Welcome to
A very warm welcome to the new edition of the James Villas magazine, which I hope will brighten up colder days here in the UK with many features on warmer climes! I’ve recently returned from Cyprus, where Paphos is preparing to be the European Capital of Culture in 2017. For a destination long popular with James holidaymakers, this year is going to offer something a little different to those who return to the island every year. It got us thinking about more cities across Europe that we all love, and in this edition we explore some of those nearer than you may realise to our villa collections.

BALEARIC ISLANDS
James Villas’ Contractor, Mark, is our resident Balearics guru, having lived there for eight years. Who better then to tell you about these three beautiful islands? My love affair with the Balearic Islands began in 1981 on my first holiday to Ibiza, where I immersed myself in the local culture. Such was my infatuation that I packed up my UK job in 1982 to travel to Mallorca and seek work. My first three years were spent as a holiday rep, after which I parted ways with this beloved island for another adventure. However fate lured me back in the ‘90s, when I spent five years in Pollensa. When I did return to the UK to settle, my ties to the Balearics weren’t cut. I later found work at James Villas, with the enviable job of visiting and selecting each of our villas in the Balearics. I’m delighted to wax lyrical about these three gems to you now.

MALLORCA CA TRAVEL FEATURE
The hostess WITH THE MOSTEST! Mallorca holds a big place in my heart. The largest of the Balearic Islands, over 200 beaches line the coast with intimate rocky ‘calas’ and long white sand ‘playas’ lapped by the aquamarine sea. On the east coast, Cala d’Or (or ‘Bay of Gold’) offers pavement cafés and a variety of beaches, while the Cala Mondrago natural park has beautiful, unspoilt coves. It’s the north eastern towns of Pollensa, Puerto Pollensa and Alcudia

Away from the coast, the Tramuntana Mountains and inland villages offer fascinating sights and experiences. Walking and hiking are popular here, particularly in spring when the almond trees are blossoming. In the interior countryside, traditional old farmhouses - fincas - are being restored to provide upmarket holiday homes. Meanwhile, local restaurants and bistros are serving up fantastic Mallorcan dishes with recipes passed down through generations, such as Tumbet (a local version of ratatouille) and Escaldums (a chicken casserole made with figs or apricots). Dining in Pollensa is my personal favourite. The tapas bars are a great post-siesta pick-me-up, and there are lovely delis that offer ready cooked dishes to take back to your villa and enjoy with a glass of vino.

though, that boast the longest stretches of sand. The drive to Alcudia from Puerto Pollensa offers great views of the bay - one of the best sights I’ve seen. Further round the bay you can often see a colourful display of wind surfers and kite surfers gliding across the water.
CAR ESSENTIAL
While talking about Pollensa, I have to mention the annual fiesta of “La Patrona”. Two weeks at the end of July sees cultural events culminating
in “los Moros y Cristianos”, the epic battle re-enactment between the invading Arab Corsairs - armed with cutlasses and cannons and the white pyjama-clad locals, bearing only large sticks or “palos”. Having had the honour of taking part I can vouch for its fervour and intensity! It is fiercely considered a privilege for locals only; I had to avoid speaking too much in case I was outed as a “forrester” (foreigner). So it’ll have to be our little secret!

Menorca’s accents, flavours and fashions may seem similar to Mallorca, but there’s an easier going charm to the place and the people revel in their laidback way of life. It’s not all siestas and “mañana” attitudes though - during the summer months every village bounces in celebration of its annual fiesta. The liveliest, the San Joan fiesta of Ciutadella, opens the fiesta season with a bang! Three days of eating, drinking, dancing and spectacular shows of horsemanship are a privilege to experience. Of course, Menorca has other attractions too! Xoriguer Gin, a popular tipple when mixed with bitter lemon and frozen to a slush puppy consistency, is made in the capital, Mahon, and fuels the locals throughout the fiestas!
I also can’t resist telling you about the fishing a lovely way to pootle about the cala-strewn coastline in a boat. I recently spent an evening fishing at dusk, cruising up and down underneath the music bar ‘La Cueva’ in Cala ’n Porter. The lights of the terrace reflected on the sea and the music provided a nice backdrop to the waves lapping the boat. I even caught a barracuda (vicious looking thing, it was).

IBIZA TRAVEL FEATURE

PARTY ISLAND? Much more than that! Ibiza has been famed for its party lifestyle since the 60s, through various eras of music. Remember Club Tropicana - Wham? Drinks aren’t free these days, but there’s still enough fun and sunshine for everyone! Ibiza Town is one of the liveliest parts with its selection of shops, while the old town offers intimate tapas bars, fashion shops - both hippie and modern - and a buzzing evening atmosphere. The wilder northern coast has to be my favourite though, with its hideaway coves. Here you’ll find Portinatx - a mere 30 minutes away from the club lands, yet the prevailing sound is the buzzing of cicadas in the pines. There are also little villages to discover. San Joan and Sam Miquel are charming, while Santa Gertrudis has a lovely little town square and a dozen quaint restaurants.In fact, if you’re a foodie you can be nowhere better. Look for restaurants outside the villages where there are local cars in the car parks. The Menu del Dias are usually excellent and can cost less than €10. Santa Gertrudis

RCA But let’s not forget the real attraction of Menorca, as with all the Balearic Islands - the sun! Hidden coves with azure waters and golden sands entice holidaymakers back year after year. Myself included, although I don’t consider myself a visitor as such. Coming back to the Balearic Islands just feels like coming home.

If you imagine the cuisine to be all garlic and squid, you’d be mistaken - Ibiza offers some of the best lamb chops and steaks I’ve had! So if you like to barbecue at your villa, look for local grocers with a butchers section. My favourite is in San Joan where I’ve picked up some delicious steaks. All in all, this pine-shaded island is small enough to drive around in a day, but with enough experiences to fill at least a two week stay. One way to see it is to do what my friends and I did back in 1981 and explore by scooter, following tracks down to hidden beaches and stopping at roadside bistros. You might want to hunt out one of my favourite spots - Talamanca’s beachside restaurants offer fantastically fresh seafood including in-season sardines a la plancha! Portinatx

SPICED BAKED FISH
with beans & greens
Spain’s costas don’t just serve up sun, sea and sand, they’re a real culinary blessing! Fish is a firm favourite here, and this dish calls for any type of white fillet - bream, cod, sea bass or mullet. Whipped up for James Villas by chef and author Jo Pratt, it’s equally tasty marinated and baked in a hot oven, or folded in foil parcels, cooked on your villa barbecue.
You will need... 4 white fish fillets, skin on
1 green pepper, seeded and sliced
2 tbsp olive oil
2 large handfuls of rocket or baby spinach leaves
1 tsp hot or smoked paprika
1 bunch dill, chopped
Juice ½ lemon
2 tbsp capers, roughly chopped
2 lemons cut into wedges
4 anchovies, finely chopped
250g green beans, halved
2 tbsp red wine vinegar
1 can cannellini beans, drained
1 clove garlic, crushed
400g black eyed beans, drained
6 tbsp extra virgin olive oil
1 bunch spring onions, chopped
Salt and freshly ground black pepper
1 large ripe avocado, peeled and diced

For the fish, mix together the olive oil, paprika, lemon juice, salt and black pepper in a large bowl. Add the fish and turn to coat in the flavoured oil. Cover and set aside to marinade for about 30 minutes.

Pre-heat the oven to 220C/200C fan/gas 7 then sit the fish on a baking tray or in a roasting dish and scatter around the lemon wedges. Bake in the oven for 15-20 minutes until the fish is just cooked through and the lemons are softened and becoming golden.

Meanwhile, bring a medium saucepan of salted water to the boil and cook the green beans until just tender. Drain and tip into a large mixing or salad bowl.

Mix the tinned beans, spring onions, avocado, green pepper, salad leaves and dill.

To make the dressing, mix together the capers, anchovies, red wine vinegar, garlic and olive oil. Season with black pepper and a small pinch of salt. Pour over the salad and toss to coat.

Serve the cooked fish with lemon wedges to squeeze over, with a big bowl of salad and some patatas bravas on the side.

Mealtimes are about much more than food in Spain. Traditions hold fast here and meals are a real social affair. If you really want to dine Spanish-style you’ll need to reset your routine and prepare for a long and lazy night… After an afternoon siesta, stave off hunger pangs with a few plates of tapas, because in Spain, dinner is late! In the summer restaurants will probably be pretty quiet until 9pm. When desserts are devoured and drinks are drained, don’t rush to pay ‘la cuenta.’ ‘Sobremesa’ - the time spent enjoying each other’s company after eating - is as enjoyable as the meal itself.

