A
t just 22 years of age and only three years into a career which fairly deserves the description ‘meteoric’, silken voiced London lad Sam Smith has quietly shifted himself into position as one of the world’s most in demand young stars. At the end of 2013 his modest achievements stretched to a BRITs Critics’ Choice Award and first place in the BBC Sound of 2014 poll, clear signs that we might be hearing more of him over the following twelve months; by February 2015 he was rejoicing in being a four times Grammy winning artist, which tells us things went better than anyone had hoped for.
Regardless of the quality of his music, a series of post dance ballads with a moody electronic backing and some upbeat pop anthems, it’s Smith’s crystalline falsetto vocal which sets him apart – in which case, you might want to take this chance to be as close to it as possible. Born in London and raised in suburban Bishop’s Stortford, Smith moved back to the capital in his late teens, a period he recently admitted in a Rolling Stone cover feature was characterised by “one night stands” and “dodgy friends”, and also a loneliness which translated itself into his yearning single and biggest hit so far Stay With Me. One of a generation
MUSIC | 13 of singers who first make their mark on others’ songs, Smith emerged in 2012 with a guest spot on dance duo Disclosure’s single Latch (a bigger hit in the States than it was in the UK) and followed it up the year by guesting on Naughty Boy’s La La La, his first number one hit in the UK. Suitably introduced to the world, he owned 2014. His second and third singles Money On My Mind and Stay With Me had hit number one in the UK before spring was out, as had the debut album In the Lonely Hour, while the follow-ups I’m Not the Only One and Like I Can were substantial hits in their own right. It was Stay With Me, a love song with a hint of despair which begs a one night stand not to go, which comprehensively broke him in the States, and the album followed suit, both reaching number two. The third cousin of singer Lily Allen, a big admirer of fellow divas Whitney Houston, Adele and Amy Winehouse, and a newfound friend of Taylor Swift, it’s to these pop inflected torch singers that he owes the greatest debt. While fame has had its downsides (he’s been parodied on Saturday Night Live and had to give co-writing credit of Stay With Me to Tom Petty and Jeff Lynne for its similarity to their 1989 hit I Won’t Back Down), his old-fashioned reliance on the Voice overall is what will surely keep his career burning. His latest single Lay Me Down is released on 15 March.

If there’s one thing you could change about the city, what would it be? I would speed up the development of the western peripheral route – traffic in Aberdeen can be horrendous.

Donald Law is owner and manager of 200-year-old coaching inn Lairhillock Inn in Netherley. It has regularly featured on culinary awards shortlists and was the only establishment in Aberdeenshire to feature on the latest ‘25 best country pubs for food’ list by leading food guide, Harden’s. What’s the signature dish at the restaurant? Our lasagne, gambas pil pil and the cullen skink soup. They’ve been on the menu for years but they are our most popular dishes. Off duty, which restaurant would you choose to go to for dinner? Café 52 and also The Creel Inn, a little gem of a restaurant. What’s your ultimate comfort food? Fish and chips; you can’t beat it. What’s the most stressful dinner you’ve ever served? Mother’s Day is our busiest day of the year. We serve around 400 meals that day so it takes a lot of organisation to ensure that everything runs smoothly. If you could cook for one ‘famous’ person, who would it be? Billy Connolly. He’s extremely funny and seems like a down to earth character. I don’t think he’d be a demanding customer.

Here the talented 21-year-old gives i-on an insight into her look. The person whose style I most admire is… Nanna Bryndís Hilmarsdóttir – the lead singer in the Icelandic band Of Monsters and Men. I admire her laidback, colourful style. My favourite place to shop in Aberdeen is… Union Square. Designer and high street brands all under one large roof. My favourite designer is… Elie Saab. It would be a dream come true to wear one of his gowns. I’ve got a thing about… oversized knitted jumpers. I wear them over dresses, pencil skirts or faux leather leggings. My best fashion bargain ever was… a gorgeous brown leather biker jacket from Muubaa, reduced from over £200 to £90. My favourite recent find was… a beautiful black and gold embellished playsuit from Miss Selfridge. My big fashion no-no is… anything with a peplum frill. My fashion tip for 2015 is… don’t be afraid to embrace the Nike trainer. Comfy sportswear is on the rise.

