Hello lovely people of Ipswich. It’s June, which means it’s officially winter! . We have some winter fashion inspiration and a hearty winter recipe to keep you warm and healthy this month. As far as movie giveaways, I have to say there are some pretty exciting ones in there. George Clooney and Julia Roberts star together in a movie called ‘Money Monster’, for which we have 20 double passes to giveaway! ‘Now you see me 2’, the sequel to the riveting first movie where magicians robbed banks and fooled the world with their illusions, as well as ‘Hunt for the Wilderpeople’ a very unique movie. You can check those out, along with all the latest gossip from Hollywood, in the entertainment column on page 24. We managed to catch chef and judge on Masterchef Gary Mehigan for an interview on the behind the scenes gossip - andt he had to say about Nigella Lawson! I also interviewed a pair of British travel bloggers. They left England behind and are travelling the world. They living their dream, and turning it into a successful blog, with 45,000 followers in just a few months. Of course the Ipswich Cup is coming up on June 18 so we have lots of information and exciting history, as we celebrate 150 years of one of the most exciting events in Ipswich! FOOD FOR THOUGHT WITH GARY MEHIGAN Masterchef has returned to Channel Ten with its eighth season. It’s Australia’s favourite cooking show that brings ordinary people together to learn, excel and become world-class incredible chefs. together; we really do get on like a house on fire,” Gary said. “Matt’s the outrageous, noisy, flamboyant one who is always worried about what he’s wearing. I’m the opposite, I look like a bank manager. “George is always on his phone; he’s always doing business, buying and opening restaurants, and I’m usually in the background reading the paper.” Gary started his career at two-star Michelin restaurant at The Connaught in London, working under the legendary Michel Bourdin, whom he still looks up to. Gary is classically French trained but is more well known as ‘the comfort food guy’, creating simple dishes with lots of flavour. He also admits that he could eat curry every day and be happy, as he is obsessed with Indian, Vietnamese and all Asian food. The more complex and spicier the better. Be sure to tune in to the new season of Masterchef, screening Tuesday nights at 7.30pm on Channel Ten.
Viewers watch the contestants crack under pressure, enjoy their masterpieces and get some great cooking tips along the way. Lovable judge Gary Mehigan explains the format for the new season and his take on the secret behind its success. “I think Masterchef is the benchmark for other cooking shows; it works well, it’s real people pursuing their passion; and we teach them and hold their hand along the way,” Gary said. This year there’s an array of guest judges such as Heston Blumenthal, Marco Pierre White and of course the famous chef, Nigella Lawson. Gary speaks of Nigella fondly. “She’s an absolute superstar, she slotted in so well with our three musketeers group. “She’s warm and gentle and down to earth. We all worked together for a few days and in between filming we’d go out for lunches and coffees, and it was nice that we got to have that experience with her.” The three musketeers are of course Gary, Matt Preston and George Colombaris, who are great friends. “We went on our overseas trip, this year to California and we spent the whole time

QUITTING 9-TO-5 TO TRAVEL THE WORLD Quitting our jobs and setting off for exotic places is something most of us have dreamed about but haven’t had the money, mindset or courage to do it. British couple Tina and Lee did just that last year. Tired of the routine and working long hours Tina and Lee decided to sell all their possessions and go see the world - a scary concept but this couple are living their dream and have no regrets. “We just got sick of working all the time, we were both doing so many unpaid overtime hours and not living our life to the fullest or doing the things we wanted to be doing,” Lee said. “Society makes you think that you have to live a certain way. You’re told to go to school, go to university, get a good job, work hard, buy a house, get married and have children. Ultimately you’re paying off debt your whole life and it doesn’t have to be that way.” After making the decision to say goodbye to the UK for the next year they decided to set up
a travel blog - a place where they could keep a ‘diary’ and upload their destination pictures for their friends and family to stay up to date. A few months into their journey they realised that their little travel blog was turning into something much bigger. Now, they have 45,000 followers! The travel blog named ‘Look at Our World’ is all about the local places they visit, from restaurants to great attractions. They are all about promoting ‘local gems’ and sharing their great experiences with others. “I’d rather put my money into a family business, help support local people, instead of the fat cat companies,” says Lee. Lee has lots of experience with web design but neither are

They make a huge point of being honest and real when reviewing somewhere. Tina and Lee have visited Singapore, Thailand and are now currently couch surfing their way around Australia. Couch surfing is a website similar to Airbnb except that it’s completely free. You find a location, find a host and go and stay. It’s a hospitality exchange and networking website. Hosts are given ratings and when used properly it is a really great way of
meeting new people and staying in someone’s home for a local perspective and great tips on the area you are visiting. Originally set to return to the UK in September and end their travels, they are now reconsidering whether to return to England permanently. “We’ve learnt so much and had such an incredible time that we’ve thought, maybe we could take this blog further and visit even more countries” says Tina. IPSWICH TURF CLUB TOASTS 150 YEARS OF THE IPSWICH CUP This year, the Ipswich Turf Club marks the 150-year anniversary of the oldest known Ipswich Cup, which dates back to 1866. This original Cup was won by the galloper ‘Jibboom’.
