The Toast of the Coast Why Sauvignon Blanc and Seafood Make a Perfect Pair

By Georgene Mortimer, Island Winery

S

auvignon Blanc is a versatile, dry white wine that complements many seafood dishes. The flavors of this green-skinned grape variety can range from bright citrus to tropical fruit, and also feature herbal notes, which come from aromatic compounds called pyrazines. The ripeness of the grape when the wine is made dictates the flavor and intensity of the fruit and herbal flavors, thereby defining the taste. Since climate dictates ripeness, Sauvignon Blanc can be divided into two categories: cool climate and warm climate. Ironically, warm-climate Sauvignon Blanc pairs best with cold seafood dishes, and cool-climate Sauvignon Blanc pairs best with warm dishes! Cooler climates bring out bright citrus fruit and herbal flavors. Excellent cool-climate selections of Sauvignon Blanc come from Oregon, New Zealand and France, with wines from Oregon and New Zealand having a bit more citrus flavor than the French versions. Paired with local shrimp, crabs or oysters steamed and served with butter, these wines will act like a spritz of lemon between bites. Pouilly-Fumé and Sancerre are two of the most popular French Sauvignon Blanc wines. They have more herbal flavors and muted fruit flavors, which make an excellent companion to pan-seared or nutcrusted white fish such as grouper. Warmer climates bring out fruit flavors, from peach to tropical fruit, and tame the herbal notes. Still crisp and refreshing, these flavors provide the perfect partner for chilled seafood dishes, especially during the summer heat. California Sauvignon Blanc, notably from the Sonoma 14 Island Events August 2020

Valley, pairs perfectly at the raw bar with steamed and chilled local shrimp or crab, because the flavors won’t overpower the subtle sweetness of these dishes. Argentinian and Chilean versions pair well with creamy seafood salad, tuna, shrimp or crab. Australian Sauvignon Blanc has all of the flavors of a high-end cold Japanese Sake, without the added price, which makes it the perfect mate for Sashimi or other cold Asian seafood dishes. Just in case you aren’t convinced, I’ll leave you with one final reason to get behind Sauvignon Blanc. While all alcoholic beverages contain carbs, dry wines can be enjoyed in moderation, and many classic seafood and wine pairings can be achieved low-carb style! Skip the breaded and fried selections, and pair this dry wine with a clean, fresh dish: the simpler the preparation, the more you can savor the subtle flavors in both the seafood and the wine. Fortunately, there is a mind-boggling variety of Sauvignon Blancs to choose from! So, whether you prepare meals yourself, are looking to wind down with take-out, or are longing to try one of Hilton Head’s famous restaurants, you can enjoy the flavors of the Island paired with the perfect Sauvignon Blanc, guilt-free. Cheers! The perfect bottle of hand-crafted artisan wine awaits at Island Winery on Cardinal Road. Wine by the glass, cheese platters and tastings are available MondaySaturday from 12:30-5:30 p.m. and Sunday from 12-4 p.m. (843) 842-3141 or www.islandwinery.com. hiltonhead.com

Hilton Head O F N I R Island INSIDE NEVER feed the alligators

Death, serious injury and jail time are just a few of the reasons we don't feed the alligators. Alligators become aggressive when they think food is coming. Feeding an alligator once from a distance can ruin it for someone else.

Offshore shark fishing ONLY

Of course we don't want to attract sharks to swimming areas. The law prohibits baiting or fishing for shark from the beach and 400 yards or fewer from any shore. There is also no fishing in swimming areas or from the beaches anytime during daylight hours between April and September.

DON’T mess with the natives

The law protects beach-dwelling sea creatures. Hurting, bothering or even picking up the live ones could result in a fine of $500. This includes sand dollars, conch shells and especially turtles!

Speaking of sea turtles, here's what you need to know: NEVER INTERFERE with a sea turtle

The endangered loggerhead turtles lay their eggs in nests on HHI's beaches. It's important that tourists and locals alike do their best to keep their impact minimal. Don't get close to them, shine lights on them, touch them or their eggs, feed them or get anywhere near their nests. You could face up to a $15,000 fine and even jail time!

