What's the best Zhuhai hangout during summer? I'd have to say Couples Bar because they have a huge pool. It's also right next to the beach so you get the best of both worlds. That's the best daytime hang out.

REDSTAR Chronicle In the loop

Boxing Championship comes to Zhuhai If you noticed any burly men running around the streets of Zhuhai, that might be due to the Asian Men Elite Boxing Championship that came to Zhuhai on June 7-13. The championship had over 19 federation countries with about 150 boxers in total. Olympic bronze medalist Vijender Kumar and Suranjoy Singh stormed into the semifinals of the Asian boxing championships in Zhuhai, China, Thursday to join their five teammates and assure India seven medals. India claimed gold for the first time in 15 years with their winner, Suranjoy Singh. Singh beat the local favourite, Li Chao, in an exciting final match. Other Indian boxers, Nanao Singh and Jai Bhagwan, also medaled in the event. The championship was held on Hongshan Lu, XinXiangzhou in Zhuhai's Sports Stadium.

Survey: Zhuhai Restaurants Beat Macau A consumer survey found that more Macau residents could be attracted to dine in Zhuhai owing to the improved food and service quality, but Macau remained their shopping paradise for clothes and shoes. The finding was disclosed in the Macao Consumer Satisfaction Index 2009 - an annual project launched in 2007 by the Marketing Research Centre of the Institute for Sustainable Development at the Macau University of Science and Technology. The survey, between May 5 and May 12 this year, interviewed 1,274 Macau residents who were asked over the phone to rate, from "0" being the most dissatisfied to "100" being the most satisfied, their consumption experiences in Macau or Zhuhai. This year's Consumer Satisfaction Index looked into six areas which were shopping (only for clothes and shoes) in Macau and in Zhuhai, restaurants in Macau and in Zhuhai, as well as Macau's fast food shops and Macau's banks. Each of the indices was constituted by three factors: product/food quality, service quality and worthiness. According to the results, among the six consumption items, the respondents were most satisfied with shopping in Macau, which scored 71.3 out of 100, mainly thanks to the product and service quality. In contrast, the respondents rated shopping in Zhuhai as the worst consumption experience (64.5) because of the inferior service and clothes and shoes' quality there. However, in regards to dining in restaurants, Macau and Zhuhai scored the same satisfaction level of 67.9 for the first time.

The result was mainly attributable to the "worthiness" factor, in which the respondents gave the highest rating to Zhuhai's restaurants as they deemed the food and services there had been greatly upgraded but the prices remained cheaper when comparing with Macau. In addition, the satisfaction level of Macau's fast food shops (68.4) was above that of Macau's restaurants. The difference was mainly caused by service quality, the survey indicated. As for Macau's banks, the rating (71.0) just followed that of the shopping experience in Macau, representing the second best consumption experience among the six areas. The respondents were most satisfied with local banks' service quality, but they hoped that waiting time could be reduced. Meanwhile, the survey highlighted the phenomenon that over the past three years, the gap of the consumer satisfaction levels between shopping in Macau and in Zhuhai was getting wider. While residents were getting happier and happier with local salespeople's services and the quality of the clothes and shoes that were sold in Macau, they found that Zhuhai could not offer the same service and product quality or even getting worse. Yet, restaurants in the neighbouring Chinese city had shown improvement in recent years particularly in terms of food and service quality. The satisfaction index had been on a rise from 65.3 in 2007, to 65.4 in 2008 and 67.9 this year. In contrast, the satisfaction index of Macau's restaurants dropped by 2.9

