Everyone knows that Tourism Golden exists, but not everyone is aware of what the organization does. In Golden, there is a small team of just three people dedicated to carrying out their mission as a Destination Marketing Organization (DMO) representing Golden and surrounding area. They and a volunteer board of directors representing accommodations, tourism operators, attractions and local businesses, work hard to bring tourism dollars to this small community. It was while researching other movers and shakers making things happen in Golden, that Tourism Golden Executive Director Joanne Sweeting started taking stock of the innovative marketing initiatives that has led the team to achieve a number of really great successes in the past three years. Sweeting says the efforts of the DMO are resulting is higher awareness of
Golden and an increase in visitation and contribution to the local economy. Since their inception in 2007, revenues generated on accommodation have increased by 39 per cent. Additionally, the DMO’s focus on public and media relations has resulted in Golden being featured in high profile publications including Canadian Geographic, Explore Magazine, Westworld and the Globe and Mail Travel section.
“German visits to the site are up 35 per cent. Translating the page makes it easier for them to read and will also help to put Tourism Golden higher on the search engine results page. Since 2012, Sweeting says the efforts of the DMO are resulting in higher awareness of Golden and an increase in visitation and contribution to the local economy. “Many who cite Tourism Golden’s
marketing efforts and vibrant tourism industry as one of their influences, she notes. “Nothing gives us greater pleasure than knowing that our efforts make a valued difference to the community of Golden. When we hear, as we have consistently for the last three years, that businesses are having their best year ever or even just hearing others comment how much busier the town is with visitors. That makes it personal and it’s the best reward we can get. Among their accomplishments, Tourism Golden says that since launching a proactive campaign to attract weddings, the number of weddings in Golden has more than doubled since 2013. If all this wasn’t impressive enough, Tourism Golden has some great initiatives and key projects planned for the coming year. The DMO is developing “sophisticated language websites for the Chinese and German markets which will be launched before the end of 2015. Essentially, this means that the team will

Town brings two great events to Golden Submitted by The Town of Golden
Are you a community leader or parent interested in learning more about Fundamental Movement Skills? Do you have children that you feel could benefit from a day of activities dedicated to running, jumping throwing and wheeling (for children in wheelchairs)? Coming to Golden on Saturday September 12 and Sunday September 13, are two great events to help improve sport performance - for coaches and for younger athletes. On September 12 the Town of
Golden Recreation Services Department and Pacific Sport Interior BC, in line with Coaches Week in B.C., bring the Fundamental Movement Skills (FMS) Community Leader Course to Golden. This free course teaches sport leaders, coaches, recreation camp leaders and parents how to observe and improve the fundamental movement skills. On September 13 it’s the kids’ turn, as the ToG Recreation Department and BC Athletics brings the very popular Run, Jump Throw, Wheel (RJTW) program to the community. RJTW teaches kids ages six to 12 the fundamental movement skills of running, jumping throwing and wheeling using track and field inspired games, activities and skill challenges.

“The Recreation Department is excited to host these two great courses, says Jordan Petrovics, Manager of Recreation Services. “A part of our ongoing goals is to facilitate programs that have direct benefits to existing groups and the general public. Both of these courses are a perfect fit to teach coaches and participants a couple tricks that will make them (you) that much better at the activities they (you) love. Throwing, catching, jumping, striking, running, kicking, agility, balance and coordination form the basis for future sport skill development and for the lifelong enjoyment of physical activity. The FMS course breaks down simple skills into key components to help the child learn and understand. When a child is confident and competent with these skills, they can develop sport-specific and complex movement skills that allow them to enjoy sport and physical activity. The FMS course can be delivered in three different formats - Community Leader, High School Leadership, and Coach Professional Development depending on the needs of the coaching group. RJTW is a national program and all the activities are designed to teach fundamental movement skills using developmentally appropriate progressions to introduce and develop skills, with skill consolidation done through games and skill challenges. According to Athletics Canada, more
than 100,000 children participated in the program last year – and the organization’s goal is to increase this number to over 500,000 annually.
“Both of these courses are a perfect fit to teach coaches and participants a couple tricks that will make them (you) that much better at the activities they (you) love.
The program uses age-defined, developmentally appropriate progressions and includes adaptations to allow for participation in an integrated manner for participants with all physical and intellectual disabilities. The FMS course will be held on Saturday, September 12 at the Arena Lounge from 8:30 a.m. to 4:30 p.m. The course is free, but it is important that people pre-register by visiting www. viasport.ca. RJTW is being offered at the Mount 7 Rec Plex from 8:30 a.m. to 4 p.m. on Sunday, September 13. Registration can be done at Town Hall or through B.C. Athletics and is $50 + GST per child. For more information and general inquiries about the FMS and RJTW courses, please call Town Hall at 250.344.2271 ext. 225 or email rec. booking@golden.ca.
Golden to host 2016 events ... Continued from page 3 Brown adds that the initiative will help expose larger news organizations – and their readership - to what Golden has to offer for winter and summer opportunities as a tourist destination “This is the first time the conference is being held in Golden and the first conference Tourism Golden has initiated to bring to town, says Brown. The hope is that Tourism Golden can also take what they’ve learned, and apply this knowledge when
bidding to host future conferences. Tourism Golden is also continuing to actively seek to host professionally organised sporting events and are in discussions to establish an additional annual event from 2016. “We have to make sure that we keep the momentum going and I am really excited to see that happening with a number of upcoming confirmed media visits, the return of the 2016 Transrockies Singletrack 6 mountain bike race in July 2016, and the new projects that we are developing, says Sweeting.

