'Tis the season to be jolly! It’s that time of year again and the countdown to Christmas is under way. As the kitchen is seen to be the heart of the home, then why not make some seasonal changes to yours in the coming year. To help you on your way to re-designing your new dream kitchen, we have tried to make things easier and put them into categories. There are so many different styles and colours, from contemporary to traditional, so take a look at pages 47-73 for ideas from some of our top kitchen companies in Scotland. When interior designer Paul Douglas was asked to work on the show house at a new development outside Edinburgh, he never imagined he’d end up buying one of the properties himself.
A
S an interior designer and partner at Edinburgh’s Room ID, Paul Douglas is no stranger to meeting clients’ interior design needs. “It’s always that little bit harder when you’re the client and the designer though,” Paul confesses, when discussing the transformation of his new-build house just outside Edinburgh. A completely blank canvas when Paul moved in over three years ago, it’s now been given a full interior style overhaul; the whole place was originally white or magnolia, so it was a great opportunity to really assert some style on the place, and who better to do it than Paul himself: “I decided just to really go for it here with strong colours. You can do that when the lighting’s good.” One of seven houses on the development, Paul’s first experience of the properties was in a professional capacity: “My business partner,

Siobhan Mooney, and I were asked to do some work on the show house. It never occurred to me that I might actually end up living here too!” Located in an East Lothian market town about 17 miles from Edinburgh, it’s a marked change to the city centre living Paul had been accustomed to: “I’d been looking for a new place somewhere in town, but couldn’t find anything. My partner came to see the development one weekend and quite liked it. The more we thought about it, the more we liked the idea of going for something a bit different; our place before this was a traditional Victorian house overlooking the Forth in Edinburgh.” Nothing has been altered structurally but this is no ordinary new build. One of the factors which initially attracted Paul to the house was the high spec; from the door finishes and ironmongery to

the bathrooms and kitchen, Paul was impressed: “Quite often the specification in contemporary houses isn’t that great, but this really was, with the exception of the lighting…but I knew I could redo that.” Paul had low voltage lighting put in across most rooms in the house to achieve a warm glow of light cascading onto the walls: “If you’ve got lighting like that, you can go much more dramatic with colour schemes.” The main bathroom was a case in point. While the bath and the limestone were all part of the original finish, Paul had low voltage lighting put in to light up the bath, he mirrored across one wall, added the Bois wall covering from Elitis and put a blind in to pull the room together, creating a sumptuous spa feel. The kitchen also enjoyed the low voltage treatment and similar to the bathroom, the kitchen is the original spec with a few well-chosen additions. Paul decided on a round table: “We do quite a lot of entertaining but it’s very informal so I prefer a contemporary circular table; it’s more sociable.” The suede chairs from the Designers Guild were brought from the last house; the large 16

painting was bought from a friend when she retired to Sri Lanka and the Tolomeo pendant light is from Italian company Artemide. The first floor was the first part of the house to get the full makeover treatment, completed within a couple of months of moving in. “In the main guest bedroom I just wanted to do something really fun and fresh; most guests only stay one or two nights - they’re not here for weeks on end so I went for a great Cole & Son wallpaper here.” In contrast the second guest room (which started life as the TV room) has a cosy snug feel with rich red tones and textured Hessian type wallpaper from Elitis. In the main bedroom Paul went for a stylish masculine feel, choosing copper tones, dark browns and earthy greens for a dark and dramatic overall feel. Downstairs, the fun theme is continued in the Palm Springs influenced TV Room, which leads off the kitchen. An extension to the original property, Paul opted for “completely mad, off-the-wall parrot wallpaper in lime green” for the wall, which plays host to the plasma screen. This bright,

garden room takes full advantage of the great aspect, with floor to ceiling windows on three sides and pulls inspiration from Modernist designs of the 1950s and early 1960s. The 1960s Scandinavian armchair was an eBay find and Paul also added a vintage retro Italian chandelier: “It took me ages to find the right one [chandelier] because I was looking for something very specific. I just had a wire hanging out for ages. I don’t like putting something up unless it’s the right thing though!” It’s been worth the wait though; the room has transformed the house, added value (because they now have both a large drawing room as well as a TV Room) and created a better flow of space on the ground floor. With a passion for mid century design, Paul set to work on the large drawing room, creating the perfect room for after dinner entertaining (no TV but a great hi-fi), inspired by the glamour of 1940s Hollywood: “This was one of the last rooms we undertook (apart from the extension). We left it for about 6 or 7 months and started slowly. It 18