KEEP IN THE SUMMER HOLIDAY SPIRIT YEAR ROUND Come January many of us think about making resolutions for the year ahead. Travel more, discover different cultures, try new cuisines... Sound familiar? But what about your last holiday? Did the memories fade faster than your tan? We all know that time away influences our wellbeing, so here are seven easy resolutions - the little things that you can do to hang onto that holiday feeling year round.

It’s something to look forward to while counting down to the next holiday and the whole family will be thinking about the trip and researching it.

The scent of jasmine on a balmy evening, a vanilla oil burner in a restaurant, or the perfume you bought at the airport and wore all week. Buy some for home, close your eyes and drink it in. Better still, light some candles in the bathroom, run a bath, dim the lights and soak up the aroma and peace in your own little sanctuary.

Finding something that captures your attention in places geared up for the typical tourist can be tricky, but here are a few ideas that will have you coming home brimming with memories, not just souvenirs.

FOR THE STARS
Are you a budding amateur astronomer? To see a bright blanket of stars above you need a clear night and a spectacular location which could be closer than you think.

Take Tenerife - on this island light pollution is limited by law and it’s been rewarded with a Starlight Tourist Destination Certificate. Basically, it’s an incredible place to go stargazing. In fact there are many great stellar experiences throughout the Canaries, but the Mount Teide National Park - where you can tour the Teide Observatory - is one of the best. Here you can take the

Many of our villas in Tuscany are perfect for just that, with endless rolling hills, valleys and less city lights than many other locations. It’s said to be a great place to view the Moon’s craters. It’s also here that Galileo pioneered the telescope, so you’re in good historical company.

UP A STORM
For an authentic experience of Italy, it simply has to involve food. After all, the Italians are famous for their pizza, pasta and other tantalising dishes. There are plenty of places here to buy fresh from the land or have a cookery lesson from a generation brought up in the kitchen. Better still, take it one step further by picking or foraging your own ingredients in combination with a masterclass. Trips like truffle hunting give you the chance to source and learn about the ingredients in the gorgeous Tuscan landscape, cook them up in delectable Italian style and finally tuck in to a three course meal.

WE’VE HEARD IT ON THE
Winemaking is one of the world’s oldest traditions. All over Europe you can find festivals celebrating the good grape, as well as vineyards offering tours, tastings and historical insights. Destinations like Italy, France, Spain and Portugal all produce some exceptional blends, but if you want to do more than quaff it, look out for the grape harvests taking place from mid-August to early October. This is the ideal time to get involved in the actual process at many harvest festivals. Some of the most renowned vineyards still pick grapes by hand and use old fashioned methods like grape stomping, and welcome visitors taking part. It’s not all work and no play, mind. Wine tourism is full of good cheer, with obligatory feasting and drinking!
Ever thought of being a goatherd for a morning? Probably not. It’s not the typical way to experience some of Portugal’s incredible northern scenery, but it’s probably the most unusual. Armed with binoculars, walking poles and a head goatherd to guide you, hike through the heart of this spectacular landscape alongside a large flock of goats. Serra D’Arga and Parque Nacional da Peneda-Gerês are both areas perfect for goat herding. Accompanied by your stone-stomping friends, you’ll blend into the natural surroundings, so you may catch an up-close view of otters, boar, ibex, eagles and wild horses. Close to the Spanish border, your wilderness journey will have you hiking peaks with spectacular views overlooking the vast oak forests and valleys below.

LIKE NO ONE’S WATCHING Salsa like a seňorita, get your rumba groove on, merengue until the morning or find your flamenco feet on your next holiday. Dance is an incredible art form, full of feeling and emotion, mesmerising to watch and even better to try. Spanish culture wouldn’t be the same without it, shaped over the centuries by the Moors and gypsies and now enlisted by UNESCO as an item of ‘Intangible Cultural Heritage of Humanity’. The iconic flamenco originated in Andalucia and symbolises courtship and passion, performed at religious festivals and private celebrations. If you’re planning to see Spain, there are plenty of places to learn their national dance. You can pre-book a lesson in many towns and cities. With expert tuition under your belt, next time you chance upon a fiesta you’ll be joining in, in true Spanish style. Plus it’s a great way to work off those delicious churros!

All good companies have a story. Here at James Villas, we like to remember that we were once a person. We still want to draw on that ethos and remember where we came from. Which, in case you want to know, was the headspace of Jim Needham, with a big idea and spare bedroom-office. Jim was the lucky owner of a property in Lanzarote. Renting out spare weeks to his colleagues, he was dubbed the unofficial travel agent of Fleet Street. Redundancy in the early ‘80s gave him the opportunity to turn his hobby into a business and James Villa Holidays was officially born in 1985. We actually still have employee number one in the company! Since Jim retired, we’ve held on to that passion of a family-run business. The Wyndham Group - our owners since 2010 recognise and nurture that spirit. We last changed the way we looked in 2002, and boy has the world changed! There are now a whopping one billion websites around; back in 2002 there were only 38 million. In 2003 Thomas Cook launched JMC, remember them? What about Facebook? That was launched in 2004, while 2008 saw Airbnb pop up from nowhere. Uber appeared in 2009, revolutionising the taxi industry, and in 2010 Candy Crush became a phenomenon.
What’s nice is that we have remained a constant - we are still here. We offer the same great service, even more beautiful villas, and what’s really amazing, our customers are growing with us. That said, we have spent the last year looking at ourselves. Really, really looking in every nook and cranny, at every villa, our website, brochures - in fact everything you see from James. Why? For you guys. We want to make sure that James Villas reflects what you want, not what we think you want. So much has changed in the world, did we need to change too? In early 2016 we set out to speak to as many of our customers as possible. Customers who have travelled with us every year for the last 20, customers who have stayed with us once, and people who are yet to be James customers… Research is quite a humbling experience; it endorses what you do, and at the same time tells you things you didn’t know. It became clear what was working for our customers and what we needed to fine tune. First and foremost we discovered how nervy
people become when booking a holiday. Not the researching part – that bit is fine. We all love looking through inspirational photos and friends’ holiday snaps, skim-reading National Geographic Traveller and making Pinterest boards of bucket list activities. That’s the part we all enjoy. The part where anxiety crept in is choosing accommodation. That’s right, that’s our job, and we need to make every part of your holiday stress free. It is, after all, what you look forward to all year. So for 2017 we have launched our new villa collections. Don’t worry, we still have the same great properties, but we have designed the collections so it’s really easy to pick and compare what you want from your villa. They’re simply based on villa facilities, so whether you’re looking for a small, rustic bolthole as a

We knew we needed to look at this too. We invited groups of customers in for a discussion about how we look and what they thought
about the business. James’ signature really rang true with everyone - the authenticity and personality of the business shone through, which is such a compliment to everyone who works here. However, it was unanimous that we looked older than our years and needed freshening up! The gravity of changing something that’s already much-loved weighs down heavily though. We can’t tell you how many different fonts and colour blues the team here have seen over the last six months to get this just right. And now, you’re reading the first magazine with our new look and the new logo. We’ve had such an amazing journey throughout 2016, delving into the brand and what we needed to tweak and change, all based on customer feedback. Writing this feels a little bit like showing off our baby’s photos! We hope you’ll agree that the new look is a good one, and we’re ready and waiting to whisk you away on another James Villa holiday very soon, or welcome you to your first.

The Canary Islands are famed for their year round sunshine, with balmy average temperatures of 19°C in winter. Apart from topping up your tan and recharging your batteries, there is plenty more to do. The colonial towns and sweet little villages hold many surprises, and the interior landscapes are fabulous to trek.
The winter months in Cyprus see the scorching heat transform into a pleasant, mild temperature - and the pace of life winds down accordingly. You can explore the deserted Paphos coastline, camera in hand, ready to snap those pictures without the summer haze. You can visit almost empty archaeological sites at Kourion, hike the Troodos Mountains and, if there is a snowfall, even join the locals there for a ski!
Winter also doesn’t have to mean that fiesta season is over. For music, food and fun check out the Fiesta Nuestra Señora de la Candelaria in TÍas, Lanzarote. For Rio-esque celebrations, the Carnival of Santa Cruz de Tenerife in February is a 15 day flamboyant affair, with an opening parade and parties every night until Ash Wednesday. Then, just when you think it’s all over, the following weekend they celebrate some more with the weekend of the Piñata Chica!
If you’re in Cyprus to celebrate New Year look out for Vasilopita. Known as ‘Basil’s Pie’, this sponge cake is flavoured with local oranges and brandy, with almonds scattered on top. Yum! For more tasty treats, visit any harbour on the 6th January to watch the Epiphany celebrations, known as ‘Ta Fota’, and eat lokoumades (tiny honey-soaked donuts) from the roadside stalls.

