GUACAMOLE TOASTS Serves 2 people

Ingredients: -1 avocado -1 garlic clove -1 trickle of extra olive oil -2 slices of brown bread -Salt Method: Take a mature avocado and peel it. On a plate cut the avocado in pieces, cut half of a garlic clove and pour a little extra olive oil and salt. Then, smash all with a fork to make a mush.. Meanwhile, toast the brown bread. When the bread is toasted spread the mush on it. Eat warm! It looks delicious and it has many vitamins!!

VEGETABLE PIZZA Serves: 4 people
Preparation time: 15 m.
Cooking time: 15 m.
Ingredients: 1 big pizza crust/ dough.
1 carrot.
1 carton of tomato sauce.
2 tomatoes.
150 gr. of mozzarella cheese.
Half an onion.
100 gr. of cooked ham.
A little oregano.
1 tin of mushroom.
Method: First, cut the carrot and the tomatoes in slices and cut de onion in little pieces. Then stretch the dough and click with a fork, and then pour on the crust a little tomato sauce, and spread it. Then sprinkle a little oregano on the pizza. Turn on the oven for 10 m. to 220 degrees. After that, cover the crust with the mozzarella cheese and then add the cooked ham. Then put the mushrooms, the carrot and the tomatoes and, of course, the onion on the pizza. Finally put all mozzarella over the pizza and sprinkle a little oregano on the pizza again. Finally cook for 15 m. in the oven at about 230 degrees. Recipe by Carlos
SALMOREJO (Cold old tomato soup Cordoban style) Serves 4 people Preparation time: 20 minutes Cooking time: 10 minutes
Ingredients: 1.5 kilos of ripe tomatoes
1 garlic clove
½ loaf of bread, better from the day before
¼ green pepper
2 eggs
250 gr of chopped jam Olive oil and salt
1 glass of water
Method: First boil the eggs with a little salt during ten minutes. Second squeeze the tomatoes with your you hand, this way you can reduce the quantity of water and let the weeds go out. After that, put the tomatoes in a blender and blend at slow speed. In a bowl mix the bread with a glass of water with your hands. Add the garlic and the green pepper to the mixture. m Now it´s time to add the bread in small pieces to get the correct texture, as a not very thick puree. Finally strain the mixture to remove the tomato skin. Add salt at your taste and serve in bowls. Take off the eggs from the pot and put them in cold cold water. After that, peel and cut them in slices. Finally it´s time to eat, each one can put in his bowl of salmorejo some spoons of chopped jam and, egg in slices and a few drops of olive oil. This recipe is perfect for summer, cold and tasty, and if you you want, you can try it with your favourite cheese, canned tuna, boiled prawns or whatever you like.

SERRANO HAM CROQUETTES SERVES : 4/6 PERSONS TIME: 40 MINUTES

COOKING
Ingredients: 250g serrano ham 1l milk ½ Onion 1 Galic clove 70g Flour 50g Butter Olive oil Nutmeg Pepper
Method: First cut the ham into pieces, heat some milk in a pot and add the ham. Cook for 15 minutes. Then peel and chop the onions and garlic and fry with olive oil. Next add butter and let it melt, then add the flour. Cook for 4- 5 minutes and stir. Next stir and add the milk and cook for 10 – 15 minutes. Add the pieces of ham , pepper and nutmeg. Let it cool and put in the fridge for a couple of hours. Then shape the croquettes and dredge each ball in flour , egg and bread crum . Finally fry with olive oil . Ready to eat!! OMELETTE Serves ___4___ people