percent to 66.6 in 2008, and then rose two percent to 67.9 this year. According to project co-ordinator Ieong Iat Fo, in order to maintain its competitiveness, Macau's food and beverage industry has to keep improving dishes' appearance and tastes, as well as creating new menus by using different combinations of ingredients. Mr Ieong also stressed the importance of preserving and promoting Macau's own dishes influenced by both China and Portugal, so that it will fit the taste and cooking style of Macau people better and also attract tourists to come savour this unique cuisine. Moreover, Mr Ieong said that local restaurants should retain "friendliness" or "a human touch" in their services especially in a small city like Macau in a bid to increase customers' loyalty. Hence, he said that having some long-serving staff could build up a restaurant's competitiveness and an operator should be cautious when laying off employees. Due to the H1N1 influenza and the impact of the global financial crisis, Mr Ieong said local industries should take advantage of the opportunity as more residents are expected to stay in Macau during the summer vacation. Greens Want Bridge to Somewhere Else Green groups are petitioning for the Hong Kong landing point of Hong Kong-Zhuhai-Macau bridge to be moved to north of its current proposed location, citing that the proposed site is one of the area's only two 'red coast' shorelines, a relatively unique formation of sedimentary rock. Current construction plans would bring traffic very close to outlying neighbourhoods, and would also obscure the natural beauty of this area, currently frequented by hikers and mountain bikers. Aside from moving the road to lesspicturesque terrain, the proposal would relocate the border crossing facility for that terminus in such a way as to make

installation of high-security measures more efficient, while also minimizing light and noise pollution from vehicles. The move is being backed by residential and environmental groups in the Tung Chung district, including Designing Hong Kong, Clear the Air, Association for Geoconservation Hong Kong, WWF and Hong Kong Mountain Bike Association. Cost estimates for adapting the blueprints to fit the current proposal range from HK$2 bn, according to the advocates, to the government's estimate of HK$13 bn.

A major driving force in the Middle Kingdom's push to diversify industry and speed up technical and scientific development has been the establishment of massive, purposedriven industrial parks, such as the Hi-Tech Development and Economic Development Zones in Huangdao and Jiaozhou. These areas, and similar ones nationwide, are used to attract major international companies that bring a wealth of technical knowledge to China in exchange for relatively cheap manufacturing and labour costs. Now however it seems that China has taken these principles a step further, as it plans to create a manufacturing centre for Chinese companies,

Two to Mango Awesome taste treats

Jacqueline Yea

Ah these hot, sticky summer days! Sometimes we have to venture outside of A/C havens and onto the sizzling streets. But fear not, dear reader, for we have discovered two amazing mango concoctions that will knock your socks off and cool your feet down!

Mango Ice Mountain We've found a monster of a mango dessert or snack or meal. It's a giant mound of shaved ice covered with a sweet syrup and topped with chunks of freshly cut mango. You can crunch away on the ice while the smooth mango offers a different texture. Available in three sizes, the medium (pictured) easily serves three, so prepare for a brain freeze if you're on your own! A medium Mango Ice Mountain costs 48元. We were too scared to order the large! Best Mango Shake It's more of a shake than anything else, but the menu has it listed as a "Mango Sorbet." We officially vote for it as The Best Mango Shake in Zhuhai. Fresh mango, ice, and some other sweet substances are blended together in perfect harmony. It's icy, frozen, fresh, sweet, and overwhelmingly mango - something all of the the other shakes we've tried have been missing. This delight in a cup will set you back 8元. The Ice Bar is located on the small row behind the bus stop Zĭ Jīng Yuán . This is just down the street from Jusco, on the same side of the street as Jusco. Know Wining Guide to the city's best buys

Jacqueline Yea

a new wine culture is being nurtured by tasting rooms and passionate patrons

My early experiences with wine in Zhuhai came in the form of a clear liquid known as bai jiu, or Chinese white wine, which is ganbei’d in one go. These tiny cups are (mostly) fun, but for those who like to sip slowly on something a bit milder, there are an ever growing number of foreign wines washing up on the shores of Zhuhai. Case in point, June 6 at the Grand Ballroom of the brand new Charming Holiday Hotel there was a wine convention taking place. The Jiu Ding Wine Grand Opening and Trendy Charming Night brought together wine vendors from all over to sample out some of their best. The event was packed. Waiters manoeuvered the crowded room delivering tastings to the crowd. Stunningly beautiful and elegant models

