Thanksgiving A Wines A Quick Guide To Your Best Bets By Georgene Mortimer, Island Winery

couple of bottles of wine on the table at Thanksgiving are always welcome. As a guest, this is the perfect offering — aside from the food you have slaved over, of course! As a host, this is an easy way to add a festive note to your spread. Here are some basics for selecting the perfect wine for your turkey dinner. First, the obvious choice: Pinot Noir. With great acid, low tannins and moderate levels of alcohol, a good pinot will neither overpower your carefully prepared dishes, nor shrink in their presence. This is the iconic Thanksgiving wine and you can’t go wrong with it. Luckily, however, turkey is extremely versatile when it comes to wine pairings, and many traditional side dishes are also very wine friendly. So, if you are looking for some variety, here are some other great ideas. Medium-Bodied Reds are often referred to as “food wines.” They offer lots of flavor and wellbalanced acidity, which make them a great match for a wide variety of dishes. The most popular medium-bodied red is Merlot, with its fruity plum and cherry flavors. Or, for a bit more complexity, try a young Italian Sangiovese with its unique clove and spiced cherry flavors. Carmenere from Chile is also an excellent choice, and offers a hint of sour cherries on top of mineral and earthy notes. These selections enhance the flavors in the turkey and the traditionally prepared side dishes spiced with nutmeg, cloves or cinnamon. Full-Bodied Whites are subtly creamy and contain a smoothness from having aged in oak barrels. The classic choice is Chardonnay, and one from warmer climates such as California or Spain tends to have fruitier flavors that accent a Thanksgiving feast nicely. Viognier, originating in Southern France, is a wine known for big aromas of peach, tangerine and honeysuckle. Stronger in flavor than Chardonnay, a mouthful of Viognier allows the sage, rosemary and thyme poultry spices to really pop. And, finally, a tip for the host torn about the perfect cooking wine. This one is easy! The perfect cooking wine is what takes the edge off a house full of people and a demanding bird in the oven. It’s your favorite wine, and it’s reserved just for you. Harbour Town Lighthouse Rising 93 feet above the Calibogue Sound and framing the 18th hole of the Harbour Town Golf Links...

he Harbour Town Lighthouse, which was completed in 1970, was the first privately financed lighthouse built since the early 1800s. Nicknamed “Fraser’s Folly,“ Charles Fraser, the visionary developer of The Sea Pines Resort, believed a distinctive landmark, along with a professional golf tournament, would arouse interest in the fledgling seaside community. As usual, Fraser was right, and today the candy-striped, hexagonal structure has become synonymous with Hilton Head Island. Rising 93 feet above the Calibogue Sound and framing the 18th hole of the Harbour Town Golf Links, the red-and-white striped lighthouse guides golfers off the tee. The backdrop for one of golf’s most picturesque finishing holes, #18 was once part of the $1 million Kodak Challenge, a celebration of “the beautiful holes and memorable moments in golf.” Panoramic views of the Harbour Town Yacht Basin and Golf Links, the Liberty Oak, the Calibogue Sound and Daufuskie Island, are just a few reasons to climb the 114 stairs to the top of the lighthouse. Along the way, the Harbour Town Lighthouse Museum offers a self-guided “climb through time,” with displays and artifacts showcasing various stages of Hilton Head history. n 1981, only ten or so years after the completion of the Harbour Town Lighthouse, the idea for a “camp-like” shop manifested as a round, rustic hut with little protection from the elements but wraparound screens. The idea was to tap into the sense that Hilton Head was much like a camp for families, and to design the offerings to reflect the Island’s beloved wildlife, activities and landmarks. Says Director of Operations Alex Brown (who started there as a teenager!), “The atmosphere back then really was just like being at camp — our employees were called 'counselors' for years — you could go crabbing, beachcombing, sailing, swimming, hiking or biking. Hilton Head was (and still is!) a paradise for those who love to be outdoors.” This unassuming little hut, which has remained essentially unchanged since the early 80s, is Camp Hilton Head’s very first store, and it’s celebrating its 40th anniversary in 2021! Nowadays, the huts at the base of the now world-famous lighthouse (best known as Harbour Town #1 and #2) are destinations in themselves. The merchandise within has dictated the Island’s most desired styles for decades, and features designs for everyone’s favorite thing about Hilton Head: the cycling or sailing, the sea turtles or dolphins, the dog-friendliness or the birdwatching, its golf courses or tennis courts. “We are very proud of our exclusive designs,” says VP of Merchandising Vicky Panhans. A Glimpse Into Hilton Head’s Legacy of Small Businesses By Dani Ray

here’s a reason that Coligny Plaza has the look and feel of a small village — it’s because it started as one. Before the bridge to Hilton Head had even opened, before Harbour Town or even Sea Pines, a young entrepreneur named Norris Richardson decided that Hilton Head was in need of a grocery store. How did he know? He had vacationed on the Island with his family, and had seen the potential in its rustic charm and sandy streets. Beach Marker Signs:

Hilton Head’s beaches are marked near the dune line with signs to let emergency responders know where assistance is needed. They are also useful as a reference point if you or your group should become lost.