Ingredients: - Potatoes, 500 grams - Onion, 100 grams - Eggs, 3-4 large - Olive oil - Salt
Method: First, peel and wash the potatoes and onions and cut into small pieces. Then, in a frying pan heat abundant olive oil and when it is hot, fry both the potatoes and the onions, adding a little salt to it. Then beat the eggs. Once we remove the fried ingredients from the pan, drain the excess oil well and add the beaten eggs. Mill all the ingredients. Next, put the frying pan at medium heat and pour a dash of olive oil, and when it is warm, pour the egg mixed with the potatoes and onions. Cook for about 4 minutes. VEGETABLE TOWER WITH PIQUILLO SAUCE For start dish: 2 puff pastry base. 2 zucchini. 2 eggplant 3 tomatoes 3 onions 200 grams of cheese (the best of goat)
For piquillos sauce 6 piquillo peppers 200 ml cream 200 gr fried tomato
For zucchini sauce Zucchini (remaining) 2 teaspoons of butter (optional)
For the tower:
• First, wash and cut vegetable slices –“coin size”-. (Very important, about 0,4-0,5 centimeters). Salt them slightly. • Next, grill the vegetables, without burning them too much. • Then, cut the cheese (you can use a cup face down, “coin size”). • Previous, bake cookies, with the base pasta (similar size to vegetables). • Put the cookie base and add vegetables and cheese in the following order: Cookie, vegetable, cheese, vegetable, cheese, … (We should alternate cheese and vegetable). • Then, cook in the oven until the cheese melts on the vegetables. • Finally, serve two units in each dish and decorate with the sauces. For piquillos sauce:
• First, boil the piquillo peppers during 3 minutes and add tomato cream. Triturate together. Boil all again. Add a little salt • Then, put it in a bottle to decorate the dishes. For zucchine sauce:
• First, dice the remaining zucchini and boil it. • Next, crush and boil it. • Then, use some butter. Boil everything again to recover savour, colour and texture. Add a little salt. • Finally, put it in a bottle to decorate the dishes.

GARLIC PRAWNS Serves ___2 people Preparation time: __5_minutes

Ingredients: 150 Grams of prawns 10 Garlic cloves 1 Dry chilli pepper 8 Tablespoons of olive oil Salt
Method: 1. Drop the olive oil in the pan and put it on the heat. Add the chilli pepper cut in slices. 2. Peel the garlic and cut them in slices. Add them to the pan. 3. When the garlic is changing colour, add the prawns and a little salt. Let it in the heat until the prawns change colour (a pair of minutes is enough). 4. Remove from the heat and serve in a clay pot.

BAGNA CAUDA “Sauce parents variation”
Serves: for 6 people
Preparation time:45 minutes Cooking time: 45 minutes
History: This is an Italian recipe. It´s a special traditional recipe, originally from Piedmont. It has been the typical meal on Easter Friday, since World War I or in times of scarcity.
Ingredients: 6 heads of garlic (one of person); 600cc. of cream; 60 grams of butter; 12 anchovies in brine; 400 cc. of milk. Opcional: 6 chopped nuts.
Method: - Peel 6 garlic cloves. - Put the milk and garlic cloves peeled in a saucepan. - Cook until the garlic is tender, for about 15 minutes, then drain and crush the garlic. - Put the butter and the garlic puree in the saucepan, bring to medium heat and stir with a wooden spoon. - When this preparation is hot, drop crushed anchovies and continue to stir. - Finally, put the cream and keep stirring. - Serve in a fondue casserole, at low heat. - Distribute cooked vegetables, grilled or boil (carrot; asparagus; Brussels sprout; cabbage; mushroom, etc.) and different types of bread in plates on the table. OCTOPUS WITH GALICIAN CHEESE Serves 6 people. Preparation time: 60 minutes. Cooking time: 50 minutes.
Ingredients: - 1500gr octopus. - An onion. - Salt. - Paprika and/ or hot paprika to taste. - 300gr. Galician cheese. - Virgin olive oil.
Method: First defrost the octopus the previous night, second peel the onion and clean the octopus. Boil the octopus with the onion for forty minutes. After that, take the octopus out of the water and cut it into small pieces. Meanwhile, heat the oven at 200ยบ C, then put the octopus on the tray and sprinkle some Galician cheese, later cook in the oven and grate for ten minutes. FABADA ASTURIANA Serves ___6___ people

