1947 – Present (67 Years) As a child, King had to divide his time between Indiana and Connecticut because of his parents divorce. He managed to graduate from Lisbon Falls High in 1966 and afterwards attended the University of Maine at Orono. He published his first short story while in college and graduated in 1970 with a degree in English. King searched for a teaching job but was unsuccessful at first. He started a job in a laundry matt and continued to write stories in his spare time. In 1971, he began working as an English teacher at Hampden Academy. King managed to sell his first novel, Carrie, in 1973 and with the huge success after it was published the following year, King devoted himself to writing full time. Steven King is now recognized as one of the most famous and successful horror writers of all time.

1949 – Present (65 Years) Springsteen was brought up in a working-class household in Freehold Borough. Both his parents had jobs; however, his father’s odd jobs did not bring in a steady income unlike his mother position as a secretary. As a young boy, Bruce and his father had a difficult relationship however; when he looked back, Bruce suggests that his troubled relationship with his father had been important for his art and his music. In the late 1960s, Bruce spent most of his time on the New Jersey Shore; he played in several different bands while he forged his unique sound, the sound of a gravelly baritone voice for which he would later become famous. Bruce released his first album in 1972, but sales were slow, and only after a year in the studio, he released a third album, Born to Run, which went straight to No. 3 on the Billboard and launched his fame. Bruce continues to thrive as a performer and songwriter today.

The Intra Muros magazine has evolved over the past few years and it is continuously growing. We have always been proud of printed products but as technology evolves, we need to move with it. After many meetings and discussions, we have decided to expand the readership and move into the digital age. But don’t worry we will still be printing the Intra Muros and sending a digital version so that people of all ages can read the magazine. There are many advantages to print and digital. Print has been around for many years therefore, there is a form of trust involved. People don’t like change and there is no doubt that a physical magazine is nice to read. As readers, we are drawn to our senses. We like to touch, feel, see, and smell. A printed magazine forms a type of relationship with the reader. Despite the new age, there is no doubt that people still like to sit on their couch and flip leisurely through magazines. The beauty of a physical magazine is that it can be paged through or read numerous times as it lies on the coffee table. Digital magazines, or online magazines, are publications, which are electronically available to readers. The advantages of going digital is that we can increase magazine distribution on a much bigger scale as well as deliver content across multiple platforms and devices which is a new level of convenience for readers. Readers have access to this digital content anytime anywhere and can easily share this link with more readers. It is also a way of drawing new audiences to the magazine. It gives us the opportunity to make con-
tent more interesting and the possibilities of expanding content as opposed to be limited due to cost restraints. We are able to increase pages slowly, making the Intra Muros more exciting to read. Going digital is additionally healthier for the environment. We hope that residents continuously read the Intra Muros and share this beautiful estate magazine with friends inside other estates. SPRING TIME When spring arrives, a person feels like spring cleaning, decluttering, and making our homes new and fresh for the spring season ahead. However, when selling your property, it has a hidden benefit. According to a recent article in the Pretoria East Record, where a Biggest Home Seller Mistakes survey of 1 000 estate agents in the US revealed that 32% of people don’t manage to sell their homes because of the clutter. In South Africa, sellers can sabotage their own house sale with clutter. Potential buyers could feel that there is a lack of storage and no space and they won’t be back for a second look. Sellers are often blind to the amount of clutter in their homes and instead of tackling the bigger problem, they focus on cleaning around the general clutter. Sellers are also often unwilling to compromise on how they live in their home during house showings. However, when potential buyers can visualise their own things in the house it can lead to a potential sale. Look at your house from a buyer’s point of view and be extremely critical. SILVERLAKES ROAD UPGRADE HOA’s Consulting Engineer, Mr Richard Hirst of SiVEST, had the following good news to report on the above matter: Over the past years, there has been a noticeable, deterioration of Silverlakes Road. This has been attributed largely to the lack of storm-water control and the failure of the road prism due to storm-water penetration. A proposal to upgrade Silverlakes Road is currently underway, which will include inter-alia the construction of additional lanes in both directions, the upgrading of most of the Estate’s access points along the road with traffic circles and the installation of a formal underground storm-water system. The introduction of additional lanes in both directions is a direct result of the volume of traffic during both the morning and afternoon peak periods. This will assist with the mobility on the road in both directions; however will have an adverse effect at

You slip when your feet have insufficient grip on the floor or surface you’re walking on. Slipping can happen when the floor or paving is wet, or when the soles of your footwear have insufficient tread. Take preventative measures by making short strides on a wet surface, and take wider turns. And of course, always clean up spills immediately.

