December 2018 Issue 83

Editor: Jacqui Barry jaxdubai@gmail.com

As we approach 2019, we can look back on another milestone year at Emirates Golf Club, having celebrated our 30th Anniversary in March.

November was another busy month with all the golf and social events taking place and December will be as busy for sure. Please try to free up your diary to take part in the Member/Colleague golf day on December 12th. Our colleagues look forward so much to this opportunity to play with members and to play the course and socialise afterwards. It’s always a great day so sign up and be part of the fun! The weather is perfect right now; the course is walking only so take advantage of getting yourself a caddie...it’s a sheer pleasure to play the Majlis this way. The caddies are our own colleagues who work on their days off and earn some extra money so it’s a win-win situation - They enjoy being with the members, they earn a little extra, we get the benefit of their course knowledge and we get to know our colleagues a bit better. Congratulations to Danny Willett who, after a very ‘lean’ few years, finally secured a win at the DP World Tour Championship last month at the Earth course - his 63rd event since he won the Masters at Augusta National in 2016. It was great to see our 2016 winner of the Omega Dubai Desert Classic and, Masters Champion that same year, come back to some great form. With the Omega Dubai Desert Classic fast approaching, it’s great that Dubai Golf have new hospitality chalets this year which are more open and which allow a view of our iconic clubhouse. This will most definitely be a huge improvement. In addition, the Omega Dubai Ladies Masters is moving to May 2019 with a totally different format, so this year we have less disruption to the Majlis course.

As a group, Dubai Golf has made significant improvements to the facilities and dining outlets at both Emirates Golf Club and Dubai Creek Golf & Yacht Club including the opening of Jones the Grocer Express, and the renovations starting on the gymnasium facility at Dubai Creek. At Emirates Golf Club, the introduction of the popular Carine restaurant, the upgrade of the Spike Sports Bar & Terrace, our exclusive Members’ Lounge in its new prime location overlooking the Majlis Course, and the opening of Jones the Grocer have all been well received - and in line with our ambitions to enhance the experience for our members and guests.

Emirates Golf Club has proudly hosted this event since 2006 on the Majlis Course which has provided us with some fantastic champions and memories in the event’s 12-year history. The reformatted Omega Dubai Moonlight Classic will now take place from 1st-3rd May 2019 on the Faldo Course and this will be a Pro-Am format. As a result of this change, members will have greater access to the Majlis course this season, with the course undergoing the preparation required for only one tour event and not two. You will benefit from nine days additional play on the Majlis Course including two weekends. Furthermore, the construction of our brand new hospitality chalets between the 9th and 18th green will have started in mid-November as opposed to early October.

Membership Rates You will by now have received your membership renewal notice. Membership rates will increase this year to reflect 5% VAT, which is applicable to all Membership categories.

Season’s greetings to all members and Happy New Year to you all

Jacqui Adele Cowgill I am so very, very sad to report that Adele Cowgill from Sales and Marketing at Dubai Golf, lost her battle against cancer and passed away on 28th November, aged 41. Adele had battled for a number of years against this disease, always managing to pull through, always smiling, happy and positive. Over the past year she has had treatment and even maintained her normal working hours. What an amazing and inspirational person she was and she will be sorely missed. She leaves behind her husband Travis and two young daughters aged three and six, as well as other family members and a multitude of friends and colleagues! Sincere condolences to her family and to her colleagues at Dubai Golf who will miss her so much. Many members may not have known Adele, but will have seen her around the Club. She was such a positive, bubbly, fun person who embraced life and who was always so very upbeat. Sad times!

Dear Members, I hope you are enjoying the facilities as we experience peak season and the perfect weather conditions to play our courses. It has been fantastic to hear so many positive comments regarding both the Majlis and Faldo so thank you to Matt, Mario and their team for all your hard work and dedication. Before we know it the 30th Anniversary of the Omega Dubai Desert Classic will be upon us; note the dates for this year’s Championship are 24th–27th January 2019. Before the top golfing talent arrives, please have a fantastic festive season and enjoy your New Year’s Eve celebrations!

