Keto-Friendly Wine Pairings Sip Strategically While Staying On Your Diet. By Georgene Mortimer, Island Winery The Keto diet allows you to lose weight while enjoying delicious food and wine. Simply put, the Keto diet is a low-carb, high-fat diet that lowers blood sugar and insulin levels. While you don’t have to completely abandon carbs, you do have to substantially reduce them and give up some favorites such as potatoes, pasta, bread and most alcoholic beverages. Fortunately, dry wines can be enjoyed in moderation and Ketofriendly foods happen to include some of the most classic food and wine pairings. Whether you live in the Lowcountry or are just visiting, you can maintain your Keto diet with some of these delicious items served at local restaurants or easily prepared at home with fresh, local ingredients: Local Shellfish with Crisp White Wine – Shrimp, clams, oysters or mussels served in a butter sauce pair great with a Sauvignon Blanc with earthy, mineral notes. Look for wines from Bordeaux or the Loire Valley. Readily available and price friendly, Pouilly-Fumé and Sancerre are great choices. Crab or shrimp salad piled on a bed of greens is another great choice. Zestier versions of Sauvignon Blanc from New Zealand or Australia provide a delicious citrus and herbal complement to this meal. Local Seasonal Fish with Whites and Rosé – Seasonal “Catch of the Day’” favorites cobia, black drum and seabass have slightly firm textures and moderate flavors. Sautéed in butter, local fish pairs perfectly with a Washington State Pinot Grigio or crisp 14 Island Events April 2020

French Rosé. While conventionally fried fish is a no-no for Keto dieters, a coating of pecans, pistachios or almonds — instead of breading — on any fish creates rich flavors that are enhanced with an aged white wine such as Chardonnay or Spanish Albariño. Steak and Southern BBQ with Classic or Interesting Reds – Enjoying your favorite red meat on occasion is not considered cheating on the Keto diet. Generally speaking, steak pairs well with medium-bodied wines — and there is a huge selection to choose from. Sticking with the familiar, Merlot, Cabernet Sauvignon or a blend of these wines is always delicious with any cut of steak. Spanish Rioja is a great choice for bone-on cuts, while Grenache-based blends from the Rhone Valley or California pair well with tenderloin or fillets. Southern BBQ is Keto-friendly as long as you stick to a dry rub or a vinegar-based sauce. Bold, fruity wines such as California Zinfandel or Australian Syrah are ideal companions to a rack of ribs or a heap of pulled pork. Smoky, Texas-style beef brisket shares its roots with the cattle country of South America. So, it is not surprising that a Chilean Carmenere or an Argentinian Malbec are perfect mates. Contrary to their inky dark color, these wines have subtle bright flavors with hints of smoke and spice that do not overpower the rich flavors created by the slow, careful cooking of the meat. Island Beaches Public Beach Access: The Town of Hilton Head Island provides nine, public beach accesses: • Alder Lane Beach Access, off South Forest Beach Dr. • Coligny Beach Park, off Coligny Circle • Driessen Beach Park, end of Bradley Beach Rd. • Chaplin Community Park, off Wm. Hilton Pkwy. • Fish Haul Park & Mitchelville Beach Park, end of Beach City Rd. • Burkes Beach Access, end of Burkes Beach Rd. • Folly Field Beach Park and Islanders Beach Park, both off Folly Field Rd.

Parking & Facilities:

There are 23 metered spaces at Alder Lane; 54 metered spaces at Folly Field and 13 metered spaces at Burkes Beach Road. The parking fee is a QUARTER for each 15 minutes. Additionally, there are 207 spaces at Driessen Beach Park for long-term parking. The fee is a QUARTER for each 30 minutes during the week. Parking spaces at Islanders Beach Park are ALWAYS reserved for annual beach passes. Beach Marker Signs:

Hilton Head’s beaches are marked near the dune line with signs to let emergency responders know where assistance is needed. They are also useful as a reference point if you or your group should become lost.