Beach Safety Tips: • Apply and reapply plenty of sunscreen even on cloudy days. • Wear sunglasses to prevent damage from the sun. • Stay hydrated and drink plenty of water. • Be aware of the rules and regulations of the beach. Signs are posted near most beach accesses. • Don’t leave your kids unsupervised even in guarded areas. • Note the location of the nearest lifeguard and report any hazardous conditions to him or her. • Know the name of the beach or hotel/ condo and the beach marker number where you are staying if you should need assistance. • There are often jellyfish and stingrays, as well as other sea life in and out of the water, which may sting or cut a person. In any situation where first aid is needed, find a lifeguard or seek further medical attention. • Call or wave for help if you are in trouble. hiltonhead.com

Water Safety Tips: • Don’t enter the water if you can’t swim. • Swim near a lifeguard. • Ask the lifeguard about any dangers in the water or on the beach, especially if he or she is flying a yellow caution flag. • Be aware of direction and strength of longshore currents. These currents can take you up and down the beach quickly and cause you or your kids to get lost. • Don’t let your kids swim unsupervised even in guarded areas. • Don’t swim alone. Use the buddy system so that someone always knows where you are so they can get help if needed. • Don’t overestimate your swimming ability. Stay in chest-deep or less water to insure you don’t get stuck in water over your head. • Don’t rely on flotation devices. • Swim parallel to shore if you want to swim long distances. • Don’t swim against the current. Swim across the current to escape the pull. • Always swim sober. • Don’t dive into unknown water or shallow breaking waves. Always go feet first.

Hilton Head Island has a long and rich history of visitors. Thousands of Years Ago Native Americans came to hunt and fish.

1520s Conquistadors explored the area.

1663 Captain William Hilton sailed the British ship Adventure north from Barbados, scouting lands to grow sugar cane for the crown. Approaching the island by way of Port Royal Sound, he encountered a sliver of land and called it “Hilton’s Headland.”

17th, 18th & 19th Centuries For many years, few permanent residents made their home on Hilton Head Island. Though the humid, subtropical climate was ideal for growing agricultural crops like cotton and rice, fear of disease and isolation kept antebellum plantation owners on the mainland. Africans worked the plantations, and their unique blend of African and European traditions gave birth to the Gullah culture, which survives even today. 30 Island Events November 2020

1861-1865 The Civil War brought big changes to Hilton Head Island. At the onset of the conflict, the South erected Fort Walker to protect the port. When the fort fell, tens of thousands of Union troops, prisoners, missionaries, shopkeepers and enslaved men and women seeking asylum flooded the Island. Suddenly humming with activity, Hilton Head became instrumental in the North’s blockade of nearby Southern ports. Post Civil War - 1956 After the Civil War, the Island's population dropped to around 3,000, and by 1940, it had fallen to just over 1,000. Electricity finally came to the Island in 1950 and, six years later, Hilton Head’s very first bridge to the mainland made the area significantly more accessible.

Late 1950s Developer and environmentalist Charles E. Fraser began work on the Island’s first resort, which he called Sea Pines. Fraser is sometimes called the father of the modern resort, and his vision for the Island was progressive, even by modern standards. His determination that no building be “higher than the tallest tree,” as well as his rejection of flashy neon signs, became central to the Island’s distinctive character.

Today Fraser’s legacy lives on in Hilton Head Island’s balance of commerce with green spaces, golf courses with wild places and thoroughfares with biking trails. RECREATIONAL PATHWAYS GUIDE The Town of Hilton Head Island provides nearly 60 miles of public pathways and nature trails for the enjoyment of pedestrians and cyclists.

RULES FOR THE ROAD: • Please obey all traffic signals and pathway markings. Stop signs must be obeyed for safety. Bicycles are vehicles and must obey SC traffic laws. • Travel the pathways at speeds that allow for the safety of pedestrians and other users. • Never ride within the roadway against traffic. State law requires bicycles to drive like all other vehicles. • Please do not ride on roads when a pathway is available. • Please ride single file and keep a safe distance from other bicyclists. • WATCH OUT FOR MOTORISTS! Motorists must yield to pedestrians and bicyclists within marked crossings, but they may not see you. • Please yield to pedestrians. When resting or stopped, please move off the pathway.