Planet or Plastic Festive Championship brought to you by National Geographic I am delighted to announce important and significant changes to the Christmas Scramble on 15th December. For a number of months now the Club has been in discussion with member Sanjay Raina and his team at National Geographic to support a key event on our golfing calendar and strive to change the behaviour of the Club, its members and guests towards plastic. You will have recently noticed our efforts to improve our environmental initiatives with the recycling receptacles and only giving straws if members and guests request them. However, over the next four months we plan to take big strides to improve this area of our business. National Geographic have come on board, not only to sponsor our Christmas Scramble, but to sponsor reusable flasks for our golf members. The details of the launch event are below: Date: Saturday 15th December 2018 Event: Planet or Plastic Festive Championship brought to you by National Geographic Eligibility: Full golfing members Course: Majlis (walking) Time: 12:30 shotgun start Format: Scramble Inclusive: Sponsored shirt, prizes, *Stainless steel water flask, traditional Christmas dinner Price: AED 65 *Note: all players will receive a flask on 15th December. All full or weekday golfing members will receive a flask by the end of January 2019. As you may have seen around the Club, there are significant areas where we can improve on our plastic waste. It was disturbing to find out that during 2017 the Club went through 200,000 small plastic bottles of water which are the ones that each member or visitor receives prior to playing on the Faldo or Majlis. As you will have witnessed in the news, plastic pollution in the oceans is a global crisis: • PLASTIC PRODUCED IN A YEAR IS 9.2 BILLION TONS

6.7 BILLION TONS OF WHICH GOES INTO WASTE • LIFETIME OF A ONE TIME USE PLASTIC IS 15 MINS, AND IT TAKES 450 YEARS TO DECOMPOSE, IF EVER • RECYCLED 9% AND THE REST GOES INTO THE OCEAN OR LANDFILLS National Geographic globally is creating a one-brand purpose-led initiative to reduce the amount of singleuse plastic that gets in the ocean and the plan is for Emirates Golf Club to support this important initiative. Emirates Golf Club share the vision to significantly reduce the amount of single-use plastic that reaches the ocean by reducing usage of one time use plastic and increasing the volume of plastic being recycled in the UAE.

Plan of action • 15th December – all players in the tournament receive a refillable flask, no plastic bottles given out and igloo stations provided as normal throughout the course • January 2019 all golf members to receive a flask and pledge to use the refillable flask as opposed to the current plastic water bottle • Quarter one 2019 we aim to acquire a sponsor to provide refillable bottles for all members and visitors on our courses • The vision is to give no plastic bottles to golfers prior to teeing off

Other areas of focus to come on line • Paper cups on course at the igloo stations • Locker room bags for soiled clothes to be changed • Golf Course Maintenance use green netting to collect debris, no plastic bags • Food & Beverage take-away boxes, not plastic • Food & Beverage outlets to order more glass not plastic

Omega Dubai Desert Classic Hospitality For this season’s Omega Dubai Desert Classic (24th– 27th January 2019) the clubhouse hospitality will also include an option in our Carine restaurant. The traditional clubhouse hospitality packages are available on the main clubhouse terrace, in addition to tournament hospitality in Carine. For more information or bookings, please visit www.omegadubaidesertclassic.com

Festive Season The Festive season brochure is now out and bookings can be made with the F&B team, highlights include: 1st–30th December: Turkey Takeaway! 25th December, 12-3pm: Family Christmas Day Brunch, Spike Bar New Year’s Eve: ‘Have the Time of Your Life’ Gala Dinner on the Lawn. Live tribute acts from Freddie Mercury and ABBA (almost 900 tickets sold to date so please book soon and join us for a great night!) Barney Coleman Club Manager

