the Bubbly

M

any think that all bubbly wines are Champagne, but they are not. All bubbly wines are sparkling wines, but not all sparkling wines are Champagne. Champagne is delicious but it can be very pricy and there are other tasty bubbly alternatives that are not quite so pricy. Let’s explore! First, it is important to learn where the bubbles come from: sparkling wine is made by taking the simple formula for fermentation (sugar plus yeast converts to alcohol and carbon dioxide), and not allowing the resulting gas to escape. This secondary fermentation occurs in a closed or sealed environment, so the carbon dioxide returns into the wine, only to be released in the form of tiny bubbles after opening. However, some less expensive sparkling wines are just regular wines that do not undergo a secondary fermentation process; they are just directly injected with carbon dioxide.

There are several reasons why genuine Champagne is so pricy. For one, laws require that it can only originate from the relatively small and world-famous Champagne region of France, creating high demand. Champagne can only be made with chardonnay, pinot noir and pinot meunier grape, and must go through a process called the Champenoise Traditional Method. This process has strict regulations that require the wine to undergo secondary fermentation in the bottle for at least 15 months. This means that the Champagne is kept in the bottle with the sediment that is formed, while the bottles are gradually turned and inverted to remove the sediments. This process is extremely tedious but it allows the wine to ferment under high pressure creating the fine, persistent and sharp bubbles that make Champagne famous. Allowing the wine to stay in contact with the yeast sediments also creates its distinct 14 Island Events January-February 2022

toasty, biscuity flavor. Since most Champagne is intensely dry with high acidity, it pairs wonderfully with shellfish, raw bar, pickled vegetables and crispy fried appetizers. But onto some more affordable alternatives: Prosecco is an Italian sparkling wine from the Veneto region in the northeastern part of Italy, produced from the prosecco or glera grape. It also undergoes a secondary fermentation to capture the carbon dioxide and produce bubbles, but with Prosecco it takes place in large stainless steel tanks with less pressure. Therefore Prosecco bubbles are lighter, frothy and spritzy with less persistence. It tends to have more fruit and flower aromas, which are a product of the grape, and is a very forgiving and food-friendly wine that pairs well with stuffed mushrooms, creamy sauces, almonds, seafood, fried fare and spicy Asian entrees. Cava is another delicious and less pricy sparkling alternative from Spain. Like Champagne, it is produced using the Champenoise Traditional Method, making it the most Champagne-like sparkling wine outside of France. But unlike Champagne, there is more leeway regarding the types of grapes that can be used and and the regions where it can be produced. Cava bubbles are similar to Champagne, but the flavor is fruitier and more aromatic. Most people assume sparkling wines are only for special occasions, but as you just learned they can be affordable and pair very well with foods. During my parents’ younger days, Spanish moss was used for stuffing mattresses and pillows. We fed our cows and horses the Spanish moss. It was also said to be good for treating high blood pressure. They allowed the moss to stay in their shoes until it was dry, then removed it and repeated the process. Folks somehow knew when the green Spanish moss had helped lower their blood pressure. I never understood how the Spanish moss helped, but it worked for island folks. It was their belief and nature’s way. For them it worked, and that was all that mattered. “Rice Coast” were brought to the Lowcountry to work in the rice and cotton fields. The landscape was hot, remote and teeming with mosquitos. Physically and culturally isolated, the workers were left to live, worship, speak and cook as they wished. They became known as the Gullah, and they created their own cuisine and language, holding tight to treasured West African skills and traditions.

Did You Know? Dr. Martin Luther King Jr. wrote his “I Have a Dream” speech among the Gullah on St. Helena Island, SC. The 1991 film Daughters of the Dust, about three generations of Gullah women, was the first feature directed by an African American woman to have a general U.S. theatrical release. Hilton Head Island’s Gullah community in Mitchelville passed the country’s first law requiring universal schooling. Pat Conroy’s novel, The Water is Wide, fictionalized the Gullah community on Daufuskie Island, SC.

here is something both familiar and exotic about the Lowcountry. For those looking to unlock its mysteries, understanding the Gullah culture in South Carolina may just be the key. In the late 1600s, rice was desired all over the world. Enslaved Africans from West Africa’s 16 Island Events January-February 2022

