Katja Behre KATJA BEHRE can’t pin down the proudest moment in her career so far because: “there have been so many and they also vary”. Perhaps it’s seeing her work featured in high-end magazines based as far apart as London, Italy and Taiwan. Or maybe it’s the opening of her London branch, Elli Popp, and the experience of working with reputable designers such as Guild and Colefax & Fowler. The burgeoning designer creates organic, vibrant and colourful wallpaper designs with motifs of butterflies, birds and flowers running through them. It comes as no surprise then, that Katja’s interest in design evolved from a fascination with nature that goes right back to her childhood. Remembering her upbringing in Hanover, Germany, Katja says: “I was surrounded by a world of lively colours and shapes. My playground was our huge garden and the city forest was at the bottom of our road.” The London-based designer says it’s the colours in nature’s flowers, greenery, birds

and insects that arouse her creativity. Thanks to her studies at Hildensheim’s University of Applied Science in her native Germany, together with an exchange programme in London’s Central Saint Martins, Katja studied colour designs and learned about colour psychology. Here she discovered how to apply the right colour for specific objects or projects focusing particularly on how the colour affects the object and the viewer. Katja says the past has a huge influence on her work. Though she adds: “I love the 20th century Art Nouveau and what I am recently realizing through my designs is a subconscious love for Asian designs”. Katja’s currently working on her new collection to be launched in January at Maison et Objet in Paris. Sanna Annukka BRIGHTON-BORN Sanna Annukka reveals that her proudest moment to date is designing for Marimekko, a leading Finnish design company. “Maija Isola - one of Marimekko’s most iconic designers - has been an inspiration to me since a child,” she says. With a Finnish mother, the UK-based printer and illustrator spent a lot of her childhood in Paltaniemi, a beautiful village near the Oulujarvi Lake in Finland. Here she fondly remembers swimming, fishing and exploring the forests. She also travelled to Lapland where she camped by the Arctic rivers whilst enjoying the midnight sun. This love of nature, as well as a passion for folklore, pervades Sanna’s designs.

“The forests, lakes and wildlife of where I grew up heavily inspire my work. Nature and folklore inspire me; it’s what my work is mainly about.” The designer says that Finland’s national epic called ‘The Kalevala’ (a collection of folklore songs) is magical and has also heavily inspired her work. Describing one of her own favourite pieces from her Marimekko collection, Sanna says: “It depicts one of my favourite scenes in The Kalevala where the hero, Väinämöinen, plays his harp made from the jaw of a pike fish. Such beautiful music is played that forest creatures from far and wide gather to marvel at the joyous sounds.” Since graduating from the University of

Brighton in 2005 with a BA Honours in Illustration, specialising in her final year in silkscreen printing, Sanna has set up her own company which prints limited edition silkscreen prints of her artwork. The designer aims to bring a little piece of Finnish folklore into peoples’ homes with her range of products that include fabrics sold by the metre, mugs, tea towels, plates, tins, trays, bed linen and bags. Swapping her stifling London life for a seaview in Scarborough, textile designer Lisa Skelton talks to Tony Greenway about the makeover of her terraced villa in East Yorkshire.

L

ISA Skelton used to have it all: a house in an up-andcoming part of East London and a busy-busy, rush-rush job as a sought-after textile designer, specialising in scarves and cushions and selling to the likes of The Conran Shop, Harrods, John Lewis, Selfridges and Heals, plus Barneys and Takishamaya in New York. But now she has it all... and a bit more. Lisa’s job hasn’t changed; her designs are still in demand with high-profile department stores across the world. But several years ago she swapped her stifling London life for a stiff Scarborough sea breeze. Since moving to the Yorkshire coast, the view from her window has become brighter and much more dramatic. In fact, the seaside scenery looks more spectacular the further you climb up Lisa’s four-storey house. From the bedroom in the roof you get an eyeful of a jumble of terracotta roofs and a crescent of sandy beach. It’s magnificent. “It’s also lovely to see the lighthouse at the entrance to the harbour,” agrees Lisa, who is originally from East Yorkshire and trained at the Royal College of Art. “The view is terrific at night, too, and it’s really atmospheric to see all the lights dotted along the bay. Even in winter, this town is a really interesting place to live 21