Rock bands and famous facies by Carrie White &EJUPS t (PMEFO 5IJT 8FFL
Titled “Rock bands and famous facies, Gideon Smith’s guided Rambler’s Hike - at Kicking Horse Mountain Resort on Aug. 22 - was witty, informative and fun – and laced with the odd geology pun. Smith, an instructor at the College of the Rockies in the Adventure Tourism Program, teaches the natural history of the area and generally does one Rambler’s Hike each year. His passion and knowledge of the area’s geology were quite evident during his lesson.
“For 10 kilometres in each direction – it’s all quartzite, which is a special kind of sandstone. Beginning at the top of the gondola and following the trail that leads up to the top of the Stairway chair, hikers learned all about the sedimentary rock that makes up the mountains in the Purcell/Selkirk and Monashee ranges. In this region, the dominant type of rock is quartzite (the rock band), while the facies refers to the way the rock changes within the same layer. “All the rock on this ridge is quartzite, explained Smith. “For 10 kilometres in each direction – it’s all quartzite, which is a special kind of sandstone. If you pick up regular sandstone and rub it, little pieces of grain will come off, he says. But here in the Purcells, most of the rocks are made from small grains glued together by silica – forming quartzite. Interestingly, Smith said that the rock on Kicking Horse carries the characteristics to prove that it is ancient sand. “When you have ancient sandstone, you know that you are walking on what was once a beach or a desert, he said. This area was beach sand. While the majority of the area’s summits are made of quartzite, the name given to the layer of rock is Hamill. Smith likened the rock and its layer to a type of

vehicle and the brand name that makes it. Simply put, rock layers are named for the locations where a typical example may be found and the rock layer in these mountains was named for Hamill Creek, located south of Golden in the Purcells. Down slope from the gondola, the Hamill quartzite varies in colour. “On top of the stairway, it is very white, Smith told the group. “But at the top of the Crystal Bowl, it is a bit mottled. The rock layer is 4,000-feet thick in the Purcells. Hamill quartzite is older than the Burgess Shale – being from the preCambrian age, and is second oldest layer of rock in the Purcells and Selkirks.

On volunteerism Carrie White Editor I had the great privilege of being part of the Golden Sound Festival volunteer crew last weekend and I have to say it was one of the high points I’ve experienced since moving to Golden years ago. The music was awesome and the vibe was awesome, but what I enjoyed most was being part of the volunteer crew! Even after I was finished my “shift, I found myself wanting to hang with this excellent bunch of people. We had so much fun! And, to be honest, it felt good being a part of something that brought joy to so many and helped to support emerging musicians. I have thought a lot about volunteering in different capacities over the years. It is said that along with the obvious benefit you are bringing to the organization you volunteer for and the people it serves, volunteering is good for the soul. It’s a great way to feel like you’re a part of something, making a difference and affecting change in whatever small way you can. I started to wonder about how the idea of volunteerism was born. That’s a vast topic, so I decided to research specifically volunteerism in Canada. It is interesting to learn about how deeply rooted volunteering is in our country and I thought I would share just a bit of what I learned. One particular paper I found to be a good read was published by the Voluntary Action Program Department of Canadian Heritage and written by Janet Lautenschlager. The paper states that in the early days of European settlement in Canada, as people adjusted to their new way of life, families depended on each other to survive and prosper. “People willingly pulled together to help one another in times of need. This spirit of mutual assistance was needed to combat the wilderness and the rigours of the long Canadian winter, as well as to prevent social isolation. Farmers combined efforts and relationships within the settlements also instilled a sense of what we call community. “As more and more settlers arrived in a district, the commitment to voluntary cooperation to achieve common goals continued, and volunteer organizations began to form. In 1688, in what was then called New France, in the town of Quebec the number of poor exploded due to the fact that many people lost everything in a major fire a few years earlier. “Concerned for their less fortunate neighbours and alarmed at the increasing number of beggars in the streets, public-spirited citizens of Quebec took action to help these individuals.

