A WINEMAKING PRIMER Charting the Path from Grapes to Wine By Georgene Mortimer, Island Winery Fall is here. To winemakers, this means one thing: time to make wine! Archaeological evidence puts the world’s first wines in Eurasia around 6000 BC, though recent studies suggest that the first fermented grape and rice beverages may have been made in China as early as 7000 BC! Step 1: Crushing and Destemming Once the grapes are picked, they are gently crushed to break the skin and allow the juices to flow. Even the very first winemakers realized that stems and seeds, which are high in tannins, can add much bitterness to the taste and must be picked out. While crushing was done by hand (or foot!) for thousands of years, nowadays crushing and destemming are done in a single step with a large aluminum or steel trough called a Crusher Destemmer. Step 2: Fermentation Crushed and destemmed, unfermented grapes or “must” is pumped into a vat or tank. Here, live yeast cultures are added to consume the sugars and convert them into ethanol and carbon dioxide. This is a delicate time in the process, and temperature, sugar, pH and nutrient levels must be closely monitored. Fermentation generally takes between one and three weeks, with longer fermentations converting more sugars into alcohol, thereby producing a drier wine with a higher alcohol content. Step 3: Pressing When most of the sugar has turned to alcohol, the wine is ready to be pressed. Pressing squeezes out all of the juices and leaves the skins behind. Winemaking has seen some major technological advances, but the basics remain the same. Simply put, winemaking is the process of converting the natural sugars in grapes into alcohol. The wine is then aged to allow the flavors to mellow and develop. This is accomplished in the following steps: arating the liquid from the must before the fermentation process. Step 4: Aging Aging time and the vessel used depend on what the winemaker is trying to achieve. While most white wines age several months in stainless steel tanks to produce fresh and fruity notes, some reds age in oak barrels for several years to achieve complex flavors! Step 5: Enjoy! Hilton Head Distillery Adventurous, Indulgent and Rooted in Tradition By Dani Ray The spirit makers at Hilton Head’s very first craft distillery are on a voyage. Their ship is patiently and carefully built in the old ways — but in it, they venture fearlessly into uncharted waters. Here, tradition, nostalgia and a deep respect for all the distillers who came before commune with creative energies, innovation and emerging technologies. In collaboration with distilleries in Upstate South Carolina and the Cayman Islands, Hilton Head Distillery is exploring the flavors of the tropical realm, aiming to capture and bottle its essence. Its rum — white, dark and spiced — begins in the heart of the tropics with a sugarcane molasses base. Added to the subtly sweet and slightly earthy white rum foundation are the region’s most mouthwatering flavors. Jamaican Blue Mountain coffee beans steep for days to make the bold, smooth Mountain Peak Espresso Rum. The Toasted Coconut Rum has notes of fresh, sweet pastries and savory macaroons. The Bananas Foster Rum combines notes of caramelized banana, creamy vanilla, brown sugar and cinnamon, and the Coastal Coconut Rum makes appearances in coveted cocktails all around the Island. For the flip side of the flavor spectrum, the Two Traditions Dark 23 Rum is aged in port wine casks and contains hints of toasted oak, light smoke and spice. 14 Island Events September 2020

Their Whiskey Girl line includes flavors like their famous peach, honeysuckle, butterscotch and apple maple. And if you can believe it, the Aermoor Cloud Sourced Vodka is proofed with water straight from Hilton Head’s low-lying mists! While the distillery’s tours and wildly popular tastings have been pared down, it still offers flights of six spirits — neat — for $10. Visitors rave about the smooth, rich flavors, the excellent value and want to return with friends. With a comfortable seating area, full-sized and mini bottles for purchase and a fun and family-friendly vibe, this experience is a perfect rainy day activity — just don’t be surprised if others have the same idea! Death, serious injury and jail time are just a few of the reasons we don't feed the alligators. Alligators become aggressive when they think food is coming. Feeding an alligator once from a distance can ruin it for someone else.

Offshore shark fishing ONLY

Of course we don't want to attract sharks to swimming areas. The law prohibits baiting or fishing for shark from the beach and 400 yards or fewer from any shore. There is also no fishing in swimming areas or from the beaches anytime during daylight hours between April and September.

DON’T mess with the natives

The law protects beach-dwelling sea creatures. Hurting, bothering or even picking up the live ones could result in a fine of $500. This includes sand dollars, conch shells and especially turtles!

Speaking of sea turtles, here's what you need to know: NEVER INTERFERE with a sea turtle

The endangered loggerhead turtles lay their eggs in nests on HHI's beaches. It's important that tourists and locals alike do their best to keep their impact minimal. Don't get close to them, shine lights on them, touch them or their eggs, feed them or get anywhere near their nests. You could face up to a $15,000 fine and even jail time!

