunately do not have the lavish sponsorship from BMW this year, so the goal is to have a festive local spirit and have local sponsors from the surrounding businesses and homeowners and golf club members to ensure a great championship. If you are interested to sponsor a hole or two please contact me and we can sort out the arrangements.
Grant Supra Finally, Grant Supra our Club Vice-Captain has again organised an amazing trip to Fancourt. Please make your booking with Soekie in the Pro Shop. There are only 20 places for golfers available so reply quickly. If you have never been to Fancourt, it truly is a wonderful facility of world-class quality.
The following Silver Lakes Players have qualified to play in the SA Amateur so please come out to support our own members who are playing in Africa’s biggest amateur tournament. Good luck guys. They are Christoff Els, Teagan Moore, Chase Manna (our current men’s club champion), Danie Viljoen, Keegan and Shane McLachlan and Marco Loubser.

GONE FISHING FISHING CLUB / HENGELKLUB
Dilano Girodo is a member of the Silver Lakes Fishing Club, who was recently awarded with Junior Protea Colours for Bass fishing. We met up with Dilano recently to gain some insight into his love of fishing. HvdW: Congratulations on your achievement Dilano. At what age did you start fishing, and with whom? DG: I started when I was about 4 years old, when my dad Carlo took me fishing. It was a fly fishing trip to Trout Hideaway. HvdW: What are your favourite memories from your early years of fishing? DG: Fishing with Uncle Greg and Fishy Pieter at Rivendale and also at Highland run, where I managed to catch a 1.5 kg brown trout. Apparently, I thought it was a marlin at the time.
Dilano’s carp
HvdW: You have done a lot of fishing, and employed different disciplines. What are your personal best catches for these different types of fish? DG: I have caught several big fish on fly, including a 15 kg barber “catfish” and recently on a visit to the Vaal River with well-known fly angler and close friend Pieter Bezuidenhout, I caught carp of 13 kg and 8 kg, all on fly. I have also caught yellow fish and mudfish on fly in the Vaal River. My personal best Bass was a fish of 3.35 kg caught at Arabie dam, near Groblersdal during our Northern Divisional Jnr Competition 2014 HvdW: Do you often fish at Silver Lakes? Yes, and I have caught several carp weighing more than 4 kg here, and Bass and Kurper “bream”. I would really like to appeal to ALL that fish, or make use of our dams to remember to keep the dams and surrounds clean. We are privileged to have the facility, let’s look after them. HvdW: You have been awarded Junior Protea colours for bass fishing. How does one achieve that? DG: You have to be registered as a member of a club, affiliated to SABAA (SA Bass Angling Association), and then you enter the provincial competitions. If you do well, you qualify to represent your province at the National South African Championships. At the National Championship, I finished in the top 13 and was selected as a member of the Junior Protea team to compete against Zimbabwe at Claw Dam in Zimbabwe in December 2014. HvdW: Do you have a “Wish list” of places that you would like to visit and to fish? DG: Yes, absolutely! I would love to fish the Seychelles and the Amazon River. I think it would be awesome to be a competitor in the American Bass Elite Series.

The Girodo family: Dad Carlo is also a very avid angler, and Mom Monique an avid supporter !! The costs involved in being a tournament angler are substantial, particularly the travelling costs. With the approval from the HOA (who manages the financial affairs of the Silver Lakes Fishing Club), Dilano received a sponsorship from Silver Lakes Fishing Club. This sponsorship was handed to Dilano by the CEO of Silver Lakes, Mr Jan de Wet.

THE COOK ON THE CORNER From Seline van der Wat March(ing) in the Summer Sun You have to LOVE living in South Africa. Sure, we have our problems, but show me a country in the world that doesn’t! I adore being a South African, a label that I proudly wear on my vast travels around the globe. Apart from the friendliness of our people and the beauty of our land, what I like most about this country is the stunning, never-ending summer. Sure, we have winter too, but in general, it is really only cold for 4 weeks in the year before it starts turning to Spring again. South Africa’s weather has influenced our cuisine a lot, not only because it has an effect on the types of food we can grow here, but also because it lends itself to leisurely lunches or dinners outside, around a fire with a cold brew in your hand. Between the multitudes of cultures we have in the country, we have so much in common – even in the kitchen! All South Africans love a braai – outside with friends, chatting until the sun almost comes up again over a few beers, white wine or even a fruit punch. The food is very unpretentious, something that I feel we do particularly well. I know that I tend to overcomplicate food, especially when I’m entertaining, and sometimes it’s good to have a reminder that in general, simple food is delicious and ideal for having people over. I know I’d much rather be around the fire with friends, than nitpicking over the world’s most pretentious salad. And that’s why South African food is so delicious. The ingredients are respected, our food packs a flavor punch and it’s simply yummy. Along the trend of easy entertaining, here’s a recipe for homemade ice cream sandwiches. Sure, you can make the cookies at home if you’d like, using Ouma’s famous chocolate chip recipe, but you can also buy those yummy Smartie cookies at the shop around the corner… There’s no shame in that! Make these with the kids – they love getting their fingers sticky and licking off the spoons! Happy March everybody! Be proud of where you’re from! South Africans are amazing…