The Sunshine State is full of winter promise! What with Halloween, Thanksgiving and then Christmas, the Americans really know how to celebrate this time of year. There’s a whole host of fun events and attractions in Orlando’s parks and far beyond.
Azure seas, pristine beaches and palms swaying to a rum and reggae tempo - an intoxicating mix for a holiday! Expect glorious winter temperatures of around 26°C, perfect for surfing the waves, diving colourful reefs, hiking rainforests, or enjoying a game of golf.
The beautiful Gulf Coast for instance, is brimming with activities. Naples is home to some fantastic malls and boutique shops. It’s also close to the Everglades, which you can see by air boat. Venice has several golf courses and the Oscar Scherer State Park, which is a great way to see Florida’s wildlife on foot, or by bicycle.
The Caribbean islands are steeped in colonial history, bursting with historical and ecological sites that reflect their cultural heritage. Modern culture is just as vibrant and there’s no better place to enjoy a musical scene. Many festivals celebrate jazz, reggae and calypso tunes. Look out for the Barbados Jazz Festival in January and Jamaica’s Bob Marley week in February.
There are also many water activities in Florida - sunset cruises around the bay of Sarasota, or canoeing around the waterways of Fort Myers. Finish off with a visit to the Thomas Edison winter home, with its famous tropical gardens and the amazing Banyan tree - definitely one to tick off the bucket list.
Another great event is the Mount Gay Round Barbados race in January. The skippers navigate their vessels around the island in a three day boat race. There’s also the Holetown Festival in February, promising historic tours, Bajan nights, delicious street food and entertainment.

If that’s not enough to tempt you, perhaps the winter celebrations are. The 31st December brings Funchal’s spectacular Guinness World Record firework displays, and in January you can take part in one of the island’s oldest traditions, the Festa do Panelo in Seixal. In late February the parties really start, with the island’s famed carnival.

Madeira sits in the Atlantic Gulf Stream, which means it gets a whopping five times more winter sunshine hours than London, with daytime temperatures around 20°C. Warm days make this sub-tropical landscape a playground. Follow the Levadas irrigation channels through the mountains for breathtaking views, explore the botanical gardens, or head out on the water for deep sea fishing or whale and dolphin watching.

WHAT PROMPTED YOUR FIRST VILLA HOLIDAY?
Casa del Faro, Lanzaro
We wanted to explore new countries, but we also wanted a base to call home. Villa holidays were a great solution, giving us the freedom to spend our holiday as we wished. That holiday was in Frigiliana in Andalucia, the villa was on the mountainside with spectacular views. It was there that we fell in love with Spain and Spanish culture. We wanted to see more of it, so we visited the Costa Blanca’s Jalon Valley the following April and Lanzarote in the autumn. YOU’VE VISITED LANZAROTE MANY TIMES. WHAT IS IT THAT KEEPS DRAWING YOU BACK?
Lanzarote has a spirit you can’t find elsewhere. Stopping for lunch in a fishing village is like visiting old friends, the locals are so welcoming.

We like to visit the Sunday market in Teguise, buy some provisions, practise our Spanish and maybe stop for tapas. It’s almost home. We love to discover the culture and history of the island - the Manrique Foundation is a favourite and the Mirador del Rio has breathtaking views we never tire of.

It’s getting greener. We were staying in Tías a few years ago and there was a storm one night. In the morning we saw the owner and discussed the changing climate, he said the rainfall was encouraging growth from the volcanic rock. WE HEAR YOU WROTE PART OF YOUR NOVEL IN ONE OF OUR VILLAS THERE?
Yes, Pam always said that when she was retired she wanted to write a book. Our travels have had a big influence on our lives, so it was only natural that some of those experiences crept in. Pam wrote part of ‘Doppelganger’ on one of our Lanzarote trips and villa Casa del Faro in Playa Blanca features in chapter 18. There’s something about being at a villa that really made the words just flow. Not just the general peace and privacy, but in having a relaxed state of mind. YOU’VE MENTIONED THE LOCAL PEOPLE A FEW TIMES, DO YOU HAVE ANY STAND OUT MEMORIES?
We recently visited Puglia in Italy just as Leicester City won the Premiership. Leicester City has become very popular in Italy, not just
because of their unlikely win but because their manager, Claudio Ranieri, is Italian. When the Pugliesi found out that we came from Leicestershire we were treated like royalty! HOW DO YOU CHOOSE WHERE TO GO NEXT?
Mike does the research - he enjoys the excitement of planning and finding out about destinations before we go. We choose a sunny climate and a villa within easy reach of restaurants and shops. We like to explore the area though, visit sights and attractions and really experience the local culture - shopping at the markets for local products, trying speciality dishes then recreating them back in the villa or at home. WHAT ABOUT CHOOSING A VILLA?
We’re returning to Menorca. Their small island culture is fascinating. It’s very low key and laid back. We are looking forward to revisiting Torre d’en Galmés, a prehistoric settlement of villas on the island, and we also want to drive up El Toro. It’s Menorca’s highest point, around 358m above sea level and you get a fabulous 360° view of Menorca at the top. On the way up we want to stop at the 17th century sanctuary, Mare de Déu del Toro.

We normally go on your website - it’s got all of the information we need. There was one trip though to Lanzarote when the Resort Manager had picked up on a later booking we had that year. She said she didn’t think the villa was a good choice for us and offered to show us some alternatives while we were there. We were able to visit the vacant villas and, on her advice, we changed our booking. It was so kind, but then we’ve always found the staff in resort have “James Villas” written through them like a stick of rock! Making the

They say “start as you mean to go on”, and this two day event is sure to kick off the year’s events in style. Set in Paphos’ cultural centre, the beautiful neoclassical buildings, traditional mansions and town hall will make a wonderful Open Air Factory stage. Inspired by Paphos’ rich mythological heritage, the city streets will come alive with music, dance spectacles, theatre, street shows and other events. This promises to be a tantalising glimpse of what to expect of the rest of the year.
Four years in the planning, Paphos and the surrounding region are being transformed into a cultural extravaganza. Music, theatre, art and dance make up just some of 300 events throughout the year. What is particularly special about Paphos however, is the central concept the Open Air Factory - based on a tradition spanning thousands of years, when cultural events were held not in a theatre or concert hall, but under the open air, Paphos uses some of its most spectacular sites and attractions to create a stage, the likes of which you have never seen before. Here’s a glimpse at just some of the events on over the year.

Cut the halloumi into chunks/cubes and put in a bowl. Chop the garlic, lemon zest and oregano together on a board then add to the halloumi, along with 2 tbsp olive oil. Stir gently to coat the cheese in the marinade and set aside for a couple of hours, if you have the time.

These tasty Cypriot kebabs were whipped up for James Villas by chef Jo Pratt. They’re quick and easy to make, which is great because you’ll find they get wolfed down by the family in minutes. Halloumi cheese is perfect for cooking on the barbecue as it holds well together. If you prefer you could also use prawns or chicken - they’re both delicious with the lemon and oregano marinade.

You will need...
500g halloumi cheese
Large handful flat leaf parsley, chopped
2 cloves garlic, crushed
Large handful mint, chopped
Grated zest and juice of 1 lemon
2 tbsp tahini (sesame seed paste)
Small handful fresh oregano leaves
2 tbsp Greek or natural yoghurt
4 tbsp extra virgin olive oil, plus extra for drizzling
2 tbsp lemon juice
Approx. 25 cherry tomatoes, halved
Salt and freshly ground black pepper
¾ cucumber, cut into chunks
1 tbsp sesame seeds
250g radishes, halved or quartered
Flatbreads, to serve
1 small red onion, finely sliced
Makes 6 skewers
To make the salad, put the tomatoes, cucumber, radishes, red onion, olives, parsley and mint in a mixing or salad bowl. Add a good drizzle of olive oil and season with salt and pepper. Gently toss to combine and set aside.
For the dressing, mix together the 2 tbsp olive oil, tahini, yoghurt, lemon juice and 2 tbsp cold water. Season with salt and pepper.

To cook the skewers either prepare a barbecue to a medium heat (until the coals are pale grey), heat a griddle on the hob, or pre-heat the grill in the oven to hot. Thread 4-5 cubes of halloumi per kebab onto metal or wooden skewers and spoon over the marinade. Cook for 4-5 minutes, turning occasionally, until golden and charring.

While the kebabs are cooking, briefly heat the flatbreads either on the barbecue, over a gas flame or under the grill.

Serve the flatbreads on plates with the salad and dressing spooned over, topped with the halloumi kebabs and sprinkled with sesame seeds.

