How to Catch Amberjack

I'm starting to get a bit sick of the complaints about why there are no Amberjack around. People keep writing in ranting that it's the weather, or the water temperature… And while both do affect Amberjacks, they don't really have anything to do with why Amberjacks won't bite your bait.
People keep on fishing in exactly the same places that they always fish for Amberjack (like Cape Point), and then wonder why nothing is biting. This angers me to no end, because I've spent over half of my life fishing for Amberjacks in all these places. But you have to be smart about it!
Amberjacks are the shyest fish in the sea. They are on guard 24/7, and can spot a trap coming from miles away. You have to trick them into biting your bait.
The first thing you need to do is find where they are hiding. Amberjacks can be found anywhere in the ocean, but they prefer to stay close to the bottom. They usually hang out around wrecks and reefs, but they can also be found near the mouths of rivers and harbours.
Once you have found their hiding spot, you need to anchor your boat upwind of them, so they can't smell or see your boat. Then, you have to get your bait in front of them.
The best way to do this is by using live bait. Amberjacks love small fish like sardines and anchovies. You can buy these from any bait store, or you can catch them yourself by using a small net.
Once you have your bait, you need to cast it in front of the Amberjack's hiding spot. Be sure to use a heavy weight, so your bait sinks quickly to the bottom.
Wait for the Amberjack to bite, and then start reeling in your line. Remember to keep the tip of your rod up, so you know when and where the fish is biting.
Once it's on the boat, kill and clean your Amberjack immediately. The meat spoils quickly in warm weather, so there's no time to waste!