Tripping can happen when your foot hits an object in your path, causing you to lose your balance. One way to prevent this, is to not carry items in such a way that your view is obstructed, and to keep desk or cabinet drawers closed when you’re not using them. Keep the walking areas of floors clear of loose objects such as toys, and free from electric cables. Be extra cautious when walking on a broken or uneven surface or paving, or when using a broken handrail. A fall happens when you fall from a higher to a lower level, such as falling down stairs or from standing on a chair. Never stand on a chair to reach for a high object. It is always safer to use a ladder, but note that ladders come in different sizes, and are designed for different purposes, so be sure to select one that is the appropriate size and length, and use it properly. Serious injuries can result from falling down stairs. Walk, don’t run or jump up or down stairs, and use the handrail. Most importantly, be vigilant about how and where you walk, even if the walking surface is dry and even. EGM 11 AUGUST 2014 A successful EGM was held on 11 August 2014. Thank you to all members who attended the meeting or who submitted proxies. We were luckily able to make the quorum with an excess of 20 members. The ordinary resolution that was voted on was approved by over 90% of members present and by proxy. The adjustments to the levies and the current budget will now be done. DIGITAL INTRA MUROS We are trying something new by moving into the digital realm and making the Intra Muros available in a digital format. The digital magazine will have more content, more images, and more articles. By making the magazine available digitally, we will be able to print fewer copies, which will not only save on costs but is also good for the environment. Limited hard copies will still be available at the HOA office, at the Clubhouse and at the entrance gates. The printed publication will no longer be hand delivered to the houses on the Estate. FIRST AID COURSE We are looking at hosting a First Aid Course at the Clubhouse. The cost of the course is R300 per person and a competency certificate will be issued. The course will be held over two days and will be conducted in English. In order to gauge interest in such a course, please would you contact me at liaison@silverlakes.co.za so that we can determine if such a course should be held on the Estate. MICROCHIPPING OF PETS Vetland Animal Hospital (Plot 9, Shere) is willing to assist with the micro chipping of pets. In the long run the idea is for the HOA to purchase a microchip reader so that lost pets with a microchip can be easily and quickly returned home. Vetland will do the micro-chipping at their premises under supervision and over a period of a few months. Depending on the interest shown by residents, a special price will be determined by Vetland for this service. JULY/AUGUST/SEPTEMBER Charity collections at the gates: July – September. This very special time on our Silver Lakes Calendar will be your chance to clean out cupboards, garages and storage areas to donate items that are still good to use to our charities. This will be an opportunity to share with those less privileged in our immediate community. We will be collecting items for Paul Jungnickel Home, and for the workshop, nursery schools and pre-schools in the area. Look out for our pamphlets and the requests on our notice boards. SEPTEMBER Spring day - Saturday, 13th of September. This day will start with the traditional Spring run, walk and cycle through the Estate. It will include a flea market and fun events afterwards with slides, and the photo booth. Once again, the extremely successful Master Chef-type event that Seline hosted on Youth Day will be repeated as a ‘Silver Lakes Family Chef’ competition. Look out for pamphlets and emails regarding this event closer to the time. SEPTEMBER/OCTOBER 1 week school holiday, golf and other events OCTOBER Rose garden Competition Silver Lakes International Day - Saturday, 25th of October. On this day, we will celebrate the international community of Silver Lakes, starting with a meal that includes different kinds of international dishes, drinks, and anything international. We will try to fit in some entertainment as well. Keep a lookout for correspondence about this event. Silver Lakes Trick-or-Treating - Friday, 31st October. GAME IN SILVER LAKES We are one of the few Estates close to a city and in the middle of industrial activity that has both game and golf as part of their communal areas. As you would have gathered from emails and flyers, we have commenced with the capturing of the excess game in our game reserve. The following is a summary of the game that will be removed and what will be left behind in the Silver Lakes Game Reserve: ANIMALS Kudu Nyala