Every place we visit has some secrets up its sleeve. We wanted to find a few hidden gems for you to consider on your next trip, and with our detective hat on we went off to investigate the unusual, the quirky and the spectacular.
COSTA BLANCA Sant Pere De Rodes is a 10th century former Benedictine monastery, which is built into the rock on a platform of terraces on the side of the Verdera mountain. From the highest point of El Port de la Selva you can wonder at the most incredible 360° views, including the Catalonian coastline, the Cap de Creus Natural Park and towards northern France. The site is one of the best examples of Romanesque architecture in Girona, and even inside holds a spectacular surprise as you walk among the huge pillars and look up at the high ceilings above. You can drive most of the way up, with a 30 minute walk from the car park. You can even cycle up, but be warned, it’s not for the faint hearted!
DUBROVNIK Next time you are in Dubrovnik Old Town keep an eye on the city wall. In particular small openings in the walls that are big enough to pass through, but could quite easily slip your eye if you’re not paying attention. Passing through these holes-in-the-wall and following their paths will lead you to Dubrovnik’s best kept secrets, Buža I and Buža II. In Dubrovnik dialect, buža means “hole” and the name is apt to describe the bars carved out of the cliff, with the barest functionality and minimalist furnishings, but offering incomparable views of the open Adriatic Sea. Open during the spring and summer months, you can sit at a table and linger over a cold drink while taking in the spectacular panorama.

PUGLIA 12 miles off the Gargano coast in Puglia is the archipelago, Isole Tremiti. This cluster of five islands holds thousands of years of history, including the 11th century Abbey of Santa Maria and the Badiali Castle. To get there, park your car on the mainland and take the ferry over. Once there you can hire bikes, boats or explore the islands on foot. It’s worth taking your snorkel to take a peek under the crystal clear waters, or you can join in a diving expedition for a guided tour. It is said that the Warriors of Diomedes - the war heroes of Troy died and were buried on the islands. Legend has it that Venus transformed them into birds. The Diomedes birds leave Africa every spring and fly to the Isole Tremiti to nest on the steep cliffs of the islands; their particular birdsong can be heard clearly during the night. Folk say the sound is the wails of the partners of the Diomedes warriors, who are mourning the loss of their heroes.
FLORENCE Florence is renowned as a Renaissance city. Its historical centre is a UNESCO World Heritage Site and is associated with some of the world’s most treasured art. It’s probably not the place you would think of looking for street art, but locally based French artist, Clet Abraham, has a fun way of injecting a tongue-in-cheek humour, by transforming city street signs into works of art using removable stickers. Visit his studio in the uber-trendy Quartiere San Niccolò, where you can buy stickers or postcards of his popular pieces, talk to the artist or catch him working on his latest project. He also sells the signs he has recuperated after the authorities have removed them.
ALGARVE Pinterest fans and internet explorers may have come across an incredible photo claiming to be the ‘Lost Temple of Lysistrata’. We hate to tell you that this image is a clever fake combining the Pantheon in Rome and the Benagil Caves in the Algarve. So while you can’t really visit the Lost Temple, you can take a boat trip to the most impressive marine caves of Europe. The Benagil cave tour runs between Armação de Pêra and Carvoeiro and allows you to visit either a white sandy beach or a cave only accessible by sea. You get to stay for about 30 minutes before the boat comes to pick you up, but be prepared to swim to and from the shore, as the boat can’t go all the way in!

DRIVING ROUTES There are few adventures bigger or better than a road trip. Pack a picnic, a camera and round up your favourite people and you have all of the ingredients for a fun-filled day. Car hire on holiday is a tool for exploration, and when there is so much more to the destination than your villa, why not get out and see it!
Fuerteventura The dramatic mountainous terrain strikes you the minute you arrive in Fuerteventura. A route that takes you into the heart of the mountains in the centre of the island is the best opportunity to take in these incredible views. Start your engine in Caleta de Fuste, a tourist centre and marina with an 18th century fortress and tower. Head out of town on the FV-413 and you’ll arrive in Antigua after about 20 minutes. This agricultural and handicraft village is dotted with an array of local craft stalls to browse. Drive on to Betancuria via the FV-416, then the FV-30. This is Fuerteventura’s former capital, which shows off the distinctive architecture of the island.

Re-fuel with a tasty lunch in one of the many restaurants, before heading south on the FV-30. After 500 metres you’ll find a dirt track, which marks the beginning of your mountain journey. Your reward at the end of the track is a picnic area where the view of Betancuria is fantastic - so bring snacks and your camera! While you’ve got your camera handy, head up the FV-30 and just after passing the entrance to
Antiqua Betancuria the Morro Velosa viewpoint, follow the road for only a few more metres and you’ll find parking spots on both sides of the road. This is the best place to view the Betancuria Valley. You’ll feel like you’re high-up, floating in the clouds. Pose alongside giant bronze statues of Guise and Ayose, Kings of Ancient Fuerteventura.

Back in the car, wind through the roads of the FV-30, rolling through the mountains until you reach Vega de Río Palmas - a place of pilgrimage. The impressive church here houses
Nuestra Senora de la Peña the Virgen de la Peña, patron saint of the island. Head north again, following the FV-30 to Casillas del Ángel, Los Llanos de la Concepción and the valley of Santa Inés; villages that have preserved all their typical local character and charm. The FV-20 will take you to the capital Puerto del Rosario, where your exploration finishes. Not that there isn’t plenty to see! If you wish you can visit the Church of Nuestra Señora del Rosario and the Museum of Unamuno - a Spanish poet, novelist and playwright.

COSTA BLANCA Costa Blanca is a melting pot of powdery white beaches and turquoise waters, with unexplored valleys and hilltop hamlets. No doubt it’s a firm holiday favourite. The varied landscapes are a driver’s dream, and this route takes you right to the unspoilt beauty and traditional towns. Start your drive by the sea. Pretty little buildings with whitewashed walls and views out to the Mediterranean add to the charm of Altea. It’s easy to lose a whole day in this coastal town, but instead head inland along the CV-760 to La Nucia. Endless fields of vegetation make for beautiful scenery, and there is some great shopping too.

Hop back in the car - the next stop is the village of Polop. Just a 20 minute drive along the CV-70, in Polop you can leave the car and amble up the zig zag paths to the medieval wall. The views are fabulous. You can even see back to your starting point of Altea on a clear day.

Head higher and the windy roads will lead you to Guadalest town. The Penon de La Alcala bell tower stands perched high on the
Guadalest mountain - quite the sight to behold while ascending to the town. Park up to take in breathtaking views across the mountains and down into the valley. Guadlest town itself has a selection of great restaurants, shops and attractions, including a museum. Stop for lunch and take in the beauty of untouched Spain.
Polop
When you’ve finished eating, head east on the CV-755 to Callosa d’en Sarrià. Choose to look around the cathedral, visit the waterfall or the nearby DinoPark, which the kids will love. Onto peaceful Parcent via the CV-715, known for
its wine grape growing - and of course more spectacular views. Don’t head back to your villa just yet. Take the CV-720 then the CV-750 to Jalon, where you can pick up wicker products made here and absorb the valley views. When you’re ready to head home, get back on the CV-750 for about 6km, then join the N-332. Now you can cruise through the main resort areas along the coast, back to your villa for a dip in the pool.

ENCOUNTER STINGRAYS IN ANTIQUA
EXPLORE THE ISLAND OF GOMERA La Gomera might be small, but it’s still well worth seeking out. Getting there takes just under an hour from Tenerife by boat. Known as being the volcanic island where Columbus set out from to discover America, the island’s gem is its ancient subtropical forest of Garajonay in the centre. In fact, the entire landscape is splendid, with unspoilt coves and dramatic ravines. If you’re lucky you might hear the sound of ‘Silbo Gomero’. Known as the Gomeran whistle, it’s a UNESCO protected, whistled form of Spanish used by the islanders, which carries on the air over the narrow valleys. There’s plenty more to fill your day here, including whale and dolphin watching. Just make sure you’re back at Valle Gran Rey at sunset to be treated to a sky spectacular.
Rated the top thing to do in Antigua by Trip Advisor, Stingray City offers the unique opportunity to get up close and personal with these remarkable creatures. While this could sound a pretty crazy idea to some, they’re actually very gentle and friendly. A short boat trip out has you standing in warm, waist deep water surrounded by tropical fish and colourful coral reefs, making even just swimming and snorkelling a pleasure. The highlight though is feeding the stingrays, interacting with them, or just watching them glide gracefully through the water. It’s one the whole family will love.
AIRBOAT RIDE IN THE EVERGLADES Florida isn’t all about theme park thrills. Probably the best known natural attraction in the Sunshine State is the Everglades. Nicknamed the ‘River of Grass’, it’s vast, wild and teeming with wildlife. The ultimate - and most fun - way to see it is without doubt by airboat. From the air whipping your face to the narrow, meandering mangrove passages, it really is an experience. There’s also an animal sanctuary nearby, and some tour operators offer alligator encounters, so all the family can see, enjoy and interact with them, should you dare!

