In this issue we feature a stunning property owned by property developer Michael Lewis (pg 17). He has created his ultimate fantasy residence and this must be one of my favourite readers’ homes to feature in UPTOWN magazine. Michael has designed it taking into consideration it is a home, but created an interior that would appeal to a wide market. The building has been refurbished and with the help of his architect has created larger open areas, which is quite unusual to have so much space available. I love weddings and this issue we have created some head turning outfits for autumn, ranging from traditional to modern with prices for those on a tight budget to those ‘once in a lifetime’ purchases requiring a second mortgage! However, as we always say in the office, style and design doesn’t have to be expensive, proven by some of the great looks we have put together. We would like to know what you think about UPTOWN and would love to hear from you, as we endeavour to make UPTOWN your favourite Scottish Interiors and Lifestyle magazine. Niina Kuosmanen NIINA was born and grew up in Finland and spent most of her holidays in Lapland. The calm and quiet Finnish nature has certainly influenced her as a result of this environment, which clearly comes across in her porcelain and clay cubes. Once living in the UK Niina received a First Class Honours degree in Design Crafts in 2008 from Oxford and Cherwell Valley College. Niina’s mother is an art teacher and used to teach ceramics evening classes - to which Niina and her sister were taken from an early age. Her mother always stressed that things did not need to be practical - she believes that the experience of making is more important, and the finished piece has no less value whether it has a use or not. To this day Niina finds it hard to make functional objects for the sake of it! Human nature and human behaviour provide constant inspiration to Niina. There is a strong element of play and involvement in Niina’s work; the viewer is invited to arrange and rearrange the multiples of cubes, creating new compositions, patterns and directions of line.
Abigail Borg UK born Abigail always enjoyed making, painting and drawing things while growing up. She was forever painting flower pots for her Mum, and making cards for friends and grew up watching Art Attack and Tony Hart. Following this artistic path she graduated with a First Class Honours degree in Printed Textiles & Surface Pattern Design from Leeds College of Art and is now a surface pattern designer specialising in wallpaper. Abigail exhibited at New Designers: One Year On in London last week. All of the wallpapers in her debut collection ‘Peonies, Lilies and Other Pretties’ were very well received. She also took this opportunity to give visitors a sneak-peek at some nonfloral, surrealist designs she has been working on which will be revealed soon. Abigail’s most memorable career moments to date are winning the Business Design Centre’s ‘New Designer of the Year 2008’ award, and having her wallpapers stocked in Liberty. As for the future, Abigail wants to explore different themes for her wallpapers, and also extend her collections into fabrics which can then be translated into other interior products. Abigail is available for freelance, commission and consultation work and her wallpapers will soon be available to purchase via her website.

Niina’s next exciting project will be making an empty shop window into an installation of cubes, lines and furniture in Cambridge as part of the ‘Changing Spaces’ project. Niina plans to continue making her pieces alongside developing the business side of her practice. Ideally she would like to make work to sell as well as to exhibit as her work fits at home as interior design pieces just as well as in galleries as installations. Most importantly however, Niina’s main desire is to keep enjoying and feeling enthusiastic about what she does! W
HAT type of home would you create if money wasn’t a big concern and the usual harnesses of maximising market value and trying to shove as many bedrooms as possible into a property were not factors? How about not just cutting out the financial worries, but also any bothersome concerns such as accommodating spaces for children, or compromising with your partner on interior fittings? For Manchester-based property developer Michael Lewis - quite obviously single and, it has to be said, quite obviously not short of a bob or two - the result was Willow House, a remarkable fantasy home set in one of the prime areas of real estate in one of the leafiest of leafy upmarket corners of Cheshire. Rather brilliantly, too, that in one of the most cripplingly expensive corners of the UK property market, it displays a bewitching ignorance of the “let’s get it valued” culture that is a fact of life for 90% of the rest of the UK’s self-build population. “I’m obviously very much involved with the property industry,” says Michael, “but I took this project on out of a general interest in seeing what we could create without the usual business concerns. I wanted something that would give me the opportunity to explore my growing interest in innovative and contemporary design without the normal worries of trying to