The living room, it’s the social hub. Any work brought home by me or my teacher girlfriend gets done here and our 11-yearold does his homework here too. What has been the most worthwhile interiors investment you’ve made? I bought a large water colour in Cuba seven years ago, a street scene showing off the beautiful architecture of Havana. Great for helping a bare wall burst into life. Whose style do you admire? Wren has being working with Linda Barker; the versatility and colours in her range has been a game changer in the kitchen retail market. I’m also a big fan of John Saladino. I love his boldness. If money was no object, how would you furnish a home? Slowly, one room at a time. What makes a house a home? Memories and music. Biggest design faux pas people make? Introducing an island into a kitchen without considering foot flow.

Water Zorbing If you’ve ever fancied walking on water, you have to try zorbing. Also known as sphereing, it’s a high adrenaline, fast action activity that it involves climbing inside the huge clear inflated zorb – a bit like a giant hamster ball - and setting off on water, all the while trying to stay on your feet. Balance is obviously key here and it’s harder than it looks but brilliant fun. All in all it’s a great activity choice to do with a group of adventure hungry friends. One word of warning though, it does get very competitive not to mention addictive. Dare factor: 2/5. Although maybe avoid if you’re in any way claustrophobic. Where to do it: Along with a number of other outdoor pursuits Lochter Activity Centre in Old Meldrum offers water zorbing body zorbing for those who prefer to roll on dry land. Viking walking Viking or Nordic walking as it’s also known, was originally used as a summer training regime for cross-country skiers, but has since developed into a sport of its own. Using specially designed walking poles (around £30 to buy), Viking walking is a full-body workout, based on the premise of working and strengthening the upper body, along with your mid-section and legs. There’s no exaggerated arm pumping like power walking or race walk waddling, it’s more of a march, with elbows straight and arms swinging. The poles are there to alleviate the weight placed on knees and leg joints, making it ideal for those who struggle with running for this very reason. Dare factor: 1/5. A great form of exercise for all ages, which can be gentler where required. Where to do it: Swedish company Friskis & Svettis Aberdeen runs regular classes and boasts over 750 members. The city’s Hazelhead Park is a common meeting place, but longer walks are also organised across Aberdeenshire. www.fsaberdeen.co.uk.