CHOCOLATE CHIP ICE CREAM SANDWICHES Makes 2 large fondants INGREDIENTS: (Serves 6)
250 ml cream 250 ml milk 6 egg yolks 120 g castor sugar 1 vanilla pod, split with seeds scraped out 12 shop-bought chocolate chip cookies (or simply bake your own at home!) WHAT TO DO:
1. Whisk the sugar, vanilla seeds and egg yolks together. 2. Heat the milk and cream in a saucepan and remove from the heat just before it reaches boiling point. 3. Whisk the hot dairy into the egg mixture slowly to avoid scrambling the eggs. Once all the dairy products have been mixed in, return the custard to the pot and heat at a medium heat until the custard coats the back of a spoon. Remove and allow cooling at room temperature, covered (on the surface of the mixture itself ) with cling wrap. 4. Churn the mixture in an ice cream machine until smooth and set. Place in a piping bag and leave in the freezer until you’re ready to assemble the easy ice cream sandwiches. 5. To assemble the easy ice cream sandwiches place one biscuit upside down on a surface. If you want to, you can use a cookie cutter or plating ring to form the ice cream between the cookies; alternatively, just use the piping bag. Pipe at least 6 cm of ice cream on the bottom of the first biscuit and top with a second biscuit. Allow to set in the freezer and repeat this process with all of the biscuits and ice cream. *This recipe makes approximately 500 ml of ice cream.

BUT TER BEER MUSHR OOMS
Serves: 4 Prep time: 5mins Cooking time: 30 minutes INGREDIENTS 2 tbs butter 3 cups washed button mushrooms ½ cup beer Salt & Pepper 1 tbs fresh parsley chopped (optional)
GARLIC FRENCH FRIES
INGREDIENTS 1 bottle brown ale 3 large potatoes 3 cloves garlic, minced 3 tbs extra virgin olive oil salt & pepper to taste Optional: rosemary, thyme, parmesan or pecorino. DIRECTIONS 1. Preheat the oven to 220ºC. Wash and cut the potatoes into fries, leaving the skin on if you wish 2. Pour the beer into a large bowl, soak the fries for 30 minutes, stirring occasionally. 3. Drain the beer and add the garlic, olive oil and salt and pepper and mix. 4. Line a baking tray with baking paper and spread fries evenly over, try to not let them touch. 5. Bake the fries for about 40 minutes, tossing after every 15 minutes until they are gold and crispy. 6. Remove the fries from the tray, pat down gently with a paper towel and serve. 7. Sprinkle either rosemary or thyme and parmesan or pecorino cheese over for some extra flavour.
Ingredients 1 ½ cup sugar, sifted 2 tbs water 4 tbs unsalted butter, roughly chopped 1 tsp salt 2 cups double cream 1 cup milk, full cream 6 egg yolks 1 cup pale ale DIRECTIONS 1. Heat the water and sugar in a saucepan, letting it simmer until the sugar caramelizes. Add the butter and mix thoroughly once the mixture turns a dark amber colour. 2. Slowly add the cream and milk, turn the pan down to low heat. Whisk the yolks together and slowly add half the cream and sugar mixture. 3. Pour the mixture back into the pan with the rest of the mix and whisk together until well combined. 4. Cook on low heat until the mixture thickens to custard consistency, stirring constantly. Remove the mixture from the heat and stir in the beer and add salt to taste. 5. Strain into a holder and chill overnight before processing in an ice cream maker. How to make ice cream without an ice cream maker: 1. Chill your mixture overnight in the refrigerator (for a quicker result, chill in an ice bath) 2. Meanwhile freeze an empty bowl or stainless steel holder. Then, place the cold ice cream mixture into the frozen bowl. 3. Chill for 30 minutes in the freezer, then stir rapidly to break up any frozen pieces and freeze for another 30 minutes. 4. Repeat this process, up to 5 times, until the mixture is smooth and creamy.