• Most sections of the pathways are not illuminated. If you must bike at night, please wear light-colored clothing or carry a flashlight. Bicycles must have a red rear reflector and a headlight when biking at night. • When approaching slower pathway users from behind, please sound your warning device, or call out, “Passing on your left.” Always pass on the left. • Bicyclists should always wear a helmet, especially children 12 and under. • Make eye contact and use hand signals. Assume other bicyclists and motorists don’t see you. Hand signals tell motorists and other path users what you intend to do and will ensure everyone’s safe enjoyment of the paths. Be courteous, alert and predictable.

Alcohol:

Drinking/possession of alcohol on Hilton Head's public beaches is illegal and could result in a fine of up to $500. Liquor stores are not open on Sundays in South Carolina, though you can buy wine and beer in some gas stations and supermarkets.

Roundabouts:

You might as well learn to love South Carolina’s roundabouts. They’re everywhere! There are just a few rules to follow in the two-lane roundabout: • The drivers already in the roundabout have the right of way. • Always yield to them before entering the roundabout. • A roundabout is like any other flowing traffic — don’t stop in the middle. • As annoying as it can be to get behind a big slow vehicle, it’s even worse to be stuck beside it in a roundabout. Just wait. • Like with intersections, don’t change lanes while in the roundabout.

Beaches:

There are a few rules we all need to keep in mind to ensure a safe experience for everyone who comes to Hilton Head. It is therefore very important to remember that there is: • No sleeping on the beach between midnight and 6 a.m. • No driving on the beach • No horses on the beach • No fires on the beach • No fireworks on the beach (you need a permit to set off fireworks anywhere on Hilton Head, and an offense will result in a misdemeanor and a $500 fine) • No pets on the beach between 10 a.m.5 p.m. the Friday before Memorial Day through Labor Day

n 1608, Captain John Smith named a small marsupial after the Algonquian term “Oppassum” meaning “white animal.” Growing up in the Southern states, most kids know what it means to “play possum.” Opossums actually do roll over on their backs and let their body go limp, playing dead to evade predators or other threats. The opossum, also known as Didelphis virginiana, is America’s only native marsupial. These creatures can be found throughout most of the U.S., from the Great Plains to the Atlantic Coast, and from Ontario to Mexico. Opossums were introduced into California, since they are not found west of the Rockies. Their fur is greyish white all over, with black tips on the nose, tail and ears. They have coarse hair covering their entire body, except for their tail. The tail is well-developed for grasping while opossums climb. They also have 5 fingers on their hands and feet, including an opposable thumb on their rear feet. They can weigh between 4 and 7 pounds, and may be as tall as eight inches. They usually live to be between two and four years old. Opossums are thought to be the most adaptable animal in the United States. They are opportunistic omnivores, allowing for a wide variety of food. They are also highly adaptable to many different types of living environments. Opossums are found throughout South Carolina’s residential, woodland and farmland areas. They do not make their own dens, but will commonly take over abandoned ones. They will make nests inside burrows, tree cavities, old squirrel nests, brush piles, garages,

These well-adapted animals are also known to eat many different types of insects, small reptiles, small mammals, fruits and vegetables. They scavenge for food in garbage cans, compost piles and on roads. Opossums are polygamous animals, breeding from January to August. Females will have up to two litters in a season, with each litter producing between 7 and 11 young opossums. Females go through a 13-day gestation period. The young will then crawl out of the womb and into a pouch on the female’s stomach, where they attach themselves to a nipple within the pouch and nurse for up to seven weeks. After 80 days, the young will leave the pouch and may be seen riding on their mother’s back. The young will be weaned from their mother after 100 days and travel into the world on their own. Opossums are nomadic creatures with a home range of up to 50 acres. They are mostly nocturnal, but can be seen foraging during the day as well. Opossums do not hibernate during the winter months and will tend to stay inside a den or burrow until the weather permits them to forage again. When it comes to survival, opossums put up a good fight. They are almost immune to rabies and are resistant to rattlesnake, cottonmouth and other pit viper venom. However, they are highly susceptible to predation from larger animals. They also suffer from a number of different types of internal and external parasites. Humans are allowed to hunt opossum in the state of South Carolina for their fur or meat. However, most local hunters find them a nuisance, as opposed to a resource. The Phantom Flounder SEEKING THE FISH THAT SEES ALL By Captain Miles Altman, Bay Runner Fishing Charters

he flounder is one of the most highly prized catches in our local estuaries. Armed with an impressive set of teeth and blinding speed, it can often be found lurking in the mouths of feeder creeks and along oyster banks, lying in wait for an unsuspecting mud minnow or shrimp to float by with the tide. An ambush predator, the flounder strikes fast, snatching up its prey and then quickly returning to sit flat on the bottom. But it’s not resting, and it can still see everything. This is because although the flounder starts out in the larval stage with one eye on each side of its head, its metamorphosis into the juvenile stage sees one eye migrate to the other side (which side depends on the species). As an adult, the flounder will lay flat on the bottom, totally camouflaged, two eyes watching both predator and prey!