Gullah cuisine grew out of the resourcefulness of enslaved African women, who applied European and African cooking methods and flavors to locally available foods, including fish, shrimp, oysters, crabs and crops native to the Americas such as tomatoes, corn and squash. Peanuts, watermelon, yams, okra and collard greens were imported from Africa. Quintessential Gullah dishes include fried fish, stewed shrimp and hoppin’ john. In fact, many classic “Southern” dishes came straight from Gullah kitchens. An English-based hybrid, the Gullah language includes nearly 4,000 African words. Gullah is still in use today, especially in storytelling. Spoken, chanted or sung, Gullah stories are proudly passed from one generation to the next. The Gullah also craft beautiful coiled baskets handwoven from sweetgrass and palmetto fronds. Other Gullah traditions include the making of cast nets and the singing of lively spirituals, music that influenced American jazz, blues and gospel traditions. Today, America’s Gullah population is estimated at approximately 300,000. However, because up to 70 percent of enslaved Africans landed in the Lowcountry, many more African Americans have Gullah roots. The history of the Gullah people is one of adaptation, survival and community — and the story of the Lowcountry is incomplete without the Gullah experience. hiltonhead.com

HILTON HEAD HISTORY Hilton Head Island has a long and rich history of visitors. Captain William Hilton sailed the British ship Adventure north from Barbados, scouting lands to grow sugar cane for the crown. Approaching the Island by way of Port Royal Sound, he encountered a sliver of land and called it “Hilton’s Headland.” Native Americans came to hunt and fish.

For many years, few permanent residents made their home on Hilton Head Island. Though the humid, subtropical climate was ideal for growing agricultural crops like cotton and rice, fear of disease and isolation kept antebellum plantation owners on the mainland. Africans worked the plantations, and their unique blend of African and European traditions gave birth to the Gullah culture, which survives even today. hiltonhead.com

The Civil War brought big changes to Hilton Head Island. At the onset of the conflict, the South erected Fort Walker to protect the port. When the fort fell, tens of thousands of Union troops, prisoners, missionaries, shopkeepers and enslaved men and women seeking asylum flooded the Island. Suddenly humming with activity, Hilton Head became instrumental in the North’s blockade of nearby Southern ports. In 1863, the town of Mitchelville became the first self-governed town for freed men and women.

Developer and environmentalist Charles E. Fraser began work on the Island’s first resort, which he called Sea Pines. Fraser is sometimes called the father of the modern resort, and his vision for the Island was progressive, even by modern standards. His determination that no building be “higher than the tallest tree,” as well as his rejection of flashy neon signs, became central to the Island’s distinctive character.

After the Civil War, the Island’s population dropped to around 3,000, and by 1940, it had fallen to just over 1,000. Electricity finally came to the Island in 1950 and, six years later, Hilton Head’s very first bridge to the mainland made the area significantly more accessible. Fraser’s legacy lives on in Hilton Head Island’s balance of commerce with green spaces, golf courses with wild places and thoroughfares with biking trails. Haint Blue

Before bridges connected these isolated communities to the mainland, milk-paint formulas were often mixed on-site using local pigments and ingredients, including lime.

Symbolizing water, trust, tranquility, confidence, faith, truth and heaven, the color blue is recognized around the world as having mystical properties, including the ability to ward off insects, as well as evil spirits. From muted periwinkle to vivid turquoise, homes throughout the South boast shutters, exterior doors, trim, porch ceilings and more painted in various shades of blue.