Falconry
Surfing
There’s a small fear factor involved in falconry. From past experience, this occurs when the bird, uninvited, attempts to take flight from your gloved hand. Cue beating wings (his), closed eyes (us) and a knee jerk-reaction to hold the bird at arms-length, when any falconer knows you should be doing the exact opposite (drawing the bird closer, elbow tucked in) to regain control. Post-flapping, the falcons fly from post to person in a matter of seconds, their gracefulness as remarkable as their strength – all but a faint breeze announcing their arrival. Dare factor: 2/5. Unless you have a Hitchcock fear of birds. Where to do it: Huntly Falconry Centre. Reopening in April, this is as good as any place to start. Falconry tuition is available and if you like to keep a little more distance, there’s plenty of live and informative demonstrations with owls, hawks, falcons and eagles throughout the season. The rip, the curl, the sub-degree temperatures… okay so it’s not quite Bondi, but Aberdeen Beach does offer the opportunity to ride some pretty respectable waves, particularly during the more tempestuous winter and spring months. But if you don’t know your A-frame from your carve, we suggest enlisting the help of Granite Reef surf school, whose beginner lessons get underway in March or April, dependant on weather. Relaxed and informal, a two-hour group lesson is £35 and all the required gear is included, allowing you to ‘test the waters’. Dare factor: 4/5. On account of that brisk North Sea. Where to do it: A beginner’s first port of call is Granite Reef surf school. Beyond Aberdeen, Cruden Bay, Fraserburgh, Banff and Stonehaven are popular spots for experienced surfers, once you’ve got some lessons under your belt and a surfboard and wetsuit to your name. Coasteering
DIGGER DRIVING
Negotiating the coastline by foot or sea, coasteering is not for the fainthearted. There’s a bit of swimming, climbing, scrambling, and where safe, plunging into the sea from great heights. Adrenalin junkies need only apply. Those who do it (and love it) compare it to gorge walking, with tricky, rocky terrain and deep pools of water to traverse. It’s a great way to explore rocks, shoreline, caves and gullies which would never ordinarily be accessed. Dare factor: 5/5. Pretty audacious, people. Where to do it: Cove and Portlethen are the key sights and obviously should only be undertaken with the required safety equipment (wetsuit, helmet etc.) and qualified guides. rizzy hair has been the bane of my life for as long as I remember. On a good day with the help of straighteners I can get my hair looking pretty good but I was noticing damage from many years of ironing. Then I tried the KeraSilk customised hair smoothing treatment, which cuts down styling time and tames the frizz, making it ideal for dealing with Aberdeen’s frizz inducing weather. My hair was washed and then the smoothing solution applied and left for about 20 minutes. Next my hair was blow dried, the cuticle ‘set’ with extra hot straighteners then washed and blow dried again. here are certain times in life when enough is enough. For me, I’d reached that point. Enough of feeling stressed and enough of talking about starting over with my wellbeing but never actually getting round to it. Probably because of feeling overwhelmed, lethargic and... you get the picture. The Spa at Gleneagles certainly does get the picture with its ESPA Life wellness programme, a new approach to health and wellbeing. Recruiting some of the best alternative health and fitness experts to offer a wide range of treatments and personal programmes, their aim is simple: to help us feel great, inside and out. The treatment programme is inspiring, including a range of ESPA Life Day packages addressing everything from detoxing and skin issues to fitness and relaxation. And so, in some severe need of some revitalising, I opted for the Relax ESPA Life Day Spa package, £145, inclusive of one treatment (advanced reflexology or craniosacral therapy), a two course lunch served in Deseo at The Spa and use of the awardwinning thermal suites and leisure club.
Indulging in a morning immersed in the seriously luxe thermal suites is restorative on its own. Enjoying a delicious and super nutritional two course lunch is equally uplifting. And then there’s the treatment (I opted for Advanced Reflexology). Having never experienced reflexology before, senior practitioner Louise, a qualified naturopath, instantly put me at ease and the treatment was seriously impressive. Don’t get reflexology confused with a fancy foot massage as this is a gentle therapeutic treatment that encourages the body to naturally restore and maintain a healthy balance. Louise expertly worked on my feet and lower leg, highlighting areas of ‘congestion’ in my body which, as she very gently focused on, felt hot and extremely tender. It was fascinating. She flagged up congestion in my digestive system, including my gallbladder and liver, and as I have a family history of related illnesses, this is something I am now addressing. The treatment was also wonderfully relaxing too and one hour 20 minutes flew by. Before I knew it, my day was over and I left the Spa at Gleneagles totally relaxed, refreshed and motivated. A
picture tells a thousand words - an adage epitomised by Norway, a country of natural beauty. This isn’t your average holiday destination, Scots tend to head south rather than north. After all, Scandinavia isn’t first choice for getting some colour on our pale complexions. Even so, thanks in part to an episode in the BBC’s popular Coast programme last year, there has been a renewed influx of UK visitors wishing to experience the dramatic scenery for themselves. In fact, in a recent survey by the country’s local airline, Wideroe and holiday company Sunvil, Brits consider Norway to be amongst the most desirable places on earth to visit. I agree. As you fly over the beautiful coastline into Bergen airport, you are instantly aware that you are about to land somewhere very special. Bergen is the gateway to the fjords of Norway making it the ideal starting point to explore this unique topography. It is the country’s second largest city with a population of approximately 270,000 people; steeped in history and tradition dating back 900 years, it has an old world charm and a vibrant atmosphere. With Bergen achieving World Heritage City status in 1979, there’s plenty to see but if you are only here for a day, make sure your first stop is Bryggen, where the city’s first buildings were built. It’s also where the Hansas (the German medieval guild of merchants) opened one of their European offices in the thirteenth century and continued to trade here for the next 400 years. These wooden dwellings and narrow passages have been ravaged by fires and explosions in the past but now restored to its former glory, Bryggen is the postcard image most commonly associated with Bergen. A stone’s throw away is the Fish Market selling fish, flowers, fruit and vegetables, handicrafts and souvenirs. Here you can try raw oysters or buy freshly boiled shrimps to eat by the waterfront. For spectacular views of the city, take the five minute journey on the Fløibanen funicular, to the top of Mount Fløyen. From here you can take part in guided walks through the forests, lakes and mountains whilst learning more about the local history and nature. We took a 30 minute flight from Bergen into the mountains of Sogndal. Norway measures 1,100 miles from the south
52 | TRAVEL coast to the Russian border so jumping on a flight to any of the 35 airports is the easiest way to travel. The good news is it’s not prohibitively expensive either. The Wideroe Explore Norway Ticket is valid for two weeks, between 18 June to 27 August 2015, and includes unlimited domestic flights in Norway across three zones and return flights from Aberdeen or Edinburgh. A one-zone ticket costs £270, a two-zone ticket £325 and a ticket to see the whole of Norway, £383. One-way fares to Bergen are from £85 including taxes. Sogndal (in the same zone as Bergen) is in the heart of Sognefjord area, the longest and deepest in Norway; it’s 204 kilometres long and over 1,300 metres deep and its magnificence is accentuated with the mountains rising from the fjord to heights of over 1,700 metres. Take a cruise along the Sognefjord and be blown away by the sheer natural beauty that surrounds you or take a bus trip to the Jostedal Glacier National Park and choose from a range of activities including kayaking on the glacier lake, white water rafting, canyoning and horse riding. I chose to grab an ice axe and crampons and take the guided walk on the Nigardsbreem Glacier, an arm of the Jostedalsbreen Glacier, the largest glacier in mainland Europe. For those of you interested in history or churches, five of Norway’s 28 stave churches (a medieval wooden