Here in the Southern corner of the state, flounder is more of an incidental catch, though some seasoned anglers have managed to find productive spots. Because of the flounder’s feeding behavior, anglers fishing corks or floats often mistake the signs when the cork goes under briefly, but then returns to the surface where it sits as if snagged. Those fishing the the flounder strikes bottom or working fast, snatching up its prey jigs will experience the same — it just and then quickly returning feels like you’ve to sit flat on the bottom. hooked bottom, until enough pressure is applied to induce a fight. More often than not, anglers will use a technique called “gigging” to produce good catches of flounder. Gigging is a nighttime sport and usually done from small, flat-bottomed skiffs or bateaux – when the outline of the flounder is spotted, the gig strikes (preferably to the head). Years ago, we would glide along the bank with a long bamboo pole outfitted with a spearhead or “gig,” only a painter’s lamp to light up the bottom. Nowadays, 46 Island Events November 2020

eveloping your golf swing is like learning to type or play the piano. In the beginning, the process needs to be kept simple and must be repeated again and again. Once you have the fundamentals down, the swing goes from awkward and uncomfortable to comfortable and natural. Sound fundamentals make a swing that is graceful, powerful and effortless. This is when the joy of golf can truly begin!

Address the ball Salute the General! Addressing the ball is like a proper greeting. Your body language must be intentional, shoulders and head square to the target line. Stand tall, chin up and eyes level. Correct foot position is key to maintaining balance and allowing for the allimportant hip turn, so the golfer must create a toe line 48 Island Events November 2020

in his or her imagination. Like soldiers in formation, everyone knows where they are supposed to be and looks straight ahead!

3. Proper execution of the ABCs makes for an excellent Delivery (D), which will happen naturally. It's not easy, but it really is as simple as ABCD.

When starting the backswing, you have to involve your shoulders. The shoulders are powerful and can carry the weight of the club smoothly. One of the most common errors in learning a correct golf swing is relying too heavily on the hands, which are not able to control the club to the top of the swing. When the shoulders aren’t sufficiently involved, compensations must be made and shots become inconsistent.

Death, serious injury and jail time are just a few of the reasons we don't feed the alligators. Alligators become aggressive when they think food is coming. Feeding an alligator once from a distance can ruin it for someone else.

Offshore shark fishing ONLY

Of course we don't want to attract sharks to swimming areas. The law prohibits baiting or fishing for shark from the beach and 400 yards or fewer from any shore. There is also no fishing in swimming areas or from the beaches anytime during daylight hours between April and September.

DONâ&#x20AC;&#x2122;T mess with the natives

The law protects beach-dwelling sea creatures. Hurting, bothering or even picking up the live ones could result in a fine of $500. This includes sand dollars, conch shells and especially turtles!

Speaking of sea turtles, here's what you need to know: NEVER INTERFERE with a sea turtle

The endangered loggerhead turtles lay their eggs in nests on HHI's beaches. It's important that tourists and locals alike do their best to keep their impact minimal. Don't get close to them, shine lights on them, touch them or their eggs, feed them or get anywhere near their nests. You could face up to a $15,000 fine and even jail time!

NO LIGHTS on or near the beach

Nighttime on the beach is a crucial time for baby turtles and any lights that can be seen from the beach can be fatal to these little guys. When they hatch, they must head directly to the ocean or die. Artificial lights (even flashlights or the flash from a camera!) confuse them, and can cause them to head in the opposite direction. Nesting season is between May and the end of October. If any of your houselights can be seen from the beach, they need to be off or invisible from the beach by 10 p.m. during this time. 50 Island Events November 2020

If you see something that looks amiss, CALL THE EXPERTS! If a sea turtle is injured or dead, or you see a nest that has clearly been tampered with or someone is actively bothering a nest or a turtle, call the South Carolina Department of Natural Resources at (800) 922-5431.

LEAVE the beach the way you found it

So your sandcastle is your masterpiece. Understood. But this is literally life or death for these turtles. An obstacle on the beach can cause a mama sea turtle to go back to the ocean instead of laying her eggs. Anything left on the beach that doesn't belong there can cause problems for both mama and baby turtles, so grab every last piece of your gear and trash and fill and smooth any holes you've made. hiltonhead.com

Visit Shelter Cove Harbour for a day-after-Thanksgiving “Santa and Shopping Day,” with specials and sales throughout the shops and restaurants. Santa will arrive at noon, aboard a fire truck, and stay until 2:30 p.m. at the Neptune Statue, for children to share their Christmas list and take photos.