Ingredients: -500 g of beans

Method: -First choose the beans, remove the bad beans and clean them with water. -Put the beans in a pan with water for 12 hours. In another pan put the ham bone with water for 12 hours. -Drop the beans in the pan, then cover with water ( two fingers over them) -Heat the pan until it boils. -When it is boiling, add the pork sausages, the blood sausages (prick them before) and the ham’s bone. -The meat must always be on top of the beans. -After half an hour boiling, sprinkle the saffron. -Then low the cooking temperature and add salt.
-Cook it for two hours at low heat and stir them with a wooden spoon. -Try the beans and add salt if they need it. -Let them rest for about one hour. Recipe by Manuel Porrúa González

METHOD Tie the turkey with a piece of cord. Put de olive oil in the pan and heat. When the pan is hot put the turkey breast and fry until it becomes gold After that, addt garlic, onions cut in 4 pieces, bay, chilli pepper, cinnamon and stir for five minutes. ROQUEFORT CHICKEN WITH MUSHROOMS Serves 3 people
Preparation time: 10/15 minutes
Cooking time: 30 minutes
Ingredients: 2 chickens breasts
200ml of milk cream
½ white onion
A little pepper
250g of mushrooms
A little salt
80g of Roquefort cheese
Method: 1. Cut the onion in julienne and stirfry in a frying pan with a little olive oil. 2. Cut the chicken breasts in pieces and add them to the pan when the onion begins to take colour. Add salt and pepper and stir. 3. Cut the mushrooms into slices and add them to the pan when the chicken is well sautéed. 4. Add the cheese when the mushrooms are ready. 5. When the cheese is melted you can add the milk cream. 6. Stir the preparation clockwise. This is a trick for the sauce to thicken quickly. 7. Ready to eat! RICE WITH SQUIDS

Ingredients: 600gr of squid 500gr of rice 2 onions 4 tomatoes 1 green pepper 4 cloves of garlic 2 l fish broth Olive oil Salt
Method: First, chop the onions, green pepper and cloves of garlic. Fry them at low heat in a paella pan with olive oil for about 30 min. Then, cut the tomatoes and add them to the paella pan for about 15 min more at low heat. After that, cut the squids and add them to the mix for 10 min until they release the water and the ink. Finally add the rice and fry for 2 or 3 min. and add two cups and a half of fish broth for each cup of rice and keep it at low heat for 16 min. more and add salt. Serve immediately.

CARBONARA SPAGHETTI Serves __2_ people
Preparation time: _10 min
Cooking time: 15 min
Ingredients: Spaghetti 250 gr. ½ onion two cloves of garlic bacon 125gr.
A quarter litre of single cream two eggs grated cheese oil, salt and black pepper
Method: On one hand, heat some water with one egg in a saucepan. Also, heat enough water and salt in another pan and then add the spaghetti. Cook for eight minutes. On the other hand, cut the onions and garlic into small pieces. Then heat oil in a wok, next, drop the vegetables and fry them, cut the bacon in small pieces and drop into the wok. Cook for about five minutes. Next, Add the single cream and stir. Then mix an egg until it sets with the sauce. Finally, take the boiled egg, cut in small pieces and add. Also, take the pasta out of the water and mix with the sauce, Add grated cheese and mix. Cook for a minute. Season to taste and it’s ready!!

