Choosing the Perfect

CABERNET SAUVIGNON From price to pairing, here’s what you need to know to make the ideal selection. By Georgene Mortimer, Island Winery Cabernet Sauvignon is one of the most widely available wines on the market. It’s produced in almost every wine region, and the price ranges from $5 to over $5,000 per bottle. So, how do you choose the perfect bottle at the right price for the right occasion? Here are a few handy tips to keep in mind to select the ideal Cabernet Sauvignon. How much should you pay? A high-quality Cabernet Sauvignon is expensive to make. It needs good land, expert vineyard management and strong winemaking skills. It also requires lengthy production time and high-quality oak barrels for aging. Therefore, it can be challenging to find a high-quality Cabernet Sauvignon under $25. This is not to say that all $25 bottles are good or that all $75 bottles are better. Some wines can fetch high prices just because the grapes come from a renowned wine region, with little attention paid toward the care of the grapes and the crafting of the wine. If you aren’t willing to pay that much, but still want to enjoy a quality wine, I would recommend purchasing a Cabernet Sauvignon blended with a Merlot, Cabernet Franc or Zinfandel, priced just under $20. What about age? Most bottles of wine selling for under $40 are ready to drink when they’re released, usually within a few years after they are made. So, there is rarely a need to cellarage the wine, once you bring it home. Ironically, the bitter taste of a young Cabernet 14 Island Events December 2019

is the attribute that allows it to blossom into a high-quality wine. The thick skin of Cabernet Sauvignon grapes contains high levels of bitter tannins. Carefully aging the wine in an oak barrel transforms these tannins into compounds that create the “secondary flavors” typically associated with a good Cabernet Sauvignon, such as chocolate, vanilla, leather and tobacco. Most Cabernets are oak-aged for at least 18 months and can be bottle-aged for several years before they are released. What to drink it with? Cabernet Sauvignon is a high-alcohol, full-bodied, dark red wine. Even in its meekest expression, it is bold and assertive. It can overwhelm delicate dishes like chicken and fish, and tends to clash with spice and acid. That’s why Italian red sauce dishes and spicy Asian and Mexican dishes can spar with its flavors. Cabernet finds its perfect mate in seared red meat that is lightly spiced. Just check out the wine list at any steakhouse to see that Cabernet Sauvignon is the most represented wine on the list. The “secondary flavors” in Cabernet match well with the flavors that come off the outside of well-seared meat. That salty, peppery and caramelized crust of seared meat has many of the same deep flavors Cabernet offers on the nose and palate. RECREATIONAL PATHWAYS GUIDE The Town of Hilton Head Island provides nearly 60 miles of public path­ways and nature trails for the enjoy­ment of pedes­trians and cyclists.

RULES FOR THE ROAD: • Please obey all traffic signals and pathway markings. Stop signs must be obeyed for safety. Bicycles are vehicles and must obey SC traffic laws. • Travel the pathways at speeds that allow for the safety of pedes­­­trians and other users. • Never ride within the roadway against traffic. State law requires bicycles to drive like all other vehicles. • Please do not ride on roads when a pathway is available. • Please ride single file and keep a safe distance from other bicyclists. • WATCH OUT FOR MOTORISTS! Motorists must yield to pedestrians and bicyclists within marked crossings, but they may not see you. • Please yield to pedestrians. When resting or stopped, please move off the pathway.

• Most sections of the pathways are not illuminated. If you must bike at night, please wear light-colored clothing or carry a flash­light. Bicycles must have a red rear reflector and a headlight when biking at night. • When approaching slower pathway users from behind, please sound your warning device, or call out, “Passing on your left.” Always pass on the left. • Bicyclists should always wear a helmet, especially children 12 and under. • Make eye contact and use hand signals. Assume other bicyclists and motorists don’t see you. Hand signals tell motorists and other path users what you intend to do and will ensure everyone’s safe enjoyment of the paths. Be courteous, alert and predictable.

wings in the dim predawn light, as ducks circled decoys and answered the duck call with eagerness, filled his mind as his hands stung from the cold. He flipped another trout into the boat. “Too cold?” he asked again. “Yes!” they replied in unison, as they shivered. Again, his mind took him to cold memories, this time to southern Florida when a blustery northeast wind clashed with the northbound Gulfstream waters, creating six-foot waves, complete with whitecaps. The hull of the boat bashed against the waves as strong gusts of Arctic air turned his face, only to see hordes of hungry sailfish tailing down sea.