ABOVE & BELOW: To make the room look bigger, Lisa designed the room so that all the units run across the back wall, and painted the walls a light colour Farrow and Ball Pointing. A mirror strip across the length of the kitchen wall reflects light back into the room and - a neat trick - also makes the most of that fabulous sea view. The pendant lights are from the French House, and the worktop around the sink (from a reclamation yard) was adapted from a table in a school chemistry lab. The old pine floorboards are also from a reclamation yard. Lisa designed the kitchen units and shelving with a friend, John Hobson, who is a sculptor and a builder.

because we get rough, grey seas crashing onto the sands. I love it here.” When Lisa and her partner, St John Harris, moved to Scarborough, their priorities shifted. The couple love walking and make the most of exploring the surrounding countryside with their cocker spaniel, Bess. Lisa’s studio is located in the basement, and St John can walk to his offices where he works as a local government administrator. “We always wanted to live by the sea,” says Lisa, “so it’s the perfect location for us. We’re overlooking the most wonderful coastline but, after a 10-minute drive, we can be in the National Park and up onto the Yorkshire Moors. We have the best of both worlds, but in a seaside setting.” Lisa and St John’s three-bedroom Grade II listed terraced villa was built in 1844. You can easily run out of puff before you get to the front door - it’s a long hike up a steep hill - but the climb is worth it. “Friends who visit always say: ‘This must be the best view in Scarborough!’” smiles Lisa. “And we think they’re right because that’s what sold it to us. When we made the move from

London we rented for six months and house-hunted furiously because we didn’t want to settle for just any old place in town. It had to be something special. As soon as we saw this property, we knew it was the one. We put the full asking price down straight away. We didn’t want to mess about and risk losing it.” That was the start of a big design challenge for Lisa because the original décor was not to the couple’s tastes. “I wanted the interior to look simple and uncluttered, while at the same time complementing the age and design of the house,” says Lisa. It’s a blend of old and new that characterises Lisa and St John’s house. It’s not an easy look to get right, but Lisa’s eye for design has really paid dividends. In the kitchen she’s mixed funky pendant lights from the French House with traditional units and shelves. In the sitting room, antique travel trunks look at home next to an IKEA sofa and a beautiful grandfather clock. “I’m fascinated by grandfather clocks,” says Lisa. “I think it’s their very English ‘tick tock’ which conjures up images of Sunday afternoon tea and sandwiches.” Dotted around the 25

house are contemporary paintings, sculptures and accessories from local craftspeople and Lisa’s artist friends. Initially, Lisa had a huge problem with the small kitchen, which was originally tucked away on the first floor at the back of the house, and therefore didn’t come complete with that ‘wow factor’ coastline vista. It felt... well... wasted. It wasn’t homely enough, either. “When I was growing up, the farmhouse style kitchen was an important place for my extended family to meet and chat,” explains Lisa. “So the kitchen is my favourite room in any house. It’s where we spend a lot of time and where we entertain our friends. That’s what I wanted to do in this property... and, of course, I also wanted to make the most of the view from the front.” A large bedroom on the ground floor 28

was duly converted into the kitchen with a focal fireplace from a reclamation yard and mirrored strip running across the length of the back wall behind the units. So even when you aren’t looking out of the window, there’s no escaping that sea view. Lisa has no regrets in leaving the cut and thrust of London life. “Oh no,” she says. “None at all.” There is one problem, though: the kitchen window practically begs you to look out of it and daydream. How on earth does she get any work done? Lisa Skelton gives a half smile. “Oh, I get LOTS of work done living here.” She pauses. “Eventually...”

THEWORKINGTRIANGLE Planning the perfect kitchen can initially seem a daunting task! Understanding your layout options is a great place to start...

As many of us know the kitchen is one of the primary selling points of a house and also a space where the family can spend a lot of time. With this in mind, planning and installing the perfect kitchen can seem like a daunting task, as there are many aspects to consider even before the build begins. The most important zones within a working kitchen are generally regarded as FOOD STORAGE (centred around the fridge), COOKING, and PREPARATION/WASHING UP. Each of these zones would also have adequate storage and worktop space for the aforementioned tasks. A route is often formed between these zones known as THE WORKING TRIANGLE (as shown in the diagrams) to create the most effective and user-friendly way of utilising the space. We’ve included five classic kitchen layouts demonstrating how THE WORKING TRIANGLE concept can be incorporated. These are only guidelines, however, as each home will require different elements within its kitchen. Space, the structure of the existing room and other practicalities will often involve a little compromise and flexibility at the planning stage to create the perfect outcome for the heart of the home.