Visit Spinalonga in Crete Reached by boat from Agios Nikolaos, Elounda and Plaka, the tiny Cretan island of Spinalonga was built upon centuries ago to protect nearby bays and as you arrive you can’t miss its imposing Venetian Fortress. Lapped by the shallow turquoise sea, it’s intriguing to imagine its harrowing history as leper colony for over 50 years until 1955. Guided tours around its ruins, streets and churches paint a haunting picture of this bygone era. Before you go, read The Island, a wonderful novel by Victoria Hislop about Spinalonga. You’ll feel a real emotional affinity to the place.
Rock climbing in Mallorca Forget sun, sea and sand. Mallorca’s perfect limestone landscape and impressive Tramuntana Mountains make this island a magnet for sport climbers. If you’ve never climbed before you shouldn’t let that put you off. There’s plenty of qualified climbing specialists out there who can find a route for lots of different ages and abilities. Craggy and dramatic Sa Gubia near Soller in the northwest of the island is about as impressive as they come. Not only will you get a kick from pushing your body, you’ll find it sets your mind soaring too. Unforgettable!
Game of Thrones tour in Dubrovnik If you’re a fan of Game of Thrones you’ll be in your element if you visit Croatia’s historic city of Dubrovnik, where you can take a three hour walking tour of the UNESCO-listed Old Town. From season two onwards it was transformed into King’s Landing and as you follow in the characters’ footsteps around key filming locations, your guide will inundate you with insider knowledge. One stop is the Lovrijenac Fortress - otherwise known as the Red Keep. Set on the highest point of the city’s medieval walls, it gives you the best look out over fictional Blackwater Bay. Imagine Stannis Baratheon’s epic naval battle ending in a sea of green fire. It’s a must for any cult-enthusiast!

THE
WORLD’S LARGEST
TREASURE HUNT
Utter the word “Geocaching” and you might be met with some blank expressions. Describe it as “the world’s largest treasure hunt” however, and it’s suddenly sounding a lot more interesting. Geocaching has been around for a while, but it’s the Pokémon Go App that has made it mainstream. The original has devotees all of its own though and trying it out on holiday is a fun way for all the family to explore.
THE LINGO ‘Cache’ – This is your treasure chest. It might be anything from an old camera film canister to a small lunch box. The smallest caches only have a piece of paper in for signing, while larger ones have items that your kids will enjoy collecting. ‘Log Book’ – A piece of paper or a small notebook (depending on the size of the cache).
DATA ROAMING TIPS WHAT YOU NEED A smart phone with the Geocaching app. There’s a free version or a paid for subscription, which is more pricey as apps go, but it shows many more caches than the free one. A pen for writing in log books. Items for swapping, such as small toys (optional).
HOW TO PLAY

1 Before you go on holiday, download the app and register as a player. The username you chose will be what you sign in the log books that you find. 2 Switch on your phone’s GPS and use the app to see the caches near you. 3 Once you’ve chosen a cache to find, follow the compass on the app to head to the location. When you’re very nearby (usually a few metres away), check out the clues and get searching! 4 When you’ve found the cache, sign your username and the date in the log book. If you take any of the “treasure” inside be sure to replace it with something of equal or greater value this is where the small toys, or whatever, come in. 5 Put the cache back exactly how you found it and don’t forget to mark on your app that you’ve discovered it.
AND THE REWARD? Aside from the kudos of finding the treasure that is. Exploration, discovery, even fitness - but mainly fun! Geocaching can appeal to the young and the young at heart. Better still, what is a new and exciting experience on holiday could well become an ongoing family expedition back home.

The southern Croatian town of Dubrovnik is a hive of excitement. The two arched gates Pile and Ploce - built into the walls mark your entrance to the Old Town. Inside the striking Gothic buildings are preserved just like new.
Think the Leaning Tower, heaps of spaghetti and the warm buzz of Italian atmosphere that flows through the pristine architectural streets, and you’re in Pisa. The Leaning Tower is just the beginning of this city’s offerings too. Italy’s largest Baptistery is an iconic sight. As construction lasted from 1153 to 1363, it showcases a number of renowned artistic styles from across this period.
SIENA Siena in central Tuscany is as impressive as its coveted sister cities. The centre is a UNESCO World Heritage Site – a medieval city with preserved Gothic architecture and artistic importance. Simply remarkable sights are around every winding corner. The ‘Duomo’ of Santa Maria Cathedral is one of the most impressive buildings in all of Italy. The marble inlaid floor, crafted by 14th and 16th century artists, is a standalone masterpiece. As soon as you enter, the imposing use of white marble in the columns will have you instantly in awe.
The rich and powerful presence of the 16th century inhabitants can still be felt while wandering the streets. Not least on the 300 metres of main ‘stradun’ (or street); paved with marble, it shines like polished glass.
Blend in the modern, with fantastic restaurants, delicious food markets and bars, all on the Adriatic water’s edge, and you have a city bursting with vibrancy. Scale the city walls for spectacular views out to sea. Another great option for a bird’s eye view is to take a ride in the cable car that runs overhead across the Old Town, overlooking the Elaphiti Islands.

Then of course there is Florence, the Tuscany region’s capital. Soak up the Renaissance art and culture in all its glory. The Uffizi Gallery is a must visit – a showcase of magnificent Renaissance works. Only a small number of visitors are let in at any one time, so as not to spoil the art or the atmosphere. Climb the Duomo and Bell Tower, eat gelato until your heart is content and explore the many museums.
SORRIPATI sits in the picturesque Certaldo town, nestled in the middle of the Tuscan lush surroundings. If you can drag yourself away from the impressive pool, Sorripati is perfectly placed for discovering the beauty and history of all three cities. Pisa and Florence are an hour away, while you can reach Siena in just 40 minutes.
Just outside the Old Town, the sparkling waters and powdery sand of Banje Beach offer an ideal spot for lunch and lounging. Dubrovnik is also a favourite backdrop for many TV series and movies (Game of Thrones and the upcoming Star Wars film to name just a couple), so it’s undoubtedly a fabulous setting for a day trip on your villa holiday.

2 Stress-busting travel tips
I love Meet and Greet airport parking. You drive to Departures, have your car parked for you and then have it delivered back on your return. For only a little bit more than some car park options, it’s worth it for the time and hassle you save getting the shuttle service. Got an early flight? A hotel at the airport the night before gives you extra peace of mind on your journey and the chance to catch those extra Z’s for a stress free start to your holiday. Incidentally, if you want a hotel and airport parking, speak to a Travel Adviser who can save you some money by booking a bundle. How about adding on a ‘lounge’ at the airport? It might be an option for some parties. It takes the stress out of travelling with no queues. Plus food and drinks (sometimes even alcohol) are included. When you book your holiday, double check that your name on your flight is as it appears on your passport to avoid hefty admin fees from the airline. Sea Moss We couldn’t resist sharing this popular Antiguan drink, which drew a mixed and sometimes squeamish reaction from the James Villas team. Obscure and perhaps questionable, you simply must try Sea Moss. It is literally as it sounds - liquefied sea moss, blended together with condensed milk, vanilla extract, water and nutmeg. It’s sweet, non-alcoholic and a rich mix of vitamins and minerals. Better still, it’s said to be a brilliant reviver and energiser - and even an aphrodisiac!

Carne de Cabra
A Canary Island speciality, see the locals nod with approval when you order Carne de Cabra off the menu. Cabra - if you need us to translate - is goat. Don’t stop reading though! This is a dish lovingly slow-cooked for hours, stewed in a mix of red or white wine. It’s sounding better now, isn’t it? Throw in some onions, garlic, tomato, red pepper and spices and you’ve got an aromatic meal with a distinctive yet mild flavour that’ll melt in your mouth.

Room for dessert? Whoever said chocolate isn’t good for you has never tried Sanguinaccio Dolce. This chocolatey delight is packed with natural goodness, and it’s tasty too! It’s made with milk, dark chocolate, sugar, orange rind, cinnamon - and pig’s blood. Yes, you read that correctly. Sounds a bit unpalatable? Just think of all those iron-rich nutrients and the scrumptious tastes of chocolate and sweet seasonings. It’s unmissable served either cold as a dessert or warm as a side dip.