We will be left with about 66 head of the above game. Excluding the smaller species, Bosbok and Rietbok. Even though the bylaws of the province say that we need 200 ha of game reserve for Kudu and Nyala, we will apply for a permit either as a game reserve or as a ‘zoo’ – same as Farm Inn. Especially as we feed the animals, and have ample water during the winter and dry seasons there might be no problem. Dr Douw Grobler is in constant contact with the local authorities, and will provide all the necessary documentation for our own books, as well as the transport of the sold game. Silver Lakes’ permits will be obtained after the removal of game since we will only know the final numbers then. Removal will be done after allocating tenders over a period of about a week and will be done by darting. The specific dates for darting and transportation of the game will be organised with the new owners. In the new season, we will set out on a program of reclaiming veld and removing some of the roads through the veldt. This will be done by scarifying the unnecessary roads and seeding them with veldt grass – as Dr Grobler mentioned there is a well-known mixture called the Potch-mixture that we can use.
The Potch-mixture is made up of Panicum; a white buffalo grass for areas with high rainfall and mild winters (Silver Lakes), Smutsfinger, Rhodesgrass, and Borseltjie seeds. This mixture of grasses made up of: “pioneers”: grasses, which grow fast and reclaim open ground, annual and perennial grasses. In this way, our veldt will be in good shape in a shortest time. As part of our recon to take photographs of the game while we still have them all onsite and the work to be done in the game reserve Ollie Ollewagen, Michael from HOA, my daughter Charlotte, a friend Savannah and I walked and marked the walking trail. Next month there will be a few photographs of the trial – please feel free to go and walk the trail, but please do not litter and try and keep noise levels down. While we were there, we saw children running around chasing animals and kids on bicycles shouting at the game to get reaction. Please refrain from these actions since this is an area of preservation. With the arrival of Spring, it is a good time to come for a walk. The map is on our web site, but it is clearly marked and easy to walk – about 45 minutes and not more than 1.5 km.
STREET CORNERS OF SILVER LAKES This month we will start with the process to clean-up the street corners on our Estate. Firstly, we need to establish three principles: 1. Why are we replacing the street corners and doing what we are doing in the Estate gardens? This was established at the AGM in November 2013, at numerous Trustee meetings and in Intra Muros articles: • As part of my bid for the portfolio of Environmental Trustee for Silver Lakes I promised a clean-up of the look-and-feel of the estate; • I also promised a new cleaner look-and-feel to the estate; • Part of this was: Painting the buildings; Cleaning up the gardens; Unifying the gardens throughout the estate; Including the entrances, boulevards and street corners; • Street corners were a specific question at one of the pre-AGM meetings; • And was mentioned at the AGM specifically; The existing roses are untidy and needs replacement since they are mostly more than 20 years old; Some of the street corner walls are falling over; The suggestion was from the beginning to create a uni fying theme throughout the estate The look and feel of the grass and trees of the golf course; Thereafter, in the next phase, detail will be added in the style of the design of the buildings of the estate; Which was confirmed to stay the white colonial build ings after several architectural proposals; The detail gardens therefore will be in the colonial style; Colonial meaning, as per a presentation to the Board, flowering plants such as the existing roses – but in newly designed focal points; The first of these focal points were the re-establishment of the Club House gardens;

To follow was the down pruning and neatening of Muir field Boulevard; And the street corners; And Pebble beach; With the gate to the Game Reserve to follow – but the theme here will be more towards a bush-veldt type garden matching the inside of the game reserve; Even the roads crisscrossing the veldt in the game reserve will be scarified, ripped, and seeded in the new growth season.
• After incorporating the existing walls into the properties of the corner stands and establishing all sidewalks of the corners with lawn and trees where needed the marked corners will be redesigned by our architects to take the colonial theme through from gate to gate to Club House. • Suggestion: The two main gates and the entrance to the Club are included to form part of the new signage styles.
2. The style of the look-and-feel of the estate is Colonial as was intended by the original developers:
Some of the existing corners: Even though the effect of our corner walls in the first photo are especially effective since there is no dwelling behind them, and the beautiful colours of the succulent plants enhances the beauty of these two corners, this is not the look we are going for. The photographs cannot portray the feeling of desert plants as in real life. In the second photo one can already see the effect of the dwelling behind ‘cluttering’ and overshadowing the feature wall. Thus, our focal point becomes part of the clutter. Therefore painting the walls the same colour as the dwelling will be the solution to declutter and create stronger focal points. We, together with our architects will be creating a colonial lookand-feel as per the original intention and therefore we stay with the colonial architecture and gardens. 3. Two phases to the process: • We are removing all the roses since they are mostly more than 20 years old; • We are removing all the extra curbing; • We are planting lawn; • We are planting indigenous trees endemic to the area (here we might let the home owners choose?) • For example we will have a list consisting of Karee, White Stinkwood, Combretum, thorn trees such as Acacia Karoo, Fever trees and more – what is available locally in large numbers; • We are simplifying the irrigation to water lawn from one single point; • We are removing all the corner walls that are dangerous; • We are removing all the corner walls that are in front of an existing boundary wall of a property; • We are removing all corner walls that homeowners want removed, irrespective of an already existing boundary wall, stability of the corner wall, if the property is then open to the street – it was the homeowners choice; • We are painting all the corner walls the same colour as the rest of the boundary wall that the homeowners want to keep.
As one enters the estate this is the first image we see: a pole fence behind ‘our’ fence, boards, and a few ‘loose’ white walls with street names. The only positive of this photograph is the great blue sky, trees and green lawn, which we will have in the new look-and-feel, without the clutter.
Not even the nice blue sky can make this corner look good. It needs to be tidied-up and incorporated into the homeowner’s property and colour scheme.

