Two new eateries open in Village
Sby Jane Bartnett
iesta Key Village recently welcomed two new casual, fresh, and delicious takeout eateries to Ocean Boulevard. Siesta Poke, next door to Made in Rome Organic Gelato, and The Duo Doner & Deli in the Siesta Center, across from Davidson Plaza, both bring something new and completely different to the Siesta Key food scene.
The two new take-out dining spots are creating a lot of buzz on Siesta Key and throughout Sarasota. Both are being hailed as welcome entries for beach goers and visitors strolling the village.

The Face of Paris, French Facial Spa Comes to Gulf Gate
by Jane Bartnett
It’s been a busy year for Helene Bergbauer, a French trained aesthetician, a native of Paris, France and the owner as well as “the face,” of The Face of Paris, French Facial Spa, one of Sarasota’s award-winning skincare centers. After celebrating her spa’s 10th anniversary in January of this year, in March, Bergbauer relocated The Face of Paris to its current location on Stickney Point in Gulf Gate from downtown Sarasota. This summer, she was recognized as a 2024 Best of Florida Regional Award winner. Her spa, that was previously located in
downtown Sarasota, also won honors from SRQ Magazine in 2021, when Bergbauer was named best local aesthetician.
No stranger to the Siesta Key and the Gulf Gate area, Bergbauer recalled the day 26 years ago when she and her husband first visited Siesta Key on Christmas Day, 1998.
“We looked at each other and said, we’re home,” she recalled with a laugh. The entrepreneurial couple made Sarasota their home and both created thriving businesses.
“My husband is a Bavarian bread maker,” she said. He sold his Bavarian Bread company to
Mama G’s Bakery, who still use his recipes, and he owns that retail space.”
The new Face of Paris Stickney Point spa has three treatment rooms where Bergbauer works alongside Shiloh Swensk , a trained aesthetician and graduate of the Aveda Institute. “I’m so happy to be here in our new location and so close to Siesta Key.” Looking ahead to the beginning of the season, she looks forward to welcoming back many seasonal clients who have been with her for many years.
welcoming dining spot has garnered rave reviews from customers. This is the place to discover why the healthy fresh poke, and açai bowl food craze has taken the nation by storm. It is the latest restaurant creation of Chris Brown and Mike Granthon. The duo’s Above the Bar Hospitality Group also owns and manages the Summer House, The Hub, and The Cottage restaurants in Siesta Key Village.
Poke, the dish, traces its roots to the early days of the Hawaiian Islands. Fishermen created poke bowls by mixing their catch with Hawaiian seaweed and native nuts to create a meal. At Siesta Poke, customers design their own creation by selecting a protein: ahi tuna, salmon, or grilled chicken. A server adds
fresh greens, quinoa, or rice - either brown or white. And then comes the secret sauce. “All of our sauces are made daily,” said Katie Spelman of Above the Bar Hospitality Group. Calling the jalapeño sauce “incredible,” Spelman said with great enthusiasm, “I highly recommend the spicy poke, sweet soy, and the ceviche. It’s very citrusy.”
Siesta Poke’s açaí bowls are also on the menu, featuring a base of blended açaí berries, sliced bananas, strawberries, blueberries, pineapple, and mango with a topping of crunchy granola. Açaí berries are grown on the acai palm tree in South America. The purple-red berry has developed a strong following

Arts on the Horizon By
Some things old and something new Ballet has not always been slender lads and ladies dancing on their toes in tutus. Tutus date from 1832 when Marie Taglioni wore a gauzy white skirt to reveal her (gasp) ankles; Anne Pavlova is credited with developing the modern pointe shoe (1910-ish) so dancers could dance on their toes for longer than a few seconds; and men began dancing in tutus with the advent of Les Ballets Trockadero de Monte Carlo in 1974.
While improvisational dance has been around for a long time (Isadora Duncan, etc.), most dance aficionados link Martha Graham with the true start of modern ballet. Fortunately for those that enjoy modern dance, and good dance in general, the Martha Graham Dance Company will be here at the FSU Center for the Performing Arts October 11-13 for five grand performances. They are being sponsored by the Sarasota Ballet (SB) as part of the SB’s 2024-2025 season celebrating their 100th year.