Dear all, December is upon us and the countdown to another year ending is nearing but there is still lots happening at the Club throughout the month. For me November was a complete write-off with no golf play at all due to a wrist injury. I was playing on the Fire course when I tore ligaments in my wrist. It’s so frustrating with the beautiful weather and all I can do is watch from the sidelines. Plenty of physiotherapy and personal exercise has got me nearly back and I’m very hopeful of hitting the course again this month. With the cooler weather around now and the Majlis being a walkingonly course, Emirates Golf Club is such a wonderful place to play golf. The choices we have as members is second to none and we still have the option to use a buggy when playing the Faldo. We are very lucky. You might have noticed that the Majlis is going through its over-seeding and getting ready for the Omega Dubai Desert Classic. Please be patient as the course will be heavily sanded and watered throughout the month. I’m sure you have seen the hospitality stands going up. This year they are a new design and, from the presentation pictures I have seen, they are an excellent feature for the Desert Classic. They are more open which will create a great atmosphere around the 9th and 18th holes. This month’s big competition is the

Planet or Plastic Festive Scramble on 15th December. This is an initiative between National Geographic and Emirates Golf Club to reduce the use of plastic in the Club. Last year the Club used approx. 200,000 plastic bottles of water and, with your support, we aim to drastically reduce these numbers. The competition will still have the fun factor as always, with some nice gifts for all players participating. I am also looking forward to the wonderful Christmas themed costumes that you all make an effort to wear. I’m sure it will be a great day. The Club has also decided to change the New Year’s Day competition to New Year’s Eve. This is a great idea to start the countdown to the celebrations that night. There is so much happening socially in the Club this month to start the Christmas festivities. The traditional tree lighting ceremony on the 6th is when that Christmassy feeling starts. However, the big function will be the New Year’s Eve party which promises to be a wonderful night. I think the older generation will be hitting the dance floor big time on the night with the ABBA and Freddie Mercury tribute bands getting us into the party spirit. Last year’s party was spectacular and I expect this year’s to be even better. Make sure to book your tables as soon as possible as I think this is the best value in town for any New Year’s Eve party. As always, the Club offers you the chance to put your feet up and relax and order the Christmas dinner ready to eat. From my past experiences Chef Nicholas and his

team do a fantastic job in presenting top class food and fare. Finally, I would like to take this opportunity to wish you and your families a very Merry Christmas for those of you celebrating, and a wonderful and happy New Year wherever you ring in the night.

For those of you staying in Dubai, the Club will be open during normal hours to accommodate your needs and to those of you travelling, stay safe and enjoy. Please also remember our colleagues working in the Club this Christmas. They are away from their families and working to provide an excellent service to us. Please take time to consider them and treat them with highest respect. They will also want to celebrate Christmas and New Year, so let’s try to be accommodating and make their work over the period light-hearted and fun. Also, there is a raffle for our colleagues on 15th December. All prizes and gifts will be appreciated with all the funds raised going to our colleagues. Please dig deep into your pockets. Even though the Majlis is playing longer it is looking glorious; thank you Matt and all the greenkeepers for the wonderful work you do. How spoiled and lucky we are to be Emirates Golf Club members.

What an honour it is for me to have the greatest back-up players, people I can always rely on. Thank you.

After a very busy October, highlighted by the successful Ladies’ Pink Day tournament on 29th October, I cannot say thank you enough. Thank you for all for the support, the friends, the colleagues and the 120 ladies who took part in this great day - Jumeirah Golf Estates lady members and the regular Dubai Creek Golf & Yacht Club ladies made the day all the merrier!

Junior Elite Programme

Pyramid Of Learning Level 2 Hand, Arm & Body Action

The financial advisory and wealth management firm swissglobal invests in the sporting futures of talented young players of the Junior Elite Programme