One cold, early-morning fishing trip stirs powerful memories. By Miles Altman, Bayrunner Fishing Charters The cold north breeze caressed the tips of the spartina marsh grass as the glow that was the promise of sunrise appeared on the horizon. “It’s too cold,” complained the two shivering youth, a son and nephew. The night before, they had been excited about the promise of an early Christmas morning present: a fishing trip. The tide nipped at the bottom of the spartina and covered the oyster bed as the man cast a soft plastic lure across the creek. Slowly retrieving the lure with an occasional twitch of the rod, he had barely hit the midpoint of the creek when a jarring strike produced a spirited battle on the light spinning rod. As he flipped the trout in the boat, he looked at the pair, with their hands under their arms. “Too cold?” he asked. He laughed as they complained about how they could see their breath. As he hooked another fish, the sting of the cold flooded his mind with memories. Memories of hundreds of sunrises in the duck blind, all glorious and spectacular in their own way, painted with a master’s brush. Memories of multiple hookups of the acrobatic billfish, sometimes four at a time, with waves crashing over the transom, brought a smile to his face. Yes, too cold, he thought, as the memories warmed him and another crashing strike from a trout bent his rod double. “Let’s go home!” the young ones pleaded as he boated the trout. This fish may have suffered a glancing blow from a dolphin in its younger days, as its backbone was deformed near the tail. Maybe it was born that way, the man reflected. Maybe that fish is as broken as he was. Maybe it deserved mercy and saving as he did. A tear formed in his eye as he looked upward, face into the rising sun. He whispered, “Thank you. Happy birthday,” as he released the trout. “Let’s go home,” he said to the youth. Merry Christmas to all and God bless. Capt. Hilton Head Island abounds with fascinating tales about history, nature and more. By Anneliza Itkor, Outside Hilton Head

Live in the Lowcountry long enough and you will, over time, hear some wonderful tales surrounding our history and environment. Ask any local whether the stories are fact or fiction, and you’ll most likely be answered with a wink and a smile. Some of these stories have been told for so many generations that the fiction has become fact. This holiday season, treat visiting family and friends to some entertaining local lore. Spanish Moss, clinging to the craggy branches of live oaks and blowing in the breeze, seems to be the very definition of the South. Neither Spanish nor a moss, this epiphyte (air plant) draws all the nutrition and water it needs from the air, and is in no way parasitic or harmful to the trees over which it is draped. Its name can be traced back to early settlers who called it Spanish Moss to poke fun at the Spanish Conquistadors and their scraggly gray beards. The most intriguing story surrounding Spanish Moss links the plant to the very first automobile recall. As the story goes, Henry Ford had the brilliant idea of stuffing the seats of the Model T with soft, fluffy, inexpensive Spanish Moss. Unfortunately, he didn’t take into account that, while the plant itself is not a parasite, it is home to a tiny parasite called a red bug, also known as the chigger. As the Spanish Moss in the seats dried out, these parasites began to relocate into the bodies of the drivers and passengers of the vehicles, forcing a recall to replace the ill-conceived stuffing. Most everyone who lives on Hilton Head Island is familiar with our odiferous pluff mud. However, they may not be familiar with how it came to earn its unusual name. 52 Island Events December 2019