ROASTED CHICKEN WITH TOMATOES Serves 4 people
Preparation time: 30 minutes
Cooking time: 1 hour
Ingredients: Mustard 4 grains of black pepper 2 cloves of garlic 4 tomatoes 1 tablespoon of vinegar
A half kilogram chicken 1 glass of white wine Oregano Thick salt
Method: Crush in a mortar 1 spoonful of mustard, 4 grains of black pepper, garlic and vinegar. Put the mixture on the oven tray. Put the chicken on top, clean and salty. Spread the inside of the chicken with more mustard and place around the tomatoes previously punctured, to release their juice and mix with the chicken. Roast for 1 hour at 180 degrees. In the middle of the roast, add the glass of white wine and sprinkle with oregano. Later, if you see that the chicken is getting dry, add water or vegetable broth. When it is roasted and at the moment of serving, peel the tomatoes, chop the chicken and cover it with the sauce that is left in the plate.

SEA BASS IN THE OVEN Serves 4 people

Ingredients: 1 sea bass of 1,200 grams 2-3 potatoes 1 green pepper 1 tomato 1 onion 2 cloves of garlic 1 lemon
1 glass of white wine Water Extra virgin oil Salt Black Pepper Parsley
Method: 1. Preheat oven to 200 C 2. Place potato slices in the bottom of a large baking dish. Add onion slices, green pepper slices, tomato slices and garlic and 1 tablespoon of the extra olive oil. 3. Mix the water and white wine and pour over the potatoes. Cook in a preheated oven for 10 to 15 minutes. 4. Meanwhile, wash the sea bass and coat with the remaining extra olive oil, parsley, salt and black pepper. Place on the bed of potatoes, top each sea bass with lemon slices and bake for another 30 minutes. 5. Enjoy it

MEAT LASAGNA RECIPE Ingredients: 500gr of meat (Mixed meat, pork and beef) Lasagna sheets, usually 6 An onion
A teaspoon of oregano A teaspoon of parsley A can of tomato sauce 750ml of milk
One or two garlic cloves A teaspoon of pepper
45gr of cornflour A pill of chicken broth(avecrem)
A teaspoon of salt
Method: First heat some water in a pan and add the lasagna sheets. Cook for ten or fifteen minutes. Then cut the onion and garlic. Heat a little oil in a wok and add the onion and garlic. Then add the meat and cook for four or five minutes. Next add the salt, parsley, oregano and pepper. When the meat is cooked, add the tomato sauce. Then take the lasagna and drain the water and throw cold water. Heat the milk in a pan and add the pill of chicken broth and when the milk is cold add the cornflour. Little by little the milk thickens. Finally take an oven pan and put a tablespoon of milk (bechamel), lasagna sheets (one or two, it depends on the pan) and meat and repeat until finished all the ingredients. Put some cheese on top if you want. Put the pan in the oven for thirty minutes at hundred and eighty degrees and it’s done!! Bon appetite!

Put the milk in a pan. Add the rice, the cinnamon stick and a little lemon peel. Cook over low heat for about 50 minutes, stir often. Add the sugar and the butter and then cook for another 10 minutes. Remove the cinnamon, Wait for it to cool and distribute the rice in 4 containers, sprinkle with a little cinnamon powder. Decorate with a few mint leaves and if you want with the cinnamon stick. It looks delicious!

RICE WITH MILK Ingredients: - 2 cups of water - 2 cups of rice - 1 litre of milk - 1 tablespoon ground cinnamon - sugar to taste Method: First boil 3 cups of rice in 2 cups of water. YOGURT CAKE Serves 10 people

• a packet of yeast
• 3 eggs
• lemon zest
• 2 glasses of sugar (measured with the glass of yogurt)
• butter
• 3 glasses of flour (measured with the glass of yogurt) • a glass ofsunflower oil (measured with the glass of yogurt)
Method: First, mix all the ingredients and stir until the mixture is homogeneous. Then, spread the butter on a cake mold and pour the mixture in. Turn on the oven to 180 degrees and cook the sponge cake for 20-25 minutes. Finally, take the mold out of the oven and enjoy the cake!