Sydney mare Zoe won the 1861 Australian Champion Sweepstakes at the Grange Racetrack at Raceview in Ipswich in front of a reported crowd of 3,000 – more than the then population of the Ipswich township. Zoe earned a prize higher than that collected by the connections of Archer, the first Melbourne Cup winner of that same year.

The 1866 Cup produced in Sheffield, England was made of pure silver. This Cup was purchased by the City of Ipswich a decade ago, to remain the property of the City for evermore. Another famous piece of racing silverware, also dating back to 1866, is the oldest intact Melbourne Cup, purchased by the National Museum three years ago for $800,000. An important portrayal of thoroughbred racing history in the Ipswich Art Gallery is the original painting of Sydney mare, ‘Zoe’, a winner in Ipswich in 1861. Zoe won the 1861 Australian
Champion Sweepstakes at the Grange Racetrack at Raceview in Ipswich in front of a reported crowd of 3,000 – more than the then population of the Ipswich township. Zoe went on to be the Australian horse of the year that year as a nine year old mare. A painting of ‘Zoe’ is held in the Ipswich Art Gallery celebrating the rich history of Ipswich Racing as well as the City of Ipswich. Fast forward to 2016, and celebrations of the 150 year anniversary include several events in Ipswich in the lead up to the Ipswich Cup on 18 June. Firstly, a civic reception was held mid-May to open celebrations of the 150 year Anniversary. An Ipswich Chamber of Commerce and Industry evening on June 9 is the next event, to be held in the Jibboom Lounge at the Ipswich Turf Club, doubling as a small business expo. Then, there’s the 1866 Calcutta Dinner on June 16, with a Calcutta draw on the Ipswich Cup. Themed as 1866, the evening will take a journey back in time, starting with a QPSR steam train ride from Bundamba Racetrack to Box Flat Mine, departing at 5.15pm and returning 6pm. This ride recognises an important moment in Queensland history: the first railway station in Ipswich had its first year of operation in 1866. Upon return to the Bundamba Racetrack,
Bagpipers from the Ipswich Thistle Pipe Band will pipe patrons in to 1866 inspired cocktails prior to a three-course dinner from an 1866 menu whilst listening to the music of a string quartet. Ipswich Cup Day on June 18 is the headline event of the 150 year anniversary celebrations. This unique day on the Queensland Racing calendar features the regular fine racing, after races entertainment, great fashions, and plenty of fine food and beverages for the masses of marquee village patrons. Additions to the 2016 edition of Ipswich Cup Day are in keeping with the 1866 celebrations theme. The popular Fashions on the Field competition has an added section this year – for Victorian Era Dress. An additional area has been added as well, being the 1866 On-the-Green Marquee in which patrons are being encouraged to wear Victoria Era garb. The racing on the day will no doubt be as spectacular as it has been in recent years. Tegan Harrison became the first female to win the
Ipswich Cup throughout its long history in 2014 on Brave Ali. Our Lukas was the first dual winner of the Cup in 2009 and 2010 and last year the first imported Irish horse to win the race became reality as Chris Waller’s Danchai held on for a close win. Over the years there have been famous trainers to win the Cup including TJ Smith (Helmsman 1975 and In Luck 1982) and his daughter Gai Waterhouse (Beachside 1993 and Bianca 2008). Bart Cummings won the Ipswich Cup (Lloyd Boy 1978), and other dual cup winning trainers have included John Wallace whose Oompala went on to place in the Melbourne Cup in 1994, and Robert Heathcote whose Our Lukas became the first dual winner in 2009 and 2010. On a riding front there have been a number of jockeys to win the Ipswich Cup three times including Noel “Digger” NcGrowdie in the 1950s,