TYPES OF BEER Yes, there is more than one and most can get catagorised under 2 major types, namely Ales and Lagers. The main difference between the two is their fermenting temperature; ales between 18-23ยบC and lagers ranging from 8-13ยบC. The type of yeast used is also different between the two types; top fermenting yeast is used for ales and bottom fermenting yeast for the lagers. The different types of ales and lagers are set even further apart by using different blends and adding fruit, spices and even vegetables to give each beer a unique taste.
Ales This beer is sweeter and tastier. Their colour ranges
from pale gold to rich brown depending on the grains used during brewing. Types of ales include: Amber Ale, Pale Ale, Bitter Ale, India Pale Ale, Irish Ale, Barley Wine, Stouts, Porter and Wheat Beer. Stouts are a bit different from the rest of the Ales, malt-free barley is used along with chocolate scents and using only minimal hops. QUICK FACT: ALES ARE 30% OF ALL BEER SOLD IN CANADA.
Lagers Lagers are crisper and smooth, the result of being
aged for a few months in near-freezing temperatures. Types of Lagers include Bock, Dunkel, Marzenm Pale Lager (most widely known is Pilsner), Munich Dark Pale ad Dopple Bock. QUICK FACT: LAGERS ARE 56% OF ALL BEERS SOLD IN CANADA
The Others
Apart from the popular Ales and Lagers there are also Stouts, Porters and Malts. Porter and Stouts are both top fermentation beers, but where Porters are dark and fruity, Stouts are rich and creamy. Malts are also dark beers but they are much sweeter with hints of caramel nuts and toffee.

Drinking Beer
Food and beer
Exactly like wine, beer has glasses specially shaped to help enhance your beer drinking experience.
Every beer lover enjoys a beer with his or her meal. Certain types of beer compliments different meals the best.
SHAKER PINT – Not the best beer glass, the straight sides and large mouth causes the beer to go flat and warm quickly, but if in a pinch can be used for ales. TULIP PINT – This is the classic Guinness and dry stout glass. NONIC PINT – the “no-nick” glass has a bump that helps prevent the glass chipping. SNIFTER – This glass is ideal for Barleywines, Quads, Eisbocks and Big Stouts with the small mouth concentrating the aroma and minimalizing foam. TULIP – The cinched mouth helps focus the beer’s aroma, but this glass allows the foam to settle on top. Perfect for Scotch Ales, Belgian Strongs or anything with big strong flavours of which you only want a small taste.
ALES: They can be paired with almost any food, burgers, buffalo wings, Mexican, Asian, pizzas, steaks and any spicy or nutty meals. Best cheese match: parmesan, cheddar or romano. BOCK BEER: Cajun food, chicken or beef. Best cheese match: Swiss and Emmental. FRUIT Y / LAMBIC BEER: Sweet duck and pork dishes, light white meat dishes spiced with herbs. Best cheese match: Mascapone. LAGERS: Perfect with seafood, sushi and grilled pork and chicken.
GOBLE T – This glass is designed to keep your beer colder for longer by forcing you to hold the glass lower on the stem. The wide mouth allows for the fizz to be released quickly leaving you with the rich beer taste.
PILSNER: compliments fish well, especially salmon, tuna and trout. Best cheese match: American cheese, Muenster, Havarti and Monterey Jack.
PILSNER GLASS – This glass is narrow to show off the pale colour and narrows slightly towards the top in order to hold the foam there.
POR TER: Pair with rich food like stews, meats and braised dishes.
STEIN – This is for serious beer drinkers. The big and heavy glass can hold a lot of beer while keeping it cold, with a lid to keep bugs out. These are best for all the classics especially Pilsners and Bocks. SEIDEL – The stein glass without the lid, but with moulded dimples allowing light to shine through the pale beers.
STOUT: Delicious with roasted and barbecued foods, as well as chocolate desserts. WHEAT BEER: Great with light dishes, salads, vegetarian meals, sushi. Best cheese match: Feta, goats cheese and Gruyère.

leaf will be smaller than the others so keep an eye out for that.
After World War II a broadleaf herbicide was introduced to kill dandelions, plantains and other weeds, also killing the clovers that was widely used in the lawn mix. This resulted in dead patches of grass and ultimately the end of clover usage.
4. MARK THE PATCH It is believed that four-leaf clovers are caused by a genetic mutation so if you find one in a patch there is likely to be more near-by.
5. PRESERVE YOUR LUCKY CLOVER Save your clover by pressing it in a book. If you find more than 3 four-leafed clovers in less than 5 minutes, you have found a hot spot! Mark this spot, because you will often find your lucky clover here.