floated across the floor in evening gowns, each one holding a bottle of wine. Suddenly, dramatic music began and the models took to the stage. Through it all the wine remained the centre of attention as the models moved through a perfectly synchronized routine. All this in celebration of a drink that has been around for millenia! Someone handed me a smooth glass of Red and began explaining its aging process in an oak barrel. The grandness of the event surprised me and I was taken aback by the knowledge and enthusiasm of this wine crowd. In Zhuhai, a new wine culture is growing. It's being nurtured by tasting rooms and passionate patrons that can't get enough of the red, white, and bubbly. Over the years, wine has become a

world-wide phenomena. Growing regions can be found globally, as well as markets for its products. It’s no surprise that wine culture in Zhuhai is growing. Numerous specialty wine shops and dining destinations are bringing bottles from every corner of the globe to local spirit-lovers. Whether you like to sip chilled White in the hot Zhuhai summer, bring a bottle of Red to a dinner party, or spray Champagne on everyone during New Year’s, this guide can tell you where to find the perfect bottle. And you don't even need to know what a Zweigelt is.

culture 15 Wine Words So you've mastered the rundown of Red v. White and you even know what a Rose is, but what about tannins? Wine has its own lingo and way of distinguishing between differences. Here's a short list of some common wine vocabulary so that nothing gets lost in the grapevine. Acidity It means the tartness of the wine. If it's used well, the wine will taste fresh and crisp. If there is too much acidity then the wine will taste bitter and unpleasant. Appellation This indicates a growing region that certain grapes come from. It tells what grapes are in the wine. Balance Refers to sugar, acids, tannins, alcohols, that are evident but do not mask one another. A young red wine--tannic and acidic-- is not considered balanced because these two characteristics mask the other flavor elements of the wine. Cork-tease Someone who always talks about the wine he or she will open but never does. Decanter Used to hold wine, especially as it aerates (breathes). Decanting used to be more common to remove sediment from wine, but these days it's more an ornamental holder for it. Nose What you smell before tasting the wine. Palate The flavours tasted in the wine. Vintage The year the wine was bottled. Tannin Found in grape skins it can affect the taste and mouth feel of wine, especially red wine.

Four words

Zŏu mā guān huā 走马观花 走马 zŏu mă - gallop or trot along on horseback 观 guān - see, look at 花 huā - flower

"Looking at flowers while riding a horse." There was once a handsome young scholar who would have been a fine catch if not for his lame legs. Though already in his twenties, he could not find a bride, for no one wanted to marry a cripple. In a nearby village lived a beautiful young woman with silky black hair and porcelain skin. Because of her one physical flaw—an unfortunate harelip—she too had not been approached by any suitors.

Feeling the two were a perfect match, a resourceful matchmaker cleverly arranged a meeting for the young hopefuls. She told the man to dress in his finest clothes and ride on horseback past the girl. Separately, she instructed the girl to stand in the garden and hold a pomegranate blossom, strategically poised in front of her lips. As the man rode past the fair maiden, he was beguiled by her beauty and demure gesture. The girl, meanwhile, was taken with the young man as he galloped by on horseback, sitting tall and proud in the saddle like a distinguished official. When the matchmaker informed her of the young man's proposal, the girl was elated.

The wedding ceremony went on without a hitch, as the groom was carried on a decorated sedan and the bride's face was cloaked in a red veil. It wasn't until later that night in the bedchamber when he finally lifted her veil to reveal her cleft lip, and she discovered the way he hobbled on his legs. "You deceived me!" The bride exclaimed. "It seems the matchmaker deceived both of us to bring us together," the groom replied grimly. "Telling me to look at flowers while riding a horse." In the end, though, they accepted one another's imperfections. The origin of this four-word idiom, or chéngyŭ (成语), dates back to the Tang dynasty poet Meng Jiao (孟郊).

Although very poor and lacking in social connections, Meng Jiao was talented and determined to pass the national examination on his own merits. Though he failed several times, he refused to give up. At nearly 50 years old, he finally passed the exam. Exhilarated, he took off on horseback, charging through the city and taking in the beautiful spring view. He wrote a poem to depict the happy occasion, the last two lines of which read: "春风得意马蹄疾,一日看尽长安花" "Galloping on horseback in the spring breeze, I have seen in one day, all the flowers in Chang'an." The phrase, 'zou ma guan hua' was later extracted from the couplet. Paired with versions of the more colourful story above, the phrase gradually came to refer to gaining a superficial understanding from a fleeting glance or limited observation. In other words: skimming the surface.