Use of existing architecture in the design of the eight new corner focal points with street directions: Some of the untidy fences that we need to incorporate into the properties on the corners and have them removed or tidied up. As mentioned above and several times this year in presentations and explanations: we are DE-CLUTTERING the Estate first before we add details of the eight new corners and 4 entrances again.
For the signage, the existing gates structures and electronic boards can be a directive to design new street corner walls with street names and numbers. Possibly some lighting (from the back if engraved) for nighttime (solar lights enough power?) Possible images: Even though the pruned roses do not look untidy the bare ground, the short ‘sticks’ are visible for at least ¼ of the year on all our corners. These open flowerbeds will be incorporated into the Colonial style design of the eight suggested main corners.
Something like this looks very untidy – the Silver Lakes fence extended by a different kind of fence and bad maintenance. THE BRIDGES NEEDS SERIOUS ATTENTION – PAINTING THE RIGHT COLOUR GREEN WILL HELP A LOT IN THE SHORT TERM – and will not cost an arm and a leg. It is only maintenance. MEANINGFUL PLAY Sannchen Nel - Occupational Therapist
Play is one of your child’s most important tools as it provides them with an opportunity to utilise all their senses to explore and to learn. It allows them to communicate and interact with their environment.
A delay in development may first be noted by parents or teachers when the child is not showing behaviours and abilities that are typical of the child’s age.
The following may assist you as a parent in identifying skills that your child may be struggling with as well as activity suggestions for meaningful play:
ACTIVITY SUGGESTIONS FOR CHILDREN AGED 2 TO 6 YEARS • Play dough: Use play dough to develop fine motor skills e.g. let them roll small balls and flatten them; roll the dough into a long snake, and let them break it into smaller pieces to build different shapes. • Painting using hands, fingers or brushes • Beading. Start with using large beads and shoe laces. • Allow the child to place small objects one by one into a container. Let them use tweezers to increase the level of difficulty.
Body Awareness SKILLS • Struggles with identifying and naming of body parts • Doesn’t know the functions of specific body parts • Has difficulty drawing a man • Insufficient ability to dress and undress ACTIVITY SUGGESTIONS FOR CHILDREN AGED 2 TO 6 YEARS • Teach them their body parts through games and rhymes e.g. Simon Says. • During daily tasks, such as eating and bathing, ask them to tell you the function of the body parts they are currently using e.g. ‘I am eating with my mouth.’ • Build a man using play dough, baking or art activities. • Help your child with the first steps of getting dressed and let them complete the task e.g. help your child climb into their pants and let them pull them up. Gross Motor Skills SKILLS • Clumsy, often bumps into objects or breaks things easily • Struggles to learn new motor skills • Dislikes sports • Poor balance or does not use their hands to protect themselves when falling • Struggles to jump, hop, skip etc. ACTIVITY SUGGESTIONS FOR CHILDREN AGED 2 TO 6 YEARS • Play ball games involving catching, throwing, or running and kicking a ball. Make goal posts for throwing and kicking to increase the level of difficulty. • Draw two lines on the ground using tape or rope and allow your child to walk inside the lines. When your child is able to do this, let them try walking on one line. Make it fun! Let them imagine there is water all around and they have to cross the river. Once they can manage this, add objects to carry from one end to another. • Place hoops or draw circles on the ground and ask the child to jump in sequence. They can jump with two legs together or one leg at a time. Fine Motor Skills SKILLS • Dominance of hands not yet established (establish preference by age 5 or 6) • Struggles with tying shoe laces, doing buttons or pulling up a zip • Struggles with drawing, colouring or cutting • Pencil grasp is very tight or insufficient • Has difficulty with manipulation of small objects
REMEMBER TO ALWAYS PLAY WITH YOUR CHILD, AND NOT JUST OBSERVE! Need more information? Children of all ages can be affected by developmental delays; such children can often benefit from Occupational Therapy. What an Occupational Therapist can do: • Evaluate your child’s level of performance in different developmental areas. • Observe your child in their home and school environment to determine how it may be modified to promote better development. • Develop a treatment plan in coordination with other health care professionals who are treating the child. • Assist with development of age-appropriate self-care routines, play skills, and social skills. • Recommend equipment and methods to facilitate development. SILVER LAKES MATURE GOLFERS NEWS FROM THE MATURE GOLFERS GROUP PLAYING AT SILVER LAKES GOLF COURSE The cold weather does not seem to keep the old boys away from golf. The turn out on a Thursday is now approaching the 40s. The Mature Golfers group has been supporting Silver Lakes for over seven years. During the summer months, we expect to see around 50 to 60 of the old boys giving the golf course a birdie bonanza. The after-golf prize giving and function is always a fun affair and certainly does boost the clubhouse sales. Do not forget if you wish to play with the Mature Golfers simply put your name down at the Silver Lakes Pro-shop before Wednesday noon and be there by 07h15 latest on Thursday mornings for the draw. The group is open to all male senior golfers whether you are residents of Silver Lakes or not. Please diarise 20 November for the Annual Golf Day of the Mature Golfers at Silver Lakes. This day is open to all senior ladies and gentlemen, and must not be missed. Great prizes are to be won at the golf prize giving and dinner. It is with huge sadness that the wives of two of our loyal Mature Golfers passed away during this year. To Deon van de Berg and Ron Niehaus our thoughts and prayers are with you. Handicaps News July 2014 Dear Golfer, This month we look at some interesting statistics from the first 6 months of 2014 and we again recap the use of Front Tees in Junior U13 handicapping.

