Apple Delights Hard cider signals the arrival of autumn and serves as an ideal fall treat. By Georgene Mortimer, Island Winery What is apple cider? The answer depends on who you ask. When European colonists came to America in the 1600s, they planted large apple orchards. Pressing and fermenting fresh apple juice to produce an alcoholic beverage was the easiest way to preserve the large fruit harvests. Referred to as “cider,” it was the most common beverage during that time because apples were plentiful, and water had the potential to carry pathogens for diseases like typhoid, cholera and dysentery. Just like Colonial Americans, modern Europeans also use the word “cider” to refer to the fermented alcoholic version. The sweet stuff that we sip on cool autumn days is referred to as “juice.” In America, we distinguish between the two by referring to the alcoholic beverage as “hard cider.” Today, hard cider is one of the fastest growing segments of the liquor industry, with a large variety of brands and styles available in liquor stores, grocery stores and even gas stations. Many people wonder if hard cider and apple wine are the same thing. The short answer is no, but some disagree. Both beverages are made from fermented apples and can taste either dry or sweet. Hard cider is made by fermenting fresh, unfiltered apple juice. Since the natural sugar content of apples is low, hard cider usually obtains alcohol levels less than 7%. Cider is bottled immediately after fermentation, while carbon dioxide is still present. As a result, cider is a low-alcohol, carbonated beverage, similar to beer. 14 Island Events October 2019
Apple wine usually starts out with filtered apple juice, and extra sugar is added to boost alcohol levels in the finished wine up to 12 or even 14%. Apple wine is aged up to a year before it is bottled. Hard cider can be either cloudy or clear, but apple wine is almost always clear and generally reminiscent of a white wine. In Frankfurt, Germany, nobody cares whether it is called “cider,” “apple wine” or “apfelwein,” as long as it is flowing during the annual Apfelwein Festival. Technically, however, apfelwein is considered a cider with its low-alcohol levels and carbonation. For Frankfurt’s local people, apple wine is as much of a tradition as beer. Its popularity dates back to an interesting confluence of events in the 1800s, when a blight wiped out most wine grapes and an ill-timed beer tax made beer unaffordable. Apple wine was the perfect solution. So, celebrate the end of a long, hot summer and the arrival of autumn with your favorite version of cider, whether it’s a six-pack of your favorite hard cider, a bottle of apple wine or a gallon of fresh cider from a local farm stand. Fall Pickleball News By Mark Anders, Head Pickleball Pro, Palmetto Dunes Oceanfront Resort
E
xciting changes are coming to the Palmetto Dunes Pickleball Center this fall! Once again, the center will be expanding both its facility and its programming, in response to the surge in demand we are seeing, as Hilton Head Island and Palmetto Dunes are fast becoming a destination for pickleball enthusiasts.
In October, the Palmetto Dunes Pickleball Center will begin construction on 8 new lighted pickleball courts, bringing the total number to 24. After adding 8 courts last fall, they were immediately being utilized for the daily morning round robins, prompting the expansion of afternoon round robin sessions. The additional courts coming this fall will allow further expansion of morning round robins, while holding a few courts open for rental to families and other groups. The Palmetto Dunes Pickleball Center will also be expanding afternoon round robin sessions from two days a week to five this season. While the demand for recreational play remains strong, the demand for instructional programming has 30 Island Events October 2019
increased as well. This summer, we introduced a series of clinics called the Daily Dose, geared towards the intermediate player looking to expand tactical and strategic knowledge and to improve overall skill level. Many of these sessions are led by Sarah Ansboury, our Touring Pro and Director of Pickleball Instruction, and one of the top players in the world. Rarely do pickleball players get the opportunity to receive this level of instruction at their local club…so check this one out! RECREATIONAL PATHWAYS GUIDE The Town of Hilton Head Island provides nearly 60 miles of public pathways and nature trails for the enjoyment of pedestrians and cyclists.
RULES FOR THE ROAD: • Please obey all traffic signals and pathway markings. Stop signs must be obeyed for safety. Bicycles are vehicles and must obey SC traffic laws. • Travel the pathways at speeds that allow for the safety of pedestrians and other users. • Never ride within the roadway against traffic. State law requires bicycles to drive like all other vehicles. • Please do not ride on roads when a pathway is available. • Please ride single file and keep a safe distance from other bicyclists. • WATCH OUT FOR MOTORISTS! Motorists must yield to pedestrians and bicyclists within marked crossings, but they may not see you. • Please yield to pedestrians. When resting or stopped, please move off the pathway.
• Most sections of the pathways are not illuminated. If you must bike at night, please wear light-colored clothing or carry a flashlight. Bicycles must have a red rear reflector and a headlight when biking at night. • When approaching slower pathway users from behind, please sound your warning device, or call out, “Passing on your left.” Always pass on the left. • Bicyclists should always wear a helmet, especially children 12 and under. • Make eye contact and use hand signals. Assume other bicyclists and motorists don’t see you. Hand signals tell motorists and other path users what you intend to do and will ensure everyone’s safe enjoyment of the paths. Be courteous, alert and predictable.