Step 1: No more commercial fertilizer As natural fertilizers clovers do not need fertilizer, which will actually kill them with their much-too-high nitrogen percentage. Prepare your lawn for the clovers with organic lawn food such as cottonseed meal or dry-poultry waste. They have water-insoluble nitrogen that is released in small dosages over a month, providing nutrition to your lawn. This will help your lawn keep a consistent colour throughout the seasons.
Step 2: Add your clovers The best time to plant clovers is spring or autumn so that the clover has time to establish itself before harsh hot or cold weather. Firstly rake the grass surface. To ensure even distribution, mix your clover seeds with sand or compost. Depending on how much clover covering you want on your lawn, distribute the seed mix moderately or more heavily. Water your lawn thoroughly and keep moist until you can see the clover seeds sprout.
Step 3: Moderate watering Too much water prevents roots from growing deeper to find water and makes them easily susceptible to drought. Rather water your lawn thoroughly once in two weeks, even less when it has been raining a lot.
Step 4: Remove insects and weeds No garden will ever be weed-free, but you can reduce the weed population substantially. Mowing your lawn frequently will repel insects and stop weeds from growing too big. Organic weed control meals will further stop the weeds from growing and taking hold.
Step 5: Boost your soil Never underestimate the effectivity of compost. Top-dress your lawn finely with compost to help improving the drainage of your lawn.

GREEN EYES FOR
Saint Patrick’s Day
Feeling Lucky… Saint Patrick’s Day gives you the perfect excuse to try your luck at wearing green eye make-up. Most people have been very sceptical about green eye makeup as they’ve been put off by ‘some lady’ they saw somewhere, who applied it completely wrong. Green can be worn with any eye colour, you just need to know which shade of green suites you best.
You yourself can decide on the amount of green to be applied - it can be just a dab of green on a brown based eyelid, a lot of green all over your eyelid or just a subtle amount of green eyeliner.
THE INDUSTRY NORM FOR THE SHADE OF GREEN THAT BEST SUIT A CERTAIN EYE COLOUR, ARE AS FOLLOWS: • If you have light or hazel brown eyes, try a green with a yellow undertone like the colour ‘lime’ in the colour palette • If you have dark brown eyes, try a green with a blue undertone like the colour ‘pistachio’. The blue will enhance the warm orange colour in your eyes • If you have light green eyes, try a deeper / dark green tone like the colours ‘pine’ and ‘basil’. The contrast will enhance your own eye colour
• If you have dark green eyes, try a lighter / bright green tone like the colour ‘parakeet’. The contrast will enhance your own eye colour • If you have light blue eyes, try a green tone like the colour ‘seaweed’ • If you have dark blue eyes, try a lighter / bright green tone like the colour ‘moss’

Create a white base. This base can be created by using a very light foundation or concealer on the eye lid only, or using a white eye liner pencil by colouring in the entire eye lid and smudging it with the tip of your finger.
Create a black base. This base can be created by using a black eye liner pencil by colouring in the entire eye lid and smudging it with the tip of your finger.
A more subtle appearance can be achieved by applying your eye make-up as usual (brown tones) and adding any one, or a combination of the following: Green eye liner • Apply eye liner on the top lid • Apply eye liner on the bottom lid • Apply eye liner on the top and bottom lid Only apply your eye liner from the outside corner of the eye to the centre of the eye lid, then taking you brush (ideally the brush you used to apply your brown eye shadow) to soften and extend the eye liner from the centre to the inner corner of the eye lid.
Green eye shadow • Apply a pea-size spot of eye shadow to the centre of the upper eye lid • Apply a tiny bit of eye shadow to the inner third of the upper eye lid • Apply a tiny bit of eye shadow to the outer third of the upper eye lid Ensure to blend your green eye shadow very well with you brown eye shadow. For a more dramatic or evening look, you can add some black eye liner and eye shadow.
For the rest of the face Either a red or a nude lip (almost skin-tone colour) compliments green eye shadow best! Avoid using a blusher with a pink undertone.