‘GATOR NUGGETS
BRUDET OD JEGULJA I ŽABA The most authentic of meals are the ones where you’ll never find two versions the same. They vary by the region, family recipe, and in the case of Brudet od Jegulja i Žaba, what’s been caught from the water that morning. This southern Dalmatian dish is made with laurel leaves, onions, tomatoes, vinegar, hot peppers - and often a couple of more unusual ingredients. We’ve seen it done with conger eel and frogs! Served up with a side of polenta, this spicy stew is not for the faint hearted.
If there’s one thing America is known for, it’s its food. Nothing is done by halves, including the portions. In Florida you’ll find all sorts on the menu, and we mean all sorts. Its wetland areas are a watery home to alligators, and do you know what? They’re actually rather tasty. ‘Gator meat is similar to pork and chicken in flavour and texture, so it’s not as “out there” as you might think. Have a bite of some deep fried nuggets in true southern style. It’s practically a rite of passage.
BAJAN FRIED FLYING FISH The tropical waters around Barbados are teeming with flying fish. It’s no wonder then that they’ve become a local delicacy, cooked up in a variety of ways and perfected over hundreds of years. One for the bucket list is Bajan Fried Flying Fish. Marinated in zesty lime, salt and water, then seasoned with savoury Caribbean spices and fried in breadcrumbs, it’s a flavour sensation that’ll really wake up your taste buds.

Step out from Sky’s light and contemporary open plan living area to the poolside terrace, perfectly set up for outdoor dining. Here lovely views of the Mediterranean can be admired, while a beach and an array of shops, restaurants and bars are within easy walking distance.
One of the last phrases you would use to describe me is anti-social, but when I explain what I like most about the holidays my fiancée and I take, that’s exactly how I come across. We’re not anti-social really - we like to chat to the locals and other holidaymakers as much as anyone - but sometimes a quiet night in, just the two of us, is perfect. Light chatter, comfortable silence, enjoying the ambience, the sunset, the pool - just us, spending time together, reconnecting and making new memories. It sounds pretty great, doesn’t it? I wouldn’t call it anti-social at all, I would call it private.
That’s why when we go away we tend to choose a villa. It might not be your first thought for accommodation when you’re planning that romantic getaway, but it actually makes a lot of sense. I mean, what better way to relax, just the two of you? There are some lovely villas out there with just one, maybe two, bedrooms. You get the space you need, without feeling like you’re rattling round an enormous house. Mostly though I just like the feeling of staying somewhere just for us, in a real home for a week, not just a hotel room. I love staying in a villa. I will unpack my clothes in the wardrobe,

INSPIRED BY JAMES rather than living out of a suitcase. I love having a living room, separate to the bedroom, but most of all I love having our own pool. The option of a dining table, private to you, both inside and outside of the villa is wonderful, as is a fully equipped kitchen. We are real foodies and would hate to be limited to a buffet-style dinner from a shared restaurant every night. I booked a villa in Nisaki in Corfu last year for my fiancée’s 30th birthday and although we ate out in Greek tavernas some nights, we really enjoyed shopping at the same places as the locals and trying our hand at cooking with the raw ingredients. We love taking our time over a meal, eating on a patio or balcony while the sun is setting and sharing a bottle of wine from the region. In a hotel restaurant, often it’s busy, rushed, there’s no sense of romance and no sense of occasion. We much prefer a local restaurant where it’s special every time we eat out, or cooking in the villa, where we can take our time. We also find that when we book a villa that we explore more. We can work to our own timetables, so we can get up and get out, rather than being restricted by hotel-determined meal times, evening entertainment or pool opening hours. One of our favourite ways of exploring is
to strap on a pair of walking shoes, plan a rough route and, armed with a rucksack containing water, a phone and some sun-cream, just walk. We love the freedom of not being confined to a resort, and by choosing a self-catering option, we aren’t paying for something we aren’t using, or worrying about being back for a specific time. I would highly recommend trying a villa holiday as a couple. I think it’s wonderful to spend so much relaxed downtime with the one you love, on a holiday where you’ve set the pace.

We don’t just drink it or wash in it, bathing can be therapeutic to both body and soul. Take these incredible places for instance…
Xygia Sulphur Beach

Seek out Xygia Sulphur Beach, a white pebble cove north of Zakynthos Town. You can literally smell the beach before you see it, but fear not, you quickly become accustomed to the distinctive aroma. Here you’ll find natural springs of sulphur, which join the sea and mix with the clear blue waves, leaving a translucent, white effect on the water. The sulphuric water is known for its therapeutic healing properties for skin, joint and bone conditions. In fact, the locals swear by its healing powers for arthritis. You might just need a good shower afterwards.
Introducing the Gorges du Verdon - the deepest, most picturesque gorge in France. Nestled between steep chalky cliffs carved out by the Verdon River, it’s known as the Grand Canyon of France. This should give you some inkling of its impressiveness. At 25km long this river has something for everyone. Leisure-seekers, you can meander your way down on a boat, or swim in the turquoise waters. Thrill-seekers, there are any number of watersports, trekking and adrenaline activities. Whoever you are, whatever your personality, you’ll definitely find yourself here.

As if Granada’s Alhambra Palace isn’t incredible enough, a visit here wouldn’t be complete without a trip to Hammam Al Andalus. Given the Moorish heritage of this region, it’s not a complete surprise to find a Turkish bath here. This however is the crème-de-la-crème of Turkish baths. Even if you don’t fancy a massage, this is a photo opportunity that you shouldn’t miss. It’s a scene that will whisk you back in time. You’ll feel like a part of the Moors dynasty, with exquisite massages worthy of a king or queen. Now that is our kind of history lesson.
A two hour drive north of Orlando’s attractions, Fanning Springs State Park is a world away from the hustle and bustle of a theme park vacation. Found on the Suwannee River, this is a wild swimming experience. 20 feet at its deepest, the spring pool is crystal clear and teeming with mullet and turtles. Manatees are a frequent sight in the spring and winter months, which is definitely one you’ll want to tick off the bucket list. Surrounded by cypress trees, the flora and fauna is amazing. Coupled with deer, hawks and other birdlife, this is truly a back to nature experience.
Bagno Vignoni TUSCANY, ITALY Set in the heart of Tuscany, this picturesque village has a surprising addition. Right in the centre of the town square is a thermal pool, built by the Ancient Romans, of almost Olympic proportions, at 49 metres long and 29 metres wide. Fed by hot springs from a volcanic crater, this centrepiece is for viewing rather than bathing. For those who can’t resist a dip, a short walk down the valley brings you to the Parco dei Mulini thermal waters. The rising steam is quite a picture! Relaxing in the chalky waters on terraces overlooking the Tuscan countryside is a scene you won’t soon forget.
Volcano Sulphur Springs & Mud Baths ST. LUCIA Although not ‘off the beaten track’, Soufriere Volcano is a must-see natural, geothermal sight. Be very prepared for the characteristic smell of eggs as sulphur oozes and steams out from the lava bed. Don’t worry, the volcano is dormant and hasn’t erupted since the 18th century. You’re even able to get up close and personal with the steam - only separated by a fence! Complete your volcanic expedition with a sticky dip in the mud baths. A heady 38 degrees, scoop the chocolatey, velvety mud over yourself for a natural spa experience.

What does it mean to ‘be on holiday?’ As a parent with three young children it means switching off and putting my feet up, disconnecting from the day-to-day digital universe and stepping back inside the real world. For the younger, Snapchat generation, detachment from their mobile device and the connected world can be a little more tricky - which is why Greece is the perfect introductory destination for children.

HISTORY AND MYTHOLOGY Ancient history and the legends of Greek mythology are fascinating to children, particularly those brought up on a diet of Marvel superhero movies! Reading familyfriendly fables before you travel can be a great way of igniting that interest. The legacy of Zeus - King of the Gods - and Poseidon God of the sea - are ones that can certainly fuel the fire of an overactive imagination. The character Thor from the Marvel universe, although of Nordic origin, shares many character traits with both Zeus and Poseidon. Both Thor and Poseidon carry a weapon of choice - Thor his hammer and Poseidon his trident - and both Zeus and Thor can manipulate the weather. Odysseus is another character bound to impress young minds. His epic ten year voyage home from the Trojan War might be just the type of hook you need to transfer that interest onto the many historic and mythological sites you can see throughout Greece. Agios Athanasios in Ithaka, for instance, is an archaeological site believed to be the location of the palace of Odysseus. Having something to relate these sites to is a sure fire way to spark kids’ attention. At the very least, the dramatic backdrop and scenery will provide a perfect setting for the ultimate teenage ‘selfie’.