A total of 1 793 212 rounds were recorded on the HNA Handicap System in the first half of 2014. 87% of these rounds were entered by male golfers and 13% by female golfers. More interestingly was the fact that close on 60% of these rounds were entered by players older than 50 years of age.

Percentage of Rounds Played to Handicap-by-Handicap Group A measure of how consistent and fair a handicap system is across the various handicap ranges, is the percentage of rounds that are played to handicap. This is a statistic, which both HNA and the SAGA monitor closely on a monthly basis and as can be seen in the tables below, we notice every year that the percentage of time that men play to their handicap increases in summer, and reduces in winter. As expected, the more you play the better you get.

Share of Rounds Entered by Handicap Group These same groups very closely align the share of rounds entered by the handicap group to the split in golfer numbers. The largest number of golfers, 31.76% is found in the 13 – 18 handicap range and as would be expected, they recorded the majority of rounds, 32.19%. In order for Junior boys to be able to enter a score for a round played from the Ladies Tees, the Union needs to have created a Front Tee on the system which is the Ladies Tee re-rated using the men’s rating formula. Before playing off the Ladies Tees it is important that all golfers first check to see whether they will be able to enter their score. If there is no Front Tee captured on the system it would then be preferential for the round to rather be played from the club’s Forward or Club Tee as these scores can then be entered for handicap purposes. SPRING ROSE FEVER Growing roses is a partnership between the rose bush and the gardener, with the common aim of producing beautiful roses. Each has a role to play and while there is a sense of equal effort in September, in October all the glory goes to the rose. Not that we gardeners mind - basking in the reflected glory is enough of a reward. In order to enjoy a spectacular October flush there are four basic tasks that need attending to in September.
WATERING
FINGER PRUNING
The rose enters a phase of incredibly rapid growth, drawing up huge amounts of water and food. Increase watering to at least twice a week. Make sure that the water gets down to the roots. Pay particular attention to plants at the periphery of a sprinkler, or those on a slightly sloping section of a row or bed. Mulch beds with a 10cm layer of organic material. This keeps the soil moist and cool, and prevents evaporation.
Hybrid tea roses benefit from ‘hands on’ beauty therapy in the form of finger pruning. Finger pruning encourages new basal growth and spread out flowering, and forces the production of green leaves which feed the plant and keep the roots active.
FEEDING Because of the rapid growth, the fertiliser applied in July or August will have been used up and more needs to be applied. Apply 30g of Vigorosa or the recommended amount of any other rose fertiliser per bush and water in well afterwards.
SRAYING • Thrips do the most damage to the flowers. Drenching the soil around the bushes with the systemic insecticide KOINOR, also marketed as CONFIDENT, provides a sixmonth protection against the invisible Thrips larvae as well as aphids and other small sucking and leaf-eating insects. • Aphids don’t do much damage and can be easily washed off or knocked out with an insect spray. • Powdery mildew can be a problem for certain varieties and in certain positions by the end of September. Ludwig’s Insect Spray mixed with Chronos puts a stop to that.
Spring Rose Care and Finger Pruning Demonstrations These will be held at the following times and venues:
• Ludwig’s Rose Farm on Sunday, September 9 at 10.30am. • Ludwig’s Roses Soleil, Lynnwood Road, on Sunday, September 9 at 2pm.
Basically it is the pinching out the terminal tip of a developing shoot. Using your fingers, simply snap the tiny tip out of terminal leaf axles. About 25% of the new shoots on a bush should be finger pruned i.e. 3 out of 12, 4 out of 16, etc. Treat each bush individually and make sure the pinched shoots are well distributed over the bush. If two shoots are equal and next to each other, pinch out the tip of one. Any shoots that look as if they are not going to produce a good bloom can also be tipped. Finger pruning should take place just before the flower buds become visible in the tip of new shoots, which is about mid-September.