was the most expensive room, so it took a bit longer. It was also the most awkward to furnish; there are two doors in from the hall, but they’re not quite symmetrical with the fireplace!” The room, which runs the length of the house, also has French windows at one end leading to the garden, and a higher window at the opposite end. Paul dressed both windows so they matched, using a voile behind the curtains, to create an optical illusion, suggesting that there are French windows at both ends. For finishing touches and furnishings Paul used his contacts and expertise to achieve the final polished look. One of the paintings was purchased when in Palm Springs, another from an artist who works for Room ID. The dark sofa in front of the window was specially made: “I had to put something in front of the window but didn’t want anything too heavy so had this specially made so it had a back at both sides but nothing in the middle,” Paul explains. Moving away from mid-century glamour, the hallway brings a Far Eastern influence to the
property: “The hall was quite dark anyway so we decided to stick with dark colours, painting the walls in David Oliver’s Moth; it works well with the woodwork.” To give it a focal point we used the statue of the Budda, which I’d had for years. We put a mirror behind him and lit him up from below. It’s a real focal point as you walk into the house when coupled with the gold wallpaper. At the other end by the front door, we used bamboo and backlit it for an Eastern Asian feel. I’ve spent quite a few holidays in that part of the world and really love the contemporary Asian style with spa feel.” With the makeover now complete, there’s just one thing left for Paul to do now - find one last painting for the drawing room. “I did see a piece the other day, but unfortunately it had already been sold! The right one will come up! I’ll know it when I see it. Sometimes you need to be patient and wait for the right piece to come along. If you do everything 100% in the first go, often it’s not right. You need to be patient with certain things. There’s always something to add in or change!”

URING the many years it took the Harris family to transform their home they endured both physical and financial hardship, sold their possessions to boost dwindling funds and relinquished holidays and even friendships in order to fulfil their dream. “What began as a whim turned into our own personal Everest, and there were times when we thought we might never move in,” admits Russell Harris. had lived in the picturesque Cheshire village of Lymm for a number of years and were familiar with the tower - a crumbling 130-year-old landmark straight out of a fairytale which had been redundant for thirty years and was serving as a platform for a number of mobile phone aerials. Russell, a television presenter and producer, would walk his dog along the footpath by the side of the tower and, when it came onto the open market in 1997, he impulsively put in a bid of £138,000 and 25

bought the stone structure. Suddenly he and Jannette found themselves the owners of a Grade II listed building and had to decide exactly what to do with their new acquisition. Intent on creating an inspirational family home within the tower, they battled with planners and local opposition over a period of five years, during which time architects came and went and the couple almost lost heart. However, a chance meeting with Barry Harvey of Redrow Homes gave them the inspiration they needed to get their dream back on track. Barry introduced the Harrises to Ellis Williams Architects, where Julian Baker took on the project and became not only an inspiration but also a family friend - producing drawings which focused on blending contemporary design with the building's traditional features. In order to convert the tower into a practical family house it was necessary to build a wrap-around extension, which follows the shape of the octagonal tower and consists of a series of outward looking living spaces. The high-level convex glass faรงade creates the impression that the roof is floating above the structure, which has been designed so that the sun rises on the kitchen and sets on the dining area, with the summer lounge positioned in the middle facing due south. the reception area, and a ramp leads into the main living room, with changes in level defining the functions of the ground floor spaces. The narrow upper floors of the tower accommodate bedrooms, above which a decked roof garden with a teak hot tub enjoys views of the Cheshire countryside to the outline of Manchester twenty miles away. Planning permission for the conversion and extension was eventually approved in 2002 and building work could finally begin. The main tower was sandblasted and the original water tank removed, with new holes punched into the thick stonework. Huge steel frames were then hoisted into place to support the concrete floors, and argon-filled double-glazed units fitted before foundations could be laid for the extension of rendered blockwork and structural self-cleaning glass. Around 25 tons of steelwork has been used in the construction of this additional living space and for the floors and roof in the original tower, with Russell paying day rates to many of the tradesmen because of the sheer size and complexity of the project - a factor which sometimes made it difficult to keep track of costs: “When we were first considering the project we estimated the cost of the build at around £75,000, but the last time I looked at the quantity surveyor's report I needed therapy for a fortnight!” Russell laughs. “Our tower was built in 1870 and was sponsored by the local landed gentry, which is why it is so beautiful - the classic romantic Rapunzel tower - but it also has a tremendously utilitarian feel to it,” says Jannette. “Since taking on this project 28