NO LIGHTS on or near the beach

Nighttime on the beach is a crucial time for baby turtles and any lights that can be seen from the beach can be fatal to these little guys. When they hatch, they must head directly to the ocean or die. Artificial lights (even flashlights or the flash from a camera!) confuse them, and can cause them to head in the opposite direction. Nesting season is between May and the end of October. If any of your house lights can be seen from the beach, they need to be off or invisible from the beach by 10 p.m. during this time. 18 Island Events August 2020

If you see something that looks amiss, CALL THE EXPERTS! If a sea turtle is injured or dead, or you see a nest that has clearly been tampered with or someone is actively bothering with a nest or a turtle, call the South Carolina Department of Natural Resources at (800) 922-5431.

LEAVE the beach the way you found it

So your sandcastle is your masterpiece. Understood. But this is literally life or death for these turtles. An obstacle on the beach can cause a mama sea turtle to go back to the ocean instead of laying her eggs. Anything left on the beach that doesn't belong there can cause problems for both mama and baby turtles, so grab every last piece of your gear and trash and fill and smooth any holes you've made. hiltonhead.com

Alcohol:

Drinking/possession of alcohol on Hilton Head's public beaches is illegal and could result in a fine of up to $500. Liquor stores are not open on Sundays in South Carolina, though you can buy wine and beer in some gas stations and supermarkets.

Roundabouts:

You might as well learn to love South Carolina’s roundabouts. They’re everywhere! There are just a few rules to follow in the two-lane roundabout: • The drivers already in the roundabout have the right of way. • Always yield to them before entering the roundabout. • A roundabout is like any other flowing traffic—don’t stop in the middle. • As annoying as it can be to get behind a big slow vehicle, it’s even worse to be stuck beside it in a roundabout. Just wait. • Like with intersections, don’t change lanes while in the roundabout.

Beaches:

There are a few rules we all need to keep in mind to ensure a safe experience for everyone who comes to Hilton Head. It is therefore very important to remember that there is: • No sleeping on the beach between midnight and 6 a.m. • No driving on the beach • No horses on the beach • No fires on the beach • No fireworks on the beach (you need a permit to set off fireworks anywhere on Hilton Head, and an offense will result in a misdemeanor and a $500 fine) • No pets on the beach between 10 a.m.5 p.m. the Friday before Memorial Day through Labor Day

Horoscope August 2020 ARIES Look beyond this moment. Set your sights on long-term goals. Spend more time with the family this month. Work on your emotional intelligence, but rely on your common sense when faced with difficult decisions.

LIBRA Are you feeling down? Shake off this funk by exposing yourself to new sites and sounds. Stay open to new opportunities from the most unlikely of places, and rely on family for support during the highs and lows this month.

TAURUS Prepare to spend less time out with friends and more time facing problems at home. You may experience some significant disappointment. Procrastination is not your friend when it comes to projects at work. Instead, tackle projects with determination and an open mind.

SCORPIO Think carefully before you fall in love. A change of heart could break the heart of your newfound partner. Do not close your mind or fear the unfamiliar. Your greatest delight may be impeded by your skepticism.

GEMINI You are in the money this month, but do not share this personal information with your coworkers. There are some you simply cannot trust. Family members will need some extra love, which may require some personal sacrifices on your part.

SAGITTARIUS This month will require some significant brain power. Think ahead, and review all legal documents before your trip. Your ability to think outside the box will help you in the workplace, but you still have a lesson to learn at home.

CANCER Expect the unexpected. Indulge your wild hair, and accept some unusual invitations. Celebrate birthdays and anniversaries this month with uninhibited giving.

CAPRICORN Do not let your social calendar distract from your work obligations. Others are counting on you. An oversight now could create a tremendous problem in the weeks to come. Remain positive. A pleasant surprise will soften the blow of a disappointment.

LEO Your hard work has not gone unnoticed. This month you will reap the rewards in the office, but mind your temper when it comes to a troublesome coworker. Keep your relationship with a loved one honest by sharing your true feelings.