dips, but the mild past winter holds the promise of booming schools of trout for the fall. Last month, large schools of 13-inch fish were plentiful. And, with the trout's appetite, they should be much larger in the coming months.

favorite time of year: the fall season.
Fall is a special time here in the Lowcountry for many reasons. The weather is cooler, the crowds thin and the bull redfish swarm inshore waters. The bulls, from 20 pounds up to the 50-pound mark, are here or offshore all year, but this time of year they come close in big numbers, with catches of 20 or more fish in a trip not uncommon. The strength of these fish is incredible, rivaling any other fish its size, short of an amberjack or tuna. I usually fish heavy spinning reels with 50-pound braid and, even with a heavy drag, they will strip line off at an alarming pace – and do it several times in a battle. I have fished lighter tackle, but the lengthy battle takes a toll on these big fish and they must be released. The law requires that redfish over 23 inches must be returned to the water. The smaller redfish also invade the creeks this time of year, offering the best light tackle sport available. Live or dead shrimp, cut mullet and menhaden are all favorite baits when fishing inshore. The “slot,” or keeper size, is 15 to 23 inches. By South Carolina law, you may keep three per person. Redfish are not only a blast to catch, but they are delicious to eat as well. Before Chef Paul Prudhomme introduced “blackened redfish,” these fish were locally known as spot tail bass or puppy drum. Their proper name is red drum. The coloration is usually a deep burnt orange or copper across the back, with a single spot at the base of the tail. Some fish have multiple spots from the tail to the middle of the fish. A strong, broad tail and thick shoulders give the redfish all the horsepower it needs to make your day. Armed with a set of fangs that would make any snake or vampire jealous, a voracious appetite and an explosive strike, the speckled sea trout ranks in the top three inshore gamefish, along with flounder and red drum. One nice “gator” trout I caught last winter almost took the rod out of my hands when he struck the plastic bait I had tossed near the bank. My intentions were to let it sink a minute, so I had relaxed my grip on the rod and didn't expect the force of the six-pound trout’s attack. After a cold winter, the trout population sometimes