we have become passionate about modern, contemporary architecture, and wanted the interiors to be as simple and uncluttered as possible. We chose seamless white liquid resin flooring for the main living spaces and added colour with the lighting, which was designed by Kate Wilkins who was responsible for the lighting scheme at the Tate Modern.� Every detail has been carefully considered and the end result is both contemporary and luxurious. The winter lounge within the base of the tower is a modern, minimalist snug, wrapped inside a curving wall, which acts as a screen for projected images, and is simply furnished with two modular Italian sofas, a low white table and two dramatic lights hanging from the ceiling to either side. In contrast, the summer lounge forms the heart of the open-plan living space, and enjoys a breathtaking vista through glass doors across the garden. To the other side of the summer lounge stands the double height kitchen, where curtain wall glazing looks out onto decking, bamboo and a shallow black pool, which produces wonderful reflections of the tower when the early morning light hits the water. Frosted glass stairs behind the kitchen lead up to the first floor, where the opulent six metre high master bedroom contains a low, modern bed standing against a back-lit headboard. Three fabric panels hang down to create a more intimate space and an oak staircase leads up to the gallery, where a bath supported on oak blocks and twin basins perched on an iroko table form part of the ensuite bathroom. 31

Such luxury was in stark contrast to the rented accommodation where the Harris family lived for four years. “We didn't go out for dinner or on holiday and lived in our work clothes,” says Russell. “Sometimes I wished we had never bought the tower, but…the first time we soaked in the roof-top hot-tub with its 360 degree views I knew it had all been worth it.” | 32

It was once home to mature fruits and specimen-trees now the walled garden in Kinloch House in Fife is where you will find the fruits of architect Gareth Hoskins’ labour. Main day spaces viewed from the garden

HE walled garden was, in Victorian times, a way of keeping foxes and stoats away from nibbling the strawberries. Now it is a stunning single storey home with floor to ceiling windows and the ruins of a small bothy built-in to the south-east corner. The clients, a professional couple with one child, were attracted to the site by its remoteness and its strong connections with nature. They approached a number of Scottish architects but chose Gareth Hoskins Architects after visiting three of their completed projects – the Visitors’ Centre at HMP Edinburgh, the Bobbin Mill at Comrie and the ‘Mack Room’ at the Lighthouse. The architect’s brief was for a minimalist ‘glass box’. “They wanted to feel as if they were living outside,” says Gareth Hoskins. “A building like this is very much generated by a response to its sight. It’s not as if we had this plan in a drawer and were just looking for the place to build it. “The clients loved the Barcelona Pavilion and asked if we could design them a house like that. Ideally it would have a glass roof and they wanted it to be very minimalist. They didn’t want to live in a house in the garden, rather they wanted to live in the garden.” The property could have been built above a single storey in order to take in the views of the surrounding Fife farmland. However at the time Fife Council was in the process of revising its planning policy to prevent any type of residential development in walled gardens. “There are too many of them disappearing into residential properties,” said Gareth. So early discussions with the local planning department also took place to ensure they would be happy with the design in this sensitive historic location.