Several sources suggest the lime — or perhaps indigo — acted as an insect repellent, rather than the color itself. As for ghosts, some argue they are unable to cross over water and others claim “heaven blue” is a deterrent. However, traditions and superstitions vary from island to island. Local Gullah storyteller Louise Miller Cohen, who also serves on the Gullah Geechee Cultural Heritage Corridor Commission, has tales of Booga Hags and supernatural “hot spots” where your hair will stand on end, but hadn’t heard the term “haint blue” growing up here. Able to trace her family’s roots on Hilton Head back to the 1800s, Cohen notes many Native Islanders used blue as an exterior paint — but it was merely a preference, rather than a symbolic gesture. Referring to it as a “transplant” idea, she laughingly points out that if blue did keep the haints away, EVERY house on the Island would have been the same color. While other Gullah communities may practice this tradition, Cohen insists it had nothing to do with the color of her uncle‘s home, a.k.a. “Bubba Duey’s Little House.” In an effort to protect, preserve and promote Gullah history and culture and showcase life “before the bridge,” Cohen is currently restoring her uncle‘s home on Gumtree Road. The structure, one of several located on property her great-grandfather, William Simmons, purchased after the Civil War, will eventually become part of the non-profit Gullah Museum of Hilton Head Island. RECREATIONAL PATHWAYS GUIDE

The Town of Hilton Head Island provides nearly 60 miles of public pathways and nature trails for the enjoyment of pedestrians and cyclists.

WHAT YOU NEED TO KNOW ON THE PATHS: • Obey all traffic signals and pathway markings. Stop signs must be obeyed for safety. Bicycles are vehicles and must obey SC traffic laws. • Travel the pathways at speeds that allow for the safety of pedestrians and other users. • Never ride within the roadway against traffic. State law requires bicycles to drive like all other vehicles. • Do not ride on roads when a pathway is available. • Ride single file and keep a safe distance from other bicyclists.

Alcohol: Drinking/possession of alcohol on Hilton Head’s public beaches is illegal and could result in a fine of up to $500. Liquor stores are not open on Sundays in South Carolina, though you can buy wine and beer in some gas stations and supermarkets.

Roundabouts: You might as well learn to love South Carolina’s roundabouts. They’re everywhere! There are just a few rules to follow in the two-lane roundabout: • The drivers already in the roundabout have the right of way. • Always yield to them before entering the roundabout. • A roundabout is like any other flowing traffic—don’t stop in the middle. • As annoying as it can be to get behind a big slow vehicle, it’s even worse to be stuck beside it in a roundabout. Just wait. • Like with intersections, don’t change lanes while in the roundabout.

Beaches: There are a few rules we all need to keep in mind to ensure a safe experience for everyone who comes to Hilton Head. It is therefore very important to remember that there is: • No sleeping on the beach between midnight and 6 a.m. • No driving on the beach • No horses on the beach • No fires on the beach • No fireworks on the beach (you need a permit to set off fireworks anywhere on Hilton Head, and an offense will result in a misdemeanor and a $500 fine) • No pets on the beach between 10 a.m.-5 p.m. the Friday before Memorial Day through Labor Day

W

hen Nick Wall was growing up in Palmetto Dunes, our little corner of the Lowcountry was quite a bit sleepier. This was the 80s, and Nick and his brother spent their childhood with a “very laid back, very simple” Hilton Head as their playground. “We had so much fun getting into the lagoons and going fishing, riding bikes around the plantations and playing baseball at Barker Field,” Nick recalls. Occasionally they would hunt and fish off the Island. “Bluffton was all woods back then,” he says. “There was a small downtown but no Cross Island Parkway, and just a road through the trees leading to and from the Island.” In the late 80s, Nick’s brother, Dondi, was one of the first in the bike business on Hilton Head. Nick started working for his brother when he was 10, and he caught the entrepreneurial bug. By the time he was in college for hospitality and tourism at the University of South Carolina Beaufort, he was already buying and selling companies. Nick is sure to give credit where it’s due. “I owe my success, my work ethic to God first, then my dad and my brother,” he says. “I really do.” Now, he and his family run Pedals Bicycles, and Nick is proud that it’s one of the few truly local bike companies 36 Island Events January-February 2022

on the Island. “We’ve been around forever!” he jokes. Their bikes haven’t, though. H

ere in the Lowcountry, we get a lot of visitors escaping the cold winters of the North. Common loons flock down to our warm waters in large numbers and stay from fall to late spring. While here, they are almost unrecognizable, lounging quietly on our local waters, wearing their winter plumage.