Urnes Stave Church, the oldest in the country dating back to around 1130, features carvings on the north portal estimated to be from between 1050-1100, indicating they were from an even earlier church. To help quantify my sentiments of this beautiful country, I’ll leave to the experts at National Geographic who rated Norway as the best travel destination in the world. Now there’s an endorsement. Where to stay: Across the fjord from Urnes Stave Church is the Walaker Hotell - the oldest hotel in Norway, offering hospitality unlike any other, great food, warm people and amazing views. Blue Blue is one of the most popular yet complex decorating colours. Choose very carefully if you plan on painting a bedroom in red as you might end up over stimulating your senses and not in the way you hoped. From the softest of shades – vanilla and buttercup – to zingy, eyeball hurting bright, people tend to either love or loathe yellow. The latter in the most part as while yellow is generally considered an optimistic colour, the opposite is often true; Studies find that people lose their tempers more often and babies cry more in yellow rooms. The reason could be because it’s the most difficult colour for the eye to take in so it’s easy to be overpowered by yellow if overused.
Brown Steady, solid and reliable, brown often gets a bad rep as being a bit boring. But how can lush shades of chocolate, tobacco, bark or treacle be boring? I’d argue it’s a lack of imagination that’s boring. Brown can add a real richness to a home and, just as in fashion, caramel coloured accessories can help turn an inexpensive item into a luxurious treat. Some browns can leave us feeling a little sad and wistful so they are best paired with fresher shades like duck egg blue, rose pink and vibrant orange to lift the colour and your mood.