“We had to then apply for planning permission and a building warrant,” said Gareth. “The key for the latter is that the building must not waste energy, obviously in today’s climate people are much more aware than they were 10 years ago about issues like global warming. In final design the external walls were approximately 50% glass, around five or tens times higher than that of a developers house. Through careful research and with specialist advice, the architects were able to maximise the clients’ desire for expansive glazing while still satisfying building regulations in matter of fuel economy and safety. The property is full of clever and quirky designs that allow for the minimalist look to come to the fore. The south-facing, full height living room glazing is formed using factory-sealed double-glazed toughened-glass that incorporated an insulating layer. They were the largest sheets of glass available in

Scotland at that time, and fulfilled the client’s request for a frameless ‘invisible’ appearance. The units are butt-joined together and under-floor heating allows for maximum efficiency and avoids the visual clutter of radiators. The walls in the house are ‘inhabited’, or renamed ‘fat walls’ by the architects. Many household appliances including the boiler, fridge freezer, dishwasher and cupboards are contained within the walls, it acts as a storage space allowing the main rooms to be clean and uncluttered. Visitors would not be aware of these spaces as they concealed behind white flush doors, the same colour as the walls. The cleverly designed, secret aspect to the home extends to a jib door that exists in the kitchen partition, a door concealed in a wall that acts as a direct entrance to the kitchen area. There is no handle; the joint between the door and the wall next to it is hidden in a recess in the vertical cladding. “It’s a quick way for the clients to slip into the kitchen with bags of shopping,” says Gareth. “When they’re having people round they would naturally follow the partition round to the kitchen area but this concealed door offers them an alternative.” The overhanging roof is designed to provide shade in the summer on the south and also acts as a rain canopy between the car port and the front door on the north side. Its designed to appear thin and visually lightweight, with no light fittings. Uplighters are concealed in the kitchen enclosure to bounce light off the ceiling. The house is supported by columns that are concealed by pivoting oak insulated doors, which connect inside and outside. They add to the impression of a thin, floating plane in contrast to the marked solidity of the walls. In the summer time the doors can be hinged open so the living space flows out into the garden.

TOP 5 TIPS to building a new house by Gareth Hoskins Architects
The elliptical-plan shaped music room is clad in vertical timber boards and is top-lit with a glass skylight with a curved door that is flush with the line of the walls internally. The master bedroom is fully glazed with a built-in bed head. A dressing table faces due west and the room features built in wardrobes. A series of patricians then form the remaining two bedrooms, en-suite bathroom for the master bedroom and second bathroom. The clients directly sourced all of their own building materials. The process took about two and half years, “It was long and problems did arise,” said Gareth. “Farm land doesn’t have incoming telephone lines and outgoing drainage, you have to account for these things. “Also when the floor slab was cast the client said it was too big, but we had to re-assure and tell them it would be fine. Then the walls came up and we had a phone call saying they were worried the building was too small, the roof was on and they could feel the building closing in around them. We had to ease them through that phase. “It was a couple months later they called again to say that it looked fantastic, they were delighted with the finished product. They had never built a new house before and we had. That was the difference.” “The Walled Garden has provided the perfect, secluded spot to build a new home,” said Gareth. So much the clients are back in talks with Gareth Hoskins about a possible new project – perhaps the vegetable garden round the corner? |

Don’t rush into it. These things have to be planned out carefully as it’s a major undertaking building a new house. Sit down, plan it out, give yourself a time scale and set a budget. If you don’t do these things it means the process just becomes much more complex.

Please talk to an architect. They are, in the most part, small practices with only a few people and a lot of their work is extensions and houses. They are more than happy to have an informal discussion with people before the start of the project to find out if you want to work together. You might be quite surprised about how inexpensive their fees are.

The clients had a folder they gave us full of images of the types of furniture they liked. It was of a particular make of music system or a picture that showed a minimalist approach to a living room they really liked. That allowed us to see what they were looking at. It’s a great way of getting your ideas across. Even include images of what you hate. It saves the client writing down everything they want, it’s a great shortcut to showing their aspirations.

Make sure you visit buildings designed by the architects you are going to visit. That way when you turn up to meet a design team you can discuss previous work and ask about the design and materials that were used.

Don’t think it’s going to be easy. Find the right architect for you so you can have honest discussions and tell them when you have concerns. Likewise the client has to take our advice seriously. If you don’t have that relationship it might become a very difficult project, perhaps even impossible.