The common loon, Gavial immer, is more commonly associated with northern lakes, which serve as their prime breeding locations, especially in the summer months. They are known for their beautiful black and white speckled backs, black head and bill and, most notably, their beautiful nocturnal singing. While wintering in South Carolina, their colors become more muted. They have a gray upper back and white lower body, and their bill turns a gray-blue color. Loons tend to sit quietly on our salt and fresh waters as they dive for fish or just rest on the surface. We can catch glimpses of loons through our saltwater estuary systems as well as our freshwater lakes and reservoirs. They are usually found in larger bodies of water, due to the fact that they need a long runway to take off. A minimum of 30 yards is required for loons to run atop the water and beat their wings until they get enough speed to lift off. Once airborne, loons fly with precision in an unwavering beeline flight path. They can be identified in the air due to their long, flat bodies, short tail and shallow wing beats. Loons are extremely powerful and agile divers. They can swim like Olympic ath38 Island Events January-February 2022

letes, using their powerful feet to propel them through the water. In pursuit of food, they can turn on a dime to follow darting fish. Loons will use their dagger bill to catch prey beneath the surface and swallow the majority of their prey while underwater. They have sharp forward-pointing projections on the roof of their mouth and their tongue, allowing them to securely hold fish in their beak. Loons are primarily after fish, but have been known to eat crustaceans, snails, leeches and even aquatic insects. These birds have solid bones as opposed to hollow bones of most bird species. This density affects their buoyancy within the water, allowing them to dive for food. They are quickly able to blow air out of their lungs and flatten their wings to make quick, deep dives. Once underwater, loons are able to slow down their heart rate in order to preserve their oxygen. Interestingly, loons are an excellent indicator of water quality. They prefer areas with clear water, giving them easier access to their meals, but will go wherever food is abundant. Loons are monogamous creatures, usually staying in a bonded pair for about five years. Each year, the couples meet back up in their Northern territories during the months of May and June. Keep an eye out for the lovely loon, which can be spotted in waters across Hilton Head Island in January and February. Why do trees shed their leaves? By Jessie Renew, Outside Hilton Head

H

ave you ever wondered why trees lose all of their leaves in winter? Here in the Lowcountry, we have a lot of evergreen trees that don’t lose their leaves. However, away from the immediate coastal region, maples, oaks, sweetgum, cypress and tupelo provide seasonal color in the fall and lose their leaves in winter. Plant cells contain a great deal of water, stored in vacuoles within each cell wall. When these cells freeze, the water stored inside them expands into ice crystals, which puncture the cell wall and collapse the cell. In order to protect themselves from this eventuality, deciduous trees lose their leaves ahead of winter. Trees that lose their leaves are susceptible to freezing winter temperatures because of their leaf shape, which tends to be broad and flat with a lot of surface area. Evergreen trees, on the other hand, protect their leaves by layering up with a waxy outer coating. Evergreen leaves are usually smaller, thinner or needle-like, which also protects them from the ravages of winter. In the Lowcountry, we have a lot of beautiful live oak trees lining the banks of the salt marshes. While they are technically deciduous, live oaks grow new leaves as they lose their old ones, so that the tree is never bare. In this way, it resembles an evergreen. Leaves that fall from trees play an important role in the forest ecosystem. As they break down, fallen leaves enrich the soil. By losing 40 Island Events January-February 2022

all of their leaves, trees are also more readily able to disperse pollen to seeds and to fertilize the next generation. Deciduous trees can sense the days getting shorter by the change in the amount of chlorophyll being produced by their leaves. This trigger causes the tree to stop sending vital nutrients to the leaves, which, in turn, causes the leaves to stop producing chlorophyll altogether. Without the presence of chlorophyll, other chemicals produced in the leaves are able to show their colors. These include carotenoids, which produce yellow, orange and brown leaves, and anthocyanins, which produce red fruits, berries and leaves. How do the leaves actually fall off a tree? Leaves have a group of cells called an abscission layer in the stem, which slowly chokes off each leaf until it dies. Through decomposition, the stem and leaf become brittle and eventually fall off the tree. ou’ve probably heard that there’s a public course on Hilton Head where you can play a 6-hole, par-3 course and a 9-hole disc golf course. But did you know that First Tee is also part of a national organization that reaches 3.7 million children annually? “We’re not just a golf program,” says Executive Director Pat Zuk, “we’re a character development program. Our curriculum was designed by experts in the field of youth development. Coaches are trained to work the life skills curriculum into the classes, so we’re not just talking about life skills and then golfing, we’re doing them at the same time.” Then, he says, they all participate in what’s called the Bridge to Life, where players discuss how they are going to take what they’ve learned and apply it outside the golf course, using specific examples. “That’s the golden nugget,” says Zuk. “Our goal is to get kids using these lessons in life.” In 2021, First Tee served 501 kids in the local program. They are also reaching 14,000 children through elementary P.E. classes in Beaufort and Jasper Counties. This makes it sound like there is a robust staff behind these efforts, but this non42 Island Events January-February 2022