Example: 跟团旅游就是走马观花地看。 Gēn tuán lŭ yóu jìu shì zŏu mă guān huā dė kàn. Vacationing with a tour group is just like 'looking at flowers while riding a horse'.

Down to Business

U.S. Taxpayers' Foreign Accounts U.S. taxpayers holding financial interest or other authority over a financial account in a foreign country amounting to more than US$10,000 are required to file the annual Foreign Bank Account Report (FBAR) by 30 June of the following year. The FBAR is not a tax return, but a report filed with the Treasury Secretary indicating the taxpayer’s interest in a foreign account. In 2008, FBAR rules were expanded to apply the filing requirements to persons in and doing business in the United States. This potentially includes non-resident foreigners working in the United States and has signing or other authority over foreign financial accounts. A financial interest is described as the following: • An account when the person is the owner of record or has legal title • An account when the owner of record or holder of legal title is a person acting as an agent, nominee, attorney or in some other capacity on behalf of a U.S. person • A corporation in which the U.S. person owns directly or indirectly more than 50 percent of the vote or value of all shares of stock • A partnership in which the U.S. person owns an interest in more than 50 percent of the profits or capital of the partnership • A trust in which the U.S. person either has a beneficial interest (directly or indirectly) in more than 50 percent of assets or receives more than 50 percent of current income • An account when the owner of record or holder is a trust for which a trust protector has been appointed

Hank Bourg

the FBAR is a report indicating the taxpayer's interest in a foreign account However, due to concerns and questions raised about the expanded definition, for this year only the IRS allowed taxpayers and others to rely on the definition of a United States person included in the prior instruction: “The term 'United States person' means (1) a citizen or resident of the United States, (2) a domestic partnership, (3) a domestic corporation, or (4) a domestic estate or trust.” This only applies to definition of who must file; all other requirements of the current version of the FBAR form and instructions remain in effect. Any of the following types of account are covered by the filing requirements: bank accounts, security accounts (brokerage) including derivatives, mutual funds, and certain types of annuities or pension accounts. Recently, the IRS announced that it would enforce penalties for noncompliance of the FBAR going back as far as six years which is the statute of limitations under the Bank Secrecy Act. The penalties can be quite severe. The maximum annual penalties for failure to file will be US$10,000 for non-willful noncompliance, US$100,000 or 50 percent of the amount of the underlying accounts balance at the time of the violation if determined to be willful.

For criminal penalties it is a US$250,000 fine and 5 years imprisonment, and a US$500,000 fine and 10 years imprisonment if done in tandem with another violation of U.S. law. U.S. taxpayers may also have filing requirements on IRS form 5471 'Information Return with Respect to Certain Foreign Corporations' if they have an investment in a foreign corporation, in most instances ownership of 10 percent or more. Conversely, U.S. taxpayers that have one or more foreign shareholders that own 25 percent or more of their outstanding stock may have reportable transactions requiring filing on Form 5472 “Information Return of a 25 percent ForeignOwned U.S. Corporation or a Foreign

Zobon Art Hotel

Exhibitionism

Leanne Sanchez

The Zobon Art Hotel is situated on Lover's Road in Jida, near the beach. It's landmark huge silver and red angel rising from the corner of the pavement ensures that in cannot be missed. Under new management, the lobby has been doubling as a free art gallery for the past two months.

THE TRIO OF GIRLS

MOTHER AND DAUGHTER

I entered through the side and having coming in from the sun I was slightly blinded. As I was naturally adjusting my vision I saw an eerie triptych painting framed by a white wall. The ladies within them appearing to fade back into the canvas in an almost grey ghost-like fashion. The artist of this trio of paintings is Wang Jing. The first woman is bare-backed with a shawl wrapped around her waist, which is similar to Gaugin's Tahitian period. The other two flanking the centre painting are just as evocative and ethereal, but with a more modern feel (both in white hoodies) All three are shades of black, grey, and spooky white while one has a hint of warm, human pink. I fell in love with these paintings instantly, and not because I love Gaugin, but because they're a contradiction. They have strong, sensual Japanese style blocks of colour but the colours are muted and soft.