Wildsight brings outdoor film festival to Golden by Carrie White &EJUPS t (PMEFO 5IJT 8FFL On Sept. 12, Golden will play host to its first outdoor film festival – a treat for those that are keen to watch movies under the stars. Starting at 8 p.m. in Keith King Memorial Park, the Wild & Scenic Film Festival is being put on by Wildsight Golden and promises a host of beautifully filmed titles that have been viewed across North America. According to their website, wildandscenicfilmfestival.org, the Wild & Scenic Film Festival is based out of California and features environmental and adventure films “that illustrate the Earth’s beauty, the challenges facing our planet
and the work communities are doing to protect the environment.” Natasha Overduin, Wildsight outreach coordinator, explains that the organization allows groups to rent its films and says there will be a good variety of films in the two-hour event. “They are in mini-documentary style and feature the beautiful outdoors and how we enjoy nature,” she says. “The feature film is about a person who took a paddle board up the coast of B.C. following the same route that oil tankers take.” Overduin says it was very important to Wildsight that they choose films with a positive message. “Wild & Scenic offers over 200 films to choose from and we wanted the films to have positive messaging that didn’t
reference the negative stereotypes that are often attributed to environmentalists,” she explains. “We want people to be inspired to be active in protecting the areas they love and wherever possible we wanted the films to be B.C.-focused.” Overduin says Wildsight also thought it would be interesting to show some adventure sports that are not often featured here - like surfing, for example. Wild & Scenic travels all over North America, but their film festivals are not normally held outdoors – that’s the Golden twist, says Overduin. “Other branches had huge success with this event last year, so we got some funding to help with the costs to bring it to Golden. As outreach coordinator, I thought this would be a great way to connect with a broader demographic. Because everyone
loves movies!” Wildsight members can buy tickets at the event for $10, non-members for $15, or for $20, moviegoers can buy a combination Wildsight annual membership plus admission to the event itself. “We are hoping to encourage new members because with new memberships, the society can grow,” says Overduin. Members receive the Wildsight newsletter and discounts at future events, but most importantly says Overduin, memberships help to fund the programs that Wildsight does – like the community weed pull for example. Buy a ticket and be entered in the raffle, where prizes include a pack of four winter day passes to KHMR, a Nordic Ski Club ... Continued on page 18

Learning the geology of Golden ... Continued from page 5
“The Horsethief Creek layer is the oldest. It’s over in the Nicholson and Canyon Creek area and is made from a dog’s breakfast of rock sandstone, siltstone and marble slate,” said Smith. Walking further from the gondola, a few other kinds of rock become visible – most notably, shale - which is visible in layers of the broken rock that lay everywhere. Shale is softer than quartzite and easily erodes to forms ledges or slopes. The band rock in the middle of the Hamill is slate and is an example of a facies change within a layer. The Hamill layer is dated to about 420 to 440 million years old – older than the dinosaurs by radiometric dating. The Purcells were built by lateral pressure from the west. They were pushed sideways – not up - and the lateral pressure came from movement of the tectonic plates. “These mountains were built around the time of the dinosaurs, but the rock they are made of is much older,” noted Smith. “The pressure of the Pacific plate coming under the North American plate caused these layers to buckle sand slide east and up.” Purcells/Selkirks/Monashees and the Rockies were all originally one range that was formed when micro continents collided with the western edge of North America. In the Kicking Horse canyon you can see the crumpled folded shale. Importantly, Smith explained that the whole process of mountain building in the area did not form the jagged peaks we see today. “The process actually produced a plateau, not mountains,” he said. “The plateau was carved away by glaciers and rivers and that produced the scenery we see now.” As far as the rock that made the mountains in this area, unlike the Burgess Shale over in Field, There are no known fossils in the Hamill layer of rock until the top 40 metres. “The suggestion has been made that in the early Cambrian period, the Hamill was shoreline,” said Smith, adding that the water would not have been very deep and
since there were no land creatures at the time, there are no creatures – or fossils – to be found deeper in the rock. Smith ended his hike with a short lesson on the Rocky Mountain Trench – the massive valley where all this rock – and Golden – lives.
The Trench runs from Montana, through to Northern B.C. where it disappears under the Laird plane and then reappears and goes all the way to Alaska. “It’s so big, that when astronauts first looked at it from space, they had to ask NASA what they were seeing,” said Smith.
Controlled by fault lines which run on either side of the valley at the base of the mountains for 1500 kilometres, the Trench is younger than the mountains that surround it and provides the perfect flyway and marsh environment for migrating birds.