profit has two part-time employees and two full-time employees. “The rest are volunteers,” says Zuk. “All the coaches are volunteers, the people who help maintain the facility are volunteers, our admin are volunteers. We always have 50 or more at once, and then that number swells to 75 or 100 over the summer.” Why golf? “In a word, honesty,” Zuk says. “Players call penalties on themselves and report their own scores.” Golf is also a perfect activity for getting outdoors, with plenty of exercise, sunshine, fresh air and wide open spaces built in. “It’s just a great program,” Zuk enthuses. “Hearing the older kids talk about what they’ve learned is so gratifying. How to stick to a tough task, be respectful and considerate, set and achieve goals. And, they come out of it with a lifelong love of the game!” First Tee programs are open to everyone, and about half of participating children do so through scholarships. TROUT Extravaganza These strong fighters are enjoying an excellent season in local waters.

Trout hit like a ton of bricks and are tough fighters. Best of all, the flesh is delicious. Artificial lures are working very well. Hard and soft plastic baits are catching fish equally as well.

Light tackle offers some of the best angling to be had here in the Lowcountry. Eight-to-10-pound test line makes for a challenge and allows you to throw an artificial a long way. Generally, working the bait with an occasional jig and slow retrieve works best.

his past December was the most awesome trout season, which promises a great January — perhaps the best in years. In early spring, we had tons of small trout, and apparently they have been eating well. Most of the fish are running a couple of pounds and up, with some really nice ones running in the 5-pound -and-up range. Speckled trout seem to be especially sensitive to bitter cold, and the recent trend toward mild winters has definitely benefited the local population. Fishermen are reaping the benefits this season with huge catches. 48 Island Events January-February 2022

In these days and times when catches are so limited, it’s easy to keep a lot more fish than you need when an excellent bite like this one is on. The sad state of our inshore fishery for cobia and the insanity of the red snapper fishery regulations should be good reminders for us to be extremely aware of the importance of good catch-and-release practices. The local population of fishermen, and people in general, have outgrown our resources. If we are not good stewards, we will be subjected to regulations that are based on voodoo science at best. So, catch and enjoy. Keep what you can eat and let the rest go! Let’s preserve a legacy for generations to come without being dictated to as to what we can keep. Capt. Island Trails and Walking Paths Take the time to enjoy these trails GREEN’S SHELL ENCLOSURE The 3-acre Green’s Shell Enclosure Heritage Preserve is an archaeological site dating back to 1335 A.D. This trail is located near the top of Hilton Head Island, just off of Squire Pope Rd. From the parking area, you will walk on a road to this short, easy trail, which will take you into the past. You will pass a cemetery and cross over a ramp to an overlook at the end of the trail. Green’s Shell Enclosure is a low earthen embankment, two- to six-feet high, that dates back to the Irene Period of 1300 to 1450 A.D. Covering two acres, this embankment was once a fortified village built by farmers who used shells for everything from tools to objects used for religious rituals. Stay on the trail and do not remove anything from this preserve. Bring insect repellent during the warm months. Hours: Dawn to dusk Directions on Hilton Head Island: From the intersection of US 278 and Squire Pope Rd., turn left into Greens Park. Entrance to the preserve is on the left at the gate. Jarvis Creek Loop

JARVIS CREEK LEISURE LOOP The Leisure Loop at Jarvis Creek Park is an easy .85 mile paved loop. The loop starts behind the restrooms. There’s a small pier at the start of the trail with access to a dock. If you start off counterclockwise, you’ll pass a fitness station to your left. Pathways extend all over the park and around the lake creating a 1.1 mile loop. Runners, joggers and walkers are all welcome to explore the lakeside paths that extend out into wooded areas. This paved trail is equipped with wooden bridges over marshy areas, so no one has to get their feet too dirty. There are nine pieces of outdoor training equipment in a peaceful area behind a live oak, and the park was designed with exercising in mind! Each station has a set of instructions that explains how to use the equipment and perform the exercise. You even get a beautiful view of the lake while you’re strengthening your core. Hours: Dawn to dusk. Directions: Located off of William Hilton Pkwy.

