About This Publication Fall is a fabulous time of year. The temperatures get cooler, the harvests come in, and we get treated to nature’s color show as leaves on trees exchange green for other hues. As a result of all this, several things happen:
We get out those warm sweaters from moth ball storage. We start enjoying dishes made from those harvests, from pumpkin pie to corn bread, to baked apples. We go on “leaf peeping” tours across the country, especially in the northeastern portion. Tea is an essential part of it all, and the fruits of those harvests play their part, sometimes by “starring” in the foods we enjoy at tea time, and sometimes by adding their unique touches to the teas themselves. So we have chosen 10 such teas/tisanes that have that special character to companionably accompany the joys of this wonderful season.

Recipe for Pumpkin Spice Latté This flavored tea is all about the spices and evoking the flavors of foods made with pumpkin and so popular this time of year. To truly enjoy that experience, try this recipe: Amounts: Water Temp: Method:
2 grams* (1 tsp) dried tea leaves for 8 oz. water 212°F (100°C) Put water and dry tea into a saucepan Heat water and dry tea to boiling Reduce heat and simmer for 2 minutes Add 4 ozs milk (whole or 2%, some fat content is needed) and 1-2 tsps of sugar (per your taste) Bring to a boil (be careful not to over boil), then simmer 2 minutes Strain into a 12-ounce or larger mug or teapot
* Use more if you want a stronger flavor
Pumpkin Spice is a tasty all-organic blend that is all about the spices. It starts with an orthodox black tea from India. Our Keemun Hao Ya A (whole leaf style) Black Tea (祁红) is an outstanding and rare tea that meets the highest Keemun standard with a sweet biscuity fragrance and exquisitely mild but complex aroma with a hint of smokiness. Many fans of this tea say you can compare Keemun Hao Ya A to a fine burgundy wine because of its superb bouquet. Keemun Hao Ya A has been traditionally used as gifts by Chinese state leaders for foreign celebrities. The premium tea ages well and improves over time.
Keemun Hao Ya A produces liquid with luster and bright reddish brown color. In a cup, it gives bright golden ring appeared near the edge of liquor to the cup. The golden ring is the sign that tea leaves are rich in theaflavins and that is vital for good quality. Tea leaves after infusing are bright brownish red, very consistent and even. Apple Spice Black Tea
Apple Spice Black Tea is one of the best apple and spice flavored black teas we have tried over the years. The cinnamon is evident but not overpowering. The apple adds the right touch of fruity delight. Great served with some hot, frothed milk for a twist on that spiced tea treat that tea drinkers call “chai.” Apple Spice Black Tea dry in the package has a strong cinnamon and apple aroma. In the cup, the liquid is clear, with a strong aroma of cinnamon and apple and a flavor that has cinnamon but more importantly the sweet aspect of apple. Muzha Tie Guan Yin Classic Roasted Oolong Source: Season: Grade: Leaf Shape: Leaf Color: Fragrance: Liquid Color: Taste:
Muzha, Taipei, Taiwan Spring 2011 Premium Firm, even, complete shape, wrinkled surface. Glossy dark-brown color on the leaves. Rich, pure fruity, some roasted charcoal aroma. Clear, pure, reddish, deep orange-yellow color. Rich, smooth, acid-fruity taste, no bitterness or astringency. Very mellow and lingering finish!
Suggested steeping for everyday consumption: Gongfu style teawares or Yixing pots are best, but gaiwans or porcelain teawares are also great options. The leaves need to expand fully, so use a slightly larger vessel than you need. Personal Tasting notes: Visually, the tea provides a beautiful deep, orange-yellow color infusion that is wonderful to appreciate in a clear vessel. The tea provides an amazing rich-fruity fragrance indicative of the high quality of this production. The liquid covers the tongue smoothly, providing an acid-fruit that is not overwhelming but very satisfying. There is virtually no astringency. You may call me frugal but I tend to push this to at least 10 infusions by increasing the brewing times in the later infusions. It is evident that this tea was prepared by a Taiwanese tea master.

Menghai 2006 First Grade Ripe Pu-erh Type of Pu-erh: shu (ripe, cooked) Composition: Yunnan big leaf variety (around 40-year-old small tea arbor) Vintage: 2006 Spring Grade: First grade Origin: Menghai area, Yunnan Province, China
This 2006 First Grade Ripe Pu-erh Tea is in loose leaf form and was carefully selected by my supplier during one of their annual tea acquisition trips to Menghai.
Suggested steeping for everyday consumption: Gongfu style teawares or Yixing pots are best, but gaiwans or porcelain teawares are also great options. The leaves need to expand fully, so use a slightly larger vessel than you need. Amount of Tea: 3-5g of tea leaf in 80-100ml of water Water Temperature: 210°F (100°C) Steeping Time: 1-2 mins 1st infusion, 90 secs 2nd infusion Add 10-20 secs for additional infusions Number of Steeps: at least 5 Storage method: Please store all Pu-erh tea in a dry environment without any odor. This tea is processed using a mediumfermentation style that is carefully controlled by the skillful technicians who are in charge of the fermentation. The tea possesses a very thick, soft, and mellow taste with a wonderful full, lingering aftertaste. This tea has been dry aged. The longer it is stored and ages, the better the aroma and taste it will become. It can be brewed at least 12 times.

Chai Lover’s Delight is a black-teabased chai that is true to Indian tea tradition where this style of tea is served on the streets by chawallahs. In India this is known as “masala chai” (spiced tea). This spiced tea is definitely a classic and is usually served hot with lots of milk and sugar, but this is mild enough to enjoy straight.
Steeping Time: 3-5 minutes per taste Number of Steeps: at least 7 times How to prepare Indian style (1-2 servings) Amount of Tea: 2 grams* (1 tsp) dried tea leaves for 8 oz. water Water Temperature: 212°F (100°C) Stovetop Method: Put water and dry tea into a saucepan Heat water and dry tea to boiling Reduce heat and simmer for 2 minutes Add 4 ozs milk (whole or 2%, some fat content is needed) and 1-2 tsps of sugar (per your taste) Bring to a boil (be careful not to overboil), then simmer 2 minutes Strain into a 12-ounce or larger mug or teapot * Use more if you want a stronger flavor

Doke Black Fusion Tea
Doke Black Fusion Tea is unique in that it has almost the flavor profile of many fine dark-roasted oolongs teas. When brewed it has an amber liquor. This tea possesses a rich aroma and yields a golden infusion with a subtle and buttery flavor. From my personal perspective, this Doke Black Fusion Tea seems a fusion of Darjeeling and Assam flavor profiles. All in all, one of the best flavor profiles I have run across in Indian teas. How to prepare gongfu style: Amount of Tea: Water Temperature: Steeping Time: Number of Steeps:
2 grams (1 teaspoon) dried tea leaves for 8 oz. water 212°F (100°C) approximately 1 minute* at least 7 times
How to prepare teapot style: Amount of Tea: 2 grams (1 teaspoon) dried tea leaves for 8 oz. water Water Temperature: 212°F (100°C) Steeping Time: 3-5 minutes** Number of Steeps: at least 2 times Drinking: Strain into cups. Add milk/sugar, lemon, honey, or whatever you generally use with a strong black tea. * For successive steeps, increase time by 15- 30 seconds. ** If you prefer to drink it straight, steep no longer than 3 minutes, probably only 2 minutes.
These are suggested steeping instructions. We encourage you to experiment and share your own brewing methods as you continue to grow in the tea culture. If you're new to tea, this is a good way to start.