Galley Layout Sometimes the kitchen within a home can be ample in length but not so generous in width. In this scenario there is the option of having two facing rows of appliances and storage units, often with a window and doorway at either end. The space between the two sides should be wide enough to safely move around but also adequate for cupboard doors and appliances to be opened and closed easily.

L-shape Layout This is often the ideal solution where the kitchen has to fit into a corner space, especially where maximising floor space is important. Having units on two walls instead of three gives this extra floor space but also presents the option of including a dining table or wall mounted breakfast bar. This layout not only works in a contained space but can also work well in a larger room where the kitchen and living area share the space.

One wall Layout As with the galley layout, some kitchens are ample in length but not so generous in width. when space does not allow for two facing rows of appliances and storage, then it can be modified to a one-wall option; so there are appliances on one side of the kitchen only – maximising floor space and retaining the user-friendly aspect of the space.

Island Layout The island layout option can work well in a room where a large amount of floor space is available. It can also be a way of reducing the amount of walking space required to link The Working Triangle as it can bring one of them closer to the other two. The island could be used to house any of the zones depending on the individual needs of the user. This option can work well in U-shape kitchens and also L-shape and one-wall layouts where the kitchen shares an open space with a dining or living room, creating a divide between the spaces.

U-shape Layout This layout is a popular option as it maximises storage, worktop and floor space. HEN I first saw this kitchen you could look up and see the stars,” says Gordon Paterson. No, it wasn’t an interesting design feature, there just wasn’t a roof. There weren’t windows either and a lot of the walls were rubble. That was the space that first greeted kitchen designer Gordon when he visited a new development on farmland to the south of Glasgow. The cow byre, the barn and the milking parlour were all being redeveloped into one-off houses and Gordon had been asked to create the kitchens. When the houses were sold, the new

owners of the largest property decided that they wanted to create a rather different dining and eating space. On paper it sounds like a tall order since they had already had a modern kitchen and a traditional kitchen in the past and wanted something new. Fortunately, Gordon has been able to come up with something that is both classic, yet timeless and will never be overtaken by fashion or fads. Described by the manufacturers as offering “retro chic”, the furniture is a mix of oak and painted finishes with an unfussy yet robust finish and a practical L-shaped island unit.

The cooking zone centres on a Britannia range cooker and hood with glazed, dresser-style cabinets on either side. Gordon’s choice of wide pan drawers and internal management systems have emphasised the functional while giving a whole range of storage solutions. No messy clutter in this family friendly room. Supplied by Callerton kitchens, the chunky look is partly due to a feature called Nu-Veau which gives stepped angles to the furniture and the dresser units. The owners particularly like the glazed cupboards that have blue veneered interior finishes to add colour and also internal spotlights. 53

The central unit in this light and airy space has a microwave cooker set at a low level to allow the owner’s six-year-old son to make his own contribution to the cooking process without having to stand on a chair. A wine rack and shelving for books are set into the back of the island unit with plenty of room for stools that are kept out of the way of the main preparation area. The walls are pale cream to tone with the limestone floor and splashes of colour have been added with the red casserole dishes and pictures. An American-style fridge by Maytag has an ice-maker included and along with the sink tap by Franke there is also a rinser tap. The separate dining space makes this spacious room a comfortable yet tranquil place to entertain formally or enjoy cooking for the family. But it’s impossible to imagine that it was once home to a herd of cows and straw was the only dish on the menu. 54

Kitchen Designer Gina Bynert of Callum Walker Interiors answers our questions and throws some light on how a bespoke design can brighten up a kitchen...

Q> How long have you been designing kitchens for and do you prefer to design modern or contemporary kitchens? A> I’ve been a design consultant for about 27 years. Designing interior spaces has been my life as I grew up working within my family business based in Lancashire which specialised in designing and manufacturing bespoke furniture, particularly kitchens. I enjoy designing furniture in a contemporary style with a traditional twist using natural products such as timber and granite.

Q> What benefits do you think a bespoke kitchen design can bring to this living space? A> A bespoke kitchen allows a client to create a unique space suited to their own lifestyle. We can tailor make all aspects such as work surface height, customised larders, incorporate casual seating or create a specialist paint finish or wood stain allowing the furniture to sit perfectly within its environment. During our initial consultation, I like to spend time discussing with my clients their own requirements to ensure that their needs are covered.