AUDUBON NEWHALL PRESERVE The Hilton Head Island Audubon Society owns and operates the Audubon Newhall Preserve, located on Palmetto Bay Rd. It is open to the public at no charge. The Audubon Newhall Preserve is a series of short, easy walking, interconnected trails through a fifty-acre nature preserve. A trail guide is available at the entrance. You will see a wide variety of trees and plants, from Florida scrub to native hardwoods. A feature of the preserve is a rare pocosin (the Indian word for bog), which was once a characteristic feature of barrier islands. Hours: Dawn to dusk Directions: From US 278 near the entrance to Hilton Head Island: Turn right onto the Cross Island Parkway. When you reach Palmetto Bay Rd., watch for the Audubon Newhall Preserve sign on the right. From US 278 on the south part of the Island: Drive west to the traffic circle and turn right onto Palmetto Bay Rd. Look for the sign on the left.

SEA PINES FOREST PRESERVE An easy walk or ride through a maritime forest and marshland in this well-protected preserve. The preserve has a 4,000-year-old Indian shell ring, a wild flower meadow with dozens of flower varieties, fresh water lakes suitable for fishing and a bountiful bird habitat. Sea Pines Forest Preserve

Parking & Facilities:

There are 23 metered spaces at Alder Lane, 54 metered spaces at Folly Field and 13 metered spaces at Burkes Beach Road. The parking fee is a QUARTER for each 15 minutes. Additionally, there are 207 spaces at Driessen Beach Park for long-term parking. The fee is a QUARTER for each 15 minutes during the week. Parking spaces at Islanders Beach Park are ALWAYS reserved for annual beach passes. Parking at Driessen Beach Park for annual beach passes is reserved from 8 a.m. to 3 p.m. Parking is FREE at Fish Haul Park, Mitchelville Freedom Park and Coligny Beach Park. Beach Marker Signs:

Hilton Head’s beaches are marked near the dune line with signs to let emergency responders know where assistance is needed. They are also useful as a reference point if you or your group should become lost.

Beach Safety Tips: • Apply and reapply plenty of sunscreen even on cloudy days. • Wear sunglasses to prevent damage from the sun. • Stay hydrated and drink plenty of water. • Be aware of the rules and regulations of the beach. Signs are posted near most beach accesses. • Don’t leave your kids unsupervised even in guarded areas. • Note the location of the nearest lifeguard and report any hazardous conditions to him or her. • Know the name of the beach or hotel/ condo and the beach marker number where you are staying if you should need assistance. • There are often jellyfish and stingrays, as well as other sea life in and out of the water, which may sting or cut a person. In any situation where first aid is needed, find a lifeguard or seek further medical attention. • Call or wave for help if you are in trouble. hiltonhead.com


Water Safety Tips: • Don’t enter the water if you can’t swim. • Swim near a lifeguard. • Ask the lifeguard about any dangers in the water or on the beach, especially if he or she is flying a yellow caution flag. • Be aware of direction and strength of longshore currents. These currents can take you up and down the beach quickly and cause you or your kids to get lost. • Don’t let your kids swim unsupervised even in guarded areas. • Don’t swim alone. Use the buddy system so that someone always knows where you are so they can get help if needed. • Don’t overestimate your swimming ability. Stay in chest-deep or less water to insure you don’t get stuck in water over your head. • Don’t rely on flotation devices. • Swim parallel to shore if you want to swim long distances. • Don’t swim against the current. Swim across the current to escape the pull. • Always swim sober. • Don’t dive into unknown water or shallow breaking waves. Always go feet first.