by Claire Dibble Special to Golden This Week This town needs a brewery. Many have said it before, some may have even taken the first tentative steps in that direction, but Kent Donaldson and Mark Nagao are walking the talk. Discussions of how great it would be to brew local beer started over a sudsy drink or two, nearly ten years back. These days, they’re making tough decisions about which brews will be part of the Whitetooth Brewing Company’s regular offerings. Ground has been broken, and the building is underway in a prime location downtown. And in the meantime, Kent and Mark are brewing up a storm, testing recipes in the efficient little pilot brewhouse that Kent calls his garage. There’s no two ways about it, Kent Donaldson is well-suited for a lead role in developing a brewery. With a

Eat Pure: Because I CAN -
The (at times) irrational obsession to can
by Nicole Du Vent Eat Pure Mountain Market Special to Golden This Week
It’s that time of year again where I start to feel overwhelmed by the amount of produce that’s ready all at once. You find base-ball bats hiding in the Zucchini patch that you swear weren’t there yesterday; the daily picking of a couple tomatoes has grown to a mountain in the decorative bowl you’ve been lovingly placing them in; and that case of Okanagan fruit you were so excited to get is screaming at you and collecting fruit flies outside the kitchen door. Earlier in the season you were browsing canning recipes looking for new and inspiring relishes, jams or pickles to try, not knowing that those unassuming veggies and fruits would be ganging up on you now! If you’re like me (and I hope you’re not), you have this deeply rooted desire to put away food for the winter. You get great satisfaction going down to your canning shelves come winter to see the pretty jewel colored jars all lined up in a row. What I’m realizing, though, is that for me it’s more than a desire. It’s an obsession, at times a sick one. While I could be relaxing with a good book, having a hot bath or taking an evening stroll on the last few warm nights of summer, instead I am surrounded by endless jars and steam escaping angrily from a massive canner that is bubbling
away late into the night. Is it to save money? Not really, unless you have a peach tree in your yard. To know where my food comes from and exactly what is in it? Yes, I’d say so, but it is more than that. For me, there is a deep rooted fear that if I don’t use this ancient knowledge of how to preserve food, through canning, fermenting or dehydrating, I might lose it. I think it comes from our lineage as hunters and gatherers; the desire to be able to sustain oneself and family through the long harsh winters. I think this is what drives me to stay up late after a 10-hour day at work, back aching, standing over a giant bubbling pot with a headlamp on (outdoor kitchen). Is it rational? No. Obsessive? Yes. So why do I submit myself to this year after year? Because I CAN. Canned Fruit: Some people freeze most of their excess fruit, but you can’t give away a bag of frozen plums like you can a pretty jar tied with a ribbon around it! Canned fruit is terrific with granola and yogurt, on hot oats, made into a crumble or straight up for a sweet healthy treat year round! Most
canned fruit recipes instruct you to make a sugar-syrup that the perfectly sweet already peaches, pears or plums are then bathed in. My mama would never do such a thing! Here is my mom’s technique on canning fruit - and with a 10-acre orchard, we did a lot of canning! Start by heating up your 500ml or 1L cleaned canning jars in the oven to sterilize them, heat new lids in a pot of hot water too.
“For me, there is a deep rooted fear that if I don’t use this ancient knowledge of how to preserve food, through canning, fermenting or dehydrating, I might lose it.” Meanwhile wash and prepare your fruit but removing the cores or pits. Plums can be left as halves, pears or peaches cut into
slices. Be sure to use ripe but not overripe fruit. Pack the fruit into the hot jars, pressing down gently and filling them quite full, leave 1-inch headspace at the top. Top each 1L jar with 1 tbsp raw sugar (I’m sure you could use coconut sugar or you could skip all together). Then fill up the jars with water to cover the fruit but keep the headspace at the top. Wipe the rims of each jar clean. Remove lids from the hot water with a set of tongs and place on the jars, screw on the rings. Place jars into a pressure (my go to) or hot water bath canner. Fill with water half way up the jars for a pressure canner or covered for a water bath canner, then put the lid on. Bring to a boil and either bring to five pounds pressure if you’re using a pressure canner or simmer for 30 minutes in a hot water bath canner. Once time/pressure is complete, turn off the heat. If you’re using a pressure canner let the steam out, then remove the lid and wait 5 minutes before carefully lifting the hot jars (use a jar lifting tool) out and place them on a towel lined counter to cool overnight. Store in a cool dark space.