Q> What was the kitchen like at the first consultation and was there a lot of building work to be done before the kitchen could be completed? A> Some adjustments to the layout of the room were required to create the new space. This included the opening up of the archway which had created division within the room and the blocking off from the doorway which allowed a casual seating area to be formed. Previously the room had felt quite enclosed due to the wall cabinetry and poor lighting. One of our main aims was to address this and create a lighter, brighter more open space.

Q> Are there any features in the kitchen that you are particularly pleased with? A> I felt that the corner barrel unit with end grain timber top was a particularly nice feature drawing the eye to the back of the kitchen which further enhances the feeling of space. Being bespoke we were able to customise the midi height units to accommodate the best working height for my client. A move away from the conventional with no wall cabinetry worked well within this design with the additional storage coming in the form of a spacious island which also provided breakfast bar seating. 63

In this project we used recessed ceiling lighting in abundance and also with the absence of wall cabinetry we lowered a section of the ceiling at the extractor which mimicked the step detail of the cabinets while also providing the perfect positioning for task lighting at the cooking area. We also put this lighting on a separate circuit allowing it to be switched on independently of the main ceiling lights thereby creating different moods.

Q> What type of flooring did you use? A>

We used Karndean flooring in a wood plank style in a warm tone which is hard wearing and easy to maintain. This provided a perfect backdrop for the painted cabinetry. We extended the flooring through into the casual seating and dining area further adding to the feeling of space.

Q> What was the client’s reaction to the final look and design of their kitchen? A>

Absolutely thrilled. The client was really pleased with the lighter finish and the new open feel to the room.

Pittenweem Arts Festival PITTENWEEM in the East Neuk of Fife is a picturesque village and home to a unique festival of the arts. Each August, over 100 artists gather in a nine-day event, with exhibitions throughout the village. This year’s main exhibition is a tribute to More Horsburgh, Pittenweem fisherman and painter who died last year. As the first retrospective of his work, this stunning exhibition will chronicle his paintings of over 50 years at sea. Other highlights include contemporary cutting edge craft

The Lighthouse, Scotland’s National Architecture and Design Centre, will show rarely-seen footage from Scottish Screen Archive’s rich collection of amateur and professional films along with recently recorded interviews with people for whom the River Clyde has played an important part in their lives. As part of the exhibition, The Lighthouse is also building an on-line archive of people's memories and meditations of the river and this will be available for people to enjoy both at The Lighthouse and at home. Blair was born in 1980, and graduated from the Glasgow School of Art in 2002. He won two prizes at the The Royal GIasgow Institute of the Fine Arts’ 2007 annual open exhibition - The Glasgow Art Club Fellowship, (of which this solo show forms part), and the Langside College Watercolour Award. He is also The RGI’s youngest Council member. This exhibition flows from a trip to Japan (15 Dec ‘08 - 16 Jan ‘09) with his Japanese girlfriend, Maiko Tanaka. It was here that Blair studied Sho calligraphy and markmaking with 89-year-old Wakabayashi Sensei - the top calligrapher in that region. Later this year, Blair will collaborate with the master to produce his first public exhibition in Toyama (Northern Japan) as part of the calligrapher's 90th birthday celebrations.