Beach Safety Tips: • Apply and reapply plenty of sunscreen even on cloudy days. • Wear sunglasses to prevent damage from the sun. • Stay hydrated and drink plenty of water. • Be aware of the rules and regulations of the beach. Signs are posted near most beach accesses. • Don’t leave your kids unsuper­vised even in guarded areas. • Note the location of the nearest lifeguard and report any hazardous conditions to him or her. • Know the name of the beach or hotel/ condo and the beach marker number where you are staying if you should need assistance. • There are often jellyfish and stingrays, as well as other sea life in and out of the water, which may sting or cut a person. In any situation where first aid is needed, find a lifeguard or seek further medical attention. • Call or wave for help if you are in trouble. hiltonhead.com


Water Safety Tips: • Don’t enter the water if you can’t swim. • Swim near a lifeguard. • Ask the lifeguard about any dangers in the water or on the beach, especially if he or she is flying a yellow caution flag. • Be aware of direction and strength of longshore currents. These currents can take you up and down the beach quickly and cause you or your kids to get lost. • Don’t let your kids swim unsu­pervised even in guarded areas. • Don’t swim alone. Use the buddy system so that someone always knows where you are so they can get help if needed. • Don’t overestimate your swim­ming ability. Stay in chest deep or less water to insure you don’t get stuck in water over your head. • Don’t rely on flotation devices. • Swim parallel to shore if you want to swim long distances. • Don’t swim against the current. Swim across the current to escape the pull. • Always swim sober. • Don’t dive into unknown water or shallow breaking waves. Always go feet first.

Animals must be on leash or under positive voice control at all other times. Persons in control of animals on the beach are required to remove and properly dispose of excrement. Community Parks Barker Field

Located next to Mitchelville Beach, this recreational park is complete with open multipurpose fields, as well as three baseball fields. There is a small playground and a walking path with beach access. 708 Baygall Rd.

Bristol Sports Arena

For those looking for something other than golf and tennis, head on over to the Bristol Sports Arena next to Crossings Park. This sports complex offers a multipurpose rink and skate park. 4 Helmsman Way.

Chaplin Community Park

This park has all the makings for a great afternoon with beach access, basketball and tennis courts, a playground and even a dog park! This large park is all connected by pathways, so it’s easy to get from one place to another, whether that be on foot or bike. 11 Castnet Dr.

Compass Rose Park

One of Hilton Head’s newest parks offers guests a serene space amid the bustling activity on the Island. Its reflecting pool creates a calming oasis, even though it’s right off the popular Pope Ave. 4 St. Augustine Pl.

Crossings Park

Be sure to check out one of the very first recreational parks on Hilton Head – Crossings Park. It’s one of the biggest parks, with plenty of land and trails to explore, and a hot spot for activity year-round with three baseball fields, a concession stand plaza, meadow, playground and sports arena nearby. 6 Haig Point Ct.

Rowing and Sailing Center

Mitchelville Freedom Park

Home to the first self-governed settlement for freed slaves in the United States after the Civil War, this park has great views in a quiet setting. Greens Shell Park

Greens Shell is the site of a historic graveyard. It may be one of the smaller parks, but it still has two sets of playground equipment, a basketball court, an observation deck, picnic pavilion and restrooms. 99 Squire Pope Rd.

Hilton Head Park

If you’re looking for a park that’s away from the crowds, then Hilton Head Park just might be for you. This solitary stretch of land has two tennis courts and a basketball court, as well as a large grassy field for other games or maybe even a nice picnic. 152 William Hilton Pkwy.

Jarvis Creek Park

There’s a lot to do at Jarvis Creek Park, especially if you’re in the mood to move! This 53-acre park boasts all kinds of amenities and promotes activity for everyone – from toddlers to grandparents. This secluded waterfront site offers catch-and-release fishing, walking and fitness trails, a picnic pavilion and playground. 100 Jarvis Park Rd.

Shelter Cove Community Park Right behind the Shelter Cove Towne Centre is a beautiful outdoor retreat, complete with a performance pavilion, peaceful picnic spots and a water promenade with breathtaking views of Broad Creek. Alcohol:

Drinking/possession of alcohol on Hilton Head's public beaches is illegal and could result in a fine of up to $500. Liquor stores are not open on Sundays in South Carolina, though you can buy wine and beer in some gas stations and supermarkets.

Roundabouts:

You might as well learn to love South Carolina’s roundabouts. They’re everywhere! There are just a few rules to follow in the two-lane roundabout: • The drivers already in the roundabout have the right of way. • Always yield to them before entering the roundabout. • A roundabout is like any other flowing traffic—don’t stop in the middle. • As annoying as it can be to get behind a big slow vehicle, it’s even worse to be stuck beside it in a roundabout. Just wait. • Like with intersections, don’t change lanes while in the roundabout.