Smoky skies advisory in effect for Boundary and Kootenay areas Submitted
August 24th, 2015 16:00 PDT– Penticton. The Ministry of Environment, in collaboration with the Interior Health Authority, is updating the Smoky Skies Advisory issued on August 20th to include the entire Boundary and Kootenay areas due to forest-fire smoke that is affecting the region. Southerly winds have continued to spread further north heavy plumes of smoke from the large wildfires burning in Washington State, resulting in high concentrations of fine particulates and poor air quality. While this episode is expected to persist until a major shift in wind patterns and weather conditions, smoke concentrations will vary widely as winds, fire behaviour and temperatures change. Avoid strenuous outdoor activities. If you are experiencing any of the following symptoms, contact your health care provider: difficulty in breathing, chest pain or discomfort, and sudden onset of cough or irritation of airways. Ice Cream for Breakfast -
Wardrobe blues: You win again, parenthood! by Sarah Elizabeth Special to Golden This Week Since having my baby, I’ve had to redesign my wardrobe too many times to count. Sadly, I did what many hopeful new moms do once they give birth. In denial of the 50-pound weight gain I inflicted upon myself during pregnancy with pasta, cake and ice cream (like a whole cake, all at once, and often), I enthusiastically tried on some clothes from my pre-pregnancy wardrobe. I feel like giving you a minute to let that idea sink in - the wrongness of it. My partner watched innocently as I struggled to pull a trusty old dress over the enormous watermelon-like balloons my breasts had become. It was a situation I just don’t think he was prepared to support me with.
“In denial of the 50-pound weight gain I inflicted upon myself during pregnancy with pasta, cake and ice cream (like a whole cake, all at once, and often), I enthusiastically tried on some clothes from my pre-pregnancy wardrobe. My best friend would have known, instantly, the bad decision I was about to make. She would have stepped in. She would have looked at me, nonjudgmentally of course, and asked smoothly, “So, are you still, like, sweating profusely at night from your hormonal fluctuations? And I would have replied, “Yeah, it’s so gross, I’m leaking out of everywhere. Then she would suggest that I not try my clothes on for at least another six months to a year because I wouldn’t want to “sweat or leak anything on them. I, stubbornly, would have laughed and said, “Oh, I’m not worried about that. saying, “So, do you want me to help you pick out the super stretchy stuff? And I would have snapped my head up to look at her, and after a long pause and staredown, I would have said, “You know, I think I have to breastfeed now. Maybe I’ll wait about six months to a year? She would
have humbly nodded along and offered to put the bags away for me as far away as possible. (By the way, this would have been the same friend who, when we were 14, wrestled me for a pair of scissors to ... Continued on page 18