AQUARIUS Remember that you only have two hands, and admit that you have taken on too much responsibility at work. Your coworkers can help if you are willing to hand over some of your excess duties. Do not turn down the chance to help a friend in need later this month.

VIRGO Remember, you do not have control over everything, especially the decisions of a resistant loved one. Take a hard look at your workload, and determine if your need for control has left you overloaded. A quiet weekend is long overdue.

PISCES A get-together with old friends will be the highlight of the month and serve as a reminder that your devotion to your adult responsibilities have made you dull. You will find inspiration in a young child to enjoy life again. Prepare for a surprise.

nated for the Alder Lane, Coligny, Driessen, Folly Field and Islanders Beach Parks. The boundaries will be clearly marked on the beach and in the water. Lifeguards are stationed at these designated areas for assistance and beach information.

Beach Marker Signs:

Hilton Head’s beaches are marked near the dune line with signs to let emergency responders know where assistance is needed. They are also useful as a reference point if you or your group should become lost.

Beach Safety Tips: • Apply and reapply plenty of sunscreen even on cloudy days. • Wear sunglasses to prevent damage from the sun. • Stay hydrated and drink plenty of water. • Be aware of the rules and regulations of the beach. Signs are posted near most beach accesses. • Don’t leave your kids unsupervised even in guarded areas. • Note the location of the nearest lifeguard and report any hazardous conditions to him or her. • Know the name of the beach or hotel/ condo and the beach marker number where you are staying if you should need assistance. • There are often jellyfish and stingrays, as well as other sea life in and out of the water, which may sting or cut a person. In any situation where first aid is needed, find a lifeguard or seek further medical attention. • Call or wave for help if you are in trouble. hiltonhead.com

Water Safety Tips: • Don’t enter the water if you can’t swim. • Swim near a lifeguard. • Ask the lifeguard about any dangers in the water or on the beach, especially if he or she is flying a yellow caution flag. • Be aware of direction and strength of longshore currents. These currents can take you up and down the beach quickly and cause you or your kids to get lost. • Don’t let your kids swim unsupervised even in guarded areas. • Don’t swim alone. Use the buddy system so that someone always knows where you are so they can get help if needed. • Don’t overestimate your swimming ability. Stay in chest deep or less water to insure you don’t get stuck in water over your head. • Don’t rely on flotation devices. • Swim parallel to shore if you want to swim long distances. • Don’t swim against the current. Swim across the current to escape the pull. • Always swim sober. • Don’t dive into unknown water or shallow breaking waves. Always go feet first.

Beach Prohibitions: The following are prohibited on all beaches: – Possession or consumption of alcohol – Glass (bottles, containers, etc.) – Littering – Indecent exposure or nudity – Disorderly conduct – Disturbing the peace – Unauthorized vehicles – Fires and fireworks – Shark fishing – Horseback riding or motorized driving – Removal, harming, or harassment of any hiltonhead.com

HILTON HEAD HISTORY

Hilton Head Island has a long and rich history of visitors. Thousands of Years Ago Native Americans came to hunt and fish.

1663 Captain William Hilton sailed the British ship Adventure north from Barbados, scouting lands to grow sugar cane for the crown. Approaching the island by way of Port Royal Sound, he encountered a sliver of land and called it “Hilton’s Headland.”

1861-1865 The Civil War brought big changes to Hilton Head Island. At the onset of the conflict, the South erected Fort Walker to protect the port. When the fort fell, tens of thousands of Union troops, prisoners, missionaries, shopkeepers and enslaved men and women seeking asylum flooded the Island. Suddenly humming with activity, Hilton Head became instrumental in the North’s blockade of nearby Southern ports. In 1863, the town of Mitchelville became the first self-governed town for freed men and women.

Late 1950s

Developer and environmentalist Charles E. Fraser began work on the Island’s first resort, which he called Sea Pines. Fraser is sometimes called the father of the modern resort, and his vision for the Island was progressive, even by modern standards. His determination that no building be “higher than the tallest tree,” as well as his rejection of flashy neon signs, became central to the Island’s distinctive character. 38 Island Events August 2020

1520s Conquistadors explored the area.