(Len) Mick Dittman in the 1970s, Graham Cook who won in each of the 60s, 70s, and 80s, and current top jockey Jim Byrne who won the first of his three 21 years ago aboard Ardeed. The Ipswich Cup has a magnificent history and this year will add to that book, as the Ipswich Community comes out again to do what they have been doing for 150 years – showing the Ipswich Cup Community Spirit of generations. The great temptation for young artists has always been to try and be something they are not. To put on a costume so to speak, and play make believe. It’s a pitfall that Sahara beck spotted years back, and she ain’t going there. Raised on the Sunshine Coast, Sahara has always had a decidedly single minded focus. At 14 she wrote and recorded her debut album before moving to Brisbane on her own to finish school and immerse herself in the city’s collaborative music community. New songs came in a rush, releasing 2013’s ‘You Could Be Happy’ EP, followed by last year’s ‘BLOOM’. Both releases captured her growing confidence and sense of self as an artist and a woman. The response to those releases made ears prick up in Australia and overseas. But while her songwriting has grown, it’s been on stage that Sahara has truly taken some gigantic leaps. The purpose of the upgrade is to improve road safety for motorists and residents and also to alleviate downstream drainage issues. The project involved upgrading the road from two lanes to four lanes over 800 metres between West Street and Glen Fairlie Avenue and two new traffic signals at two busy intersections. The project also included the construction of Ipswich City Councils first ‘wetlands’. “We have been able to utilise the 140,000 cubic metres of soil from a new water detention basin to be used as a new field near the high school,” said Councillor Kerry Silver. “It’s a win-win for residents who will benefit from flood mitigation, with the new detention basin, and improved recreation fields.” The new wetland area will mean stormwater will be captured, stopping pollutants from entering
Goodna Creek and provide irrigation water for the park and playing fields. The detention basin includes approximately 67,000 plants. This came at a cost of $4.3 million, which was funded by the Australian Government. Local councillor, Sheila Ireland, said there had been fantastic feedback, especially from the residents of Division 9. “Everyone local to the area has wanted this upgrade for some time,” Cr Ireland said. About 20, 000 vehicles use the road each day and Council expect a rise in numbers to around 27,000 per day. Previously, the absence of traffic lights became a significant safety hazard, so the introduction of the traffic lights have created safer intersections. GIRLS GRAMMAR GOES GLOBAL A recent visit by to Ipswich Girls Grammar School by renowned Chinese artist, Principal Guanfu Chen along with a contingent of chinese students is part of a global education program at the school, which aims to broaden the geographical and cultural horizons of IGGS students School Principal, Dr Peter Britton said that part of the curriculum at the school focuses on Asia, which this month included demonstrations at the school by Chinese dancers and martial arts performances. “Twenty Year 6 students were also able to come along to watch and paint with Principal Chen, who is from the ‘Sichuan Pao Tong Shu Primary School’ in China,” he said. In a reciprocal arrangement, IGGS students will travel to China for a tour to observe and experience Chinese culture. “They will be interacting with the people, going to the schools on a ten-day trip,” Dr Britton said. “This is really important in broadening the global outlook of our students. Principal Chen is well known for his beautiful and intricate Chinese landscape art, and his work has been exhibited in national and provincial art awards - so his visit was a real highlight for the school.