As part of ongoing efforts to strengthen and develop the golfing community and appreciation for the distinguished sport within the UAE, Dubai Golf, this year, introduced the Emirates Golf Club Junior Elite Programme, catering for the development of talent and requirements of gifted young golfers in the city in October. The financial advisory and wealth management firm swissglobal has taken on the role of sponsor, further supporting the immense talent possessed by the 12 young golfers currently enrolled in the programme. From covering the costs of local trips and subsidising international expeditions, to providing for high quality uniforms, the financial giant will ensure that the multicultural budding professionals are equipped with all the tools required to fully pursue their talents. “swissglobal is very pleased to contribute to the development of young golfing talent. We believe in talent, and the perseverance and hard work it takes to develop this to its full potential. Internally, we nurture and support our teams towards excellence and we look forward to the prospect of bringing the same belief in human potential, to a programme as exciting and rigorous as the Emirates Golf Club Junior Elite,” said swissglobal CEO Mike Coady. Players between the ages of 10 and 16, possessing a single figure handicap, who are eager to take on the sport in a professional capacity, or are looking to attain a golf-based scholarship for their further education are the key demographics of the programme. The Junior Elite Programme provides weekly biomechanics lessons, in addition to supervised practice, golf specific gym exercises and sessions on full swing, short game, mechanics and putting masterclasses. Furthermore, the course aims to have its participants involved in every UAE Junior event of note, preparing them for the opportunity to travel to Los Angeles to compete in Junior Events in Southern California. These efforts have resulted in the programme attaining recognition as one of the leading junior development programmes in the region. “We are very excited to have swissglobal partake in the programme, as the ideals of both ventures complement each other perfectly in terms of their strong reputations and ethical conduct. The pursuit of excellence through hard work in a structured and knowledgeable learning environment is crucial for success and we look forward to having swissglobal’s support throughout the journey of our students” commented Stephen Deane, the Head Professional at the Peter Cowen Academy Dubai at Emirates Golf Club.

A sound swing demands the correct blend and balance of hinging and cocking. To understand and feel the correct hinging and cocking of the wrists within the golf swing try the left hand only drill. Turn the golf club the other way round imagining it is a pen or pencil drawing a straight line back from the ball allowing the wrist to cock up creating approximately a 45 degree shaft angle half way back during the backswing.

Right arm only drill – again the same procedure follows. Allow your right arm to swing and fold into this approximately 45 degree position half way back. This will give you the sensation of the body action and arm swing working in harmony positioning the club in a good neutral plane. This is a position the one arm only drill can help you achieve. If you swing the club in balance, it’s immediately more efficient. AN INTRODUCTION TO THE NEW RULES OF GOLF JANUARY 1, 2019

The R&A and the USGA have combined forces with the aim of modernising and simplifying the rules of golf…I’m sure you will agree this initiative has been long overdue. There are 31 rules that are classed as major changes starting from January 1 2019. Firstly, here are some of the quick and easy to understand changes.

1

1. To speed up play you will only be allowed 3 minutes to search for your ball.

5. A player may repair spike marks on the putting green. 6. You may putt out with the flagstick unattended at the hole. Although this is only recommended from a distance.

2

3

9. Penalty Area is the new term for an area in which relief with a one stroke penalty is allowed. These areas will continue to be marked by red and yellow stakes and do not need to contain water. You may ground your club in these penalty areas.

4

2. An embedded ball in its own pitchmark may be cleaned and dropped without penalty anywhere in a general area which is the new term for through the green.

7. No penalty given if your ball accidentally hits you. 8. Positioning a club for alignment is NOT ALLOWED at any stage of your set up to help align the feet and body. i.e. nothing can be placed on the ground to assist prior to starting the stroke.

3. A ball MUST be dropped from knee height. i.e. the position of a player’s knee when standing upright.

10. It is recommended that 40 seconds is the time it should take a player to hit any stroke. In STROKE PLAY FORMAT, there is no penalty for playing out of turn; all players are allowed and 8 ready golf in a safe encouraged to play and responsible way. The above is just an introduction and insight in to some of the rule changes. In support of these changes, it is clear to see that the Governing Bodies are trying to make learning the rules more practical and understandable for all, whilst trying to speed up the game of golf.

4. Loose impediments can now be removed anywhere, including in a bunker.

New Rule books are available from around the clubhouse; please ask Rhys, Cian or Jon for your new copy. Also, throughout January we will host a members’ rules evening when we can openly discuss the new changes.