y appetite had been roused long before arriving at the much-talked about Adelphi Kitchen. With numerous foodie postings on social media it’s been near impossible not to hanker after a great hunk of meat or elaborate dessert from the eatery. Happily, it was now my turn to be doing the Instagram honours #adelphikitchen. Located on 28 Adelphi, we made our way through, at what first glance seems, a dark, foreboding tunnel, but is actually the canvas for some modern maritime street art. Last year, OwlCat Artist Collective was commissioned to paint the tunnel leading to the Adelphi, I am guessing to add a little cheer to the otherwise gloomy passageway. However Adelphi Kitchen is a brilliant light at the end of this particular tunnel. Under the Beetroot umbrella, it is The Courtyard’s sister restaurant, which only says good things with the latter’s stellar reputation in the city. Last year Adelphi Kitchen replaced former fine dining outlet, La Stella, doing away with any pomp
or pageant. What you get today is a seriously cosy (distressed woods, tweed booths, soft lighting), intimate dining room with a relaxed atmosphere and service, accompanied by great food. With its in-house hot and cold smoker, Adelphi Kitchen is a big advocate of meat and the arrival of our neighbour’s hanger steak, cartoonish in its size, evidence of the generous meaty portions ahead. With belts loosened and a glass of Malbec in hand, we made light work of our starters. The special of Cajun dusted king scallops, £12, accompanied by carrot and coriander cake (a corn cake of sorts), a carrot and ginger puree and pickled carrots, was a delight. The colours and construction of the dish was a treat to the eye, with the puree and pickled carrots offsetting the sweetness of the scallops and cubes of cake. On the other side of the table was the ‘Dirty Red Mac’,£6.50, a Louisiana hot sausage nestled amidst a small skillet of macaroni coated in roast tomato cheese sauce and blanketed with crispy
DINNER | 67 shallots and pulled pork. Surprisingly, it’s far lighter than you would imagine, leaving ample room for mains. When it came to these, my dinner date went for the rib of the week (£18, pork on our visit); a dark, tender stack of meat sans bones, plated with potato and black pudding terrine, pickled apple puree and crispy pork skin quavers. A meat lover’s paradise. I wasn’t left wanting with the Deep South blackened fish of the day (£17, cod, which flaked beautifully) as it was also a substantial serving. Bathed in a creamy mussel broth with samphire, the fish shared the plate with a moreish chorizo mash and a crab hush puppy. Perhaps it was childhood musings but we decided on the banana upside down cake, £6.50, for its popping candy popcorn alone. It comes paired with banana caramel ice cream and a less child-friendly rum butter icing of which I would have liked a little more of. Again, as with our earlier dishes, the dessert’s presentation was beautifully executed but crucially at Adelphi Kitchen the food tastes as good as it looks, on and offline. #iwillbeback

Food Story Café No stranger to raw, vegan, dairy, gluten and wheat-free, deft kitchen wizardry means you aren’t denying yourself one iota when stepping into this organic eatery on Thistle Street. Superfood porridge, Thai green lentil soup and raw berry cheesecake are the sort of things you may well encounter on the specials board. Meanwhile, all the café’s packaging is Vegware (made from plants), upping the whole virtue factor. Good for? Many a yummy mummy will be familiar with those raw, vegan cacao truffles. Expect to pay… £5 for a sandwich, £3 for homemade muesli, £6-£10 a salad. Anything else? Cup This tea connoisseur on Belmont Street also does some lovely brekkie, brunch and lunch items, which range from gluten-free bakes and granola yoghurt pots swirled with honey and berries to more devilish pastries, waffles and hot chocolate. We particularly like their ‘Baby Cup’ breakfasts – a smaller portion of their ‘Big Cup’ veggie and non-veggie cooked breakfast, when we want to indulge but not throw all dietary caution to the wind. Good for? Pacifying a friend who’s in the market for a full-size, full English. Expect to pay? £6/£7.50 for a meat cooked breakfast, less for a veggie, £3 for a granola pot and £3/£4 for a soup. Anything else? UNLUCKY FOR SOME If you’re, as Stevie Wonder says, ‘very superstitious’, then be warned that another Friday 13th occurs in March. Here are some facts you may not know about the unluckiest date in the calendar. A fear of Friday the 13th is called paraskavedekatriaphobia. More than 60 million people worldwide claim to be affected by a fear of Friday 13th. Some of them won’t go to work, drive cars or get out of bed on this day. Every year has at least one, and at most three, Friday the 13ths. 2015 has the trio; February, March and November. According to the British Medical Journal there is a significant increase in traffic-related accidents on Friday the 13th.