second-guess commercial property market trends.” Despite looking like a brand new home, Willow House is actually a rather significant remodelling and extension of a traditional cottage-style house. Yet rather than add bedrooms and bathrooms for all that it’s worth, Michael decided that he wanted to create great spaces. Great, self-indulgent spaces. For this, he enlisted the help of Manchester-based architect Simon Reid, with whom he had worked on several more commercially orientated projects. “Simon has always shown a high level of creativity and intensive thinking in his designs, regardless of what they were,” says Michael. “We were instructed at the outset to design a modest - in local terms - scheme of alteration and refurbishment,” explains Simon. “This was based on the fact that when Michael acquired the property it had only recently been comprehensively refurbished and enlarged. The quantum leap in the brief - the moment it became much more than a simple refurbishment came with the discovery that a significant part of the existing house was in such poor structural condition that demolition was the only viable option.” At this stage, Simon explains, Michael began to drive the project and push it forward in ways hitherto unseen. “Michael’s

view is that some of the best creative thinking comes from the need to address constrained and complex issues,” he explains. At this stage, of course, for most ordinary souls, panic would have ensued and financial factors would have resulted in a consideration to a) knock the whole thing down and start again, at the very least having the consolation of being able to salvage the VAT; b) scale down the project to rectify structural problems and compromise on the amount of work elsewhere; or c) sell up. For Michael, the only option was d) scaling up. “Getting back the VAT was not really a consideration,” he says. The major work was to completely remove the middle section of the building and replace it with a double-height pitched section with glazed gable ends. So with the work now taking on a whole new scale and impetus, and Michael’s own team of contractors busy working away - one of the many added benefits of the project for Michael was that it helped to build the skills of his company working with contemporary interiors - work progressed rapidly and straight-forwardly. The whole project took around 18 months from start to finish, with Michael and Simon spending a considerable amount of time on site monitoring progress. This is a house that makes you feel a million dollars. Even the four world-weary, car-tired, shirts-creased-from-too-manynights-in-a-Travelodge judges instantly became centrally cast in a fantasy Goldplated-meets-Beverly Hills drama upon carefully manoeuvring their hire car through the automated gates and up the drive to get the first glimpse of it. It’s like something from MTV’s Cribs - right up there with Mariah Carey showing you round her “floor for people who visit occasionally - it’s where I keep my hair salon, complete with three permanent stylists. When they don’t work on me they just sit around and work on themselves.” Willow House is in that fine tradition - it’s fun and indulgent but, unlike most of the houses on Cribs, incredibly stylish. The first thing that hits you, particularly in the fading early evening light, is the massive glazed oversized Americaninfluenced elevations. With a lighting scheme of the highest order - all controlled from a range of wall-mounted keypads throughout the house - the main focus is immediately on an astonishing double-height entrance hall overlooked by a landing balcony. Oak cladding, cut into minimal slats, creates an unusual but very successful textured feel to the exterior. 20

There’s also, remarkably given all the cutting-edge architecture around, a reassuring farmhouse feel to the whole place, thanks to the retention of much of the original cottage structure. A walk around the gardens confirms the sense that, for all its contemporary styling, this is a home that doesn’t seem out of place in its woody setting. It enjoys fantastic private views over

to the Peak District - zero overlooking - and a water-based landscaping scheme that makes the most of the abundant reflected light from both inside and out. Adding to the softer theme, the side entrance to the house brings visitors into a large open kitchen and TV room that is all very nice but is a slight contrast to the rest of the theme. Simon explains that for his many extravagances, even Michael couldn’t contemplate trashing a £40,000 kitchen that was brand new and had been installed just before Michael bought the property - even though Simon would have preferred to have it replaced with something more in keeping with the rest of the interior scheme. The rest of the interior spaces, however, are truer to the contemporary playfulness and indulgence that was one of the criteria for the project. There’s an envy-inducing billiards room, an informal relaxation area that is the beneficiary of an outstanding lighting design and an entrance hall dominated by the frameless glazing on the front gable end. At the rear of the hall, conventional doors are replaced with seamless sliding panels that are so smooth and precise they hold works of art on each side which disappear into recesses, allowing the flexible space to be opened up or closed down as required. It is upstairs that the real fun begins, however. A ‘family’ bathroom is separated from the landing by a green-tinged etched glass wall, creating a beautiful light effect when >

illuminated. There is a token spare bedroom or two and a large master bedroom overlooking the garden. So far, so impressive. But it’s the en suite that takes the breath away. The centrally located infinity bath’s spectacular views to the Peak District through huge frameless glass can only be obstructed by the pop-up LCD TV that emerges at the touch of a button at the foot of the bath. The bath itself is filled by a one-of-its-kind overhead service bar - it feels like part of the A-frame roof structure - which, in addition, houses two shower-heads (one each side of the bath). The mind boggles at what goes on in here, but either way it is an astonishing piece of interior design and a real standard bearer for bathroom luxury.
After that it’s all a blur of polished concrete walls, grey limestone floors, climate and lighting controls, seamless design and great attention to detail. What Simon has created here for a very accommodating client is, without question, remarkable. It is everything that domestic architecture should be in an ideal world: indulgent, fun, stylish and groundbreaking. It is also worth noting that, for all its paeans to satisfying the private rather than the public, Michael, who is hardly naïve when it comes to making money out of property, believes his investment in Willow House will be a highly profitable one. For some people, it seems, it is possible to have your cake and eat it. 25