X

If you have any rules queries that you would like to discuss over the coming weeks then please do not hesitate to ask on your next visit to the club or simply Email your query to rjames@dubaigolf.com

Adele Cowgill

1977-2018 It is with great sadness that I advise that our colleague Adele lost her battle with cancer recently, and passed away on November 29th. Adele is a huge loss to us all and was not only a valued colleague but also a friend. Her dedication and hard work immensely contributed to the success of Dubai Golf. Adele moved to Dubai from the UK in 2007 and held the position of Marketing and Communications Manager at Jumeirah Beach Hotel before joining Dubai Golf in 2010 as Marketing and Communications Manager. Despite her illness in recent years, her positive ‘can do’ attitude, was an example to all of our team and will always be remembered. In spite of her condition, Adele continued to work over the past three years, as it provided her with a distraction to the illness she was fighting. Adele was a key member of our team, making a difference in many areas of the operation. She was instrumental in the recent successful launch of Carine, Jones the Grocer and Spike Bar at Emirates Golf Club as well as the recently revamped Dubai Golf website. Our thoughts and prayers are with her whole family at this time, but in particular her husband Travis, and her two young daughters Lulu(aged 6) and Tilly(aged 3),who were all loved deeply by Adele they and provided her with motivation and drive to get through some difficult times over the last three years. We are in touch with her family, and will assist them in every possible way. Adele’s funeral will be held in the UK on December 18th and will be attended by me and also some Dubai Golf colleagues. We plan to host an evening of remembrance at the Club in the New Year. Words cannot adequately express our sadness; on behalf of the entire team at Dubai Golf, I offer our deepest condolences to her family and loved ones. Yours sincerely

Christopher May

Dear Members,

Fit Lab

You may have seen our fantastic new swimming pool furniture…it really does make a difference and looks a lot more enticing to go poolside now. We have also added four cabanas which are proving to be very popular so please if you haven’t already done so, come by the pool and relax for the day.

Mat Pilates Mat Pilates is designed to establish core strength, stability and toning leaving you feeling invigorated, strong and balanced throughout the body.

So how and what to strengthen? Well, we start with the rotator cuff muscles which are important in initiating any overhead movement (as with the golf swing). Once the rotator cuff is engaged the deltoid muscles help to continue this overhead movement, with the lower trapezius completing the movement.

with Rebecca Olds

It will provide the foundation for a lifetime of healthy habits and body movement awareness. There are many benefits to building a Mat Pilates programme into your exercise regime and these include • Strengthens the deep abdominal and spinal muscles • It trains the body as an integrated whole, providing strength and creating balanced muscle development • Increases overall flexibility and range of motion for the joints • Creates space in the joints and the spine to avoid compression • Develops postural awareness • Alleviates back/joint pain • Deep and wide thoracic breathing to reinforce and encourage correct muscle recruitment and an increase in lung capacity and oxygen circulation • Lowers stress levels Join the energising and strengthening classes taught by Rebecca Olds (in association with Phoenix Rising) and I look forward to seeing you for Mat Pilates on Sundays 10.30 and Thursdays 10.15 Fit Lab’s Exercise Tip of the Month by Christopher Mallet

Shoulder stability

What’s the difference between balance and stability? A common misconception for those who partake in physical activity, be it in the gym or elsewhere, is that balance and stability are one and the same.

If just one of these muscles is not firing (or doing their job) it is hard to protect the shoulder from injury. Pictured is a stability ball exercise to strengthen the rotator cuff. Visit me at The Fit Lab to understand how to train and strengthen the other necessary components. ZATA Tennis Academy

The Single-Handed Backhand Here are a few tips on what I consider to be the most beautiful stroke in tennis, the single-handed backhand. For this particular shot we use the Eastern backhand grip which is ideal for topspin and power. As you will see from the image I have moved into what I refer to as the ‘signature position, whereby the unit turn is complete, shoulder sits beneath the chin, knees slightly bent and the player is fully balanced. Make sure that the hitting arm is straight with the opposite hand holding the throat of the racquet and that the tip of the racquet is facing up towards the sky. This action allows for a great amount of stored energy to be unleashed once the body starts to unwind and the racquet begins its downward and forward acceleration path. The single handed backhand is a tight, compact and explosive shot where the hands play from inside the path of the ball allowing the racquet to travel in an inside out direction.