'Going home' or 'Hui Jia' was painted by the now deceased and famous artist Chen Yi Fei. From a distance it looks almost like a sunny day at the beach. It wasn't until I got closer that I saw that it's characters were a woman and a small girl that appear to be from a Chinese minority. The title itself makes you wonder what they had encountered, whether going home was a good or bad thing, and what had they experienced on their travels together. The hard life the older lady has endured is slicked onto the canvas while the little girl looks lost and onwards with thoughts to come.

PURPLE ABSTRACT Around the corner I saw a bold, purple and black painting erected on an easel, standing proudly with it's bold shapes and strong, striking lines. The subject matter was of a fragile kind; a blossom tree and it's flowers created a mass purple and were accentuated by the strong lines of the tree itself. This artist, Gu Yuan, has used a traditional subject matter but painted with bold, passionate brush strokes and a flat purple background.

All the paintings I review were done by Chinese artists and all

MURAL SHOTS OF THE CEILING I noticed the next painting as it caught my peripheral vision. I looked up and saw a sculptural slab of canvas rounded and heading downwards as if it were going to touch the floor. Above me, I saw it connecting into the mirrored columns of the room and it looked watery, blue and dream-like. I could have laid down on the floor for hours staring up, daydreaming, disappearing into the world painted on the ceiling. Â This unique and huge mural took 3 months to complete. Li Zhong Lian, stood upon a scaffolding construction to achieve his goals in a Michelangelo way. The actual style of the painting reminds me of the famous French painter, Marc Chagall. It is two worlds fused together in a blue, white and red swirling mass. Birds, fish, boats, sea life of all kinds and people float through a strange new and wonderfully colourful, vibrant world.

suggest or show a fusion of western styles and sometimes they achieve this through the actual brush strokes or the subject matter or both. But go and see for yourselves and remember these were just four pieces featured and there are many more to see and appreciate in an setting just as stunning as the paintings themselves. One last thing, see if you can find the angel from outside the hotel in one of the paintings. Happy hunting.

Totally Epic Surfing PRD

Daniel Fontius

“Is that a boat? You carry your boat to Zhuhai?” These were the first words spoken to me by my colleague sent to pick us up from the ferry terminal upon our arrival in Zhuhai. “No, it’s a surfboard,” I replied. “A what?” She responded, clueless. “Oh great.” I think to myself, I have just spent the last two days hauling my board bag halfway across the world and from the tone of my colleague’s voice the possibility of finding any waves around my new city of residence is sounding dismal. But what the heck - if I had come without a board and actually found waves, I would never forgive myself! It was supposed to be my first day of work at United International College (UIC), however, upon arriving at my new office I was handed a phone and on the other end was the voice of Gary, a fellow teacher and probably Zhuhai’s most active surfer. After a one and a half minute conversation about the wind and swell conditions, I found

myself running down the path away from the college back to my room to pick up my surfboard so that I could play hooky and catch some surf. “Zhuhai is going to be okay. I think I am going to like it here,” I said to myself, jumping into the bread van.

While Zhuhai will never be known as the next big surf destination, there are some good times to be had on its nearby beaches and surf. During the winter months, when the winds blow south through the Taiwan Strait a good place to find some very rideable waves is Gold Sand Beach, located just minutes from the Zhuhai airport. At Gold Sand, as is the case with almost all of the surfable beaches in and around Zhuhai, you need to bring your own equipment. Long boards or fun boards are the most applicable because of the gentleness of the waves. Also it helps to make friends with the security guards. Surfing has yet to catch on here and there are some people who think it is too dangerous. On occasion, the lifeguards feel obligated to inform us that surfing can be life threatening. While one should always pay attention to safety conditions, the local beaches are in fact perfectly suited to beginners. The only real hazard comes after a heavy rain when