Centre to the showroom is the brand new range of Stoneham kitchens, which are on display for the first time ever in the north of Scotland offering a stunning new collection of timeless classic and contemporary kitchens. Stoneham, from Kent, have been manufacturing kitchens for more than 140 years so they are experts in fine craftsmanship combined with the latest technology. They’ve got it covered CONCRETE FLOOR & WALL PANELS, from £115 per square metre plus approximately £40 per square metre fitting and finishing costs. With an abundance of materials to choose from, you can give your kitchen a new look at a fraction of the cost... STONE Stone is a porous material and as such is good for use in areas where there is water. As a natural material its appearance doesn’t date easily and it won’t clash with other materials chosen for the kitchen. It’s also very hardwearing so will last a long time.

GRANITE/MARBLE Granite is a popular choice as it’s aesthetically pleasing and hardwearing. Both granite and marble last a long time and because they’re natural materials will not date quickly. Granite is available in matt and polished high shine finishes.
SYNTHETIC - CORIAN AND ZODIAQ There are various types of synthetic, composite worktop materials available in the current market - a popular choice. Corian and Zodiaq are just two of these options: Corian is a versatile option because it’s available in a variety of styles and in over 70 colours. It can be shaped according to the desired design of your kitchen and is highly practical due to the fact that it’s water resistant and easy to clean. Corian can also incorporate a sink, among other things, thus creating a look where the transition from surface to sink appears to be continuous. Zodiaq is an advanced composite material made of 93% quartz boasting unusual clarity and consistency of colour combined with exceptional strength and durability. With a cool, fresh, sparkling look, Zodiaq catches and reflects light, capturing the radiance of quartz crystal and is available in over 30 colours. Zodiaq can be used to create worktops as well as splashbacks, wall-cladding and even flooring!
STAINLESS STEEL Stainless steel has been used in commercial kitchens for many years, and is now commonly used in domestic kitchens. It requires very little maintenance and is heat-proof and hygienic as well as super-stylish! The metal doesn’t rust and fits well with a contemporary kitchen. Care should be taken however not to scratch or dent it.
GLASS Glass worktops are reasonably easy to clean and are a suitable compliment for a modern kitchen. Available in a variety of colours and textures, they look excellent when enhanced by under-lighting. When installing a glass worktop remember it needs to be reinforced glass and it will also need to be heat protected.
HARDWOOD Hardwood worktops are hardwearing and tough. They do require an element of care to keep them in good condition, however on the plus side scratches and dents can easily be repaired. Some types of wood have natural anti-bacterial properties, which make them more hygienic. Wooden worktops are wonderfully versatile and so suit both modern and traditional style kitchens.
LAMINATE Laminated worktops are widely available. Most laminated worktops are constructed from high-density board, onto which the patterned material is bonded, forming a waterproof laminate. Laminate worktops come in many colours, styles and textures and tend to be the most economical option when choosing a worktop surface. 68

A glass act at the fair TIM Garwood established Alicia David Contemporary Art in 2007 to promote his own work and that of other artists he considers to be experts in their chosen medium. Recognising the exciting art market in Scotland he has whole heartedly embraced it by attending the two main Scottish art fairs including the forthcoming Edinburgh Art Fair this November. On his work he says “I have made the transition from working on canvas to glass. Painting on the reverse of the glass forces me to consider every mark, constantly building up the layers. I am essentially working back to front – any marks that would traditionally be added last are placed on the glass first. It is this planned process that has made my work ever more crisp and simple.” The highly saturated colours in his work sparkle like polished precious stone, the lack of any texture removes all shadows making the pieces glow, allowing the colours to be as vivid as possible. The main show Fireworks is not as obvious as it may first sound. The group of paintings on show may be inspired by November 5th but throws in a few twists. Expect the unexpected. Ceramicist Anna Noel makes a welcome return to the gallery. Her figurative raku ceramics are inspired by circus life, Tang sculptures and the Mabinogion (welsh folklore).