MAKE YOUR OWN STEPS: 1. Start by sticking down the provided artwork sheet on a white piece of cardstock. Then cut out the different shapes with a pair of scissors. Once you have finished with that, take the two ice cream sticks and glue the centre point of the one to the other. Then, take a needle or sharp pin and pierce a tiny hole about 1 cm from the edge of each stick (this will be used to thread the mobile through to create a hanging hook). 2. While we wait for the sticks to dry, cut a slit from the bottom of Cloud A till about 2 cm to the edge of the top of it, then take Cloud B (the same size) and cut a slit from the top of it, also leaving about 2 cm to the edge of the bottom. Join the two clouds through each cut to create a 3D cloud for your mobile. Do the same for the rainbow cut-out (two rainbow cutouts; slit on top of rainbow and slit from under). 3. Once you have combined each cut-out with its pair, stick down each side of the 3D cloud with a piece of cello tape. Now comes the fun part! Thread your needle with some fishing gut (about 45 cm long), tie a knot about 15 cm down the cord, thread it through the hole in the stick leaving the 15 cm thread on the one side where you will be using it to hang the finished mobile.
Lucky mobile
The popular phrase ‘Luck of the Irish’ originated from the 1800s during the US gold rush when a number of Irish people found gold and silver. The Irish immigrants were viewed as incapable of any success and therefore the term was deemed as luck. So this St. Patrick’s, we will show you how to make a lucky mobile for your baby’s nursery. With rainbows, clouds and golden shamrocks, this mobile is sure to bring sunshine and happiness to any child’s room.

4. Now on the other side of the stick, using the leftover 30 cm cord, tie a knot to stop the mobile from slipping up and then thread your needle about 5 mm through the top of your 3D paper cloud, weaving it out and back (about 5 mm from the bottom). Place a gold paper clover cut-out (using the similar method) below and repeat with another cloud or rainbow until you have achieved your desired look. Tie a heavy glass bead to the end of the fishing gut to hold the strand down and repeat this step with the other strands. Once all strands are done, tie each strand’s top piece together to create a loop from which to hang your paper mobile.

Never be late, especially in the Navy. By Corlia Mathews from the book ‘Just Nuisance AB – His full story’ by Terence Sisson
KIDS STORY
- Just Nuisance -
PS: Oh yes I forgot to mention, after this episode of disappearing it was decided that one of the seamen had to accompany Just Nuisance on all his outings. So on the first evening of his return when it was time for his shower, his whole hut went with him.
Just Nuisance – dead or alive? As you would have gathered from all the previous episodes about this most famous navy dog, he was beloved by all. To such an extent, that even today we have market days named after the dog in Simons Town, his beloved navy port. When news of a fatal car accident with Just Nuisance as the victim surfaced, all at the different navy establishments who knew Just Nuisance were in tears. What actually happened was that a Great Dane of Just Nuisance’s description was involved in an accident in one of the Cape Town suburbs. He was taken to a minesweeping depot at the Cape Town Docks where it was established that the dog was Just Nuisance. The Dockyard obtained Benjamin Clancy’s (Just Nuisance’s original owner) and Commander Shakespear of MS Afrikander 1 phone numbers, contacted them and they rushed off to find out for themselves just how serious the accident was. They organised a veterinarian to accompany them and obtained a navy pass for him to enter into the dockyards. By this time it was all over the peninsula that the dog was in a serious condition, but as Ben Clancy and Commander Shakespear entered the building in which the dog lay, they realised the dog was dead; and to their joy it was not Just Nuisance. It was a similar dog, but much smaller with none of the distinguishing scars and marks. When the news broke that it was not Just Nuisance, many cheers went up in barracks, bars, and dockyards around the Cape and Simons Town while many an eye was moist with relief. Where Just Nuisance was during this whole episode, nobody knows but when he arrived back to Froggy Pond that evening he was welcomed with such abundance that he must have wondered what was happening. Bedraggled, but feeling welcome and possibly back from a visit to one of his many lady friends, Just Nuisance went with the flow of hugs and back rubs. His fellow seamen wanted to take him out on a ‘thrash’, but Leading Seaman Clark vetoed the suggestion and had Just Nuisance fed at the gulley where the chief cook borrowed some spare rations, grilled chops and a litre of beer. Afterwards Leading Seaman Clark put Just Nuisance to bed. Although he did not come with, there were many celebrations and especially in Froggy Pond, to the fact that Just Nuisance was still alive. Many of his fellow seamen got sloshed and only returned on the last train. They were booked by the guardroom staff as returning on board one of His Majesty’s ships, being drunk and not fit for duty. It will be interesting to all of you, even if you are based on shore in the Navy, returning to camp, was returning to ‘ship’. Therefore it was a great offence to be late. Obviously, in the forces, it is a great offence, which is severely reprimanded, but in the Navy, it is a far greater issue than in the regular forces. You can imagine, if you are late on land, you are late and in trouble. In the Navy if you are late, your ship would have left without you. Therefore the ship will have one crewmember less, which is not an easy problem to solve on a contained area such as a ship. In addition, when at war, it means one less soldier fighting or doing something useful to make the mission count.