Finding the perfect pair of ‘mom jeans’ ... Continued from page 17 ensure I wouldn’t ruin a perfectly good pair of jeans - I still have the scar on my finger.) Unfortunately, she wasn’t there on this day.
“... pants, well, it’s just too horrifying to explain how my fresh stretch marks cascaded like a waterfall up and over my waist bands – at least the ones I could get up and over my newfound Beyoncé booty; and most importantly, I was really, really uncomfortable.” Obviously, it was a disaster. I couldn’t get ANY zippers up; tank tops became tube tops as my poor breasts suffocated in them; I could hardly breathe; pants, well, it’s just too horrifying to explain how my fresh stretch marks cascaded like a waterfall up and over my waist bands – at least the ones I could get up and over my newfound Beyoncé booty;
and most importantly, I was really, really uncomfortable. Not a sensible position for a new mom to be in. Optimistically, I stuffed all of the items into bags and saved them for later. Two years later. Because of this I’ve been a regular thrift shopper. Ever since I delivered our 8-pound-11-ounce baby out of my body - I like saying that, “Out of my body”- I’ve been dreaming of the shopping trip I would make once my body stopped fluctuating so much. This shopping trip has not yet happened, except when I decided to shop for a pair of pants because I was still wearing my maternity pants after two years. I went to one of those fancy pants places where they professionally help you find the right match for your body. Here I was, in the big city, at the big mall, totally self-conscious and considering my identity change since my previous shopping experiences. I attempted to make a joke to help me in my discomfort. I said to the sales woman, “I had a baby a year and a half ago. I haven’t shopped since before then. I guess I need ‘Mom jeans’ or something?” My face turned red and I started to sweat. She didn’t laugh, which made it worse. I checked in with
myself, “Are you even wearing underwear to try stuff on?” I said to myself. “Yes, I am,” I said back to myself. She gave me a few items. I ended up trying on the most comfortable pair of pants I had ever worn in my entire life. I looked at the price tag and started to sweat again. As a typical thrift shopper, it was not only weird for me to buy anything that had a tag on it, but painful to be considering anything with that many zeros, and I was spending it on myself to boot - on myself! I weighed the pros and cons. I had spent the last three years wearing thrift store clothes, clothes that didn’t fit, or pajamas. While the maternity pants were cozy, it was time for them to go. So, I treated myself. I may have left with a bit of a bruise on my bank account, but I also left with the most comfortable pair of “Mom jeans” a Mom could find, with the help of a very empathetic sales person. Have you ever tried to swim upstream? I got through the 50 pound weight gain, the delivery and the 50 pound weight loss (Towanda!). I got through the leaky boobs and survived with the $12 bra I wore until my nipple poked a hole through it. I wore my maternity pants for an extra year and a half to get the most out of them and because, who are we kidding, they are the

Stains on everything. As this sunk in, a lone tear rolled down my cheek as I realized the shopping trip I’ve been hoping to make will have to wait a little longer. Early origin of fudge, the making of a classic by Janet Crandall-Swaffield 1VCMJTIFS t (PMEFO 5IJT 8FFL
Fudge as we know it today in this part of the world is a North American original. It has a high nostalgic value, people often speak of memories of their mother of grandmother in the kitchen making fudge at Christmas to share with family. Nowadays there are all manner of fudge recipes, foolproof and otherwise, calling for smart ingredients like corn syrup, sweetened condensed milk or marshmallow creme. The original fudge recipe though was a simple combination of sugar, butter and either milk or cream. Instructions were basically to measure precisely, cook exactly to the soft-ball stage, and stir constantly. Then beat it to a smooth, creamy consistency while it cools. Fudge can be tricky however, and it is easy to undercook or overcook a batch and end up with “crystallized fudge through insufficient stirring. In my experience, having made and sold more than 8,000 lbs of fudge over the past 18 months, the harshest critique of fudge is the texture, gritty or smooth, with smooth and creamy the ultimate goal. Believe it or not, it’s almost more important than the taste, certainly an equal priority. While some food historians peg the creation of fudge as February 14, 1886, it is disputed. According to TheNibble.com, an online magazine about specialty foods, most stories claim that the “first batch resulted from an accident with a bungled (fudged) batch of caramels, when the sugar was allowed to recrystallize, hence the expression “Oh, fudge! Supporting historical documents show a female student at Vassar College in Poughkeepsie, New York, writing that a schoolmate’s cousin had made a batch of fudge and very successfully sold it at some type of bake sale. She obtained the recipe, made 30 lbs, and had similar success with her sale. Word of the confection spread to other women’s colleges, and the rest, as they say, is history. In Scotland, they make what’s typically referred to as tablet. A medium-hard, sugary confection, usually made from sugar, condensed milk, and butter, boiled to soft-
