Carnivore Heaven... ‘Well done’ execution! When asked to visit the Butchershop Bar and Grill, I was somewhat bemused by the name…..visions of great hunks of meat maturing on hooks, cleavers at the ready and queues of enthusiastic customers filling their fridges for weekend fare of stews and Sunday roasts….. Surprisingly, we could have been in the Big Apple. Led in to the retro bar for a much needed drink, first impressions were good. Quiet, soft lighting, background jazz with an all American steakhouse styled interior, we were beginning to feel quite at home. The only thing lined up was a selection of spirits and mixers for an exotic list of signature cocktails...from a Sidecar Aperitif for the fellas to a Champagne Daisy Fizz for the dolls…it was the perfect start to tantalise the tastebuds. Moving through to the main grill gangs of hungry diners filled the tables. Choosing food was easy…a simple but sophisticated

choice of quality meat and seafood, we opted for Louie’s calamari with lemon and saffron mayonnaise and the house cured salmon gravlax for appetisers, both fresh and served by enthusiastic, attentive and friendly staff. To compliment our choice of steaks for our main course - which were full flavoured, rich, mature and succulent with the beef reared in Scotland no less - we opted for a very palatable Argentinian Malbec Reserva at £24.95. The 8ox fillet (medium of course) and the 10oz sirloin, served with a garlic king prawn top and sides of mash and handcut chips, were cooked to perfection. A shared selection of fine cheese from local monger Ian J Mellis, finished off an exceptional meal - not a cheap one, but value for money with quality produce and top nosh. Unique in Glasgow, we left looking forward to another visit. Word on the street is this is billed as THE premier steak joint…one even the Godfather would approve of!

at home with..Kirsty Wark Newsnight host, self proclaimed foodie, media mogul, mum and wife, Kirsty Wark is also a firm West Ender who loves nothing better than wandering down Byres Road, wearing no makeup, as she tells Katrina Tweedie.

Kat: Well-known and on TV, don’t you have an image to maintain? Kirsty: No one ever recognises me probably because I never have any makeup on, but Glasgow is a very grounding place in that way. Kat: You live near lots of ‘media’ types. Do you all hang out together? Kirsty: Joan McAlpine the SNP MSP is round the corner, Clare English the BBC presenter is behind us and Archie Forrest the artist is down the road, but there’s no sense of specialness and we’re all just doing our job. The West End is full of interesting people always bumping into each other. Kat: Much has been made of your Celebrity Masterchef debut last year. Are you in charge of the kitchen at home?

16 Images courtesy of the BBC

Kirsty: I am a big foodie but I’m never proprietorial about my kitchen and I love it when people muck about in the kitchen. I encourage people to bring food when they come to me. Doing it together is a very communal, sociable and neighbourly. Kat: Do you eat in or out normally? Kirsty: We do a lot of entertaining at home and a few times people have brought courses, which I really enjoy. Alan (Clements) and I probably eat out a couple of times a month. Kat: Do you have a signature dish? Kirsty: Not really. I’m widening my repertoire now to be honest and trying lots of new things but I do a really good marinated rack of lamb.

www.westendlife.biz

@westendlife

Kat: You’ve registered the name ‘Kirsty’s Kitchen’. Does this mean we’re going to see a new West End restaurant soon? Kirsty: I registered kirstyskitchen. com but I don’t know what I’ll do with it. It’s much more likely I’ll do a blog of some sort rather than open a restaurant. I don’t think there’s any harder work than running your own restaurant. Kat: You’ve commuted to London every week for 20 years; maybe running a restaurant would be easier? Kirsty: What I would love to do is open a breakfast place. That would be great fun. I’m quite a morning person and I think going out for breakfast is one of these great American traditions. I’m about to go to New York where one of the best things is eating out in the morning. Kat: What would you serve? Kirsty: Unusual omelettes, pastries, that kind of stuff and it would only be open from 7-11am…with someone else cooking and me having a cappuccino at the bar. Kat: Where do you go in the West End? Kirsty: I play tennis every Sunday morning at the Western Tennis Club and Alan runs in the Botanics with our dog, a black lab called Pepper. I love Kelvingrove Gallery of course and the Hunterian, although I think it’s too hidden. Kat: Now your two children have left home and you mostly work elsewhere would you live anywhere else?

www.westendlife.biz

Kirsty’s Celebrity Masterc

hef debut

Kirsty: Caitlin, 21, is at Edinburgh University, and Jamie, 19, is an undergraduate in New York, but I can’t imagine living anywhere else. I wouldn’t mind building a house in the West End but that’s not going to happen because there’s no land. Kat: How excited are you about the Independence debate? Kirsty: I think all politicians of every stripe are going to have to raise their mettle over the next few years in Scotland. There are going to be ideas, answers, arguments, and from my point of view it’s very exciting. Kat: Can you share your own views? Kirsty: Of course as a sentient human being I’ve got my own strong opinions but I keep them to myself thank you. Kat: As a foodie, where do you recommend in the West End? Kirsty: Crabshakk is absolutely my favourite place to eat. I adore it and can’t believe the West End was once without it. You can just pitch up and sit at the bar or nip over the road to the Glen Nevis for a drink and they’ll call you over. I love that. It has a real neighbourhood feel and you always know someone in the crowd.