Trailing the North Wind will feature a series of large organic ink paintings based on the Finnieston Crane; the beautiful 16th-century Matsumoto-jo Castle; an MD11 aircraft engine viewed at Schipol Airport, Amsterdam; Tokyo telecommunication towers, and a twisted old Sakura (cherry blossom) tree located near Matsumoto-jo Castle. Materials used in Blair’s work include fude (Japanese brushes), takepen (bamboo pen), sumi (Japanese ink), biros and markers on thin Japanese ‘Washi’ paper. Also on show will be a series of four orange and black ink pieces depicting different Japanese castles visited in the past. The exhibition will also include a series of oils - organic and atmospheric in nature - based on Scottish coastal structures such as the signal beacon at South Queensferry, as well as more abstract calligraphic work based on the Northern elements and light. Prima Estate PRIMA ESTATE, Galleria Luti's third summer exhibition which is celebrating bold contemporary Scottish art from over 30 artists, is promising to be one of the most vibrant and exciting exhibitions that the gallery has hosted to date. There is a strong emphasis on colour throughout the exhibition, not only found in the original paintings, but also conveyed through a variety of ceramic works, and by many of the designer jewellers who are exhibiting. With dynamic denotation on colour and form, the exhibiting artists will include Callander's own Peter Luti, who is gaining an ever increasing following and reputation for his unique paintings. The exhibition sees the return of gallery favourites such as Deborah Phillips, with her distinctive shimmering and glittery foregrounds, and Ian Elliot, whose preference to paint Mediterranean and Italian scenes always portray warmth on even the coldest of Scottish days! ARTIST PROFILE Katherine Jones A graduate from Edinburgh College of Art, this up-and-coming Scottish artist is currently working as a freelance illustrator and painter. Working mainly in oils on board, her work ranges from landscape and figurative pieces (including portraiture) to fantasy and science-fiction illustration. Katherine’s art has been described as ‘always possessing a powerful emotive presence’. It is this quality that may have helped the young Edinburgh-based artist enjoy success on an international scale. Her paintings have been exhibited as far afield as Australia in the first Conflux International Art Show held at the National Museum. UPTOWN asks...

Where and what did you study at university/college? I studied at Edinburgh College of Art. I graduated in 2003 with a degree in Visual Communication, which basically means illustration.

How have you found the transition from university to professional life? I found this relatively straight forward. That said I do feel that some of the courses taught at college should have included more about how to successfully take your skills into the world of work. I found that only a small number of people I went to college with are actually now working in creative jobs.

How would you describe your painting style? My style is emotive and sometimes quite dark and dreamy. I am drawn to narrative; perhaps that is why I enjoy figurative work, however I feel it is equally possible to tell a story within a landscape. 78

How do you produce your work? I work almost exclusively in oils on either canvas or canvas panels. I sketch a lot but I also always have a camera with me wherever I go. I feel that working from photos is often frowned upon, however I often find them to be a valuable resource. I work very quickly and always have several pieces on the go at once. I find this stops me getting too ‘bogged down’ in one piece, which can kill the freshness of the idea behind it.

Who or what influences your particular style of painting? Everything! I don’t think any one artist or movement is exclusively where I draw my inspiration. I often go to exhibitions and whether they are of contemporary or classical work there is always some element that interests me and I can draw upon.

What are your most popular pieces? Why do you think this is? Here there is a split between very dark and moody subject matter and lighter more upbeat pieces. Both seem to be equally popular. I love to feature animals in my work, dogs especially and these sell well. I also often use children as subjects and these pieces also go quickly. You can’t go wrong with children and animals, they are universally popular and always will be.

What have you got planned for the forthcoming year? To keep up the painting. I also plan to do more illustration work. I find that it takes me out of my comfort zone as it makes me consider subjects I may not on my own. This stops me from becoming too introspective, which is always a good thing! 79

Why go blonde?

Pick a blonde, any blonde?

Blonde hair can make a big difference to someone’s personality and confidence. It’s the one hair tone that can cause a major transformation. Blonde is one of the easiest colours to wear. It can complement summer fashions and skin tones - especially if we go for fake tans. Blonde can be hugely flattering to your overall look… much more so, than most of the other colour tones.

There are as many shades of blonde as there are shades of any colour, but that cool, Arctic blonde shade is hot this year. Traditionally, as we head towards the sunny, summer months blonde becomes more popular, but this year I reckon we’ll have a move towards a blonde coupled with some subtle dual and tri-colours too. Think toffee tones and clever deeper, warmer creamy tones. Overall the look will be sensational.

All over blonde? I am seeing this trend towards less of a flat, all-over application of the blonde magic this year. Introducing subtle twists of interest and some of these magical lo-lights and hilights will make a big difference. Leaf through the pages of any hair mag or celeb mag and you’ll see that very few strong styles are created with a mass of single colour. Clever colour experts will create a more significant look with the introduction of additional shades and tones. In my view, it all adds up to a more natural look.

Blonde ambition? The saying claims that blondes have more fun, so should we all be switching our tone charts to the lighter options for 09? We asked UPTOWN’s resident makeover and hair expert TAYLOR FERGUSON to unlock his box of blonde secrets!