ARTIST PROFILE
Even before graduating in 2002 from Glasgow School of Art, Blair Thomson was a committed painter recognised at the Royal Glasgow Institute with double prizes in 2001, and had already exhibited at the likes of the Glasgow Art Fair. With a sell out degree show to help him, his paintings quickly became highly collectable achieving numerous corporate and private commissions in the UK, US and beyond. This was most likely due to the bold colours and painterly style combined with an atmosphere critics have described as mysterious and inspirational with ‘an irresistible Zen-like calm’. He paints in his large studio most days, sometimes working on the floor or on tables, from studies of isolated piers in Japanese ink, to oils charting open skies and even the rhythmic structure of telecom towers! Several visits to Japan have shaped his outlook as well as his marks. This summer he exhibited there with Wakabayashi, a 90-year-old calligrapher, who has been teaching him. Last year he was given the honour of becoming the youngest member of the RGI council and selection/hanging team for their large annual exhibition. WHERE AND WHAT DID YOU STUDY? I studied Fine Art: Drawing and Painting at Glasgow School of Art.
HOW DID YOU FIND THE TRANSITION FROM STUDENT TO MUCH SOUGHT-AFTER ARTIST? With hind-sight it should have been dauntingly difficult but just happened somehow as I was so focused on making new work, exhibiting it and roaming coastlines gathering ideas and sketching.
HOW WOULD YOU DESCRIBE YOUR PAINTING STYLE? The inkworks use fresh, confident mark making with Fude brushes to simplify and accentuate the essence and impact of a chosen structure or place. Fluidity and painterly movement in contrast with suffused, open areas in the oils create impact and liveliness. Most pieces become semi-abstract. Communicating by Blair Thomson

HAVING SPENT SOME TIME IN JAPAN RECENTLY, HOW DID THIS INSPIRE YOU ARTISTICALLY? I realised when I arrived I didn’t have enough work for the show with calligrapher Wakabayashi so I just had to get outside painting and make things work. This old master told me to carve stamps for myself then for him, so being propelled into this new artistic and social environment was a great inspiration, as were the places journeyed to. Or maybe the greatest was seeing him sign up for his next show in three years time!
WHAT HAVE YOU GOT PLANNED FOR THE FORTHCOMING YEAR AND WHERE CAN OUR READERS SEE AND BUY YOUR WORK? I’m preparing large oil paintings for an open contemporary exhibition in Uozu, Japan in May which I am invited to. One condition is that I must attend so I’m hoping to learn more calligraphy and make new work whilst there. Currently I have new pieces in several galleries such as John Green Fine Art, scotlandart.com and the Billcliffe Gallery (all in Glasgow), Kilmorack Gallery (Beauly), Life on Canvas Gallery (Edinburgh) and Sophie Montgomery Gallery (London). Serves: 4 Preparation Time: 15 minutes Cooking Time: 15 minutes INGREDIENTS
225g (8oz) conchiglie (shell shaped) pasta 250g bundle of asparagus 4 tbsp Filippo Berio Olive Oil 1 tbsp red wine vinegar 1 tsp Dijon mustard 4 skinless chicken breasts 50g packet of rocket 120g sunblush tomatoes 40g (1.5 oz) pine kernels, lightly toasted in a dry frying pan Salt and freshly ground black pepper
METHOD
• Cook the pasta in plenty of boiling water for 10 minutes. • Trim the woody ends off the asparagus, cut into 5 cm (2”) lengths and steam for 5 minutes until tender crisp. Remove and set to one side while continuing to cook the pasta. • Meanwhile, heat a griddle pan or heavy frying pan, brush the chicken portions with a little of the oil then place on the griddle pan and cook over a medium-high heat for about five minutes on each side or until cooked (the juices should run clear when a skewer is inserted in the centre of the breast). • While the chicken is cooking, put the remaining oil in a bowl with the vinegar and mustard, season with salt and pepper and whisk together. • When the pasta is cooked, drain well then return to the pan. Roughly chop the rocket and add to the pasta with the asparagus, tomatoes and pine kernels, add the dressing and mix well to combine. Divide between 4 warmed plates and top each with a warm chicken breast. Delicious!
GRIDDLED CHICKEN WITH PASTA, ROCKET AND ASPARAGUS