Q> You graduated from London’s Architectural Association (AA) in 1979. Were you always destined for a career in architecture? A> I did a foundation year at Edinburgh College of Art and it was during this time that I visited Glasgow and saw the Mackintosh building at the art college. After seeing this building I realised that I wanted to combine my creative aspiration with technical skill to make beautiful spaces. I like architecture because it combines a multiple range of skills - both artistic and technical skills with intellectual rigour.
Q> Architecturally what influences you, past and present? A> Mackintosh inspired me to do architecture. But as a young graduate working in Japan, it was the Japanese architect, Arata Isozaki, that inspired me. He embraced an artistic conception and turned it into buildings, he was interested in the relationship between art and architecture. He saw all his buildings as pure architectural languages and he developed these languages. Adolf Loos [Czechoslovakian-born architect, who was an important pioneer of the modern movement in architecture] was also a source of inspiration. I like the way he created architectural spaces that have flow and continuity - where one room flows into another. I grew up in the countryside and I like the idea of having connected and uninterrupted spaces, and I don’t see architectural space as stylised but instead as an open space. Most of the work I’ve done has got that sort of flow to it.
Q> You spent many years living and working in Japan. As an architect, how would you describe your time in Japan with regard to creative influences and personal development? A> Japanese landscape has got that interconnection between inside and outside space. One thing I absorbed was the way Japanese people craft what they do, the idea of perfection is important. In Japan’s traditional buildings, the way that they use materials is very beautiful, with the touch of the human hand making it perfect.
Q> You’ve recently re-launched your Edinburgh based practice after several years leading a research team at Dundee University. What has brought you back? A> I’m still keen to link education to practice as I think it is fundamental to do research as well as practice. There is an element of the unknown in architecture and research can help change the way that you use things, such as giving you a new and interesting way to use old materials. I didn’t use thatch in a traditional way but made it more contemporary by using modern software. This allowed us to give shape and new dimensions to the old practice. 30

Q> What was the initial brief for the Poolhouse 2?
Q> The Poolhouse 2 boasts an impressive thatched roof. Where did your love for traditional roofing A> The client wanted a thatched roof and to join the two develop and how was such a moulded and separate properties (the farmhouse and the barn) together continuous outcome achieved? with a pool outside. We tried to make the building part of the landscape and to make it appear seamless. We wanted to create the idea that you can see beyond the building into the natural landscape.
Q> What did you set out to achieve when designing and creating the central element of the extension - the pool? A> The water aspect is meant to be something sublime and to have a flowing, floating and dream-like quality to it. The stainless steel features inside the pool are designed to encourage reflection. You don’t get a sense of where the pool stops so there is no containment and we wanted the space to be as open as possible.
Q> Were any other spaces created? A> Downstairs there is a gym, dog’s room, changing room and an office. These are all supporting, quiet, restrained and simple spaces. The upper level resembles a piece of rock that has been cut in to, and the same with downstairs, it is meant to be almost cave-like, like its shewn out of rock.

A> I first got the idea of a thatched roof from Japan. We used a rhino software package - this helped us form and draw something in a continuous way. This software allowed us to give shape and new dimensions to make the old-fashioned roof contemporary.
Q> Are you working on any exciting projects at the moment or in the near future that you can tell us about? A> Yes I have a few projects coming up in the future. There are some quite interesting houses being built in Preston. These are interesting because they will have green, curvy roofs that will be home to wildlife and insect nests. Another project is a boathouse in Sussex, in the South of England. Here we are using willow on the walls to create the idea of a space having living walls through using the living materials. From growing up in the country I have developed a love of nature and I think nature is the primary thing and buildings are additional so that’s why I try to combine buildings with nature.