I think that it’s safe to say that we’re seeing the tail end of this year, with most families already making their travel plans for December holidays. I, for one, will definitely be taking a holiday for the first time in a good couple of years. Life has been so busy leading up to and following MasterChef South Africa that I haven’t had even a long weekend to take a break, get out of the city and clear my head. I love the promise of a holiday in December – seaside strolls on the beach, late night fish braais and a good old sokkie in a local town’s school hall on New Years Eve. Just to get you in the mood to push harder and faster towards the end of the year (and towards that holiday) why not treat yourself and your family to homemade seafood pasta. This beautiful dish is filled to the brim with delicious seafood and pops with the freshness given to it by the grape and fennel! It will give you just the hopeful kick that you need to push through the famous September-slump experienced by most people as they realise that December is further off than they had hoped. Luckily, we will be having the most amazing fun on Spring Day on the Estate – with many activities planned to ensure fun for the whole family! I’ll be there to judge a familystyle-team-cook-off competition, so start practising and you might just be the family that walks away with the prize. FRESH HOMEMADE PASTA WITH SAUTÉED GRAPES AND FENNEL BULB INGREDIENTS: For the Pasta: 250g flour 50g semolina (I add semolina to add texture to the pasta, but if you don’t have any, just add 50g more flour) 3 whole eggs 3 egg yolks 2ml salt For the sauce: 500 g clams 200 g baby squid 200 g mussels 2 bunches white grapes 100 g butter ½ onion 1 teaspoon chopped garlic 60 ml cream 400 ml white wine ½ lemon, juiced Salt and pepper To serve: 1 fresh fennel bulb handful of chopped fennel leaves WHAT TO DO: 1. Make the pasta dough first by mixing the dry ingredients together and placing on the tabletop. Make a well in the centre, so that it looks like a volcano. Crack the whole eggs and the extra egg yolks into the centre. Using your hands (or a fork) slowly start mixing the eggs into the dry ingredients, in a circular motion. When all the flour has been absorbed, start kneading the dough until it is smooth and elastic (when you press your finger into it, it should spring back slowly). Cover with cling wrap and allow to rest in the fridge for at least 20 minutes (if you don’t let it rest, the dough will stick to your pasta machine). Roll out your pasta using your pasta machine (as thin as possible) and cut into tagliatelle strips. Now you can boil it straight away (it will take two minutes) or you can let it dry and boil it later. Remember to have a rolling boil in the pot, with a good helping of salt. 2. To make the pasta sauce, fry off the onions and garlic until they are translucent. Add the grapes, salt and pepper, and cook on a gentle heat for approximately 5 minutes. Add the wine and then cook for a further 10 minutes at a low heat. Add the seafood at this point (maintain a low heat) and cook for 3 minutes. Finish the sauce off with the cream and salt and pepper and toss through the cooked pasta. Add lemon juice to taste. Serve immediately with some fresh fennel leaves, dill and some thinly shaved fennel bulb.