large quantities of pollution are washed in to the Pearl River Delta. Summer really is the best season for good waves in southern China. The first typhoon of the season rumbled by in mid June and sent some beautiful ocean ripples to the jagged coastline of Guangdong. Because the swell angle (wave direction) was not directed towards Zhuhai’s beaches we decided to make the hop skip and a jump over to Nan Ao, the peninsula just on the other side of Hong Kong. Surf boards can be rented at these beaches, but make sure to bargain. The

beaches there are attractive and the water is blue and the waves were, to use proper surf lingo, epic, at least according to local standards. Surfing in and around Zhuhai takes dedication, knowledge of local conditions, and of course luck, but once you catch a wave the reward is exhilarating. Even if you’re not interested in catching waves, the beaches around Zhuhai are a great place to spend a day or weekend. Many of them are full service; providing tents for camping, BBQ, restaurants, and for those who are a little wary of the ocean, lifeguard services.

This summer be sure to enjoy the natural beauty of the beach and ocean, which can even include the occasional pink dolphin fishing for its lunch just beyond the break water. Just make sure to bring a board if you want to surf and pick up any trash you come across - nobody likes a dirty beach. For surf conditions The Hong Kong Observatory and Magicseaweed.com provide the most accurate tide, swell and wind charts for checking conditions.

Life is Great On route #68 IN Zhuhai reporter, Kate Yu, explores the #68 Bus and finds some gems along the way. Do you know a good bus route? Email us at: editor@myredstar.com Bus number 68 is not just about Tangjia and Carrefour. I was about to discover that as I hopped onto this coach and found myself on the newly constructed Ren Men Road in the middle of its route. It's a new part of Zhuhai with smooth paved roads, apartment compounds and fresh businesses lining the streets. One of them is the CITE Spa. Located in #24 Ren Men West Road, it offers beauty treatments to women for an affordable fee. Stopping off there, I decided to get a soothing aromatherapy massage and facial for the good package price of 300元. After that relaxing experience, I was ready to chow.

Restaurants

Kate Yu

A couple of minutes later, I was in the An Ju Yuan bus stop where there is a less chaotic and congested part of Zhuhai, which is a welcome relief from the craziness of Gongbei. A series of restaurant food chains, markets and apartment buildings could be found by the corner against the backdrop of the dusky sunset sky. On the ground floor you can find popular fast food chains such as Pizza Hut, KFC and Dwsushi. Upstairs, I found a real treat in the form of the fancy restaurant Hugh Café. You can whet your appetite here with their prime steaks and myriad Asian dishes. While waiting for my meal, I relaxed with a cup of Brazilian iced coffee while listening to the live acoustic music in the café. For those looking for extra excitement, Sugar Bar on the ground floor will provide you with some entertainment. Entering the place, I felt I was in the

interior of a ship with a steampunk motif. Pictures of pop icons ranging from Marilyn Monroe to Marilyn Manson graced the wooden walls. The place comes alive closer to midnight when dancers throng to the center -- their bodies grinding to the pulses of heavy hip-hop beats and electronic music. CITE Spa, Hugh Café and Sugar Bar are but a few of the great places you would discover on the 68 route. You could find other gem spots by boarding the bus number 68 and seeing where the call of adventure takes you.

Pao Ta'i Shan Gong Yuan Roller Skating Rink David Seglem

I was sweating excessively but that did not hinder my enthusiasm for an afternoon of skating. Lights were strung above the rink, and in the centre, there hung a disco ball to liven up any night on wheels. The peppy techno music kept the skaters rolling and some were incorporating freestlye dance moves into their session. There were many people smiling and skating around the eccentrically designed rink, with a pear shape and concrete waves that break up the monotony of level-ground skating. In the corner, an older gentleman skated away on his own rollerblades in a manner befitting an ice dancer. Chains of graceful skaters maneuvered around a few people taking it easy in the impressive afternoon heat. Tentative kids took their first turns around the rink while enduring a spill or two. Catching the air were the high-flying stunts of the regular skater who frequent the park.