Mayor Paul Pisasale and the Consul of the People’s Republic of China in Brisbane, Julia Zhu, spoke of the importance of cross cultural visits and experiences to both
Australia and China. International marketing manager, Donghai Cui, who organised the visits by the 34 Chinese students and accompanying adults said

MEET ‘PARO’ THE LOVEABLE ROBOT Yuji Myoshi the General Manager of the Kowa Company, recently presented Japan’s groundbreaking, cuddly, interactive robot to Australia. PARO is an interactive soft robot emulating a cuddly animal, designed to help calm dementia and other patients experiencing stress and anxiety. Paro is the eighth generation of a model that has been used very successfully since 2003 in Japan and Europe. Inside the soft exterior there are five sensors: tactile, light, audition, temperature, and posture. These sensors provide the feedback from people and the environment. The way PARO behaves is similar to an animal: it recognises and responds to voice control, it ‘feels’ being stroked, and can also move its little body. The robot is designed to look like a baby seal, as people respond well to this creature, as opposed to an animal that people may have fears of. PARO replicates the noises of a real baby harp seal as well. So far 120 have been sold in Australia and already the results are fantastic. The main benefits to those using PARO so far relate to stress reduction, for patients and also of their caregivers. Patients feel calmer, have reduced anxiety and there’s a reduced urge to pace or wander around where they can hurt themselves. The focus at Ally’s Kindy for 2016 is helping our children to “Rub Shoulders with the Natural World” . We have completed our outdoor environmental classroom where the children can discuss and learn about the wonderful world of nature and to discus and learn about gardens and gardening. Our centre library has many resources and books where the children can discover and learn about native insects and animals.
We have our own guinea pig who is part of the centre where the children learn the importance of caring for a pet. Parents and children can share their stories about what they have found in their own back yards. As a survivor of domestic violence, University of Southern Queensland (USQ) student Jackie Rogers is determined to use her own experiences to help others turn their lives around. “I feel I have a chance to make a difference and help those in most need realise that no matter what’s going on in your life, you can overcome it, move forward and create a better life,” she said. Ms Rogers took the first step towards her goal when she enrolled in USQ’s Tertiary Preparation Program. Returning to the classroom after more than 20 years was a big learning curve for Ms Rogers, but through persistence and hard work she is now one subject away from completing her degree. “USQ didn’t just arm me with the skills I needed, it provided me with the mental and emotional support to build my confidence and the motivation to achieve my goals,” she said. USQ has a range of study options in human services, counselling, community development, disability services and advocacy,
both at an undergraduate Bachelor of Human Services and at the postgraduate level with the Graduate Certificate of Counselling. “Human Service workers have a commitment to make a difference in the world by working on improving human conditions, empowering individuals and communities to have a voice and ensure that marginal people have greater social inclusion.” “A new graduate-entry Bachelor of Midwifery began this year, adding to the already popular health offerings in sport and exercise, nursing, paramedicine, human services and psychology.” USQ has made a decision to visibly express its commitment to changing attitudes and behaviours in relation to violence against women through engaging in the White Ribbon Australia Workplace Accreditation program. The new government, Coalition or Labor will be determined after an extended eight-week official campaign period. This is also the first double dissolution of the House of Representatives and the Senate since the 1987 election. Compulsory voting means that every eligible Australian citizen (18 years or older) is required by law to enrol and vote. All Australians who are eligible to vote elect people to represent them in the two houses of Parliament – the Senate and the House of Representatives. As Malcolm Turnbull (Liberal) and Bill Shorten (Labor) go head to head, both leaders are marketing their policies to the electorate at large. Labor Health - Bill Shorten says e that health is their Number One priority, making medicare stronger and offering better support for breast cancer, better care for mental health patients and medicinal cannabis. Education - Labor is committed to increased investment in schools and TAFE, making it more affordable for all Australians to go on to tertiary education. Climate change – Labor says its goal is to achieve 50 per cent renewables by 2030 and net zero pollution by 2050. Budget repair - a ten-year plan to repair the Australian economy. Coalition Health - Malcolm Turnbull is promising world class healthcare with hospital funding and a healthier Medicare. the Liberal/ Nationals Coality want cheaper medicines, mental health reforms and new drugs. Ending Domestic Violence – The Coalition has committed to a $100 million funding campaign to keep women safe at home and break the cycle of domestic violence. FLYING UNMANNED AIRCRAFT FROM RAAF BASE AMBERLEY Amberley air base is now home base to a very different type of aircraft, one that is unmanned and ‘flown’ remotely from a shelter the size of a shipping container on the eastern side of the base. But this is no prototype or experimental platform. The Heron Unmanned Air Vehicle has seen operational service in Afghanistan as have the aircrews who fly this air reconnaissance aircraft. Heron is assigned to 5 Flight at Amberley. Heron pilot, Flight Lieutenant Nelle Sheridan, has operated the Heron for the past three years and has no doubt as to the platform’s future, as the Air Force works up to delivery of the M-4C Triton Unmanned Aircraft System (UAS). Triton is a sophisticated High Altitude, Long Endurance (HALE) aircraft that will be used for maritime patrol and other surveillance roles.