Spring fruit recipes By Anitasha Smith
Coconut Battered Shrimp
Date Bran Jingle Balls Makes: 16 cookies
Ingredients 1 egg 1/2 cup all-purpose flour 2/3 cup beer 1 1/2 teaspoons baking powder 1/4 cup all-purpose flour 2 cups flaked coconut 24 shrimp 3 cups oil for frying Directions 1. In medium bowl, combine egg, 1/2 cup flour, beer and baking powder. 2. Place 1/4 cup flour and coconut in two separate bowls. 3. Hold the shrimp by its tail, and dip it into the flour, shaking off excess flour. Dip it into the egg/beer batter; allow the excess batter to drip off. 4. Roll the shrimp in coconut, and place on a baking sheet lined with wax paper. 5. Refrigerate this for 30 minutes. 6. Meanwhile, heat the oil to 175 degrees C in a deep-fryer. 7. Fry the shrimp in batches: cook, turning it once, for 2 to 3 minutes, or until golden brown. 8. Using tongs, remove the shrimp and place on paper towels to drain. 9. Serve it warm with your favorite dipping sauce.
Ingredients 200g quinoa 5 tablespoons olive oil 2 garlic cloves, finely chopped 3 carrots cut into thin sticks 300g leeks, sliced 300g broccoli, cut into small florets 100g sundried tomatoes, drained and chopped 200ml vegetable stock 2 teaspoons tomato purée Juice of 1 lemon Directions 1. Place the cereal, dates and pecans in a food processor and process it until it is finely chopped. 2. Add honey, cream cheese and brandy (or orange liqueur or orange juice) and pulse it until a stiff-dough forms. 3. Scoop tablespoon-size portions and shape with greased hands into balls. Roll each ball in chopped nuts (or date sugar or coconut or wheat germ). Place it on wax paper. Let it stand at room temperature for 30 minutes before serving or storing. Tip Store in an airtight container, separating balls with layers of wax paper, in the refrigerator for up to 5 days.

Allow the pears to simmer, covered with a square of baking paper in the liquid for 15-20 minutes or until tender. Turn the pears occasionally to ensure even cooking around the pear. 4. Serve the pear warm or cooled with a little poaching liquid.
Gooseberry Cream Vanilla Sponge Trifle with Singed Meringue Caps Serves: 4 Ingredients 1½ cups cream 250 g gooseberries, roughly chopped 2 tablespoon icing sugar, plus extra to dust 1 x 310 g Madeira cake, crumbled 2 free-range egg whites 110 g caster sugar Directions 1. Preheat the grill to maximum. 2. Whip the cream until soft peaks form, then fold in the gooseberries and sift in the icing sugar. 3. Layer the crumbled Madeira loaf and spoons full of the gooseberry cream into four small glasses. 4. Whisk the egg whites until soft peaks form, then slowly whisk in the caster sugar until the mixture is glossy. 5. Spoon generous dollops of the meringue mixture onto the top of the dessert and arrange on a baking tray. 6. Pop under the grill for 1 to 2 minutes, or until the meringue peaks are singed. Serve immediately.
Chile Grapefruit Brulee Ingredients 1 grapefruit 3 tablespoon sugar 1 teaspoon cayenne pepper Tools: Propane torch Directions 1. Halve the grape fruit and then cut the bottom off of each half to create a flat spot that will stabilize the fruit. 2. Set the halves face down of a paper towel to absorb some of the juice. Then, flip them back over, and sprinkle them with cayenne pepper. 3. Pour the sugar on and smooth it with the back of a spoon, creating an even layer about a centimeter thick. 4. Fire up the propane torch and melt the sugar with the flame. Let it bubble and brown and get nice and crispy. Crack the shell and dig in.
Molded Grapefruit Salad
Vanilla Poached Pears Ingredients 4 brown pears, free from blemishes and bruises lemon juice 2 cups sugar 6 cups water vanilla bean, split, seeded Directions 1. Peel each pear from stem down. Sprinkle each pear with lemon juice to avoid browning while peeling the remaining pears. 2. Place 2 cups sugar and 6 cups water in a saucepan over
Ingredients 4 cups grapefruit sections (9 to 10 grapefruit) 1 cup suga 2 envelopes unflavored gelatin 3/4 cup cold water ½ cup chopped pecans 1 - 2 red food coloring (optional) Directions 1. In a mixing bowl, combine the grapefruit sections and 3/4 cup of the sugar. Set it aside. 2. In a small mixing bowl, combine the gelatin and 1/2 cup of the cold water. Let it stand for 5 minutes. 3. Meanwhile, in a medium saucepan, combine the remaining sugar and remaining cold water. Heat and stir it until the sugar dissolves. Add the gelatin mixture, grapefruit mixture, nuts, and, if desired, food coloring. Cook and stir until the sugar is completely dissolved. 4. Pour the grapefruit mixture into a 2-quart mold or squarebaking dish. Cover it with plastic wrap and let it chill for at least 6 hours. If you are using a mold, unmold the salad.