The Graham dancers will present two works that were choreographed by Ms. Graham–Dark Meadow Suite and Errand into the Maze. They will also be performing Cave (2022) by Hofesh Shechter and Jamar Roberts’ We the People (2024) written to the music of Rhiannon Giddens.
We the People, first performed in April of this year, is certainly new.
But for something new, as in a world premiere by Jessica Lang, then October 25-27 are the dates to circle on your calendar. This is when the Sarasota Ballet’s first offerings of the year–Relative Works – will be performed.
For those that loved Ricardo Graziano’s 2019

modern Amorosa, they will be pleased to find that work on the same bill - danced to some of Antonio Vivaldi’s cello concertos and adagios. Napoli Act III by Johan Kobborg with music by Edvard Helsted and Holger Simon Paulli will complete this presentation (also at the FSU Center). The original Napoli was choreographed by August Bournonville in 1842, but this Act III was a recreation by Kobborg, a Danish-born dancer with the Royal Ballet of London. Bournonville had, himself, created nine or ten different productions of this work as his own abilities changed. More info at Sarasotaballet.org.
How long is Jennifer staying?
Morgan Gould’s new play, Jennifer, Who Is Leaving, left the Round House Theatre in Bethesda, Maryland, where it premiered in May of last year. She (or it) will be staying at the Urbanite Theatre here in Sarasota from October 18 - December 1 of this year.
This play brings together some people that you perhaps know, would rather not know, or have known - but hopefully aren’t you (but could, heaven forbid, be you in the future). The place to house these needed, needy and sometimes irritating folk–a Dunkin’ Donutslike highway shop somewhere in the boonies far outside of Boston.
If your husband has already looked in the freezer for his car keys and still can’t find them, what should he do? Perhaps call you at work? Well, why not?
If you are a caregiver, or care about one, then the characters in this play will be quite familiar. And, of course, if you have an actual patient who isn’t very, you certainly can connect. Well, someone must fill up someone else’s spare time. And someone always has
a child who, at the tail end of their teenage years, still hasn’t quite gotten the hang of what school is all about. And, if there is a father around, could that father also be a problem?
Director Celine Rosenthal, a Tony nominated producer, has directed many plays in Sarasota and a boatload around the country. Summer Dawn Wallace, co-founder of the Urbanite Theatre, takes on the role of Jennifer, one of the caregivers, and has the props to do so in more ways than one.
One reviewer called this play, “A comic donut dipped in tears,” it pairs a few caretakers with their caretakers and lets you to decide on whether to laugh or cry. More info at urbanitetheatre.com.
Ruby with her red dress on + Drac is back
More ballet dancers wearing red will be appearing October 4-6 at the Sarasota Cuban Ballet School (SCBS) Auditorium when the SCBS starts its 2024-2025 season with Classical + Contemporary: A Celebration of Past and Present. The dancers are all members of the Gulfcoast Studio Company, SCBS students that have participated in the summer intensive program and are moving towards a professional career. Evelyn Lyman, the principal lead in the Grand Pas Classique has, as she always does, stiffened the box of her pointe shoes to give herself more support for better balance.

releasing several snook on my snook minnow fly on another trip. Fishing in the dark is a great way to beat the heat this time of year. Look for snook and juvenile tarpon around dock lights. Deep grass flats are usually a good option for action with trout and more. Our natural resources are under constant pressure from red tides and other algae blooms fueled by residential, industrial and agricultural runoff, toxic spills and intentional releases, freezes, increasing fishing pressure and habitat loss and degradation, please limit your kill, don’t kill your limit!
Sarasota, Florida is about to get a little more “crabulous” as stone crab season kicks into gear! From mid-October to mid-May, the Gulf Coast becomes a seafood lover’s haven, where fresh stone crab claws are the stars of the show. Whether you’re a local or just “crabby” about seafood, this is the time to crack into one of Florida’s most beloved delicacies.