One of the manufacturers that you specialise in is Pronorm - what are the unique features of this kitchen brand? Pronorm is a trend-aware brand that centres on contemporary design. Their portfolio offers an extensive choice of kitchen styles which gives us real creative freedom to satisfy our customers. As a German company they pride themselves on all their kitchen furniture being precision manufactured from the finest materials, guaranteeing beautiful aesthetics as well as ergonomic excellence.
Many of the storage units in these styles of kitchen have no handles, and this is a characteristic of the Pronorm range. What are the benefits of this technique for the client? Pronorm offers the dedicated Proline handleless range - which is very popular with customers. Handle-less kitchens achieve a very streamlined and simple aesthetic without the visual clutter of handles. The Sterling Grey kitchen is from their Proline 128 range and we have used simple push-catches and electricallyoperated opening mechanisms on some of the door and drawer fronts to achieve that same aesthetic. It’s a style that works especially well with the trend for open-plan living. Without handles, the cabinets can be used to create contemporary furniture such as low level sideboards or wallmounted storage cupboards which provides a seamless transition between the kitchen and living spaces. On a practical level, handle-less doors and drawers are very easy to open and are especially good for people with arthritic problems for example. 50

What type of lighting have you used? And why did you want to use this form of lighting in a kitchen space? Lighting can make or break a kitchen design and the examples shown use a mixture of recessed lights in the ceiling, task lighting and some backillumination behind the wall-based storage in the living area which creates a nice, ambient effect.
What special finishes and touches have you added to make the Sterling Grey kitchen individual and to match the personal needs and habits of a client? As an open-plan room, the design focuses on uniting the kitchen and living room areas. The Sterling Grey cabinetry is a good colour choice being contemporary in tone and enhancing the feeling of space. The central island unit is large enough to cope with the ergonomic needs of the user, incorporating plenty of space for preparation, cooking and washing up, yet the handle-less aspect gives it a very streamlined look that is not obtrusive in the overall interior.

Which features in the Pronorm range that you are especially pleased with? The Proline 128 kitchen range allows you to tailor the working heights of the kitchen precisely around the needs of the user. So if you are taller than average for example, you can have the worksurface levels and the kitchen furniture ergonomically designed to suit you. The rail system set into the wall panelling (as shown in the Iceland Birch kitchen) is also extremely functional. Its flexible design means it can be easily changed to support the different activities in the kitchen.
What are the key trends to look out for in modern kitchen design this season? The key trend is for visual simplicity with bold, straight lines that give a contemporary, architectural feel. Another trend is to keep the furniture and colours neutral so that the kitchen can be accessorised to suit changing fashions. It’s easy to change the wall colour or soft furnishings to update a look, without incurring any major expense.

JEMMA Derbyshire is an emerging Scottish painter who graduated from Edinburgh College of Art in July 2008 and continues to live and work in Edinburgh. Since graduating she has exhibited widely throughout Scotland with works displayed in notable galleries such as The Billcliffe Gallery in Glasgow and both the Leith Gallery and Open Eye in Edinburgh.

GSWA DURING August, The Torrance Gallery’s Edinburgh Festival Exhibition will be the Glasgow Society of Woman Artists. Originally established in 1882 by eight of the first women students at the Glasgow School of Art, the Glasgow Society of Lady Artists flourished until 1971 when sadly it was disbanded due to financial pressures. However, it was revived in 1975 as the Glasgow Society of Women Artists and currently enjoys a membership of around 140 artists and 40 lay members. At The Torrance Gallery, 70 of the artist members of the GSWA will be exhibiting the high standard of GSWA members’ work in painting, sculpture, ceramics, textile art and jewellery. Sheana M Stephen DA is a graduate of Gray’s School of Art and works in Edinburgh. A past president of the GSWA, she is an artist jeweller working for exhibition and private commissions. She uses silver, gold, pearls and semi-precious stones to create individual pieces of jewellery. Flowers and the garden, legends

As predominantly a landscape painter her work is driven by the experience of colour and light. Her works are energetic and present, expressing a love of paint. She aims for each piece to be earthed and strong, exploring the transience of colour and light offered to her by the landscape. Jemma exhibited at StudioArt, Stockbridge, Edinburgh in June with a new body of work following a month’s research trip in Europe with fellow artist Antonia Gallacher. She will also be showing at The Leith Gallery, Edinburgh, from 4th July.

Pam’s subject matter is found in both the rugged west coast of Scotland - with its isolated cottages and vivid colours of the machair and bracken - and in the east coast - with its majestic cliffs, fishing villages and farmland. Davy’s bold and colourful paintings are also inspired by his love of the Scottish landscape. Kim creates plates, bowls and large glass panels by fusing, slumping and painting layers of glass in a kiln, while Phil’s elegant horizon bottles are all handblown.