Beaches:

There are a few rules we all need to keep in mind to ensure a safe experience for everyone who comes to Hilton Head. It is therefore very important to remember that there is: • No sleeping on the beach between midnight and 6 a.m. • No driving on the beach • No horses on the beach • No fires on the beach • No fireworks on the beach (you need a permit to set off fireworks anywhere on Hilton Head, and an offense will result in a misdemeanor and a $500 fine) • No pets on the beach between 10 a.m.5 p.m. the Friday before Memorial Day through Labor Day



RECREATIONAL PATHWAYS GUIDE The Town of Hilton Head Island provides nearly 60 miles of public path­ways and nature trails for the enjoy­ment of pedes­trians and cyclists.

RULES FOR THE ROAD: • Please obey all traffic signals and pathway markings. Stop signs must be obeyed for safety. Bicycles are vehicles and must obey SC traffic laws. • Travel the pathways at speeds that allow for the safety of pedes­­­trians and other users. • Never ride within the roadway against traffic. State law requires bicycles to drive like all other vehicles. • Please do not ride on roads when a pathway is available. • Please ride single file and keep a safe distance from other bicyclists. • WATCH OUT FOR MOTORISTS! Motorists must yield to pedestrians and bicyclists within marked crossings, but they may not see you. • Please yield to pedestrians. When resting or stopped, please move off the pathway. 40 Island Events April 2020

• Most sections of the pathways are not illuminated. If you must bike at night, please wear light-colored clothing or carry a flash­light. Bicycles must have a red rear reflector and a headlight when biking at night. • When approaching slower pathway users from behind, please sound your warning device, or call out, “Passing on your left.” Always pass on the left. • Bicyclists should always wear a helmet, especially children 12 and under. • Make eye contact and use hand signals. Assume other bicyclists and motorists don’t see you. Hand signals tell motorists and other path users what you intend to do and will ensure everyone’s safe enjoyment of the paths. Be courteous, alert and predictable.

“B

ull” reds make for fun fishing this spring, and here in the Lowcountry we are blessed with great redfishing.

Technically, their proper name is red drum— and older local anglers refer to them as spot tail bass—but ever since Chef Paul Prudhomme introduced his “blackened redfish” recipe years ago, they’ve become nationally known as redfish. Large schools of redfish, numbering in the hundreds, roam skinny water seeking shelter from marauding dolphins in the cooler months, while large schools of the “bull” reds are found off the beaches near sandbars and in the sounds in the fall months. But spotty catches of the bulls happen all year long. Reviewing my logs from last April, it appears we had a strong run of “bull” reds last spring. My charter logs revealed numerous trips where we scored double-digit catches of 20- to 40-pound bulls throughout the month. Our local fishery for redfish is stronger than ever, thanks to management and stocking done by Al Stokes and his team at the Waddell Mariculture Center. I think the proliferation of these big schools are due in large part to these efforts. Whatever the reason, it’s hard to beat battling a big bull on light to medium spinning tackle. Bull Red BATTLE strength and determination of these bruisers, with the average battle lasting 15-20 minutes. Since fish over 23 inches must be released by law, these catches are for true sport only. The smaller ones eat better anyway. One of the neat things I’ve noticed over the last few years is the increased number of big “bull” reds, while the number of bigger predators has also increased. Last fall while fishing on a school, we had a hammerhead over 10-feet long surface beside the boat, and, several massive white sharks have been tagged off the coast of Hilton Head this winter. Perhaps the abundance of “bull” reds keeps them hanging around. Anyway, let’s hope history repeats itself this month; the bull red fishing will be spot-on for a great time if it does. And while we are hoping, let’s also pull for the water temperature to warm up early this April and maybe, just maybe, the cobia will also come out early! Capt. They Are A Changin’

Understanding climate change in the Lowcountry and beyond. By Anneliza Itkor, Outside Hilton Head

W

e’re all familiar with those subjects that are best left out of dinner party conversation. Politics, religion, sex and personal finances are all considered inappropriate smalltalk topics. Interestingly, there’s another topic that people avoid like the plague that we all desperately need to talk about: climate change. Part of the struggle with discussing climate change can stem from a lack of understanding regarding exactly how to talk about it. What exactly is climate change? A great way to understand it involves the “blanket” analogy. One of the primary functions of the earth’s atmosphere is to trap heat from the sun and keep us warm, much like a blanket keeps us cozy during the cooler months. Deforestation and the burning of fossil fuels emit carbon dioxide, which causes the “blanket” to thicken. And, just like the blankets on our beds, the thicker the atmospheric blanket, the warmer our planet becomes. The result? Climate change! It’s important for those of us looking to educate others on the topic of climate change to clarify that this is not a political conversation, but an environmental one. After all, we can find countless indicators of this conundrum just by stepping out our front door. Global indicators include ice melting, sea level rising, ocean-atmosphere circulation changing, extreme weather changing and floods. Right here in the Lowcountry, we have some fascinating indicators that are catching the attention of locals. As our waters are warming, more and more manatees are making their way into our tidal creeks and rivers. Roseate Spoonbills, whose migration to our area once heralded the 60 Island Events April 2020