17th, 18th & 19th Centuries For many years, few permanent residents made their home on Hilton Head Island. Though the humid, subtropical climate was ideal for growing agricultural crops like cotton and rice, fear of disease and isolation kept antebellum plantation owners on the mainland. Africans worked the plantations, and their unique blend of African and European traditions gave birth to the Gullah culture, which survives even today.

Post Civil War - 1956 After the Civil War, the Island's population dropped to around 3,000, and by 1940, it had fallen to just over 1,000. Electricity finally came to the Island in 1950 and, six years later, Hilton Head’s very first bridge to the mainland made the area significantly more accessible.

Today

Fraser’s legacy lives on in Hilton Head Island’s balance of commerce with green spaces, golf courses with wild places and thoroughfares with biking trails. Recently voted the Best Island in the U.S. by Travel and Leisure readers for the third time, this family-friendly sea island seamlessly combines luxury, adventure and charm – all in one unforgettable destination. hiltonhead.com

RECREATIONAL PATHWAYS GUIDE The Town of Hilton Head Island provides nearly 60 miles of public pathways and nature trails for the enjoyment of pedestrians and cyclists.

RULES FOR THE ROAD: • Please obey all traffic signals and pathway markings. Stop signs must be obeyed for safety. Bicycles are vehicles and must obey SC traffic laws. • Travel the pathways at speeds that allow for the safety of pedestrians and other users. • Never ride within the roadway against traffic. State law requires bicycles to drive like all other vehicles. • Please do not ride on roads when a pathway is available. • Please ride single file and keep a safe distance from other bicyclists. • WATCH OUT FOR MOTORISTS! Motorists must yield to pedestrians and bicyclists within marked crossings, but they may not see you. • Please yield to pedestrians. When resting or stopped, please move off the pathway.

• Most sections of the pathways are not illuminated. If you must bike at night, please wear light-colored clothing or carry a flashlight. Bicycles must have a red rear reflector and a headlight when biking at night. • When approaching slower pathway users from behind, please sound your warning device, or call out, “Passing on your left.” Always pass on the left. • Bicyclists should always wear a helmet, especially children 12 and under. • Make eye contact and use hand signals. Assume other bicyclists and motorists don’t see you. Hand signals tell motorists and other path users what you intend to do and will ensure everyone’s safe enjoyment of the paths. Be courteous, alert and predictable.

Barred Owls By Kathleen McMenamin Vicars, Master Naturalist

158 tagged owls, each of which didn’t move more than six miles during their lives. During the day, barred owls most commonly roost quietly in trees. However, they have been known to call during the day and sometimes even hunt small mammals. They are mainly nocturnal, using the nights to obtain the majority of their food. Because of their great eyesight, barred owls are able to catch all kinds of small mammals. The owls will perch on a limb, spot the prey, then swoop down and catch it with their sharp talons. https://wikimedia.org : Photo by Mwanner

O

ne of the most common owl calls that people know is the “who cooks for you” call, and it’s a call commonly heard year-round on Hilton Head Island. Be sure to listen for it in areas with large live oaks and old wood forests. The barred owl, Strix varia, is a large stocky owl with a rounded head and no ear tufts. Their feathers are most commonly striped brown and white, giving them great camouflage in thick forests. They have dark brown to black soulful eyes and they can grow to be 19 inches tall and have a 43-inch wingspan. The oldest recorded barred owl was 24 years old. Their fossils have been found in Florida, Tennessee and Ontario, Canada, dating back to 11,000 years ago. The common call of the barred owl is a simple “hoot” and “who cooks for you.” These owls are primarily an East Coast raptor. Since the 20th century they have been migrating west, and can now be found in the Pacific Northwest and California. They prefer to live in large, mature forests with both evergreens and deciduous trees. The larger and older trees provide ample crevices for them to roost and nest. Barred owls do not normally migrate. A study was done on