NO LIGHTS on or near the beach

Nighttime on the beach is a crucial time for baby turtles and any lights that can be seen from the beach can be fatal to these little guys. When they hatch, they must head directly to the ocean or die. Artificial lights (even flashlights or the flash from a camera!) confuse them, and can cause them to head in the opposite direction. Nesting season is between May and the end of October. If any of your houselights can be seen from the beach, they need to be off or invisible from the beach by 10 p.m. during this time. 16 Island Events September 2020

If you see something that looks amiss, CALL THE EXPERTS! If a sea turtle is injured or dead, or you see a nest that has clearly been tampered with or someone is actively bothering a nest or a turtle, call the South Carolina Department of Natural Resources at (800) 922-5431.

LEAVE the beach the way you found it

So your sandcastle is your masterpiece. Understood. But this is literally life or death for these turtles. An obstacle on the beach can cause a mama sea turtle to go back to the ocean instead of laying her eggs. Anything left on the beach that doesn't belong there can cause problems for both mama and baby turtles, so grab every last piece of your gear and trash and fill and smooth any holes you've made. hiltonhead.com

Alcohol:

Drinking/possession of alcohol on Hilton Head's public beaches is illegal and could result in a fine of up to $500. Liquor stores are not open on Sundays in South Carolina, though you can buy wine and beer in some gas stations and supermarkets.

Roundabouts:

You might as well learn to love South Carolina’s roundabouts. They’re everywhere! There are just a few rules to follow in the two-lane roundabout: • The drivers already in the roundabout have the right of way. • Always yield to them before entering the roundabout. • A roundabout is like any other flowing traffic—don’t stop in the middle. • As annoying as it can be to get behind a big slow vehicle, it’s even worse to be stuck beside it in a roundabout. Just wait. • Like with intersections, don’t change lanes while in the roundabout.

Beaches:

There are a few rules we all need to keep in mind to ensure a safe experience for everyone who comes to Hilton Head. It is therefore very important to remember that there is: • No sleeping on the beach between midnight and 6 a.m. • No driving on the beach • No horses on the beach • No fires on the beach • No fireworks on the beach (you need a permit to set off fireworks anywhere on Hilton Head, and an offense will result in a misdemeanor and a $500 fine) • No pets on the beach between 10 a.m.5 p.m. the Friday before Memorial Day through Labor Day

Island Beaches Public Beach Access: The Town of Hilton Head Island provides nine, public beach accesses: • Alder Lane Beach Access, off South Forest Beach Dr. • Coligny Beach Park, off Coligny Circle • Driessen Beach Park, end of Bradley Beach Rd. • Chaplin Community Park, off Wm. Hilton Pkwy. • Fish Haul Park & Mitchelville Beach Park, end of Beach City Rd. • Burkes Beach Access, end of Burkes Beach Rd. • Folly Field Beach Park and Islanders Beach Park, both off Folly Field Rd.

Parking & Facilities:

There are 23 metered spaces at Alder Lane; 54 metered spaces at Folly Field and 13 metered spaces at Burkes Beach Road. The parking fee is a QUARTER for each 15 minutes. Additionally, there are 207 spaces at Driessen Beach Park for long-term parking. The fee is a QUARTER for each 30 minutes during the week. Parking spaces at Islanders Beach Park are ALWAYS reserved for annual beach passes. Parking at Driessen Beach Park for annual beach passes is reserved from 8 a.m. to 3 p.m. Parking is FREE at Fish Haul Park, Mitchelville Beach Park and Coligny Beach Park. Beach Marker Signs:

Hilton Head’s beaches are marked near the dune line with signs to let emergency responders know where assistance is needed. They are also useful as a reference point if you or your group should become lost.

Beach Safety Tips: • Apply and reapply plenty of sunscreen even on cloudy days. • Wear sunglasses to prevent damage from the sun. • Stay hydrated and drink plenty of water. • Be aware of the rules and regulations of the beach. Signs are posted near most beach accesses. • Don’t leave your kids unsuper­vised even in guarded areas. • Note the location of the nearest lifeguard and report any hazardous conditions to him or her. • Know the name of the beach or hotel/ condo and the beach marker number where you are staying if you should need assistance. • There are often jellyfish and stingrays, as well as other sea life in and out of the water, which may sting or cut a person. Water Safety Tips: • Don’t enter the water if you can’t swim. • Swim near a lifeguard. • Ask the lifeguard about any dangers in the water or on the beach, especially if he or she is flying a yellow caution flag. • Be aware of direction and strength of longshore currents. These currents can take you up and down the beach quickly and cause you or your kids to get lost. • Don’t let your kids swim unsu­pervised even in guarded areas. • Don’t swim alone. Use the buddy system so that someone always knows where you are so they can get help if needed. • Don’t overestimate your swim­ming ability. Stay in chest-deep or less water to insure you don’t get stuck in water over your head. • Don’t rely on flotation devices. • Swim parallel to shore if you want to swim long distances. • Don’t swim against the current. Swim across the current to escape the pull. • Always swim sober. • Don’t dive into unknown water or shallow breaking waves. Always go feet first.

HILTON HEAD HISTORY

Hilton Head Island has a long and rich history of visitors. Thousands of Years Ago Native Americans came to hunt and fish.

1663 Captain William Hilton sailed the British ship Adventure north from Barbados, scouting lands to grow sugar cane for the crown. Approaching the island by way of Port Royal Sound, he encountered a sliver of land and called it “Hilton’s Headland.”