I’m often asked how to reduce the brassiness of blonde hair whether natural or chemically enhanced. It’s a no-no and brassiness can and will emerge particularly when someone has been opting to do home colour. I always ask the client would you want your car serviced by a baker? So why, if you’ve no colouring expertise or skill, do you do your own colour? Leave it to the experts! A few lo-lights and hi-lights can assist to tone it down. But, as I say, speak to a colour expert. You’ll see the difference.

What will happen in the sun? If you’re lucky enough to be heading somewhere sunny this year then think about your crowning glory in the same way as you think about your skin. Your scalp is an extension of your face. It needs protection too. And by protecting your scalp and your hair, you’ll protect your colour too. The sun can play havoc with your blonde look. It can bring out those unwanted brassier tones which you may or may not welcome. Above all, your colour investment can be at risk. So protect, protect, protect.

Can it make me look younger?

If you do opt for the blonde option - and your colour expert applies it with my suggested guidelines - then your hair’s condition shouldn’t change dramatically. It is, of course, important to use the appropriate shampoo to protect and enhance the colour you’ve applied. An in-salon intensive conditioning treatment can also help boost the hair’s appearance.

Yes, without question, it can shed the years but don’t be fooled that it’s the instant solution. As you get older your colour expert should assess your skin tone and decide on how best to progress. Getting it wrong can leave your hair at war with your skin colour and you’ll neither look good nor feel good about that blonde option.

The importance with all wedding make up is that it does last well all day, especially if you’ll be in the heat abroad. But you also want to avoid the skin looking heavy or overly made up. A primer applied under the foundation will give the make-up more staying power. YSL’S TOP SECRET, £34, is perfect for this - and will also add radiance to the skin. My new favourite foundation is the DIOR NUDE, £26.50. It covers blemishes and looks ultra natural - giving the illusion of flawless bare skin, whilst also working as a treatment for the skin. A light dusting of DIOR NUDE POWDER, £26.50, over the top of the foundation will keep the make-up from sliding off in the heat without looking overdone. Instead of black (which can look harsh in broad sunlight) try a softer shade such as uniform to define the eyes. CLINIQUE TOUCH TINT FOR EYES, £11.75, is gorgeous for a wash of colour over the lids which you can finish with lashings of LANCOME HYPNOSE WATERPROOF MASCARA, £19.50. Plants for office health Plants in the workplace have been scientifically proven over many years to increase productivity and health, especially for workers who spend more than four hours in front of a computer screen. But now a panel of experts, including specialists from the Dutch National Health Institute, has judged five air-purifying plants on their air-cleansing capacity and their practical application in the workplace - and awarded mother-in-law’s-tongue, or SANSEVIERIA, ‘Best Office Plant’. It won not only for its air purifying abilities but also because it’s virtually indestructible. Plant care in the workplace often leaves a lot to be desired, but the Sanseviera requires so little care it will always survive and continue to look good. Sansevieria plants look great and come in a variety of shapes and sizes. As well as the traditional green tongues with pale green edges, there’s also a spiky version called Skyline that looks like a Mohican haircut. Plants come in small, compact sizes, perfect to fit next to a computer monitor, but you can also get much bigger plants that are ideal for placing around the office or for a relaxing waiting area or reception. Why worry about pesticides? According to the US-based Environmental Working Group (EWG) the growing consensus among scientists is that small doses of pesticides and other chemicals can cause lasting damage to human health, especially during foetal development and early childhood. Enough is now known about the potential long-term consequences of ingesting these powerful chemicals to advise that we ingest as few as possible. EWG research has found that people who eat the 12 most contaminated fruits and vegetables (peach, apple, bell pepper, celery, nectarine, strawberries, cherries, kale, lettuce, grapes, carrot and pear) consume an average of 10 pesticides a day; those who eat the 15 least contaminated conventionally-grown fruits and vegetables (onion, avacado, sweetcorn, pineapple, mango, asparagus, sweet peas, kiwi, cabbage, eggplant, papaya, watermelon, broccili, tomato and sweet potato) ingest fewer than 2 pesticides daily. Almost all the studies used to create these lists assume that people rinse or peel fresh produce. Rinsing reduces but doesn’t entirely eliminate pesticides. Peeling helps, but valuable nutrients contained just under the skin are lost. The best approach is to eat a varied diet, wash all produce and buy organic whenever possible, which is becoming easier thanks to initiatives like pesticide-free GOOD NATURED FRUIT from Scottish grower Angus Soft Fruits. The result of Thomas’s design bears his distinct hallmark of deep challenging bunkers and large rolling greens. The wide fairways follow the natural contours of the land, making full use of the various changes in elevations. The aforementioned signature ‘Viaduct’ hole is an elevated tee commanding views of the River Teviot that hug the left of the fairway with an imposing viaduct in the background. Craig Montgomerie, the Roxburghe professional offers advice to help visitors enjoy their first experience. “The heart of the course are the par threes, play those well and you’ll likely make a good score as three of them are around the 190 yards mark. Because of water hazards on two and bunkering on the third, the ball has to be long, high and straight to have any chance of reaching the putting surface in regulation.”