start of summer, are now taking up full-time residence. And this year, as early as February, loons have been sporting breeding plumage, usually not seen until much later in the spring. And of course, the increase in named storms, as well as the heavy rains and flooding impacting the Lowcountry, is hard to ignore. Once the conversation has started, it’s helpful to have a few suggestions as to how we, as individuals, can positively impact climate change. Simply put, we need to work at minimizing our contributions to the increase in carbon emissions. Statistics show that it is vital that we cut carbon emissions at least 45% by the end of this decade. What can we do? To start with, we can drive and fly less. Walking, biking, public transportation or carpooling are all more environmentally friendly choices. Planes contribute an enormous amount of CO2, so you might consider taking local vacations, hosting virtual meetings or taking the train. Lastly, cut back on the amount of animal products in your diet. You don’t need to be vegan to make a difference. By reducing your consumption of animal protein by half, you can cut your diet's carbon footprint by more than 40%. Climate change is happening here on Hilton Head Island, and it is already having an impact on our lives. For better or worse, our actions will influence the planet for the coming decades. he Mr. Rogers movie starring Tom Hanks, A Beautiful Day in the Neighborhood, is a fantastic model for playing and learning golf. Mr. Rogers teaches us to live life with rich relationships, caring for one another and helping each other. In one scene in the movie, during his TV show, he attempts to put a tent up by himself and fails. He turns the failure into a victory, asking for help and completing the task with someone else. Divide the burden and double the pleasure. That is what we do at Palmetto Dunes Golf Academy. We teach golf with simple techniques that prove to be extremely effective. This process allows relationships to be developed, and jokes to be enjoyed while playing golf. How can you make golf more social or engaging with others? Develop confidence by developing competence. Attend instructional classes and learn the skill of golf in simple ways. Many people attempt to teach themselves and get bogged down in mediocrity and frustration. Trust your coach. Work with nurturing coaches who can develop you into a player who is playful and relaxed on the golf course. Join forces. ing your social circle in strategic ways. Start a chain reaction. Invite someone to join you, and they will invite someone – and so on, and so on and so on. The Young Professionals Group uses golf for networking, professional development and, most importantly, fun. The Monday afternoon golf class, which is free and open to the public, is a place to meet people and observe others learning and overcoming the same challenges you experience. Hilton Head Island has a long and rich history of visitors. 1520s

Thousands of Years Ago Native Americans came to hunt and fish.

1663 Captain William Hilton sailed the British ship Adventure north from Barbados, scouting lands to grow sugar cane for the crown. Approaching the Island by way of Port Royal Sound, he encountered a sliver of land and called it “Hilton's Headland.”

1861-1865 The Civil War brought big changes to Hilton Head Island. At the onset of the conflict, the South erected Fort Walker to protect the port. When the fort fell, tens of thousands of Union troops, prisoners, missionaries, shopkeepers and enslaved men and women seeking asylum flooded the Island. Suddenly humming with activity, Hilton Head became instrumental in the North's blockade of nearby Southern ports. In 1863, the town of Mitchelville became the first self-governed town for freed men and women.

Late 1950s

Developer and environmentalist Charles E. Fraser began work on the Island’s first resort, which he called Sea Pines. Fraser is sometimes called the father of the modern resort, and his vision for the Island was progressive, even by modern standards. His determination that no building be “higher than the tallest tree,” as well as his rejection of flashy neon signs, became central to the Island's distinctive character. 66 Island Events April 2020

17th, 18th & 19th Centuries For many years, few permanent residents made their home on Hilton Head Island. Though the humid, subtropical climate was ideal for growing agricultural crops like cotton and rice, fear of disease and isolation kept antebellum plantation owners on the mainland. Africans worked the plantations, and their unique blend of African and European traditions gave birth to the Gullah culture, which survives even today.

Post Civil War - 1956 After the Civil War, the Island's population dropped to around 3,000, and by 1940, it had fallen to just over 1,000. Electricity finally came to the Island in 1950 and, six years later, Hilton Head’s very first bridge to the mainland made the area significantly more accessible.

Today Fraser's legacy lives on in Hilton Head Island’s balance of commerce with green spaces, golf courses with wild places and thoroughfares with biking trails.