USING OSTEOPATHY TO TREAT TENNIS ELBOW

It is a condition not only experienced by tennis, golf, badminton and squash players but anyone who undertakes an activity that involves a significant amount of repetitive wrist extension and/or wrist and elbow compressions such as guitar players, gym goers, weightlifters and even keyboard users.

The team from UPANDRUNNING explain that If you’re recovering from an injury, you’re facing a tough physical and psychological battle.

Accept It When you’ve suffered a season-ending injury, feeling as if you are in shock is normal. But after a day or two, you have to accept the situation and get in the mindset necessary to start your work to get back on the field.

Look at Rehab as a New Challenge

Interestingly enough it has been said that the shoulder is like a golf ball sitting on a tee, the golf ball being the head of the humerus (upper arm bone) and the tee being the glenoid fossa (a socket formed from the shoulder blade).

Keep these tips in mind and you will undoubtedly refine your backhand and start firing a few more winners.

Set Short-Term Goals

The shoulder is a very mobile joint and in order to allow more mobility the ligaments need to be laxer. We sacrifice stability for mobility. For this reason it can be exposed to the risk of injury, or

Osteopathy can help conditions like tennis elbow by checking and treating the joints of the wrist and elbow, restoring function to these joints, ensuring the underlying pathology is addressed and ensuring fast relief from conditions like tennis elbow. During an appointment, we also advise clients on the preventative steps including exercises that can be done to reduce the likelihood of a repeat injury.

The team from UPANDRUNNING who have a branch at Emirates Golf Club, explain how Osteopaths approach treatment for tennis elbow or lateral epicondylitis which is a condition in which the outer part of the elbow becomes sore and tender, as a result of acute or chronic inflammation of the tendons that join the forearm muscles on the outside of the elbow.

Upon contact with the ball the hips and shoulders rotate forward to an almost squaring up position and the follow through is high with the racquet facing up to the sky and ending to the side and slightly behind the shoulder. I would again like to emphasise the importance of keeping the dominant arm straight throughout the stroke.

Actually there is a difference between the two and it’s very simple. Balance is your ability to control your body without movement against gravity, and stability is your ability to control your body during movement, specifically in the three planes of motion.

injury but as a result of the joints at the wrist and elbow moving poorly over a period of time. When the joints at the elbow and wrist move well the workload of the wrist extension is managed by 11 different muscles and tendons and it takes a large or unusually repetitive force to damage the tendons. However, if the joints of the wrist and elbow move poorly then the workload of the elbow and wrist are distributed unevenly, and you end up with just a few of the muscles doing most of the work and thus increasing the likelihood and developing tennis elbow.

Fit Lab

With the festive season around the corner, what better time to get to Fit Lab and prepare to be in fantastic shape ready for 2019. As most of you know we have four fantastic trainers in Alan Walters, Christopher Mallet, Michael Lancaster and Eliane Gitani who are all extremely qualified and are the best in the business. These guys can help you achieve goals you never thought you could reach so please contact one of them and take advantage of a free consultation with them.

more likely impingement. Therefore, it is increasingly important that we strengthen the surrounding structures (muscles and ligaments) to protect it.

things and risk re-injuring yourself. You want to move quickly, but you have to let your body respond to certain things. Athletes who come back too quickly could get hurt again. The hardest thing is having the patience and understanding that you will be back. You’ve just got to understand that it takes time.

Stay a Part of Your Team Even though you are hurt, you should be at every meeting, workout, practice and game. Off the field, hang out with your teammates. On the field, encourage them and cheer them on. If you’re an older player, help the younger guys in any way possible. It won’t just help to keep your own spirits up, it will help the team succeed.