Serves: 6-8 Preparation Time: 25 minutes Cooking Time: 50 minutes
Please note that for this recipe, as well as your standard kitchen tools, you will also require: Rolling Pin 23cm (9”) diameter metal quiche tin Greaseproof Paper Baking Beans
INGREDIENTS FOR PASTRY 175g (6oz) plain flour Pinch of salt 40g (1.5 oz) butter 40g (1.5 oz) white vegetable fat 3 tbsp of cold water
INGREDIENTS FOR TART FILLING
500g (1lb 2oz) red onions 1 tbsp lemon juice 4 tbsp Filippo Berio Mild and Light Olive Oil 2 tsp fresh rosemary spikes, chopped 75g (3oz) black olives, pitted and roughly chopped 3 medium eggs 284 ml carton of single cream Salt and pepper 50g (2oz) Gruyere cheese, grated
• To make the pastry, put the flour and salt into a bowl - add the butter and fat and rub in to make a fine crumb texture. Add 3 tbsp of cold water and mix with a flat bladed knife until the mixture forms a dough. Gather up and knead gently on a lightly floured work-surface until smooth. • Roll out the dough, keeping a nice round shape until large enough to line a 23cm (9”) diameter metal quiche tin. Once in the tin prick the pastry base with a fork then place in the fridge for 30 minutes. • Meanwhile, peel the onions and slice into thin wedges, then place into a large bowl. Add the lemon juice and toss together. Heat the oven to 200°C/Fan 180°C/400°F or Gas Mark 6. • Heat the olive oil in a large frying pan, add the onions and fry very gently for 15 minutes or until softened, stir in the rosemary and allow to cool.

• Line the pastry case with greaseproof paper and fill with baking beans, then bake in the oven for 10 minutes until the pastry begins to colour around the edge. Remove the beans and paper then bake for a further 5 minutes. Remove from the oven and reduce the temp. to 180°C/Fan 160°C/350°F/Gas Mark 4. • Place half of the onions into the flan case and spread evenly then scatter over half of the olives and half of the cheese. • Beat the eggs with the cream, and season. Pour three quarters over the onions then top with the rest of the onions, remaining egg mixture, olives and cheese. Bake for about 20 minutes, or until lightly golden. Enjoy!

CHOCOLATE MOUSSE Serves: 6-8 Preparation Time: 20 minutes INGREDIENTS
175g/6oz good quality dark chocolate (70% cocoa solids) 3 large free range eggs, separated 100g/3oz golden caster sugar 3 tbsp very strong coffee, e.g. espresso 1-2 tbsp brandy (depending on taste) 100ml/7 tbsp Filippo Berio Extra Virgin Olive Oil
METHOD
• Break the chocolate into a bowl, place over a small pan of simmering water and allow to melt. Remove the bowl from the pan and let it cool to lukewarm. • Meanwhile put the egg yolks and sugar into a large bowl and whisk until thick and pale in colour. Whisk in the coffee, brandy and olive oil, then gradually fold in the melted chocolate. • Whisk the egg white until almost stiff, quickly fold in a large tablespoon to the chocolate mixture until smooth, then lightly fold in the rest of the chocolate mixture, trying not to beat out the air.
• Pour the mixture into 8 small china dishes or 6 large shot glasses and place in the refrigerator until set.