Mezes - small plates shared by the whole table - are a good place to start, as the children can watch and emulate you eating a little bit of everything. They don’t have to try anything they’re uncomfortable with but can pick and choose from the plates that they like the look of. Try to make some menu choices that don’t seem too alien to them. Many dishes can appear very familiar to things they might have tried and liked at home kebabs perhaps, stuffed pittas and slow cooked meats. There’s also nothing stopping you from starting the Greek food experience before you travel. I recently took my own kids and my ten year old niece to a

Among the fireworks, fasting and subsequent feasts are many other rituals. One particularly accessible as far as children are concerned is the cracking of eggs, called tsougrisma. Families gathered for dinner are given an egg that has been painted a deep red. Each person will take it in turn to crack the other person’s egg until a single winner remains. The hard shell of the egg is meant to represent the sealed tomb of Christ and the colour red used to depict the blood. The victor is then said to have good luck all year long, prompting long celebrations deep into the night with a banquet of food and drink, to the soundtrack of Greek music.

But for children it is after the sun has bade farewell that the real fun happens. The gentle strum turns into a melodic pulse and the humble ukulele is joined by further instruments of musical
exuberance. Dancing is compulsory and not for the faint hearted! Furniture is swept aside and a joyous nightly ritual of leg slapping, hand clapping and arm linking is enthusiastically encouraged. And if you are travelling with teenagers, the Greeks have devised a perfect teenage angst remedy - a good old session of plate smashing. While health and safety has taken over somewhat, you’ll still find places that use safer, plaster plates. Younger kids needn’t miss out on the fun, as gentler flower throwing is also a popular alternative.

What does it mean to ‘be on holiday?’ As a parent with three young children it means switching off and putting my feet up, disconnecting from the day-to-day digital universe and stepping back inside the real world. For the younger, Snapchat generation, detachment from their mobile device and the connected world can be a little more tricky - which is why Greece is the perfect introductory destination for children.

SOUTZOUKAKIA
meatballs in tomato sauce
This hearty dish is packed full of Mediterranean flavours. The tomato sauce oozes deep, rich tones and compliments the fragrant meatballs. It’s the cumin in the meatballs that gives them their unique taste. This dish is traditionally served with rice and a seasonal salad.
You will need... 500g minced beef
1 tsp ground pepper
1 egg
2 tbsp plain flour
25g breadcrumbs
3 tbsp olive oil
2 cloves garlic
1kg tomatoes
2 large onions, finely chopped
1 tsp sugar
1 tsp ground cumin
2 tbsp tomato puree
1 tbsp oregano
1 small glass of wine
1 tbsp freshly chopped parsley
1
In a bowl, mix together the mince, egg, breadcrumbs, garlic, half of the onions, cumin, oregano, parsley and ground pepper.

Shape the mixture into long ovals and cover lightly in flour.

Fry the remaining onions in the pan for approximately 3-4 minutes.
Heat the olive oil in a frying pan and cook the meatballs for around 5 minutes, until they are just brown. Remove them from the pan and set to one side.
Add in the tomatoes, sugar, tomato puree and wine. Bring the mixture to the boil and simmer for 10 minutes, to allow the sauce to thicken.

Add in the meatballs and simmer for another 15 minutes, stirring carefully and regularly.

BEHIND EACH VILLA’S STORY IS OUR RELATIONSHIP WITH THE OWNER. WE CHATTED WITH LISA, WHO OWNS KAMBU. SHE TOLD US WHAT’S SPECIAL ABOUT IT.
Tell us about Kambu’s location Kambu is set in a quieter location on the eastern side of the Algarve, between the small villages of Estoi and Moncarapacho and close to the towns of Olhao and Faro. It’s ideal for guests who like to be in the countryside, but not too isolated from other properties and places. What is it about the villa that holidaymakers love? I think it has to be all the entertainment extras and comforts. There’s a large swimming pool and a games room with snooker table, ping pong and exercise machines. My favourite though is the gazebo chill out area with a barbecue. It’s ideal for al fresco evenings, with a large lawned area perfect for children to play on. Kambu also has fibre optic internet and a TV system with all the UK channels - films, sports, kids’ programmes and a built-in film club with all the latest releases, plus other DVDs. There’s a PlayStation in one of the bedrooms and a Wii games console in another, both with lots
of games. Less techy, the games cupboard has books and jigsaws to keep families and children happy. What is it that makes Kambu special? It’s warm and welcoming and just like a home from home in the sun. We actually named the villa after my dog - a black Labrador! The word Kambu comes from Africa and means ‘good fortune’, or ‘good luck’. What does your role as a villa owner involve? I always personally meet guests on arrival and welcome them to the villa. I’ve lived in Portugal for 11 years so I like to share ideas and tips for places to visit, or help with any queries that may come up. I also take care of the works of the maid, pool man and gardener to make for a smooth and relaxing holiday. I always have to be prepared in advance and plan ahead for anything that guests may like in the villa. What do you most enjoy about being a James Villas owner? I have met some lovely people over the years, many of whom have become repeat customers and good friends. I also take great pleasure in seeing guests have a fabulous holiday, and just really enjoy themselves.

But before your imagination takes you too far, let me suggest my just discovered, favourite place in Europe - somewhere that wasn’t on my bucket list or even in my conscious awareness for a holiday until my recent trip. I urge you to Google the ‘Douro Valley’ and ‘Porto’ and tell me that you aren’t as captivated at first glance as I was.

Sharing the mountainous Iberian Peninsula with Spain and hugged from the west by the Atlantic, Portugal’s landscape is dramatic in many ways, with granite ridges winding through the central highlands, twisting valleys and sheer-sided ravines. As you travel north the topography becomes even more spectacular, with green mountains scattered with vineyards - the vines terraced along the steep sides akin only to China’s paddy fields.
Port caves
From the moment you fly in to Porto - a UNESCO World Heritage Site - the scene is breathtaking. A colonial powerhouse up until the 1970s, it’s a melting pot of culture, cuisine and architecture. Split by the Douro River, whitewashed buildings with terracotta roofs climb the banks, surrounded by lush hills. The city is covered in ceramic tiles or ‘azulojos’ the spectacular train station Sao Bento should make up part of your city ramble with its tiled masterpieces inside. Originally a walled city, the 14th century remnants can still be seen,
but the majority of the cityscape is 18th and 19th century, with recent developments lending a vibrant air as you walk through the heart. You can’t visit Porto without sampling Port. Whether Port is your weekend tipple or you stare gingerly at the bottle produced at Christmas by your great Aunt, banish all preconceptions. Across the river from the main part of the city rise the Port Caves. Not in fact caves, more cavernous cellars with huge, aging casks of sweet liquor. We visited Graham’s port caves, sampled more than 10 Ports - tawny and ruby, red and white - and had an exquisite meal in the adjoining restaurant, Vinum. Traveling out of Porto to your villa, Portuguese roads are considered the best in Europe, so whether you’re a self-drive enthusiast or it’s your first time on foreign roads you can be assured the drive is seamless. You should make time to travel the N-222 from Peso da Regua to Pinhaõ. Voted the world’s best driving road by the Avis Driving Index, this

amazing route sees 17 miles and 93 bends of remarkable scenery and endless impressive bridges spanning each valley. Once at Pinhaõ - another UNESCO World Heritage Site - you’ll be in what’s considered by locals as the heart of the Douro Valley. Nestled in the crease of a valley enclosed by mountains, the village is wonderfully picturesque. Although you can take boat trips from Porto, I suggest waiting until you get here. In the middle of wine-producing country your view from below is a unique one, looking up to the vine terraces, farmhouses and mountains. Speaking of vineyards, let’s talk wine. “Portuguese wine?” I hear you say. You may have heard of a ‘classic’ Vinho Verde or Mateus Rose, but that’s probably it. However,

this region has been producing world-class wine for centuries, with many of the 250 grape varieties native to Portugal not grown anywhere else. In fact, many of James Villas’ properties are situated on vineyards where the owner will gladly give you a tour as well as a wine tasting; two of my favourites are Quinta Vale Dona Maria and Villa Quinta das Brolhas. I haven’t even mentioned the food yet. Bacalhau, or salt cod, is popular in Portugal. They say there is a salt cod recipe for each day of the year! It’s quite a sight in Porto, where traditional food shops have it airing outside. For the more adventurous, one of the local delicacies is Cabidela - rice and either chicken, pork or rabbit cooked with blood. Before you stop reading right there, think black pudding but tastier. If these are too daring, there’s also amazing fish and shellfish. Presunto dry-cured ham - is another favourite and the cheese is out of this world.
If your idea of holiday bliss requires your feet in the sand and your head in a book then do not despair, you can have a beach holiday here too. The area from the Spanish border in the north down to Porto is known as the Costa Verde, or the ‘Green Coast’. From Atlantic swells for surfers and windsurfers, to azure coves great for children, this coastline has something for everyone. With much of the coast protected from development, it’s beautifully wild with no high-rise developments to dampen your view. So next time you are in research-mode for an escape to sunnier climes, please delve into this region. I promise you too will come back extolling the virtues of Northern Portugal. I can’t wait to go back - there are many things on my new Douro Valley bucket list. Wolves are native to the area, which you can track at night with a guide, I only scratched the surface of Porto and I’m sure I didn’t manage to try all the Port varieties… Penned by our very own

Sweat the chopped onion in the olive oil for around 5 – 7 minutes. Once softened add the parsley, garlic and mixed herbs and cook gently for another 2 minutes.