Always Listen to your Doctors, Coaches and Trainers Trust the people who are helping you with your recovery and rehab. If they’re telling you to take it easy, then they have your best interests in mind. They want to see

you back to doing what you love just as badly as you do and, with their help, you’ll get there. Our highly qualified team, of doctors, physiotherapists, and strength & conditioning coaches will produce a detailed, tailor-made programme of activities for each athlete. In football, when a player is deemed fit enough to return to outdoor training, data allows careful monitoring of the individual athlete, including the type of movement, the intensity of their runs, the number of jumps and landings etc., so that we can identify their weaknesses and work with them to ensure they are fully recovered and to ensure that there aren’t too many blips. As players approach their return, they often feel a sense of trepidation about suffering a reoccurrence of their injury. They go through a rehearsal process for a month or so before making a full return to action but they may still worry about making that final step. Sometimes they need to be convinced that their body is up to the task. Fortunately, the days when players were hurried back into action too quickly or expected to play with multiple pain-killing injections that caused long-term damage are largely gone. Injured and need an opinion on your condition? Book an appointment with a Sports medicine specialist Doctor, Physiotherapist or Osteopath at UPANDRUNNING by calling 04 518 54000. WHAT'S COOKING FROM THE KITCHEN OF

CHEF NICHOLAS CUOMO

Capon with a Lightly Smoked and Truffled Stuffing, Fondant Potatoes and Chestnuts, Madeira flavoured Jus Serves: 6 to 8

Method:

Ingredients:

1. Prepare the stuffing (forcemeat): Sauté the pork fatback, pork shoulder and smoked bacon; add the apple brunoise. Allow to cool. Sweat the onions in butter, cool. Combine the pork and apple with the onions, cream, truffle, and parsley. Add the spices and seasoning. 2. Prepare and cook the capon: Stuff the capon with the stuffing (forcemeat), close and truss. Slowly roast with the butter and oil in the oven preheated to 180°C for 2 hours 30 mins. Check and baste regularly. 3. Prepare the fondant potatoes with chestnuts: Braise the potatoes with the chestnuts, butter and chicken stock. Lightly season with salt. Once the potatoes are cooked, remove from the baking dish and reduce the cooking liquid. Scoop out the centre of the potatoes with a Parisienne ball cutter and place cooked chestnuts in the cavity. Glaze with the reduction. 4. Prepare the jus with Madeira wine: Once the capon is cooked, removed from the roasting pan and keep warm. Add the mirepoix, Madeira wine and water to the pan and simmer. Strain through a china cap sieve, and skim to remove fat. 5. To serve: Place the stuffed capon on a large dish surrounded by the fondant potatoes with chestnuts. Add the jus with Madeira wine or serve in a sauce boat.

Principal ingredients • 1 x 2 kg to 2.5 kg capon • 100 g butter • 50 ml peanut oil or goose fat • salt, freshly ground pepper Stuffing (forcemeat) • 50 g pork fatback, finely chopped • 250 g pork shoulder, finely chopped • 100 g smoked slab bacon, diced • 1 Golden Delicious apple, cut into brunoise • 100 g onions, finely chopped butter • 50 ml heavy cream • 30 g truffle, chopped • 1 tbsp parsley, chopped • 1 pinch four spices (quart-épices) (2 g) • 10 g salt • freshly ground pepper Fondant potatoes with chestnuts • 6 medium potatoes (12 items turned to look like a ‘bar of soap’) • 12 chestnuts, peeled • 80 g butter • 500 ml white chicken stock • salt Jus with Madeira wine • 250 g vegetables cut into mirepoix (onion, carrot, garlic, celery, shallot) • 1 bay leaf • 100 ml Madeira wine • water

The French Christmas meal has become somewhat standardised throughout France but regional customs remain. Today, most French dining tables will be made up of the traditional dishes of this period of the year, prepared with festive ingredients: smoked salmon, foie gras, wild mushrooms, chestnuts, truffle, shellfish... Poultry is traditionally served during this Holiday season but the capon, a young castrated and fattened rooster, is the preferred choice in France for their Christmas meal. With a very tender meat, due to its high fat content, the capon is best braised, roasted or pot-roasted. The garnish of potatoes and chestnuts is simple yet original, resulting in an ideal traditional Christmas dish, rich in flavours.