Could 2010 be the beginning of a new you? Take a long look in your mirror and decide on an action plan for an image makeover. We asked UPTOWN'S own makeover expert TAYLOR FERGUSON, hairdresser to the stars, to share his top ten tips for a 2010 hair boost.
1 > CUT, CUT, CUT
5 > STRAIGHT TALKING
Begin your 2010 makeover process with a great cut. It’s the perfect step in an age-defying transformation. I’m not suggesting you get cropped and go from long to short in one dramatic session. I’m recommending you give your hair the best cut possible - not only does it drop the decades appearance-wise but you’ll have good hair days every day.
If you’re curly and fed up with the look then think about chemical straightening. It even works on coloured hair. Straighten the curls and opt for long flowing locks. It will be easier to style, feel and look softer.
6 > LIFESTYLE FOCUS 2 > BE COLOUR CONFIDENT When opting for full head colour then please ensure that it looks natural and tones with your own skin colour. If you’ve gone for full head then you can enhance the tone with highlights and lo-lights. Go for highlights if you want a strategic boost. As we head into 2010 the hot colours are actually cool colours - with the buzz phrase “cool neutrals”. Look out for virgin, coloured brunettes, pale blondes and reds with a subtle tone. The brasher look has gone and it’s back to very fresh, lush and clever cool undertones.
3 > REVISE THAT REGIME If possible cut down your shampooing timetable to every second day. Yes, I know it’s a tough step to take but your hair will benefit enormously. Daily shampooing can be excessive and will make roots oily and the hair can lie flat and lifeless against your head. Invest in a great cut and your style should easily survive the reduction in washing.
4 > LONG STORIES Lust after longer and thicker locks? Now Mother Nature gets a help in the shape of real-hair extensions. Not only can they add extra centimetres but they’ll add lush volume giving your hair a much healthier and fuller appearance. Treat them as you’d treat your own hair. My preference is hair from Great Lengths - and the cold fusion bonding system. A perfect combination. BEFORE & AFTER: Opt for cool colours for 2010 - and if you’re looking for more hair then think about hair extensions for the instant makeover.

Always ensure that your chosen style suits your face shape, head shape, your age and finally your lifestyle which, I believe, is now an increasingly more important factor in selecting the right cut. Anyone can opt for any style - be it long, short, with or without a fringe but the focus must be on ensuring that the style is personalised to suit the individual.
7 > LOVE IT Yes, some tender, loving care for your crowning glory. It’s all very well going to the hairdressers once every month or six weeks but how are you looking after your hair the rest of the time? I recommend consulting your stylist for the best products for conditioning and giving your hair the occasional intensive care treat.
8 > DRY AND DULL NO-NO If your hair looks dry and lack-lustre then there could be several reasons. It might be your shampoo or it could be over-drying with your appliances. If you’re going to use a dryer use some sort of mousse or lotion to reduce the friction which inevitably dries out the hair. If you use hair straighteners use a protection spray.
9 > FINE FAREWELL I see many clients who have fine hair and who are constantly seeking ways of not only preserving their hair but enhancing its appearance. I often recommend colouring the hair - it will beef up its texture and enhance the look.
10 > MOVEMENT IS IN 2010 will see natural movement in hair styles. Fringes will still be big news. Straightening irons and curling tongs will play second fiddle to Velcro rollers and hot brushes.

The smokey eye has been a huge make-up trend for a long time and is a big hit yet again this season. However, everyone wants to know how to get the smokey look without looking like they have two black eyes! No7’s Eyeshadow Palette in Stone has all you need to create this look, with four foolproof neutral eyeshadow shades to suit any skin tone, including a mixture of light and dark shades in both matte and shimmery finishes. There’s also an eye pencil in a complementary colour for lining the eye. FOR SMOKEY EYES: Simply apply the darkest pearly shade all over the lid and socket area, then blend it in. Apply the same shade underneath the eye using an eyeliner brush, creating a cloud of colour all around the eye. For added depth and definition, add the darkest matte shade onto the lid near the lashes, building it up towards the outer corner - then add a touch more in the outer corner of the lower lashes too. To finish, add a touch of the highlighter shade under the brow and in the inner corner to add a spark.
Summer might be over but there is no need to ditch your bronzer! Instead of using it to create a sunkissed look, this season’s trend is for killer cheekbones and a sculpted look to the face. Soleil Tan de Chanel is the perfect bronzer to create some definition to the face whilst also adding some colour. Rather than sweeping the bronzer over the cheekbones, dust it in the hollow of the cheek, just under the cheekbones to create shading underneath. Then highlight the highest point of the cheekbone with shimmering powder. My new favourite is Lancome’s La Rose Liberte Powder. Sweep this gold sheen powder over the skin to make the cheekbones really stand out, and enhance the complexion by giving an iridescent glow.