56 Island Events August 2020

Barred owls have a very long nesting season. Courtship begins in February, with nesting starting in March and continuing all the way through August. This long nesting season allows a pair to lay a second nest, in case the first nest was lost. Males and females will pair for life, usually starting when they are at least a year old. They will then nest in cavities or take over old squirrel or crow nests. These owls do little to build or maintain their nests, possibly adding some moss or their own feathers at the most. Females may lay up to five eggs and are the primary incubator, sitting on the eggs for up to 33 days. The male will continue to bring food to its partner during the incubation. The young will leave the nest after six weeks. Barred owls fall victim to humans, whether it be through hunting, over-forestation or road kill. But the only natural enemy to barred owls are great horned owls. Great horned owls have been known to eat eggs, young and even adult owls. If a great horned owl moves close to a barred owl’s territory, the barred will abandon it. Fire suppression and tree planting throughout the Central United States is the main reason for the spread of the barred owl. They have a high population and are not considered to be a species of concern. However, their movement towards the Pacific has put a lot of pressure on their endangered cousin, the spotted owl.

t was another glorious day of fishing at the nearshore reef. My companions and I were enjoying ourselves, catching bluefish, summer trout and blackfish on light tackle.

“Whoa!” cried the youngest of us, and he shot up in his seat. Just a second later, the small Fin Nor spinning reel started screaming, the line disappearing fast off the spool. “Anchor up!” I yelled before I’d even had a chance to think about it. In just a few more seconds, the couple hundred yards of braid were almost gone and we were giving chase, the angler in the bow struggling to maintain a standing position as we leapt across the waves, his lanky arms frantically reeling in any line he could retrieve.

Hours passed. The seesaw tussle continued and there was little for the rest of us to do but behold the angler’s struggle with this enormous creature. When he was finally able to maneuver the fish nearer the surface, we were able to ID the culprit, a powerful predator to be sure: the Jack Crevalle. True to form, he was nowhere near giving up. The Jack Crevalle is a fairly common fish in our waters, and they are usually plentiful in summer. These big bruisers, typically between 20 and 40 lbs., are often seen in big schools cruising the surface. They are fast-moving and, frankly, a little spooky, so one must be stealthy when sight fishing. Either live bait or artificials will get the job done, but they must be placed in front of the school, far enough out to not spook the fish, as the school often swims as erratically as it does fast. Personally, I highly rec58 Island Events August 2020

“We need a plan,” I said. Within a few moments, we had it. We would work the fish back to the surface, at which point we would use a billfish tactic, charge him using the boat and grab the leader. Our first two tries fell flat, but served as good practice runs. The third time was indeed the charm, and we boated a 37-lb. Jack Crevalle. After snapping a few pics, we released the fatigued fellow. After a fight like that one, it’s hard to say who was more relieved — the newly freed Jack or the exhausted angler! Capt. The Legendary Live Oak

A Closer Look at the Stalwart Sentinels of the South By Anneliza Itkor, Outside Hilton Head

T

here are few symbols of the Lowcountry more iconic than the centuries old, majestic Live Oak dripping with Spanish moss. Here on Hilton Head Island, we have many such oaks. From the Legacy Oaks of Sea Pines to the Tailbird Oak on Hilton Head Plantation, these amazing trees boast some fascinating facts worth learning about, and some intriguing stories you don’t want to miss. The name Live Oak comes from the seemingly evergreen leaves of these trees. In reality, the Live Oak, or Quercus virginiana (KWERkus vir-jin-ee-AN-uh), is semideciduous. In late February and early March, its new leaves grow in, pushing the old (but still green!) leaves out, much like a set of permanent teeth pushes out baby teeth. This process makes it seem as though Live Oaks are always green. It is only the litter of dead leaves beneath the enormous canopy that gives them away. Live Oak trees are extremely hearty, and do well in our coastal environment, largely because of their ability to tolerate saltwater. Our 300to 450-year-old oaks have weathered their share of hurricanes, storm surges and the occasional inundation of their roots in saltwater, sometimes for several days! Still, these bastions provide a buffer against extreme weather, plus shelter and shade, carbon capture and storage and uniquely sweet acorns beloved by the Lowcountry’s many birds and mammals, like the northern bobwhite, wood ducks, sapsuckers, squirrels and white-tailed deer. If Hilton Head’s Live Oaks could talk, they would tell amazing stories! Harbour Town’s “Liberty Oak” is where Charles Fraser, conservationist and visionary developer of Hilton Head, was laid to rest. This 360-year-old giant also provides the spot where the legendary singer and songwriter, Greg Russell, has played and sung for visitors for over 30 years. The Tailbird Oak, which stands just inside the back gate of Hilton Head Plantation, is