ROASTED HALIBUT WITH LANGOUSTINE & FENNEL FONDANT Serves 4

INGREDIENTS

4 halibut troncon/fillet (150g each) 2 bulbs of fennel Juice of 1 lemon 100ml olive oil 1 litre of chicken stock 50g butter cubes 4 large peeled langoustine 8 confit tomatoes Salt and pepper METHOD

• Cut the fennel into approx 2.5 cm thick slices and place them into the chicken stock adding the lemon juice and 50ml of olive oil. Season with salt and pepper and simmer for 20 minutes. • Season the halibut with salt and pepper and roast with the remaining olive oil in the oven at 200OC / 392OF / Gas 6, for approximately 10 minutes (remembering to baste frequently). Then remove and leave to rest in a warm place for 5 minutes.

• Remove the fennel from the liquid and reserve in a warm place. Meanwhile, reduce the liquid mixture by half and whisk 50g of butter cubes into the reduction. • Panfry the langoustines in a little olive oil then add the the confit tomatoes to warm through.

Serve the fish on top of the fennel with the langoustine, confit tomatoes and finishing with the sauce. 123

BLACKCURRANT SOUFFLÉ Serves 4

INGREDIENTS

300g of blackcurrants 100g caster sugar (for the puree) 75g caster sugar (for the base) 20g caster sugar (for coating) 20-25g corn flour 10g melted butter 5-6 egg whites Icing sugar (optional for serving) 4 x 4 inch soufflé moulds Blackcurrant sorbet Seasonal berries

METHOD - BLACKCURRANT PUREE/SOUFFLE BASE

• Liquidize the blackcurrants to make a puree. Then pass the puree through a sieve. Boil 100g of the caster sugar with enough water to form a soft ball, and then add the sugar ball to the puree. • Moisten the corn flour with a little water and whisk into the puree over a moderate heat until the mixture thickens and the corn flour has cooked out completely. This is the soufflé base needed for the next part of the recipe. 124

METHOD - FOR THE SOUFFLÉ BASE

• Prepare the soufflé moulds by buttering with the melted butter and then coat generously with the 20g of caster sugar.

• Separate the eggs (you will only need egg whites for the recipe). Mix the egg whites with half of the 75g of caster sugar at full speed until the whites form a soft peak. Add the rest of the sugar and whisk until the mixture is firm but not dry. • In a large bowl thoroughly mix one third of this egg white mixture with the soufflé base. Then fold the rest of the egg white mixture in gently, making sure no white patches are showing. Spoon into the moulds and scrape the tops flat with a palette knife. • Place the moulds onto a baking sheet and bake for about 8 minutes at 180-190OC / 374OF / Gas 5. Dust with some icing sugar before serving with the blackcurrant sorbet and seasonal berries.

THIS May-time festival has earned itself an established reputation of late - attracting such high-profile artists as Courtney Pine, Van Morrison and Lesley Garrett, to name but a few. And this year promises to be a particularly good one thanks to Scotland’s special Homecoming celebrations. The line up offers a jam-packed schedule of cultural performances over its 11-day course and is surely worth a visit for those who love all things arts. There’ll be everything from traditional and classical music, opera and dance productions right through to more contemporary rock music and comedy acts. Highlights from this year’s line up include Edwyn Collins and Seth Lakeman. And like any great festival there’ll be something for those who like to indulge in a spot of shopping; the festival’s Art on the River features a selection of paintings, ceramics, jewellery and artworks on sale from stalls along Tay Street and in local galleries. There are also free-of-charge lunchtime concerts in St John’s Kirk. The finale takes place on Sunday evening with Nicola Beneditti playing at the Brewin Dolphin Festival Concert with The Royal Philharmonic Orchestra conducted by Andrew Litton.