Ever-changing IN 2008 the Aberfeldy Gallery celebrated 25 years of trading and offers an all year round, ever-changing exhibition of traditional, contemporary and fine art paintings with works by over 80 artists from across Scotland.
Summer feelings SENTIMENTI di Estate (Summer Feelings) is Galleria Luti’s late summer exhibition, and celebrates the gallery’s third anniversary by showcasing some of their favourite artists’ work. Included in the prestigious line-up is painter Deborah Phillips, whose uniquely distinctive pieces invariably catch the eye when light picks up on the shimmering and glittery form of each painting.

Top glass NOW in its sixth year, Roger Billcliffe Gallery presents its bi-annual exhibition, the Summer Design Collection - an exhibition of dynamic and stunning sculptural forms in ceramic, metal and glass.
Mystic art KELI Clark is a self-taught artist living in Fife. She is known around Edinburgh, East Lothian and Fife for her varied work, which includes, Scottish landscapes and cityscapes, atmospheric mystical images and wildlife and murals. She is exhibiting new paintings and prints of ‘Mad March Hares’ at Funky Scottish, 41 Pittenweem High St, Fife until the 29th of July. This exhibition will also include works of East Neuk of Fife villages plus a selection of mystical landscapes. From the 1st of August she will also be exhibiting at the Scottish Seabird Centre in North Berwick, East Lothian. The work on offer here will be of wildlife and local scenes. For the last five years Keli has been invited to sell her work at the Edinburgh Festival. She was delighted to be invited back again this year and will have her work on display on a stall on the Royal Mile - outside St Giles. HAIR EXTENSIONS APPEAR TO HAVE A HUGE FOLLOWING AS WELL AS A FAIR OLD ARMY OF CRITICS - WHAT’S YOUR VIEW? For people who have thin or hard-to-grow hair I reckon hair extensions are like manna from heaven. They give instant volume and added length and when applied professionally should look fabulous. I’ve worked with hair extensions for more than 10 years now and the results I see are great.
IS IT REALLY A LONG, LABORIOUS PROCESS? For the client no… they just have to sit back, be pampered and spend the best part of three or four hours flicking through the latest glossies, sip coffee or a glass of wine and gaze longingly into the mirror and watch the transformation take place. A good salon should devote two extensions’ specialists to a client - it speeds up the process and a full head makeover can happen in an afternoon.
CLIP-ONS OR BONDS? The old adage that you get what you pay for comes into play. Clip-on extensions do what they say on the box - and they’ll look like clip-on extensions. OK for that special event when you want to create a one-night new look. There’s a high risk they’ll ping out or the clips will be seen. Specially bonded hair extensions will look so much more natural. The best bonding system I’ve come across is the cold fusion bond. It doesn’t use heat to apply the hair strands to your existing locks and so removes the damage factor that heat introduces. The bonds are more subtle and less visible and so the overall effect is more akin to normal hair.
ARE HIGHLIGHTS AN ISSUE? Colour matching is key to a first-class hair extensions job. There’s absolutely no reason why any current colour choice can’t be replicated via the new extensions. If a client is seeking different tones and highlights then the colouring should be done ahead of the colour matching and then the extensions will blend in perfectly.

UPTOWN’S resident hair expert TAYLOR FERGUSON puts hair extension questions under the spotlight and reveals the secrets of those who want it thick and long… HOW REAL IS REAL HAIR? I’d always recommend investing in high quality real hair. It looks good. It feels good and it works well with the majority of clients. It will stand the test of time and take any amount of washing. We opted for Great Lengths as our supplier because they’re the best-known and the quality is always first-class.
DO THEY NEED SPECIALIST CARE AND ATTENTION? It figures that any client with extra long or extra thick hair is going to take longer to look after their hair at home. But the key aspect for well applied hair extensions is to treat them exactly in the same way as you treat your own hair. You can even use all your usual haircare appliances as normal when you’ve got hair extensions. Look at the variety of styles someone like Cheryl Cole can achieve. Like any hair extension client she knows that it’s business as usual for her even with the extra tresses.
CASH, CREDIT OR MORTGAGE EXTENSION? As I mentioned earlier you get what you pay for. I’ve seen clients in tears having spent a couple of hundred pounds having extensions put in elsewhere and they come to me for a rescue remedy. On average a half head of extensions which will add significant volume will cost around £450. A full head which makes a really striking difference in terms of volume and length - up to 65cms or 26 inches - will be anything from £850 upwards. The financial factor comes into play when you’re choosing how much longer and thicker you want your hair to appear.

Having bronzed the bodies of Kiera Knightley and Kate Moss, she was kind enough to share some of her secrets that even the least skillful tanners could pull off.

