INSTRUCTIONS How to use: The recipes are designed for use in a 0.5 L iSi Whipper. For a 1 L iSi Whipper, double the ingredients, for a 0.25 L iSi Whipper halve the ingredients. For a 1 L iSi Whipper screw on 2 iSi Cream Chargers one after the other and shake well after attaching each charger. For a 0.25 and 0.5 L L iSi Whipper use 1 iSi Cream Charger.

Sparkling Prosecco Foam with red currant This recipe can be prepared in the iSi Creative Whip, iSi Cream Profi Whip PLUS , iSi Gourmet Whip PLUS , iSi Thermo Whip PLUS , and the iSi Thermo XPress Whip.

Fill the iSi Whipper with ingredients (observe the max. filling volume). If the mixture contains seeds, bits or fruit pulp, strain it through the iSi Funnel + Sieve or a fine mesh sieve before pouring it into the iSi Whipper.

Insert the iSi Cream Charger into the iSi Charger Holder. (The iSi system guarantees the highest quality, so always use only original iSi Chargers with your iSi Whippers.)

Screw on the iSi Cream Charger and Charger Holder.

Shake the iSi Whipper, remove the Charger Holder, and recycle or discard the empty iSi Cream Charger.

0.5 L iSi Whipper Ingredients 450 ml Prosecco 50 ml elderflower syrup 3 sheets of gelatin (5 g powdered gelatin)

Preparation Place the Whipper „headfirst“ (decorator tip pointed downward) and dispense, portion by portion, by depressing the lever. Do not shake in between portions!

Store the iSi Whipper horizontally in the fridge. With the iSi closed and sealed system the preparation can be stored in the fridge up to 1 week.

Soften the gelatin in cold water. Press out the excess water. Heat 5 tbsp. of Prosecco to approx. 60°C and dissolve gelatin. Add the rest of the Prosecco and the elderflower syrup. Pour the mixture through the iSi Funnel + Sieve directly into the 0.5 L iSi Whipper. Screw on one iSi Soda Charger and shake vigorously. Chill for at least five hours. Serving suggestion For an even more striking carbonated effect, screw on one more iSi Soda Charger immediately before serving. Serve on top of a red currant cocktail.


Herby Cream Cheese with Smoked Salmon

Mint and Lime Soda

This recipe can be prepared in the iSi Creative Whip, iSi Cream Profi Whip PLUS, iSi Gourmet Whip PLUS, iSi Thermo Whip PLUS, and the iSi Thermo XPress Whip.

This recipe can be prepared in the iSi Soda Siphon.

0.5 L iSi Whipper Ingredients 200 g full fat cream cheese 220 g yogurt 50g mixed fresh herbs (to taste, i.e. parsley, dill …) 1 tbsp. olive oil 1 tsp. fine salt ½ tsp. ground white pepper Per serving Baguette 1 slice smoked salmon

Preparation Wash the herbs and leave to dry. Then remove the stems and finely purée the leaves with the rest of the ingredients using a stand mixer or hand blender. Season to taste with fine salt and white pepper. Pour the mixture through an iSi Funnel + Sieve directly into the 0.5 L iSi Whipper. Screw on one iSi Cream Charger and shake vigorously. Chill for at least one hour. Serving suggestion Cut a baguette into slices and brown in a pan with olive oil. Serve the herby cream cheese dip immediately with the smoked salmon and baguette slices.

Preparation Fill the iSi Soda Siphon with cold water. Screw on one iSi Soda Charger and shake vigorously. Leave the soda siphon to chill in the fridge for at least one hour. Serving suggestion Place the lime juice and granulated sugar in a glass. Pour in the soda water from the iSi Soda Siphon and serve with the lime slices and mint.


Camembert Foam

Orange and Carrot Mousse Soup

This recipe can be prepared in the iSi Creative Whip, iSi Cream Profi Whip PLUS, iSi Gourmet Whip PLUS, iSi Thermo Whip PLUS, and the iSi Thermo XPress Whip.