@westendlife

Things I love most about the West End: • I’m so glad we’ve got Fopp Records and Hyndland Bookshop, and one of my favourite places is the Oxfam bookshop. • Cafezique (Hyndland Street) where I have a coffee in the morning. • Alan and I absolutely love the Grosvenor Cinema. So civilised that you can take your drink in. • The Ubiquitous Chip, which I always associate with lovely things because that’s where we go for special occasions. It’s where I went for my graduation, where Alan proposed and we went there for my father’s 70th birthday. • James Allan is a brilliant butcher, I love the cheese shop, George Mewes, in Byres Road, and Fantoosh Fish at Kelvinbridge. 17

Creating the perfect kitchen is like cooking good food; it relies on having the right ingredients, together with the right knowledge and the right experience. At Howdens we know our kitchens have to work everyday – all the time – that is why we only supply them via the small builder or tradesman, because we understand they are best placed to give you the reassurance of a professional installation. We also know that our Lamona range of cooking appliances has to be reliable and perform perfectly each time they are used. That’s why we teamed up with award-winning chef, John Topham, Head Chef and owner of The General Tarleton Inn, Yorkshire, to put our appliances through their paces. Howdens have over 500 depots throughout Britain supplying kitchens and joinery products from stock. Each of our depots has experienced designers who will plan your kitchen using our range of over 35 styles and be on hand throughout to help you and your builder. Brian Maule Roast Duck with Braised Chestnuts, Cranberry & Port Sauce Ingredients (Serves 4): 4 Duck Breasts 50ml Olive Oil 100g Butter Salt and Pepper Port Sauce 1 Packet of Cranberrys 16 Precooked Chestnuts 6-8 Rooster Potatoes 1L Double Cream 1 Packet of Spinach 16-20 Brussel Sprouts Ice

1: For the Dauphinoise potatoes, peel and slice thinly the potatoes. 2: Mix the potato slices with double cream and season with salt. Now layer them in an earthenware dish or roasting tray. Cover with dish/ tray with foil and bake in the oven for about 2 hours on a low heat, pressing down every 20 minutes during cooking with a tray. (When serving you can either cut out into rings, or serve in the dish/tray.) 3: Reduce some cream, spread over the Dauphinoise and glaze under the grill. 4: Take the duck breasts and trim any excess fat and sinew. Score the fat as this helps to break the fat down and crisp the skin. Then put the duck in fridge until you are ready to cook. 5: Pick and wash the spinach, peel and score Brussel sprouts and cook in boiling salted water before refreshing in iced salted water. Drain the water as soon as cold.

6: If the sprouts are quite big then cut them in half and fry until golden brown all over. 7: Put the precooked chestnuts in to a wide pot and bring to the boil. Add a little port sauce and reduce until it becomes sticky, then add a little more. Don’t flood it as you are making a glaze. 8: Season the duck then place skin side down into a hot pan. Cook until nice and gold then turn over until sealed. Place skin side down again and put pan into the oven for six to eight minutes. Then let the duck rest for a few minutes. 9: Fry off the spinach in a hot pan with a little butter and season. 10: Place the spinach at the bottom of the plate with the duck on top, place the Dauphinoise at top left (make sure the Dauphinoise potatoes are very hot), Brussels Sprouts top right with the chestnuts in the middle. Add the cranberries to the sauce and drizzle all over.

fitness..clubs & classes It’s that age-old battle, enjoying life or doing exercise and losing a few pounds. Here, Westender Ginny tries to combine the two. Gin or Gym? Now there is a question! For a late 40 something gymophobe like me it’s easy, G&T please, but when the Doc tuts at you one too many times, the gym seems to be calling. So, totally unfit and out of breath, I took my first steps into the Western Gym on Hyndland Road. Not having been inside a gym for years, fear and trepidation were the order of the day, never mind what the heck was I going to wear! After my first session with GymGuyMark, my poor old muscles have never been the same and various parts of me constantly protest at the torture I am putting them through. From the cross trainer to weights, ouch is my word du jour! Having said that I am now on my 8th session and have to grudgingly admit that I have lost 4lbs and there are rumours that I may actually have ‘definition’ in my thighs. So is the target of fitting into skinny jeans a reality? Follow me on Twitter @ginorgym or on my Blog at http://www.westendlife.biz/ ginorgymblog.html where I share the ups, downs, the pulled muscles and GymGuyMark’s patter. More perspirational than inspirational! Till next time...