Some of the trout’s favorite prey is finger mullet, mud minnows and shrimp. One trout I cleaned recently had an eel in his stomach that was as long as the fish. While the shrimp are plentiful in the creeks, I prefer to use them live. As the water temperature drops and the shrimp leave, I switch to artificial baits, soft plastics with paddle tails or screw tails with scented plastics, like the Gulp products, or hard lures like the Mirrolure or Mighty Mike. I’ve caught trout on a chunk of dead mullet on the bottom while fishing for redfish, but the other methods should produce better numbers of fish. If using a live bait — finger mullet, shrimp or mud minnow — a popping cork with a three-foot leader and a 2/0 or 3/0 circle or kahle hook will produce good results. Working the popping cork vigorously will increase your strikes. Where some fish spook easily, the trout is fearless. Long ago, we used to troll the grass edge of the creeks, and the motor never bothered them. Easily identified by its sleek, silvery iridescence covered with spots, the speckled sea trout is a beautiful, hardstriking, tough-fighting fish, providing an angling experience that’s hard to beat. When taken to the table, the delicious, white flaky flesh is the proverbial icing on the cake! I’m often surprised that many of my summer clients remark that they also come to Hilton Head in the fall or winter, but never think about fishing then. Reservations are much easier to come by, and the fishing is fantastic. If you’re visiting the Island this season, don’t miss a great opportunity to enjoy some world-class fishing. Capt. Subtle changes signal a change of seasons on Hilton Head Island. By Anneliza Itkor, Outside Hilton Head

ere in the Lowcountry, October is a month of gentle transition. As the seasons move slowly from the warm cloak of summer to the cooler, crisper temperatures of fall, all around us nature is beginning that last dance before heading into winter dormancy. While our seasonal transition may not be as flashy as further north, there are many subtle changes in which we can delight. Whether you’re strolling across a parking lot or gliding across the marsh in a kayak, you may catch sight of a spectacularly colored butterfly bobbing and weaving its way from point A to point B. These winged creatures reach peak migration during late September and early October. Residents of Hilton Head Island can spot breathtaking cloudless sulfurs, gulf fritillaries, swallowtails and monarchs passing through on their way to Florida. You can help support these stunning pollinators in their journey by planting passionflower, cassia and native milkweed. Monarchs need native milkweed for laying their eggs, and the nectar from passionflower and cassia help fritillaries and sulfurs with reproduction.
head for warmer climates for the winter. Several rare types of pipers, plovers and avocets are just some of the thrilling sightings an explorer can experience during the month of October. Keep in mind that some of these birds may fly as many as 10,000 miles before their travel is complete. When birds are spotted feeding in the surf or foraging in the pluff mud, they are doing an important refuel and getting some much-needed rest. Please keep dogs and children from chasing birds, as it will force them to burn much-needed energy and could make the difference in a bird surviving a long migration. And, let us not forget about fall oysters. From May to October, we are deprived of the opportunity to indulge in the deliciousness that is our Lowcountry oyster. The warm water and air temperatures of spring and summer raise bacteria levels and can make them unsafe to eat. That, coupled with the fact that summer is their breeding season, lending them an unpleasant, mealy texture, keeps our local oysters off any summertime menus. But now, once the DNR deems our waters cool enough, oyster harvesting season will open and we can once again savor that briny goodness.
Another subtle sign of the changing season is the salt marsh’s gradual shift from green to gold as the Spartina grass begins to die back. In addition to this beautiful color change, as the cordgrass reaches the end of its growth stage, it begins to flower and go to seed. These flowers and seeds are essential food sources for migrating birds.

From exceptional courses to delicious cuisine, Hilton Head Island is a paradise for golfers. October is an ideal month to play golf on Hilton Head Island. The average daytime temperature is a comfortable 75 degrees. The ocean breezes gently touch your face. The sun is always on your shoulder, and the climate tends to be dry.
1. World-class courses.
Practice or play? How much time do you have? If you have an hour, consider going to the Robert Trent Jones Golf Course and putting and chipping with a friend. Then, head over to the range and work on your full swing. If you have two hours, stop by the George Fazio Course and play a quick nine holes. If you have 4½ hours, play the Arthur Hills Golf Course, where Tiger, Phil and many other legendary players competed in the nation’s top collegiate tournament.
2. Fresh air and big skies.
After all, nature offers the best medicine for our fast-paced culture. Enjoying golf correctly while practicing or playing encourages breathing and slow, graceful motion. It’s like yoga and Pilates, without the pain.