For just 5ĺ…ƒ, anyone can join in on the fun. If necessary, you can bring your own roller-skates/ blades, otherwise you may rent from the rink in sizes 35 to 45. For those not interested in getting in the rink, there are pool tables just nearby. If you work up an appetite rolling around, there's also a large night market just up the street from the park. Getting to the rink is fairly simple. The Pao Ta'i Shan Gong Yuan (park) is off the 36 bus route in Gongbei. The roller-skating rink is open from 3:00-12:30pm daily, but the park is open all day. When searching for fellow skaters, just look for the hanging lights and listen for the pumping music. That’s where you’ll find a little nostalgia and not-so-typical Zhuhai fun just off the beaten track.

Italian Made Easy Pecatti di Gola's chef, Stefano Voltolin, shares a typical family-style Italian recipe that's perfect for summer. Insalata di Pasta is a cold pasta salad that can keep in the fridge for 2-3 days, so it can be made in bulk and saved. It's practically cooking free, which means there's no slaving away in a hot kitchen to complete this low-calorie meal. Stefano also suggests adding your own ingredients to suit your liking, such as tuna, sausage, carrots, and corn. This versatile recipe is ideal for the summertime heat of Zhuhai.

Chef Stefano Voltolin

Ingredients • 200 g penne pasta • 50 g mozzarella cheese, cubed • 50 g of cherry tomatoes, halved • 20 g of black olives, sliced • 1 1/2 T of capers, mashed • 1 T of dry oregano • 2 T of fresh parsley, minced • salt and black pepper, to taste • extra virgin olive oil, to taste Boil the pasta for one minute less than the instructions on the back of the package. After cooking, immediately rinse pasta with cold water. Then, add a small amount of extra virgin olive oil so that the pasta doesn't stick. When the pasta has cooled, place it in large mixing bowl. Add the mozzarella cheese, followed by some of the extra virgin olive oil. Then, add the salt and pepper to taste. Stir the ingredients. Continue stirring while adding the capers, tomatoes, oregano, and olives. Add the fresh parsley last and top it off with some more extra virgin olive oil. Keep stirring until all the pasta is well coated. Chill the salad in the refrigerator for 1-2 hours before eating. Serves 4 people.

Stefano's Tips Other fresh herbs, such as basil, are excellent in this dish. However, they don't hold up well after being cut and then stored. Just chop and add the fresh herbs (like the parsley) right before serving in order to ensure the best taste. This recipe can also be made using Arborio Risotto, a rice typical of Italy. Like the pasta, this rice can be found at the places such as the Zhuhai Deli (check the directory for listings). The Insalata di Risotto follows the same instructions, just substitute rice for pasta. Stefano Voltolin comes from Padova, Italy. He has more than 20 years of chef experience. He can be found pleasing palettes with his authentic Italian cuisine at his restaurant, Pecatti di Gola, located on Lover's Lane. (Check the listings section for the complete address).

Photographers in Zhuhai After the Shoot Zhuhai photography veteran Douglas Gillespie (creative88photo.com) and relative new-comer Markus Drecher (AKA 'MAD') led a different kind of photo event for 'Photographers in Zhuhai' on July 12th 2009. Before snapping in and around the picturesque Zubon Art Hotel, they delivered an informative seminar on tips, tricks, and techniques, 'After the Shoot', as just short of 20 in attendance, from beginners to seasoned Pros, listened on. As a bonus, Gillespie offered some basics on composition and light which the group would put into practice afterwards. For information about upcoming events, or to see photos from previous outings, visit http://www.ZhuhaiNights. com/groups/flash ► Joew snaps another winner

► Photographers in Zhuhai group 'Flash' assemble for 'After The Shoot Seminar 1 - The Basics' at the Zubon Art Hotel on Middle Lover's Road, Jida.

► Carol's framing style makes this photo of organiser Doug even more polished.

► Carol's take on the Angel of the Hotel ► Marian was delighted to learn some top tricks from local pros,

► The result - another one of Joew Huang's excellent compositions.

▲Jackie poses for Joew in front of some of the art at the hotel. A slight tweak of colour in Photogshop in post-editing results in this vibrant photo.

► Models AND photographers - being amongst friends in a comfortable setting allows everyone to truly enjoy the day

as well as get free applications that will improve speed and ease of maintaining large amounts of digital photos.