60 Island Events August 2020

another ancient, massive tree that’s tied up in the lore of the Island. In October of 1781, at the height of the Revolutionary War, a Royal Militia on Daufuskie Island was instructed to burn the homes of known patriots between Savannah and Beaufort. When the militia arrived at Tailbird Plantation, Lt. John Tailbird’s pregnant wife, Mary Ann, faced off with the officer in charge — who happened to be her brother-in-law. He gave her time to move household goods out of the plantation house and place them beneath the protective canopy of the enormous Live Oak 100 yards or so from the house. The Tailbird Oak would shelter the people and the property, but the house would burn to the ground. As iconic as the Live Oak is, it’s hard to imagine its silhouette minus the famed Spanish moss that adorns its craggy branches. Neither Spanish nor moss, this air plant is actually a bromeliad, and is related to the pineapple! Soft, fluffy and abundant, it seemed the obvious choice for stuffing the mattresses of early settlers. Unfortunately, Spanish moss had been homesteaded long before — by the chigger. As the moss within the mattresses died off, the chiggers abandoned ship, and ran for the cover of the nearest living creature, in this case, the bodies of the poor, unsuspecting settlers. If you ever wondered where the phrase “Don’t let the bed bugs bite!” was born, well now you know! Hankering to learn more about our legendary Live Oaks? GOLF for EVERYONE!

A Universal Game for All Kinds of Players By Doug Weaver, Director of Instruction, Palmetto Dunes Golf Academy “The ball waits on me,” Daniel answers me after a long moment in thought. Maya pipes up then, too: “I like golf because no one is yelling at me to run faster and hustle more,” she says, nodding to herself. Only ten and six, these two had already tapped into a fundamental truth about golf: it is the golfer that sets the pace of the game. From behind us, we hear a high-pitched squeal of delight. “I did it!” cried three-year-old Ariel, hands waving in the air. Earlier, she had proven that she could consistently putt the ball into the hole from five feet, and now she had sunk the shot with her eyes closed, all while singing her favorite songs. We take a moment to acknowledge her victory and progress, and cheer along with her. Later that morning, 80-year-old Richard is feeling rejuvenated by his golf game, exhilarated by the ball rocketing off the clubface and flying straight toward the target. He swings again — it is very well-executed — and his face registers surprise that his body remembers the game so well. I chuckle to myself. “Nice shot!” I say. “I should bring my grandkids here,” he says to me. “They would love it.” It’s an amazing sight to watch families discover golf together. Mom and Dad get more playing time when the whole family 62 Island Events August 2020

comes along. And here on the course, dreams really do come true when the kids get to sit in Mom or Dad’s lap and actually drive the golf cart! I often find whole families laughing together at both their successes and their failures out on the green. Golf is very much considered a social game, and there’s no doubt it serves as an incredibly effective bonding ritual. But it’s not just for those looking to socialize with business partners or spend time with their families. This is also a game that can be played in complete solitude, and yet still presents a great challenge to the lone player. The introvert can enjoy time to themselves, the excitement of the game and the natural medicine of nature. Over 40 people from ages 3 to 95 will take golf instruction today at the Palmetto Dunes Golf Academy. We invite you to join us out in the fresh air beneath big skies. Take a break from whatever is ailing you, and be refreshed and energized by some light activity and personal achievement. Don’t wait to discover (or rediscover!) this wonderful, universal game.