During the plantation era on the Island, it was discovered that when the organically rich mud was dried and ground, it made an excellent soil supplement for farming. At that time, it was dubbed “plough mud.” Enter into the equation the local Gullah community and its beautiful onomatopoetic language. Local Gullah residents took the term “plough mud” and transitioned it into “pluff mud,” because that is the noise it makes when one steps into it. And finally, one of the Island’s favorite attractions is the whimsical statue of the dapper man walking with an alligator, located at Compass Rose Park. There are a couple of fun stories to be told here. First of all, the name of the park, Compass Rose, is a nod to the importance of the nautical community that lives and works here in the Lowcountry. A tool used for accurately interpreting nautical charts, the compass rose helps boat captains differentiate between true north and magnetic north. The statue itself replicates the 1962 photograph snapped of Sea Pines developer Charles Fraser walking alongside the legendary gator, Albert. This photo, published in the Saturday Evening Post, is said to have put Hilton Head Island on the map, changing the area forever. Want to hear more charming tales? Island Beaches Public Beach Access: The Town of Hilton Head Island provides nine, public beach accesses: • Alder Lane Beach Access, off South Forest Beach Dr. • Coligny Beach Park, off Coligny Circle • Driessen Beach Park, end of Bradley Beach Rd. • Chaplin Community Park, off Wm. Hilton Pkwy. • Fish Haul Park & Mitchelville Beach Park, end of Beach City Rd. • Burkes Beach Access, end of Burkes Beach Rd. • Folly Field Beach Park and Islanders Beach Park, both off Folly Field Rd.

Parking & Facilities:

There are 23 metered spaces at Alder Lane; 54 metered spaces at Folly Field and 13 metered spaces at Burkes Beach Road. The parking fee is a QUARTER for each 15 minutes. Additionally, there are 207 spaces at Driessen Beach Park for long-term parking. The fee is a QUARTER for each 30 minutes during the week. Parking spaces at Islanders Beach Park are ALWAYS reserved for annual beach passes. Parking at Driessen Beach Park for annual beach passes is reserved from 8 a.m. to 3 p.m. Parking is FREE at Fish Haul Park, Mitchelville Beach Park and Coligny Beach Park. Handicap parking is available at no fee at all parks. Restrooms, changing areas, sand showers and vending machines are available.

nated for the Alder Lane, Coligny, Driessen, Folly Field and Islanders Beach Parks. The boundaries will be clearly marked on the beach and in the water. Lifeguards are stationed at these designated areas for assistance and beach information.

Beach Marker Signs:

Hilton Head’s beaches are marked near the dune line with signs to let emergency responders know where assistance is needed. They are also useful as a reference point if you or your group should become lost.

Beach Safety Tips: • Apply and reapply plenty of sunscreen even on cloudy days. • Wear sunglasses to prevent damage from the sun. • Stay hydrated and drink plenty of water. • Be aware of the rules and regulations of the beach. Signs are posted near most beach accesses. • Don’t leave your kids unsuper­vised even in guarded areas. • Note the location of the nearest lifeguard and report any hazardous conditions to him or her. • Know the name of the beach or hotel/ condo and the beach marker number where you are staying if you should need assistance. • There are often jellyfish and stingrays, as well as other sea life in and out of the water, which may sting or cut a person. In any situation where first aid is needed, find a lifeguard or seek further medical attention. • Call or wave for help if you are in trouble.

Water Safety Tips: • Don’t enter the water if you can’t swim. • Swim near a lifeguard. • Ask the lifeguard about any dangers in the water or on the beach, especially if he or she is flying a yellow caution flag. • Be aware of direction and strength of longshore currents. These currents can take you up and down the beach quickly and cause you or your kids to get lost. • Don’t let your kids swim unsu­pervised even in guarded areas. • Don’t swim alone. Use the buddy system so that someone always knows where you are so they can get help if needed. • Don’t overestimate your swim­ming ability. Stay in chest deep or less water to insure you don’t get stuck in water over your head. • Don’t rely on flotation devices. • Swim parallel to shore if you want to swim long distances. • Don’t swim against the current. Swim across the current to escape the pull. • Always swim sober. • Don’t dive into unknown water or shallow breaking waves. Always go feet first.

Beach Prohibitions: The following are prohibited on all beaches: – Possession or consumption of alcohol – Glass (bottles, containers, etc.) – Littering – Indecent exposure or nudity – Disorderly conduct – Disturbing the peace – Unauthorized vehicles – Fires and fireworks – Shark fishing – Horseback riding or motorized driving – Removal, harming, or harassment of any hiltonhead.com

Animals: ANIMALS are NOT permitted between 10 a.m. and 5 p.m. from the Friday before Memorial Day through Labor Day. Animals MUST be on a leash between 10 a.m. and 5 p.m., April 1 through the Thursday before Memorial Day and the Tuesday after Labor Day through September 30. Animals must be on leash or under positive voice control at all other times. Persons in control of animals on the beach are required to remove and properly dispose of excrement.