0.5 L iSi Whipper Ingredients 200 g Camembert cheese 150 ml milk 150 ml heavy cream ½ tsp. fine salt Ground white pepper

Preparation Cut the Camembert into cubes. Carefully heat the milk and add the cheese. Melt the cheese and mix in the heavy cream, stirring constantly. Season to taste with fine salt and pepper. Pour the mixture through the iSi Funnel + Sieve directly into the 0.5 L iSi Whipper. Screw on one iSi Cream Charger and shake vigorously. Chill for at least one hour.

Serving suggestion Serve on pre-made puff pastry and sprinkle with pine nuts. Serve immediately. iSi tip If you prefer you could use a different type of soft cheese.

Preparation Sweat the onion in olive oil. Add the carrots and ginger and stew briefly. Mix in the vegetable stock and orange juice. Cook over medium heat for approx. 20 minutes. Finely purée the soup with a stand mixer or hand blender. Pour the mixture through the iSi Funnel + Sieve directly into the 0.5 L iSi Whipper. Screw on one iSi Cream Charger and shake vigorously. Keep the iSi Gourmet Whip PLUS warm at 75°C in a bain-marie or water bath. Shake vigorously before serving. Serving suggestion Serve in a small cup or as a garnish on a classic pumpkin or carrot soup. ATTENTION: iSi Thermo Whip PLUS and iSi Thermo XPress Whip must not be put in a bain-marie or a water bath!


Chili and Honey Hollandaise

0.5 L iSi Whipper Ingredients 300 g butter (approx. 250 ml of clarified butter) 3 egg yolks 1 whole egg 1 tbsp. chili paste 30 g honey Juice of one lemon Salt, white pepper Reduction 20 g onions, diced 50 ml white wine 3 black peppercorns 1 bay leaf

Preparation

Preparation Melt the butter in a saucepan and cook off until it is clarified (this takes approx. five minutes). Skim off the foam using a ladle. Leave to stand until it is lukewarm. To make the reduction, cook the peppercorns, diced onions, and bay leaf in white wine and allow reducing for approx. three minutes. Leave the reduction to stand until it is lukewarm, then beat the eggs in a bowl with 4 tbsp. of the reduction and the butter. Add the honey and chili paste and then season to taste with salt, white pepper, and lemon juice. Pass the mixture through the iSi Funnel + Sieve directly into the 0.5 L iSi Whipper. Screw on one iSi Cream Charger and shake vigorously. Keep the iSi Gourmet Whip PLUS warm at 65°C in a bain-marie or water bath. iSi tip The sauce can be kept warm in the iSi Gourmet Whip PLUS without stirring in a bain-marie or water bath at max. 65°C. ATTENTION: If using the iSi Thermo Whip PLUS or iSi Thermo XPress Whip, the mixture must be whipped and heaten in a pot over steam. iSi Thermo Whip PLUS and iSi Thermo XPress Whip must not be put in a bain-marie or a water bath.

Melt the dark couverture chocolate and the nougat over a water bath or in the microwave and mix in the albumen and cream. Pour the warm mixture through the iSi Funnel + Sieve directly into the 0.5 L iSi Whipper. Screw on one iSi Cream Charger and shake vigorously. Keep the iSi Gourmet Whip PLUS warm at 65°C in a bain-marie or water bath. Shake vigorously before serving.


Chocolate Hazelnut Topping

40 Second Instant Chocolate Sponge Cake

This recipe can be prepared in the iSi Mini Whip, iSi Creative Whip, iSi Cream Profi Whip PLUS, iSi Gourmet Whip PLUS, iSi Thermo Whip PLUS, and the iSi Thermo XPress Whip.

Preparation Pour all ingredients into the 0.5 L iSi Whipper. Screw on one iSi Cream Charger and shake vigorously until the desired consistency is achieved. Serve immediately or store in the refrigerator for up to one week. Serviervorschlag Use the topping to crown a strong espresso or a latte macchiato.

Melt the dark couverture chocolate over a water bath or in the microwave and allow cooling a little. Mix the eggs with the powdered sugar and salt. Stir in the flour and melted couverture chocolate. Stir until smooth dough is formed. Pour the mixture through the iSi Funnel + Sieve directly into the 0.5 L iSi Whipper. Screw on one iSi Cream Charger and shake vigorously. Serving suggestion Grease several bowls or glasses with butter and fill one-third of each with the mixture. Individually bake in an 850-watt microwave for 40 seconds. Take out the cake in one piece or serve directly in the bowl.