Have a sun-kissed summer I’m a strong believer in wearing sun protection I’ve seen the damage and ageing effects on skin as a result of over-exposure. But as much as lying out in the garden is blissfully relaxing on a hot afternoon, you have to ask if it’s really worth it in the end. I’ve been scouring the shops on my quest to find that golden glow and have come up with some fabulous alternatives. BOOTS SOLTAN ONCE FACE LOTION, £9.99, has a great SPF and applying daily will build a natural-looking glow. (Boots) If you don’t like to wear fake tan, KORRES’ WATERMELON TINTED MOISTURISER, £18, is a 3 in 1 moisturiser, sunscreen and oil-free make up base which saves the skin from product overload and is packed with vitamins. 1> Prep skin - exfoliate thoroughly the night before, concentrating on elbows, knees and ankles. Slather on moisturiser everywhere when dry. 2> Get ready to glow - shower with a perfume-free shower gel to remove any perfumes and deodorant the night before. Scrape hair back and moisturise hands, feet, ankles and knees while wearing gloves. 3> Mousse is easier to apply for novices - it absorbs instantly and is more visible during application. For a slightly darker tan, use a cream self-tanner. 4> Start from the bottom, working upwards towards the heart to help stimulate circulation. 5> Face - either use a facial tanning product or mix your self tan with moisturiser before applying to the face. 6> Leave your hands until last. Remove gloves, wipe the back of your hands on your bottom where you have already tanned (if you have used a cream tanner). If using mousse, put a small amount on the backs of your hands with a small amount of moisturiser and rub the backs of your hands together up to the wrists, and the underside of your wrist with the back of each hand. 7> Use a baby wipe over palms, nails, inside ears, over eyebrows, inside nose and over nails and cuticles. 8> Wear loose socks and pyjamas to bed. 9> Shower in the morning, applying lots of moisturiser everywhere. To ensure your tan looks good and lasts as long as possible, moisturise twice a day.

Curcumin, the pigment that gives TURMERIC its deep yellow/orange colour, has been in the news of late for a variety of reasons. Researchers in America have discovered the spice most often associated with curry dishes plays a role in weight loss, after it was found mice fed a high-fat diet supplemented with turmeric showed a decrease in total body fat - and had lower cholesterol and triglycerides than mice that were not given turmeric. But turmeric’s health benefits do a lot more besides. Considered ‘holy powder’ in India where it’s used extensively in Ayurvedic medicine, tumeric has been used for centuries to treat wounds, infections and other health problems. Now studies have revealed the spice plays an important role in preventing the growth of tumour cells, improving digestion, and inhibiting inflammatory conditions such as joint and muscle pain and arthritis.
Many mums-to-be think they are doing the right thing by taking multivitamin supplements during pregnancy, however new research by scientists in the Netherlands has shown that vitamin E supplements taken during pregnancy can actually increase the risk of heart defects in babies. Earlier studies suggested antioxidant vitamin E has a protective effect against miscarriage and pre-eclampsia - but the latest research, in both London and Australia (published in The Lancet), suggest the reverse may be true. Professor Stuart Campbell, the obstetrician who pioneered foetal 3D scans, has called for the government to place a health warning on vitamin E after trials revealed it doubled the rate of stillbirths, led to low birth weight and increased health complications in the newborn. If your supplement includes vitamin E it might be wise to switch to one that doesn’t, like PREGVIT, which has been specially formulated in response to recent findings. RAVIOLI OF SCALLOPS, ROAST LANGOUSTINES, CHICKEN WING JUS Serves 4
INGREDIENTS
12 scallops 12 langoustine tails, blanched and peeled 150g fresh pasta dough 2 egg whites 100 ml double cream Herb oil (see below) Chicken wing jus (see below)
INGREDIENTS - FOR THE CHICKEN WING JUS 4 shallots 1 carrot 1 leek (white section) 1 stick celery 1 sprig thyme 1 garlic clove 12 chicken wings 150ml white wine 300ml chicken stock 4 tblsp oil 50g butter
INGREDIENTS - FOR THE HERB OIL 2 x tblsp chopped chives 2 x tblsp chopped coriander 150ml olive oil Pinch of salt
INGREDIENTS - FOR THE AUBERGINE PUREE 1 Aubergine. Half garlic clove. Salt & pepper Olive oil
INGREDIENTS - FOR THE WILTED SPINACH 100g fresh spinach Butter Salt & pepper
METHOD - FOR THE CHICKEN WING JUS
• Heat the oil then add the vegetables and chicken wings and cook until golden brown and caramelised.
• Add the garlic and thyme and cook for another minute before adding the white wine. Bring to the boil and reducing for 2 minutes. • Add the chicken stock and bring back to the boil before simmering for 45 minutes. Pass the jus through a fine sieve followed by muslin then set aside. METHOD - FOR THE HERB OIL
• Blitz the ingredients with a hand blender to a smooth puree then pass through a fine sieve. Check seasoning then set aside. METHOD - FOR THE AUBERGINE PUREE
• Slice the aubergine in half lengthwise, score the inside with a sharp knife and brush with some salt, pepper and olive oil. • Chop half a garlic clove and place on the aubergine, join the two halves together and wrap in tin foil. Oven bake at 150-160 degrees for an hour. Take out the oven and leave to stand for 10 minutes.
• Scoop out the aubergine flesh and discard the skin. Place in a small pan and heat and stir to take out the excess water. Spoon the mixture into quenelle shapes to place on top of ravioli. METHOD - FOR THE RAVIOLI
• Puree 2 scallops and the egg whites with a hand blender. Add the cream and puree again before seasoning. Chop another 4 scallops and mix through the puree then refrigerate.
• Roll the pasta dough into a thin sheet and cut 8 x 8cm circles.
• Divide the scallop mixture between 4 of the pasta circles. Top each with another pasta circle before sealing the edges.
• Blanch the ravioli in boiling water for 30 seconds then refresh in iced water. Dry the ravioli and place on a tray lined with cling film. Brush each one with olive oil to stop then sticking before keeping them in the fridge until serving. METHOD - FOR THE WILTED SPINACH
• Take 100g of fresh spinach and put in a pan with a touch of butter, salt and pepper and heat lightly on a medium heat until it wilts. METHOD - TO SERVE
• Cut the remaining 6 scallops in half and warm the chicken wing jus. • Bring a pan of water to the boil and drop the ravioli into the water for 2 minutes.
• Place a non-stick pan on the heat with a little oil, season the halved scallops and langoustine tails and add the langoustines to the oiled pan for 1 minute to cook. Add the halved scallops and cook for 30-60 seconds on each side depending on the thickness. Drain scallops, langoustine and ravioli. • Whisk 50g butter into chicken wing jus and check seasoning.
• Place wilted spinach and 1 ravioli in the middle of 4 heated plates. Top each ravioli with a quenelle of aubergine puree and a fried bay leaf. Surround with 3 scallop halves and 3 langoustine tails and finish by spooning over the chicken wing jus and herb oil. 92