Northern Portugal’s food is as diverse as its landscape. With a changeable climate from the coast to the mountains, this region’s fresh produce is abundant and at its finest. Outside of the summer months the temperatures here can be akin to the UK, so hearty dishes are always on the menu. This particular recipe is from the owners of our villa, Campo da Eira, where they run a cookery school - a must for anyone staying!
You will need...
Rolling pin
A glug of olive oil
Baking beans (pie weights)
1 onion, finely chopped
1 cooked roast chicken with meat pieces taken off the bone
Seasonal vegetables - for this we have used celery, carrots and leeks
2 glasses of white wine
Readymade shortcrust pastry (chilled) - enough for the base and top of a 20-22cm pie dish
2 tsp dried mixed herbs
Heat the oven to 220C/200C fan/gas 7. Divide the pastry into two even balls. Roll out the first ball on a floured surface until it is about the thickness of a pound coin. Beat the egg and use it to coat the edges of the pie dish, then fill it with your rolled pastry, covering the base and sides. Cover with grease proof paper and baking beans (pie weights) and blind bake for 15 minutes.
While the base is blind baking, roll out the other ball of pastry into a circle to cover the pie top.
Salt and pepper to taste

Add the roast chicken pieces and seasonal vegetables along with the white wine and coat in the onion and herb mixture. Cover and cook on a low heat for 30 minutes.

Take the base out of the oven and put the chicken mixture into the pastry case, including any sauce, then carefully add the pastry top, pressing down the sides so it seals. Brush with more beaten egg, then make 2 or 3 slits in the top of the pie so that the steam can escape. Trim off any excess edges and cook in the oven for a further 20-25 minutes, or until the pie is golden-brown on top.

Serve with a good red Portuguese wine and a fresh salad. Perfect for a romantic dinner!

Portugal produces amazing wine, so don’t be afraid to order the house wine or ‘Vinho da casa.’ This is a great way to taste and experience the different grape varieties of the region without digging too far into your pocket. Unlike their Spanish neighbours, Portugal doesn’t observe a siesta. However restaurants do generally shut around 3pm and open up again for the evening around 7pm. Not hungry for a full meal? Try ‘Petiscos’ - like tapas, these mini Portuguese dishes are great for snacks or light meals and are served in many bars. They’re a great way to sample the country’s many amazing flavours and ingredients.

How then do you prolong those precious weeks of holiday bliss when you’re back in the thick of daily life? Well, it can be done, and it’s easier than you think. Stylist Kate John shares her tips for bringing your holiday into your home.
A SPLASH OF COLOUR

THE GREAT OUTDOORS
We can all be inspired by colour - that sheer blueness of the sea in the Mediterranean, or the sun bouncing off whitewashed houses. Playing with your colour palette is a great way to start bringing your holiday home.
Spain is leading the way in interior design at the moment and their cement tiles are everywhere. Not only are they hardwearing and practical, but they bridge the gap between traditional and ultra-contemporary geometric. They add vibrant interest to a hallway, bathroom, or even a splash back for the kitchen. The rest of your interior can be styled around these to your tastes, from rustic to cutting-edge, mid-century industrial.
A painted wall in a garden can add a surprise element. A bright pink or orange invites the eye and sets off the foliage of plants brilliantly. My own sun terrace has a bright blue wall, against which my red geraniums in simple, terracotta pots remind me of my favourite island of Mallorca. Also, have you ever noticed how memories are easy to evoke with scent?

Coloured tiles or painted ceramics can also add energy and interest to a space in a way that’s wonderfully easy and economical. Coloured bowls in the bathroom could hold soaps, or a collection of beautiful pebbles, collected every year from far flung places. Single tiles brought back from a market can be used as coasters, or placed along a garden wall.
A border of Mediterranean lavender or rosemary - in the garden or scattered about window sills - might give the sense of sitting back on your villa terrace.

I love white as a base for walls. It means you can change your interior on a whim without having to repaint everything. Think fresh white on the walls of your kitchen or dining room, with door frames and window sills picked up in that lovely Aegean blue. Accents of turquoise and pale green can be layered in tablecloths or seat cushions. Add a pop of colour with deep bougainvillea pink, or a lemon yellow in the form of ceramics and you’re back in your holiday villa in Greece.

A rustic flavour adds warmth and depth to an interior and is easy to achieve with a generous supply of baskets or rough-hewn furniture think Van Gogh’s chair with the cane seat.
Your bedroom should be a restful, welcoming place, reflecting just what makes you tick. For instance, my own preference is for a light and airy feel, pale walls and white bed linens perhaps one of those white throws brought back from a market in Italy. And loads of cushions! Either crisp, dark blue and white, or shades of pink and cerise. A white-painted, French-style bedhead, and of course, a pile of interior design books and travel magazines, piled up on an old, pale blue painted chair.
If you are still yearning to recreate your holiday but don’t have the time and space to do a complete interior overhaul, my favourite trick is to create a shelf or mantelpiece and make a seasonal homage to your holiday. At the moment my mantel piece holds an Eiffel tower souvenir, three pewter plates, hot pink candlesticks and 1950s postcards with images of the Italian Riviera, by Slim Aarons. For me, just by changing one element of my interior around seasonally keeps my holiday experience alive.
Earth-coloured throws and textured cushions contrast beautifully with warm or strong colours, like a deep blue lampshade or painted ceramic bowls. I love recreating this Tuscan or Provençal vibe of back-to-nature simplicity.

Wellbeing on holiday and beyond...
The dream of achieving a sense of wellbeing on holiday and then leaving all of your stresses behind once you depart can sometimes feel elusive. However, as travel enthusiast Nichola West from Globalmousetravels.com explains, adopting a few simple ideas from across the Mediterranean can help you achieve a blissed out break with benefits that last long after you return home. Getting away from it all is a real chance to clear your mind and re-evaluate your busy life at home. While it’s great to relax and take it easy, try shifting your comfort zone - however slightly - and you’ll feel some immediate benefits. For example, why not get up earlier on some days and take a stroll while the sun is rising and the air is cool? You’ll be amazed at how ready for the day you feel. Plan your walk to end at the local market and take your pick of the fresh regional produce on offer. together are really valuable, so don’t be rushed and allow for some evenings to simply drift. This is a real Mediterranean principle, and one that you should definitely bring home with you. One of the best lessons I’ve learned is to allow a bit of spontaneity into your holiday. Sometimes simply taking the back roads in the hire car rather than the fastest route has meant I’ve discovered hidden beaches and coves I hadn’t read about in the guidebooks, come across delicious paella in hilltop villages, or stopped off at a farm to buy some freshly picked oranges, which I’ve juiced back at the villa.

I really like trying out different flavoured sorbets, such as those using local berries, they’re never as heavy and rich as the dairy ice creams.
I really like to get out and explore the place I’m visiting, so while I always make time for relaxing by the pool, I do also dedicate some of the day to discovery. That doesn’t always mean heading
for the main local attractions - a simple stroll down by the water’s edge or taking a walk to get a coffee in the town square can be just as satisfying. Just taking those moments to enjoy the fresh air and the opportunity to spend more time outside are rewarding in themselves. I also like to add a bit of a new routine to my day while on a break. Taking a morning dip in the pool before breakfast or tackling a chapter of a book after lunch is a great way to give myself a bit of mental wellbeing and help me feel refreshed. Holidays are all about enjoying the simple things in life and just by taking a few uncomplicated steps, even if they are out of the regular routine, will mean you are ready to head home with some new found skills, feeling healthier and well connected to family and friends.
Learning to cook local dishes, like making simple and delicious orecchiette (the ear shaped pasta popular in Puglia, Southern Italy) is a great way to feel connected to the area you’re visiting, as well as getting in some all-important family time by learning together. Picking up new recipes and techniques to try out at home can be one of the best souvenirs from a trip away and have real feel good value once you’re home. Holidays for me are all about reconnecting with family and friends, so I really recommend taking some time to linger over conversations, meals and downtime – perhaps even playing some games! These opportunities to celebrate being

We hired a boat for seven of us for four hours from George's in Latchi. It included a double "donut" and four masks and snorkels. We went along the coast, anchored in each bay for a swim and used the donut in between. Everyone agreed it was the best day of the holiday.