Mulled Wine Recipe Beat those winter blues with an indulgent and festive cup of mulled wine Serves: 20 guests Ingredients • 2 bottles of red wine • ½ bottle of Port • 1 cup of white rum • 1 cup of Cointreau • 3 lemons • 3 oranges • 4 tablespoons of honey • 3 coils of cinnamon • 4 star anise • 2 vanilla pods • 10 grams of coriander seeds • 10 grams of fennel seeds100 grams of Crystalized ginger (50 grams of fresh ginger)

Method 1. Peel the lemon & orange skins and blanch in warm water for 10 seconds, then run under cold water. 2. Squeeze the juice out of the lemons & oranges then add into a large pot with the rest of the ingredients. 3. Leave under a very low heat (70-80 degrees) for around 10 minutes until the flavours blend. Have a quick taste and serve - voila!

Chocolate florentines These delicate biscuits use a mixture of glacé fruit and nuts in a sweet honey caramel, generously coated in bitter dark chocolate. Makes 40 Preparation time: 45 minutes Cooking time: 30 minutes Cooling time: 30 minutes

Ingredients • 50 g mixed glacé fruit • 50 g glacé orange peel • 35 g glacé cherries • 100 g sliced almonds • 25 g flour sifted • 100 ml whipping cream • 85 g caster sugar • 30 g mild honey • 300 g dark chocolate

Method 1. Preheat the oven to 170°C. Butter a baking sheet. 2. Finely chop the mixed glacé fruit, orange peel and cherries and place in a bowl; add the sliced almonds. Tip the flour into the bowl and stir carefully by hand to separate the pieces of glacé fruit. 3. Heat the whipping cream, sugar and honey until simmering; stir over low heat for 2–3 minutes, or until the sugar dissolves. Using a wooden spoon, carefully blend the hot cream mixture into the glacé fruit and flour. (If desired, the Florentine mixture could be kept refrigerated for 2 days.) 4. Using a teaspoon, put small mounds of the mixture on the baking sheet placing them well apart. Flatten with the back of the spoon into thin 3 cm discs. Transfer to the oven and when the discs start to bubble, remove and cool for about 30 minutes. Lower the oven temperature to 160°C and bake the discs for another 10 minutes. Cool and transfer to rack. 5. Temper the chocolate: Coarsely chop the chocolate. Place 2⁄3 (200 g) of the chopped chocolate in a bowl; melt over a bain-marie until the temperature reaches 45°C on a cooking thermometer. Remove the bowl from the heat and add the remaining chocolate, stirring until the temperature drops to 27°C. Return the bowl to the bain-marie, stir gently and reheat the chocolate to 32°C. 6. Using a pastry brush, apply a layer of tempered chocolate to the flat side of each Florentine; tap each one on the work surface to release any air bubbles in the chocolate. Spread with a second layer, using a spatula to remove any excess chocolate. Harden the Florentines at room temperature.

SIR NICK FALDO AT EGC

47 flags. 47 glorious years. Happy 47th National Day! Stunning start to UAE National Day!

Dear Members, As we approach peak season on our courses I would like to take this opportunity to remind you of our no show or late cancellation policy. Amazing sunset on the Faldo

As stated in the Members’ Club Guide (on page 15), our no show or cancellation policy allows members the opportunity to cancel or reduce a booking up to one day in advance of the date of play for weekday tee times and two days in advance for weekends. If the member does not show on the day, or does not notify us of a change to the booking, the member will be charged AED 200 per player. The no show or cancellation policy is in place to ensure that all of our members have the opportunity to play golf at Emirates Golf Club. Additionally, we will be monitoring those members who have a higher percentage of cancelled bookings to establish if a change in policy is required. Please consider your fellow members when you make your bookings and please cancel your bookings in a timely manner. In recent weeks, a number of members have been left frustrated and unable to secure a tee time two to three days in advance. Subsequently, on the day of play there has been availability due to late cancellations or no shows. Please note that moving forward, the Golf Reservations team will monitor this issue closely to help improve tee time availability to the whole membership. The policy will also be applicable to members’ tournaments. Thank you for your understanding on this matter.