INGREDIENTS
4 x 150g pieces of sea bass (skin on) Oil for frying 12 blanched asparagus tips 100g grated parmesan 4 tblsp olive oil
INGREDIENTS - FOR THE TOMATO CONFIT 6 firm plum tomatoes 50g butter 100ml olive oil 1/2 tsp crushed coriander seeds 1tsp each of basil, thyme and rosemary 1 garlic clove crushed
INGREDIENTS - FOR THE RISOTTO 60g butter 2 x shallots, finely chopped 200g carnaroli rice 100ml Noilly Prat (dry vermouth) 500ml chicken stock 500ml fish stock 2 tblsp mascarpone 50g grated parmesan
INGREDIENTS - TOMATO BUTTER 1 x punnet cherry tomatoes 1 x garlic clove 1 x Tblsp Basil Juice of 1/2 an orange 2 tblsp olive oil 100g butter
METHOD - FOR THE TOMATO CONFIT
METHOD - FOR THE PARMESAN CRISPS
• Place 4 lots of 25g grated parmesan on a non stick baking sheet in a line then bake for 5-7 minutes. • Roll around a wooden spoon before they set and store in an airtight box. METHOD - FOR THE RISOTTO
• Mix both the stocks and bring the stocks to the boil.
• Sweat off the shallots in melted butter and add the rice. Cook for one minute before adding noilly prat and cook until absorbed. • Gradually add the stock to the rice, stirring all the time. It should take about 15 minutes until the rice is al dente.
• Finish with Marscarpone, parmesan and check seasoning. METHOD - FOR THE TOMATO BUTTER • Liquidise everything together except the butter. Pass through a fine sieve 3 times.
• Put into a clean pan and bring up to about 70-80 degrees, do not boil, whisk in butter and check seasoning. METHOD - TO SERVE • Heat the oil in a pan and season the bass. Cook skin side down for 3-4 minutes then turn and finish cooking.
• Warm the risotto, tomato confit and asparagus tips in pans gently. • Place a neat mound of risotto onto each place and surround with the tomato confit and asparagus.
• Place the bass on top of risotto and drizzle with the tomato butter and olive oil, top off with a parmesan crisp, and serve.
• Blanch the tomatoes in boiling water, remove skin, half and remove seeds. • Melt the butter and olive oil then add the garlic, herbs and coriander seeds.
• Place the tomato halves on a tray and toss with butter and oil. Cook them in a very low oven for 1-2 hours, until soft but still holding their shape.