Stone crabs are a catch like no other—literally! Only the claws

are harvested, and the crabs are released back into the ocean to regenerate. It’s a sustainable practice that keeps both our plates and our oceans full. With a taste that’s both sweet and slightly salty, stone crab claws are often enjoyed with a squeeze of lemon and a tangy mustard sauce. Restaurants across Sarasota are ready to dish out these delicious morsels, so “shellebrate” the season by heading to your favorite seafood spot like Siesta Key’s favorite stone crab headquarters, Big Water Fish Market.
For those who like a bit of adventure with their meal, consider joining a stone crabbing excursion. Feel the thrill of hauling up traps and “shell-shocking” your friends with your catch of the day. There’s nothing quite like the satisfaction of pulling in a fresh
catch from the Gulf waters and getting it ready for a perfect seaside feast. Fifteen years ago, when Big Water Fish Market first opened, we had the grand idea of fishing for our own stone crab only to find out how much back breaking work was truly involved. We quickly realized we should leave that job to the professionals and do what we do best, buy it directly from them and serve it to you. Another great local catch during this time is tripletail. The tripletail are attracted to the stone crab traps, so they’re an easy catch!
through your fingers. Sarasota’s stone crab season is a “pinchperfect” opportunity to enjoy some of the freshest seafood around. Remember, when life gets tough, just “claw” your way to the nearest stone crab shack and enjoy the good times!
So, whether you’re a stone crab connoisseur or a curious firsttimer, don’t let this season slip
Editor’s note: This article is dedicated to the memory of Emmett Lange, legendary Siesta Key “stone crabber” that passed away in 2018 from cancer.

“We’ve created a missing link in the Village that allows customers to express their creativity by building their own poke or açaí bowl more than 1,000 ways,” said Spelman. Customers, she explained, have the option of visiting the counter and designing their own creation as they talk to a server and discuss their options, or they can build their own bowl with a digital menu board as they check out the beautiful Siesta Key Beach mural that graces the wall.
“These are fun, fresh meals, without having to sit down at a traditional restaurant. There’s nothing like it here,” said Spelman. Siesta Poke offers customers a small seating area on the deck. The DUO Doner & Deli
Another new Village taste treat for those who love Turkish kababs, gyros, and deli treats that include coffee, breakfast sandwiches, smash burgers, hot dogs and more will want to check out the new Duo Doner & Deli.
In August, Sarasota Magazine named the casual new dining spot one of the best new restaurants in Sarasota. Reviewers have praised The Duo Doner & Deli as one of Siesta Key’s most exciting new food entries. Much like Siesta Poke, The Duo Doner & Deli owner chef Jakub Skoczylas and his wife Maja Rakowiecka believe that Siesta Key Village was missing a place where beach goers could easily grab a quick and delicious breakfast, lunch, dinner, or snack to go.
Many international travelers, the chef explained, have discovered Turkish doner kababs. Better known in the U.S. as gyros, kababs are made with chicken, beef or falafel and topped with a variety of greens, peppers, onions, and sauce. They are served on pita bread, as a wrap, on lavash (a thin flatbread), or in a bowl.
“Kebabs,” he explained, “have evolved. In every country, you’ll find a different version and in Europe,” he said, “doner kebab is the ultimate comfort food. I had been missing it, so now it is here.”
Discussing his 20-year culinary career that brought him to Sarasota, the 35-yearold chef noted, “although I come from very high-end dining where I learned the skills and knowledge of food, I love the kebab. I could eat it every day.”
A native of Poland, Skoczylas’ culinary adventure has taken him to Sweden, Croatia, the U.K., and the United States. “I worked with a Michelin chef in Sweden before we had an opportunity to move here,” he said. In Sarasota, he served as an executive sous chef at the exclusive Founders Club before the couple opened their new Siesta Key restaurant and deli.