KIDS STORY
- Just Nuisance Hi to all the kids out there! From the last few months’ stories, you will remember that Just Nuisance has a free pass to travel on the train between Simons Town and Cape Town. Obviously, his free ticket did not include his best friend Ajax the bulldog. But the story goes that Just Nuisance one day decided to take his little fat friend to the station in Simons Town. They waited with a whole bunch of sailors on the platform for the train to arrive. When the train arrived, Just Nuisance bolted for the door and obviously got the first seat, him having 4 legs and all - being faster than his two-legged sailor-buddies are. …but what Just Nuisance did not realise was that his short little friend could not get into the train on his stumpy little legs! So, he got up again, got out the train and heaved Ajax into the train with such force that he fell against the door on the other side of the carriage! Obviously, Ajax could not jump onto the seat as well. Just Nuisance had no problem, and picked him up by the scruff of his neck and set him beside him on the seat. The ticket collector knew that Just Nuisance ‘had a ticket’ – his free pass – but was sure his little friend had nothing. So he asked the sailors about the ticket for Ajax. Their reply was, “ask Just Nuisance…it is his friend.” The ticket collector replied that Ajax had to get off at the next station and in reply to this; the sailors said they would not try it if they were him.

But, low and behold at the next station the ticket collector stood next to the dogs, took Ajax by the scruff of his neck, and the next minute he had a Great Dane staring him in the eye. Just Nuisance had his paws on his shoulders and according to tales, his eyes were blazing and deep growling was coming from his throat. The ticket collector apparently pleaded for his life saying he had a wife and 3 children. One of the sailors ‘rescued’ the ticket collector and talked softly to Just Nuisance, saying that Ajax could stay. Just Nuisance dropped his paws from the terrified ticket collectors’ shoulders and went back to his seat, got up next to Ajax and travelled to Cape Town unhindered. Obviously, the story got out and no ticket collector after this episode asked for Ajax’s ticket again. Both dogs now enjoyed immunity from railway officialdom. Giving the two dogs the freedom to travel from station to station, getting off wherever they felt like. Playing on the beaches of Muizenberg and Sea Point One such story was where beachgoers who by now knew the two dogs saw Ajax step on a sea urchin, which stung him to such an extent that he had a lame leg. Just Nuisance led him to the water’s edge and let him walk up and down the shore just inside the waves lapping the beach. After about an hour, the stung paw had healed to such an extent that the pair could leave the beach and hop back on the train to go home to Simons Town for a bite to eat. Was it just coincidence, or was Just Nuisance so clever? Well, the onlookers obviously believed that Just Nuisance had wisdom beyond that of normal dogs. Next time we see what more goes on in our favourite dogs’ life.

TO WHAT YOU
NEED
MAKE YOUR OWN bird feeder It is spring again which means all the trees are growing new leaves, all the flowers are starting to bloom, and this brings new life for birds everywhere. Here is how to make your own bird feeder to attract all the birds in the neighbourhood so that you can sit and watch the different species coming together.
A tin can (as many as you want) 40 – 60 cm Twine (tou) Ice-cream stick (one for each can) Super glue Paint A packet of birdseed

1. Open the can with a can opener, and make sure all of the food or liquid is drained. Remove the wrap/ paper off the tin. Wash the can thoroughly to make sure it is odour free, as this might keep birds away. 2. Paint the tin any colour that you want. You can make floral patterns, bees, dots, or anything you think will attract the birds.

3. Once your tin is dry, ask your dad to make two holes on the side of the can. One at the top and one at the bottom. 4. Take the one end of your twine, thread it through the top hole, and make a knot. Take the other end of your twine, thread it through the bottom hole, and make a knot. Make sure the knot is tight and secure to hold the birds’ weight.

5. Take your ice-cream stick and spread a good amount of super glue to the one flat side of the stick. Press the glued side of the stick to the inside of the tin. Press down hard and hold the stick in place to make sure it dries well onto the tin. 6. Fill the tin can with birdseed and hang it up in the tree. Ask your parents to hang it high up in the tree, as this will attract more birds.