FESTIVAL season is nearly upon us…forget Glastonbury, V Festival or even Scotland’s own T in the Park, for the Borders spring festival is the one to go to this year - well for book lovers and self-confessed literary geeks anyway. Some of the biggest names in books will be attending from a wide literary spectrum; ranging from high politics, low humour and espionage to great fiction writing and low literature works. Highlights to look forward to include the Scottish Arts Council awards, with the winners announced on Friday evening by household name, Rory Bremner, as well as open air musicians and entertainment, culminating in a closing concert to round off the festivities on the final night. Most of the events are held on the green in two marquees, and there’ll be a festival bookshop tent selling books written by authors appearing at the event. This will also be the venue for book signings after the events. And as a good read is never fully complete without a hot cuppa, there’ll be a café bar open all day and night serving teas, coffees, wines and cakes.

WHILST running off a Sunday hangover and spending your precious weekend in a pair of jogging shoes might not initially appeal, think again, because Race for Life has more to offer than seemingly arduous exercise. Organised by Cancer Research, it’s the UK’s largest women only fundraising event and there’s a real feeling of camaraderie in the air; so many women coming together to help those affected by cancer creates a real buzz for participants and supporters alike. The races are open to women of all ages and fitness levels, and you can walk, jog or run the 5-kilometre course whichever pace suits you best. Some women don’t do any preparation for the event but if you would like to get into shape, then this can provide the perfect opportunity to get motivated. On the day there’ll be music to set the atmosphere and once you’ve crossed the finish line you’ll get a Race for Life medal and a goody bag - not to mention the pleasure of knowing that you did something fun to help beat cancer. TISSUES at the ready. Massuet’s famous tragedy about one woman’s painful struggle in life and love is being performed at the Theatre Royal this month. When Manon, a beautiful young woman, is travelling to a convent she makes the acquaintance of Chevalier Des Grieux whilst staying at an inn. They fall in love and elope to Paris but are soon tracked down by her cousin and his friend, the nobleman Charles de Bretigny. Desiring Manon’s affections, De Bretigny persuades her to leave Des Grieux with promises of wealth and luxury. Manon is torn between her impetuous love for penniless student Des Grieux or a privileged and opulent life with the wealthy de Bretigny. Massuet’s passionate and moving tale is given even greater emotion by the large-scale production of choreographed ballet scenes and an impressive chorus. The 19th century tragedy, which was first preformed at the Opera Comique in Paris way back in 1884, is coming to Glasgow in the form of a Scottish Opera premiere. Anne Sophie Duprels makes her Scottish Opera debut playing the part of Manon and Scottish Opera welcomes back internationally acclaimed tenor Paul Charles Clarke, whilst the Scottish Opera Music Director Francesco Corti conducts.

IT all started in a couple of tents on the lawn of Camperdown House. Now, this high-profile event has two marquees attracting over 21,000 people, not to mention a stream of TV celebrities to entertain the crowds. This festival is the first of its kind in Scotland and has developed over the years to a three-day extravaganza with a host of events that attract gardening fanatics and foodies alike. The festival provides a showcase for fabulous floral and garden displays; last year there were more than a thousand individual exhibits in categories including cut flowers, pot plants, vegetables, honey, wine, baking and handicrafts. The food festival element provides visitors with the chance to see a high quality three-day cookery demonstration programme featuring both celebrity and top Scottish chefs. Visitors can tuck into top-notch local, national and international produce. There are also talks from experts, a craft fair, competitions, live bands, entertainment and a themed activity marquee for the kids.

BORN alongside Edinburgh’s International Festival many moons ago, the Edinburgh International Film Festival has now become a leading cultural event in its own right. With the massive variety of films on offer it can be hard to know where to begin so pick up a brochure either by email or post, and take time over a drink to pick something from the many sub categories. With this summer event there really is something for everyone - whether you’re a diehard film buff that really knows your movies or the kind of person that visits the cinema only to see the latest blockbuster. The opening and closing Galas are usually prestigious affairs with the glamorous Keira Knightley and Sienna Miller gracing the red carpet last year, as well as appearances from the festival’s patrons Sir Sean Connery, Tilda Swinton and Robert Carlyle.