Standing behind the counter in his restaurant as he unwrapped a doner kabab, the chef explained the complexity of the dish. “This is my recipe from my Turkish friends that I met in the U.K. It is made with original recipes and a touch of every single country I’ve been in. “It takes five days to double marinate. I make it with my secret seasonings and a bit of magic,” he said with a smile.
In the coming months, the couple plan to add more items to their menu, including different kebabs, by country.
On the deli side of The Duo Doner & Deli, customers enjoy a selection of coffees, espresso, cappuccino, paninis, breakfast sandwiches, waffles, smash burgers, hotdogs, pizza toast, French fries, slushies, and other cold drinks. Tiramisu and other desserts are also on the menu. “There is much more to come,” he said. “We’ll also expand our hours as the season begins.”
The delicious large round flatbreads that he uses with his kababs are made from his own recipe and baked daily by the bakers at the local Bread Bandits. “They do an excellent job,” he said.
“We love Siesta Key, and we bring something different. May the kebab be with you!”
The Duo Doner & Deli is found at 5049 Ocean Boulevard. A small seating area is available inside the restaurant. Visit their Facebook and Instagram pages for updated hours and additional menu items. 941-298-9660.
Trained in France, Bergbauer is known for her skin care treatments that incorporate European and stateof-the-art products and technique. Her signature French facials are the basis of her treatments. Each treatment, she explained, is individually designed to meet the needs of that client.
The Face of Paris is the exclusive Sarasota distributor of the Swiss Luzern skin care products that use glacial waters and oxygen. “I use Luzern products in my facials,” says Bergbauer.
“Their serums for the eyes are excellent.” The Face of Paris is also the exclusive Sarasota distributor of Kos Paris’ French cosmetic products that are made with natural and organic ingredients.
Specialized Facial Treatments
At the Face of Paris, Bergbauer has designed facial treatments for women, teens and men and include:
For women -
• Oxygen facials to rehydrate and plump the skin
• Hydro dermabrasion- hydra facials to enhance lymphatic drainage and brighten face, neck and upper chest area skin
• Derma-planning to remove hair and dead skin cells, using a medical exfoliation blade
• Gold sculpting facials that reduce inflammation, erase sun damage imperfections and increase collagen
For teens -
“Teens and adults suffering from acne have special skin care needs that can benefit from specially designed facial treatments,” said Bergbauer.
• Purifying Treatments for Acne control using pumpkin extract, jojoba and green tree soothe the skin. A micro-exfoliant removes bacteria. A purifying mask treats blackheads
• Softness Treatment - A facial that benefits teenage skin that reduces inflammation from acne and sunburn
• Hydration treatments for teens with light acne
• Oxygen infusion treatments - Kills acne causing bacteria and increases healing
• Hydrodermabrasion - For severe acne
For men -
• Smooth and Lift Treatment - A micro-exfoliant procedure, followed by a face, neck and scalp massage and an eye mask to target eye-area wrinkles
• Bio-Suisse Essentials Treatment - A double cleansing and oxygenated mask
• Pure and cold oxygen infused mask to speed wound healing and reduces inflammation
• Back facials - Deep cleaning and exfoliation.
Along with specialized facials, Bergbauer has also designed body treatments that include full hydro dermabrasion and body polishing and treatments for the neck and arms. “One of the most overlooked areas of the body are the hands and arms,” she said. “We tend to forget about them.” The hands, she noted, can be one of the first areas to show age spots and the effects of sun damage. “When the skin on the arms starts to loosen, that can also be improved.”
For women and men who have had face lifts, she reported that the uncomfortable scarring and healing that comes after surgery can be eased with massage. “Although most doctors recommend that patients wait to have a facial, a massage can help to detoxify and ease the discomfort of scarring.”
“For hair removal, we do not use lasers or wax. Our sugar hair removal process is made from sugar and lemon water.”
Bridal Parties & Special Occasions For brides-to-be and for those getting ready for an important special occasion, The Face of Paris offers make-up for day and night, as well as lash and brow services. And what could be more luxurious than a foot bath with acupressure and polish application? To ease the strains of the upcoming holiday season, perhaps a soothing sound healing treatment to restore calm and energy might be in order.