PINEAPPLE WITH BERRIES Serves 4 people

Ingredients: A pineapple, 30 grams of pine nuts, 100 grams of raspberry, 2 yogurts, 20 grams of butter, 10 grams of star anise, a spoonful of sugar and olive oil.
Method: First, clean the pineapple and cut it into pieces. Put the yogurts in a bowl. In a pan toast the pine nuts for five minutes. Then put another pan on the fire with a spooful of oil and butter, when it’s hot we add the pineapple and toast for two minutes until it changes its colour. Next, add the star anise and the sugar and cook for two minutes. And then place the pineapple on a dish and in the same pan we add the raspberries and cook for another two minutes. Finally, take them out of the fire and put them in the bowl with the yogurt and mix well, and we put the pineapple above and decorate with pine nuts.

HOMEMADE DONUTS Serves 4-6 people Preparation time: 40 min Cooking time: 10-15min
Ingredients: 500 grams of baking powder 3 eggs 150 grams of sugar A cup of olive oil ½ cup of aniseed 1 lemon (the zest)
Method: First, place the eggs and sugar in a bowl and beat hard. Then, gradually add the oil, and lemon zest. After, pour the flour on a table, make a small volcano, and in the middle incorporate the mixture made previously. Mix with the flour little by little, until obtaining consistent dough. Knead with your hands and let stand for half an hour. After that, make the donuts. Heat some oil in a large pan and when it is hot, throw in the donuts. When the donuts are brown, remove them and put them in a container. They can be sprinkled with icing sugar or cinnamon to taste. Ready to eat!

MONA´S CHEESECAKE Serves 10 people Preparation time: 6 hours 17 min Cooking time: 17 minutes
Ingredients: - 1 litre of cream
- 3 envelopes of curd
- 300 gr. soft cream cheese
- 1 package Digestive
- 350 gr. milk -220 gr. sugar
Cookies - 300 gr. raspberry jam
Method: First put the cream, the cream cheese, the milk, the sugar and curd envelopes in a pan over medium heat for 12 minutes while beating constantly. Then cover the base of a mold with whole biscuits (without crushing) and a little of the mixture, just to cover the biscuits. Cool in the fridge for 5 minutes. Meanwhile beat the mixture at medium heat. After 5 minutes, carefully pour the rest of the mixture and cover with whole biscuits. Reserve in the fridge for at least 6 hours. Finally cover with jam, unmold and serve.

LEMON MOUSSE Serves 10 people

Ingredients: - A can of evaporated milk - Three lemons - A cup of sugar
Method: First grate one lemon and then squeeze the other two lemons. Put the lemon juice in a bowl. Add the lemon zest, the sugar and the evaporated milk. Next whisk it. Finally drop the mixture in ten glasses and let it cool in the fridge for three hours.

CHOCOLATE MUFFINS Preparation time: 15 minutes
Cooking time: 20 minutes
Ingredients: - 250 gr of flour
- 74 ml of milk
- 75 gr cocoa powder
- 1 sachet of yeast
- 275 gr sugar
- 4 eggs
- 250 ml olive oil
- 1 lemon zest
Method: First, in a bowl, mix the flour, baking powder (yeast), lemon zest and cocoa. Aside mix well beaten eggs and sugar, milk and oil. Next add the two mixtures to form a homogeneous cream. Then, fill half the muffin cups with the mixture and put them in the oven at 180 degrees for 20 minutes. After that, we take the muffins out of the oven and let cool for about 15 minutes. And we have our chocolate muffins!

COFFEE FLAN. Ingredients: 10 biscuits 1 L cream 1 packet of flan powder for 8 people ½ Cup of coffee liqueur ½ teaspoon of salt
Procedure: First save a glass of cream and heat the rest in a pot. Meanwhile, mix in a bowl the glass of cream, the prepared flan powder, the coffee and the salt. When the cream is hot add the mix and stir for 2 minutes. Take out of the fire and after that spread the caramel in a round mould, soak the biscuits in the coffee liquor and put on the caramel. Next, pour mixture on the biscuits. Finally put in the fridge for about four hours.