The mass ride begins in Glasgow Green and finishes at Victoria Park in Edinburgh. The 50-mile route takes you through country parks, historic castles and beautiful countryside. It’s a great way to enjoy Scotland’s beautiful scenery, and you’ll lose thousands of calories to boot. You don’t have to be super fit or have a fancy bike to take part – as the course is only as hard as you want it to be. And you’ll be glad to know there are rest stops every ten miles serving free food and drink to keep you going to the finish line. The bike ride’s official charity partner is Maggie’s Cancer Caring Centres, so riders are welcome to get sponsorship and raise some funds to help cancer patients. Entry fees cost £18 for adults and £10 for concession. Examples of these discoveries that will help shape our future are: the slowing down of Alzheimer’s disease, the ability to fuel our cars with household waste and how our interior and clothes will be able to change colour with our moods! IF you love good food, then this event is for you. To mark Scottish food fortnight, eatBute celebrates the best of fresh, seasonal and locally sourced food. The idyllic island of Bute is surrounded by lochs that are teeming with fish and countryside that is dotted with cattle, so it comes as no surprise that there is an abundance of fresh local produce to enjoy. The event kicks off with a Bute Trail, touring the premises of some of the local industries, including Mount Stuart gardens and the Bute fabrics mill. A highlight of the weekend is the food and craft market that runs from 11am – 4pm on Saturday and Sunday, where local farmers, producers and suppliers join forces to showcase and sell an array of mouth-watering local treats. 8 – 12 SEPTEMBER 2009 NEIL Gunn is a novelist whose work, more than any other writer, captures the essence of Highland life. Gunn’s epic adventure story, The Silver Darlings, which was written in 1941, is one of the best-loved Scottish novels of the twentieth century. Set in the early days of the herring fisheries around the Scottish coast, it combines human emotion with stormy dangerous seas. This production brings the story to life and depicts the many poignant threads of the story: of a boy growing to manhood; of a man and a woman finding love in the face of tragedy; and of a community recovering from the Highland Clearances to forge a new way of life from the forbidding, unpredictable ocean. This spectacular tale is brought to the stage by the team who brought you another Scottish tale – Lewis Grassic Gibbon's Sunset Song – along with awardwinning playwright Peter Arnott. NOW in its 63rd year, this arts festival doesn’t need much introduction. The Edinburgh Fringe Festival is always sure to delight, excite, challenge and entertain with its unique line-up of the world’s best in music, comedy, theatre, dance, opera and art. This year’s program is brimming with energy and inspiration and boasts a record 2098 shows this summer! As always, the Fringe covers everything from classic theatre to new writing, and your day can start as early as breakfast with shows such as Breakfast with Burns and Shakespeare for Breakfast. To mark the Homecoming this year, Scottish theatre is well represented by, amongst other offerings, two adaptations of the work of Dame Muriel Spark, The Prime of Miss Jean Brodie and an adaptation of The Wicker Man. Personalities and celebrities return in their droves to the Fringe this year, from Denise van Outen (appearing in her one woman show, Blondes) to Clive James, Julian Clary, Christopher Biggins, Nicholas Parsons and even cricketing legend Henry Blofeld. Amongst many well-known names in the comedy section are Stewart Lee, Jo Caulfield, Daniel Kitson, Craig Hill, Jimmy Carr, Sean Hughes and Alistair McGowan.
DURING this week-long international festival, the streets of Glasgow will become alive to the sight and sound of pipe bands from all over the globe. There'll be an electric atmosphere in the city with some of the world's top piping talent performing alongside Scotland's finest home-grown artists, in many of Glasgow's world class venues and stunning outdoor spaces. George Square will provide the citycentre with a real buzz by staging free daily highlights. The National Piping Centre will be the festival's hub, hosting comeand-try sessions, as well as performances in the outdoor Street Café by some of the best piping folk combos, duos and groups. The festival week will climax with the World Pipe Band Championships on Saturday 15th August at Glasgow Green, the city's oldest park space. Following the day's intense competition and the crowning of the new world champions, the party atmosphere will continue at the After Worlds Shindig - held in honour of all of the competing bands. Many of the events are free to enter, but some charge an admission fee so it's advised to check with the website or venue for this information.
