The wine and dine experience held at the Saluting Battery exclusively during Delicata’s 15th Classic Wine Festival showcasing Malta’s top award-winning wines and delicious dishes under a starlit sky at the Upper Barrakka Gardens in the nation’s capital city, Valletta.


WINES Girgentina Frizzante, NV, I.G.T. Maltese Islands by Delicata Made from Malta’s unique native white grape, this semi-sparkling wine caresses the palate with refreshingly crisp flavours of green apple, riper pear and elderberry.



Gran Cavalier Chardonnay, 2015, D.O.K. Malta Superior by Delicata This gold-winning, barrel-fermented dry wine surges from the glass with a pleasant whiff of wet gravel and white-stone fruit. This fuller-flavoured Maltese Chardonnay is mouth-filling with a tightly-knit texture and creaminess on a broad palate.

Medina Grenache Cabernet Rosé, 2015, D.O.K. Malta by Delicata A delightful salmon-hued pink wine made from hand-picked Malta grown red Grenache grapes, renowned for producing top quality rosé wines, and Cabernet, with flavours reminiscent of black-pepper dusted strawberry fruit.



Grand Vin de Hauteville Cabernet Sauvignon, 2015, D.O.K. Malta by Delicata This dry red wine entices with a velvety texture and defined flavours reminiscent of blackcurrant and all the plum-like allure expected from Cabernet. The whiff of desirable spice cupboard aromas and its bright fruit pair well with the Chef’s main dish.

Grand Vin de Hauteville Viognier, 2014, D.O.K. Malta Superior by Delicata This elegant, unoaked dry white Maltese wine simply delights with apricot, peachy goodness and a fair tad of tart citrusy brightness. The combination of its body and mouthfeel laces well with the varied flavours, and bridges a freshness over to the next course.



Grand Vin de Hauteville Moscato, 2013, D.O.K. Malta by Delicata This is Malta’s home-grown golden sweet liqueur wine made from concentrated, hand-picked grapes. This rich, opulent wine has a lovely honeyed nose with a wonderful marmalade flavour brightening up dessert.

Fresh Gozitan goat cheese gâteau, basil and pine nut crumble, cracked pepper crisp (v)  Starter

Maltese tuna tartar topped with seawater caviar, on a bed of swordfish carpaccio with a sundried tomato brush, candied lemon with white balsamic gel and garlic crostina or Vegetarian Starter

Baby spinach salad, potato and tomato mille-feuille, roasted peaches, pickled beetroot sprinkled with crushed walnuts  Main

Slow cooked beef, deep-fried bonbon of beef and carob, pea pod puree, sweet potato and squashed garlic cake with wild thyme essence or Vegetarian Main

Cauliflower, aubergine and pepper bake with a chick pea and lentil croquette, sweet potato dauphinoise, pea pod puree and saffron milk  Dessert

OUR BOUTIQUE WINES Emmanuel Delicata Winemaker Ltd, more colloquially known as Delicata, is the most awarded winery of Malta located in the heart of the Mediterranean where Phoenicians grew grapes hundreds of years ago. Like the Phoenicians’ Tyrian purple dye, prized in antiquity because the colour became brighter with weathering, Delicata’s wines capture the Islands’ sunlight. They shine at renowned wine competitions and have amassed over 100 international awards. Delicata’s Maltese and Gozitan wines are all made from fresh, hand-picked grapes from pocket-sized vineyards of the Delicata domaine which is under the strict control and guidance of Delicata’s viticulture department. Vineyards planted out to over 20 different international varieties (at a density of around 5000 vines per Ha) are drip-irrigated. Yields

are between 40 and 70 Hl/Ha depending on the variety and site. The average age of the vines is 15 to 20 years. Guyot, Cordon and more innovative training methods are used. Indigenous and unique varieties Girgentina (green- skinned) and Gellewża (red-skinned) are of indeterminate age but often over 50 years old and by large dry-farmed. They are trained ad alberello (or bush method). All grapes are manually harvested during the cooler hours of the night and early morning and crushed at the Delicata winery. Winemaking embraces modern techniques. As there are: soft-membrane press, temperature controlled fermentation in stainless steel vats and barrique, Ganimede tanks, use of inert gases, maturation in French and other oak barrels, and a fully automated quality focused bottling plant.