1861-1865 The Civil War brought big changes to Hilton Head Island. At the onset of the conflict, the South erected Fort Walker to protect the port. When the fort fell, tens of thousands of Union troops, prisoners, missionaries, shopkeepers and enslaved men and women seeking asylum flooded the Island. Suddenly humming with activity, Hilton Head became instrumental in the North’s blockade of nearby Southern ports. In 1863, the town of Mitchelville became the first self-governed town for freed men and women.

Late 1950s

Developer and environmentalist Charles E. Fraser began work on the Island’s first resort, which he called Sea Pines. Fraser is sometimes called the father of the modern resort, and his vision for the Island was progressive, even by modern standards. His determination that no building be “higher than the tallest tree,” as well as his rejection of flashy neon signs, became central to the Island’s distinctive character. 30 Island Events September 2020

17th, 18th & 19th Centuries For many years, few permanent residents made their home on Hilton Head Island. Though the humid, subtropical climate was ideal for growing agricultural crops like cotton and rice, fear of disease and isolation kept antebellum plantation owners on the mainland. Africans worked the plantations, and their unique blend of African and European traditions gave birth to the Gullah culture, which survives even today.

Post Civil War - 1956 After the Civil War, the Island's population dropped to around 3,000, and by 1940, it had fallen to just over 1,000. Electricity finally came to the Island in 1950 and, six years later, Hilton Head’s very first bridge to the mainland made the area significantly more accessible.

Fraser’s legacy lives on in Hilton Head Island’s balance of commerce with green spaces, golf courses with wild places and thoroughfares with biking trails. RECREATIONAL PATHWAYS GUIDE The Town of Hilton Head Island provides nearly 60 miles of public path­ways and nature trails for the enjoy­ment of pedes­trians and cyclists.

RULES FOR THE ROAD: • Please obey all traffic signals and pathway markings. Stop signs must be obeyed for safety. Bicycles are vehicles and must obey SC traffic laws. • Travel the pathways at speeds that allow for the safety of pedes­­­trians and other users. • Never ride within the roadway against traffic. State law requires bicycles to drive like all other vehicles. • Please do not ride on roads when a pathway is available. • Please ride single file and keep a safe distance from other bicyclists. • WATCH OUT FOR MOTORISTS! Motorists must yield to pedestrians and bicyclists within marked crossings, but they may not see you. • Please yield to pedestrians. When resting or stopped, please move off the pathway.

• Most sections of the pathways are not illuminated. If you must bike at night, please wear light-colored clothing or carry a flash­light. Bicycles must have a red rear reflector and a headlight when biking at night. • When approaching slower pathway users from behind, please sound your warning device, or call out, “Passing on your left.” Always pass on the left. • Bicyclists should always wear a helmet, especially children 12 and under. • Make eye contact and use hand signals. Assume other bicyclists and motorists don’t see you. Hand signals tell motorists and other path users what you intend to do and will ensure everyone’s safe enjoyment of the paths. Be courteous, alert and predictable.

Owner Brian Gale was born in Miami, but spent his formative years in the sports fishing capital of the world — Islamorada. “My father was in the charter business in the Keys,” he says. “He brought me up fishing from the day I could hold a rod,” and as soon as he could steer, he was driving a boat. “I’ve always been interested in fishing from as early as I can remember.” In the mid-90s, his parents visited Hilton Head and loved it. They relocated as a family in 1996, and Captain Hook was born. Gale has now been a captain with a 100-ton master license for 17 years, and he really enjoys it.

With the ultimate goal of showing guests a good time, Captain Hook’s excursions include everything you will need for the trip, including rod and reel, bait and tackle, hand towels, coolers full of ice, tutorials as needed and efficient fish cleaning back at the dock. CATCHING “BULLS” What to Know About Fishing for Red Drum

A

lso known as redfish, spot tail bass, puppy drum or channel bass, red drum got their name from the knocking or drumming sound made by the males’ swim bladders during spawning. Found up and down the east coast and in the Gulf of Mexico, they are probably the most prolific species of gamefish in our waters. With red on their backs fading to white on their bellies, they can be easily identified by the spot that looks like an eye near the tail. September is prime time for "bull" redfish, those that have grown past 27 inches. During spawning season, they start gathering in large schools off the beach, at sandbars and near rock piles. Anglers chase them on the flats with fly rods and light tackle. Fishing on the bottom in the creeks with live bait or cut dead bait will often produce good catches. Note: they have to be between 15 and 23 inches to put in the cooler for dinner, but red drum up to 35 inches are often caught inshore. These guys average between 20 and 60 pounds and will blister a drag on a medium weight reel. Often when the bite is on you can catch double-digit numbers, which makes for quite a memorable day of fishing, even when you do have to release them! Live or dead menhaden, squid, mullet or whiting are my favorite baits and are fished with a fish-finder rig on the bottom. Occasionally, redfish are even hooked by fishermen trolling deep lures. I like to use a twenty-pound spinning rig for maximum fun, but have caught them on lighter tackle. This is one of my favorite fish to catch — it says so right there on my Bayrunner logo!