“Heron carries two video cameras, with live video feed back to base, along with a forward infrared sensor, and the UAV is operated similarly to any other military aircraft in its role,” FLTLT Sheridan said. “We control the aircraft via line-of-sight radio control, and it is powered by a 200 horsepower engine that provides 350 kilometre range and airspeed at better than 200 kilometres per hour.” Flight Lieutenant Jayson Nichols, who came to Heron after flying the AP-3C Orion Long Range Maritime Aircraft, said that the transition from a manned aircraft to a UAV does not pose any problems.
“It’s pretty much identical, except you’re not sitting in the aircraft,” he said. “All the procedures, flight planning and aviation principles are the same, except that the control column in, say, the P-3 is replaced by a keyboard and mouse – and you never get airborne. “It’s similar to modern airliners that can take off and land by themselves, with the crew there in case of a malfunction or emergency.” One difference in the Heron flight is that the crews get to be home a lot more than their counterparts in the maritime patrol squadrons, who are away on deployment frequently. Commanding Officer No 5 Flight, Wing Commander Matthew Bowers said that Heron was acquired by the RAAF in 2009 for deployment to Afghanistan. “Heron operated very successfully in-theatre for almost five years, achieving more than 27,000 hours
of reconnaissance operations in support of our troops and coalition forces on the ground,” he said.
As an indication of the value placed on Heron operations there, WGCDR Bowers said, “our troops and coalition troops would not go ‘outside the wire’ without overhead support. Heron provided a continuous overwatch, to give the troops on the ground situational awareness and increase their safety as they conducted operations in support of the Afghani people. “Often, Heron was the only asset available to support activities such as the elections there in 2014, enabling Afghani people to vote
safely to elect there own leader. “Chier of Air Force decided, as a result of this outstanding success, Heron would return to Australia to ensure that we didn’t lose any of that knowledge, skills and capability established in Afghanistan. We are at the leading edge of remotely piloted capability across Australia.” WGCDR Bowers said that operations from Amberley would provide the building blocks in preparation for future remotely piloted capabilities to come, principally with the Triton UAS. “Our experience in the coming years will ensure we will be in a position to inform the requirements for future UAV platforms and transition seemlessly to the new capabilities.” A principal objective of operations from Amberley is to ensure that Heron can be operated successfully and safely across Australia integrated with other military aircraft types. Heron will deploy to other air bases as well, operating from those airfields in support of major exercises and training operations. WGCDR Bowers doesn’t foresee UAVs taking over from manned combat aircraft in the short term, rather he sees an increase in the number of unmanned platforms in their specialist roles; however, the
Defence White Paper does call for the acquisition of a high altitude armed UAV in the 2020 to 2025 timeframe. On support for disaster relief and humanitarian assistance, WGCDR Bowers said that those roles are a natural fit for Heron because of its endurance and the camera fit. “That is certainly an aspirational goal for us going forward,” he said. LAMB LOIN with white bean mash FROM ‘REAL DELICIOUS’ BY CHRISSY FREER Preparation time: 30 minutes Cooking time: 20 minutes. Serves 4 Ingredients 50 g (13/4 oz) roasted red capsicum (pepper), diced 40 g (11/2 oz) baby English spinach leaves, chopped 1 tablespoon chopped oregano 1 tablespoon pine nuts, toasted 500 g (1 lb 2 oz) lamb loin roast 1 teaspoon olive oil White bean mash 1 teaspoon olive oil 1 garlic clove, crushed 1 teaspoon finely grated lemon zest 2 x 400 g tins cannellini beans, rinsed 125 ml (4 fl oz/1/2 cup) home-made or low-salt chicken stock 1 tablespoon lemon juice, or to taste zucchini salad 1 tablespoon olive oil 1 tablespoon lemon juice 1 teaspoon finely grated lemon zest 1 teaspoon dijon mustard 3 large zucchini (courgettes) 1 tablespoon each chopped oregano and snipped chives Method Preheat the oven to 200°C (400°F). Mix together the capsicum, spinach, oregano and pine nuts to make a stuffing. Remove any string from the lamb and unroll the meat. Spread the stuffing between the two long sections of the loin, then re-roll, keeping the skin and

fat on the outside. Secure at intervals with kitchen string and brush the lamb with olive oil. Heat a large non-stick frying pan over high heat. Add the lamb and cook for 1–2 minutes each side or until browned. Transfer to a roasting tin and roast until cooked to your liking (20 minutes for medium). Remove from the oven, cover loosely with foil and leave to rest for 10 minutes. Meanwhile, for the white bean mash, heat the olive oil in a saucepan over medium heat. Add the garlic and lemon zest and cook, stirring, for 1 minute or until fragrant. Add the cannellini beans and stock and simmer for 2–3 minutes or until the liquid is reduced by half. Transfer the bean mixture to a food processor and mix until smooth. Add lemon juice to taste and season with sea salt and freshly ground black pepper. Return to a saucepan and stir over medium heat until warmed through. For the zucchini salad, whisk the olive oil, lemon juice, lemon zest and mustard in a large bowl. Cut the zucchini into spaghetti-like strands using a spiraliser, or peel it into ribbons with a vegetable peeler. Add the zucchini and herbs to the bowl and gently toss with the dressing. Season to taste with sea salt. Thickly slice the lamb and serve with the white bean mash and salad.

A beer inspired by carrot cake?
HONEYWOOD FERNVALE - GREAT CHOICE FOR FIRST HOME BUYERS If you are a first home buyer finding an affordable new house and land package for around $350,000 is hard, especially a traditional homesite larger than 300sqm. Gimmicky maybe, but Stone Brewing Co.’s newest collaboration release captures the essence of the dessert without leaving the beer behind. It is more of a nod to the sweet and spicy cake than an attempt to faithfully recreate it as a beer, and it works surprisingly well. Stone 24 Carrot Golden Ale, a Belgian-style ale, was the winning entry in the 2015 Stone Homebrew Competition, and the recipe came from San Diego homebrewer Juli Goldenberg. Goldenberg was the first female brewer to win the annual competition, joining the ranks of fan-favorite beers such as 2014’s Xocoveza Stout and the Mint Chocolate Imperial Stout released a few years ago. She chose San Diego’s Monkey Paw Brewing as the final collaborator for the commercial beer. The recipe called for raisins, vanilla, cinnamon and, of course, lots of carrots to create a rich and spicy brew. Instead of using the five tons of shredded carrots that the scaled-up recipe called for, the team used locally produced carrot juice concentrate for the fullsized production batch. Beet juice was also added to help with the carrot cake colour. If you’ve had carrot cake before, the icing is just as important as the cake itself, Goldenberg added lactose during the boil, and vanilla beans post fermentation. The beer could have ended up a sweet and spicy mess, but the strain of Belgian yeast used to ferment the golden ale
rounded out the flavour with a pungent dose of fruity and spicy esters. As the name implies, this beer is richly aromatic and envelopes the palate with decadent flavors of cream cheese frosting, cinnamon, vanilla, carrots and raisins plus subtle malt sweetness, ending with a medium-dry finish. It’s nothing short of brilliant and well deserving of the 24 karat (carrot?) golden opportunity to be brewed by Stone and distributed across the world. The team at Tap’d have been lucky enough to secure one keg of this beer and want to share it with all the beer lovers out there.
